When I was growing up, we listened to a lot of music, whether it was pop music on the car radio or Sinatra in the house, and as we kids moved into high school, a lot of “classic rock.” Loud classic rock. This was the era of gigantic home stereo speakers, and we had speakers that we’re almost as tall as I was. My dad always warned us we were doing irreparable damage to our ears. One day, my uncle brought over two albums by Miles Davis: “Kind of Blue” and “A Tribute to Jack Johnson.” It would only be a slight exaggeration to say that those albums changed my view of the world. The “Jack Johnson” album was stunning, with its rock drumming, bluesy bass, and stabbing guitar attack, and Miles blasting in high and loud over the top. This didn’t sound anything like the jazz I knew! It was jazz fusion, and it was rocking. “Kind of Blue” would also become one of my favorite albums, a sublime exercise in modal jazz and a go-to album for almost any occasion. Those albums soon sent me into record stores searching for more Miles, John McLaughlin, John Coltrane, and others. My ears had been opened. Next month, at this year’s Amelia Island Jazz Festival, Artistic Director and Amelia Island resident Les DeMerle has scored another coup by bringing in legendary jazz guitarist Larry Coryell to headline the festival. Coryell, who plays two concerts at the Omni Amelia Island Plantation Resort, is a musician who truly has earned the label “legendary.” To many, he is the undisputed pioneer of jazz fusion, or jazz-rock. In the 1960s, he brought a completely new sound to jazz electric guitar playing, developing a harder-edged style that would flower into a new movement in jazz and lead to the stunning “Jack Johnson” sound I heard that day. McLaughin, who played guitar on “Jack Johnson,” was influenced by Coryell, and the two later toured and recorded terrific acoustic albums with Paco DeLucia in the 1980s. Coryell’s shows should not be missed by fans of electric and acoustic guitar. Again partnering with the Omni Resort, the Jazz Festival has the perfect venue for its world-class shows. The festival, which runs from October 4 – 11, also welcomes headlining vocalist Kevin Mahogany, considered the standout jazz vocalist of his generation, as well as Latin jazz favorites Trio Caliente, Les DeMerle’s Little Big Band, and much more. As always, it promises to be a great week! Navy Band Southeast’s TGIF Les DeMerle

The Amelia Island Jazz Festival provides a rich, diverse cultural offering to the Amelia Island area by exposing thousands of people of all ages and backgrounds to the sounds, excitement, and vitality of great jazz. The festival presents world-class jazz in many styles, including swing, bebop, Dixieland, big band, Latin, and contemporary. During the weeklong festival, music is performed by jazz greats as well as fresh, up-and-coming young talent. Performances are staged in several venues around Amelia Island, including the Omni Amelia Island Plantation Resort. The festival helps preserve the uniquely American art form of jazz by increasing the exposure and awareness of the music genre to the general public. The AIJF distributes proceeds toward a scholarship program to fund college education for aspiring jazz musicians and works to provide a rich, diverse jazz offering to the Amelia Island area. It is doing this by offering educational programs and jazz workshops in area schools and senior centers and promoting Amelia Island as a tourist destination by drawing jazz enthusiasts from around the nation and the world. On Sunday, September 20, two weeks before the Jazz Festival begins, there will be a special concert called “All That Jazz,” featuring the 2015 AIJF Scholarship winner, 18-year-old saxophone sensation Ryan Duncan. The concert will be held at Amelia Community Theatre at 7 p.m. and includes The Dynamic Les DeMerle Band with vocalist Bonnie Eisele. The all-star band will include Steve Strawley, Bill Prince, Zetnz, Clarence Hines, Doug Matthews, Ernie Ealum, and Sammy Rodriguez. “Ryan is an amazing musician,” says DeMerle. “He has quite a resume for his age – a member of Florida All-State, and he has won many awards. We are very excited about this concert because Bonnie and I will be performing one of our cruise ship shows with Ryan and the other musicians.”

