A few years ago, our December cover story featured stories of how local people celebrate at Christmastime. Many people opened up their scrapbooks to share with us their family’s traditions, from sandcastle Santas to annual Christmas concerts. Indeed, so many of our most memorable moments in life are connected to celebrations and holidays, particularly at Christmas. Many of those old Christmas memories are recorded in photos. Photos of our children sitting on Santa’s lap, smiling—or screaming, as the case may be—have become family favorites that we look at each year. The annual Saint Michael Academy Santa’s Tea is one favorite memory—Mom gets to enjoy a hot cup of tea, while one of Santa’s helpers reads Christmas stories to the pre-schoolers and kindergarteners. For those of us who are too big to sit on Santa’s lap, the holidays are an important time for sharing. We acknowledge friendships and loved ones through gift-giving or Christmas or Hanukkah cards, and sometimes we even share that holiday spirit beyond our immediate circle of family and friends. By sharing our time, talents, and resources with others in the community, we acknowledge perhaps most appropriately the ultimate gift given to us by our Creator, sharing our very lives and abilities. So, this year, we decided to go in search of some special ways of sharing with others in our community. Dickie Anderson, who wrote this month’s cover story, has that innate writer’s capacity for unearthing interesting stories, and she didn’t have to look far for this month’s cover story. Of course, this article merely scratches the surface of the important ways in which people share their talents, and we are privileged to spotlight many of those important initiatives and organizations throughout the year. For sharing the good cheer this month with the generous host or hostess of your next holiday party, turn to our Island Entertaining column, where Karen Miller has some terrific ideas for homemade gifts, right from your own kitchen. And we also feature one of the most beloved architectural treasures of the historic downtown: the Bailey House. So many Victorian-era homes from the Historic District form the visual backdrop for our lovely seaside village. To explore some of this magnificent architecture, look for Dickie Anderson’s new book, Great Homes of Fernandina, with beautiful photographs by Jan Johannes, featured this month on our Everything Amelia page. CHRISTMAS MEANS SO MANY DIFFERENT THINGS, BUT, MOST OF ALL, IT IS ABOUT SHARING with family, friends, and those in need. Amelia Island and Nassau County have many wonderful traditions and great ways to celebrate the Christmas season each year.

Sharing With Others Many churches, service clubs, and families reach out every Christmas and make sure everyone—no matter how needy —will be able to celebrate Christmas. Joy to the Children, one of many special outreach projects, creates Christmas for disadvantaged Nassau County families. This year, 140 children will gather on Christmas day at Yulee High School for Christmas dinner, gifts and toys, caroling, and a visit from Mr. and Mrs. Claus. The special event has come to mean Christmas not only for the children and families that benefit from it, but for those volunteers who may not have family close by and are able to share Christmas day together. Joy to the Children, now in its eighteenth year, works with eighteen other agencies, including the Nassau County School Board, Micah’s Place, Sutton Place, the Department of Children and Family Services, and a host of others. Organizers are careful not to duplicate what other programs may be doing for the holiday for needy families. Dawn Grant, longtime board member, encourages people to get involved. There is always a lot to do, not only on Christmas day, but to prepare for it. For instance, each special gift has to be shopped for and gift wrapped. For more information, or to volunteer, visit www.joytothechildren.org. Mickey and Gayle Ulmer, owners of Sonny’s Barbeque, make tremendous contributions to the community in many different ways. The year that the Ulmers bought their restaurant, they approached the Nassau Volunteer Center and offered to provide Thanksgiving dinner to those less fortunate. It started with a half-dozen names, and they gathered family and friends and cooked and delivered dinner to families in the community. Each year, they served more and more, partnering with the Council on Aging, Barnabas Center, Community Action Center, and Hope House. The Ulmers also celebrate Christmas in July, which benefits Toys for Tots, a program coordinated by the Marine Corps League. Santa dresses in Bermuda shorts and guest servers donate their time to serve the public, with all the tips going to the Toys for Tots program. They currently work with the Salvation Army’s Hope House providing hot dinners to the homeless. Mickey and Gayle began working with Joy to the Children ten years ago, first as volunteers, with Mickey in the kitchen and Gayle as a table angel. Gayle served on the board for three

years and helped organize the kitchen committee. In addition to Sonny’s contribution, turkeys are also donated by The RitzCarlton, Amelia Island and Omni Amelia Island Plantation.

