August can be pretty warm on Amelia Island, and our minds often turn to new and innovative ways to beat the heat. Usually, those methods involve water sports or airconditioning (like the movies). But another intriguing way to take our minds off the heat this summer might just be the most rewarding. When we decided to feature the Nassau Humane Society and adoption success stories in our August cover story, we discovered something that surprised us. Sherry Merritt, director of operations at NHS, told us that summer is “kitten and puppy season” on Amelia Island. Wow, we thought, kitten and puppy season! What Sherry meant by that was that during the summer months, when many people are away for extended periods, animal shelters across the country, including on Amelia Island, struggle with a dip in volunteers and donations. That means that kittens and puppies keep arriving, but less volunteers are available, as well as less money to take care of the animals. That means NHS needs people now more than ever to help by fostering animals, walking dogs, or simply spending time with them to socialize them for adoption. If you or your family has any time this summer, think about volunteering for a few hours at the shelter. Your time will be well spent, and who knows who may follow you home? We read the success stories in this issue with great interest because our family is living through its own success story! Three years ago, we adopted a dog named Thumper, and we haven’t been the same since. He is a Chihuahua/Dachshund mix, and he has become a very important part of our family. He is very intelligent, full of love, and the kids are crazy about him. And he had us trained in no time! The love that a dog or a cat brings into a home is very special, so if you’re looking for an animal, or you have some time to help out this summer, please contact the Nassau Humane Society. We are also pleased to welcome Michael Gass as our new “Eating Scene” writer. Michael is well known to many of you from Kelley’s Courtyard Café and as the Culinary Arts teacher at Fernandina Beach High School. Michael is a graduate of FBHS and Johnson & Wales University in Charleston. We look forward to working with Michael and sharing his insights on food with you. Also, this month, we have an article on the innovative methods of Amelia Island’s dedicated teachers; a “Fernandina Faces” from Dickie Anderson; a feature on ARIAS and its Instrument Zoo; and much more. t’s summer at Nassau Humane Society, and that’s not the easiest time of the year for the organization, with people on vacation and the shelter low on volunteers and donations. In fact, most animal shelters across the country suffer during the summer months as they try to keep up with the endless stream of kittens and puppies coming though their doors. “Summer is kitten and puppy season,” says Sherry Merritt, NHS’s director of operations. “Our shelter is full, and we are always in need of people to help foster these animals, and socialize them, so they will be more adoptable.” NHS also partners with Nassau County Animal Services in Yulee, trying to connect people with their “forever” companions. Adoption counselors match families with animals, both dogs and cats, using videos, still photos, and live adoptions, where people can meet the animals who need homes. Volunteers are what make the system work. “We have 25 to 30 volunteers who foster kittens, 15 to 20 people who walk dogs three times per week, and an adoption wagon that takes animals out to meet the public,” says Sherry. “We also operate a food bank for people who might not be able to afford pet food. Our resale store, “Second Chance” has 15 to 20 volunteers working there. Our dog park provides a place for pet owners and their dogs to run and play and swim in the pool.”

ill Raser and his wife, Linda Lane, recently said goodbye to their cat, Lofton, Bill’s constant companion for many years. Bill was broken-hearted when Lofton passed away, which left a void in their family. “I was lonely for my cat,” says Bill. “I’ve always been a cat person—and Linda became a cat person, too. We both missed Lofton.” Bill stopped into Pet Supermarket one day to visit the NHS cats and one in particular nuzzled up to him, a tiny, grey eight-week old kitten. “I believe that this kitten adopted me, not the other way around,” laughs Bill. “I took her out of the cage, and she immediately climbed onto my neck. I was instantly smitten.” Bill and Linda named her Annie, and in just a few days she became part of the family. She sits in Linda’s lap every morning when Linda reads the newspaper, and sleeps under the covers with the couple every night. “She’s so entertaining. In just the few weeks we’ve had her, she’s adjusted well, and what a personality!” says Bill. “She’s particularly fond of my Alf doll, and she loves to sleep at the foot of our bed.”

