Everyone knows that at a certain age in life—earlier for some perhaps, later for others —we all begin sprinkling our conversation with talk about the state of our health. Usually, we tend not to see this change in ourselves, but we notice it right away in our friends. After we mention to one friend how another friend has started to bring up his various ailments a lot, our friend reminds us how often we mention our own aching knees, and so on. Suddenly you realize that the results of your colonoscopy, your new dental implant, and the question of how many years you can golf the way you want before getting a knee replacement are invading your social interactions more and more. And almost overnight our everyday diet, which has kept us properly fueled for years, begins making it tougher to maintain a healthy weight, and an always busy schedule – filled with work and family, kids’ activities and other assorted duties – can make regular exercise a difficult proposition. With these challenges, it’s easy to find ourselves reflecting on the state of our health. And it’s not just the current state of our health we have to worry about, because good health in our golden years begins with healthy habits now. These habits provide a vital foundation for good health later in life. Things taken for granted in our youth, like a good night’s sleep, plenty of energy, and a strong body require a lot more of our attention as the years go by. That’s why each year, we use the October Amelia Islander Magazine for a “Health & Wellness” special issue to highlight important issues in maintaining good health. On Amelia Island and in Nassau County, we are blessed with outstanding medical professionals and essential healthcare services close to home. How to reduce your risk of breast cancer BY JESSICA SULLIVAN, DO
T
hink about eight of your closest female friends and relatives—you probably chat with them almost daily, spend time with them for coffee, and check in with them at holidays, birthdays, or anniversaries. In all likelihood, one of you will get breast cancer. About 12 percent of women in the United States develop breast cancer at some point in their lifetime—averaging out to around 250,000 new breast cancer cases this past year. Those numbers are staggering, but you may be able to reduce your personal risk and detect your cancer early. When faced with these odds, what can you do to protect yourself and your loved ones? There are several contributing factors that increase your risk of breast cancer. They are: increasing age, late menopause, family history of breast cancer, and genetic mutations. Don’t worry, neither your morning coffee nor your favorite deodorant will give you breast cancer. However, our daily actions impact whether or not we become one of the 12 percent. To

reduce risk, you can reduce alcohol intake, avoid smoking, and consume a healthy diet. Staying fit and active improves overall quality of life, but can also help women decrease their breast cancer risk. The most important thing to remember is to get screened. Mammography remains the mainstay of screening for breast cancer, with research finding it decreases breast cancer mortality. In fact, not only does it reduce the odds of dying, but it also leads to early diagnosis and treatment. MRIs, performed in combination with mammography, help screen high-risk patients. Estimates say mammograms detect about 73 percent of breast cancers in woman in their early 40s, and 85 percent of women in their early 60s. This difference is usually due to the increased breast density in younger women.
For patients with normal risk, I recommend a clinical breast exam (usually at your annual OB/GYN visit) every one to three years for women between the ages of 25 and 40. After 40, you should have a clinical breast exam and a mammogram annually. Women should also perform self-exams at home so that they can recognize unwanted changes. If you notice a change in size or shape of the breast, redness or a rash on the skin, discharge from one or both nipples, swelling in your armpit or around the collarbone, tell your doctor. Gum Disease Isnâ&#x20AC;&#x2122;t Just a Disease of the Mouth BY DR. JOSH BIETENHOLZ, DMD
P
eriodontal (gum) disease has been traditionally thought of as a disease that affects the mouth. It is a serious infection that, when left untreated, can cause tooth loss. The disease is initiated by inflammation of the gums (gingivitis) due to the presence of unfavorable bacteria and the toxins that they produce. Once chronic inflammation is present, deep pocketing and bone loss may occur in the gums around the teeth. This disease process is typically painless, and it may go unnoticed. When symptoms eventually appear, it is sometimes too late to save the teeth. In addition to poor oral hygiene, there are many other contributing factors that lead to periodontal disease. Some of these include smoking, genetic predisposition, hormone changes, stress, diabetes, poor nutrition, and other diseases that interfere with the immune system. These conditions can dramatically increase the speed in which gum disease destroys the bone that supports your teeth. Today, doctors are discovering that gum disease is proving to represent much more of a threat to millions of people than originally thought. Over the past 20 years, researchers have shown many correlations between periodontal disease and various systemic diseases. Studies show that gum disease may be a contributing factor to heart disease, stroke, increased chance of premature and low birth weight babies, and pose a serious threat to patients already compromised by diabetes or respiratory disease. 12 AMELIA ISLANDER MAGAZINE â&#x20AC;˘ OCTOBER 2017

