Good health is an important part of our general sense of well-being and our enjoyment of life, yet how we approach our health changes dramatically over time. When we are younger, we think about maximizing our health: how fit am I; how fit can I be; what diet will maximize my energy? As we get older, we find ourselves reflecting on our health a little more often. Little aches and pains, problems with our teeth or gums, or pain in our joints begin to enter our conversations. We begin to ask ourselves: how can I maintain my energy? What can I take to protect myself from illness and disease? How can I preserve my strength and mobility? Soon we realize that a big part of maintaining good health as we get older involves maintaining good health in the present. Lasting good health depends on day-to-day attention, not on simply treating problems. Healthy choices mean healthy living. With conscious effort, we can considerably lessen our risk of being overwhelmed with health issues as we get older. Our health also depends on good treatment and medical advice we receive on the local level. Having a vibrant medical community is crucial, and we are very fortunate in Nassau County to have a growing pool of excellent medical professionals close to home, led by the outstanding Baptist Medical Center Nassau, and in Jacksonville. An increasing number of therapies, treatments, and surgeries are being offered here on Amelia Island, providing more options in treatment and, of course, greater convenience. Each year, we use the October Amelia Islander Magazine for a “Health & Wellness” special issue to highlight important issues in maintaining good health. In this issue, we have asked some of Amelia Island’s local professionals to share their expertise with us. From answering important questions about heart health and understanding what an abnormal mammogram might really mean to taking a holistic approach to living well, we hope these articles will keep you informed on medical topics that are important to all of us. H

eart disease is still the leading cause of death for both men and women in the U.S., where 1 in 4 people die from heart-related conditions. With so much conflicting health information available, it’s hard to know what to believe when it comes to your heart. Here are some common questions I get from patients. What type of diet is healthiest? Nutrition is the single most important factor in reducing your heart disease risk. Stick to foods that are low in cholesterol and saturated fat, and high in 11 AMELIA ISLANDER MAGAZINE •

fiber. I am a big proponent of the Mediterranean Diet, which is full of “superfoods” like berries, broccoli, and almonds, all of which are high in heart-healthy nutrients. Most of your food should come from fruits, vegetables, and complex carbohydrates like quinoa (pronounced “keen-wa”), brown rice, and whole oats. For protein, fish and seafood are best, followed by poultry, eggs, and cheese. Maintaining this type of diet decreases your cholesterol and blood pressure while helping you drop extra weight – all important factors for a healthy heart. Is coconut oil good for your heart? Coconut oil is about 80 percent saturated fat, which increases your cholesterol, so I don’t’ recommend it. Instead, eat mono-unsaturated fats like avocados, nuts, seeds, and olive oil. They all have cardio-protective properties, meaning they protect your heart from disease. Is it true that red wine is good for your heart? Too much wine—more than one glass per day—can weaken your heart. For those who drink, moderate amounts of red wine can be beneficial. It can increase your HDL, or “good” cholesterol, and contains antioxidants, which can reduce inflammation in your body. For non-drinkers, keep in mind that you can get the same benefits from red grapes. Is “inflammation” related to heart disease? Inflammation is at the root of almost every chronic disease, including heart disease. It’s your body’s reaction to an infection or injury, and can also be caused by stress. Your diet can help reduce inflammation. The biggest culprits are simple carbs and sugar, so sticking to the Mediterranean Diet is a good way to reduce inflammation. Avoid food that comes in a box or bag, which contain high amounts of sodium and artificial ingredients, which can lead to inflammation. “Shop the perimeter” when you’re at the grocery store, where you’ll find fresh, rather than processed foods. Wellness is more than merely working out and eating healthy food. It’s a dynamic process of change and growth comprised of emotional, intellectual, social, and physical health, as well as balanced nutrition, each of which should be a focus of your daily activities. Make sure to check with your doctor before beginning any new regimen to ensure it’s a balanced part of your wellness plan. Emotional, intellectual, and social wellness go handin-hand to create a social atmosphere where individuals can connect with others, learn new concepts, and improve overall emotions. Focusing individually on emotional wellness can help us cope with the challenges that life brings and share feelings we may be having. Intellectual wellness gives us the ability to open our minds to new ideas and experiences, which can be applied to personal decisions, group interactions, and community betterment. Social wellness gives us the ability to relate and connect with other people in the world, helping us establish positive relationships and new connections with friends, family, grandchildren, and peers. When thinking about wellness, most people think about physical well-being, which ensures your body is healthy and able to perform daily activities. Physical wellness is adopting behaviors that have a positive impact on our body, including routine check-ups and exercise, such as running, walking, biking, swimming, or yoga. destructive to your health, such as tobacco, alcohol, and drugs, also keeps you in good physical health. Balanced nutrition is an essential part of your physical well-being. Providing the right amount nutrients from food and drinks that turn it into energy helps your body to function correctly. To maintain proper nutrition in your diet, you should be consuming the majority of your daily calories in lean proteins, fresh fruits, fresh vegetables, whole grains, legumes, and nuts. Seniors should be consuming around 1,600 – 2,000 calories per day, while drinking on average eight 8-ounce glasses of water a day. ne of the harbingers of getting older is our eyes. Sometime in our forties, someone hands us something to read and no matter how far we hold it out, we can’t bring it into focus. This means you have officially entered the world of presbyopia, which literally means “old man eyes” in Latin. Presbyopia is caused by loss of elasticity in the crystalline lens in our eyes. The crystalline lens is our zoom lens, and in conjunction with the ciliary muscle, allows us to focus on things p close. Because the crystalline lens is made up of modified, up

