Welcome to the annual Health and Wellness special issue of the Amelia Islander Magazine! With so much natural beauty and wonderful things to do here, it’s easy to live the good life on Amelia—but how about living the healthy life? Maybe it is just a little bit easier to live the healthy life here, too. A friend once noticed both of us wearing sports watches and asked if we were runners. We had to stop and think about it. We only run on the beach—and when pressed, we have to admit that we’re drawn there perhaps more to enjoy the breeze, surf, and sand than to achieve any fitness goal. One of us has a pace that most runners might consider pathetically slow, and the other is not very particular as to distance. I bet there are lots of us out there—“accidental” runners, bicyclists, hikers, kayakers, swimmers. We aren’t preparing for competitions, just finding a way to get outside and enjoy our natural environment—and get a little exercise in the meantime. Undoubtedly, our mild climate and beautiful natural setting make outdoor activities much more inviting and accessible. Besides the blessing of natural beauty, we are remarkably blessed on Amelia Island with an annual calendar that is full of interesting and stimulating festivals, events, and other happenings. Over the years, events such as the Amelia Island Chamber Music Festival, the Amelia Island Concours d’Elegance, and others have become annual cover stories. Of course, enjoying our natural environment and events is predicated upon enjoying good health, and so we are happy to have added this annual Health and Wellness special issue to our editorial calendar for the third year in a row. With a growing list of medical treatments and professionals available locally and regionally, we have tapped seven local healthcare specialists to share some of their knowledge on topics that are of interest to all of us. Flu Symptoms Nothing to Sneeze At BY WILMA ALLEN

I

t is surprising how often people suffer stoically, going about their business with symptoms of colds and flu, and then end up in the hospital. “Pneumonia is an inflammation in the lungs that makes it difficult for oxygen to get into your blood. It can have many causes, but the most common are viruses,” says John Muir, M.D., a Fernandina pulmonary specialist who treats numerous cases of pneumonia during the flu season. When you’re fighting the flu virus, your immune system may be weakened, allowing bacterial pneumonia to develop. This can be very serious, even fatal, particularly in the very young and in older adults. Sometimes the bacteria that cause pneumonia can attack other parts of the body. Antibiotics are useful after the fact, but some pneumonia strains have become resistant to drugs used in treatment, Muir says. That’s why vaccines are so important. Annual flu shots are available in doctors’ offices now and are recommended for everyone 6 months and older. If you’ve reached 65, you should have an additional pneumonia vaccine. Doctors also recommend pneumonia vaccines for children under 2 and adults with chronic problems like asthma, alcoholism, COPD and diabetes—which affect the immune system.

Pneumonia symptoms include fever, shaking chills, sharp chest and/or abdominal pain, profuse sweating, rapid breathing and pulse, shortness of breath, cough with greenish or rustcolored mucus and severe fatigue. Symptoms can appear suddenly or gradually, and, as with so many other illnesses, the earlier treatment begins the more effective it can be. Of course, sometimes the flu is just the flu producing headaches, chills, dry cough, aches, stuffy nose, and sore throat. If there is fever, it usually appears on the second or third day, and the flu almost never causes stomach or abdominal symptoms. If you need a flu shot or if you suspect pneumonia, see your doctor. Identifying and Preventing Heart Disease BY FARID ULLAH, M.D. FACC

I

n spite of advances in treatment, Cardio-Vascular Disease continues to be the number one killer among men and women. Coronary Heart Disease (CHD) refers specifically to hardening of the coronary arteries and blockages in blood vessels to the heart, resulting in angina, heart attacks, and, ultimately, death. The assessment of risk for future CHD is aided by a system of identifiable and quantifiable physiologic, behavioral, and genetic or historical characteristics that have been found to have positive or negative impact on the development of the disease. Modifiable factors which increase the risk of CHD include: smoking, high total cholesterol, high LDL cholesterol, low HDL cholesterol, hypertension and diabetes. It has been shown that about 90 percent of CHD patients have had exposure to at

least one of these major risk factors. The following actions can positively modify the major risk factors: Stop smoking. Smoking decreases cardio-protective HDL cholesterol. Smoking cessation increases HDL levels within 17 days and lowers overall mortality rates. Exercise. Thirty minutes or more of moderate physical activity on five or more days a week generally leads to a 30 percent to 50 percent reduction in risk. Develop a balanced diet. Reduction or elimination of saturated fats and trans-fatty acids, and the increase in monounsaturated fats have been found to reduce LDL cholesterol and increase HDL cholesterol. The combination of a good balanced diet and regular physical activity is significant in controlling obesity, which leads