For example, researchers have found that people with periodontal disease are almost twice as likely to suffer from coronary artery disease as those without. Recent research demonstrates that inflammation (inflammatory mediators produced by the body in response to the bacteria) may be the link between periodontal disease and other chronic conditions. According to the Centers for Disease Control and Prevention, nearly 50 percent of adults age 30 and over have some form of periodontal disease. By age 65, that number climbs to over 70 percent of the population. Despite the prevalence of this disease, few Americans seek treatment. With recent research showing the links between periodontal disease and other systemic diseases, maintaining healthy teeth and gums and having regular dental check-ups has become more important than ever. Reduce Your Risk of Breast Cancer with a Healthy Diet BY: KAREN AMBROSIO, BSND, MSCN

reast cancer is the most common cancer for American women, impacting about 1 in 8 women. While some breast cancers are genetic, experts believe 1 in 3 cases could be prevented with diet, exercise, and weight management. Women can reduce their risk of breast cancer significantly by not drinking alcohol, staying physically active, maintaining a healthy weight, and eating a healthy diet. Making a few small but important lifestyle changes, like eating less red meat and adding more fruits and vegetables to your diet, helps reduce your risk. Fruits, vegetables, and whole grains are rich sources of dietary antioxidants, which is why most of the dietary guidelines for breast cancer prevention suggest a plant-based diet like the Mediterranean diet. Recent studies have shown a relationship between high intake of fruits and non-starchy vegetables and decreased risk of breast cancer. In particular, look for fruits and vegetables that are high in fiber, calcium, and beta-carotenes because of their cancer-preventing vitamins and phytonutrients. Beta-carotene contains carotenoids, the natural orangered pigment found in foods like carrots, sweet potatoes, and red bell peppers. Carotenoids have antioxidant properties that are converted into vitamin A in the body, and have been linked to reduced risk of certain breast cancers. Women whose diet include fruits and vegetables containing the full range of carotenoids have shown reduced recurrence of breast cancer. Women should consider plant-based diets that are rich in fruit, vegetables, legumes and whole grains and are low in red and processed meats, carbohydrates (especially simple sugars), alcohol, and sweetened beverages. Plant-based foods should
make up two thirds of your plate, which is about five servings of fruit and vegetables per day. These servings are easy to get from a salad, smoothie, or vegetable stir-fry. In addition to making healthy changes to your diet, it is important to include physical activity in your daily routine to reduce your risk of breast cancer. You should try to participate in moderate physical activity for 3 to 5 hours per week, such as walking, to help you stay energized and maintain a healthy weight. An important way we care for our clients is by helping them manage their medications. Taking medications correctly helps prevent hospitalizations and helps you manage your illness. If your medication routine is too complicated, a registered nurse can help you prevent medication errors with some simple steps. First, make a list of your medications and keep it up to date. Check your list with your doctor or pharmacist each time you visit them. For safety’s sake, it is also best to use just one pharmacy. This allows the pharmacist check for potentially harmful interactions between medications when he fills a new prescription. Only take your own medication. Do not take any medicine prescribed to someone else. Follow the directions on the label carefully. Dry Eye is a Common Condition in Older Adults BY DR. GERALD KOSS

