Every year in November, as Christmas and the holidays come into view, we take great pleasure in presenting our annual holiday gift guide. Our goal is always to highlight some of the terrific gift items available here in our local shops during the holiday shopping season. Whether you’re searching for the perfect gift for someone special or sneaking something for yourself, you’ll find it here on Amelia Island. As always, our goal with this issue is to save you from travelling over the bridge too often on those frantic pilgrimages to the mall and to rescue you from carpel tunnel syndrome brought on by too much online clicking. Of course, no matter hectic our holidays are, the most important part of the season is always the time we spend with family and friends. During the Christmas season on Amelia Island, the spirit moves among us, prompting many in our community to give graciously of their time, talent, and treasure to help those in need. Their generosity inspires us each year, and reminds that the most precious gifts of the season are faith, family, and friendship. Once again this year, we are pleased to offer a preview of the 2019 Amelia Island Museum of History Holiday Home Tour, an important fundraiser for our outstanding community museum, in the November “Island Home.” The tour features five beautiful homes in Fernandina Beach’s historic district, plus a chance to see the Southern Living Idea House on Crane Island, and we hope that everyone has a chance to enjoy the tour this year. Also in this issue, we meet the Amelia Island Bourbon Society, a local club that educates on and enjoys the pleasures of bourbon; offer another “Eyes to the Skies” on the Hooded Merganser; enjoy another one of the “Great Homes of Fernandina” with Dickie Anderson; present an “Island Entertaining” on brining your holiday turkey; and much, much more. ISLAND CHAMBER SINGERS CHRISTMAS CONCERT AT AMELIA PLANTATION CHAPEL Christmas Joy will fill the air on December 6 when the Island Chamber Singers perform their Christmas concerts this year at Amelia Plantation Chapel. Accompanied by an orchestra, the event will feature a performance by The First Coast Singers, a youth chorale sponsored by Arts Alive Nassau. The singers will perform a wide range of songs under the direction of Dr. Jane Lindberg, founder of the Island Chamber Singers, and Jonathan Welch, who conducts the youth choir. Selections include classical pieces like Pergolesi’s “Glory to COURTESY ISLAND CHAMBER SINGERS God in the Highest” and Powell’s “Christus Natus Est,” as well as traditional favorites including “Deck the Halls,” and “Hark! the Herald Angels Sing.” The performance will finish with the Chamber Singers’ favorite, “I Wish You Christmas” by contemporary composer John Rutter. Amelia Plantation Chapel is located at 36 Bowman Road. The American Beach Museum was scheduled to honor its founding with a four-day celebration in September when an unexpected guest, Hurricane Dorian, disrupted the plans. Now the A.L. Lewis Historical Society and American Beach Museum are pleased to announce the rescheduled fifth anniversary celebration, presented by Florida Blue. The festivities bring together nationally recognized actors, educators, and prominent American Beach community members Johnetta B Cole for several extraordinary events. On Saturday, Nov. 9, Essence Magazine icon and television personality Susan Taylor will interview Dr. Johnnetta B. Cole, sister of “The Beach Lady” MaVynee Betsch at “High Tea in the Spirit” at The Ritz-Carlton, Amelia Island from 2 – 4 p.m. On Thursday, Dec. 12, the A.L. Lewis Legacy Awards hosted by actor and activist Danny Glover will honor Dr. Cole at 6 p.m. at Walker’s Landing in Amelia Island Plantation. On Saturday, Jan. 18., retired Federal Judge Henry Lee Adams, Jr. and current Federal District Judge Brian Davis will discuss the quest for justice from noon to 3 p.m. at American Beach Museum and Community Center. Amelia Island Book Festival is returning for its 19th season next year from Feb. 13-15, 2020. The goal of the festival is to open the world through books, and the 2019-2020 Board of Directors is proud to welcome first-time Honorary Chair David Baldacci to the team. Baldacci was a headline author at the 2019 festival and is known for compelling mysteries and thrillers which are global bestsellers. Together, Baldacci and his wife, Michelle, founded Wish You Well Foundation®, which is dedicated to supporting literacy efforts across the United States. “It is a great privilege to be the Honorary Chair of the 2020 Amelia Island Book Festival. I think readers and writers who have attended in the past would be in universal agreement that this is one of the premier book David Baldacci festivals in the country,” Baldacci said. oan and Richard Perose had been visiting Amelia Island for many years when they finally decided to move to the island permanently. Joan’s sister and her husband were already living in Fernandina Beach, and since the two couples are best friends, they wanted to be close to one another. Richard is an accomplished jeweler and GIA graduate, and Joan is in art sales. With 35 years of experience under their belts, the couple knew exactly what type of gallery they wanted. “The beauty of our profession is that we can run a gallery anywhere we wanted to live,” says Joan. “We think our gallery is unique because of its eclectic mix of art, sculpture, and fine jewelry.” They couldn’t quite decide what to call their gallery, and then settled on Richard Jones, a combination of their two first names. “We liked the sound of that,” laughs Joan. “And once we said it out loud, we couldn’t think of any other names that suited us!” The gallery’s collection includes paintings by local artist Gary Jones, sculptures by Renzo Faggioli, paintings by William McCarthy, art glass by Taylor

