It’s a well-worn cliché that as people age, they tend to talk about the condition of their health more, but like so many things that become clichés, there is a kernel of truth in it. More and more, I find myself becoming that person. As regular dental check-ups identify disintegrating fillings, long-time eating habits add extra pounds in unexpected places, and a busier and busier schedule—fueled by the demands of work, family, and community— makes regular exercise an elusive goal, it’s easy to find ourselves reflecting on the state of our health more often. And it’s not just the current state of our health we have to monitor. A large part of being healthy involves planning for good health in the future. Things taken for granted in our youth, like undisturbed sleep, abundant energy, and a strong and flexible body, become more present concerns as the years pass. I have lately realized that good health depends on day-to-day attention and care, not on simply treating problems that require attention. As we get older, healthy and active living requires a healthy and active lifestyle. It requires a conscious effort to take a lifelong view of our health and begin to make healthy choices when we are young. With conscious effort on a consistent basis, we can considerably lessen our risk of being overwhelmed with more onerous health issues as we get older. Each year, we use the October Amelia Islander Magazine for a “Health & Wellness” special issue to highlight important issues in maintaining good health. On Amelia Island and in Nassau County generally, we are blessed to have an expanding number of outstanding medical professionals and essential healthcare services very close to home. The steady growth in our local medical community is good news for us, because that means that an increasing number of therapies, treatments, and surgeries are being offered here, providing us with more options and greater convenience. In this issue, we have asked some of Amelia Island’s local professionals to share their expertise with us. W
e all know about the importance of breast health and getting regular mammograms, but many women are confused about how often to have a screening. I recommend all my patients have an annual screening mammogram beginning at age 40. Some doctors may recommend mammograms every other year to women age 40 and older, and some even recommend waiting until you are 50. The confusion stems from the fact that the U.S. Preventive Services Task Force and the American Cancer Society differ about when to start getting mammograms and how frequently to have them. However, the most reliable studies show a reduction in breast cancer deaths by 30 percent when women are screened annually beginning at age 40. While heredity plays a role, 70 to 80 percent of all women who get breast cancer have no family history of it. If you have a family history of breast cancer, you may need to start annual mammograms even earlier. For example, if you have a first degree relative (such as mother or sister) who had a diagnosis of breast cancer at age 40, you should start having mammograms at 30, or ten years earlier than when that relative was diagnosed. One of the unique benefits of having mammograms at Baptist Medical Center Nassau (or any Baptist Health location) is that you can talk to a genetic counselor, who can help determine your risk factors at no cost to you. The counselor can help you decide if you should have an MRI or be tested for a mutation of the BRCA 1 or BRCA 2 gene. Women who have a harmful mutation in these genes have an increased risk of developing breast and ovarian cancer. more accurate. Shorter exam times mean less discomfort. Digital mammography is better than film mammography in women with dense breasts, which have less fatty tissue, making detection more difficult. In addition to annual mammograms, it is also important for women to perform monthly self breast exams. I tell my patients to “know their breasts.” We all have imperfections, but the important thing is to know what is normal for you and, if something changes, to call your doctor. I am often asked if there are ways to prevent breast cancer. My advice is to maintain a healthy weight, modify alcohol intake (one drink per day), exercise, and eat a healthy diet rich in vegetables and fruits. A vitamin D3 supplement, which you can get at any pharmacy, has been shown to decrease breast cancer in some studies. The good news is that as long as it is caught early, breast cancer is one of the most treatable forms of cancer. So take advantage of screening tools available, and take your breast health seriously. Alzheimer’s disease is the sixth leading cause of death in the United States. Every sixty-seven seconds someone is diagnosed with the disease. It is time that Alzheimer’s disease was brought to the forefront of the healthcare world. “Despite the 5.4 million Americans living with Alzheimer’s and the 15 million unpaid caregivers that support them, we have allowed this disease to get the upper hand,” says Certified Dementia Practitioner Pam Polowski of Angel Watch Home Care. “Finding a cure is the priority. As a certified dementia practitioner, I see firsthand the stigma and negative experiences that affect family and professional relationships, as well as the lack of understanding of the scope of the disease. There are still so many misconceptions about Alzheimer’s. The biases surrounding Alzheimer’s keep people from seeking or sharing their diagnosis, which only tends to increase their isolation and depression.” The challenge consists in the ever-changing dynamics of the disease. From diagnosis to end-of-life, there is no single method that has proven to be most effective in treating Alzheimer’s disease. It is imperative that the measures implemented in the patient’s healthcare focus on patient safety and quality of life. a Healthy Mouth BY STEVEN GARRETT, DMD