ry eye is a condition in which a person doesn’t have enough quality tears to lubricate and nourish the eye. Tears are necessary for maintaining the health of the front surface of the eye and for providing clear vision. Dry eye is a common and often chronic problem, particularly in older adults. With each blink of the eyelids, tears spread across the front surface of the eye, known as the cornea. Tears provide lubrication, reduce the risk of eye infection, wash away foreign matter in the eye, and keep the surface of the eyes smooth and clear. Dry eyes can occur when tear production and drainage is not in balance.
People with dry eyes either do not produce enough tears or their tears are of a poor quality: Tear production tends to diminish with age, with various medical conditions, or as a side effect of certain medicines. Environmental conditions can also decrease tear volume due to increased tear evaporation. When the normal amount of tear production decreases or tears evaporate too quickly from the eyes, symptoms of dry eye can develop. Tears are made up of three layers: oil, water and mucus. Each component protects and nourishes the front surface of the eye. A smooth oil layer helps prevent evaporation of the

water layer, while the mucin layer spreads the tears evenly over the surface of the eye. If the tears evaporate too quickly or do not spread evenly over the cornea due to deficiencies with any of the three tear layers, dry eye symptoms can develop. The most common form of dry eyes occurs when the water layer of tears is inadequate. This condition, called keratoconjunctivitis sicca (KCS), is also referred to as dry eye syndrome. Some causes of dry eye disease can be genetics, various medical conditions, age, gender, medications, or environmental conditions, which may consist of a dry climate or even staring at a computer screen. People with dry eyes may experience irritated, gritty, scratchy, or burning eyes; a feeling of something in their eyes; excess watering; and blurred vision. Advanced dry eyes may damage the front surface of the eye and impair vision. Dry eyes can be diagnosed through a comprehensive eye examination. Treatments for dry eyes aim to restore or maintain the normal amount of tears in the eye to minimize dryness and related discomfort and to maintain eye health. n our busy world today, people are developing more and more health problems. They push through each day, wishing they had more energy. In our country, obesity is growing at a rapid rate, along with adult-onset diabetes. We don’t take time to eat healthy, sleep sufficiently, or exercise. The stress and pace of life has increased until we are all generally at a breaking point. We are out of balance! We live with little regard for our body’s needs, and we no longer are aware of our body’s warning signs. How do we bring balance to our lives? Take a long, honest look at your lifestyle, then prioritize, using sound common sense. Use the 24 hours each day wisely—8 hours for sleep, 8 hours for work, 8 hours for fun, exercise, and enjoyment of life. When you for sleep, try not to think about work or personal issues. Your mind must be calm in order to get rejuvenating, healing sleep. When you are at work, leave your personal problems at home. You’ll be much more effective at work and feel satisfied with job. If you need to work an extra hour or two, take the time from your leisure time, not your sleep. Sleep is the most important part of your day. When you leave work, leave your work there. Don’t bring your job home. Shift your focus and give your mind a chance to
rest. Take time to eat healthy, exercise, visit family and friends, and enjoy activities that interest you, creating proper balance in your life. Eat only enough food to support your daily activities, so you burn calories without gaining excess weight. If you’re not physically active after dinner, eat a small meal. A desk worker needs less food than a lawn maintenance worker. Eat a wide variety of foods to ensure you receive all the natural vitamins and minerals that your body needs.