Backes, and oils by Milt Shirley. “Milt Shirley was a beloved local artist, who recently passed away,” says Richard. “We have a large selection of his paintings and we’re the only gallery in the area representing his work.” Shirley derived his inspiration from salt marshes because he lived on or near them for 40 years with his wife. His paintings are revered for their dreamy and imaginative sunsets, sunrises, and approaching thunderstorms. W

hen local optometrist Dr. Tonia Bradley moved to Amelia Island from Kentucky, she didn’t know anyone, but she had a plan. “I was sad not to have anyone to drink bourbon with, so I created the Amelia Island Bourbon Society to make new friends,” she says. Now Tonia has a lot of new friends and the Amelia Island Bourbon Society is thriving, offering the opportunity to learn about bourbon, taste bourbon, and socialize with others who share the same love for bourbon. The society is a lively social crew that meets monthly at different bars and restaurants on Amelia Island, and anyone is welcome to be a part of the group. “We are really informal,” says Tonia. “We are just getting around to incorporating and establishing bylaws.” The Amelia Island Bourbon Society joins a growing group of clubs, societies, associations and bourbon educators across the country. The social media site Meet Up shows 23,000 people interested in bourbon and 103 Meet Up locations. Bourbon is an American whiskey made from 51 percent fermented corn distilled into a liquid, which is then aged in charred white oak barrels. It is a very broad category of whiskey, including straight whiskey, blended whiskey, and “imitation” whiskey. Bourbon production is largely attributed to Kentucky, but large distilleries can be found throughout the American Midwest. There are many legends about the “invention” of bourbon, including one that names a pre-Prohibition Baptist 39 AMELIA ISLANDER MAGAZINE •

minister as the first creator of the drink. Michael Veach, the Kentucky Bourbon Hall of Fame historian, disputes this claim as apocryphal. It is also unclear exactly where the name “bourbon” originated, but much of the 18th century production in America was in Bourbon County, Virginia, which eventually became part of the newlyformed state of Kentucky. Bourbon historians claim that the aging process was developed when Kentucky distillers shipped the product in barrels by river to New Orleans—a trip that took nine months. In the spring, the Bourbon Society met at The Mermaid Bar at The Florida House Inn to welcome The Greenbrier Distillery representative Liz Epsy. them. Old Forester Bourbon has hosted society meet-ups, and there have been pop-up bourbon dinners at private homes and sunset river cruises aboard Amelia River Cruises. The society also hosted a sold-out bourbon dinner on a riverboat, where members dined, tasted bourbons, and danced to the sounds of The Honey Badgers. In September, the society celebrated Bourbon Heritage Month, and members of the group participated in the thirty-day bourbon challenge. Part of the joy of bourbon, according to Tonia, is that you have to slow down to enjoy it. “Life is really fast, you have to slow down your world for a minute to sip a good bourbon,” she says. Bourbon, like perfume, comes with underlying “notes,” which take careful tasting to enjoy. “You really shouldn’t just throw back a short glass of bourbon,” adds Tonia. Jackie Zykan, Master Taster for Old Forester, says Bourbon drinkers may recognize sweet aromatics like vanilla, butterscotch, caramel, molasses, honey, or chocolate, as well may other “tastes,” such as “grassy, fruity, or spicy.” Zykan does recommend, however, that no one wear perfume while drinking bourbon so as not to confuse the palate. T