to diabetes, now considered as having a level of risk equivalent to existing CHD. Other dietary means have been recommended, particularly in increasing HDL (good cholesterol) levels. W

ill I be able to keep my teeth for my lifetime? This is a question dentists are frequently asked. There are several reasons why people lose teeth as they age. Most of the factors that cause tooth loss with aging are preventable. Healthy living is a choice, and keeping your teeth for your life is also a wise choice. The first reason why people lose teeth as they age is due to gum disease. Gum disease is a bacterial infection that can be prevented. Smoking, genetics, oral hygiene, and frequency of professional care all have an influence on gum disease. The best way to prevent gum disease is with good daily oral hygiene, which includes flossing, and by seeing your dental hygienist regularly for cleanings. If gum disease is detected early, treatment can be initiated to prevent tooth loss. Decay is the second most common reason for tooth loss. Decay is preventable with good oral hygiene and a diet low in sugar and carbohydrates. Decay is caused by certain bacteria in the mouth that feed off of the sugar and carbohydrates that we eat. The bacteria produce an acid that destroys the minerals in the surface of the tooth. Even teeth with crowns and fillings can get more decay if someone has less than ideal oral hygiene or a poor diet. Mints, chewing gum, hard candies and cough drops with sugar are bad for the teeth. Sugar drinks, like sweet tea, soft drinks, and fruit juices, are also common causes of tooth decay. Another common cause of tooth loss in adults is due to teeth that break or fracture. Advances in Cancer Diagnosis and Treatment BY SCOT ACKERMAN, M.D.

Anyone who has ever come face to face with cancer will tell you it’s a startling diagnosis. However, the cancer of today is not the cancer of 20 years ago. Improved diagnostic techniques are making cancer discoverable in the earliest stages. Great advances have been made in diagnosing cancer. The earlier the diagnosis, the easier it is to treat cancer, and the better the chance for a cure. Advanced imaging technology like PET (Positive Emission Tomography) scans can identify cancer at its most basic level and reveal how organs and tissues are functioning. PET scans are also used to determine whether cancer has spread and how well it’s responding to treatment. Positive Emission Mammography (PEM) utilizes the same technique to reveal the size, shape, and location of suspicious breast masses. Using PEM, physicians are able to identify breast tumors as small as a grain of rice. Cancer treatment today is focused not just on tumor type, but also on the exact genes, proteins, and tissues affecting cancer growth. With more than 100 types of cancer, no single treatment protocol is appropriate for all. Newer monoclonal antibody drugs are used to stop the progression of specific cancers at the molecular level, and chemotherapy has advanced in other ways as well. These new drugs are less toxic, and new treatments manage the side effects of more toxic drugs more effectively.

Advances in radiation therapy enable doctors to precisely pinpoint tumors and deliver high, uniform doses of radiation directly to the site, sparing nearby organs. Damage to healthy tissue surrounding the tumor is reduced, preventing the disfigurement sometimes associated with radiation of the past. Treatment is designed to produce the most positive outcome with the fewest side effects, both now and down the road. With the rise in cancer survival rates, the need for support programs has also increased. Palliative care programs are focused on reducing symptoms associated with cancer and cancer treatment, improving quality of life and providing support to patients and family members throughout the process. In most cases, quality cancer care is available close to home. In the past, the technology and competency required to treat cancer patients was so complex that patients would go to academic or regional treatment centers for care. s much as 64 percent of the United States population is considered either overweight or obese, and, alarmingly, this percentage has increased over each of the last four decades. On a global scale over 1 billion people, are overweight or obese. We must do something to reduce this trend and lower the number of people who are overweight or obese. Overweight is generally defined as having more fat in our body composition than is optimally healthy. Being overweight presents serious medical consequences also, such as hypertension, elevated cholesterol, and diabetes. The good news is we can do something to help ourselves lose weight and improve our health. We can educate ourselves on weight loss, nutrition, and dieting. Unfortunately, when we think of these three words, we often only associate them with negative thoughts and actions. We should think of them as an educational process, an opportunity to learn and ultimately to help ourselves. L

ASIK stands for laser in situ keratomileusis, which means using a laser underneath a corneal flap (in situ) to reshape the cornea (keratomileusis). LASIK is currently one of the most frequently performed elective procedures in the U.S. This highly effective outpatient procedure utilizes a highly specialized laser designed to treat refractive errors (myopia, hyperopia, and astigmatism), improve vision, and reduce or eliminate the need for glasses or contact lenses. This laser procedure uses a cool beam of light to gently reshape the front surface (cornea) of your eye. This is done by creating a corneal flap on the surface of the eye, which is peeled back to allow the laser to begin reshaping. Custom LASIK surgery, also known as wavefront LASIK surgery, is an alternative to conventional LASIK procedures.

