July brings our traditional “Fun in the Summer Sun” issue, in which we spotlight the many and varied activities available around the island. This issue always gives us the urge to get out and enjoy a little vacation time, even when we’re not on vacation! With our four children starting to grow up—our youngest is now three-years-old— we’ve decided that the time is right to get out and enjoy some adult time. We’ve enjoyed terrific music at some of our local watering holes, as well as several virtuoso concerts presented by the Amelia Island Chamber Music Festival. We’ve been getting out to our local restaurants more frequently, as well. We’ve discovered that our old favorites are just as good as ever—and always seem to have something new – and also discovered a few new restaurants that add much to the diversity of cuisine available here on Amelia. When out with the kids and their grandmother, we’ve enjoyed mini-golf, plenty of ice cream cones, beach-time, pool-time, and browsing-through-the-shops time. We’ve even found time for some biking and horseback riding – and we did all this before July 1! We’ve met families from Georgia, North Carolina, and New Jersey—and everyone always tells us how much they love their Amelia Island vacation. There is so much for everyone to enjoy, after all, so check out our cover story for some great summer vacation ideas. If, like us, one of your favorite summertime activities is lounging under an umbrella with a book or magazine, then just flip beyond our cover story. In our Money Matters column, Pamela Brown of Edward Jones outlines the important things to consider when caring for an aging loved one. If you’re a foodie, you won’t want to miss the terrific recipes from Chef Adam Sears of Merge Restaurant in our Island Entertaining column. Any of these choices will give you a great chance to explore the waterways around Amelia Island, including Fernandina Beach’s picturesque harbor, water views of Fort Clinch, and the wild horses frolicking on Cumberland Island’s beaches. For an up-close exploration of the marshes, you can go kayaking with a variety of guided eco-tours from Kayak Amelia (904-251-0016). Their family-friendly shell-hunting trip is a great way to introduce the kids to kayaking and the marsh ecology. If you passed on surfing but still want to try a fun and easy water sport, Kayak Amelia can also teach you how to do stand-up paddle-boarding on the calm waters of the marshes. In addition to the various eco-tours, they offer kayak rentals and lessons, kayak fishing trips, and bicycle eco-tours.

Turning inland, head to the maritime forests. Egans Creek Greenway runs along the middle of the island and has over three miles of trails for walking or bicycle riding, along with excellent bird and alligator watching. Fort Clinch State Park (904-277-7274) has hiking and biking trails both on and off road through the maritime forests, along with beaches and a historic restored fort. The fort is staffed with costumed interpreters with reenactments the first weekend of each month. Kids and history buffs alike love the black-powder artillery demonstrations.
Another fun way to explore the area’s natural beauty is with EcoMotion Segway Tours (904-251-9477). Follow Amelia’s coastal A1A south for a great time aboard the coolest transporter around. Enjoy the thrill of riding an off-road Segway as you explore the beautiful, undeveloped island terrain of the Florida Park Service’s “Real Florida,” where guides will take you where birds roost, turtles dig, and dolphin swim. You’ll also learn alot about the natural and man-made history of northeast Florida. Segways are easy to ride—no experience necessary—but you must be 13 or older. Another great place to explore the local ecology is the The Nature Center at Omni Amelia Island Plantation (904-321-5082). The Center’s naturalists are happy to chat with you about the local ecology, show you their residence critters, or sign you up for a tour. The tours and presentation are for people of all ages and range from shark tooth hunts to birding excursions to biking and kayak tours. For a more adventurous outdoor trip, you can go horseback riding either on the beach or inland along trails. Cheers Horse Ranch (904-277-7047) offers lessons at their arena, as well as trail and beach rides for all levels of riders. For more in-depth riding and horse skills, they also have a great summer camp for kids. If you prefer manicured greenery, then visit the Amelia River Golf Club (904-491-8500), Fernandina Beach Golf Club (904-277-7370), and The Golf Club at North Hampton (904-418-6107), all of which offer well-designed and