transparent skin tissue, like the rest of our skin, it loses elasticity as we grow older and makes our vision get worse. As we get even older, the crystalline lens continues to lose elasticity, affecting our distance vision as well as our near vision, and then it starts losing clarity. This loss of clarity is called a cataract. There are different kinds of cataracts, but all of them affect the quality of our vision, causing glare at night, glare in bright light, and dim or foggy vision in general. Cataract surgery is the most common type of surgery in the U.S. today, with about three million people undergoing the procedure each year. It is an out-patient procedure and only takes about 8-10 minutes to perform. Previously, the goal of cataract surgery was to get rid of the cataract and put a monofocal implant in the eye, leaving most people in need of glasses afterward. But with the advent of laser-assisted cataract surgery, combined with the development of multifocal lenses to

correct presbyopia and toric multifocals to correct astigmatism, most people will not need glasses after this kind of cataract surgery. The patient can even be checked on the operating table with the new ORA system to verify the power of the implant is correct once placed inside the eye. Replacing our old lens generally stops our eyes from getting worse, since the lens doesn’t deteriorate over time. With careful testing and the right treatment, farsightedness, nearsightedness, astigmatism, and presbyopia can be corrected. Sometimes the hands of Father Time can be stopped or reversed. AN ABNORMAL MAMMOGRAM: WHAT NOW? By Dr. Gaelyn Scuderi ou’re a conscientious woman who actively pursues optimum wellness. You know that breast cancer is common, but treatable, if it can be diagnosed early. So you get your screening mammogram, and… it’s abnormal. Now you face a diagnostic mammogram, breast ultrasound, and a biopsy if needed. Now the questions start. What is a diagnostic mammogram? Why do I need an ultrasound? Don’t only people with cancer need biopsies? Do I have cancer? To answer these questions, it is important to understand the screening mammogram. The screening mammogram is a set of images designed to give the most information about the breast tissues in the smallest number of pictures. If there is a change since the previous mammogram, a diagnostic breast imaging workup is recommended. On average, about 1 in 10 women will be recalled for a diagnostic exam. Unlike the screening exam, the diagnostic breast imaging workup is an individualized exam that starts with additional mammographic pictures. Magnification views are another kind of technique used in the diagnostic setting to characterize findings with maximum detail. i immediately and determines the next steps in the evaluation. Often a breast ultrasound is recommended. A breast u ultrasound is a powerful adjunct to the mammogram because it helps characterize masses as solid or cystic and provides another layer of detail. Most diagnostic breast imaging exams are complete after the customized mammography and ultrasound images are performed, but occasionally an MRI is recommended. It is a common misconception that most diagnostic breast imaging exams result in a recommendation for a biopsy and a subsequent cancer diagnosis. Only 17 percent of women are recommended for biopsy, meaning the great majority of

