Good health is an essential part of our enjoyment of life. In whatever stage of life we find ourselves, good health contributes to our general sense of well-being. How we approach our health changes over time. When we are younger, we think about maximizing our health: how fit am I; how fit can I be; what diet will maximize my energy? As we get older, different concerns emerge, and we can find ourselves reflecting on our health more often. We ask ourselves: how can I maintain my energy? What can I take to protect myself from illness and disease? How can I preserve my strength and mobility? A large part of staying healthy as we age involves laying the foundation for good health in the present. Consistent good health depends on day-to-day attention, not on simply treating problems. Healthy choices mean healthy living. With conscious effort, we can considerably lessen our risk of being overwhelmed with health issues as we get older. Our health also depends on good treatment and medical advice we receive on the local level. Having a vibrant medical community is crucial, and we are very fortunate in Nassau County to have an expanding pool of fine medical professionals so close to home, led by the outstanding Baptist Medical Center Nassau, as well as in Jacksonville. The growth in our local medical community means that an increasing number of therapies, treatments, and surgeries are being offered right here, giving all of us more options in treatment and, of course, greater convenience. e all know about the importance of exercise, especially as we age, yet only 20 percent of Americans exercise regularly, and more than half of all baby boomers don’t exercise at all. “Stay Active” is my mantra for patients no matter their age. Many of those who do exercise tend to focus on either cardiovascular exercise or strength training alone, but rarely combine the two. Strength training is more often overlooked. Many people believe they need to join a gym and lift heavy weights to effectively strengthen their muscles, but that’s not the case. It’s easy to improve strength with motions that use your body weight, such as squats and lunges. And these exercises can be done anywhere. When starting a new exercise program, take it slowly. It takes the average person 2-4 weeks to get used to a new level of fitness. Injuries can occur when you ramp up the intensity too soon. Also, it’s best to focus on increasing time spent on any particular physical activity before increasing intensity. For example, if you are starting a running program, walk or jog for 10-15 minutes a day, gradually increasing the amount of time or mileage each week without worrying about how fast you run. Get your body used to a certain pace, and then add 13 AMELIA ISLANDER MAGAZINE • OCTOBER 2016

intensity as your fitness level improves. People who increase intensity too soon often get injured and sabotage their progress. Low back pain is a common complaint for adults, affecting 50 to 80 percent of the population at some point. It is the second-most common reason for doctor visits. The good news is that the vast majority of low back pain, which can be caused by either an overuse injury or inactivity resulting in muscle deconditioning, improves with non-operative treatment. Most adults can find improvement within a few months through temporarily modifying activity, anti-inflammatory medications, and physical therapy to strengthen the core musculature. It is interesting to note that inactivity can result in muscle pain just as overuse can. Without routine exercise, your muscles can atrophy, which has been shown to cause diffuse muscle pain. So again, stay active! Here on Amelia Island, many of my patients are recreational golfers and tennis players with shoulder, elbow, or low back pain. I always suggest conservative treatment first (like ice, activity

modification, physical therapy, and anti-inflammatories), but if the pain persists, the injury should be evaluated by a physician. In rare cases, surgery or injections may be the best solution. My goal is to find the best option of care for each individual injury I see. When surgery is indicated, the goal is return to the previous level of activity, and often this can be done with less invasive surgical procedures for quicker rehabilitation. Sometimes, activity-related joint pain is actually arthritis rather an injury. If joint replacement surgery is determined to be the best option, the success rates for decreasing pain to allow for increased activity are between 80 to 98 percent. Many patients who undergo joint replacement surgery report they would have done it sooner. There is no reason to be in agony and not be able to enjoy doing the activities you love. Bringing a friend or family member to your appointment will help you remember the nitty-gritty details you may otherwise forget. Take notes during your appointment. Having reduced salivary flow can cause a variety of problems with tasting, chewing, swallowing, and speaking, but patients are often surprised that it can also cause an increased risk for tooth decay, oral infections, and bad breath. Saliva has many important functions in the mouth. Everyone knows that saliva is necessary to help us chew, swallow, and digest food. Many people do not realize, however, that it also helps to prevent tooth decay by rinsing food from our mouths and helping to maintain a neutral pH during the digestion of carbohydrates. There are also many components of saliva that are antibacterial and help to decrease plaque and odor-causing bacteria in the oral cavity. There are a variety of causes of xerostomia. Today, the most common cause of hyposalivation is the use of certain medications, including antihistamines, decongestants, antihypertensives, diuretics, pain relievers, muscle relaxants, and antidepressants. Patients can also suffer from dry mouth because of oral complications following cancer chemotherapy and head and neck radiation. The effects of these cancer treatments can be short-lived or long-lasting. There are a variety of conditions that can also cause symptoms of dry mouth, such as Sjögren disease, stroke, hormonal changes, diabetes, and hypertension. 16 AMELIA ISLANDER MAGAZINE • OCTOBER 2016