It essentially takes LASIK a step further by adding the ability to correct visual aberrations in the eye to achieve maximum visual acuity. Visual acuity is defined as the ability to identify small objects clearly at a distance. Perfect visual acuity is often described as 20/20, but custom LASIK procedures can now improve visual acuity to levels which are often 20/20 or better. Custom wavefront LASIK surgery uses computerguided technology to take measurements of your eye’s unique signature or “fingerprint”. After this map is created, it serves as the guide for the laser in re-shaping the cornea. The results are surprisingly precise, and vision correction outcomes are more accurate than any other type of vision correction surgery because it is essentially customized for your particular eyes. Custom LASIK surgery cannot only improve your visual acuity dramatically, but it can also improve how well you see in terms of contrasts, colors, and fine detail. This also means that there is a reduced risk of LASIK surgery complications common to traditional procedures, including glare, halos, and decreased night vision. eel better, look better, and stay healthy. Have more energy, lower cholesterol, control diabetes, increase circulation, control weight, increase strength, and reduce stress. Who doesn’t want that, right? If you could just swallow a pill and it was simple, quick and easy, everyone would run straight to the pharmacy. Well, it’s not quite that easy, but there is a “medication”, a “pill,” if you will, and it can be fun and easy, and you can enjoy some of its benefits right away. It’s called physical activity—exercise. So why is this pill so hard to swallow? A Physical Therapy Journal article has addressed exercise adherence in older adults, and the researchers have identified a variety of determining factors. Some factors that increase adherence are called motivators, whereas others decrease adherence and are called barriers. They concluded that older adults that adhered to exercise were characterized by an inner motivation to exercise, were capable of controlling their own behavior (self-efficacy), recognized the benefits of exercise (outcome expectation), had the ability to set specific activity-related goals, and enjoyed walking or exercise. Barriers shown to decrease adherence to exercise include insufficient time, lack of social support, no place to exercise,

no transportation to an exercise site, and insufficient money to either buy exercise equipment or join an exercise facility. Fear of falling and fear of injury while exercising are also significant barriers. Finally, researchers have found that increased stress, depression, increased age, decreased health status, and lack of enjoyment while exercising are associated with poor adherence. Your own barriers may be surfacing from simply hearing the word exercise, but don’t worry. Exercise can be something as easy as trying to move more, doing more light household activities, taking a break from your workplace to stretch, walking before lunch, or climbing a flight of stairs instead of taking the elevator. For others, increased physical activity may include starting a short walking or biking program a few minutes a day, progressing slowly over time, or doing yoga, Pilates, weightlifting, or aerobics at home or transitioning to a structured supervised program. Exercise isn’t really a big “pill” to swallow; just start with small doses and before long you will be enjoying the benefits of exercise. Jim Marino is the CEO of Nassau Physical Therapy. illiam Maurer is well known locally for his watercolors depicting the charming streets, buildings, and boat scenes of Fernandina Beach. His book, Sketches of Amelia Island and Fernandina Beach, is a favorite coffee table book for locals, as well as visitors who want to bring home Maurer’s artwork as a beautiful souvenir of their visit to the island. If you’ve noticed a strong architectural bent to his watercolors and drawings, there is good reason. Maurer started his career as an architect, training at Pratt Institute in New York, at the Ecole Superieure des Beaux Arts in Paris, and later receiving a Master’s Degree in architecture from Harvard University. For a decade, Maurer worked as an architect throughout North Africa, based out of Morocco. Maurer is also well known locally for his annual workshops. Starting in September and continuing through winter and spring, Maurer offers workshops on Amelia Island. During the summer, Maurer returns to France where he paints and offers more workshops