S
andy and Gregg Balzer work as volunteers for the Nassau Humane Society, including fostering animals that need temporary homes. The couple has been involved with NHS for almost 12 years, working in various capacities, as well as serving on the NHS board. Sandy even worked as shelter director at one point. Their nine-year-old lab/pit mix, named Stuey, came to them as part of a litter of puppies. The couple fell in love with Stuey, in spite of the fact that he had several health problems and was bound to lead a challenged life. “Stuey is so smart, and his personality is so sweet,” says Sandy. “He greets everyone he meets with a toy in his mouth. He loves visitors, he gets along well with kittens, and he’s so funny!” Ten-year-old Tootie came to the Balzer family after their other cat passed away. “Tootie is the best cat,” says Sandy. “He’s also very sociable and enjoys attention. He loves sleeping on my head at night!” The two companions are so good with other animals and people that when Sandy and Gregg foster kittens for NHS, the kittens become well-adjusted to dogs and other cats, making them more adoptable.
Trish Metz and Beamer
T
rish Metz came to Amelia Island from Ocala, where she had a career breeding horses and standard poodles. Two years ago, upon the death of her dog, Beau, Sherry Merritt asked her to let her know when she might be ready to adopt another dog. Trish was grief stricken, but four months later, she was ready to welcome a new companion into her home. Sherry had a standard poodle for her, a stray, named Beamer. “That poor dog was a mess. He had been on the street, but as soon as we met, we had an instant connection,” says Trish. Today, Beamer works as a therapy dog, and Trish works as a volunteer for NHS, walking dogs, and she works at NHS’s Second Chance resale store. “Beamer has the best temperament,” says Trish. “He’s very quiet, and he connects with people. He visits Osprey Village and Quality Care. He’s such a wonderful companion to these people. He has this way of coming up to a person and leaning on them gently.” Trish and Beamer can often be found walking in the downtown Historic District, where Beamer has many admirers.

artinique Lemke is the owner of Redbones Dog Bakery & Boutique, located at 809 South 8th Street. For many years, she has worked as a volunteer for NHS and for Nassau County Animal Services in various capacities, including holding dog adoptions, providing donations, working on the NHS board, and adopting six dogs and one cat over the years from both shelters. Pinette and Betsy are her constant companions in the shop, greeting customers and their canine pals as they come through the door and snacking on homemade tasty treats that Martinique has created especially for them. Martinique started the very popular event, “Puppy Kisses,” which she held on Saturdays in front of her store, where NHS dogs and their future “forever” owners could hold a meetand-greet—complete with kisses—for only $1. She also has a donation jar in the shop where she collects money for both shelters, and she carries several lines of products that donate a portion of their revenue back into the shelter system to provide a better life for shelter animals throughout the country.

inda Windt adopted Onie five years ago after what she calls a “foster failure,” what happens when a foster parent falls in love with their foster dog or cat. “After my husband died, I worked as a volunteer at NHS as a dog walker,” says Linda. “That’s when I met Onie and decided to foster him. He was a wonderful dog, exceptionally friendly. Onie doesn’t know a stranger!” Onie was such a good dog he became a Canine Good Citizen through a six-week American Kennel Club program to promote the training of well-mannered dogs. “Onie is truly a remarkable dog,” says Linda. “He’s a goodlooking dog, stunning actually—a shepherd/golden/chow mix—very calm, and a good swimmer, too. He’s also a therapy dog.” Onie connects with patients at Quality Health and also volunteers at America’s Youth, a safe place for at-risk children that provides activities and learning opportunities for Nassau County’s youth. “The children love Onie,” says Linda. “And he loves them. He’s so good with the kids, and they really respond to him.”

W
hen Julie Ruppel and Chris McComas decided to move in together, they each brought a dog into the relationship – Lola and Gus. “We wanted to adopt another dog from NHS, and we had a specific animal in mind,” says Julie. “After we got to the shelter, we discovered the dog wasn’t going to work out and we were feeling pretty bad about it. So Chris and I went to sit in the cattery there, just to have some quiet time and talk.” While in the cattery, a cat named Mr. Winkle curled up in Chris’s lap, and he was instantly taken with him. “Mr. Winkle had some skin problems, and one of our dogs had similar problems,” says Julie. “We knew that we could help Mr. Winkle by getting him on a special diet. We fell in love with him.” But their love didn’t stop there, because a few minutes later they met another cat named Rocky, who had been sleeping in a closet. “The cats got along with each other, and we loved both of them!” Rocky, 6, and Mr. Winkle, 10, were well-socialized and they adapted to Julie and Chris’s home quite well. “They’re great with the dogs, and even though Mr. Winkle was a street cat, he was very well-adjusted. Rocky is very playful. He even fetches, and loves to play with toys.”