On Sunday, October 4, the Jazz Festival kicks off with its beloved Jazz in the Park, featuring the Navy Band Southeast’s TGIF, a seven-piece New Orleansstyle Dixieland group boasting a long tradition of performing feel-good music throughout the Southeast region. Headliner Larry Coryell has been booked to play not just one, but two concerts on Friday, October 9, at the Omni Amelia Island Plantation Resort. The first show is at 7 p.m., with the second at 9 p.m. Coryell is a master guitarist of all styles, especially jazz, and composer of jazz and classical compositions. “Larry has recorded over one hundred albums and CDs, and he is still recording. He has performed with Miles Davis and Jimi Hendrix,” says DeMerle. “He’s been featured in many jazz history books, has many published books of his own, including an autobiography, has graced the front page of Rolling Stone, and is still touring the world over.” As one of the pioneers of jazz-rock, Coryell deserves his special place in the history books. He brought what amounted to a nearly alien sensibility to jazz electric guitar playing in the 1960s, a hard-edged, cutting tone, phrasing, and note-bending that owed as much to blues, rock and even country as it did to earlier, smoother bop influences. “The buzz about the Amelia Island Jazz Festival is really hot,” says Coryell. “My good friend, Randy Brecker, who headlined last year’s AIJF, recently played with me at the Blue Note in NYC, and he had great things to say about Amelia Island and the way this festival presents jazz. I am looking forward to my debut performance at the AIJF and also look forward to hearing and enjoying a great weekend of worldclass jazz. Thanks to Les DeMerle, artistic director, for having me!”

“I am looking forward to a fabulous appearance at the Amelia Island Jazz Festival,” says Mahogany. “I’ve known Les DeMerle and his jazz drumming for many years, and have his recordings with one of my favorite singers, the great blues shouter Jimmy Witherspoon, so I am very excited to come to Amelia Island and really wail!” Concertgoers on both nights are welcome to join the headliners and other AIJF musicians for Late Night Jams after the performances. To wrap up the festival, David’s Restaurant will be hosting a special Jazz Brunch on Sunday, October 11, featuring Al Waters from Jacksonville. Waters, who had a long career as lead tenor saxophonist with the great Ray Charles, will perform on clarinet, saxophone, and flute, along with DeMerle and Eisele, and other AIJF artists. Park West Gallery artist Tim Yanke of Birmingham, Michigan has been chosen to be the official artist for the AIJF this year. DeMerle met Park West’s manager Morry Shapiro while performing on Celebrity Cruises, where Shapiro offered Park West Gallery to become a sponsor of the AIJF. “Yanke has created original artwork he will donate that will be auctioned off to benefit the Amelia Island Jazz Festival Scholarship Program,” says DeMerle. Yanke’s painting, “Legends,” features bright colors exploding from press type that reads “Jazz.” Underneath the colorful plume are the names of jazz greats. He said about ninety percent of his artwork is inspired by listening to music while working, and in this case, he captured the feelings of listening to jazz. Plans are in the works for Yanke to produce a live painting during a drum solo performed by DeMerle at this year’s festival. “Our concerts explode with exciting, swinging jazz played with passion, expertise, and soul by many of today’s leading jazz artists,” says DeMerle. “Each year’s talent roster is the best line-up we can assemble. NAVY SEAL PATRIOT DAY LUNCHEON AND FASHION SHOW AT FERNANDINA BEACH GOLF CLUB