Starting at Thanksgiving, Amelia Island and neighborhoods in Nassau County come alive with lights. Children delight in hopping in the car to find the most wonderful light displays. One tradition of the holidays that everyone looks forward to is the lighting of the 80-foot Christmas tree next to Roy Byrd’s State Farm Insurance Agency office, just off-island on SR 200. Since 1999, the Freeman Well Drilling Company has partnered with Byrd to create the tree. The Freeman family honors their mother, Maude, who always wanted to use the drilling rigs to create an enormous tree. The angel on top belonged to Mrs. Freeman. Each year, a new “toy” is placed under the tree, joining the bicycle, sailboat, helicopter, snowman, and Santa with reindeer from years past. If you are searching for the most creative and imaginative Christmas trees, stop at Artistic Florist’s new location, located on Park Avenue where KP’s Restaurant used to be. Brooke Raulerson, owner of Artistic Florist, is celebrating this holiday season in her brand new space across South Fourteenth Street from her original location. Visiting her new shop is like entering a winter wonderland, with trees of every imaginable color and

Music is so much a part of the holiday season. It just makes people feel good to sing and to listen to those songs that bring back memories of times past. Jane Lindberg brought together a group of women who like to sing in January 2006 and christened the group “The Songspinners.” She started with 16 singers, and now the group numbers 52. The Songspinners have been offering holiday concerts to the community for more than six years and perform at Savannah Grand, Quality Health, the Council on Aging, New Vision Congregational Church, Memorial Methodist Church, First Presbyterian Church, as well as a number of community service clubs. Christmas caroling is a wonderful tradition and a variety of groups gathers to share their singing talents. One service club, the Rotary Sunrise Club, hops on the Amelia Island Trolley and rides around the island caroling for island seniors.

size. The prize-winning florist is in high demand during the holiday season. She decorates homes for Christmas and, best of all, comes back to pack it all neatly away! Raulerson sees a new trend for holiday decorating, which uses very traditional decorations, but in new and different colors. Think lime green. Floral décor has also taken a modern direction, with unexpected additions to traditional decorations. Larry Miller, owner of Island Flower and Garden, is known for his highly individualized decorating talents. He decorated one of the featured homes in this year’s Amelia Island Museum of History Holiday Home Tour. Beautiful fresh flowers were used in the dining room and in front of the fireplace. In other rooms, Miller preferred to use living plants with some additions to make them festive. A live plant will last through the holiday season, and special touches like artificial berries or ribbons can be saved for other years. The plants continue to be decorative after the holidays, or they may be ready to plant in an outside garden area. If Miller uses the ever-popular poinsettia in his holiday decorating, he likes to mix it with living plants like a fern or ivy to compliment the bright red foliage of the traditional plant. Even the cats and dogs get their own Christmas tree this year. Hot Paws, a popular grooming and boarding spot for pets on South Eighth Street, has a tree just for cats and dogs. They are asking people to bring items that will be donated to the Nassau Humane Society. The shelter needs towels, blankets, cleaning supplies, and collars and leashes no longer being used. A 34-foot Christmas tree and illuminated creatures make a festive scene at The Shops of Amelia Island Plantation. The Nature Center will offer crafts similar to Santa’s Workshop in the Nature Nook daily from 10 a.m. to 4 p.m. On Saturday mornings, Amelia Farmers Market is sure to offer special holiday offerings and gift ideas. If all the shopping begins to stress you out, don’t forget to check with The Spa at Omni Amelia Island Plantation and The Spa at The Ritz-Carlton, Amelia Island, which both offer holiday specials to help reduce the stress of the season.
Cooking The holidays send many to the kitchen to bake traditional recipes to share with family and friends. Debbie Lott offers cooking classes at her Amelia River Cooking School. Now in its second year, the school offers small intimate classes in Lott’s riverside home. After retiring from a professional nursing