there. The painting shown above was painted in the village of Gigondas, in the region of Provence, France. “In a workshop in Provence, we stopped at Gigondas, a village celebrated for its wine,” explains Maurer. “My folding stool and paint-box for 45 minutes gave me this vineyard and farm house. What a delightful day and rewarding souvenir!” “Since my youth I have been going back and forth to France every year,” continues Maurer. “After becoming a full-time artist I began to be fascinated and devoted to painting the quaint old villages in the countryside. At one point in my life, I made a small living painting at quay-side in Honfleur, Normandy, and Paris.” William Maurer exhibits his paintings locally at The Loop Restaurant, as well as Eight Flags Antiques and Amelia Island Coffee, both in downtown Fernandina Beach. im Digby really wanted the job as the new managing director of Omni Hotels & Resorts at Amelia Island Plantation. He describes the new position as coming along at just the right time in his life. He even applied for and accepted the post sight unseen, never having visited the island at all! Now it’s not that Digby hadn’t heard of Amelia Island Plantation. He had been very aware of the resort when he was director of sales and marketing for the Marriott Sawgrass in Ponte Vedra, which viewed the Plantation as its chief competitor. Yet he had only viewed the resort over the Internet. With a 28-year career with Marriott, as well as his short stint as manager of Indian River Plantation in Stuart—a smaller but very similar complex—he was well prepared to take the helm at the new Omni Amelia Island Plantation. Yet, more than anything, it was the lifestyle change that made Digby seek the job. He and his wife, Gail, had spent 20 years in the South during Tim’s career and they loved the Southern pace and way of life. When the position at Omni became available, his was working as Senior Vice-President of Operations for HEI Hotels and Resorts, traveling around the country from Monday through Friday and managing ten hotels. He and Gail were living in Connecticut, while their son, Kyle, a University of Virginia graduate, was embarking on his graduate degree in engineering from Georgia Tech. The only one at home was their golden retriever, Mickey. Of course, it just so happened that the last three winters in Connecticut had been the coldest on record. They were definitely ready to come back south! When Bob Rowling, Omni’s owner, won the bid to buy the bankrupt Amelia Island Plantation, Digby contacted the president of Omni Corporation, Mike Dietemeyer, whom he knew from the past, and put his hat in the ring. Digby was appointed managing director last October, and he and Gail were happily able to move south again, and now are even happier that the move was to Amelia Island.

Digby is excited about the plans for the future of the Omni Resort here. The company is spending more than $70 million to upgrade the complex. They are adding to the hotel no fewer than 155 oceanfront rooms; the Beach Club will be enhanced with an infinity-edge pool; the lobby bar will be glass from floor to ceiling to emphasize the views; and the Conference Center will be expanded by 16,500 square feet to a total 62,000 square feet, to accommodate even larger conventions. Besides these impressive improvements, they are contemplating even more in the future. When asked about what has surprised Digby most about his new position, Digby quickly comments on the quality of the people. “The staff of 700 associates was top-notch,” he says, and he also felt that, for a bankrupt company, the Plantation had been maintained very well. Omni Hotels and Resorts sees Amelia Island Plantation as a “purchase of passion,” as Digby calls it. “It was a legacy-buy that will be in the Omni portfolio for many years.” Tim and Gail Digby also plan to be here for many years, and Gail is busy supervising construction of their new home. Tim Digby has found his dream job, jumping in with an excitement and vitality that is well suited to Omni’s “purchase of passion.”

H

undreds of people were killed in New York City in 1964. One death still resonates with meaning nearly a half century later: the girl left to die by her neighbors. Kitty Genovese was a hard working girl, a real New Yorker, who managed a neighborhood bar five minutes from her apartment in Queens. Her job required her to come home late at night— actually very early in the morning. Although nervous, she didn’t worry terribly. She could park close to her apartment, and it was a nice working class neighborhood. One night in March her luck ran out. A sadistic killer was waiting as she parked her car. Leaping on her back in the middle of the street, he began to stab her and she began to scream. No one came. Lights came on; someone yelled and the killer ran. Kitty pulled herself to the door, but, disoriented, she did not unlock it and go in. No one called the police. No one came—except for the killer, who returned to attack her again. Once again, she screamed, and he ran. Kitty made her way to a back entrance and collapsed. The killer returned one more time, and this time Kitty died. Finally, someone called the police. Kitty’s neighbors believed they did not have to help her because someone else would. One neighbor even said that he did not call the police because he believed they had probably received hundreds of calls. Domestic violence can be a quiet crime. No one but those who live in the household may know about it. The first advocates for Micah’s Place heard the screams. We now have a shelter in Nassau County because that determined group of mostly women would not assume that someone else would take care of this problem. The earliest advocates were from the justice system. Critical assistance came from the office of the clerk of the court and the sheriff’s office. In order for a shelter to become a reality, however, individuals from all over the county needed to respond. The response was amazing. With a county donation of land and other in-kind services from county professionals, as well as hundreds of volunteer hours, augmented by a successful capital campaign, the shelter became a reality. We did not say, “Someone else will do it.” Micah’s Place has endured and served hundreds of women and their children because these same people and others