ran Clark was a volunteer with NHS in 2006 when she introduced an emaciated year-old Doberman Pincher to Sherry Carter, who had recently lost her other two Dobermans to old age and cancer in a short period of time. For Sherry, it was love at first sight, and Fran handed her the leash that very day. Sherry, however, wanted to adopt two Dobermans. “I feel these dogs do better when they have a companion, so within three months, Fran found me another Doberman who needed a home.” She named the dogs Annie and Penny, and each had her own unique personality. “Annie was young, cautious, and more reserved,” says Sherry. “Penny was older, confident, queen-like, and she loved affection.” Both dogs loved their new home instantly, and Sherry feels that was due to the fact that they felt safe and secure with her. “I had a true connection with these dogs, and within a few months, they were nourished and happy.” Penny died of old age three years ago, but the young Annie continues to thrive under Sherry’s care. “Annie loves the beach, she loves to run and swim, and she’s got an adventurous spirit,” says Sherry. “We both miss Penny a great deal, but Annie has become the queen dog now. She’s matured into a faithful and loving companion.”

en and Loretta Ernst have been working as volunteers at NHS, walking dogs. But it was two cats that caught their fancy, Beau and Jax, kittens they fostered when the cats were so tiny they needed constant care. “They were street kittens, and Beau was the runt of the litter,” says Ken. “But we couldn’t resist them, and what characters they turned out to be!” “Jax is a food hound,” laughs Ken. “He loves to eat. And he’s very smart. He has learned to fetch—he loves crumbled pieces of paper.” But Jax isn’t the only talented cat in the Ernst household. Beau has learned how to open doors, and he does not like to be ignored. “Loretta works at home, and both of the cats love to lounge on her desk while she’s working. The cats like people very much. They’re so friendly. Basically, they run the house.”

Residents of Nassau County will soon have access to the most advanced surgical care as Baptist Nassau’s new surgery center has reached its highest point of construction, or “topping out.” Hundreds of the hospital’s patients, employees, volunteers, and physicians signed the final beam, which was raised to the top of the new building. With the new surgery center, patients Hospital President in the community Ed Hubel will have access to the most advanced medical equipment in an ultramodern facility without leaving Nassau County. The four smart operating suites will have ceiling-mounted equipment allowing medical staff to control equipment at their fingertips. The new center will be completed in December 2017. It was designed for future expansion, including additional operating suites. The contractor is Brassfield and Gorie. “This new facility allows Baptist Nassau to meet the demands of all our surgical specialties, enhances the patient and family experience, and provides the foundation to grow with the community,” says Hospital President Ed Hubel. Baptist Health is comprised of Baptist Medical Center Jacksonville; Baptist Medical Center Beaches; Baptist Medical Center Nassau; Baptist Medical Center South; Baptist Clay Medical Campus, and Wolfson Children’s Hospital. OSPREY VILLAGE HONORS 2017 SILVER PEN SCHOLARSHIP WINNERS Osprey Village retirement community recently gave away cash prizes to four winners of the community’s Silver Pen Writing Competition in a recent awards ceremony. After the ceremony, the winners and their families enjoyed a reception with community members and staff. Osprey Village started the scholarship in 2012 with two purposes in mind. The primary goal was to help local high school students attain their collegiate dreams through financial assistance. The second motive was to help the students consider viewpoints of multiple generations through writing on topics relating to older and younger generations. The 20 essays were judged and chosen by residents Joan Phelps, JoAnne Gallo, Norma Ceraolo, and Jo Merman. 2017 winners include: Lauren Katie Rojas, Lauren Kilburn, and Kilburn, first place; Katie Rojas, second place; Haley Haley Cox. BEAT THE HEAT AT FERNANDINA BEACH POOLS The kids may be back in school this month, but summer is far from over! In addition to the Atlantic Ocean to squelch the summer heat, Fernandina Beach Parks and Recreation features two swimming pools that are open to the public, with a wide variety of aquatic programs and family swim times. The Atlantic Recreation Center, located at 2500 Atlantic Recreation Center, features a year-round outdoor pool and kiddie pool, and offers swimming lessons, water aerobic classes, and is used in the evenings by local swim teams. The pool is heated during the cooler months and is handicapped accessible. The Martin Luther King Jr. Center pool, located at 516 South 19th Street, is only open during the summer months, with a variety of aquatic programs. Cost for both pools is $3 per day for city residents and $5 per day for non-residents, with one-month and four-month passes available. rt on Centre recently celebrated its second business anniversary on Amelia Island and it is continuing to expand its business by representing over thirty-five North American artists, including several from the local area. Jim Lawrence states, “We appreciate of all of the support which we have received from the local community and we are looking forward to many more years to come. We work hard to create partnerships with artists which represent a diversity of styles, mediums and price points and we are continually searching for work that will resonate with all of our clients, both local and tourist.” Jim and Kara Lawrence have been friends with Philip and Debbie Lehman for almost 20 years, living in Orlando, but residing as part-time residents of the island for over ten years. Both couples had a passion for art, and had developed strong, personal relationships with many artists over the years. So, after working in corporate America and private business, the four friends decided to make the transition to move to Fernandina Beach permanently, and open up a gallery in
the historic district. The gallery opened in April, 2015. “We are fortunate to have a terrific gallery manager, Carlin Catanzaro, and she fully exhibits our company culture which is focused on creating a gallery environment which is welcoming and inviting for everyone,” says Jim. Art on Centre features a wide variety of art in various mediums, along with collectibles. “One of our goals is to highlight fine art that is exceptional yet approachable, representing a variety of price points,” states Jim. “Our gallery is diverse and is ever-changing. As children head back to school this month, educators on Amelia Island are making learning an adventure with a little ingenuity and a lot of dedication.