When a breast biopsy is needed, women should know that breast imaging physicians are obliged to biopsy any finding that has a greater than 2 percent risk of malignancy based on its appearance. Of those women recommended for biopsy, only about 30 percent will be diagnosed with breast cancer. In summary, an abnormal screening mammogram is not a definite cancer diagnosis. But a more personalized evaluation is necessary to ensure your optimal health and exclude the presence of an early, potentially curable breast cancer.

hile good oral care can be achieved through just a few minutes of effort each day, the wrong practices can do more harm than good. Here are four common misconceptions that can undermine good oral health. First, brushing your teeth harder makes them cleaner. Not true, so take it easy! Dentists often see the effects of brushing too hard or brushing with bristles that are too firm. Gum recession, erosions of enamel, and tooth sensitivity can all be caused by excessive force or abrasiveness when brushing. Stick to soft or 16 AMELIA ISLANDER MAGAZINE •

extra soft bristles, using a light circular motion around your gums. Better yet, get an electric toothbrush and make things even more effortless! Second, gum disease is only a problem for your mouth. Not true. People with periodontal (gum) disease are more likely to have health issues such as diabetes, hypertension, and some cancers related to chronic inflammation, in addition to low birth weight and premature birth in pregnant women. A healthy body starts with a healthy mouth. Gum disease commonly leads to tooth loss, which affects what you can eat, how you speak, and even the shape of your face. Third, you don’t need a dental check-up if nothing is bothering you. Again, not true. It is better to find a problem early and resolve it quickly before it worsens. By the time

Cavities and gum disease are easier and more affordable to treat when diagnosed early. Fourth, the dentist’s office is too scary for me. Have no fear! Dentistry has come a long way since the time when most baby boomers were young. Many patients tell me about a bad experience they had when they were kids, and dentists understand that this can keep people away. Dental offices now offer many ways to keep patients satisfied with their dental experience, like TVs in treatment rooms, dental chairs with massaging capability, warm hand and neck towels, and great music to keep patients comfortable and coming back. In addition, nitrous oxide (laughing gas) or conscious sedation with a happy pill are options for patients who might need an extremely relaxing visit!