career, Debbie began her culinary education, earning her grand diploma from the Western Reserve School of Cooking. In addition, Lott owned her own catering company, Butterfly Capers. She offers several classes each month. During the holidays, her classes include one on Christmas cookie baking. A variety of traditional cookies are prepared, including praline thumb print cookies, cut-out sugar cookies, raspberry shortbread bars, and chocolate cracker caramel bars. During the holidays, a small Christmas tree in her kitchen has a collection of ornaments with a cooking theme.

What is Christmas without Santa Claus and Mrs. Claus? Nassau County children always look forward to meeting the jolly couple, who may appear at any number of places on and off the island. Santa may arrive in a fire engine, as he does each year in Nassau County. Volunteer fireman from Hilliard and Callahan bring special delight to area children as they drive through neighborhoods with Santa waving. Marilyn Riegler looks forward to Christmas at The RitzCarlton, Amelia Island. When she goes to work, she gets to dress up as Mrs. Claus, one of the holiday’s favorite characters. Starting in 2000, Riegler has donned a red velvet dress, white apron, and a curly wig and cap to transform herself into Mrs. Claus for hundreds of youngsters at the elegant RitzCarlton, Amelia Island. “The excitement and awe I witness on the children’s faces are priceless,” shares Riegler. The RitzCarlton, Amelia Island celebrates many traditions that enhance Chrsitmas on the island, beginning with the traditional lighting of the 50-foot Christmas tree on the back lawn of the resort the Wednesday before Thanksgiving. The community is invited to watch the lighting, enjoy refreshments, and welcome Santa Claus. Stepping into the lobby of the hotel during the holiday season, the aroma of gingerbread teases and visitors are greeted by an enormous creation all made out of freshly baked gingerbread. Each year, the design is a surprise. The chefs are quick to share the recipe. All you need are: 3,000 eggs, 435 egg whites, 1,200 pounds of flour, 900 pounds of sugar, 300 pounds of shortening, 15 gallons of milk, and 14 pounds of ginger and other spices, as well as a lot of patience and talent! So, once again, Amelia Island and Nassau County will celebrate old traditions and enjoy new ones. As always, everyone will find a special way to share and celebrate the holiday, and welcome the New Year.

