When people talk about what makes Amelia Island such a special place, you usually hear a lot of the same themes: the climate, the beaches, the historic downtown, the hospitality of its people, and—more often than not—its beautiful trees. Unlike much of the rest of Florida, Amelia Island has a low-country ecosystem, with enormous live oaks stretching their twisted limbs to the sky, tall laurel and water oaks that provide shade, as well as hickory, Southern magnolia, red cedar, and plenty of pine trees. What remains of the tree canopy on Amelia Island forms a southeast maritime forest, which is part of the barrier island forest that originally ran from Virginia to Florida, through the Talbot Islands, and across the northern Gulf Coast. As Karen Miller explains in our cover story this month, a barrier island forest develops near the ocean and is characterized by a high canopy of live oak with an undergrowth of saw palmetto. As well as being visually stunning, the tree canopy regulates the climate because evaporation from the trees has an important cooling effect. When we moved into our house years ago, there was a majestic live oak on an empty parcel of land behind us. It had a thick, gnarled trunk and long, wandering lower limbs that reached up, then dropped towards the ground, and generally went wherever they wanted to. The tree stood about 20 yards from our property, its top branches extending far above our yard. We would often sit in the backyard in the late afternoon and watch the breeze gently blow through the upper reaches of the tree, swaying against the deep blue of the sky. It was one of the things we loved most about our backyard. Many of us have a favorite tree in our neighborhood or elsewhere around the island, or a strong attachment to one of our unmistakable tree-canopied roads. Three years ago, the Amelia Tree Conservancy (ATC), a coalition of Amelia Island citizens, was formed in an effort to preserve the island’s special trees and its maritime forest canopy. ATC is a partner and committee of the North Florida Land Trust, a 501c(3) organization committed to protecting and preserving the region’s natural and cultural resources. This month, we look at the important work of the ATC and share with you of some of its most treasured Amelia Island trees. Also this month, we feature some international students working here this summer; preview the recently announced line-up for the 2017 Amelia Island Book Festival; present another of our “Fernandina Faces” with Dickie Anderson; an “Island Entertaining” on creating your own summer gazpacho bar; an “Eating Scene” review of Cucina South; and much more.

I

n 2013, Amelia Island resident Lyn Pannone watched in dismay while ancient live oak trees were being destroyed at the corner of A1A and Fletcher Avenue in order to expand and improve the Flash Foods property. She discovered there was loophole in a city ordinance that stated as long as there was an existing building on any property, owners could do as they wished without getting a permit to cut down trees. Pannone attempted to block the tree destruction by sending a registered letter, upon the advice of Nassau County’s Growth Management Coordinator Peter King, directly to the president of Flash Foods asking him to rethink their plan. That was on Friday afternoon, January 18. Her attempt was in vain. On Monday, January 21, the trees were taken down, and Amelia Islanders grieved their loss. Angry and appalled, and with her heart breaking, Pannone stood on the job site and watched the trees being destroyed, one by one. That day, she made a decision to do whatever she could to get the city ordinance changed. She immediately organized several community meetings, eventually taking her cause to the Planning and Zoning Board.

“We had so many people come to our meetings, along with the public hearing, to change this ordinance,” says Pannone. “Nearly everyone on the island was behind our cause, and we got great media coverage. The law was passed unanimously, and that’s when we decided to form our current group, the Amelia Tree Conservancy, in order to continue to advocate for our trees, one of our most precious resources.” Three years later, the Amelia Tree Conservancy has become a diverse coalition of Amelia Island citizens dedicated to preserving the island’s maritime forest canopy. The ATC is a partner and committee of the North Florida Land Trust, a 501c(3) organization committed to protecting and preserving the natural and cultural resources of North Florida. Today, what remains of the southeast maritime forest on Amelia Island is part of the barrier island forest that originally extended from southern Virginia to Florida, through the Talbot Islands, and across the northern Gulf Coast. As a result of development, few areas of this maritime forest remain. A barrier island forest develops within close proximity to salt