osmetic dentistry procedures, such as veneers, crowns, bonding, adult orthodontics, implants, and bleaching are becoming increasingly popular. Cosmetic dentistry is a focus of my practice, and a passion of mine. However, as a health care provider, my principal concern is making sure all my patients have a healthy mouth first. We can’t even discuss a beautiful, brand-new smile until a patient’s dental health is in top condition. Here are a few tips to get that healthy smile that you deserve. The foundation of good oral hygiene includes brushing twice a day for two minutes with a fluoride toothpaste and flossing every day. That sounds simple enough, but a healthy mouth starts here. It is also important to minimize sugary foods and drinks. Tooth decay stems directly from acid breakdown by bacteria in the mouth after they metabolize sugar. Foods and drinks that you might be surprised to hear are high in sugar include milk. Lactose is a sugar, and an infant should never be sent to bed with a bottle as this can cause significant tooth decay in your child. Juice has also become very popular lately, and it has a ton of health benefits. However, the high-sugar content can create a breeding ground for oral bacteria. Simply drinking or rinsing
with water after juice can help significantly. And it’s great to see so many active people in our community on Amelia Island, but watch those sports drinks, too. Many of them are very high in sugar. If you use them, make sure to brush your teeth thoroughly after your workout. Another easy thing to do for good oral hygiene is to drink lots of water: Not only does water help rinse away food particles and bacteria, but keeping hydrated is important to producing saliva, which can act as a buffer for acid breakdown of your teeth. Be sure to include dark leafy greens n your diet, too: Folate plays an important role in the health of your gum tissue. Spinach, romaine lettuce, kale, and asparagus are some foods high in folate. And see your dentist for frequent checkups: Preventative care is a lot easier than fixing problems when they get big, so be sure to visit your dentist regularly Let’s keep those smiles healthy and beautiful! The National Eye Institute has determined that more than 11 million Americans have an uncorrected visual impairment that affects the quality of their daily activities. In some cases, these impairments can lead to permanent damage if left untreated. Many eye problems have no obvious symptoms, and therefore go undetected. Early diagnosis and treatment is key in preventing permanent vision loss. Two of the most common eye diseases are glaucoma and macular degeneration. Glaucoma is the leading cause of blindness. An estimated 3 million Americans have glaucoma. Macular degeneration is a chronic eye disease that causes loss of straight ahead vision, vision crucial to important activities such as driving and reading. Early detection is important to prevent and slow the effects of these diseases, and yearly eye exams are the best way to detect these issues early.
Unfortunately, studies show that only 31% of children ages six to sixteen have yearly eye exams. Eighty percent of what children learn in school is visual. Starting yearly exams is critical to the quality of a child’s learning and academic success, and for early detection to aid in normal visual development. Whatever your age, don’t neglect your eyes. S Preparing for Holiday Stress BY RACHEL UNDERWOOD, M.ED.
T
he holiday season is the most wonderful time of the year. Unfortunately, many of us are not able to enjoy this wonderful time to the fullest because of extra responsibilities that lead to added stress and less time for self-care. Luckily, there are steps we can start taking now to beat the stress and keep ourselves in optimum health during the upcoming season. The first step is diet. The food we take in is the number one way to improve our physical and mental health. Eating dark, leafy greens, like spinach or kale, which are rich in folate, helps improve mood by increasing serotonin and dopamine production. Avoiding sugar, gluten, and processed foods helps to control mood swings and also increases serotonin production. A large portion of the control panel to our mood and stress levels lives within the gut, not the brain! Adequate sleep is at the top of the self-care list, always, but especially during times of high pressure. Make time for at least seven hours of sleep each night as this is the time when your body can rest and repair itself. Supplements are an easy way to ensure you are getting all essential nutrients and targeting specific health needs. St. John’s Wort, Kava Root, and 5-HTP are some of the most popular natural supplements for beating stress and anxiety.