GREAT HOMES OF FERNANDINA PREMIERS ON AMELIA ISLAND Local author Dickie Anderson has released her newest book, Great Homes of Fernandina: Architectural Masterpieces from Amelia Island’s Golden Age. The soft-cover book, published by Sweetpea Media, Inc., publishers of the Amelia Islander Magazine, features 22 houses in Fernandina’s Historic District. Detailed descriptions highlight architectural details and the histories of the original families who built and lived in the homes. Historian Jan Johannes took the photographs for the book. Adrienne Burke, Preservation Planner for the City of Fernandina Beach, and Ron Kurtz, lecturer, historian, and former director of the Amelia Island Museum of History, contributed introductions. A map with a suggested driving tour of the Great Homes is included. Dickie Anderson is a columnist, freelance writer, and lecturer, as well as a trained docent at the Amelia Island Museum of History. “OVER THIRTIES SOCCER” ON AMELIA ISLAND
THE SURF RESTAURANT UNDER NEW OWNERSHIP The Surf Restaurant & Bar is one of Amelia Island’s favorite eateries and beach bars, for locals and visitors alike. So when George and Barbara Sheffield saw that its future was hanging in the balance, they decided to step in and purchase the property. “We love the Surf,” says George, who acquired the business with his wife, his son Wes, and business partner, Bill Childers. “We have always had an interest in legacy properties. And the Surf has been around since 1959, when it first opened as a motel and restaurant.” The Sheffield family also owns the Palace Saloon and Hammerhead Beach Bar, plus numerous other properties. Because they have been in the hospitality business for a long time, the Surf is a natural fit for them. At present, the new owners are refurbishing the indoor dining area, changing the menu a bit, and taking their time to make the Surf their own, while maintaining the integrity of the restaurant’s history and reputation. Excited to have taken on the challenge, George is feeling positive about the restaurant’s future. “We wanted the Surf to stick around,” he says. “Actually, we want it to be around forever.” PHOTO BY WILLIAM RASER
If soccer is your game, then Paul Wetherhill probably knows your name, along with your particular footwork and skills. Wetherhill has been coaching for the Youth Soccer Association on Amelia Island for two years. A native of England who has played soccer his entire life, Wetherhill thought it might be grand if grownups could get into the game, too. He initiated a group known as “Over Thirties Soccer,” a band of soccerplaying men and women who meet every Sunday morning at the Bailey Road fields, and the response to his idea has been overwhelming. “We have 30 to 40 people who show up every Sunday at 8 a.m. to either play a full game of soccer, or to watch it. Soccer is great exercise, and a nice social experience,” says Wetherhill. Wetherhill’s group consists of players such as Johnny “Bites Yer’ Legs” Funch, a solid midfielder who supplies the soccer balls every week, and Casey “Killer” Cheche, who controls the right defense and knows exactly when to make a tackle, as well as, Jim “Bobby Dazzler” Runyeon, and Edward “The Power” Preble. ileen Shannon-Moore is a bundle of energy whose creativity gathers force in her gallery and workshop on Centre Street in downtown Fernandina, then spills out into the community in unique ways. Besides painting her way across the state of Florida, ShannonMoore founded the original Fernandina Farmers Market, the Amelia Island Chamber Music Festival, and most recently, an upgrade for downtown called Flowering Fernandina. Eileen’s Art & Antiques began with a friend back in 1999, and has metamorphosed into an eclectic and interesting gallery that features local art, home goods, gifts, jewelry, and handmade crafts. A portion of the artist’s building is home to Trailer Park Collectibles, plus several other antique dealers and artists, a good fit for her own shop, which draws thousands of visitors every year. Shannon-Moore began painting in acrylics in 1972 and spent many years showing her work at shows throughout the South, before settling down with her own gallery. But what brings the artist the most pleasure is making merchandise to sell at the shop, including lamps, mirrors, and seasonal items like
Christmas ornaments. Her storefront is bursting with unique and unusual handcrafted gifts and home accessories, many that celebrate the essence of Amelia Island’s coastal beauty, using natural and reclaimed items, from seashells and driftwood to metal and old windows. “We’re always looking for things we can make other things out of,” explains Shannon-Moore. “We have so many items that nobody else carries because we make them ourselves.” The “We” she speaks of is her partner, Bill Ratliff, and also her husband, Stewart Ira, both talented artists. “We have so much fun at our shop; we’re always doing something, making something, coming up with new ideas.” Shannon-Moore’s latest project, Flowering Fernandina, is always at the forefront of her daily activities, as she encourages local folks to contribute time or money to create floral baskets to grace the downtown area. She’s currently using her creative energy to acquire a golf cart to make all the watering easier on the volunteers. A