spray, and is characterized by a high canopy of Live Oak and an understory dominated by Saw Palmetto. “The most common canopy trees in our Amelia Island maritime forest include Live Oak, Laurel Oak, Water Oak, Sabal (Cabbage) Palm, Hickory, Southern Magnolia, Red Cedar and several types of Pine,” say Margaret Kirkland, ATC’s Chairperson. “The understory includes Saw Palmetto, Wax Myrtle, American Holly, Yaupon Holly, Dahoon Holly, Sparkleberry, and Beautyberry. All of these trees help mediate our climate because evaporation from trees has a cooling influence. Trees in our maritime forests keep temperatures 20 to 45 degrees cooler during the summer months, and also reduce heat loss during the winter. Proper location of several mature shade trees on residential properties will save $100 to $250 in energy costs annually.” Lauri deGaris is a marine biologist, historian, and owner of Discover This Co., Inc., which provides walking tours and lectures that weave history with Florida’s natural resources. Amelia Island’s trees are a prime focus of her tours. “During the Spanish occupation of Florida, the final resting place for

many citizens of Amelia Island was Bosque Bello Cemetery,” says deGaris. “Named for the ‘beautiful woods’ located near Old Town, Bosque Bello Cemetery was established in 1798 and today is still filled with many of those original Live Oak and Red Cedar trees. These trees are silent soldiers standing guard over thousands of residents who called this island home for more than two centuries.” “There are a few remaining old pine trees on the island,” notes deGaris. “Pine was harvested and exported for centuries in Florida. The heart of the pine tree was favored for building homes, schools, churches, and more. Development of the railroad opened up the northern part of the state and fueled a large part of our economy during the 19th and 20th centuries. Many of those resting in Bosque Bello Cemetery are buried in caskets made of pine. Pine has also been an important ingredient in medicine. Prior to the 21th century, pine splinters, barks, and needles were used to treat a variety of ailments. These recipes came to the aid of many residents of Amelia Island and the rest of the South.”

TREASURED TREE SELF-GUIDED TOUR OF AMELIA ISLAND The ATC has developed a self-guided tour of Amelia Island’s Treasured Trees, which allows visitors to experience Amelia Island through the eyes of a tree. HISTORIC DOWNTOWN REGION Fernandina Beach has received certification as Tree City USA for 12 consecutive years in recognition of its numerous blocks of tree-lined streets. Thirty percent of these trees are Live Oaks. The remainder are a mix of Sabal Palm, Laurel Oak, Bradford Pear, Canary Palm, East Palatka Holly, Crepe Myrtle, and Magnolia. ATC recommends that you take time to walk through the various streets in the downtown Historic District to see its treasured trees, as if you are seeing them for the first time.

KATE’S TREE Approximately one hundred years ago, Ash Street was a shell road about to be paved, and it was home to a majestic live oak tree. Katherine Bailey lived across the street from the tree, in the home that is now referred to as the Bailey House. She was extremely upset when she and her husband were not able to convince officials to preserve the tree, so Kate decided to take matters into her own hands. “She spent her days sitting on the veranda of her house, holding a shotgun,” says Bailey Struss, Kate’s grandson. “Anyone who threatened to harm the tree was warned of the consequences! This tree stands today as a testament of one woman’s courage and persistence.”

FRED’S TREE Around the mid-1950s, Winn Dixie moved onto the property that is now occupied by Fred’s Department Store, located at 22 South 8th Street. The move was conducted long before air conditioning was available, so the most popular

places to park were in the shade under a magnificent live oak tree located in the store’s parking lot. Herbert McKendree had been hired by Winn Dixie to cut the tree as a preventive measure, because another store in Florida had reported a problem with falling limbs from a pecan tree. A barrage of letters from the local garden clubs went flying out to the Winn Dixie owners, the Davis family, who were living in Jacksonville, telling them to not cut down the tree. After a few days, Mr. Davis told McKendree that they he should not cut down the tree. The Maxwell family later purchased the property, where Fred’s Department Store was built, and had the tree added to the Live Oak Society. Today it is referred to as Fred’s Tree.

15TH STREET AND BROOME This spectacular live oak won “Most Beautiful Tree on the Island” in an informal poll of Amelia Tree Conservancy members when choosing trees for their Treasured Tree Trolley Tour. The owners of the property located at the corner of 15th and Broome streets bought their house because they fell in love with this particular tree. They invite the public to view

their tree from the street and ask that people honor their request not to step onto their property.