MEDICARE’S UNEXPECTED COSTS By Dunnon McLucas

W

hile most individuals now understand that Medicare charges premiums and has costs associated, they might not know about some of the less common costs many people will incur. First, Medicare Part A is only premium-free if you have paid into the program for a minimum of forty quarters (ten years). Medicare Part B always has a premium. Also, if you had a high annual income (as determined by Medicare) in the past two years, your premium for Part B could go as high as $428.60. We call this an Income Related Medicare Adjustment Amount (IRMAA). Part D premiums also increase if you are receiving an IRMAA. Even electing not to receive Part B or D when you are first eligible will cost you more in premiums later. Parts A and B differ in out-of-pocket costs. Medicare Part A generally covers most bills associated with a hospital stay. Deductibles play their part: Part A beneficiaries must pay $1,340 for the first sixty days of hospitalization. (In health insurance, the “assignment” would be like the “negotiable price.”) These charges pass directly to the consumer when they apply. o you want to change your health? It starts with your perspective. No, I’m not going to offer you mantras or affirmations, or tell you to think positively. But what I will do is point out something which guides how we make decisions about our health, but which we don’t often stop and critically evaluate. Right now, the conventional approach to health is pathogenic. In other words, it’s about the factors that cause disease. This method has very distinct characteristic and principles. In a pathogenic mindset, you are either healthy or sick. The attention is on the specific diagnosis of the specific disease of the patient. Attention is also focused on the risk factors of the disease being considered. The starting point is the disease or problem. Now let’s try a new mindset. The Salutogenic mindset. The word Salutogenic comes from the Latin salus = health and the Greek genesis = origin. A Salutogenic approach to health focuses on what makes us healthy rather than what causes disease. In this approach, you are not either healthy or sick. Instead, you are on a continuum, in which you are moving towards health or towards being sick. The attention is focused on the overall state of the health/illness of a person. Rather than just looking at the risk factors of the particular disease, the focus is on where the patient is on the health spectrum. 2019 AMELIA ISLAND CHAMBER MUSIC FESTIVAL The 2019 season of the Amelia Island Chamber Music Festival promises to be the best in the festival’s 18year history, featuring three superstar headliners: legendary jazz trumpeter Wynton Marsalis and his 15-member Lincoln Center Jazz Orchestra on January 25; violin virtuoso Joshua Bell on February 1; and the renowned pianist Emanuel Ax on March 22. The twelve performances of the festival’s 18th season will run from January through April. The star power of the 2019 season will not stop with the headliners. The upcoming schedule also includes performances by the celebrated Dover Quartet, the acclaimed Miro Quartet, renowned violinist and longtime festival favorite Anne Akiko Meyers, and the award-winning bluegrass band, Balsam Range. “Our 2019 schedule will make our 18th season the most memorable in our long history,” says Christopher Rex, the festival’s artistic and general director. “Presenting Wynton Marsalis, Joshua Bell, and Emanuel Ax in a single season clearly reflects our status as one of the nation’s premier festivals!” Tickets for the headliners and the entire 2019 season will go on sale later this fall at www.aicmf.com or by calling (904) 261-1779. On November 9, Barnabas presents its annual fundraising luncheon, Empty Bowls, to combat hunger and crisis in Nassau County. The Ritz-Carlton, Amelia Island and Omni Amelia Island Plantation Resort are donating a simple meal of soup, bread, and dessert. With the help of volunteers and organizations like Nassau County Boys & Girls Clubs and the Newcomers Club, more than 700 bowls were created for the luncheon. This year’s speaker is Matthew Dicks, an elementary school teacher and speaker for the acclaimed storytelling group, The Moth. He will share his story, “Free Lunch,” which relates his experience of growing up hungry. Presenting sponsors include The Ritz-Carlton, Amelia Island and Baptist Medical Center Nassau. Empty Bowls is also supported by a grant from the Endowed $10,000 Event Grant Fund established in 2015 by Delores Barr Weaver. “In the last five years, Empty Bowls has raised awareness and brought home the issue of food insecurity in Nassau County. LOCAL AUTHOR’S MYSTERY UNFOLDS ON AMELIA ISLAND Amelia Island author Tom Hitchcock had what he believed was a compelling premise for a mystery novel, but before putting pen to paper, he needed a locale, the backdrop that gives a story its texture. Fortunately, he says, the decision was easy. “My wife and I have lived on Amelia Island for seven years,” says Hitchcock. “They say write about what you know, and I had a good feel for the character of the area. So what better location than right here?” Hitchcock’s novel, his second, is a murder mystery entitled Girl in the Painting. It follows the story of a local artist, Colleen Grey. The somber faces in her paintings become suspicious links to a series of disappearances, or murders. “Amelia Island has a vibrant arts scene,” Hitchcock notes, “and the Shrimp Festival was an ideal setting for the novel’s opening scenes, the hook that sets the stage for the rest of story.” The plot weaves its way through art galleries, St. George Island, the Scott Road beach parking lot, The RitzCarlton, Amelia Island, and other familiar landmarks. isa Waas is a Certified Iyengar Yoga Teacher. “Iyengar Yoga is an art, a science, and a philosophy,” says Lisa. “It’s a practice to be taken seriously, one that builds strength and endurance, increases flexibility, reduces stress, and improves circulation, coordination, concentration, and balance.” Seeing a need in the community for serious yoga practice, Lisa opened Community Yoga + Wellness in March, and she can’t imagine doing anything else. Certified Iyengar Yoga Teachers undergo a 3-year training program, and there are only 1,200 teachers in the U.S. “When you come to my class, you will work hard,” says Lisa. “You will receive corrections and be given instructions to practice at home. I will teach you the philosophy, postures, and science behind Iyengar Yoga.” Iyengar Yoga does not use music, since it is intended to heal the body and the mind with awareness and skillful action. Lisa teaches all Iyengar Yoga classes herself, and also offers classes in Tai Chi, Pilates, and other classical arts. “We use props to help beginner students find alignment in the pose or to challenge experienced students. We also offer healing classes for back, neck, shoulder, and knees,” says Lisa. “We have all the essential ingredients for an intelligent Iyengar Yoga practice, a mindful Vinyasa class, or a powerful Pilates session. Honoring a Legacy of Service Founded in 1881 by the Sisters of St. Joseph and reopened in 1998, St. Michael Academy celebrates a milestone anniversary. BY KAREN MILLER • PHOTOS BY SHERRY CARTER