With over 30 shops and restaurants, historic downtown Fernandina Beach is a good place to start. Come on down on a Saturday morning to see what is new at the Fernandina Farmers Market (904-491-4872). In addition to seasonal local fruits and vegetables, the market also offers unique specialty items like baked goods, honey, pastas, plants, artisan cheeses, and more. The live music and bustle of shoppers makes for a festive atmosphere. At mid-island along Sadler Road is a wide selection of stores and restaurants, and, further south on First Coast Highway, is the Palmetto Walk Shopping Village, a collection of vernacularstyle shops tucked in among the shady live oaks. At Palmetto Walk, you’ll find a women’s boutique, home furnishing and
décor stores, gifts, and kitchenware, and a couple of great restaurants. Continuing on to the far south end of the island is The Spa & Shops at Omni Amelia Island Plantation. This collection of boutique shops is also in a lovely setting, nestled among live oaks encircling a pond, with great restaurants, too. If art is your interest, there are several galleries downtown and around the island. Check out the Galleries & Antiques page of the Islander to find out what’s showing. The Amelia Island Museum of History (904-261-7378) has interesting historical collections focusing on the local history of the island, along with changing exhibits that range from historical photos to fine art landscape photography. The Museum also offers fun and informative guided walking tours of Fernandina Beach’s historic area, as well as various lectures on local history. Seventy-two years have passed since Lou Gehrig’s death from Amyotrophic Lateral Sclerosis (ALS), yet there is still no known cause, treatment, or cure for the fatal degenerative neuromuscular disease. There are approximately 300,000 Americans living with the devastating disease, and every 90 minutes it claims another life. Many locals know that, in 2002, it took the life of family man, avid golfer, and long-time Amelia Islander John O’Day. In 2005, as a memorial to his father, Mark O’Day spearheaded the inaugural ALS Amelia Island Golf Classic at Amelia Island Plantation. “The Plantation was a very special place to my father, and he loved golf. I wanted to do something special in his memory and help fight for a cure,” says O’Day who is excited for the tournament’s seventh year. Over $120,000 has been raised from this event in its first six years, and all proceeds benefit The ALS Association Florida Chapter. The success of this event would not be possible without the generous support of the Andrews McMeel Universal Foundation and the many local sponsors, participants, and volunteers. LOCAL FILMMAKERS PLAN TO SHOOT FILM ON AMELIA Husband and wife team, Nadine Vaughan and Rick Traum, have just completed the trailer for their film, entitled “Native Land: Lost In The Mystery of Time.” Vaughan is a writer, director-producer, and psychologist, and Traum is an Emmy Awardwinning producer with a long career in film and television, notably as executive in charge of NBC’s “Saturday Night Live.” Based on Vaughan’s historical novel of the same name, “Native Land: Lost in The Mystery of Time” is about a woman searching to discover the mysterious origins of her family. It is a story of racial intolerance, an unforgiving family, and the ultimate coming together of a community, told through the symbolism of a dark Florida forest and an enigmatic family of Native Americans. To be shot on Amelia Island, the film features Native American actor Buffalo Child (“Dances With Wolves”) and a veteran crew of film and television professionals. “Our local landscape will serve as a rich and compelling visual backdrop for Nadine’s wonderful novel,” says Traum. rightly painted blue double doors and a flight of colorful steps lead visitors up to the Blue Door Artists, a unique gallery and studio space in downtown Fernandina Beach. Creativity abounds here, and any day of the week you will find one of the nine resident artists at work. Elizabeth Dion is one of those artists. A graduate of the Rhode Island School of Design in architecture, for many years Dion explored various art forms while working exclusively as an architect. In the mid-1980’s, she studied acrylic painting with artist Jeanne Pellegrino and developed a passion for the medium and for working in vivid colors. She now shares her time between painting and architecture. She finds the combination of the fine art of painting and the applied art of architecture to be a good balance, each feeding the creative process in the other. “I work in acrylic paint that is thick and translucent,” explains Dion. “It is applied mostly with painting knives, which I use along with other tools to shape and draw into the paint while it is still wet. Layers are added after the