When a patient comes to our office with a complaint of dry mouth, we first try to determine the cause by obtaining a thorough medical history and performing a complete dental examination. We work very closely with our patients’ doctors and sometimes help with the diagnosis of the underlying cause. According to a 2014 study by researchers at the University of North Carolina at Chapel Hill, the size and quality of a person’s social connections has a direct affect on their level of wellness. The study found that poor social connections led to health issues such as obesity and hypertension. As soon as members stepped off the ferry, they were met by chartered vans for a private, guided tour, which included stops at various island landmarks. Members enjoyed walking tours of the Dungeness ruins, Plum Orchard Mansion, and a church from the 1890s. The day also included a picnic lunch under the picturesque, moss-draped sea oaks. Executive Chef Brett Heritage prepared individual picnic baskets for every member, which included an appetizer, salad, sandwich, and mini bottle of wine.

The Evolution of Cataract Surgery BY DR. TONY STUBITS, O.D.

ataract surgery is one of the oldest surgical procedures known, first documented in the fifth century BC. It was done at that time using a blunt object to knock the lens out of position to try to restore some sight. In the 1770s, it was done by a technique called couching, where a sharp instrument similar to an ice pick was inserted into the eye to push the opaque lens all the way to the bottom of the eye, out of the line of sight. In the 1950s and 60s, intra-capsular cataract surgery was performed, removing the entire lens and capsule, but since implant were not developed yet, patients had to wear Cokebottle thick glasses to see well after the surgery. Also, at that time, patients had to stay in the hospital for the first few weeks after surgery with sandbags placed over their heads still while their eye was healing. In the 1970s, there was a shift to doing extra-capsular cataract surgery using phacoemulsification and leaving the posterior capsule in place to better hold back the fluid in the eye. In this technique, ultrasonography is used to break up the lens into minute fragments and then aspirated out of the eye. Today, cataract surgery is the most common surgery performed in the United States, with about three million people a year electing to do the procedure. It is done now with small, foldable intraocular lenses that require only a 3 mm incision that is self-sealing and doesn’t require stitches. The procedure only takes about eight minutes per eye, usually done two weeks apart. There are two types of procedures currently being used. First, the standard procedure, which has been around for the last thirty years, and then the newer laser-

assisted cataract surgery using the femtosecond laser, which is safer and more exact. There are also more options now as to which intraocular lens to implant in the eye. Prior to surgery, patients undergo a series of precise measurements to determine the optical length of the eye and the curvature of the cornea to determine the optimal lens to provide the best possible distance vision for them. Now, there are aspheric, monofocal lenses to give the best possible distance vision, toric lenses to correct astigmatism, and multifocal lenses to correct both the distance and near vision. Cataract surgery has come a long way over the years, and it is now one of the few ways to “turn the clock back” by allowing people to regain the crisp vision of their youth. our sense of hearing is a vital link to the world—a source of pleasure, and information and connection to others. When someone you know has hearing loss, you can help make things easier. Communication is a two-way street. Communication is the key to all human activities. It is necessary for learning, exchanging information, and generally taking care of each other. Advancements in hearing instrument technology have made a huge impact in the way people with hearing loss can function today. However, it is important to remember that even the best technology does not eliminate the need for good communication skills. If your friend or family member has a hearing loss, you can use these techniques, which will make it easier for them to follow a conversation:

TALK FACE-TO-FACE Face the person you are talking to. Don’t try to converse from a different room or with your back turned. It is easier to hear what people say when you can see what they are saying. Visual clues like facial expressions and lip movements help listeners better understand your words. Stand or sit where your

face is well-lit, so that your facial expressions and your mouth movements as you speak can be easily seen. And try not to talk while chewing or eating. It makes it harder to understand what you are saying, and almost impossible for others to see your mouth and face as you speak.

SPEAK AT A NATURAL PACE You don’t need to shout. It is perfectly fine to speak at a normal conversational volume when talking with someone who wears hearing instruments. Most instruments are programmed to amplify a normal level of speech, so if you shout, it may be too loud or sound distorted to the listener. Moreover, try not to talk too fast. Speak naturally, but try to pronounce your words more clearly. This will naturally slow your speech, but be careful not to overdo it. If you are having trouble being understood, try rephrasing your sentence rather than just repeating yourself. When you are in a group, take turns talking, and try not to interrupt each other. If the conversation changes suddenly, try to inform the person with the hearing loss; knowing the subject of the conversation makes it much easier to follow and participate.