T

he 2018-2019 school year marks a special anniversary for St. Michael Academy: it is the twentieth anniversary of the school’s opening in 1998. In August of that year, the school welcomed its first group of pre-kindergarteners. Since that time, the school has grown to 240 students strong from Pre K through 8th grade. But the school’s history goes back much further than these past two decades. In 1871, the Sisters of St. Joseph arrived from France to establish their order in Fernandina Beach to give aid and assistance to those in need. It was a difficult time for many on Amelia Island, and the Sisters were pioneers and activists, educating many who were marginalized and assisting with the yellow fever epidemic. The Sisters opened St. Joseph Academy in 1881, and for nearly a century, they educated generations of students. The school closed its doors in 1971 and fell into disrepair. In the 1990’s, through the generosity of its parishioners, St. Michael Catholic Church began renovations, and the school was brought back to life in 1998. St. Michael Academy provides a strong Catholic education with a focus on academics and community service. Students learn early on how their actions and outreach to others can have 35 AMELIA ISLANDER MAGAZINE •

a lasting impact. Just like the Sisters of St. Joseph in the past, the students give of themselves regularly to many local causes, including homeless shelters, Gracie’s Kitchen, Toys for Tots, the Nassau Humane Society, and many more. Under the leadership of Dr. Christopher Hampton, the school has grown, adding new initiatives and opportunities. Hampton spent twenty-four years in private boarding schools in New England before relocating to Fernandina Beach to become principal in 2016. The school began an educational partnership with White Oak, the conservation park in Yulee, where students go multiple times throughout the year to study ecosystems and endangered species. Hampton also initiated a Visiting Author Series, through which a well-known author comes to work with the students to share his or her writings. In addition, Hampton implemented the Harkness Method for the middle school, which utilizes a discussion-based approach, empowering students to truly take the lead and be a part of the conversation in an active manner. “I am a big believer in handson education,” Hampton says. “At St. Michael, we teach in the classrooms, but instill learning out in the world as well. The students gain so much more insight and practicality through witnessing their learning in action.”

This year, St. Michael is undertaking a new focus on marine biology because of the school’s unique geographic location, with both the ocean and the Intracoastal Waterway within easy access. Through the generosity of the McCallum Foundation, the school will partner with Healthy Aquatics Marine Institute, an organization whose focus is on restoring the fragile ocean ecosystems. It is one more way that the students are given the chance to go out into the world and make a difference. The motto for St. Michael’s anniversary year is, “With the light from the past, we ignite the future.” Just as the Sisters of St. Joseph did a century ago, the students at St. Michael Academy are expected and encouraged to live the Gospel message of service to others. Through the outstanding education they receive, and the opportunities for community service and social justice, they are bright lights for the future of the world. St. Michael Academy will be hosting several anniversary celebrations throughout the year, including a special gala dinner on campus on December 7. The school is open to children of any religious denomination and offers tours and interviews for interested families. OSPREY With a wingspan of over five feet, the magnificent ospreys that migrate through Amelia Island heading south each year in October are exceptional hunters. STORY AND PHOTOS BY GAIL PFOH

W

ith a large wingspan of approximately 63 inches, striking brown and white plumage, and a very distinctive call, chances are good that you have seen ospreys in our area. In October, your chances of seeing these magnificent raptors increase greatly when ospreys from other parts of North America migrate through our ecosystem on their way south. According to the Cornell Lab of Ornithology, some ospreys may log more than 160,000 migration miles during their 15-to-20-year lifetime. Scientists are able to track the movements of osprey using satellite monitoring. Barbara Walker, president of Clearwater Audubon Society, says that lightweight backpack-style satellite trackers are used on the raptors. “Ospreys are certainly one of the most remarkable species,” says Walker. “They are ideal for research using the data obtained with satellite tracking. The data returned can then be used to make sound conservation 43 AMELIA ISLANDER MAGAZINE • OCTOBER 2018