he kaleidoscopic colors of November and the melange of habitats in our area attract visitors from across the globe. Our beaches, salt marshes, barrier islands, the Atlantic Ocean, the oyster-crusted banks of our waterways, the timeless Live Oak trees, and more have not gone unnoticed by people from far and near. These important, rich habitats are also ageless attractions to birds and ducks of many species. Each winter across our area and the rest of Florida, we welcome dozens of species which have flown hundreds or thousands of miles to rest and ‘refuel’ here during migration. Some even spend a few months visiting us. From the northern trees and tundra of the boreal forests, from Tierra del Fuego, the Great Lakes, or even from Texas or Arizona, birds, geese and ducks are eager to spend the winter in our area. With mild temperatures and low humidity, it is a great time to get outside, where you’ll have a chance to see dozens of species that only visit us during this season. Now is the time to find Northern Harriers, Belted Kingfishers, Yellow-rumped Warblers, a Snow Goose, or visiting ducks. One such duck is the beautiful Hooded Merganser. They arrive in our area a bit later than most of our migrants, but they are worth the wait each year. With a wingspan of approximately 25 inches, they weigh only about 20 ounces! They are about the size of a crow. According to allaboutbirds.org, “they are the second smallest of the six living species of mergansers.” These small ducks are diving ducks, which means they dive underwater to find food. They can be seen along the Amelia River, in salt marshes, on Egan’s Creek, and on many local retention ponds. “Hooded Mergansers eat small fish, aquatic insects, crustaceans (especially crayfish), amphibians, vegetation, and mollusks,” notes Cornell’s Lab of Ornithology. “Their diet is broader than in other mergansers, which eat fish almost exclusively. Hooded Mergansers dive in clear, shallow ponds, rivers, and streams and locate prey by sight, with eyes that are specially adapted to seeing underwater. They can actually change the refractive properties of their eyes to improve their underwater vision. “In addition, they have an extra eyelid, called a ‘nictitating membrane,’ which is transparent and helps protect the eye during swimming, like a pair of goggles. They propel themselves with their feet and use their slender, serrated bills to grasp their prey. Hooded Mergansers swim low in the water. Their legs are far back on their bodies, which helps in diving but makes them awkward on land.” Hooded Mergansers may have small, thin bills, but they have a large, showy, oversized crest or ‘hood’ on the head from which they get their name. This interesting hood is collapsible. It can be raised or lowered at will and can greatly change the appearance of their heads. The male Hooded Merganser is a striking sight with his black head with bright white patch, white breast, and yellow eye. Hues of chestnut & mahogany feathers cover his flanks. The colors of the female are more subtle. She is a gray/brown color with a cinnamon ’Mohawk’-style crest. You may find these ducks in pairs or in larger groups. Keep your “eyes to the skies” if you want to see one of these diminutive, beautiful swimmers. They are skittish so use binoculars, a scope, or a telephoto lens to observe them. A