t’s that time of year again! Backpacks are loaded, lunches are in lunchboxes, and boys and girls are proudly wearing their new school shoes. As students board their school buses, we invite you to take a peek inside the classroom and see what’s in store for them this year. It’s not just students and parents who are ready for the exciting 180-day educational journey ahead of them. Amelia Island teachers work hard when school is in session and during the summer break as they prepare for the coming school year. The assignments they’re baking are bubbling with learning opportunities, and then frosted with a little sweetness to make it all go down easily. At Emma Love Hardee, Nassau County’s 3-5 grade school on Amelia Island, the third grade class annually immerses itself in local culture and history, both in the classroom and on a field trip to the very places they learn about during the year.
“Each spring, we begin a study of the eight flags of Fernandina Beach and how each fits into the historic timeline,” shares teacher Lori Ballard. “And, of course, we teach about the birth of the shrimping industry, and we make sure we include a bit of pirate lore. Next, the students are assigned one of the historic buildings or homes for research. Amelia Island’s Golden Age is rediscovered and reported. “The curriculum culminates with a field trip where we tour our town, and the students present the buildings or homes they have worked on as we pass by. The entire class learns about each major landmark of Fernandina Beach, and we conclude at Central Park with a cookout. And sometimes the pirates show up!” At Fernandina Beach Christian Academy (FBCA), a K-7 private school, the students look continued on next page.