AMELIA ISLAND LIGHTHOUSE NEIGHBORHOOD The Lighthouse neighborhood is a typical example of a coastal barrier island environment. Live Oak trees along the marsh take the brunt of the wind and deflect it upwards, reducing wind speeds and protecting the trees and homes farther inland. The deflection of the wind upward also allows any sand or sediment to fall out of the air and create dunes, which also protect the interior of the island. This is why Live Oaks directly along the marsh are generally smaller and have a more bent and scraggly appearance. The Amelia Island Lighthouse in this neighborhood is listed in the National Register of Historic Places.

BOSQUE BELLO CEMETERY REGION Bosque Bello’s location appears in the original plat of Old Town in 1811 and was said to have been established by the Spanish in 1798. The old section of the cemetery is filled with large shade trees. The City is currently working on a long range plan for the cemetery, which will include

a landscaping plan to perpetuate its beauty. There are over 1,300 trees in the cemetery, totaling nearly 30,000 tree inches. The cemetery’s canopy is dominated by Red Cedar and Oak trees. Hickory, and a variety of Palms make up the remainder of the canopy.

EGANS CREEK GREENWAY Egans Creek Greenway was opened for public use in 2000. In 2004, the Florida Department of Transportation completed a project that restored much of the flow of Egans Creek from the north side of Atlantic Avenue to the south with the installation of a new system of flood gates. After over 50 years of minimal tidal flow beneath Atlantic Avenue, the north end of the Greenway again experiences significant tidal changes and flushing action, and salt marsh vegetation is again flourishing. The maritime hammock represented in the Greenway has been described by Florida Natural Areas Inventory consultants as of good to excellent quality with an old-aged canopy.

FORT CLINCH STATE PARK Fort Clinch State Park is an excellent place to see both mature maritime hammock and simultaneously visualize how history has influenced the development of the hammock. The Willow

Pond Trail runs through two distinct natural communities, beginning in a maritime coastal hammock. Dominant plants are Live Oak, Magnolia, American Holly, Laurel Oak, Paw Paw, Cabbage Palms, Yaupon Holly, and Eastern Red Cedar. The trail drops down into what is known as a depression marsh, where the dominant plants include Willow, Red Maple, Hackberry, Dahoon Holly, and various marsh plants.

AMELIA PARK REGION Designed in the 1990s as a traditional neighborhood development, Amelia Park is a community that values trees and native plantings as a core part of the daily experience for residents and visitors. Homeowners have planted native trees along the streets, gardens, and courtyards. In addition, trees were preserved along lakes and ponds, playground, the town square, and other green spaces and garden districts.

PETERS POINT PARK AND THE AMELIA TRAIL Peter’s Point, a public beach access with rest rooms, showers, picnic tables and shelters, grills, and free parking, offers not only a beautiful beach but also an excellent example of the maritime forest canopy located adjacent to the shoreline. In addition, a 13-mile round trip off-road hiking and biking trail called the Amelia Trail begins here.

CANOPY ROAD REGION Nassau County’s Canopy Road Ordinance has protected six corridors on the island and one off the island, including Amelia Island Parkway, Scott Road, Gerbing Road, Buccaneer Trail, Manucy Road, Suarez Bluff Road, and Meadowfield Bluff. The Board of County Commissioners may designate roads or portions of roads as scenic/canopy roads based upon certain criteria, such as historic significance, the existing scenic/canopy, and ecological significance.

AMERICAN BEACH American Beach was founded in 1935 by Abraham Lincoln Lewis and others. The great granddaughter of A. L. Lewis was MaVynee Betsch, a descendant of Zephaniah Kingsley and his slave wife, Anna. She was a memorable force on Amelia Island and a great advocate for American Beach and various environmental issues in a time of encroaching development. Her efforts helped lead to the protection of American Beach.