nother distinctive home in the Historic District, the Swann-Kelly house is an outstanding example of a Queen Anne house. A Shingle-Style Queen Anne, the house utilized a variety of windows, shingle designs, and elaborate trim. A generous open verandah and a second story porch grace the front of the home. On the left, or north side, of the house, a signature series of stain glass windows can be seen marking the interior stairway leading to the second floor, a typical Queen Anne detail. All three fireplaces feed into one main chimney. The home was built by Samuel Swann for his son, Donovan, a well-recognized artist. David Yulee’s railroad brought Swann to the island, and he was considered one of Yulee’s key men. He handled much of the railroad’s real estate dealings. Swann was said to be the major landowner in the area. Swann was head of the Fernandina Town Development Company, a brickyard owner, shipper, philanthropist, and devout church warden at St. Peter’s Episcopal Church. In 1862, he became a blockade runner. Appointed to the War Department of the Confederacy, he sold cotton and sugar and purchased food supplies and ammunition. Bricks from

his brick yard were used at Ft. Clinch. An additional and most interesting note is that Swann’s wife’s aunt was Mary Martha Reid, who helped found the Hospital for Florida Soldiers in Richmond, Virginia, where she served as a nurse during the Civil War. She was the third wife of Robert Raymond Reid, a U. S. Judge and Territorial Governor of Florida. David Levy Yulee trained for the bar under Judge Reid. Her first son died in infancy, and the second, Raymond Jenckes Reid, was killed at the Battle of the Wilderness. After the war, she established a school. When her niece died, she moved in with Samuel Swan to help raise his children. There is a window in St. Peter’s dedicated to her memory. The house was sold in 1900 and had several owners. D.A. Kelly purchased the house and adjacent lots for $3,500. Kelly and his brother, William Redmond Kelly, owned and operated a ship’s chandlery at the old Hoyt Building on the corner of Centre and North Second streets. William Redmond Kelly married Grace Leddy, owner and manager of the Florida House Inn. D.A. Kelly was a leader in the community and served in the Florida Legislature.

dandy dogwood If you’ve missed the beautiful Dogwoods from up north, check out the new Empress of China, which is for our climate, and add the lovely Love Child for fall color. BY BETTY MORRELL

W

e are nearing the big holidays of the year, and you’re probably not thinking about gardening except for a little sprucing up, but this is a great time of the year to plant. The cooler weather is good for you and your plants! Coming from Long Island, New York many moons ago, I loved the beautiful Dogwoods there, and I have longed to find a pretty one for this area. My heart skipped a beat last month as I perused the aisles at the Florida Growers Trade Show and came across an almost-new (PP) Dogwood named Empress of China (Cornus angustata ‘Elsbry’ PP14537). This awesome tree resembles a huge, solid flowering bush. The branches start at ground level and fill the trunk to the top. Each impressive branch holds up to 150 creamy white blooms. It’s a spectacular sight. As the flowers tire of showing off their beauty, the bush transforms into a strawberry-like fruit tree. The birds devour them, and they make a wonderful fall picture. Use this evergreen tree as an accent plant, specimen, or backdrop, and you won’t be sorry. Blooms start in

TIP OF T HE M O N T H It’s still a good time to fertilize evergreens and flowering spring plants. Milorganite works without burning the roots. Continue dead-heading, trim roses, clean up beds, and mulch.

spring and continue into summer. The tree can grow 15 to 18 feet in height and it spreads 13 to 15 feet across. Magnificent! The Empress of China has a shallow root system, so plant it in shade. Before planting, water well, dig a hole three times the width of the pot, and plant 1 to 2 inches above the soil level, then water again, add more soil if needed, and mulch. Fertilize yearly. Needless to say, I am going to enjoy this Southern Living addition somewhere in my garden. The name of another new shrub attracted my attention: Love Child Sweetspire. This lovely plant fulfills a lot of needs in the garden. First, it is low-growing, staying 3 to 4 feet in height and the same in width. Second,

it is a mounded shrub with bright green foliage, compact, and a heavy bloomer from May through June. The lovely fragrant hanging blooms make an attractive addition in any garden. Third, it has fall and winter appeal, as the foliage turns gorgeous shades of burgundy. It’s a versatile shrub for sun or part-shade. The small size of this plant makes it perfect for smaller gardens and foundation plantings. Love Child thrives in moist soil and is somewhat drought tolerant, so plant it where you will. For those of you who have deer visiting your gardens, this one is deer-resistant. Water it well in the first year until established, then regular water is sufficient. If you have any time to spare in your busy holiday season, you can start your arm chair gardening, thinking about what you want to plant, where you can plant it, and maybe start a new bed or re-arrange an existing one. The much-anticipated annual Holiday Home Tour returns to Fernandina Beach’s Historic District.