Education from previous page. forward to what they’ll learn at the annual Night at the Museum. “At FBCA, you will not find the typical classroom. We believe in out-of-the box teaching and we pride ourselves on an active learning model, and Night at the Museum is just one example,” says Director of Curriculum Shannon Hogue. “This assignment teaches our students research techniques, note-taking skills, biography writing and beyond, with the opportunity to bring the character to life through public speaking, and finally, the use of technology to both research and type the biography and timeline. “The students work on their characters from the first week of school until January, when we invite the community to Night at the Museum. Visitors travel through history, depositing money into each exhibitor’s jar, and the character, be it Helen Keller, a Biblical figure like Jochebed, or even Reba McEntire, animates and tells his or her story. Each student presents around 50 times that evening!” St. Michael Academy in downtown Fernandina Beach, a Pre-K-8 Catholic private school, works hard to engage the students and make them excited about learning. “One of my favorite things is the third-grade Olympics curriculum,” says teacher Mary Elwell. “The students learn about the ancient and modern Olympics through a reading assignment, and then they break into groups to study the competing countries. “Next, they create a poster, which includes a map of the country with pictures and facts about the nation. The unit concludes with Olympics Day. The Olympic Oath is recited at the opening ceremony, followed by a parade of nations where the schoolchildren carry the poster and flag of the country they studied. The studies culminate with games to see which teams earn the gold medals!” On Amelia Island, we are blessed with a roster of talented educators. S
inda Nichols and her husband, Will Howery, have found the perfect home to pursue their passions and enjoy island life. The couple met in 2005 while sitting next to each other on a flight to Dublin, Ireland. Love at first sight? Clearly it was. Looking for a place to settle that offered quality of life and artistic opportunity, and the couple found Amelia Island. Their first taste of north Florida was camping at Ft. Clinch State Park, where they fell under the spell of the island. Sinda grew up in Michigan with parents who loved going to the theater, going to plays and musicals in communities near them and each year traveling to the Stratford Shakespeare Festival in Ontario. She recalls her mother coming home from seeing Julie Harris in The Belle of Amherst, a one-woman show based on the life of poet Emily Dickinson, and telling her daughter that she was certain that one day her talented daughter would play that part. Years passed as Sinda pursued her dream of acting, studying theater at Michigan State, University of Minnesota, Penn State University, and the Stella Adler Acting Studio, as well as numerous workshops and classes. Her mother’s dream came true when Sinda did indeed play Emily Dickinson on stage in The Belle of Amherst at Amelia Community Theatre in 2010. In addition to acting, Sinda also directs and teaches. Well-known for two very different one woman shows, The Belle of Amherst (Emily Dickinson) and The Lady With All The Answers (Ann Landers), she is also the founder of Live Ink Theatre. Sinda enjoys teaching adults of all backgrounds and experience, and guiding actors through the creative process. Close to her side as director, mentor, and friend has been Ron Kurtz. Kurtz has been a player, literally, in the theater scene on Amelia Island for many years. Ron directed Sinda in both The Belle of Amherst and The Lady With All The Answers. Their latest collaborations was a one-night presentation at ACT of Lillian, Paula. Carson, a Live Ink production.
Will Howery also had a passion from his earliest years. Growing up in Wisconsin, he remembers cutting out birdhouses on a jig saw in his father’s workshop. His father was a master craftsman and made most of the furniture in their home. At age ten, Will’s great-grandmother gave him his great-grandfather’s violin to play, and he has continued playing ever since. His twentieth birthday brought a special gift from his Dad – Harry Wake’s Violin Making Manual and a carving gouge, a critical tool in violin making. At age 50, Will decided to restore the German violin that had belonged to his great-grandfather. He soon became fascinated with the process and began attending workshops with violin makers. He has created 12 violins and is working on nos. 13 and 14, Maude and Nicolo. Each is named, not unlike hurricanes—alphabetically, in alternating gender. He also plays violin and hosts the Amelia Island String Ensemble at his shop in his home on Saturday mornings. They perform several times during the year at island events. Will recently left the corporate computer world to develop Howery Violins. After networking in the violin-making community for years, he was approached by seasoned violin makers who needed a digital presence and marketing services. Combining his professional expertise with his passion, he founded Howery Violins. The business also sells hand-crafted violins made right here on Amelia Island, provides instrument rental, and offers full violin repair and restoration services. T
he Jacksonville Symphony Orchestra had a very good year in 1999. Brazilian-born conductor Fabio Mechetti had just been appointed music director and principal conductor of the JSO, and music lovers flocked to Jacoby Hall to see the brilliant new conductor. Many Amelia Island residents were attending performances, and a core group of concert-goers gathered together and formed a committee to explore the possibility of formally organizing an Amelia Island JSO support group. They called themselves Amelia Residents In Action for the Symphony, or ARIAS, and they held their first membership event at The Ritz-Carlton, Amelia Island, with Fabio and Aida Mechetti as the guests of honor. Nearly 200 ARIAS members signed up that evening, and by 2003, the group had grown to 500. ARIAS’s purpose is to encourage and promote attendance at JSO concerts and to sponsor JSO appearances on Amelia Island and in Nassau County. But ARIAS’s shining accomplishment might be their tireless promotion of music education and programs in Nassau County schools, including their popular Instrument Zoo. Each year, ARIAS volunteers called Zoo Keepers visit local fourth grade students, bringing with them more than continued on next page.