priorities, not just in Florida, but on a global basis.” At allaboutbirds.org, the Cornell Lab of Ornithology tells us that “the devices pinpoint an osprey’s location to within a few hundred yards and last for 2 to 3 years. During 13 days in 2008, one osprey flew 2,700 miles, from Martha’s Vineyard, Massachusetts to French Guiana, South America. Ospreys which were born on Amelia Island have fledged, increasing our local population. In addition, thousands of osprey migrate through here. These visitors often stay a few days as they feast on our fish, giving them the nutrition they need to navigate the “highway in the sky” which leads them to the tropics and South America. You may see multiple osprey in one tree, each one snacking on a fish freshly caught from our ocean, marshes, ponds or the Amelia River. Watch for osprey as you cross the bridge at the south end of Amelia Island. They congregate in the pine trees at Amelia Island State Park

and they perch on the bridge railings as they survey the water looking for fish. According to www.fws.gov, “the osprey is unusual in that it is a single living species that occurs nearly worldwide and is the second most widely distributed raptor species, after the peregrine falcon.” Because of their fishing prowess, and because 99 percent of their diet is fish, the osprey is nicknamed the Fish Hawk. Flying and hovering above the water, he plunges at speed toward his target with his fish-hook-like razor-sharp talons extended and his body positioned like an avian fishing spear. He plunges up to 3 feet deep in the water to capture his prey. Soaking wet, he must take flight carrying a wiggling fish (or sometimes even two at a time!), some of which even bite their predator mid-air! After a mighty shake, he uses his reversible outer toe (unique among hawks) to line up his prey in a straight line to reduce wind resistance as he flies to a perch. heavenly hydrangeas As fall arrives, Tiny Stuff Hydrangea and the not-so-tiny Hydrangea look-alike, Rose Glory Bower, could become conversation pieces in your garden this season. BY BETTY MORRELL

T

he month of October has finally arrived, which is said to be the beginning of the garden season here. Now is the time to give those new and old beds a boost for the spring season. For the roselover, there’s a new rose called Easy Spirit, an elegant ivory bloomer with buttercream centers. This subtly fragrant rose retains its color and will not burn. Easy Spirit is a compact, upright Floribunda and has exceptional disease resistance. An old favorite of mine is the Shasta Daisy, one of the showiest and most reliable perennials for the summer garden. A beautiful new variety named Becky is now available. At peak bloom, a mass of bright white is produced, and Becky becomes a living bouquet of huge 4-inch flowers with long, strong stems, perfect for cutting. Becky originated in the Atlanta area, so it’s a perfect daisy for the south, a wonderful addition to your garden as a single plant or planted in clusters for a mass affect. For those who fancy the hydrangea, and many of us do, I found a sweet little Lacecap Hydrangea that would shine

wherever you invite it into your garden. Say hello to “Tiny Stuff!” Beneath the graceful look of this lovely little shrub is the rugged and hardy constitution of a Mountain Hydrangea. The lacecap blossoms provide a full summer season of color, arriving on both old wood and new wood against a backdrop of lush, green leaves. The flower’s coloration favors blue, but the blue can range from pastel shades of pink to blue to white, depending on the PH level of your soil. This darling little shrub grows only 18 to 24 inches in height and rounds out to a nice shape. Tiny Stuff is a conversation piece, and you will just love the dainty, colorful lacecap flower. This one would find a spot in my garden in sun to part-shade.