Arborist Danny Lippi to Speak at Wild Amelia Wild Night Lecture Series on September 13 at 7 p.m. Danny Lippi, International Society of Arboriculture certified arborist and qualified tree risk assessor, as well as University of Florida master naturalist instructor, will talk about the biology of tree growth, specifically how older trees grow in comparison to younger trees in his lecture, Historic Trees: The Science Behind the Preservation and Conservation of our Largest Specimens. Lippi will share how trees respond to stressors over time. He will also talk about structural stability, energy and nutritional flow, and mitigation of potential risks when dealing with older trees. Videos and images of some of the largest trees in the Southeast will allow viewers to experience a little-known world within the canopies of these southern giants. Lippi’s presentation will be held at the Peck Center, 516 South 10th Street. It is free and open to the public. AMELIA ISLAND PLANTATION Charles Fraser and his Sea Pines Company of Hilton Head bought 2,000 acres of uplands and over 1,000 acres of tidal marshes in the 1970s with the goal of developing a residential resort community that existed in harmony with nature, balancing development and preserving natural beauty. It wove roads and development through the ancient live oaks, not over them. It called for limiting beach development to the secondary dune line, preserving the primary dune line for storm protection and recreational uses. ALS GOLF CLASSIC CELEBRATES ITS 12TH YEAR When John Louis O’Day retired on Amelia Island in 1996, little did he know that in just two short years he would be diagnosed with ALS, or Lou Gehrig’s disease. Within four years from diagnosis, O’Day would lose his life to this progressive and fatal disease. In 2002, O’Day left behind his wife, Ardith, five children, 12 grandchildren, and many friends and family members. After O’Day’s passing, his son, Mark, decided to start a yearly golf event to honor his father’s memory and raise money for the ALS Association Florida Chapter. “Besides money going to funding research, proceeds also help families whose loved ones are suffering from the disease,” says Mark. This year’s tournament will be held on Friday, August 5 at The Golf Club at Long Point. n 1980, Jim Marino was a physical therapist in Kansas City. His wife, Shay, was a registered nurse. The couple’s dream was to start their own practice, and, in 1989, they opened Nassau Physical Therapy (NPT) in Callahan. Six years later, they opened the Fernandina Beach office, and today NPT is the only locally owned and operated outpatient private practice in Nassau County. It’s “Your Hometown Team”. From adolescents to geriatrics, NPT’s patients receive treatment for acute, chronic, work and sport injuries, postoperative and neurological conditions, and general health and wellness. I

t’s summertime, and the living may be easy, but with a record 250,000 or so vacationers flocking to our shores, summer is always a challenge for Amelia Island eateries like Sliders Seaside Grill. In summer, up to 2,000 hungry customers a day relax and recharge at Sliders. “To keep up with the crowds, we more than triple our workforce. From 40 to 45 employees in the winter, we grow to roughly 130 in the summer; 170 if you count part-timers,” says Corey Crosby, Sliders manager. Filling summer jobs is seldom easy, and with several new restaurants on the island, competition for reliable staff who keep people satisfied and coming back again is an ongoing challenge. Restaurants have to be creative, says Crosby. That’s why on your next visit to Sliders, you may be greeted by Teodora, Ivana, or another of 20 smiling Serbian college students, who flew 5,400 miles from Eastern Europe to work this summer. They are enrolled in a Serbian program that finds international jobs for about 2,000 student interns every year. The students applied for the program months ago. Those who qualified and passed the entrance exam then applied for jobs in a number of destinations scattered around the world. At Sliders this past spring, after qualified local applicants (their first choice for employment) were signed on, a Sliders representative flew to Belgrade for interviews. Out of 80 candidates interviewed, 35 were chosen for jobs here and at Sliders’ two other locations. “We looked for fast learners with excellent English skills because there’s little time for training. By the time they arrive, our summer season is already in full swing,” says Cason Zylinski, Sliders’ self-described “director of fun things.” The Serbian students work similar hours and are paid the same salary as Sliders’ other new employees. But before they even start, they have the upfront expense of work visa arrangements and round-trip air fare from Serbia. They are also responsible for rent and living expenses at several shared condos within walking or biking distance of the restaurant, and any