TRY TO REDUCE BACKGROUND NOISE For someone who has a hearing loss, the most difficult listening environment is background noise. Voices are difficult to hear because they are in competition with all the other noise, so try to eliminate background noise when having a conversation. Turn off the television and close any open windows to reduce any noise from traffic. Move closer to your listener so your voice is louder than the background noise. This will also make your face and lips more visible. Alternatively, try to find somewhere quieter to talk. Celebrate National Physical Therapy Month BY JIM MARINO, PT

assau Physical Therapy (NPT) is once again proud to participate in National Physical Therapy Month (NPTM), as we have over the past 27 years. NPTM is hosted by the American Physical Therapy Association (APTA) every October to recognize how physical therapists and physical therapist assistants can help transform society by restoring and improving motion in people’s lives. This October, APTA’s focus is on the national campaign to inform consumers about the risks of opioid use, and remind people that physical therapy is a safe, non-opioid alternative for managing pain. “The #ChoosePT campaign is an outstanding example of what we can do as a profession and as an association when we work together with a shared goal,” says APTA President Sharon L. Dunn, PT, DPT. “Solving the epidemic won’t happen overnight, and we can’t do it alone, but I’m proud of the way we’ve embraced our role as a safe alternative to opioids for long-term pain management. Americans need less pain, more movement, better health, and that’s what physical therapists offer.” NPT has decided our best approach to this campaign for less pain, more movement, and better health is prevention of falls. If the chances of a fall are reduced, the negative consequences of injury, pain, over-medication, and immobility are avoided. Physical therapists offer screening, education, and treatment that will reduce the risk of falls for our aging population.

According to the National Council on Aging, falls among the elderly are prevalent, dangerous, and can diminish their ability to lead an active and independent life. About onein-three seniors above age 65, and nearly one-in-two seniors over age 80, will fall at least once this year, many times with disastrous consequences. With that in mind and due to the great response we had last year, NPT is celebrating NPTM by offering a free Balance and Falls Risk Assessment during the entire month of October. In addition, there will be a “Lunch and Learn” entitled “Falls Prevention and Recovery” in our Fernandina Beach office on October 17 and 20, and in Callahan October 11 and 14. 20TH ANNUAL 8 FLAGS CAR SHOW RETURNS ON OCTOBER 15 Amelia Islanders love their cars, especially the Amelia Cruizers Car Club! Their 20th annual 8 Flags Car Show will be held on October 15 from 8 a.m. to 4 p.m. on historic Centre Street in downtown Fernandina Beach. It will be filmed by Dennis Gage of the nationally telecasted show “My Classic Car,” who will also be covering the group’s “Meet and Greet” on Friday, October 14 at The Surf Restaurant on South Fletcher Avenue and interviewing those who have cars in the show. On Sunday, he will be touring the island, filming its waterfronts, beaches, and parks. “My Classic Car” was developed for TNN and received strong ratings when it aired in 1996, and it has been on the air ever since. rt on Centre recently celebrated their first year in business on Amelia Island with a gallery reception on August 27, attended by many of their devoted clients and friends. “It has been a busy year for us, not only regarding the establishment of the gallery,” says Jim Lawrence, “but also because the owners were transitioning from Orlando to Fernandina Beach to reside permanently. We couldn’t be happier to be part of the Amelia Island business community and we very much appreciate the support of so many clients and business partners. It’s been an exciting year!” Jim and Kara Lawrence have been friends with Philip and Debbie Lehman for almost 20 years, living in Orlando but residing as part-time residents of the island for over ten years. After working in corporate America and private business, the four friends decided to make the transition to move to Fernandina Beach permanently and open up a gallery in the historic district. “We are fortunate to have hired an excellent gallery manager, Carlin Catanzaro,” says Jim. “She fully exhibits our company culture and has brought

to life our intent to create a gallery environment which is welcoming and inviting. Due to the support of our many local and tourist clients, we couldn’t have hoped for a better first year in business. Because of this, we are going to be expanding the gallery over the next few months.” Art on Centre features a wide variety of art in various mediums, along with collectibles. “One of our goals is to highlight fine art that is exceptional yet approachable, representing a variety of price points,” states Jim. “Our gallery is diverse and is ever-changing. “C