ive beautiful historic homes will open their doors for the Amelia Island Museum’s 2019 Holiday Home Tour. This year’s tour is December 6 and 7, and includes the opportunity to visit the 2019 Southern Living Idea House located on Crane Island as part of a special package. The five homes in the historic district will be decorated for the holidays by an island designer or florist. Each year, the Amelia Island Museum of History coordinates this much anticipated two-day event that kicks off the island’s holiday season. Now in its 13th year, the annual event raises money to support Amelia Island’s popular history museum. Docents will be on hand to share detailed information about each house. Close to 2,000 people enjoyed last year’s tour.

SOUTHERN LIVING IDEA HOUSE ON CRANE ISLAND Southern Living Magazine’s 2019 Idea House is located on Amelia Island’s Crane Island and will be decorated for the holidays. Its design reflects many of the historic structures in Fernandina Beach’s Historic District that will be open for this year’s Holiday Home Tour. Porches rule. Of the home’s nearly 7,000-square-foot footprint, 2,257 square feet are dedicated to porch space. The house features an open floor plan, four bedrooms, including a main-level master suite, an upstairs bunk room, and a guest suite above the garage. The home design includes a hidden pantry, a mudroom, a wine bar, an elevator, and a nine-foot, bi-fold sliding glass wall in the main living space with waterfront views.

island home 421 NORTH THIRD STREET THE MAIER HOME HOLIDAY DECOR BY HARRIS TEETER FLOWER GALLERY Charles and Kathleen Maier lived in Amelia Island’s Historic District for thirteen years before purchasing their current house on North 3rd Street, where they have lived for another thirteen years. In close proximity to the port and river, the neighborhood has lots of history tied to Fernandina’s boating and shrimping history. Notables that lived on the river include Captain Davis, an innovator in the shrimping industry, and Dee Dee Bartels, one of the few female shrimpers of her time and the owner of four shrimp boats. The heart pine floors, also original, are about two inches thick and were covered with carpet when the Maiers moved in. The walls are also thick, so thick that they did not even hear the wind during the last hurricane. A notable addition from Dee Dee Bartels’s time in the house is the back porch, which was decorated to look like the kitchen on a shrimp boat. Decor in the house reflects the Maier’s love of water. Artwork throughout house carries a nautical theme, including a picture of a lighthouse near their old home in Ohio and pencil sketches of sailboats delicately created by Charles’s grandmother.

204 SOUTH SIXTH STREET THE WINTER HOME HOLIDAY DECOR BY ISLAND FLOWER AND GARDEN Ron and Debra Winter have completely renovated their historic home over the last eight years. The historic home was built in 1903. The original owners sold it to the Haddock family in 1929 for $3,000 (in today’s dollars, close to $44,000). Many notables have made it their home, including Chief Judge H.V. Burgess and former St. Peter’s Episcopal priests George and Kammy Young. The historic courthouse on Centre Street is named for the much-loved and respected Judge Burgess. The Winters enjoyed vacations on Amelia Island and eventually decided to make it their permanent home. Initially, they thought they wanted to be on the beach, but eventually found their current home in the Historic District. They treasure their close proximity to Centre Street with its shops and restaurants. Buying an historic home always offers challenges, and the Winters have had their share. When they purchased it, the century-old home was divided into two separate living quarters, each with its own electric meter. The first challenge: the house needed to return to its original single-family status. The Winters focused on making the downstairs their primary living area with work and play upstairs. island home 432 NORTH THIRD STREET THE THARIN HOME HOLIDAY DECOR BY AMELIA’S TREASURES Katherine and Lew Tharin spent their careers traveling the world before they settled in Fernandina Beach’s Historic District. They knew they wanted to retire to an historic town on the coast. Their home on North 3rd Street fit the bill. The home originally belonged to Harry Johnson, a harbor pilot and one of seven ship captains who lived in the neighborhood at the time. Their views of the river allowed the captains to watch the port and know when it was time to go down to their boats for work. In 2007, the Tharins bought the house and began a long renovation. Four generations of the family helped with the repairs and designs. At one time a boarding house, the house was “a wreck,” needing renovations that lasted more than eight years. Many of the rooms have been reconfigured to open up the house and make it more modern. The tiny kitchen was expanded to become a large, bright room.