internship requirements must be met (such as 520 hours on the job). At the end of the summer, Sliders evaluates their work and sends grades back to their universities. This is Sliders’ second year with the program. Teodora and another student enjoyed Amelia Island so much last summer that they returned this year, and even encouraged friends to apply. “It’s so safe, calm, and peaceful,” she says, “and the people are really friendly.” Teodora hopes to become a chef one day, and she might even come back again next year. While others are pursuing restaurant careers, Ivana is working on a master’s degree in Information Technology and taking unpaid leave from her IT job in Belgrade. When she has time-off here, she “just chills at the beach. I needed a vacation from computers,” she says. Before heading back to school, the students have an extra few weeks to relax. Whether they choose to explore other parts of the U.S., or just keep chilling on Amelia Island’s beaches, these smiling, hardworking Serbian visitors deserve their own relaxing vacations after contributing so much to ours.

ith a “dream team” of literary superstars confirmed, the Amelia Island Book Festival announced the line-up for its 16th annual festival, scheduled for February 16 – 18 next year. Participants will enjoy the company of world-renowned and New York Times bestselling authors Steve Berry, R.L. Stine, David Baldacci, Mary Kay Andrews, Joseph Finder, Lara Adrian, and others, all benefiting the festival’s acclaimed Authors in Schools Literacy Program. The program brings noted authors to every public school in Nassau County, offering students an opportunity to hear and meet the authors. Each student also receives a book from that particular author. The festival is proud to announce that Steve Berry is returning as honorary chairman for a second year. The international number one bestselling author, known for his trademark mix of fact, fiction, history, and speculation, has just published his provocative new thriller, The 14th Colony, making this number eleven in the famous Cotton Malone series.

Berry is author of other bestsellers such as The Patriot Threat, The Lincoln Myth, The King’s Deception, The Columbus Affair, and many others. A

dynamic couple, Jill and Gregg Dillingham have made a huge impact on the theater scene on Amelia Island— especially the musical theater. Their dream, the Amelia Musical Playhouse (AMP), is now in its third year. Originally from New Jersey, Jill taught music and drama to K-8 students in the Florida Keys for 30 years. She has a B.A. in music from Upsala College and a Master’s degree in music from Florida International University. She taught music education for Nova University and Barry University in Miami. Jill has been performing since she was a child. Favorite roles include Dolly in Hello Dolly, Joanne in Company, and Rose in Gypsy. And she might love directing even more than performing. Directing Sweeney Todd is one of her best theater memories. Gregg is originally from California, and he and Jill met in the Florida Keys. Gregg’s love is creating the scenery that makes the performances at Amelia Musical Playhouse so successful. Gregg has five children spread from the Florida Keys to California. Jill’s daughter is in grad school in Tampa, and her son is active in theater on Amelia Island. So how did they end up on Amelia Island? Like so many before them, the Dillinghams came for a vacation and fell in love with the island. In Amelia Island, they found a community that loved theater and music, and they were soon involved in local productions. Theater and music have been a part of the couple’s lives in the Keys and on Amelia Island. Both have been active at Amelia Community Theatre (ACT), where Gregg served on the board, built many of the sets, and with help from his son, renovated Studio 209. Both Jill and Gregg smile when remembering an ACT production of Into the Woods. She directed, and he created a magical forest for the successful show. The Dillinghams recognized the need for a performance venue for the many people who wanted to sing and perform regularly. Along with Mary Williams and Nanette Autrey, Jill started a community choir in 2010, but found it more and more difficult to find rehearsal and performance space as the group grew.

Soon, they were noticing the potential in a deteriorating building located mid-island. Many of their friends are musicians, singers, actors, and directors, and they were eager to help. They all pitched in, working, painting, doing yard work, whatever it took. The couple loves the intimacy of their oddly shaped building, and they have no plans to change it. The Amelia Musical Playhouse has been successful from its earliest days, with nearly every show sold out. “We have brought in so many new people in all aspects of theater management and production,” says Jill, “and made so many friends along the way. One of our members coined the term ‘fAMPily,’ and it has stuck for good. It really does feel like a family.” Many performers and volunteers are active in both AMP and ACT. The Dillinghams value the give-and-take with their performers and volunteers, encouraging them to bring ideas. If the ideas are feasible, the show goes on. The theater prides itself on the variety of performances it offers, which include fullfledged Broadway shows, one actor shows, musical reviews, and on a regular basis, The Rocky Horror Picture Show, a favorite. continued on page 46.