FRIENDS OF THE LIBRARY’S STORYTELLING SLAM RETURNS Nassau County is certainly home to some fascinating characters, and you’ll meet a bunch of them at the second annual Amelia Island Story Slam on September 25. “This year’s program, entitled ‘I’ll Never Forget…,’ features some of Nassau County’s best tale tellers,” says Arlene Filkoff, last year’s winner and this year’s master of ceremonies. Competitors include Dickie Anderson, Carey Dresser, John Drew, Neil Frink, and Diana Herman, with local violinist and violin maker, Will Howery, who will provide music for the event. Following the presentations, audience members will vote with cash for their favorite stories and help the Friends of the Library (FOL) raise the final $180,000 needed to meet its $1.2 million campaign goal for the improved Library that opened in May. The winner gets bragging rights and “Fern and Dina,” the coveted dolphin statue, until the 2016 winner is chosen. The fun begins at 5:30 p.m. at Burns Hall, St. Peter’s Episcopal Church, 801 Atlantic Avenue, with a gourmet hors d’oeuvres reception sponsored by LuLu’s Restaurant. The second annual Patriots Day Luncheon and Fashion Show will be held from 11:30 a.m. to 1 p.m. on September 11, 2015 at the Fernandina Beach Golf Club. ohn Mead had just finished college when he began offering framing services to the local community in 1972. n 1957, Joyce and Nesbert Crawford opened their first jewelry store in Blackshear, Georgia. Starting with only two showcases and a determination to succeed, the couple operated their successful business for 20 years, expanding with another store in Waycross. That store supported three Crawford families, which included two Crawford sons, Bruce and Gary, along with Gary’s wife, Kathy, and their sons, Lance and Ryan. In 1985, Gary and Kathy Crawford opened another store in Douglas, where they provided excellent customer service and quality for 29 years. oy and Nip Galphin have worked together nearly their entire lives. They have been married for over forty years. W

hen Baptist Medical Center Nassau President Stephen Lee visited another hospital several years ago, he discovered a unique food service program where patients can order food from a menu and have it delivered to their room. He loved the idea, and he soon began work on a plan to bring this same service to the patients at Baptist Nassau. It has taken three years to implement the program, but this summer, with the help of Food Service Director Mathew Clayton, Baptist Nassau now offers “At Your Request” room service dining for their patients. This innovative dining program allows patients to select meals from a wide variety of foods, which is designed to enhance the hospital experience as though they were dining at their favorite restaurant. Orders can be placed by phone between

7 a.m. and 6:30 p.m., and the meals are delivered within 45 minutes or less. Guest trays are also available for visiting guests and family members. “We’ve had a great response to this program,” says Lee. “We have trained operators who take the orders, and they can help patients with their selections, including

their dietary restrictions. Right now, twenty-nine minutes is our average delivery time. And patients can order anything on the menu during the time period of 7 a.m. to 7 p.m.” Matthew Clayton remembers a patient who ordered pot roast and mashed potatoes for breakfast one morning. “That’s what looked good to him, and that’s what he wanted to eat,” says Clayton. “We are happy to make the patients anything they want at any time during the day. Food is the one thing that a patient has control of in the hospital, it’s the one area where they have a choice. We serve restaurant-quality meals that are wellprepared. Most of our patients have never ordered room service before. It makes them feel special.” Some of the menu selections include omelets, fresh fruits, and muffins for breakfast, entrée salads, grilled chicken breast, meatloaf, and Asian stir-fry for lunch or dinner, along with a wide variety of vegetables, soups, pizza, desserts, and beverages. In addition, the menu has a section of items that can be consumed on a liquid diet, like broths, pudding, and ice cream. A guideline on healthy eating emphasizes fruits, vegetables, whole grains, and low-fat milk products, along with suggestions for help in managing diabetes and a how-to guide to finding foods that are low in saturated fats, trans-fats, and cholesterol to help reduce the risk of heart disease. In the future, Lee hopes that the “At Your Request” menu will also be available for staff members and patients who have come to the hospital for a procedure, but are not staying overnight. At present, the hospital’s cafeteria offers a good variety of foods for staff and visitors, but it is open for limited hours. The “At Your Request” program could eventually service everyone who works at or visits Baptist Nassau. “Being in the hospital is something that is scary to most patients,” says Lee. “Our goal is to make their hospital stay as pleasant as possible. With our new ‘At Your Request’ menu, what’s not to like?”