A couple of months back, I wrote about the Pagoda plant (Clerodendrum), which has such a magnificent flower head. Well, there is another one in that family called the Rose Glory Bower. The large 8-inch flowers resemble the French Hydrangea lacecap, but this is not a hydrangea. The flowers are very fragrant and last from summer until a frost. This plant can grow to 6 feet tall, so think twice before you plant one. And do not invite this plant into your garden unless you are ready to control it! Rose Glory Bower spreads by suckers that comes up all over the place. You could put it in a large container, as it is a very pretty landscape plant, but it is very invasive. “W

hat is the story behind that big white house on the way to the south end of Amelia Island?” our family has asked many times while passing the beautiful home in the car. On one afternoon, all of our questions were answered when Sarah and Aaron Bell invited the Amelia Islander Magazine to hear the story of “Old Nest.” An American treasure in our midst, the home is also known as “Mount Hope Plantation,” built in 1797 by John Vaughn, a veteran of the American Revolution, Indian Wars, and the War of 1812. Vaughn acquired land as compensation for his military 53 AMELIA ISLANDER MAGAZINE •

service and built a Sea Island cotton plantation and personal residence on the south end of Amelia Island. The home was originally established at the site of The Landings on Amelia River, but it was moved down the road by the Jacobsen family in 2006. “Its positioning on the land is perfect,” Aaron explains. “It’s sandwiched between centuries of trees, so it feels authentic to this property, which is rumored to have been a Civil War hospital.” Majestic yet traditional, the house sits along the Amelia River on its new foundation, with an upgraded bulkhead and pool.

“The bonus of buying an old house on new land is that it’s built to current code,” Aaron adds. “It took us a while to find a builder who would guarantee a pool on the water.” The result is stunning, with the river and its marsh grasses serving as a backdrop on the west side of the home and the east side featuring a canopy of beautiful, old oaks. The original interior consisted of two rooms downstairs, two upstairs, and a hallway, Aaron explains, noting that kitchens of that time were housed

outdoors. Today, the home’s oldest rooms have their original heart cypress wood floors and staircase. Additionally, the home has likely quadrupled its size through the years as homeowners expanded and improved the original floorplan. The Bells are cautious with the home’s interior, maintaining the traditional colors of the era like the dark blue in the dining room, as well as the thick, black baseboards. “We have five wood-burning fireplaces,” laughs Aaron. about how lovely it is to have a brick fireplace in your dining room, your formal and family living rooms, and even your daughter’s and a guest bedrooms! It’s the modern charm inside the historic setting that captured us,” says Aaron. Having purchased the home is 2015, the Bells are loving life in their old, new home. “We are originally from Buffalo, New York,” Aaron shares. “I

owned a company which specialized in science teaching equipment. One day, we realized we didn’t have to stay in New York! Sarah wanted a setting with seasons, and I wanted a location near a seaport with no state income tax, and so Florida won over Texas.” The couple quickly feel in love with the charm of Amelia Island and decided that this was an ideal place to raise their two children, Matthew (10) and Audrey (4).

A big plus for the house was the kitchen renovation in 1999. Ahead of its time with white cabinetry and gray-and-white granite along with a farmhouse sink, it looks brand-new! T

he Florida House Inn on South 3rd Street in downtown Fernandina Beach is as stately and elegant today as it ever was. Be it former presidents, Civil War generals, robber barons, or brides, the Florida House comes alive for all of its guests. I recently had an opportunity to enjoy a lovely brunch with my daughter, Lydia, on the back porch of the inn, overlooking the fountain and their beautiful courtyard. Several years ago, when we ran our own restaurant across the street, we would cut through the courtyard between the inn and the Green Turtle on our way to work. The girls would always compliment the gorgeous mermaid fountain in the center. As we sat down, Lydia looked up at me with satisfied delight and said, “Ooh daddy, I love it here!” I had to admit, I did, too. Our meal started out with a mimosa for me and a glass of fresh orange juice for Lydia, who knew right away what she was having: Waffles with Crispy Bacon. First however, Chef Joe Bain stopped by our table to deliver a perfect starter for a warm-weather brunch: an arugula salad with fresh watermelon radish, avocado, and a champagne vinaigrette. The vinaigrette had just enough acid and sweetness to stand up to the peppery greens, while the avocado made the salad truly luxurious. Chef Joe is a recent addition at the Florida House, who found his way into the kitchen while working at the Omni Amelia Island Plantation Resort, where he developed his skills before venturing out to Pittsburgh and then Tampa. Now back at the beach, he’s looking forward to putting down some roots and adding his personal touch to the menu while gearing up for the wedding season. At our house, we love to nibble on cheese, so we ordered the Pimento Cheese with Lavosh, a crisp cracker bread. Lydia was quite sure that this was the fanciest cheese and crackers she had ever seen. I agreed, and together we dug into the homemade spread and it did not disappoint. This would be a perfect starter or bar snack any time of day. 60 AMELIA ISLANDER MAGAZINE •