The couple applies their talents to whatever the successful theater needs. With Gregg’s passion for building sets, he tries to give each show a different look and feel. If he wakes up with an idea in the middle of the night, he jumps in the car, heads to the theater, and works for a couple hours. He insists on changing sets with the curtains open because it keeps the show flowing. Jill even makes the goodies offered free at each show’s intermission. Jill and Gregg are also very committed to the community, and they have produced shows and hosted fundraisers for numerous local groups, including: Friends of the Library, the Nassau County Council on Aging, America’s Youth (Hope House), the GFB Women’s Club, and the ALS Foundation. Thanks to Gregg and Jill Dillingham, Amelia Island has even more opportunity to experience and participate in the wonderful tradition of community theater.

Fruit Punch-Cranberry Cocktail

feathery foliage In the heat of summer, a new Dianthus called Fruit Punch-Cranberry Cocktail offers intense color, while ornamental grasses add elegance to borders. BY BETTY MORRELL

T

he three “h” dog days of summer are here—hazy, hot, and humid. Summer showers keep plants in good condition, but Milorganite can give them all boost. This fertilizer won’t burn, and it greens up and strengthens the root systems of your favorite plants. Our beautiful perennials have appeared again to share their magnificent colors and fragrances. I love perennials because they are so reliable, and if they don’t like the weather, they nap and reappear when the weather warms up. All gardeners have their favorite plants, and I have a few I’d like to share. The ever-popular Dianthus now includes Fruit Punch-Cranberry Cocktail. The intense cranberry color of these double blooms pack a punch in the early summer garden. Mounds of feathery gray and green foliage also add color all season long. This fragrant plant grows 8 to 10 inches in full sun, and blooms from May to September. Plant it in well-drained soil with a neutral PH. This may call for an occasional dusting of lime. Once the first flowering is complete, spent flowers

should be removed. Dianthus is excellent for rock gardens, border plants, or just scattered throughout the garden. I’m also very excited about another new plant. Heuchera Stainless Steel is a hardy Coral Bell. This plant adds a glimmering sheen to shady spots, and in spring, its silvery-lobed leaves blush reddish-purple, and then mature to clear silver with green veining. The undersides are a complementary purple which enhances the show. Dark purple flower stems hold large, creamy white flowers, which bloom from pink buds. They feature a great combination of foliage and flowers that match up with many other shade/ part-sun plants like ferns, hosta, bulbs, and woody plants. Stainless Steel thrives

in well-drained, organic-enriched soils. It attracts hummingbirds, and when not in bloom, the foliage takes center stage. I’m having trouble pronouncing the botanical name of a new grass I like. Smoke Signal (Schizachyrium scoparium) is a stunning grass that caught my eye. Its blue/green foliage stands upright and it’s a tidy grower, changing to red in late summer, then reddish purple in fall. Small, wheat-colored seed heads appear on the stems in autumn. Grasses are at home in mixed borders of perennials, bulbs, and shrubs. Consider it with summer and fall-blooming perennials such as Phlox, Rudbeckia, Asters, and Oriental Lilies, but Smoke Signal also makes an elegant statement on its own. Fertilize ornamental grasses in spring with a balanced fertilizer. However, it’s not recommended to fertilize in their first spring, in order to give the roots enough time to settle before having to support the lush new growth on top. ob Fisher and his wife, Sandra, fell in love with Amelia Island while they were celebrating their thirty-third wedding anniversary at The Ritz-Carlton, Amelia Island. It was February 1995, and surprisingly, the weather was perfect. Amelia’s sparkling beaches, moss-draped live oak trees, and the island’s Southern hospitality so charmed the Fishers that they bought a house at Golfside South only six days later. “At the time, we had a home in Savannah, in the historic district,” says Bob. “We spent our time between our two residences. We enjoyed the best of both worlds.” But tragedy struck the Fishers when Sandra developed Alzheimers’s disease. As her illness progressed, Bob made the decision to move to Amelia Island full-time. When Sandra lost her battle to the disease, Bob decided to downsize, and he