Exercise is essential, but it can be stressful to make time for it, so try something easy and fun! Walk the dog do some yoga poses with a friend. If you’re able to get outside during the day, even better! Sunlight is the best way to get Vitamin D3, which also helps to increase serotonin production. Working to minimize and prevent stress is vital, but what happens when it creeps in anyway? Here is a relief technique you can use “in the moment.” Known as the “Relaxing Breath,” this type of breathing exercise is a “natural tranquilizer for the nervous system,” according to its creator, Dr. Andrew Weil. Inhale through your nose to a count of 4, hold your breath for a count of 7, and then exhale completely through your mouth to a count of 8. Repeat the cycle for a total of 4 times. It’s called “4-7-8 breathing.” Start a routine that works for you now, so when the festivities roll around you’ll be able to focus on what’s really important – celebrating our lives, families, and faiths. BEN BYRNS 5K RUNWAY RALLY CHALLENGE RETURNS The fourth annual Ben Byrns 5K Runway Rally at the Fernandina Beach Municipal Airport will take place Saturday, October 10, at 9 a.m. During last year’s race, a reward was offered for the best participation by a Nassau County high school or junior high school. 340 of the 675 participants who ran or walked on the runway were Nassau County youth. The Ben Byrns Foundation, Inc. was organized after the completion of a successful fundraising event in September 2012. This rally was organized to honor the Ken and Laurie Byrns, memory of Benjamin Byrns, who passed away from an with Lulu accidental overdose of prescription pain medication at the age of 20. Ben was a college student who loved the outdoors, surfing, and running, and was studying to become a pilot like his father. With those traits in mind, his parents and friends organized a unique race held entirely on the runways of the Fernandina Beach airport in order to raise funds for local charitable organizations. The current primary beneficiaries of the race proceeds are NACDAC (Nassau Alcohol Crime Drug Abatement Coalition) and the local Boys and Girls Club, with a focus on prevention and education. im and Kara Lawrence have been friends with Philip and Debbie Lehman for almost twenty years. They had been living in Orlando, but their hearts belonged to Amelia Island, where both couples owned vacation properties for the past ten years. The two couples have a passion for art, and they had developed a rapport with many artists over the years. So, after working for years in corporate America and private business, the four friends decided to make the transition to Amelia Island permanently and open a gallery called Art on Centre in the Historic District of downtown Fernandina Beach. “Our goal was to completely embrace Fernandina Beach,” says Jim. “We have strong relationships with established artists. We’ve are beginning to be involved in community efforts and we have supported several community projects, such as the Amelia Island Jazz Festival, Amelia Community Theatre, and the Rendezvous Film Festival. Our gallery is more than a store front. We aim to be actively engaged in our wonderful community.” Art on Centre features a wide variety of art in various mediums,

helly Anderson has been in the insurance business all of his professional life, including many years with New York Life, and he has lived all over the country. When he and his wife, Dickie, relocated to Amelia Island twenty years ago from the Midwest, he found there was a great need for a personalized approach to helping people make insurance choices. In a world of overwhelming technology, Anderson has found that people want to talk face-to-face, and not be dependent upon 800-numbers and websites. “As a broker, I represent the client, not the company,” says Anderson. “I believe my personalized approach has created lots of friendships with clients through the years.” Anderson offers custom-made insurance services to those living on Amelia Island and in Nassau County, specializing in senior planning life insurance, long-term care, Medicare supplemental insurance, and annuity options. Shelly Anderson is known as the “Big Guy” to most Amelia Islanders.His wife, Dickie, a local writer, calls him that in her weekly newspaper column. People still talk about his winning a car for a hole-in-one at the YMCA golf tournament! inona Beard was managing a hotel in Panama City when her father, Ira, asked her and her brother, Steve, to join him and their mother, Marian, in the women’s fashion business. Her father had formerly worked for Macy’s, and with his expertise and good business sense, their original St. Simons, Georgia clothing store had grown to four stores. Two of the stores, The Cloister Collection, are located on Sea Island and in Athens, Georgia. The other two, called Evelyne Talman, are located on St. Simons Island and Amelia Island. Today, Winona handles the financial aspect of the business, while her brother Steve is the buyer. “Our clothing is high-quality and made to last,” says