hoose a job you love, and you won’t have to work a day in your life” is a phrase that holds true for Lindy Kavanaugh, whose passion for jewelry turned into a lifelong career. A Fernandina Beach native, Lindy moved to New York after college, where she earned the title of Graduate Gemologist from the Gemological Institute of America. After a 4-year stint at Tiffany’s, she realized it was time to move back to her hometown and open her own store. Earlier this year, Lindy’s Jewelry moved into a historic building on Centre Street, and Lindy discovered that the building had been owned by her husband’s great-great uncle in 1901, when it was J & N Grocery and Notions. “It was meant to be!” says Lindy, who has kept many of the store’s original features while adding dramatic modern touches, making it the perfect backdrop for her ow jewelry designs. Lindy also carries pieces by several local design studios including Gogo, Hart Designs, and Aquamarina. nder new Executive Director Lori Hoerl, the Nassau County Volunteer Center has announced a re-branded “Taste of Amelia Island” to celebrate the event’s silver anniversary next month. Hosted by the Omni Amelia Island Plantation Resort, the annual Taste of Amelia Island returns on Friday, November 18 from 6 to 9 p.m. in the Amelia Ballroom. Tickets are now available for this 25h anniversary event entitled, “Giving Back; Looking Forward – A Silver Celebration of Service.” This year’s Taste sees the return of many prominent chefs on Amelia Island, including The Ritz-Carlton, Amelia Island Executive Chef Andrew Yeo. Additionally, the event will include a professionally designed and decorated venue, compliments of Robyn Branch Design, as well as event signage and marketing collateral designed and produced by professional graphic artist Christina King. “We felt it was important to honor the twenty-fifth year of this event with a fresh, elegant approach, from the branding of tickets, signage, and other media pieces to a completely new approach to our silent auction and cocktail hour,” says Executive Director Lori Hoerl. “It is our hope that this year’s silver anniversary event will draw in new visitors from the greater Jacksonville area, parts of southeast Georgia, and beyond.” This year’s Taste of Amelia Island will include a selection of wines from San Sebastian Winery, the Sheffield Family, and Prestige

Wine Imports, as well as the first “Best Dish of the Taste” contest, voted on by attendees and announced that evening. The winning chef will receive an engraved gift. Other highlights include live music and silent auction items that reflect the history, nature, and overall flavor of the island. Taste of Amelia Island is the primary fundraiser for the Volunteer Center, which connects local volunteers with compatible organizations. They also coordinate a volunteer appreciation ceremony, several food drives, a program to provide children with school supplies, and other services to the Nassau County community. Hoerl came on board at the NCVC in June this year, and her vision for the Taste in future years is to see this one event build into an entire weekend. “I have a strong belief that with a wellexecuted event this year, Taste could become part of a weekend-long festival similar to other larger Tastes around the country,” says Hoerl. “We’d like to see the event bring new and returning tourists to Amelia Island at a time of year when our businesses, restaurants and otherwise, could benefit from it.” Recent updates to the Volunteer Center this year include a new informational pamphlet about their history and services, along with a newly designed website. They also distributed school supplies for needy Nassau County Public School students this fall, a program begun 16 years ago. Of course, the daily work of the Volunteer Center goes on: recruiting and placing volunteers in Nassau County nonprofits. Do you want to help out? Do you have time to volunteer? petanque Returning in early November for its annual tournament, the Pétanque America Open celebrates 10 years of competition and camaraderie on Amelia Island. BY KAREN MILLER • PHOTOS BY LAURENT LEO

n November 12 and 13, Pétanque America Open will be celebrating the tenth year of its annual tournament. Philippe Boets, cheerfully referred to as the “Johnny Appleseed of Pétanque,” brought the tournament to Amelia Island in 2009 after moving to Fernandina Beach from South Florida. “We have the best of everything here on Amelia Island,” says Boets. “Beautiful weather year-round, a small, friendly community, the island’s proximity for easy travel, and great lodging. That’s why our pétanque club is the largest in the country.” The first pétanque tournament was organized in 1910 by brothers Ernest and Joseph Pitiot, proprietors of a café at La Ciotat, near Marseilles, in France. After that first tournament, the game spread quickly, and it soon became the most popular form of boules in France. The goal of pétanque is to toss hollow steel balls as close as possible to a small wooden ball called a cochonnet (literally