paint dries, building up the surface and changing the colors, sometimes in surprising ways. It is a process of discovery that makes me want to keep exploring the potential of this medium to mimic the complexities in nature.” The painting shown above is entitled “Earthplane 3.” Dion describes it as “an abstract landscape that is more a place of the mind than any location on earth.” Dion started the painting with just a basic structure—the horizon line—and a color combination. “Once it gets going, it works best when it flows as an intuitive process,” says Dion. As the layers often need to dry before she can add more paint, she usually works on several paintings at a time. In this painting, some of the drawing appeared as groups of people. “I liked that and added more as the painting developed. Peter Parkin, owner of Driftwood Surf Shop across from Main Beach, opened Lemongrass last year. “For a long time, I envisioned another shop—one that is a more mature version of Driftwood, but with items that will appeal to people of all ages.” With a focus on women’s clothing, shoes, and accessories, the store also carries a large selection of sunglasses, many leather items, handbags, and menswear, as well as unique vintage-styled clothing and jewelry for women. Parker describes the look as “hip and eclectic, but with a vintage, relaxed vibe.” “We have items for women of all ages,” explains manager Phoebe Kromann, “for women who might have enjoyed the surf shop as teenagers, but now want more options in contemporary, interesting clothing, with a broad spectrum of styles and sizes to fit everyone.” Lemongrass showcases clothing by Judith March, Free People, and Desigual from Spain, as well as crossover surf styles from brands like Quiksilver. A
melia Island is filled with talented artists. A great number of wonderful galleries and shops display original artwork, and the popularity of the Artrageous Art Walk on the 2nd Saturday of each month in downtown Fernandina Beach is a testament to the variety of art available locally. One of these galleries is the non-profit cooperative organization, the Island Art Association. Located on North 2nd Street, the association recently added a new Art Education Center, increasing their exhibit space to 57 members. “The new education wing will offer a full schedule of classes,” says Mike Clemens, president of the association, “with opportunities for ‘wanna-be’ artists of all ages to explore their personal creativity under the tutelage of some of the most talented artists in the area.” Milt Shirley, who recently finished his three-year tenure as president of the Island Art Association and whom many people know as the former mayor of Fernandina Beach, helped bring the Art Education Center to fruition. Yet, just seven years ago, he himself was one of those “wanna-be” artists enrolled in art classes. As a young man, he loved painting, and he even started his freshman year at college as an art major. His practical father —a professor of math—discouraged that major, saying, “You’d better get a real job.” Milt soon dropped his interest in art and became an environmental engineer. He and his wife, Sutsy, moved to Fernandina Beach from Apalachicola in 1969, when he accepted a job at Rayonier. It was also a convenient location to St. Augustine, where their son, Paul, was enrolled in the Florida School for the Deaf. There was no time for painting at that time, but, with his outgoing, gregarious personality, Milt did find time to become involved in politics. He served on the Fernandina Beach City Commission, became mayor, and was later elected to the Nassau County School Board. The last elected job he held is what he describes as “the best job in the State of Florida: Director of Mosquito Control.”
After he retired, his personality propelled him into an 11year job as a golf starter at Long Point Golf Club. That was where he met Marlene Strobach and Barbara Fuller, who are both artists as well as golfers. The two badgered him each time they reached the tee box, saying that he should try picking up a paintbrush again. Soon after, he decided to enroll in a series of lessons that the two were teaching at the Atlantic Recreation Center. He picked up right where he had left off so many years before, and soon began specializing in oil paintings of the marsh. “I have lived on or near the marsh for forty years,” explains Shirley. “I like the panoramic view of vast expanses of grass and skies and the way the scene changes by the hour, depending on the light. I find it fascinating.” Others must also find those views fascinating, as his work is now displayed in galleries from Savannah to New Smyrna, with a special collector in Santa Fe, New Mexico. Even Sarah Palin has one of his paintings—one that features a McCain/ Palin sign sitting in the middle of the marsh. The Isle of Eight Flags Shrimp Festival has always been a successful time for him, and he sold 15 paintings there this year. He attributes it all to “working the crowd” and chatting with the people who stroll by. He entices them with a sign that says, “Buy my paintings now, before I become famous.” After denying his talent for so many years, Milt Shirley now says, “I just have to paint! I really love it!” With the Island Art Association’s new Art Education Center and so many classes now being offered, maybe some other “wanna-be” artists will be inspired to pick up their own paintbrushes.