continue to step up. Operating a domestic shelter is expensive and could not be sustained without continued support. I wish I could say that the scourge of domestic violence has been eliminated from Nassau County. Unfortunately, the services of Micah’s Place are needed today more than ever. I am proud to say I live in Nassau County because people here refuse to sit and wait for someone else to hear the screams. Micah’s Place, Inc. is a 501(c)(3) non-profit and the only certified domestic violence center serving the residents of Nassau County. Micah’s Place offers safe emergency shelter for victims of domestic violence, outreach programs, including legal advocacy and community education programs. the edible garden If you love guacamole, then consider two varieties of avocado that can be grown in Northeast Florida BY BETTY MORRELL

N

ow this is what I call gardening weather! The cooler evenings, crisp mornings, and milder days beckon us outside again. Fall is arriving, with its pretty mums in an array of colors. From vibrant yellows to crispy cool bronze, from pure white to soft lavender, and from blush pinks to deep burgundy, mums offer great variety, as well as hardiness. Nearly everyone loves avocados. Two types are available in our supermarkets: the Haas and the Florida. Although neither one of these delicious avocados are hardy for our area, there are two that are cold-tolerant and will not only survive our winters, but will supply you with lots of healthy, delicious fruit. Avocados are considered a tropical fruit, grown commercially in California, Mexico, and southernmost Florida, near Homestead. Varieties discovered in the mountains of Mexico, however, have considerable cold resistance, and will survive temperatures into the low 20›s, especially if grown in a protected location. The two types that have the best taste are the Brogdon and the Lula. These avocado trees bloom in late winter. The fruit ripens from

You should also water well for two to three days before a hard freeze. With great care and following all safety instructions, a small Coleman heater can be used.

summer into winter, depending on the variety. Most varieties will produce some fruit if grown alone, but production will be much heavier when two or more varieties are planted. All Avocado trees require good drainage, as the trees have a shallow root system, and constantly wet soil will rot the roots. In the absence of rainfall, irrigate lightly and frequently enough to keep the soil moist, but not wet. Mulching is helpful, and the tree’s own fallen leaves can supply the mulch. The planting site should be chosen with cold protection in mind. When planting avocados, consider that most varieties will eventually grow quite large—to 40 feet tall—and produce dense shade. For this reason, they should be planted no closer than eight

to ten feet from the house. If you don’t need a large tree in your landscape, these avocado trees also take well to containers. Both the Brogdon and Lula are self-pollinating. The Lula matures in October and the fruit stores well on the tree into January or February. The Brogdon is easily identified by its thin dark purple skin and large size. Fruit is harvested September through November and is an excellent choice for guacamole. The avocado is a climacteric fruit, which means the fruit matures on the tree, but ripens off the tree. Avocados must be mature to ripen properly. Once picked, avocados ripen in a few days at room temperature. They will ripen even faster if stored with other fruits, such as apples or bananas, because of the influence of ethylene gas. ueet and Max Hertweck can’t remember exactly how many houses they have built together. Their fingers stop ticking them off when they reach around 11 or 12, but it is enough to let you know quickly that they are experienced and competent in the business of building a new home. Moving because of career opportunities, each house they built became part of their learning experience. Their favorite architectural style evolved into a French Country style that has been adapted into both large and small homes, representative of the different times in their lives. That style has also worked well as a stage for a vast collection of antiques they have amassed through the years. Their home at Oak Point in Amelia Island Plantation is a perfect example of precision and know-how in house building. John Cotner was the architect, and Max served as general contractor, working with Russell Tomasini. The finished product is an elegant yet comfortable home— with a country cottage feel.