If we listen to our body’s first warning signs, we will have better health, more energy, and a more tranquil lifestyle. Improve Communication When Talking to Someone with Hearing Loss BY PATTI SHELLY-LOHMAN, AU.D.
H
earing aids alone may not let a person with hearing loss communicate successfully in all listening situations. As a family member or friend of a person with hearing loss, you can help improve communication by following a few simple suggestions. Remember, communication involves at least two individuals: a talker who sends the message and a listener who receives it. To start, gain the listener’s attention before you begin talking, for example, by saying his or her name. If the person with hearing loss hears better from one ear, move to that side of the person. If necessary, touch the listener’s hand, arm, or shoulder lightly. This simple gesture will prepare the listener to listen and allow him or her to hear the first part of the conversation. Try to maintain good eye contact. Face the person with hearing loss. Your facial expressions and body language add vital information to the communication. For example, you can “see” a person’s anger, frustration, and excitement by watching the expressions on his or her face. Another important strategy is to keep your hands away from your face when you are talking. By doing so, you will produce clearer speech and allow the listener to make use of
visual cues. Also, try to speak naturally. Speak distinctly, but without exaggeration. You do not need to shout, as shouting actually distorts the words. Speak at a normal rate, not to fast or not too slow. Use pauses to give the person time to process speech. If the listener has difficulty understanding something you said, find a different way of saying it. Rephrase and repeat. Try to reduce background noises when you are having a conversation. Turn off the radio or television, or move to a quiet space away from the noise source. When going to a restaurant or making dinner reservations, ask for a table away from the kitchen, server stations, or large parties. When you are in a restaurant or other social gathering, sit where there is good lighting so that your face can be more easily seen. Also, avoid strong lighting coming from behind you, such as through a window. If you or a loved one thinks they may have hearing loss, see an audiologist for an evaluation. The Amelia Island Book Festival presents their 3rd annual Murder Mystery Dinner on Friday, October 20 at The Golf Club of Amelia in support of the festival’s Authors in Schools program. AMELIA TREE CONSERVANCY LAUNCHES THE ATC AMELIA ISLAND WALK On October 7, the Amelia Tree Conservancy presents the ATC Amelia Island Walk, a Vida Series walk that begins at Amelia Island State Park at the southernmost end of the Amelia Island, and ends at the Fernandina Beach Harbor Marina. This is an opportunity to walk the island for exercise, enjoyment, and appreciation of the beauty of Amelia Island. The walk is approximately 15 miles, with two water refills and rest stops along the way. At every mile or so, there will be an informational pause to notice the beauty and nature of the trees. The walk includes Amelia Island Trail, the beach, Egan’s Creek Greenway, and the historic village. The full-island walk will be held from 8 a.m. to 3 p.m. For a shorter walk, participants may choose 5 miles or 9 miles. ohn Mead had just finished college when he began offering framing services to the local community in 1972. andy Bowman grew up in a “food desert,” a community without stores carrying fresh and nutritious foods. As a result, he began to have health problems as an adult, developing gall bladder disease at a young age. “It was actually my chronic illness that inspired me to open BuyGO, a place where people living in nearby neighborhoods could shop for quality groceries at a reasonable price,” says Bowman. He and his partner, Michael Smith, celebrated the grand opening of BuyGO on September 2 in the former “Fred’s” building with a welcoming crowd of downtown denizens. “BuyGO’s inventory is driven by the needs of our customers,” says Michael. “We are always open to suggestions about what we should carry and what our customers need. And we carry groceries for all budgets, including gluten-free, sugarfree, vegetarian, and vegan items.” BuyGO also features an inhouse coffee shop, a selection of fine wines, and coming soon, a full line of fresh, local produce. BuyGO is a community-driven business, which donates food to the Barnabas Center’s Meals for Kids program and their food pantry. Randy and Michael are also in the process of opening three other BuyGO stores in other towns across Florida in areas with long-standing food deserts. “We believe eating healthy is a right, not a privilege,” says Randy. “Food should be affordable, fresh, and accessible.” Open 7 days a week, BuyGO is located at 22 South 8th Street. shlie Kennedy was living in New York City with a successful career in finance until she realized she didn’t love her job. “I was really good at what I did,” says Ashlie. “But I wasn’t exactly happy.” That’s when she decided to use her financial skills to open a business in downtown Fernandina Beach called Hudson & Perry, named for two cross streets in her Greenwich Village neighborhood in New York. Ashlie is originally from Amelia Island, and she yearned to come back to the place she thought of as home. “I wanted to be part of the Historic District, to start a business that would complement the other thriving businesses here in town,” she says. “I wanted a store that would cater to locals and visitors alike, featuring vintage, retro, and eclectic gifts with a certain Southern charm, all at reasonable prices, featuring unique treasures for everyone.” Hudson & Perry opened its doors in July with a diverse line of home goods including items for the kitchen, children’s gifts and puzzles, jewelry, books, and personal care products. “We also carry Rifle Paper products from Winter Park, a company inspired by botanicals and the beauty of Florida,” says Ashlie. “And we carry products from ‘giveback’ companies, who donate a portion of their profits to do good in the world.” Hudson & Perry is located at 319 Centre Street and is open 7 days a week. Despite extensive damage and power outages, Hurricane Irma brings out the best in Amelia Islanders, as the community rallies together to help those in need. BY JULIE SIMMONS
W
hat’s your favorite Hurricane Irma story? We all have one, but mine is the Amelia Island story. A tale of friends, neighbors, public servants, and hosts of unsung heroes who rallied together for strength and community during one very tough week in September. As Dr. Kathy Burns, Nassau County’s School Board Superintendent noted: “The week of September 4 began with conversation around the coffee pot, but casual conversations soon turned into disaster preparedness plans and actions.” For the Nassau County School District, decisions reach well beyond the cancellation of classes, as many schools in our county also serve as shelters. “Our schools sheltered over 500 people of all ages and abilities,” says Dr. Burns. “These folks were given a safe place to reside, three meals and snacks daily, movies, games, news and weather updates, as well as the support and encouragement of school district personnel, who