Caring for an aging loved one BY PAMELA BROWN
I
f the time should come to begin caring for an aging loved one, you want to be as prepared as possible. Addressing some common financial issues today can help ensure that your loved one’s needs will be met.
FIRST STEPS It’s always a good idea to designate one family member to determine whether any legal documents are already in place— such as a will, living will, healthcare or durable power of attorney, or trust—to be sure his or her future physical and financial needs are met. Call a family meeting to evaluate current and future needs. If your loved one is still mentally capable, involve him or her in the process. Can your loved one remain at home? If so, discuss needed improvements for access and safety. Who will be responsible for property maintenance, routine cleaning, food, bills, etc.? Can he or she drive? If not, discuss transportation options. Identify the correct medications. Determine who will coordinate tax documents each year and designate a medical liaison, or consider hiring a care manager to assess the situation and make recommendations. Establish a team of potential caregivers consisting of family members, friends, neighbors, and health care professionals. Provide house keys to necessary members of the care-giving team so they can access the home, if necessary. Consider purchasing an alert system to allow your loved one to call for help in an emergency. Locate important documents, including a will, living will, healthcare or durable power of attorney, and any trusts that may exist. Take time to care for yourself physically and emotionally so you are able to care for your loved one. Gather personal information on one document, including your loved one’s legal name, date of birth, Social
Security number, and names and phone numbers of doctors, dentist, pharmacy, attorney, etc. Gather and assess information about assisted living facilities and other long-term care options to determine how costs can be managed. Now is also the time to research senior centers and adult day services in the area to help determine monthly expenses for home health services, meal delivery, and potential transportation options. Consider a physical therapist or gym membership to increase or maintain mobility. Obtain authorization from your loved one to access medical information to ensure Health Insurance Portability and Accountability Act (HIPAA) privacy laws are met. (Without authorization, medical providers are not allowed to share medical information.) Family or friends who have been through this situation can be valuable resources, too, as can organizations like Meals on Wheels and The National Family Caregivers Association.
FINANCIAL CONSIDERATIONS To help safeguard your loved one’s financial future, obtain authorization to access their bank or brokerage accounts and any safe-deposit box. Locate and review all of their financial records. Create a list of creditors, including contact information, and make a list of your loved one’s income, assets, expenditures, and debt. Establish a monthly budget to confirm the resources needed. You might want to consider automatic payment of important recurring bills to be sure nothing lapses, direct deposit of pay and benefit checks. A professional trust company can also be engaged to pay bills and manage property and assets. It’s also a good idea to review and update insurance coverage, including health (Medicare/Medigap), long-term care, life, home/renter’s and auto. Accompany your loved one to meet with a financial advisor to review/update beneficiaries to IRAs, 401(k)s, life insurance, annuities, and other financial accounts. While your loved one is in good mental and physical health, meet with an attorney to update or create applicable documents, like a will, a living will, a durable power of attorney, and a health care power of attorney. Remember: a few simple steps taken today can go a long way toward safeguarding the financial future of a loved one who is getting older.