began his search for a smaller home on the island. “At first, I really liked Amelia Park,” says Bob. “But when I saw the amenities at Osprey Village and looked at a wonderful house that backed up to a wooded preserve, I knew that’s where I wanted to live.” “Our home at Golfside was considerably larger, and Sandra and I, being collectors, had acquired so many things, and I didn’t want to give up our collections.” Bob carefully measured the space, created a floor plan, and figured out where all his furniture and artwork would be placed in the new house. “Even though the house was smaller, I was able to keep 85 percent of our collections,” says Bob. “After I moved into Osprey Village, I realized that I had become a slave to my other house, with the pool, the landscaping, and all of the upkeep you have when living in a large home.” The Osprey Village community provides fine dining, concierge services, transportation, and social events in and around Amelia Island. Pets are always welcome, which is important to Bob and his three dogs, George, Gracie, and Max. “The staff here provides everything,” says Bob. “They do weekly cleaning, including changing the sheets and making the beds, cleaning the bathroom and kitchen, dusting, vacuuming, mopping, and even deep cleaning once a year. For meals, I can eat in OV’s dining room, which is quite elegant, or I can order takeout. This community has allowed me to enjoy my house, my collections, and still be independent.” Bob has been an Anglophile since he was a child, and a true antiquarian at heart. “My first set of toy soldiers came from Marshall Fields when I was a young 52 AMELIA ISLANDER MAGAZINE • AUGUST 2016

boy,” says Bob. “My interest in British history continued through adulthood.” He is particularly drawn to military uniforms, paintings, coaches, and other memorabilia. He has also saved many of his own childhood toys. And though he had to downsize his collections when he moved to Osprey Village, there was still plenty of room to display his dearest objects. His favorites are his toy soldier collections, one of which recreates the Battle of Waterloo, marking the defeat of Napoleon Bonaparte. But Bob was not the only collector in the family; Sandra collected bears, many of which are still displayed at the Osprey Village home. “We always had a ‘bear’ Christmas tree,” Bob fondly recalls. “The top of the tree started with small bears, and they got bigger as the bears descended down the tree.” The residence features many of Sandra’s favorites, including a handmade bear chandelier which graces the dining table, and a stone Winnie the Pooh bear that keeps watch outside on the back terrace.

Bob takes great pride in his home, both inside and out, and his gardens are a delight to everyone who visits. He hires a gardener who helps with the work, but he designed and planned the landscaping himself. There’s not a spot in his front or back yard that isn’t gloriously bursting with colorful flowers, including Knockout roses, Drift roses, Pentas, and his beloved blue and white Plumbagos. He also keeps his five bird feeders wellstocked, attracting local and migratory species like cardinals, chickadees, Carolina wrens, woodpeckers, and an occasional painted bunting. “When I saw that the house was adjacent to a forest preserve and that I could hear the ocean from the terrace, I was hooked,” says Bob. “The terrace is a wonderful place to relax with a cup of coffee or a glass of wine and watch the birds. It’s very serene.” But Bob is not one to sit and relax very long. He is active and independent, with a penchant for entertaining. “One thing I like about living here is that I enjoy a very rich social life,” says Bob. “I entertain a lot, and the kitchen staff at Osprey Village is so good to me, really top-notch. They provide everything I need, including a bartender. We’ve had some great parties here, and I’ve made many new friends. Osprey Village is really the perfect place for me.”

Cucina South With delicious antipasti and salads, fresh seafood, and traditional favorites, Cucina South is the perfect place for a memorable Italian meal. BY KAREN MILLER • PHOTO BY WILLIAM RASER

wo years ago, Tim Seyda of Bar Zin Restaurant jumped at the chance to open another restaurant a few doors down from his existing eatery in the Palmetto Walk Shopping Village. With the help of his friends, John and Kelly May, Cucina South has become one of Amelia Island’s favorite Italian bistros! On a recent evening, I invited my friend Sherry to join me for dinner there, and Chef Robert Croom was ready to treat us to a memorable meal.