“piglet”) or jack, while standing inside a circle with both feet on the ground. The game is normally played on hard dirt or gravel. Jimmy Weinsier, president of Amelia Island Boules Club, gathers club members to set up the courts on the Monday before the tournament, and then break them down on the Monday after the weekend event, which is an enormous task since this year there will be a total of 98 courts operating at once! “We will have 78 pétanque courts set up at the harbor front, and 20 more at the corner of Broome and North 2nd Street. The courts are created with timbers and fine gravel,” notes Jimmy. One of the reasons pétanque has become so popular is because it’s lots of fun, welcoming participants from all walks of life and all skill abilities. Beginners, amateurs, advanced players, and champions all play together in one big tournament. On Friday, November 11, the club offers continued on page 57

hea Seagraves offers her many talents to a community she has grown to love. This talented woman has lived many places both abroad and in this country. She has been with the Amelia Island Museum of History for 12 years and currently serves as the education director. As education director, Thea recruits, trains, places, and manages the museum’s 100 volunteers, including students, buildings and grounds volunteers, the board, and all the tour guides. The museum offers a variety of tours, which include tours of the museum, Centre Street, South Fernandina, Golden Era tours, Ghost Tours, and, even, Pub Crawls. Onehour museum tours are offered at 11 a.m. and 2 p.m. Monday through Saturday at the museum, and every Sunday afternoon at 2 p.m. Thea’s biggest challenge is the annual Holiday Home Tour, the museum’s major annual fundraiser and its signature event, which is presented on the first weekend in December. Each year, a number of lovely island homes, beautifully decorated for the holidays, open their doors for tours. The popular event now draws 2,500 people annually, which requires lots of helping hands. Thea will be the first to share that volunteers are the life blood of the tour and the museum. Her husband, Eli, works at Rayonier, and his job first brought the couple to Amelia Island. Married for 37 years, the Seagraves have four children and nine grandchildren, with another grandchild on the way. Thea spent seven years as a middle school teacher in Sacramento, California, was a substitute teacher and Community in Schools (CIS) volunteer coordinator in Columbia, South Carolina, and later served as volunteer coordinator for our local CIS. She loves to perform. When asked about her stage experiences, she answers with a big grin, “The world is my stage!” After joining a mime troupe in college, Thea performed as a performance therapist and street performer for 28 years.

She took to the stage with Amelia Community Theatre, playing one of the famous Delany Sisters in “Having Our Say,” based on the book Having Our Say: The Delany Sisters’ First Hundred Years. Her favorite roll is Felipe the witch, a historical character who once lived in Old Town. She loves to share her passion for the stage and for history when she is called upon to draw from her amazing costume collection for various museum and community projects. She is especially proud of her hat collection, which she estimates at well over 200! This busy woman has found time to represent Mary Kay Cosmetics, as well as mentor three students in the Take Stock In Children program. She was also a featured competitor in the Fernandina Beach Library’s third annual Storytelling Jam, a fundraiser for the island library. When not working, Thea enjoys sailing, gardening, walking on the beach, and—best of all—riding around in her Mustang convertible. She has always loved automobiles and has spent many happy hours with her father working on cars. Her first love has always been the Mustang, and she now owns her fourth. As Phyllis Davis, executive director of the Amelia Island Museum of History, sums up: “Thea lends an air of excitement everywhere she goes, and her enthusiasm is infectious. She is a rare find, and the community and museum are lucky to have her.”

he Fairbanks House, located in Fernandina Beach’s historic district, is sure to impress. It is set back off the street on a generous lot. One is struck by the number of architectural details that make houses of the Victorian period distinctive, such as the Italianate design, which is evident in the vertical lines and distinctive tower. Her colors are very close to the original, and she features elegant balustrade porches, dormers, bay windows, massive chimneys, and an oriel window. To the rear of the house, facing 6th Street, there are two cottages that served as quarters for the Fairbanks’ servants. One of the two cottages may have been the island’s first schoolhouse. The four-story home with its imposing 15-foot tower was built of the finest materials and designed by Robert Sands Schuyler, a New York architect. Schuyler’s distinctive talent is evident in many island homes, as well as in the architectural gem, St. Peter’s Episcopal Church, located at Atlantic and 8th Streets. The house features 12-foot ceilings, floors of heart pine, a fireplace in every major room, and a striking staircase leading to the upper floors. There are many special touches throughout the house that demonstrate the details in which Fairbanks took such delight. For example, unique tiles were used to frame two of the fireplaces on the main floor. The tiles in the parlor are illustrations taken from the plays of Shakespeare. In the dining room, the fireplace tiles portray a more playful theme: Aesop’s fables. When originally built, townspeople called it “Fairbanks’ Folly.” Some speculated that a house with so many rooms (20) and ten fireplaces was frivolous and, therefore, a folly. Another