fter 25 years of moving around the world and throughout the United States, Patty and Rodrigo Villanueva thought it might be nice to settle down in Fernandina Beach. Rodrigo’s career in international business allowed the family, which includs four children, to experience many interesting places. But a visit to Amelia Island made them realize this was to be their permanent home. “What sparked the idea for Budget Blinds was that when we built a home with a local builder, it was a fantastic experience,” says Patty. “I was hooked on home décor, and realized that was my passion.” But, during the building process, the couple noticed they had to travel to Jacksonville for just about everything they needed, including their window treatments. A little frustrated with the drive, Patty told her husband there was a business opportunity here. With Rodrigo’s business background, and Patty’s love for home decorating, the couple founded Budget Blinds of Amelia Island. “We literally bring the showroom to you,” says Patty. “You can shop in the comfort of your own home, as all of our products are custommade.” Patty goes on to say that most customers have a good idea of what they want their windows to look like, but don’t know where to go. Budget Blinds has window coverings to fit everyone’s budget. ix years ago, Michele and Chris Herron opened a needlepoint store named the Bristly Thistle in Michigan. Four years later, a friend suggested they open a store in Fernandina Beach. Driving into the Historic Downtown area, it was love at first sight. After running both stores for a short time, they realized they wanted to live in Fernandina Beach full-time. Their “little” needlepoint shop on third Street is now one of the top five Internet needlepoint businesses in the nation. “We have the most wonderful, dedicated customers, from all over the world,” says Michele. “We ship to Europe, Africa, and many other places.” Michele’s love for needlepoint began when she was young, and it has grown as the craft has grown. “There are so many types of threads and stitches nowadays, and different embellishments, like sequins and beads. No two needlepoint pieces are ever the same.” Bristly Thistle’s needlepoint canvases are all painted entirely by hand, by artists from all over the country. “It’s all about bringing the creative process to life,” says Michele. While Michele is wrapped up with the creative processes of writing stitch guides, teaching classes, and creating her own pieces, her husband Chris works on publishing the stitching instructions, maintaining their website, shipping orders, and working in the shop. T
he Bailey House is considered one of the most outstanding examples of a Victorian home in the state of Florida and it remains a favorite subject for both photographers and painters. It is one of many “bride houses” on the island. In the Victorian era, it was customary for a bride to receive a new home upon her marriage. Effingham Bailey built the beautiful house on the corner of Ash and Seventh streets for his bride, Kate MacDonald. The Bailey House is a fine example of Queen Anne architecture. Its design features a wide variety of architectural elements. It is a feast for the eyes with its contrasting colors highlighting gables, turrets, windows of all sizes and shapes, and unique fish scale shingles. Like many of the Victorian homes in the Historic District of Fernandina Beach, local craftsmen, many of them ship builders, contributed their talents to the home, which was completed in 1895. Effingham Wagner Bailey was born in Charleston, South Carolina in 1866, attending public schools in Charleston and then the Porter Military Academy. He was not yet fifteen when his father died. A job with the Clyde Steamship Line brought him to Fernandina. When the steamship company left the island, Bailey joined the Florida Central and Peninsula Railroad. Bailey was extremely entrepreneurial and he helped build the island trolley and the 34-room Keystone Hotel. He was also a prominent member of St Peter’s Episcopal Church.
Kate Bailey was the daughter of Augustus O. MacDonald, resident manager of the Florida Railroad, and granddaughter of Alexander Harrison MacDonald, who was born on Amelia Island in 1809. The family’s property was known as the Harrison Plantation, and it is now known as Mt. Hope. Kate’s parents gifted the young newlyweds with the property that adjoined theirs on Seventh Street. Kate chose a design by George W. Barber, a popular architect of the day. In its time, the house was considered the height of opulence with its one bathroom… indoors. When it was converted into a bed and breakfast inn, it required many changes, including additional bathrooms! The Bailey family owned the house for seventy years. When a grand old oak tree adjacent to the house on Ash Street was threatened by a paving project, Kate Bailey sat on her porch with a shotgun in her lap threatening anyone who might want to take down the tree. It remains a picturesque challenge to traffic in the middle of Ash Street between Seventh and Eighth streets. In 1982, the Bailey House was converted to a bed & breakfast inn. Eventually, an addition to the left of the front entrance was added, and it can hardly be distinguished from the original house. The Bailey House is now a private residence again.