Winona. “Most of our clients are local shoppers. Some of our brands include Lily Pulitzer, Nic and Zoe, and Joseph Ribkoff. Since its opening in 1975, Evelyne Talman has offered the ultimate in ladies’ fashions.” The store features unique collections of jewelry, handbags, and evening bags, as well as a wonderful selection of sportswear and evening separates. oe Marasco loves music, and he loves being the executive director of the Amelia Island Chamber Music Festival. His license plate—VERDI, his favorite opera composer—gives you a clue. Now in its 15th year, the festival continues to grow and build on its historic success. Ever considered the crown jewel for the festival, Yo-Yo Ma will come to Amelia Island in January 2016. “From our earliest days, our Artistic Director Christopher Rex has shared his dream of bringing Yo-Yo Ma to the island. He is considered a superstar,” says Marasco. Unlike the festival’s usual smaller venues, Ma will perform in the 989-seat First Baptist Church January 14. It will be Ma’s first-ever appearance in northeast Florida. Considered one of the world’s greatest cellists, he has made over 90 recordings and received 18 Grammy Awards. Marasco has been part of the festival through the years and is proud of its promising future. An amazing array of talented performers have performed through the years. Many have fallen in love with the island and return year after year. Under his leadership, a shift has been made to offer more programming from January through March, with Yo-Yo Ma the headliner in
January this season. Spring programming in April and May is focused on community outreach and programs for young, aspiring musicians. A combination of factors has contributed to the Festival’s continued success. All involved will agree that the volunteers that provide the nitty gritty labor are key. A variety of unique venues have made for successful concerts and have included Ft. Clinch State Park, the Palace Saloon, the Historic Courthouse, The Ritz-Carlton, Amelia Island, the Omni-Amelia Island Plantation Resort, and many of the historic churches on the island. One of the most successful venues has been the Amelia Plantation Chapel, where Marasco is a member. Originally from Pittsburgh, Marasco grew up in a musicloving family. Their passion was opera. He graduated from the University of Pittsburgh, undergraduate and medical school, and then continued his professional training at U.S. Navy Medical School, Philadelphia Veterans Administration Hospital, Temple University, and Columbia University. T
his simple house with its distinctive wrap-around porch was built in 1873 by John A. Ferreira, an engineer for the Florida Railroad. In 1853, the Florida Legislature chartered the Florida Railroad to build a rail line to Tampa with a branch to Cedar Key. David Yulee, the president and chief stockholder of the Florida Railroad, opted to complete the line to Cedar Key first. It was the first rail line in Florida. Ferreira was a key employee of the railroad from its earliest days. By 1858, the railroad was open, but a financial panic in 1857 forced Yulee to surrender his majority interest. Later, the Civil War added yet another blow to the railroad’s fortunes. The Florida Railroad later became part of the Seaboard Air Line Railroad, and, where still in use today, is operated by CSX Transportation and the First Coast Railroad. As the railroad reorganized after the Civil War, Ferreira purchased two lots on Beech Street and constructed a home. Originally, the land had been part of a Spanish land grant acquired by Domingo Fernandez. Following the acquisition of Florida by the United States in 1821, the heirs of Domingo Fernandez sold the land grants to David Levy Yulee, who recorded the plat of the City of Fernandina in 1857. Most houses built at that time were vernacular, which
means they were not designed by an architect, but rather were the result of the ideas and talents of their owners and builders. The house is a one-and-a-half story frame design and is noteworthy for its gable returns; transom-over entrance; arched, glazed panels in the door; and its wide, welcoming open porch. The front door, much of the glass in the house, and the wide-cut heart of pine floors are original. A Ferreira daughter married a Sturges, and five generations of Sturges’ lived in the house, adding new additions and many family memories. The Ferriera-Sturges family owned the home for over one hundred years. The first grocery store on the island was opened by the Sturges family on the adjoining lot. The grocery store closed in the mid-1980s. In 2005, well-known Florida artist Molly Mabe purchased the house. Adding dramatic track lighting, Mabe used much of the house as a gallery to showcase her art and the detached garage as her studio. One of her original paintings remains in the kitchen/family room off the back of the house. The painted panel goes the length of the room and depicts a day in the life of the marsh from sunrise to sunset. Mabe also renovated the kitchen adding windows and French doors for maximum light.