worked tirelessly (often 20-plus hours without a break) to meet the needs of evacuees. “A hurricane shelter should be viewed as a life boat, not a cruise ship. However, I believe the evacuees in our shelters would disagree. The services provided were first-class. The dedicated staff running the shelters have a day job—to educate your children—but like true educators, when called upon, they do whatever it takes.” Over at the Nassau County Emergency Operations Center, lots of others were hard at work, too. “Countless staff, first responders, and volunteers ensure the safety and welfare of the community, while also being away from their own families,” explains County Commissioner Justin Taylor, who believes this group deserves special recognition for their dedication. continued on next page

Speaking of dedication, it is exemplified by the Nassau County Fire Department. “Before the storm, we were pleased to transport special needs citizens to shelters,” shares Jamie Deonas, who works both at the NCFD and as a school board member. “During a storm, when bridge closure is required, the fire trucks leave the island and do not respond to emergencies until the storm is over. “As soon as allowed back on the island – and we were the first truck—our task is not just to respond to backed up emergency queues, but also to get one lane open on every major roadway so emergency crews and citizens can travel.” And yes; that absolutely means your local EMT may have been taking a chainsaw to fallen oaks as soon as he got back to the island! But it doesn’t stop with the professionals Some of the brightest lights during this difficult time shone when neighbor helped neighbor clear a tree; when citizens brought refreshments to first responders and power line servicemen; when a friend filled sandbags for a friend whose home flooded last year; when the power went out at Fernandina Beach Diner and they setup a makeshift buffet “on the house;” when Harris Teeter offered free water and ice for days post-Irma; when The Journey Church opened its doors as a shelter so schools could reopen. And the list goes on and on. First Baptist Church prepared a free, hot meal open to the community. Club 14 Fitness, the YMCA, and Fernandina Beach Recreation Center opened their doors for hot showers. Schwend Insurance and local pastors organized a drive yielding 30,000 pounds of groceries. When a team of unsolicited “workers” showed up at an elderly citizen’s home—unexpected—and cleared all the debris from her lawn, even before they cleaned up their own yards! When a mom loaded up her kids and went to serve another. “This was so important to teach our kids that some people lost much, and we should show empathy and citizenship,” says local mom Holly Lavin. Perhaps the goodness of Amelia Islanders was best summarized in a front yard off Highland Drive, where parents and students from Fernandina Beach Christian Academy, St. Michael’s Catholic School, a home school group, and a host of public schools worked side-by-side despite differences in age, size, strength, and backgrounds to help Amelia Island get back on its feet. We are just brushing the surface of all the good will that was demonstrated in the aftermath of Hurricane Irma, and we’re sorry we couldn’t share every beautiful story we heard. Thank you to all for each act of kindness you performed for your community. On Amelia Island, we don’t just weather storms; we confirm who we are because of them!