Zoo continued from previous page. 50 instruments, from piccolos and oboes to trumpets and flugelhorns, and showing the children how to hold and play each one. Instrument Zoo was the creation of Shirley Spaniel and Kitty and Bill Hunt. After receiving support from school superintendent Dr. John Ruis, they engaged Nassau County elementary school principals in the project. The group recruited their musical instruments through donations and at pawn shops, and then found their Zoo Keepers. Since its beginning, the Instrument Zoo has grown dramatically. For three mornings in January and February each year, 15 Zoo Keepers conduct two classroom sessions of fourth graders, which require a total of 65 volunteers. ARIAS’s Instrument Zoo touches 850 students annually. Zoo Keeper Sharon Lennon believes the Instrument Zoo might lead to a child taking music lessons, or participating in other music programs. “There are no quantifiable results available for this program, but one has to consider that sparks lit in children’s hearts by the Zoo have led to further interest in music,” she says. “We hope it will lead to the enjoyment of music, and appreciation of those who present it.” ARIAS president Jack Dickison, along with his wife, Jane, have been involved with the group for ten years. He feels ARIAS’s educational initiatives are crucial to Nassau County schoolchildren. “Besides the Instrument Zoo for fourth graders, we also provide subsidized violin lessons to first and second grade students through Arts Alive, we bring ensembles to fifth graders, and we also host community performances like our ‘Let Freedom Ring’ concert with the JSO,” he says. “We feel the Jacksonville Symphony is one of the best regional symphonies in the country.” JSO performs 12 Masterworks concerts each season, along with 10 Pops concerts, and Coffee Concerts on Friday mornings. ARIAS provides a bus for Amelia Island residents to attend the concerts, and ARIAS members receive a discount on the cost of transportation. The group holds a membership drive each fall. ugust is a hazy, hot, and humid month, and it is also the “lounge chair gardening” time of year. Now is the time to enjoy your spring plantings and designs while you think about what comes next. If you are inclined to get out there and do some gardening for yourself and your plants’ sakes, do it early in the day or after the sun goes down. Be sure to have plenty of water on hand for both you and your plants! I am always on the lookout for new plants, and at the Florida Growers trade show last fall in the rose section I came across a real beauty named Ebb Tide. Actually, my nose found this rose before my eyes did, and when I located it, I was mesmerized. Some call the color of this rose “mysterious,” and it truly is, with its tone of deep plum purple washed with a haze of sultry smoke. Dusky, deep purple buds with a swirling center open into double old-fashioned form and emit a spicy clove fragrance so powerful it nearly bowls you over! Ebb Tide is a new variety of the Floribunda rose. It is definitely a show-

stopper, growing 36 to 48 inches in height and 24 to 36 inches in width. Ebb Tide blooms from late spring into the fall, and it likes full to partial sun. Its gorgeous, full flowers are 3 to 4 inches across. The foliage of this re-blooming rose is medium-to-dark green with a glossy, leathery look. When planting roses, plant at the same level as the soil, so the crown is even with the soil level. Full sun is best for quicker flowering and a higher quality plant. As the summer begins to wind down, it won’t be long before the wonderful fall flowers appear in the stores, particularly the Mums. Try not to buy them too early, as the flowers will be spent before the season for mums

arrives. Hopefully, two new varieties will be available in the Igloo Mum family. The first one is Fireworks, which boasts beautiful two-and-a-half inch lavender pink, spiderlike blooms. The plant is mounded and does not need pinching of foliage. This is an easy-care plant that blooms from late summer through fall. The flowers not only attract people, they also attract butterflies. The second new Igloo mum, which is my favorite, is the Cool Red. This mum boasts raspberry red, spiderlike blooms that cover the plant for weeks, from late summer through the fall, creating a stunning effect in the garden. Igloo Mums have a uniform mounding habit and are true perennials, coming back year after year. These mums are very impressive when planted in groups. Plant several of one color or mix and match. ictoria Wilson grew up in the tropical Far East with her parents, and it was her fond family memories that drew her to Amelia Island. “I grew up hearing the ocean waves, and that sound always gave me a peaceful feeling,” says Victoria. “When I visited Amelia Island for a work conference, I fell in love with the area and decided to move here full-time.” Victoria, who retired from a career as an international tax attorney two years ago, decided upon a penthouse atop Piper Dunes, where she would enjoy breathtaking views of the ocean, marshes, and the Intracoastal Waterway, along with astounding sunrises and sunsets.
“Matthew Winchenbach with Quartertide was the contractor, and he had a lot to do with helping on the choices in the apartment, such as the floors in the bedrooms, tiling in the kitchen, and stone tops in the kitchen and bathroom,” says Victoria. “My decision to purchase the penthouse at Piper Dunes also brought me in contact with Susie Sargent of Starfish Designs to help design and decorate the space.” “Susie is a good listener,” says Victoria. “I’m a yoga devotee, and I wanted the space to be all about calming colors, natural light, and a peaceful ambience. Susie really took the time to understand my background and my tastes. She was a joy to work with.”