Shooting the moon To help fund its indispensable services, the Nassau County Council on Aging Gala presents an elegant evening at the Omni Amelia Island Plantation Resort. BY KAREN MILLER

he Council on Aging of Nassau County opened in 1974 and has been serving area seniors continuously for over 40 years. As part of a national network of area agencies established under regulations for the Area Agency on Aging, the sources for Council on Aging funding include federal, state, and local grants, as well as donations from companies and individuals. Each fall, the organization holds a fun and festive gala, which has become one of the most popular and well-attended fundraisers on Amelia Island. This year’s affair will be held on October 2 from 6 to 10 p.m. at the Omni Amelia Island Plantation Resort. “Last year’s Ruby Jubilee Gala, celebrating our 40th anniversary of serving seniors in Nassau County, was a very successful fundraiser for our organization,” says Nassau County Council on Aging Executive Director Janice Ancrum. “But we still have so much more to accomplish if we’re to continue offering vitally important services to ill and homebound seniors. Many of our programs are underfunded and have waiting lists, so we hope this year to surpass the funds we’ve raised at any other past gala.” The theme of this year’s gala is “Fly Me to the Moon,” and the evening promises to enchant guests with celestial surroundings and a memorable night of moon magic. Guests can immortalize their evening at the Paper Moon Photo Booth and enjoy a superb full-course dinner with fine wine, live entertainment, and a live/silent auction. Music features the incomparable voice of Rick Davis and his playlist of nostalgic songs, and live auction items include everything from jewelry and fine art to premier golfing packages and unique gift baskets. “Our 2015 Gala is coming together beautifully,” says Ancrum. “The theme of ‘Fly Me to the Moon’ offers us a wonderful opportunity to create an enchanting backdrop for the evening and entertainment, with dining and dancing as well as our always much anticipated live and silent auctions. Despite a surge in shark attacks in the news recently, sharks may be the least of our worries on the beaches of Amelia Island. BY KAREN MILLER • PHOTO COURTESY OF GEORGE H. BURGESS

T

he summer of 2015 brought a number of news stories about shark attacks, many of them right off the southeastern coast of the United States. For some of us, it seemed like a good idea to stay out of the water, but for many beachgoers, it was business as usual. So just how dangerous are the waters off Amelia Island? According to George H. Burgess, director of the Florida Program for Shark Research and the International Shark Attack File, shark attack is a potential danger that must be acknowledged, but it should be kept in perspective. “Bees, wasps, and snakes are responsible for far more fatalities. In the U.S., deaths occur each year up to 30 more times from lighting strikes than from shark attacks,” says Burgess. “Shark-human interaction is likely to occur while swimming or surfing in nearshore waters. The chances of dying in those waters are much higher for drowning and cardiac arrest than from shark attack. Shark attack trauma is less common than many other beachrelated injuries like spinal damage, dehydration, jellyfish and stingray stings, and sunburn. More sutures are used on sea shell lacerations of the feet than on shark bites!” So why does it seem like there were more shark attacks this year than other summers? According to Burgess, it’s because of a biological phenomenon called “clumping.” “Just as some years there is an abundance of love bugs, this year there were an abundance of sharks. It’s a perfect storm of things that come together as part of nature’s ups and downs.” Shark attacks did not become a subject of public interest until the twentieth century. “Several factors have contributed to the upswing in public awareness of shark attack,” says Burgess. “First, the press covers a larger portion of the world in a more comprehensive manner. Increased media competition also contributes to more searches for ‘shock’ stories. An examination

of current weekly tabloids confirms that ‘shark eats man’ is a best-selling story line!” Amelia Island’s coastal community of sharks includes numerous species: blacktip, spinner, blacknose, sharpnose, scalloped hammerhead, great hammerhead, finetooth, lemon, tiger, nurse sharks, and more. Most species are night-active, and Burgess recommends that beachgoers not swim at dusk and dawn hours. But Burgess also points out that sharks can be found everywhere in the world’s oceans, and play an important role in a healthy ocean environment. “The shark is the poster child for the health of an ocean,” states Burgess. “They have their place in the grand scheme of things, connected through a complex web that makes up the ocean.” “Shark attack is a hazard that must be considered by anyone entering the marine domain,” says Burgess. “Beach recreation has inherent risks, and shark attack is simply one of many that must be considered before entering the water. Most people agree, however, that the extremely slim chance of even encountering a shark—much less being bitten—does not weigh heavy in their decision-making.”

fall foliage As the heat of summer begins to fade, add some color to your garden this fall with Mums, Willow Blue-Star, and the Amelia Rose Azalea. BY BETTY MORRELL