W
hen you’re invited to feed and “pet” a rhinoceros, you hold your breath, muster all your courage, and say, “Yes!” Let me repeat that: I PET A RHINO! And it was not on just any day or at just any place – it was on World Rhino Day at White Oak Plantation. White Oak Plantation is home to several species of endangered exotic animals, whose caretakers are committed to saving threatened wildlife through breeding and research on White Oak’s serene 13,000 acres, located just north of Amelia Island on the St. Marys River. The White Oak team is highly respected globally, collaborating with international conservation organizations to identify endangered species and specific animals to reside at the facility. Subsequently, animals might move to other conservation centers to further the growth of a particular species. At one time part of the Zephaniah Kingsley Plantation, White Oak was lately owned by the Gilman Family, who acquired the property in the late 1930s. In 1982, Howard Gilman came to be sole owner and invested millions to transform the property into a world-class conservation center. When Mr. Gilman suddenly passed away in 1998, his foundation took ownership until 2013, when Mark and Kimbra Walter were thrilled to purchase White Oak and continue its commitment to helping threatened wildlife. continued on next page

Today, White Oak is open to the public for tours offered twice weekly, for special events and educational partnerships with local schools, and most recently, for horseback tours! “You can see the property through an entirely different lens on horseback,” explains stable manager Billy Davis, who with trainer Shannon Basile created the tour. “In the saddle, you feel the air and hear the nature around you, including the sounds of the animals, which a trolley tour might startle. Additionally, this excursion participates in conservation by touring using a natural resource— a horse!” Photographer Sherry Carter and I adored every second of this unforgettable adventure. Our exceptionally welltrained horses followed right behind Billy’s at a casual pace, allowing us to soak in every detail of the surroundings. I probably asked a thousand questions during our leisurely three hours in the saddle, and Billy’s 20-plus years of experience on the property allowed him to answer in detail every single one of them. The trails are manicured, and it is truly extraordinary to approach a Somali Wild Ass and hear him “talk” to you, or to encounter a Cheetah who shares an enclosure with an Anatolian Shepherd Dog for companionship! When we returned to the stables, which were remarkably clean and wellappointed, we sipped water from ecofriendly cups, underlining White Oak’s

commitment to preservation at every level. After a short break, we loaded onto an open-air bus to continue our tour. The first stop was Gillman Hall, where a stuffed White Polar Bear welcomed us before we enjoyed a delicious basket lunch and a chat with Stephanie Rutan, White Oak’s Education Specialist. Next, we explored the antique-filled facility, which includes a conference room, fitness center, bowling alley, and a remarkable domedceiling banquet room accentuated with complete fossil displays of a Saber-Tooth Tiger and a Tyrannosaurus Rex! Finally, we concluded our day with some incredible animal encounters. We fed giraffes all the leave-filled branches they could eat, and Shannon photographed our activities, as she does on all safaris, providing us later with an album of memories of the experience. Next, we spent time with some of White Oak’s Okapi and learned all about this “forest-giraffe,” before we ended our day by feeding and scratching the black, Indian, and white Rhinos. Incredible! White Oak Plantation is an experience that you are unlikely to find anywhere else in the world. If you’re up for an adventure of your own, I encourage you to grab your hat and boots and saddle-up, or enjoy a tour from their comfortable trolley. Either way, you won’t soon forget it. utumn is the time for ghosts, goblins, pumpkins, and mums, and I love this time of year as I dream about the beautiful fall foliage in New England and upstate New York. Although we live in Florida, we can still add beauty to our gardens and pots during the fall season. In last month’s issue of the Amelia Islander Magazine, I promised a new plant that I am sold on and am sure you will enjoy. You’ll be thrilled with the fanciful colors and textures that Cinnamon Curls can bring to your garden. This native Coral Bells, also known as Heuchera, features curvy orange, red, and purple foliage that is so vivid you won’t be able to take your eyes off it. Use them as a fun addition to edging around your garden or in containers. Mix them with companion plants, or let them stand beautifully on their own. This plant will grow very vigorously and its unique colors will be strongest when grown in partial afternoon shade. It blooms with white flowers in June and July, will grow 8 to 12 inches in height, and spreads 16 to 20 inches in width.
TIP OF T HE M O N T H Once a bulb is exhausted, you can remove it from the pot and plant it in the garden. Water it thoroughly once new growth starts, then afterwards only when rain is infrequent.
Another new plant is called Blackberry Ice, Heuchera villosa, a hybrid, making it more tolerant to heat and humidity. The striking colors of the leaves are purple with a silver overlay. White blossoms appear on this very pretty 12-inch plant, and it spreads to 20 inches. There’s a new South African Amaryllis called Double Inferno Red. It is a bold, fiery red with thick stems, full flowers, and large dark red buds. This new Amaryllis is an exciting new development in the horticultural world. This bulb outperforms in terms of the number of stalks per bulb, number of blooms per stalk, and the size of the blooms. The flowers, with ruffling at the edges of the petals, open to 7 to 8 inches. Wow! To force a bulb for Christmas or the holidays, use a 6 to 7 inch pot. Mix