wild for wildflowers Native wildflowers are both eye-catching and eco-friendly. BY BETTY MORRELL
T
he summer is heating up, and unfortunately there has not been enough rain to replenish the deficit in accumulated water. That makes it even more important to consider using native plants in our gardens. Many of these are classified as wildflowers and can be found along roadways, in open fields and wooded areas, and along beaches. The fact that there are no sprinklers in these areas proves that they are drought-tolerant. One eye-catching wildflower is the “Flora Sun” beach sunflower (Helianthus debilis). It is a great sand dune stabilizer, offering protection from wind erosion, as well as beautification. A native to our area, “Flora Sun” is a lowgrowing, tender herbaceous perennial. Its five-to-eight-inch-long deep green leaves alternate along the stem and are wedge-like to heart-shaped. At seven centimeters in diameter, its flowers are a bright yellow, cheerful daisy-like composite. The plant spreads readily by above ground stolon-like runners. The stem is hairy and the seeds are sticky, due to the presence of a resin. Under normal Florida conditions, Flora Sun can be expected to flower

Watering until well established is recommended for beach settings (up to six months), but watering should be done only when the plants show visible signs of stress.
from March through November each year. Perfect for our area, it is salttolerant and thrives in environments with a low amount of available water. The sunflower does not appear to be affected by insects. Although spots may occasionally appear on its leaves, they will disappear after approximately 30 days and do not require treatment. When its vegetation grows thick, it may sometimes experience decay underneath, likely caused by poor air circulation. “Floral Passion Blazing Star” (Liatris elegans) is a hardy perennial herb that is native to Florida and adapted to coarse, droughty soils. Its long upright spikes arise from a woody corn tuber and produce an abundance of delightful

lavender or purple wildflowers in the fall. Attracting butterflies and bees, these flowers create a bucolic natural setting. With its very open canopy, weed control can sometimes be a problem, but in mass plantings they are very eye-catching. There are two kinds of “Perennial Peanut” (ornamental). One has bladelike leaves and produces a large number of yellow-orange flowers, and the other has rounded leaves and yellow flowers. With a growth habit of one to six inches tall, this fast-spreading plant serves well as ground cover in place of a lawn. Green all spring, summer, and fall, it produces flowers throughout these seasons. In winter, it acts like normal grass, turning brown until spring wakes it up with rain and warmth. here has to be something special about a house to make a family want to purchase it twice. The house in question is a circa-1887 home in the historic district of Fernandina Beach, and Greg and Debbi Roland are the devoted homeowners. Greg and Debbi grew up in the area and were high school sweethearts at Fernandina Beach High School. For 29 years, Debbi has taught English at that same school they once attended, from which their daughter Bailee also graduated in 2008. In the 1980’s,

Debbi became involved in coaching the school’s cheerleading team, and she now has three local cheer teams and an allcounty team, having led her teams to an impressive nine national titles. “But it’s that tenth title that has eluded me!” says Debbi. “I hope I have a team I can bring that far soon.” Greg has been mayor of Fernandina Beach twice and served on the city commission for nine years. As a certified paramedic, he is district chief for the Jacksonville Fire and Rescue Department. On weekends, he fills in

when needed as a nurse in the Baptist Nassau Emergency Room. The Rolands had been looking for an historic home to renovate for several years, searching for that perfect home that would suit both their needs and their budget, when, in frustration, they decided to build a “new” historic home on a lot they owned. As they left the architect’s office, however, they noticed a new “For Sale by Owner” sign. They stopped and toured the home, then looked at each other in amazement: it was virtually the 40 AMELIA ISLANDER MAGAZINE • JULY 2011
same house the architect had drawn for them. “It was meant to be,” says Debbi. They bought the house in 1994 and began a project of extensive renovations. They updated all of the wiring and plumbing; they removed porches and rebuilt them; the bead-board was removed and dipped and stripped; and the list goes on and on. “I didn’t speak to Greg for six months, it was so horrible,” remembers Debbi. “It was like pulling a thread in a hem,” adds Greg. “Everything began unraveling.”