T

he weather is getting cooler as we move into fall, and summer annuals and perennials are beginning to look tired. It’s time to clean up the perennials and pull up any weary annuals. It’s time to start looking for bright, vibrant fall flowers like mums, but don’t get them too early as the flowers will be spent before fall blooming time. When you purchase your mums at the end of September, try to get them in tight bud and they will last a lot longer. Dead head them when needed. Mums can be cut back when they completely stop blooming, and they will return next season to bloom in the spring and fall. A really first-rate garden plant is the Willow Blue-Star (Amsonia tabernaemontana). In addition to its small, but charming clusters of blue flowers in late spring, this perennial has upright, willow-like leaves that turn clear yellow in the fall, which means more yellow for your fall garden. This ornamental species hails from the southeastern United States and enjoys our sultry summers.

TIP O F T HE M O N T H A little Epsom salts will keep your roses blooming during the fall. Trim evergreen shrubs so they will have a head start on next year’s growth. The more they are clipped, the more they will fill out.

Willow Blue-Star is a very compact plant with clusters of star-shaped flowers with lavender-to-blue shades. A low grower, it makes an ideal edging plant. It features blue flowers in May and June, then a golden yellow fall color, with shiny, willow-shaped leaves all season long. Grow in full-sun or partial shade in evenly moist, slightly acidic soil. It can be used in beds, borders, meadow gardens, and rock gardens. Willow BlueStar grows up to two feet high and has a one-to-three foot spread. It would look nice in pots on a patio, or as a grouping in the garden. Did you know there is an Azalea called Amelia Rose? It is awesome! This new Azalea is a beautiful, compact Azalea hybrid first introduced by Dr. Aromi in

Mobile, Alabama. The distinguishing feature of Amelia Rose is its blooms, which have an amazingly similar appearance to an actual rose. A heavy bloomer in spring, this shrub produces large amounts of lavender-colored double blooms that average around two inches in diameter, unlike other Azalea varieties. Amelia Rose also has a smaller wave of blooms later in early to mid-fall. The foliage of the Amelia Rose is larger and has a heavier texture to it, unlike other Azalea varieties. Like all Azaleas, Amelia Rose prefers semishade and will even do well in planting locations with mostly shade. A shallow, non-aggressive root system makes them a great foundation planting choice, and they can be planted closely together to form a colorful hedge. Fertilize with an acid fertilizer such as Holly Tone or any granular fertilizer with a 6-12-12 or 10-10-10 ration. It’s best to fertilize in spring, and again in mid-fall. You’ll enjoy this Azalea! “I

t was July 2013, my aqua beach chair and my toes were rooted in the Amelia Island sand, and I asked God, ‘What do I do next?’” confides Linda Merritt, who had recently lost her husband. Her prayer for direction was immediately answered when she noticed behind her the seven buildings that make up Carlton Dunes. “I called a realtor, we visited, and I said, ‘This is it. I don’t care what building or what floor, but I will live here.’” Three contracts and five months later, Linda closed on her third-floor Carlton Dunes condominium and moved in with just one thing—her aqua beach chair.

Linda and her late husband, Allen, enjoyed a large estate in Atlanta, and Linda had a successful career as an operations manager for a thriving medical company. “I loved my home and my job, but, after losing a loved one, life took me in a different direction. I was ready to move to the beach and start fresh.” Courageously, she did just that. And she didn’t just move, she undertook a complete home remodel with the help of Hector Van Lennep of Castleton Homes. The Carlton Dunes condo that Linda purchased is not the same space it is today. When Linda bought the property, it was full of heavy décor with lots of dark walls, wood, weighty