much-repeated theory behind the folly moniker is that Mrs. Fairbanks did not like the elaborate house or furniture when it was given to her as a surprise by her husband. George Fairbanks was an innovator—and there were lots of firsts at the “Folly.” The house had the first telephone, the first elevator, and the first concrete sidewalk on the island. Fairbanks was also a man with an amazing list of honors and deeds. Originally from New York, Fairbanks was a fruit grower, a noted historian, a lawyer, an editor of the Florida Mirror, and a major in the Confederate Army. After his military service, he was actively involved in the reconstruction of the University of the South at Sewanee. Sewanee alumni are familiar with Rebel’s Rest, the cottage Fairbanks built on the campus soon after Appomattox. Fairbanks and his family lived in the cottage as a residence six months of the year, enjoying the cooler mountain air during the heat of summer. A proud Floridian, Fairbanks served as state senator from 1846 to 1848. In 1856, he founded the Florida Historical Society and served as the organization’s first president when the society reorganized in 1902. He was a successful citrus grower and the first president of the Florida Fruit Growers. Much of the wood on the first floor was brought from some of the family’s orange groves near Gainesville. After the Fairbanks family moved away, members of the Marcellus Williams family (related to the Fairbanks) lived in the home. At one time, the large, elegant home was even a private school. It currently operates as a successful bed and breakfast.

fabulous fall As Florida’s glorious gardening season begins, add fresh enjoyment to your landscape with Mums, Milkweed, Hydrangeas, and lovely Ornamental Grasses. BY BETTY MORRELL

all colors have arrived as Mums are adorning walkways, porches, gardens, pools, patios, and hanging baskets. October is the beginning of the gardening season in Florida, and that brings lots of fun! It’s time to revamp, renew, or replant your beds with new plants that will add enjoyment to your next blooming season. Many gardeners like butterfly gardens, and I have a new butterfly plant for you. It’s called Asclepias Incarnata Cinderella, also known as Swamp Milkweed. This is a must for the butterfly garden, as it is one of the most beautiful of the milkweeds. The Cinderella has glowing, reddish pink flowers and more refined foliage. Its vanilla-scented flower heads measure a striking 2 inches across, and the showy flower heads rise amongst the long, lush leaves all summer long. Cinderella likes full sun and regular watering, weekly or more often in extreme heat. It reaches 3 to 4 feet tall and 1 to 3 feet in width, and it can be used as a border plant or in masses. This evergreen perennial attracts butterflies,

is bird-friendly, and is a fast-growing North American native. I love ornamental grasses, and a new one with outstanding fall color is the Scoparium Smoke Signal, also known as Little Bluestem Grass. This beautifully refined selection of a native bluestem is an upright, tidy grower, producing a stand of blue and green foliage, which shades to an impressive red in summer and reddish purple in the fall, lasting all winter long. Small tan seed heads appear in late summer and last throughout the fall; they are great in cut flower or dried flower arrangements. Smoke Signal will thrive in acidic or alkaline soils. It tolerates drought, heat, and humidity, and it provides excellent winter interest. This is an easy-care plant

that can be used in borders, as accent plants, in mass plantings, or in large containers with lower accent plants. This grass grows 35 to 47 inches high and spreads to about 18 to 23 inches in width. It can be grown in full sun. For the Hydrangea lover, there is a new Oak Leaf called Gatsby Girl. This beauty has white cone-shaped blooms that are set off by the leaves, and it is on my wish list. The blooms are outstanding, as they look like a vanilla ice cream cone. The flowers are large, and the plant can grow 5 to 6 feet in height. In early spring, fertilize hydrangeas with a 15-30-15 fertilizer to encourage blooms. In summer, remove old flowering stems, and in the fall, remove and destroy any fallen foliage that might have been infected by powdery mildew. Gatsby Girl blooms in part-shade (afternoon shade in our area) during June and July, and it likes moist soils. Mulch these plants to conserve moisture and buffer soil temperatures. It is customary in pétanque tournaments to give teams that get eliminated in the first rounds a second chance, called a “consolante.” Those teams then move into a parallel bracket with its own prizes. That way everyone gets to play several games, even on Sunday. Awards will be presented on Sunday at 6:30 p.m., in the big tent at the harbor front. This year, the roster includes 196 teams from 13 countries and 25 different states, including four World Champions. t the core of a newly renovated house in Amelia Island Plantation is an appreciation of nature and a commitment to responsible energy use. Every detail of Jo-Ann and Stephan Leimbergâ&#x20AC;&#x2122;s home has been carefully thought out by the couple and a team of Amelia Island professionals. The house is nestled under a canopy of oaks and palm trees at the edge of the Amelia River. Its southwest orientation offers magnificent sunsets night after night. Every aspect of the house design is focused on the ever-changing marsh and the sky and clouds that frame it. The couple first found Amelia Island while sailing the Atlantic coast, and fate continued to bring them back again and again. Leaving the Philadelphia area, they have made Amelia Island their home. Here they found an island that offered natural beauty and a deep commitment to the arts. Steve became involved with Wild Amelia and the photographic community. Jo-Ann has served on the board of the Friends of the Library and the Amelia Tree Conservancy.