Off Your Shoulders The right treatment for shoulder pain will help you get back to your busy life.

H
ave you ever had shoulder pain after you did too much— like washing all the windows in one day? Have you ever reached for a tennis shot and felt a tearing sensation in the shoulder? Has your shoulder ever frozen up and lost motion for no apparent reason? If so, you can appreciate the shoulder’s normal function. The shoulder is basically a ball and socket joint with a very shallow socket, which allows motion in multiple directions. A capsule surrounding the joint is normally large and loose to allow motion. The capsule is surrounded by the rotator cuff muscles. These muscles allow you to reach your arm up over your head, out to the side, and around your back. A roof of bone which sits over the top of the shoulder joint is known as the acromion. The most common disorder of the shoulder is tendinitis or bursitis. Overuse injuries such as window washing can cause inflammation in the tendons or tendinitis. There is a bursa—sack of fluid—that sits between the acromion and the tendons, and this often becomes inflamed causing a bursitis. An inflamed shoulder can be very painful with activities which require reaching overhead or behind your back. A more acute injury can cause tearing of the rotator cuff. When the rotator cuff is torn, there is normally sudden pain and you may not be able to lift your arm above your head. Rotator cuff tears limit your ability to do your daily activities and may keep you awake at night. A frozen shoulder occurs when the capsule surrounding the shoulder becomes thick with scar tissue. When the capsule becomes thickened, it does not allow normal shoulder motion. Some people remember an injury, but often it starts for no apparent reason. All shoulder disorders are first treated by decreasing inflammation with rest, ice, and anti-inflammatory medications. A steroid injection into the bursa over the rotator cuff tendons, or in the shoulder joint in the case of a frozen shoulder, can give immediate relief which lasts one to three months. Once the inflammation settles down, range of motion
and strengthening exercises can be performed. It is important to strengthen the rotator cuff muscles and all of the muscles that surround the shoulder joint so that the pain does not recur when the injection wears off. The good news is that most shoulder pain resolves with the above treatment. If the pain continues or if the rotator cuff tendons are torn away from the bone, arthroscopic surgery may be needed. The arthroscope allows an orthopaedic surgeon to see the inside of the shoulder joint. The bone spur, thickened capsule, and torn rotator cuff tendons can be identified and treated.
The bone spur can be removed using a tiny burr. This allows more room for the rotator cuff. Partial thickness tears or a thickened capsule can be debrided (cleaned up) using a tiny shaver. A completely torn rotator cuff can be reattached using sutures attached to anchors placed in the bone. All of this work to repair the shoulder is performed through small pokeholes in the skin. Physical therapy and home exercises are performed after surgery to regain motion and strength. Approximately six months after surgery, you are ready to return to your tennis game, or to washing all those windows with a renewed vigor.

gardening gifts There are many fun gift ideas—and new plants— for the gardener on your list.

T
he hustle and bustle time of the year is upon us again. Garlands and ribbons, wreaths, and holly, all go along with picking out the perfect tree for the traditional Christmas celebration. The tantalizing smell of cookies and other goodies baking in the oven, wrapping paper, and decorations remind us of how wonderful Christmas celebrations can be. It’s time to think of presents to exchange with family and friends. I love to receive gifts for my garden, and there are lots of great ideas for the gardener on your list. A gift card from a local garden center, a new plant or garden tool, or seeds and cuttings from a friend’s favorite plant make special gifts. How about a subscription to a gardening magazine or a book on special plantings for our area? Just put a sprig of holly and a bow on it, and you have a gift for your garden-loving friend. And don’t forget gardener’s soap or hand lotion, and even bug repellent! There are more new plants I want to share with you for your garden, but because they are new, they won’t be in the nurseries until spring. However, you
TIP O F T HE M O N T H When purchasing a fresh Christmas tree, make sure to cut about an inch or so off the bottom and put the tree in a bucket of water as soon as possible. Mist the tree daily and make sure there is plenty of water in the bucket. When you are ready to take the tree into the house, cut another inch or so off the bottom. Keep the stand filled with water. Remember these trees were cut months ago and are already getting dry.
might want to look for the ‘Soft Caress’ Mahonia (Mahonia eurybracteats). The ‘Soft Caress’ provides great texture to the typical shade garden. In early winter, bright yellow flowers stand out amidst the slender, bamboo-like leaves, giving the appearance of fingers of light. This shrub is perfect for the Asian garden or as a specimen. ‘Soft Caress’ is an evergreen plant which is hardy to zero degrees Fahrenheit. It gives year-round interest and is considered a dwarf as it only grows to three feet tall and to threeand-a-half feet wide. Its growth rate