enjoyed a successful professional career as a renowned radiologist and medical administrator. Joe and his wife, Carrie, have four children, and two of their daughters live on Amelia. Joe and Carrie have always been active in their community, including involvement in their church, the Pittsburgh Opera, and the Pittsburgh Trust for Cultural Resources. They found Amelia Island as a place to escape from Pennsylvania winters, and they moved to the island full-time in 2000. Again committed to their new home, they soon became involved in the Amelia Plantation Chapel, the Jacksonville Symphony, ARIAS, and the Amelia Island Chamber Music Festival. As a child, Marasco learned to play the violin, played in his high school and college orchestras, and has continued throughout his life to share his talent. He enjoys joining members of the Jacksonville Symphony Orchestra when they offer special Christmas and Easter performances at the Amelia Plantation Chapel. Marasco is particularly excited about the many AICMF outreach programs that mentor young artists and offer them performing opportunities. Every year, young artists are chosen to come to the festival and perform through the Beth Anne Newdome Fellowship program, named for a talented violinist who was dedicated to the festival from its earliest days and who was lost to cancer. Especially proud of the Student/ Teacher/Parent Complimentary Ticket Program, Marasco explains that free concert tickets are offered to students, music teachers, and parents in the community when concerts are not sold out. Students are asked to write an essay on their experience. The first days of something significant are always magical, and so it was with the Amelia Island Chamber Music Festival. Artistic Director Christopher Rex dreamed of an island chamber music festival, and brought the best of the best of chamber music performers here. Amelia Island welcomes the performers, and Joe Marasco keeps it all beautifully organized.

A self-proclaimed competitor, he competed in his first of 16 Hawaii Ironmans a year later. Today, this course is used for the Ironman World Championship due to its difficulty and strenuous qualifying requirements. “For me, the race was all about winning. I was fortunate to do so most of the time. But for folks with a different competitive niche, the triathlon is a great challenge just to finish and the sense of accomplishment that accompanies that.” Kaila Umbarger completed her first series of triathlons this past season and encourages new athletes to give it a try. “I was a competitive swimmer, and recently I researched tris and realized the sprint distance was extremely doable. The bike was my challenge, so I began taking spin classes at the gym and riding my bike outside.” Kaila is a great example for those hoping to get started on their own. “It takes weeks to train for the event, but that’s half the fun,” she says. “It never gets old and boring. I switch-up my training routine every day by swimming somedays and running or biking on the others. brilliant beautyberry With the end of summer’s heat, add some new color to your landscape with flowering favorites like Early Amethyst, Pepper Bush, and Summersweet. BY BETTY MORRELL
F
all brings a wave of new colors, with front yards adorned with pumpkins, scarecrows, and beautiful mums of all colors. Some summer perennials are still hanging on, while next season’s annuals are showing up in garden centers. Early Amethyst (Callicarpa dichotoma) is commonly known as the lovely Beautyberry. When I lived on Long Island, I pulled out those bushes since they were considered a weed there. Now they bear those beautiful amethyst berries in my own garden. This variety is a new strain of Beautyberry. It grows only around three feet high, and it thrives in full sun or part-shade. Early Amethyst shares many attributes of the species—a pleasant, rounded form; long, elliptical leaves; small, pink flowers; and bright lavender berries —but it sets fruit in early September, well before other Beautyberries. These plants like drained soil and tolerate drought. They bear more fruit when several are planted together. Watch the birds enjoy a feast on those berries! Another great late summer and early fall blooming plant is the Vanilla Spice
TIP O F T HE M O N T H With cooler temperatures here, plant Encore Azaleas so you can enjoy flowers until the first frost and allow time for the roots to establish themselves before winter’s cold.
Bush (Clethra ainifolia). It is also known as Pepper Bush, Summersweet, and Alder. This plant attracts hummingbirds and butterflies. Dark green, glossy foliage makes the perfect backdrop for the long, fragrant spikes of white, extra-large flowers. Its mid-summer fragrance is wonderful on a warm evening outdoors. The Pepper Bush is compact and mounded, covered with four- to six-inch spikes in summer, like candles in the foliage. Fall brings a warm, yellow hue to the leaves. Clethera is prized amongst summer and fall flowering shrubs for its ability to bloom in sunny or shady areas. This plant is salt- and wind-tolerant, and no pruning is necessary. Pepper Bush refers to its black seed, which resembles peppercorns. This deciduous shrub blooms later in the spring.