Lydia’s waffles came out crisp and fluffy, with a pile of perfectly delicious bacon and a fresh fruit garnish that painted a big smile on her face. I decided on the Shrimp & Grits, a classic, but too often, an uninspired chef will sauté the shrimp and hope for the best. Not so this morning. Chef Joe treated the fresh and local shrimp with the respect they deserved and developed the sweet flavor without overpowering them with

too much ham or cream. The grits were rich, with just enough texture, and topped with a perfectly poached egg on a nest of fresh arugula. As our meal drew to a close, I felt remarkably at peace. The courtyard was cool and serene, and our taste buds satiated. Lydia and I strolled out of the Inn with the day in front of us, and we promised each other we’d be back. Leddy’s Porch at the Florida House Inn is open for lunch Wednesday through Friday from 11:00 - 2:30 p.m. and for brunch on Saturday and Sunday from 10:00 - 3:00 p.m.

island entertaining SHEPHERD’S PIE WITH PUMPKIN Ingredients 2 lbs lean ground beef 1 small pumpkin, peeled, seeds removed, cut into tiny cubes 2 carrots, peeled and finely diced 1 medium onion, finely diced 3 cloves garlic, finely chopped 1 ½ C frozen peas 1 red bell pepper, finely chopped 6 Yukon Gold potatoes, boiled, and mashed with butter, salt, and pepper Extra virgin olive oil Large jar prepared beef gravy 2 Tblsp tomato paste Small pinch each of cinnamon, nutmeg, and cloves to taste Salt and pepper to taste Preparation In a large pan, sauté onion, garlic, pumpkin, carrots, and red bell pepper in olive oil until vegetables are nearly cooked through. Remove from pan and add ground beef. Cook beef until no pink remains. Add vegetables back to the pan with peas, then add tomato paste, cinnamon, nutmeg, cloves, salt, and pepper to taste. Add enough gravy to your liking - mixture should remain thick. Pour mixture into a large, deep casserole dish. Spread with mashed potatoes. Dot with extra butter, if desired. Bake at 350 degrees until potatoes are golden and beef mixture is bubbly. Serves eight or more.

W

hen October comes around, we always celebrate the season with a fall family dinner prepared by the whole gang. Our dinners are not culinary masterpieces, but they’re hearty and comforting, cooked and served with love. This year’s family feast featured Shepherd’s Pie with Pumpkin, Autumn Greens Salad, and Old-Fashioned Apple Cake. We set the grandchildren to mashing potatoes, tearing kale leaves, and stirring cake batter, while the grownups chopped onions, peeled apples, and cut pumpkin into small cubes. Hot chocolate and cider was enjoyed by all. You might think a group meal would get prepared in half the time as

a single person would take to cook it, but that’s not the case! It took most of an afternoon to wrangle all the cooking tasks and complete the meal by dinner time, but what fun we had. Our Shepherd’s Pie was rich with gravy and spices. For the salad, we used “sturdy” cold weather greens like kale, chard, rapini, and radicchio, available at our local farmers market this time of year. Old-Fashioned Apple Cake was a hit served with ice cream, and drizzled with caramel syrup. Complete your autumn dinner with a walk on the beach, and you’ll realize why Amelia Island is the best place to be in October!

OLD FASHIONED APPLE CAKE Ingredients ¾ C granulated sugar ¼ C Crisco 1 large egg ½ C milk 1 ½ cups flour 2 tsp baking powder ½ tsp baking soda 3 apples, peeled and sliced 2 Tblsp sugar and 1 teaspoon cinnamon, mixed Preparation Cream sugar and Crisco together, then add egg and milk and beat well. Mix flour, baking powder, and baking soda together, then add to wet ingredients and mix. Pour batter into an 8” x 8” baking pan that has been greased and floured. Top with apple slices, sprinkle with cinnamon sugar, and bake at 375 degrees for about 35-40 minutes. Makes 9 squares.