Max started out his career as a young news photographer. He met Queet when he was working in Columbus, GA, and came to photograph the CEO of a company for which she was working. He later entered the corporate world, becoming vice president of a cable TV franchise, first in Columbus and later in Lexington, Kentucky, where he was assigned to oversee the construction of the cable systems and subsequently manage them. An enthusiastic golfer, Max saw an ad for a discounted package to Amelia Island Plantation. Knowing nothing about the area, he organized a golf trip, and the couple fell in love with the island. Being careful buyers, however, Max and Queet came back each season to be certain it was what they wanted—and it never lost its appeal. That was 1995, and sixteen years later, they still love the area and have a multitude of special friends here. This is their third home on Amelia Island. In 2000, they had built a large home in Long Point, which was featured on the Micah’s Place Home and Garden Tour. Later, however, they decided to look for a property in the mountains. With this new lifestyle, having one very large home was no longer ideal. Again, their housebuilding skills came in handy, as they undertook this smaller home in Oak Point. This location was attractive not only because of the size, but also because the exterior maintenance is included, making it easy to set the alarm and head to the mountains.

Their experience in building homes really helped when it came time to design the space for the top floor. Max and Queet went through the design with the architect to carve out a much expanded area from unused space, including sitting rooms, a walk-in attic space, and even a gift wrapping room. The square footage was expanded considerably through their efficient and creative use of space. The creativity of this couple is also apparent throughout the home’s interior. Max grew into an award-winning news photographer. The walls in his office—which he jokingly refers to as his “man cave”—are covered with pictures of legendary figures, including U.S. Presidents Eisenhower, Kennedy, and Johnson. Interspersed with photography awards, one also finds photos of Bobby Kennedy, Martin Luther King, Jr., Fidel Castro, and photos taken at General MacArthur’s funeral. Queet’s creative side shines through in the interior décor. She has a talent for combining fabrics and colors, and is especially good at decorating with salvaged antiques, pulling it all together to create that special “wow” factor. Wherever she

goes, Queet has a knack for ferreting out antiques. She points to one light fixture and says, “Those were from Eight Flags Antiques and looked horrible before I had the brass polished.” The foyer chandelier was a Shrimp Festival treasure. Many other decorative pieces were hand-carried on planes from their various trips. It is a joy to walk through this very special home, where each piece has a unique story. The antiques contribute to the charm of the home, while the fabrics add color and elegance to punctuate the French Country style of the home. Heart pine planks in the floor and in the living room ceiling beams add warmth. They were rescued from underneath the subway tracks in New York City. It seems the wood had been stored there for years, but, after the attacks of September 11, security made it necessary to seal the spaces below the tracks. The timber was rescued, sold to a Jacksonville supplier, and ended up in the Hertwecks’ living and dining room. Overall it is a charming, welcoming house. Or as Goldilocks would have said, “Not too big, not too small—it’s just right.”

Le Clos

For expertly prepared meals in the prestigious French tradition, Le Clos is Fernandina’s own taste of Provence.

J

’adore French food! A great French meal is always inspiring for food-lovers, and Le Clos, located on 2nd Street in the Historic District, is Amelia Island’s premier French restaurant. Le Clos serves delicious Provençal dishes by candlelight in a charming, intimate 1906 cottage. Chef and Owner Katherine Ewing received full degrees in both pastry and cuisine from Le Cordon Bleu and L’Ecole de Gastronomie Francaise, RitzEscoffier, Paris, and she trained at the Ritz Hotel, Paris, France. Julie Bundy is the restaurant’s manager, and she is an expert on wine pairing. My friend Emily and I headed over to Le Clos to celebrate her birthday, but any night is a reason to enjoy their fabulous food. We began our meal with Le Clos’ famous Pate and a glass of 2007 Chateau de Cosse Sauterne, suggested by Julie. This was unusual for me, as I’d always considered sauterne as a dessert wine. I was happy to learn how wrong I was—and to discover Le Clos’ wonderfully eclectic wine list. Le Clos’ Pate is creamy and rich, made with pork and chicken liver, and just a hint of curry. It is served with little toasts and cornichons, which are small pickled gherkins. The Sauterne paired so well with this appetizer: the sweet, smooth wine accentuated the creaminess of the pate, without overwhelming it. I will definitely order this pairing again! Our next course was Le Clos’ Caesar Salad, which has a wonderful, made-from-scratch dressing that is piquant from the garlic and served with freshly shredded parmesan cheese on top. The croutons are actually crumbled, which I thought was a nice touch, as they are easier to eat and I could get croutons with every bite. The salad was paired with a glass of 2010 Pascal Jolivet Sancerre, a Sauvignon Blanc that is very dry, crisp, and vibrant, perfect with the Caesar salad. We also tasted a 2010