window treatments, gold, and monkeys. “Hector showed up, and the first thing I said was, ‘You have to take down all of the window treatments. They were high-quality, but just not me!” Linda envisioned a bright, more coastal space, and she wanted to consult with a designer. “One afternoon, I was shopping at Bell Carpet Galleries in Atlanta,” Linda explains. “The sales lady asked about my home, and I explained it was in Amelia Island, and she asked if I needed a designer.” Turns out the saleslady was a longtime friend of local designer Susan Dowling. Linda and Susan met, and it was a friendship from day one. Interestingly, Susan was already working on a couple of other homes for Hector at that time. “Susan really kept me on track with my ideas. she has impressive knowledge and artistic ability,” says Linda. “She picked up on my vision and kept that in front of the project.” The trio got to work transforming the unit into a cheerful space through soft, neutral paint colors, new white kitchen counters, appliances, hardware, colorful wallpaper, light fixtures, new shutters, and the addition of builtin book shelves on either side of the fireplace. Throughout the renovation, Linda would come to town and stay in her home, with just the aqua beach chair as her only furniture. “I traveled room to room and sat in my chair, and when cocktail hour rolled around, I took my chair onto the veranda and enjoyed the peace and tranquility the ocean gives,” she remembers. At night, she’d make a pallet with a down comforter and dream about the ideas she had for her new home. 48 AMELIA ISLANDER MAGAZINE • SEPTEMBER 2015

In January 2015, Linda made her “big move” from Atlanta to her refreshed Carlton Dunes condo. “It hasn’t taken me long to get into the groove of Amelia Island,” she laughs. “When you experience a life change, you have two choices: to collapse, or to rise up and move forward.” Linda moved forward, and Amelia Island has been a gift in so doing. Linda is active in the Newcomers Club and has met many new friends, as well as through the North Florida Bike Club, Amelia Island Cycling chapter. “As I’ve reached out to new people, I learned that I am not alone in my journey. Together, we learn from each other and we find peace in the places life has taken us.” Every morning, Linda is on her veranda, cup of coffee in hand, giving thanks to God for leading her to Amelia Island—the place where her aqua chair and toes are now firmly rooted in the sand. 50 AMELIA ISLANDER MAGAZINE • SEPTEMBER 2015

P

LĀE Restaurant is one of Amelia Island’s premier dining establishments, and it’s always such a treat have dinner there, especially with one of my dearest friends! PLĀE’s menu blends eclectic cuisine with artful presentation in a contemporary setting. My friend Emily and I were greeted by PLĀE’s manager, Sherry, and we were on our way to an exquisite dining experience. Chef de Cuisine Carey Todd began our meal with Salmon Brûlée, while our server Alicia poured us a glass of Steffelter Hof Riesling, a surprisingly refreshing dry white wine. The salmon was smoked and served with lavash bread, lemon, and caper mayonnaise, and topped with brûlée, which is caramelized sugar. What a nice balance of sweet and savory, and perfect with our wine! Alicia brought us two salads to try: the Southern Caprese Salad and the PLĀE Full Salad. The Caprese was unexpected —a stack of fried green tomatoes with fresh mozzarella, plus chopped heirloom tomatoes and arugula, drizzled with light and dark balsamic vinaigrette. What a hearty salad! It was practically a meal in itself, and I love that the mozzarella was a little melt-y from the heat of the tomatoes. The PLĀE Full Salad was composed of artisan greens, radishes, peas, candied pecans, and sundried tomatoes, served with crostini and boursin cheese. I really loved the dressing on this salad—a very light champagne vinaigrette. Emily and I also enjoyed a glass of Kim Crawford Pansy Rose. Pink wine is making a comeback, and this rose is charming, refreshing, and vibrant. Poisson du Jour is always a good choice at PLĀE, and I love that Chef Todd creates a new dish each evening. Tonight it was flounder, pan seared, served with roasted red peppers, feta orzo, green beans, and arugula with champagne buerre blanc. The fish was perfectly cooked and, as always, a delicate buerre blanc is the best accompaniment. I enjoyed a glass of Wendt Chardonnay, a subtle, buttery white wine. Emily’s entree was The Chef’s Plate, a specialty surprise dish that PLĀE is known for. You order the plate, and then the chef surprises you with one of his signature dishes. This evening it was Surf and Turf, but this dish was not like any surf and turf I’ve ever had. The surf was a grilled Maine lobster tail over sautéed spinach with