potting soil in a plastic tub with warm water, then stir with your hands until the mix is moist, not soggy. Fill the pot one or two inches below the rim with the mix, then set the bulb on top of the mix with the top one-third of the bulb exposed and above the rim of the pot. Fill around the bulb with additional mix until the bulb is set firmly and the potting mix is a half-inch below the rim. Keeping the temperature between 70 and 80 degrees will hasten sprouting of the bulb, usually in six to eight weeks, so start now for the holidays. Water only when the top one inch is dry. As soon as the bulb sprouts, provide ample sunshine. Rotate the pot regularly, as the stems may need some support, and remove flowers as they fade. hen Bob and Rosann Touchette decided to retire, they were ready to head south! “We drove along the coast of the Atlantic from Hilton Head south, and we visited every town,” Bob, most recently from St. Paul, Minnesota, reminisces. “When we were in Jacksonville, someone suggested we stop by Amelia Island. When we arrived, we knew right then that this was the perfect place!” The Touchettes loved the historic downtown, which sets Amelia Island apart from a lot of other coastal towns, and they were impressed by the construction of The Ritz-Carlton, Amelia Island, which was nearing completion at the time. The

I
n my life, my mother has always been a guiding light and an inspiration, and to celebrate her birthday, I invited her out to experience one of the brightest stars of the Amelia Island culinary scene, BarZin Bistro and Wine Bar. We walked in without a reservation early on a Thursday and were seated at a lovely table on the porch. I strongly recommend reservations as our table was the only one available, and the place was full to capacity before meal’s end. We decided to start the evening with the Mayport Shrimp. Gently poached and served with remoulade and cocktail sauces, the shrimp are presented in a mason jar, accompanied by avocado and heart of palm. It was wonderful, and I could
have easily made this my entire meal. However, I also had my eye on the Tuna Tartare. For the Tuna Tartare at Bar Zin, fresh tuna is diced small and served with sesame crackers and some of Chef Nori Sakata’s “Wonder Sauce.” The dish was fresh and full of rich flavor. To compliment the starters, we selected a pair of Sauvignon Blancs:
the Nobilo from New Zealand, which was fresh and fruity with a strong grapefruit note, and the Emmolo from Sonoma, which was a little more refined, with a bit of minerality and hints of peach. I have known and worked with Chef Nori for more than a decade, and I was eager to see what the rest of the evening held. We would not be disappointed. As our server explained the evening’s scallop preparation, I could not have been happier. I am a sucker for fresh scallops, as well as risotto, but mom beat me to it. I quickly decided on the Steak Frites and changed gears on the wine, ordering a punchy but bright Joel Gott Zinfandel to stand up to the truffle-scented parmesan fries and red wine butter sauce coming with the steak. Mom and I caught up over fresh yeast rolls and enjoyed the comfortable atmosphere of the porch, and soon the entrees arrived. The sharp acidity and full red fruit of the zinfandel enlivened the beef and kept the crispy fries from stealing the show. When the server approached, I paused long enough to nod that, yes indeed, it was delicious and to save a couple of bites for mom. To my delight, she wasn’t able to finish her meal, so I helped out by polishing off the last scallop and savoring the creamy