Avid travelers, Jo-Ann and Steve have visited Europe, Africa, Iceland, Newfoundland, Greenland, in addition to trips to Yosemite, Yellowstone, Bryce, Zion, and numerous other of America’s national parks, where Steve indulges his love of nature photography. Many of his favorite pictures remain ones taken within five miles of his home. Committed to using and promoting renewable resources, the Leimbergs engaged Pete Wilking of A1A Solar Contracting to create a robust and efficient solar energy system that combines the grid, battery charging for overnight power, and a generator back-up system. Their two cars and golf cart were also deliberately selected with a commitment to energy-efficiency. One car, a Tesla, is fully electric, and the other is a gas-electric hybrid. When designing the house, it was critical that a generous studio space be included. Steve, an award-winning professional photographer, is well-known for his painting-like photos of birds and stunning portraits, including many island notables. Four computer screens are spread out across his generous work space. Architect John Cotner and builder Art Sanchez

are responsible for dozens of creative custom details. Steve is particularly pleased with the creation of a unique remotecontrolled system that allows him to quickly and easily employ different backgrounds for his portraits. Storage space for his oversized photos, as well as hanging space, has been incorporated into the custom studio. The monochromatic color palate throughout the house is deliberately subtle yet dramatic. All-important in the Leimberg house was the effective display of the couple’s artwork and photography – much like a gallery. Jo-Ann Leimberg credits the design team of Julie Johnson and Benjie McIntyre of Julia Hall Interiors for helping her satisfy the very specific requirements for the home. Jo-Ann wanted the wall colors “to be calming, yet able to funnel focus to where it is desired.” The entire house is painted a soft, neutral grey and off-set by contrasting whites. The exception is the dining room alcove off the living room, which is a unique color that is both grey and green. Douglass Mellor, a friend and world-class still life photographer with

extensive gallery experience, helped them display and hang their collection of fine art photography. A kitchen/family room combination stretches from the custom designed kitchen with its generous island to a sitting area located at the far end that the Leimbergs call the “sunset room.” It’s a favorite place for the couple to enjoy the marsh and sky at the end of a busy day. Tiered soffits add dramatic architectural detail to the elongated space. The dramatic 6 ft.x-8 ft. kitchen island appears to be marble, but is actually quartzite with inclusions of mica and hornblende. The kitchen is a gathering place, and it was carefully designed to be both functional and a place where friends and family can share time together. A favorite detail includes the sinks, where the faucets turn on and off with a swipe of the

hand. The simple, sleek lines of the kitchen cabinetry by Bill Mooney extend the length of the kitchen/family room area. Entering the home through glass doors etched by Amelia Island artist Suzi Sax, you look straight through to the lush landscape beyond the glass windows that stretches across the west wall. The living room is large, and the minimal furnishings add to the drama of the room. A massive black leather couch is a dramatic design statement. It is clean, elegant, a compliment to the art, and it offers all the comfort and utility that the Leimbergs desire. One side of it is a recliner with two individually mechanized seats, controlled electronically. A large patio space built by Fred and Cindy Voss stretches to the edge of the tidal marsh and includes a fire pit. Landscaping is minimal in keeping with the spirit of the home. Above all, the Leimbergs share their enthusiasm for the many island professionals they worked with in the process of making their home a reality. From faucets to flooring and appliances to appearances, Jo-Ann and Steve Leimberg envisioned exactly what they wanted, and they found the right people to make it happen.

Lechonera El Coqui With traditional dishes, Pina Coladas, and Salsa Night, Lechonera El Coqui brings the excitement of Puerto Rican cuisine to Amelia Island. BY KAREN MILLER • PHOTO BY WILLIAM RASER