sherry lump crab cream sauce. Decadent! And the turf was a filet with mushrooms (duxelle paste) wrapped in filo and served with a port demi glace. Wow! The filet was so tender you could cut it with a fork, and the lobster was sweet and smoky. Alicia paired this dish with Mercer Cabernet, a medium-body red wine from Washington State. For dessert, PLĀE’s Peanut Butter Pie is one of my alltime favorites, served with crème Anglais and chocolate sauce. But Chef Todd wanted us to try their chocolate cake, which is actually a cake and torte in one, bound together with chocolate ganache and raspberry cream cheese frosting. It was rich and delicious! And Sherry surprised us with a glass of Shooting Star Black Bubbles, a sparkling syrah from California, a unique wine choice to end our fabulous meal. PLĀE is located at The Shops at the Omni Amelia Island Plantation Resort. Reservations are highly recommended, especially on the weekends. Grilled Pork Tenderloin with Sautéed Apples in Calvados Cream Sauce Ingredients One handful apple wood chips, soaked in water for 20 minutes and drained One 3-pound pork tenderloin 4 apples, peeled, cored, and sliced 4 Tablespoons butter 2 Tablespoons brown sugar 2 Tablespoons Calvados ¼ cup dry white wine ½ cup heavy cream Pinch of sage Salt and pepper to taste

Preparation Heat grill to medium high and sprinkle wood chips over the coals. Season the pork tenderloin with salt and pepper, and grill until internal temperature reaches 135 degrees, turning frequently. When done, remove from heat and let rest for a few minutes before slicing. To make the apples and sauce, sauté apple slices in butter with the brown sugar until apples just begin to cook. (Do not overcook.) Add white wine and calvados and cook until alcohol cooks away, then add cream sauce and seasonings. Let it bubble a bit until the mixture gets thick. Serve with the pork. Serves 6.

E

very September I get harvest fever. Having grown up in New England, autumn brings forth dreams of pumpkins, falling leaves, crackling fires, and apples picked right off the tree. I even make a trip to New Hampshire in September every year just to buy my favorite seasonal treats, and then create an autumn dinner for my friends on Amelia Island when I return. I’m planning my dinner around pumpkins and apples, starting with pumpkin hummus as an appetizer. My main entrée is pork tenderloin, which I will season all over with salt and pepper, and then grill with apple wood chips. While the pork is cooking, I will sauté sliced apples and create a rich cream sauce using white wine and Calvados (apple liqueur). The best way to serve

this is to slice the pork and place it on a serving platter, then pour the apples with their sauce around the pork, garnishing with a bit of parsley. For my side dishes, I’m making hearty red quinoa with roasted pumpkin, cranberries, and toasted pecans. This a great dish for a dinner party because you can make it in advance and heat it in the microwave right before serving, and it’s really quite beautiful. A simple green salad is all I need to complete this tasty autumn dinner. And for dessert I’m preparing one of my childhood favorites: corn fritters tossed in maple syrup. You know what’s the best thing about hosting an autumn dinner on Amelia Island? After we eat, we can all go for a walk on the beach!

Award Winning Heart Care Close to Home Residents in need of expert heart care need look no further than Baptist Medical Center Nassau, which recently was named “high performing” in treating heart failure based on the U.S. News & World Report Best Hospitals. The ratings evaluate more than 4,500 hospitals nationwide on common inpatient procedures and conditions. “We appreciate this national recognition from U.S. News & World Report,” said Stephen Lee, hospital president for Baptist Nassau. “We are extremely proud of our program at Baptist Nassau and our team who provides the highest quality of care for heart patients and others in our community.”

U.S. News evaluated hospitals and rated them as high performers, average or below average. Only about 10 percent of the hospitals were rated as high performers. The heart failure ratings are determined by outcome measures such as patient satisfaction, readmissions, preventing deaths and infections, patient volume and high nursing standards.

“We follow evidenced-based medicine and a cooperative effort with the nursing staff, social workers and home health nurses,” said Farid Ullah, MD, chief of staff for Baptist Nassau and cardiologist for Baptist Heart Specialists. Timely follow-up after patients are discharged has reduced readmission rates and improved quality of care.

“It is advantageous practicing in a smaller community where neighbors take care of neighbors,” added George Le-Bert, DO, director of the cardio/pulmonary department at Baptist Nassau. “We are able to see patients quickly and effectively with excellent coordination of care.”