223 NORTH FOURTH STREET THE WAAS HOME HOLIDAY DECOR BY THE FLOWER STUDIO AMELIA ISLAND The Waas name is well-known on Amelia Island. Lisa and Joe Waas treasured the family home on North 4th Street and bought it in 1987. They were determined to maintain the historic integrity of the house while making it a comfortable family home. Since then, they have taken care to maintain the historic elements of the 1884 structure. A major change was paint color on the exterior. Dull gray became the distinctive teal and purple it is today. Visitors to this house will see many family heirlooms and interesting collections. When planning for changes in the house, Lisa and Joe knew it had to have a wonderful kitchen. Remodeled in 2008, it is not surprising the kitchen is the couple’s favorite room in the house. The pantry has been remodeled to include Lisa’s extensive china collection, as well as her collection of cookbooks.

island home 11 SOUTH SEVENTH STREET THE KREBS HOME HOLIDAY DECOR BY COASTAL COTTAGE OF AMELIA John and Kathryn Krebs are the fifth owners of their historic home on South 7th Street. Each owner made their own additions and renovations, resulting in a house with seven different ceiling heights. The second floor was so unstable it moved like a trampoline. The Krebs spent the next two and a half years completely remodeling the interior, completing the project in December 2017. The time and care they put into the renovation is evident throughout the home. The extensive remodel reconfigured the first floor. Many rooms were repurposed. The original dining room became part of the living room. The kitchen counters are solid-surface pieces of soapstone, which is consistent to kitchens in 1900, when solid pieces of soapstone or marble were common. The backyard has also been redone. España RESTAURANT & TAPAS Serving favorites like their delicious paella, tapas, and a variety of fresh seafood, Espana offers the authentic flavors of Spain and Portugal in a cozy atmosphere. BY MICHAEL GASS • PHOTO BY WILLIAM RASER

E

spaña Restaurant & Tapas is a food lover’s favorite. The restaurant is set in a beautifully quaint courtyard in downtown Fernandina Beach, and it is overflowing with the authentic traditional flavors of Spain and Portugal. For more than fifteen years, owners Roberto and Marina Pestana have developed a cozy atmosphere, a friendly and knowledgeable staff, and a lovely kitchen garden. The restaurant’s menu is inspired by their experiences traveling across Spain and Portugal. Highlights include a wide variety

of hot and cold tapas, evening specials, seafood, steaks, and homemade desserts. Recently, in the middle of a busy week, I invited my mother to join me for an early dinner to discuss some upcoming events and share some quiet time together. Our server was gracious, inviting, and very knowledgeable. We decided to start the evening with a salad. My mother ordered the Mediterraneo: fresh mozzarella and tomatoes layered with roasted red peppers and drizzled with basil infused olive oil and balsamic vinegar. I really love hearts of palm, so I opted for the Enslada Jardinera: 70 AMELIA ISLANDER MAGAZINE •