Our server, Todd, began by bringing us each a glass of wine; for Sherry, Anselmi San Vincenzo, a medium-bodied white that was dry and fresh, and for me, Santa di Vermentino, another Italian white. Both paired well with Cucina South’s bruschetta and tapenade. The tapenade was chock full of olives, roasted red peppers, cherry peppers, sun-dried tomatoes, basil, and extra virgin olive oil, and topped with shaved Parmagiano Reggiano cheese. Such a delicious starter for our traditional Italian dinner. Todd then brought us Roasted Egglant Rolotini, an antipasto dish that consisted of eggplant wrapped around fresh mozzarella, nestled in marinara sauce, and then topped

with alfredo sauce. I love eggplant, and Todd told us that Chef Robert flash fries the eggplant for a few seconds, and that’s what makes it tender and rich. The marinara and alfredo sauces are homemade, of course, and the two together were incredible! I convinced Sherry to share a bowl of Italian Leafy Salad, which is one of my favorite menu offerings. The leafy greens are lightly dressed with a champagne vinaigrette, then topped with tomato, basil, red peppers, feta cheese, toasted pine nuts, and green onions. Sherry noted that the dressing had a “chiffon finish,” and that’s the perfect description of this salad. While many types of vinaigrette can be tangy and acidic, this dressing was much gentler on the palate. A superb salad! Todd suggested we order Seared Sea Scallops, and we agreed. They sounded wonderful. Served with spicy capicola, roasted red peppers, baby arugula, and creamy gorgonzola sauce, the scallops and sauce were sitting atop a plate of linguini, and they were impeccably cooked. They were well seasoned and seared to perfection. Capicola is spiced and smoked pork shoulder, and it adds a pleasant, smoky flavor to this dish, which is extremely rich and satisfying. I decided to stay with white wine for this dish, and Laguna Chardonnay from the Russian River valley was a great pairing, with its silky texture and lingering finish. Sherry ordered Capestrano Montepulciano, a medium-bodied red from Abruzzo, Italy, a robust, well-balanced wine with notes of maraschino cherry. Both of these wines were quite agreeable with our rich scallop and pasta dish! For dessert, Kelly had prepared a special treat, a Coconut Tres Leches Cake. Normally, Tres Leches Cake is a sponge cake drenched with evaporated and condensed milk, and cream, but this cake also contained coconut milk. What a delight! The cake was moist and custardy, and one of the reasons I always save room for dessert at Cucina South. azpacho is a chilled summer soup, originating in the southern Spanish region of Andalusia. It is refreshing on a hot, summer day and it makes a great main dish for a party. Although traditional gazpacho recipes are made only using vegetables like tomatoes and cucumbers, at my house we like to add other goodies to make the dish more filling, like chilled shrimp or shredded chicken. I recently hosted a party that featured a gazpacho bar, with three types of gazpacho and lots of add-ins like seafood, quinoa, avocados, and other fresh ingredients. Guests were encouraged to

help themselves to whichever soup they preferred, and top it with their favorite add-ins. Some of my guests even mixed the soups together! The three soups I served consisted of a traditional red gazpacho, made with my own garden tomatoes, a green gazpacho made with tomatillos, and a yellow gazpacho made with yellow peppers, yellow tomatoes, and corn. I also served three light wines for guests to pair with their creations, along with lots of crusty bread. This is about the healthiest dinner party you could host, so feel free to make a decadent chocolate cake for dessert!

Green Tomatillo Gazpacho Ingredients 2 pounds tomatillos, chopped 1 cucumber, cut into chunks 2 Tblsp extra virgin olive oil 3 Tblsp lime juice 3 cloves garlic, peeled 1 avocado, peeled 1 green pepper, chopped 2 jalapeno peppers, chopped Salt and pepper to taste Vegetable broth

Yellow Gazpacho Ingredients 2 cups fresh corn kernels 1 large yellow pepper, chopped 5 large yellow tomatoes, chopped ½ onion, chopped 3 Tblsp extra virgin olive oil 3 Tblsp white wine vinegar Salt and pepper to taste Vegetable broth Preparation Place all ingredients except salt, pepper, and vegetable broth, into a food processor and pulse. Add broth if soup is too thick. Continue to pulse until the soup is smooth. Taste and season with salt and pepper. Chill before serving.