mushroom risotto. The crispy sear and saline sweetness of the scallop paired well, with the risotto providing texture and depth to the dish. After our entrees, we went back and forth over the dessert menu before deciding to finish the evening by sharing a divine Peaches & Cream Bread Pudding and a 20-year old Tawny Port. The warm fruit of the port, the vibrant peach, and the rich custard married perfectly. Dinner ended with the last of the daylight filtering through the oaks, and so began another trip around the sun. island entertaining CIDER-BRAISED PORK LOIN Ingredients 3 lbs. boneless pork loin 2 cups chopped onions 5 garlic cloves, peeled and chopped 2 tbsp. olive oil 2 tbsp. dried thyme 2 tsp. salt 1 tsp. pepper 1 cup hard cider 1 tbsp. cornstarch 2 tbsp. cold water Preparation Using a mortar and pestle, mash the salt, pepper, and thyme together with a small drizzle of olive oil. Rub the mixture into the pork loin, wrap it, and then chill it overnight in the refrigerator. The following day, scrape off the excess herb and salt mixture. In a large braising pan, sauté the onions and garlic in the remainder of the oil, remove, and set aside. Sear the pork loin on all sides. Remove it, then add cider to pan, scraping up all the brown bits. Add onions, garlic, and pork back to the pan, put on the lid and braise in the oven at 325 degrees for about 1 hour.

Mix cornstarch and cold water until smooth. Remove pork from pan, add cornstarch mixture to pan and gently stir over low heat until sauce thickens. Taste and adjust seasoning. Slice pork and serve sauce poured over all. Serve with roasted potatoes and homemade apple sauce.

ard cider has been a beloved American libation since colonial times, especially during the fall when apples are in season and autumn brings a wistful end to summer’s splendor. Cider played an important part in American history, keeping early colonists merry, and even helping George Washington get elected when he served it to his constituents. Today, artisan and craft cider mills are popping up all over the country, and a hard cider tasting party is a fun way for your guests to sample varieties of this favorite liquid refreshment. When shopping for cider, look for brands with a higher alcohol content as
they are much more effervescent and not too sweet. Some favorites include Crispin, Strongbow, Sam Smith’s Organic, and Shacksbury. Hard cider is also great to cook with, and for a hard cider party, consider pairing different brands of cider with food prepared using cider, in the same way you would serve wine. The following recipes include a Cider-Braised Pork Loin, which could be served with roasted potatoes and apple sauce, and a Cheddar Hard Cider Fondue, featuring lots of items for dipping like sausages, breads, and fruits. Whatever your pleasure, hard cider is a welcome addition to your next social gathering!

CHEDDAR HARD CIDER FONDUE Ingredients 12 oz. bottle hard cider 3/4 cup vegetable or chicken broth 2 tbsp. Worcestershire sauce 1 clove garlic, finely chopped 1/2 pound Gruyere, grated 1/2 pound Vermont extra sharp cheddar 3 tbsp. cornstarch 1/8 tsp. cayenne pepper Salt to taste Items for dipping: cooked sausages, French bread cubes, apples, pears, radishes, cooked baby potatoes, soft pretzels, and gerkins. Preparation Mix first 4 ingredients in a saucepan and simmer for 5 minutes. In a bowl, place cheeses and sprinkle cornstarch over all. Mix briefly. Slowly add cheese mixture to sauce pan, stirring with a wooden spoon until cheese is smooth. Add cayenne and salt to taste. Serve in a fondue pot with dippers.