I still love to plant bulbs that appear in the spring and are hardy for this area. You might want to try the Alliums. The genus Allium (Latin meaning garlic) offers distinctive and long-lasting forms that are standouts in the early summer garden. Alliums are sun-lovers and prefer well-drained and sandy soil. Tuck these bulbs among clumps of summer flowering perennials where the Alliums withering foliage will be hidden by the expanding perennials. Allium Globemaster is the biggest, and many think the best yet, producing small, silvery, purple florets for eight- to ten-inch flower heads. Globemaster gets its size from its A. Cristophii parent, but the florets are packed more densely, creating an imposing and brilliantly purple-colored globe in late spring. Be sure to plant Alliums in more shallow soil than comparably sized bulbs, just one to two times the diameter of the bulb. Fertilize in spring and fall with any bulb fertilizer. ummer Beach, situated on the south end of Amelia Island, offers a variety of homes, all convenient to a golf course, pool, club house and The Ritz-Carlton, Amelia Island. The Summer Beach home of Pat and Dick Troxel is a traditional gray-and-white with shutters, and it would be quite at home in New England. The classic white wicker on the front porch adds a welcoming Southern touch. Pat and Dick visited Amelia Island often when they lived in Atlanta. They owned several homes through the years and made the full-time move in 2000. Pat brought her real estate selling-talent from Atlanta to Amelia Island. She recognized and purchased the treasure the Troxels now call home. She knew it was the perfect house for her family and visiting grandchildren.

Pat has been joined by her talented daughter, Pam, in the real estate business. The mother-daughter team has proved to be a dynamic combination, and the pair has won many Top Producer awards. Dick loves the proximity to the Golf Club of Amelia course, and he even finds bonus golf balls when out walking Bella, the family Yorkshire terrier. In contrast to the exterior, once inside the threshold of the house one is immediately impressed with the dramatic color used to showcase antique furniture and treasured collectibles. The dining roomâ&#x20AC;&#x2122;s chandelier has been enhanced with sparkling
crystal accents. Over-sized botanical prints adorn one wall. A zebra skin rug offers an interesting contrast in the traditional dining area. The colors throughout the home complement each other and are offset by white molding and baseboards. Gray walls and white slip covered chairs and couches offer contrast. Ink blue patterned pillows add a pleasing effect against the white sofas. The big surprise in paint colors is the red used on the living and dining room ceilings. When Iris Jacobsen, a friend and consultant on home dĂŠcor, suggested red for the living and

dining room ceilings, the Troxels weren’t sure about such a dramatic choice, but they trusted her advice and ended up with a look they both love. “I strongly believe that with good color choices, you should be able to move things around in your home room-to-room without color clashes,” says Jacobsen. The family grand piano adds an unexpected accent to the living room. The back of the book cases picks up the red in the ceiling and shows off a collection of pottery.
The master bedroom uses red again as a dramatic color. An antique bed and armoire that belonged to Pat’s grandmother add a classic look. Over-sized animal print pillows contrast with the white of the bed spread. The master bath uses soft grays, with an oriental rug making a color statement. A glass brick wall separates the master shower from the main bathroom. Lots of light floods in from two shuttered windows.

ancy Sushi opened in 2007 to rave reviews from sushiloving diners on Amelia Island. Owner Susan Wang and her friendly staff serve traditional and creative Japanese dishes every day, along with fine wines, beer, and sake. I invited my friend Roger to meet me at Fancy Sushi recently for dinner. The restaurant always has a lively atmosphere, and this night was no exception. I ordered a glass of Chateau Saint Michelle Sauvignon Blanc, and for Roger, Momokawa Pearl cold unfiltered sake.