arold Santana hails from the Puerto Rican town of Bayamón, where he grew up loving his mother’s cooking. After moving to Jacksonville, he became passionate about cooking traditional Puerto Rican food, building his own fire pit to share the flavors of home with friends and neighbors. He and his wife, Laurie, decided to open up a Puerto Rican restaurant in Fernandina Beach, and when they found the property on North 2nd Street, Lechonera El Coqui was born. My friend Sherry and I visited this quaint restaurant and bar for lunch one day, and we were greeted by Harold and Laurie, along with our server, Kelvin, who suggested some drinks to start. I ordered a Pina Colada, the national drink of Puerto Rico, featuring coconut cream, pineapple juice, and rum. Sherry tried two different juices over ice, tamarind and passion fruit, a refreshing and not-too-sweet treat, with the tamarind offering a spicy after-taste. Harold and Laurie wanted us to sample a selection of their appetizers, bringing a platter of customer favorites: Surullos, Alcapurrias, and a selection of Empanadas. The apps were served with a seasoned ketchup/mayo blend and complemented by hot sauce that they make in the restaurant. Everything was hot and crispy, and very bountiful! We particularly loved the Alcapurrias, a beef plantain turnover, and the Surullos, rolls of corn meal seasoned the Puerto Rican way, some with cheese, some plain. The Empanadas were full of tender beef and chicken, and one was even filled with pizza toppings!

For our next course, the Grilled Romaine Salad was heaped high with fresh, local shrimp, cooked with Puerto Rican seasoning, which melted in our mouths. The salad featured bleu cheese, walnuts, and homemade balsamic glaze. The House Salad included fresh mixed greens, tomatoes, strawberries, black olives, bacon, and balsamic dressing, a nice mix of sweet and savory. Harold then brought us the restaurant’s pièce de résistance, Chuletas Kan Kan, an enormous 3 1/2 pound deep-fried pork chop, served with its rib and fried pork skin. It is served up-end over Mofongo, mashed green plantains with garlic. Alongside the chop is a cup of deliciously seasoned chicken broth in which to dip the pork and Mofongo. This dish feels like many dishes rolled into one, with the chop, rib, ham, and pork skin, and the Mofongo reminded me of a giant dumpling. True comfort food! We finished our meal with Flan Trio, three sweet treat flavors: vanilla, cheese, and their newest addition, Nutella. We loved that the flans were sturdy and dense, similar to cheesecake. And they were the perfect ending to our Puerto Rican meal. Harold has built his own fire pit and he roasts his own pork, with the help of Chef Douglas. Lecheron El Coqui is a true family business, with everyone helping to create traditional Puerto Rican dishes like mom used to make. The restaurant can serve 150 guests, including their outdoor area complete with fireplace. They host Salsa Night every Friday, and they are open for lunch and dinner. hen the Amelia Island Jazz Festival comes to town every October, it reminds me of my travels to New Orleans and the spicy, flavorful food that Louisiana is famous for. Cajun and Creole, with fresh meats and seafood; I could eat my way across the state in a heartbeat! But what is the difference between these two mouthwatering cuisines? Both are very similar, with the city of New Orleans known for its Creole recipes, and the outlying areas—the countryside and Bayou—known for Cajun. Creole is considered a more refined style of food, with New Orleans getting much of its French influences

from European styles of cooking. Think rich sauces and sophisticated dining. Cajun, on the other hand, is what could be called rustic cuisine. Locally available ingredients predominate, and preparation is simple and spicy. I recently hosted a New Orleans dinner that featured some of these Louisiana seasonings, along with our own local shrimp, served with Leek and Artichoke Rice, Creole Salad, and Bananas Fosters Bread Pudding, a take on the famous dish that originated at Brennan’s in New Orleans in 1951. All of these recipes are easy to make, so what are you waiting for? Laissez les bon temps rouler!

Cajun Seasoning 1 Tablespoon each of the following: Black pepper, sweet chili pepper flakes, cayenne pepper flakes, celery seed, oregano, cumin, basil, ground bay leaves, marjoram, savory, thyme, coriander, dry mustard, rosemary, dried onion flakes, dried garlic flakes, and paprika. Place all the spices in a jar and shake to combine. BANANAS FOSTER BREAD PUDDING Ingredients 4 C cubed white bread (remove crust) ¼ C melted butter 3 beaten eggs 2 C half and half 2 Tsp vanilla 1 Tsp cinnamon ½ Tsp nutmeg ½ Tsp salt ½ C raisins 1 C sliced bananas, plus extra to top Whipped cream Rum sauce (recipe below) Preparation Mix all ingredients (except whipped cream and rum sauce) in a mixer with paddle attachment until blended. Pour into buttered, deep dish pie plate. Bake at 350 degrees until pudding is set and top is browned. Let cool. In the meantime, make sauce by combining 1 stick melted butter in a sauce pan with 1/3 cup light brown sugar, 1/3 cup pecans, and 2 Tablespoons rum, and heat until sugar is dissolved. Serve pudding cut into wedges topped with sliced bananas, rum sauce, and whipped cream.