Victoria showed Susie a painting that she acquired in Hawaii and asked her to design her bedroom around it. “As soon as I saw the art, I recognized who Victoria was, and saw the love she had for the ocean,” says Susie. “It was a beautiful painting, calming, and just so lovely.” Susie works with her husband, Curtis, who builds furniture from camphor

wood, a rare and unique timber that is taken from Florida swamps. “Curtis likes using this wood because it’s so exquisite and distinctive. It also comes from trees that have already fallen naturally, so that no trees have been felled to create his unique designs.” Many of his pieces are found throughout the home. natural tones, along with art and items by local and international artisans. One piece in particular is a set of shutters called “The Four Seasons,” designed by local needlework artist Barbara Peeples, which sits in the entry of the penthouse. Others include rugs that Susie designed and had specially crafted in Daytona, along with blown glass plates, and a collection of Buddhas. “Victoria also has some fine antique pieces that were handed down to her from her mother and father,” says Susie. “We enjoyed incorporating those with contemporary pieces, giving the penthouse a very distinctive look.” Victoria is also an artist in her own right, and many of her paintings can be found throughout the home. Susie owns Antiques and More Treasures, an antique and collectible shop in Yulee, at the corner of A1A and US 17, where she hosts dozens of unique vendors and their merchandise. “I love being able to draw pieces from my vendors, which I was able to do with this penthouse,” says Susie. “It all depends on my clients and their tastes. With Victoria, we had a close, personal connection.” The penthouse features an open concept kitchen, living, and dining area, with sweeping 360 degree views, along with a master bedroom and bath, two guest rooms with baths, and balconies throughout. For the dining area, Susie acquired a very unique glass and wood dining table from Europe, along with contemporary chairs which set perfectly within the space, highlighting a distinctive chandelier that looks like a delicate tree branch. The chairs are made of Lucite, and the end chairs are white leather, with very unusual Lucite legs. stunning light fixtures, and a lobby designed to highlight the views of the Intracoastal Waterway. “We didn’t want to obstruct any of the views,” says Susie. “We even had a couch especially designed with a low back, along with leather chairs, that would give Victoria an ideal view of the ocean.” The penthouse also features blinds in the same tone as the walls,

which can be easily raised and lowered for privacy, depending on what time of the day the sun is rising or setting. When Victoria is not painting or doing yoga, she can be found on a bicycle, a paddleboard, or walking on the beach. “I’m outdoors most of the year,” says Victoria. “There’s always something to do here on Amelia Island. It’s a very special and beautiful place to live.”