A lengthy renovation of the kitchen caused the most turmoil, however. “For a year and half, we dined in lawn chairs, with no appliances, while we washed dishes in the powder room sink,” recalls Debbi. When the dust from the renovations finally settled, they found that they loved both the home and living in the downtown. They also found that someone else seemed to love the home as well: a happy ghost. Bailee, as a very young child, had commented on “the man” in the house, and later the senior Rolands also became aware of his presence. They named him “Henry,” and went about their business of keeping up and enjoying their home. Yet, nine years after they purchased the home, Debbi discovered another “dream home”—on Kingsley Lake in Clay County, where they owned a small weekend cottage there. They jumped at

the chance to buy it, seeing it as their ideal retirement home. They sold the historic home and purchased a smaller home in the Lakewood neighborhood, planning to live there until Bailee graduated from Fernandina Beach High School, while spending weekends and summers in the Kingsley Lake house. After three years, however, they realized it was not so ideal after all—they missed their historic home in Fernandina Beach! Kingsley Lake was just too remote, and they missed being in walking distance to downtown Fernandina and their friends there. So they began searching for another historic home, similar to the one they left. And what should happen, but the family to whom they had sold the house heard about their search and contacted them, saying they were moving. The Rolands were delighted and
quickly signed a contract to re-purchase. Bailee was the one spurring them on, saying, “It’s the only house I have really known. It‘s home!” Several improvement projects still remained from their original to-do list, and it hasn’t been easy. Yet this time they knew exactly how much renovation was needed and they hired professionals to complete the work. Bailee is now a junior at the University of Georgia and is happy to be home again. She took over the 3rd floor as her “pad” and enjoys bringing her college friends to visit. Apparently, Henry is equally happy to have the Rolands back where they belong, as he continues to give them good vibes. Maybe they should have consulted Henry before they left the first time.

Pompeo’s ITALIAN CONTINENTAL CUISINE AND SEAFOOD RESTAURANT With authentic Italian dishes and a warm and friendly atmosphere, Pompeo’s has been a Fernandina Beach favorite for over 25 years. BY KAREN MILLER • PHOTO BY WILLIAM RASER
P
ompeo’s Italian Restaurant has been an icon on Centre Street for over 25 years. Owner Mario Pompeo, a native of Naples, Italy, was forced to leave school at age 12 to work at a nearby restaurant to help support his family. With his interest in the culinary arts, he eventually came to the United States, became an American citizen, opened his own restaurant, and is living the American dream. Today, Pompeo’s boasts an enormous menu, with something for everyone, and Mario himself, using many of his family’s secret recipes, makes everything from scratch. On a recent visit to Pompeo’s, my partner Rumsey and I were looking forward to some authentic Italian cuisine and Mario’s famous dishes. I usually order the mussels when I go, but this time we decided to try some new items. The special that night was Stuffed Crab Shells, and we started with that, as well as the Caesar Salad. Mario’s lovely daughter, Angela, suggested a glass of Citra Montepulciano D’Abruzzo, a ruby red wine that is dry, but well balanced with a hint of fruit and made a great pairing for our Italian dinner. The stuffed crab shells were loaded with crab, shrimp, green pepper, bread crumbs, and butter. With rich, succulent crab, it was a very nice starter for two. The salad was divine, with homemade Caesar dressing that is made the traditional way. The garlic is sharp and pungent, and all is tossed with crisp romaine and served with croutons. I could eat this salad every day! With hot rolls and butter, fresh out of the oven, it was even better. Since I was in the mood for seafood, Angela suggested Zuppa de Pesce over linguini as my entrée. Rumsey chose the Veal Marsala, served with spaghetti. The veal was incredibly tender, thinly pounded, and absolutely melt-in-your-mouth delicious. The sauce had a touch of sweetness from the Marsala wine, and the portion was very generous, with enough leftover to take home. My seafood dish was full of ocean delights: the grouper, clams, shrimp, scallops, and mussels were piled so bountifully that I could barely get to the linguini below. The
sauce was so wonderful I had to sop it up with my bread to get every drop. One of the things that impresses me about Pompeo’s is that they make their own pasta every day. I bought a pasta machine last year and have struggled with making my own from scratch, so I am amazed that they crank out that much pasta, like it is second nature. Angela laughs when she remembers making pasta as a young girl with her father. It was a daily task, and it still is.