fresh hearts of palm and tomatoes tossed in a balsamic vinaigrette with onions, olives, and of course, the heart of palm. Espana is known for their authentic paellas, but after reading over the menu, I wanted it all. I opted to go the tapas route in order to experience as much of the menu as possible, specifically the seafood. I ordered the Pulpo Escabeche and Almejas Borarachas. Mom selected the Cerdos & Higos and the Scallops Ole. We each ordered a glass of Alberino, a Spanish white wine made from grapes grown in northwest Spain. The wine is light, with high acidity and flavors of peach and apricot, and the perfect accompaniment for fresh seafood. Escabeche de pulpo is prepared much like a ceviche, the ingredients are “cooked” in an acidic marinade, without heat. Puplo, or octopus, must be cooked in advance, however, to tenderize it. The flavors were inspired, and the portion larger than anticipated. The Almejas Borrachas, or “drunken clams,” were slightly sweet and served in a savory and delicious white wine broth with onions, garlic, and fresh herbs. Cerdos & Higos is Spanish for pork and figs. At Espana, they are a sweet and tart fig jam with goat cheese and serrano ham on croustinis, a tasty treat. Lastly, the Scallops Ole, fresh diver caught scallops fried in a crispy panko-style crust, sealing in all of their cerulean glory. I always save a little room for dessert, but tonight we hesitated because we each had more work to do before the evening ended. However, when our server tempted us with Espana’s creamy, delicious Flan, I couldn’t resist. We toasted the last of our wine and lingered a few moments longer over the last of our dessert before it was back to the real world and its waiting responsibilities. Some of España’s other must-have offerings include their Sangria, their fabulous paella, and their wonderfully varied entrees. Be sure to make a reservation, especially on weekends and holidays, as España is very popular. Espana is located at 22 N. 4th Street in downtown Fernandina Beach. How to

Brine a Turkey BY KAREN MILLER

M

y brother, Keith, taught me how to brine a turkey several years ago, and I’ve never gone back to my traditional turkey recipe. My brother lives in Texas, where everything is big —big skies, big ranches, big flavors, and big appetites. His Thanksgiving dinner is his biggest yearly event. He invites everyone in his neighborhood, and the cooking and partying goes on for days. The turkey-brining is all part of the process for the big feed, which begins Monday before Thanksgiving when he prepares gallons of brine in order to cook several turkeys. Usually he deep fries his turkeys after two days of brining, but he’s had great success roasting and smoking his brined turkeys, too. And they are truly delicious!

Keith’s key to success is to make the brine on Monday and let it cool in the refrigerator overnight. On Tuesday, he removes the giblets from the turkey, places it in a large pot, pours the brine over the turkey, then puts the pot into the refrigerator for two days. When the turkey comes out of the brine on Thursday, he then cooks the turkey as he would any turkey. I think his fried turkey is the best, but you can roast or smoke the turkey, too. The brine keeps the meat moist and the skin gets extra crispy. The following recipe is for 1 gallon of brine. For a 12 lb. turkey, you will need approximately 2 gallons, so it’s best to make extra, especially if you have a large turkey. You can also use this brine recipe for chicken or pork.

To make the brine In a large pot add the following: 1 gallon water 1/2 cup sea salt 1/2 cup Tony Chachere’s Creole Seasoning 1/4 cup ground cayenne pepper 2 tbsp. ground black pepper 2 tbsp. ground rosemary 2 tbsp. ground thyme 2 tbsp. ground sage 1/2 cup sugar 1 cup honey 1 bottle dark molasses Preparation Bring the mixture to a boil and stir to make sure all the ingredients are blended and dissolved. Refrigerate the mixture overnight or until it is very cold. Place chilled turkey in a large stock pot and pour the brine over it, then place the pot into the refrigerator for two days. To cook, remove the turkey from the brine, rinse lightly, pat it dry, then cook it as you would normally would. When the turkey is done, the molasses in the brine will give your turkey a deep rich brown color, and it will be more moist and tender than you’ve ever had! Keith suggests deep frying your turkeys outside in order to free up space in your oven for all the side dishes like casseroles and pies. He also claims that turkey frying gives men something to do other than sitting around in the living room. A cooler of beer near the turkey-frying station is an added incentive.