I
’ve been to Pepper’s a hundred times with my buddies at the old Food Lion shopping center, and with my wife and kids when it moved downtown. I’ve always stuck to my favorite standards. On this trip, however, nothing would be standard. After a quick overnight trip with my youngest daughter to swim and camp in High Springs, Florida, we scurried home just in time for me to meet Karen Miller at Pepper’s for dinner. With my canoe still strapped to the top of the truck, I arrived to find Karen smiling her way toward me on the sidewalk. I was a little nervous about my new role as a food writer, but her gentle manner, the casual atmosphere, and the Latin hospitality helped put me at ease. We were seated in a booth and were quickly served ice water, tortilla chips, and salsa fresca. Karen and I browsed the menu, and we were soon greeted by Vanessa Garcia and Juan Hurtado, our gracious hosts. After talking over our options, we decided to let Juan make the call for dinner. After only a few minutes, a lava rock bowl known as a Molcajete (mol-kah-hay-tay), radiating heat and overflowing with awesome flavors, was placed on the table before us atop a custom-crafted wooden under liner. Perfect for sharing, the Molcajete is filled with grilled steak, chorizo, chicken, and shrimp, and garnished with caramelized green onion bulbs with delightfully charred tips, grilled banana peppers, and nopales. Scraped of its spines and washed, the nopales, or prickly pears, were sliced and then grilled until soft.
Somewhere in the swirl of flavor and conversation, Juan materialized with a margarita, complete with its own luscious wooden socle. The La Reina margarita is made with Don Julio Tequila, fresh orange juice, sweet and sour mix, and organic agave nectar, with a miniature bottle Grand Marnier by its side. After a pull from the straw and a salty sip, I had enough room to add the orange liqueur. The margarita, already refreshing and smooth, took on a complex citrus profile and richness that I would compare to slathering something you love in soft butter. After emptying the cauldron of its contents and soaking up the remaining jus with our tortillas, I scooped the last little bits of meaty goodness onto crisp tortilla chips and offered one to Karen. We toasted the evening and savored the final morsels. But one of the best bites of the evening may have been saved for the meal’s end. As we sat, suddenly we were presented with a slice of chocolate cake like you would have cut for yourself as a child if given the opportunity. Scented with espresso and layered with creamy frosting and caramel, it sealed an evening that could not have been better. On our way out, with the running water of the fountain in my ears and a fantastic meal under my belt, I noticed a banner that read Bienvenidos hanging in the open-air bar, and welcome is exactly how you’ll feel at Pepper’s Mexican Grill & Cantina. island entertaining CUCUMBER BASIL MARTINI For each glass, muddle 5 cucumber slices with 4 basil leaves in a cocktail shaker. Add 3 ounces vodka and ice, shake and strain into a glass. Garnish with a sprig of basil and a cucumber slice. CAMPARI FENNEL APERTIF In a cocktail shaker, muddle 3 lemon slices with a handful of fennel fronds, then add 2 ounces sparkling wine, 1/4 ounce Campari and 1/2 ounce simple syrup. Add ice and shake, then strain into a glass. Garnish with fennel and lemon slice. CARIBBEAN GIN AND TONIC In a cocktail shaker, combine 2 ounce gin with 1/2 ounce each freshly squeezed lemon and lime juice, 2 ounce coconut water, and 1/2 ounce Falernum (a Caribbean syrup). Add ice, shake, and strain into a glass. Lace the top of the drink with chilled tonic water to taste. Garnish with lemon and lime slices.

CHAMPAGNE SLUSHY In a blender, combine 2 cups champagne, 1 1/2 cups blueberries, 1/4 cup lime juice, and 1/2 cup vodka. Add ice and blend until liquid becomes slushy. Serve in 4 glasses garnished with mint leaves. SUMMER DAYDREAMER Combine 1 ounce gin, 1 ounce ginger liqueur, 1/2 ounce Cardamoro (an Italian herbal liqueur), 1/2 ounce fresh lemon juice, and 3 drops rosewater in a cocktail shaker. Add ice, shake, and strain into a glass. Garnish with lemon slice.

ummer is the best time to try fun, contemporary cocktails, whether you’re sitting by the pool or having friends over for a backyard barbecue. Today’s mixologists (remember when we used to call them bartenders?) are highly trained in the use of syrups, herbs, and garnishes, with a flair for creating new cocktails. This has created a trickle-down effect on serving drinks in our homes, as we try to tantalize our guests with unique and innovative drinks. Summer cocktails should be light and refreshing, utilizing fresh herbs, along with seasonal vegetables and fruits. Think basil, cucumbers, blueberries, strawberries, and citrusy juices, with light liquors like rum, vodka, and gin, dry and fruity wines, and light craft beers. Some essentials for your summer bar are a good shaker and access to lots of ice.
A large blender is good for making slushy drinks for a crowd, and a muddler is an indispensable bar tool for smashing and mixing cocktail ingredients. Most muddlers are made of wood, but you can find plastic and stainless steel muddlers at specialty stores. Cocktails always taste better when served in a glass, but gone are the days when you need to purchase specific glasses for specific drinks. Canning jars are casual and festive, and perfect for a cookout. Stemless wine glasses are “safer” than traditional ones, which can be easily knocked over when dining outdoors. Sturdy glass tumblers in two sizes are probably all you need to serve everything from margaritas and mojitos to beer and hard cider. The following cocktails can be made in larger quantities for a party to be served in pitchers or even a punch bowl. All you need is a group of thirsty friends, and a beautiful summer day!