Whispering Angel Rosé that is a well-spiced rosé, but on the lighter side, also very nice with this course. For our entrees we decided on the Hudson Valley Duck and their special that night, Parmesan Crusted Grouper. We sampled two wines for this course. For the grouper, we tried the 2009 Bouchard Pere & Fils Pouilly Fuisse, a very perfumed, silky and elegant wine, perfect with the fish. For the duck, a 2007 Chateau Haut-Beausejour Saint Estephe was recommended. It was a richly colored, deep red wine, and also made an excellent pairing. The grouper is served with lovely, light and fluffy potatoes, tomatoes and capers, and a soy ginger reduction that is blended with a citrus beurre blanc. Add to that a wonderful crust on the fish and it really took this dish to another level—it was heavenly! As for the duck, it has always been one of my favorite dishes at Le Clos—and it was just fabulous: seared to perfection and served with mushrooms, garden vegetables, and chive whipped potatoes. One of my favorite things about Le Clos is how they serve their food in the best French tradition: the vegetables are julienned and perfectly cooked, and the potatoes just so fluffy —I don’t know how they do it! With such attention to every detail, the focus is on the whole plate, not just the meat and sauce. For our dessert, we had a very simple dish: Vanilla Ice Cream with Homemade Caramel Sauce. Our wine was a Bouchaine Bouche d’Or Chardonnay, a surprising treat. Bouche d’Or, or “taste of gold,” refers to the amber color and sweet essence of this wine. The ice cream and sauce was a fine end to our rich and satisfying meal. Be sure to check out Le Clos’ charming new garden area. It’s a lovely place to enjoy a very special meal—for a special occasion or not—in the best French tradition.

melia Island’s tidal marshes are thriving habitats that provide refuge to numerous creatures, including one extremely rare species: stress-free humans. In a kayak, traversing the creeks that wind through the marsh, paddlers are lulled by the rhythm of paddles on the water and the gentle waves of a fluctuating tide. Here, adventure meets repose, as kayakers enjoy a peaceful float down the river punctuated by exciting discoveries and sightings. A kayak trip with the Omni Amelia Island Plantation Nature Center begins with ease for even the most novice paddler. The guides fit each guest into a kayak and personal floatation device, and provide instruction on controlling and navigating the boat. The kayaks used, Pungos, are designed to be stable and easy for beginners to maneuver. Most group tours “put in” at the boat ramp at Walker’s Landing and meander through Walker’s Creek, an estuary that leads to the Intracoastal Waterway. Except for the musical sounds of the marsh inhabitants and the gentle splashing of the water, Walker’s Creek is silent. The Nature Center offers three tours along this secluded creek. The Naturalist Paddle heads out in the morning with one of the center’s knowledgeable naturalists to discover the wildlife that thrives in the marsh ecosystem. “There is nothing better than kayaking on the water at 8:30 a.m. to see the wildlife and enjoy the beautiful marsh!” says Nature Center guide and naturalist Amanda Clark. Amelia Island’s famous

marsh sunsets are the centerpiece of the Sunset and Moonlight Paddles. During the sunset paddle, guests reach the Intracoastal Waterway just as the sunset is most vibrant. The Moonlight Paddle begins as the sun begins to set, and guests enjoy the moonrise over the water. Horned Owls, raccoons, and bats are frequently encountered on this twilight tour. The two-hour trips provide paddlers with visits from shore birds such as Osprey and herons, as well as crabs, fish, and an array of mammals. “Every trip is different,” says Clark. “One day we might see dolphins playing in the Intracoastal, and the next day we may see a manatee.” Paddlers stop along the way to visit a sandbar at low tide. This provides a chance to view the scenery from another vantage point and to hunt for the fiddler and blue crabs that live here. As the temperature cools, mallards, white pelicans, and falcons are among the many migratory animals that winter in the marsh. Kayaking is a tranquil adventure for people of all ages. Children eight years old and over are welcome, and those under 13 must ride tandem with an adult. The Nature Center says this is for safety reasons, but moms and dads might think it’s another great way to enjoy the serenity of floating through the marsh— while the kids do all the paddling! The Nature Center offers a variety of tours by land and sea, including Segway Tours and guided beach strolls.