Unfiltered sake has a creamy consistency and a delightful flavor, and it is perfect with sushi dishes. Susan brought us a bowl of their famous soup, and I say famous because everyone I know is crazy about it. It’s a beef-based broth, simmered for eight-tonine hours with celery and onions, to which crumbled tempura crackers are added. She also brought us the Holiday Roll, or
Yum Yum Roll, a complimentary appetizer to enjoy before our main entrée. For our next course, Roger and I shared the Zesty Tuna appetizer, a sushi roll sitting atop a bed of raw daikon radish “noodles”. The roll was lightly battered and fried, filled with spicy tuna, cream cheese, spicy mayonnaise, and sesame seeds. An Ochi flower garnished the plate, and Roger and I nibbled on this beautiful embellishment, which tasted faintly of celery. Our next dish was Shrimp and Vegetable Tempura, my favorite dish at Fancy Sushi. The shrimp is encrusted with tempura crackers, and it is so crispy and perfectly cooked. The vegetables consisted of sweet potatoes, mushrooms, zucchini, and broccoli in a light batter, served with a tempura dipping sauce made with soy sauce and ginger. Delicious! Susan suggested we share the Amazing Roll, their most requested sushi special. It’s filled with shrimp, avocado, krab, red tobiko, and wasabi tobiko, and it’s a little like two rolls-inone. We ate the roll dipped in soy sauce with wasabi paste and bits of pickled ginger. I can see why this is a restaurant favorite! We also shared a dish from the hibachi menu, King Salmon and Scallops served over a beautiful plate of mixed vegetables in a light sauce. What an agreeable and healthy dish, and so flavorful, with the salmon served very moist, tender, and flaky. Susan suggested that Roger and I sample another variety of sake, Shochiku Bai hot sake. A clear, draft-style beverage, it paired nicely with my very favorite Fancy Sushi dessert, Fried Oreo Cookies! I can never resist those hot, crispy, creamy cookies, lightly battered and fried, and served with fresh whipped cream. Fancy Sushi offers unique hospitality to all of its customers. Whenever I place an order to-go, a server brings me a bowl of soup to enjoy while I’m waiting for my food. The fried Oreos and Yum Yum rolls are also complimentary to all diners, and such a special touch, in my opinion. Some of my other Fancy Sushi favorites include their pan-fried Udon Noodles with Vegetables and Shrimp, the Rainbow Roll made with red snapper and salmon, and their Green Tea Ice Cream. T
here is a new way to tour the waters around Amelia and Cumberland Islands. Backwater Adventures offers the unique opportunity to both learn to drive a two-person catamaran and see the sights in style! I joined Allen Elefterion, owner of Backwater Adventures, for the three-and-a-half hour tour. Eight other adventurers joined us early on a Saturday morning. Allen gave us our basic safety and operating instructions, and then we paired off and settled into a very comfortable two-person catamaran. One person rides and the other person drives. The small boats are stable, safe, and proved to be a lot of fun. Allen describes them as “Go Carts on water.” They are 13-feet long, and they look like a pair of surfboards with a chassis and a 25-horsepower motor. I settled into my comfortable seat and let Allen do the driving. A typical tour has three or four boats going out on it. Watching the other boats that went on our tour, I could tell that the “drivers” of the other boats were having a lot of fun. Along the way, everyone learns all the things the clever little boats can do. A cooler with water is provided, as well as all Coast Guard required safety equipment. We were able to stow cell phones, cameras, and other valuables in a dry area. As on any new adventure, you need to be prepared. For our outing, we brought sunscreen, hats, and sunglasses, and we wore clothing we didn’t mind getting wet. Our first stop was Ft. Clinch, and we had all kinds of photo opportunities as we viewed the historic fort from the water. Then, we zipped across the St. Mary’s River to Cumberland Island. We traveled up scenic Beach Creek, and were surprised by a delightfully playful pod of dolphins that were so close to us we could truly almost touch them. We then left the creek and parked our boats at the Dungeness dock. From there, we explored the south end of the island and the ruins of the Carnegie mansion, which burned down in 1959. We hoped for some wild horses and we were not disappointed. Again, lots of photo opportunities.
Back to the dock and in our boats again, we took off to do some more exploring. Instead of going straight back to Amelia Island, we ventured into the Jolly River and the Bells River. Clearly, Allen loves his business. He got the idea for the Amelia Island business from his sister, Lisa, who created Backwater

Adventures on Marco Island, where she lives. The business opened Memorial Day 2014, and Allen has never looked back.