For dessert, Mario baked up an Italian Lemon Cream Cake that spoke to my sweet tooth. The sponge cake was layered with dreamy, lemony custard. While it’s rich on the tongue, the cake still feels light and makes a fresh and sweet ending to a meal. Pompeo’s also offers great cappuccino and espresso – always a nice way to finish your Italian dinner. Family-friendly, warm and welcoming, Pompeo’s takes great pride in pleasing their many customers with homemade Italian dishes and pleasant service. Patio seating is available outside, as well, and they are open for dinner every evening except Tuesday.

O
ne of the challenges for cooking in the heat of the summer is creating something that sparks an appetite, yet is still light and refreshing. After all, by the end of a sweltering summer day, the last thing you want to do is sit in front of a big plate of hot food. For a recipe that teases the taste buds and makes you say “oh, I want that,” try this simple tomato salad. Nothing sings quite like tomatoes in the summer. Add some fresh berries, fresh mozzarella cheese, and balsamic vinegar, and a star is born! Remember, the key to this dish is the freshness of your ingredients.
A
s a chef, the question I hear most often is, “how did you get into cooking?” If you ask my mother, who confesses that she has never been a very good cook, she’ll tell you it was simply survival. The real answer is that my father got me into cooking. In the beginning, we would go into the kitchen and bang on pots and pans, having our own version of the Mad Hatter’s Tea Party. Spending so much time in the kitchen together, I soon developed a love of cooking. One of our favorite dishes to make together is seafood bisque. In this recipe, I take my father’s classic bisque recipe and give it a Surf-and-Turf twist. Enjoy!
TOMATO FRUIT SALAD SEAFOOD BISQUE WITH A TWIST 1 pint mixed tomatoes 1 pint mixed fresh berries (I use raspberries and strawberries) fresh mozzarella, diced drizzle of aged balsamic vinegar sprig of fresh mint Just toss together and garnish with mint for a quick meal after a long day at the beach.
The owner of Merge Restaurant, located at 510 S. 8th Street in Fernandina Beach, Chef Adam Sears is a graduate of Johnson and Wales Culinary School in Charleston, SC and the former Sous Chef of The RitzCarlton, Amelia Island. His wife, Tapha, is a representative of Premier Beverage and in charge of the wine program at Merge.
1 cup celery, onions (minced) 1 small can of tomato paste 1 stick of butter ½ cup flour 2 quarts seafood stock 1 green bell pepper, deseeded (keep in one large piece) 3 bay leaves 1 pint of heavy cream 1 cup sherry splash of Worcestershire sauce
½ tsp. ground cloves splash of Tabasco sauce 2 6 oz. beef filets, cooked to desired temperature 6 ea. jumbo shrimp, peeled and sliced in half 1 can lump crab 2 tbsp. Old Bay seasoning 1 quart beef stock 1 cup of mixed vegetables fresh corn, green beans, tomatoes
To make the bisque in a pot, melt the butter and add the celery and onions. Next, dust with the flour, trying to make it look similar to wet beach sand. Add the seafood stock and the small can of tomato paste, bay leaves, and the green bell pepper. Simmer for 10 to 15 minutes, stirring occasionally. Next, add the heavy cream, sherry, Worcestershire sauce, cloves, and Tabasco and continue to simmer for another 10 minutes. In a separate sauté pan, heat some olive oil and quickly sauté the shrimp, just until they turn a light pink. Remove from heat and keep warm. In the same pan, add the fresh vegetables, sauté for 5 to 6 minutes, and add the Old Bay and the beef stock and simmer for 9 to 10 minutes. Add the crab and warm shrimp and sliced beef to the reduced stock and simmer for another 2 to 3 minutes on low heat. To assemble, place a small amount of bisque on the bottom of the plate and spoon the seafood and meat mixture onto the bisque. Serve warm.