is moderate. You can shape this shrub in winter, if needed. Plant it in welldrained garden soil and water only as needed. Another very attractive new plant is the Abelia Confetti. Small pink, white, and green leaves adorn this shrub, which makes it a really striking plant for your garden. From mid-summer to fall, it produces small fragrant white flowers. Abelia Confetti would make a wonderful hedge or accent plant, as it is compact and only grows to three feet tall and three feet wide. This plant should be available in the spring. It can be planted in full sun. The Angyo Star has large, variegated, rich green leaves with creamy white borders. They grow five to six feet tall and about four to five feet in width. They will grow in part shade to full sun. I will give you more particulars on this and other plants in the next issue of the Islander. for the

he Holiday Home Tour, sponsored by the Amelia Island Museum of History, is the inaugural event of Fernandina Beach’s festive Christmas season. This year’s tour, held November 30 and December 1, was one of the island’s most anticipated occasions of the year. Featuring five beautifully restored vintage homes in the Historic District, the home tour drew over 1,000 visitors, who couldn’t wait to take a peek into some of the island’s most beautiful and interesting dwellings, especially decorated for the holidays by professional designers and florists. One of the houses showcased in last year’s Home Tour was a lovely Victorian, located on Beech Street and owned by Chris and Beth

A formal dining room features staggered pedestal candle holders that have been fitted with little Christmas trees. A “partridge in a pear tree” theme graces the table with decorative gold pears, along with partridge place cards and embroidered linen napkins.
Nelson. As the couple spends a great deal of time in Atlanta, they were happy to open their home to Donna Haddock and Dolores Lord of Designing Women of Amelia. The creative pair came up with not only a decorative theme for the home, but also the “fictional” family who most likely lived there during Victorian times. “The challenge was to be very period-specific, and to keep with the integrity of the era,” says Haddock. “We wanted to make sure that our designs and ideas were what the owners would have liked.” Indeed, their “family” gave personality to
every room and each decorative piece that went into the home. Using the Nelsons’ existing furniture, the designers worked around the house’s best features, which included a grand formal living room with an elegant fireplace and a superb master bedroom, as well as high ceilings and tall windows with carved molding throughout. Haddock and Lord even researched the toys that would have been found beneath the Christmas tree and the ornaments that they hung from the Victorian windows. The pair created place cards for the dining room table, the garland draping in

Everywhere you look, Christmas is found in unexpected places: an herb wreath placed on the bed, a Victorian Santa tucked in the corner of the room, fresh garlands over the window casings, and a set of three framed pictures that spell out “JOY”.
the upstairs bedroom, and the wooden picture frames that spelled out “JOY” over the bedroom’s fireplace. Letters to Santa were taped up on the children’s bedroom doors. A silver tea set placed in the master bedroom and floral touches throughout the home brought the home back to its Victorian roots. “There was incredible detail in that home,” explains Haddock, “so that everywhere you looked you would see Christmas in unexpected places.” Haddock goes on to say that the warm lighting they added brought a sense of hospitality to their Victorian Christmas, and that the two designers worked handin-hand, designing and searching out just the right items for their Victorian “family”. 44 AMELIA ISLANDER MAGAZINE • DECEMBER 2012
Jennifer Harrison, chairperson for the museum’s Holiday Home Tour, is excited about how the tour has grown over the last six years. “I feel that the most interesting and exciting things about this year’s Home Tour is how different the house styles were, both inside and out. They ranged from a magnificent homes in the Silk Stocking District to a beautiful family home that was literally saved from the ashes—each very different.” The Holiday Home Tour provides a truly creative outlet for the designers, and Haddock, who designed another home on this year’s tour, is looking ahead to 2013. “While I was decorating this year’s house, I was already thinking about new ideas for next year’s tour!”

Horizons Offering the best in continental cuisine, Horizons delights Amelia Island diners time and again. BY KAREN MILLER • PHOTO BY WILLIAM RASER
H
orizons is a delightful restaurant to visit any time of the year, for lunch or dinner. Chef Courtney Thompson cooks up all my favorites with style and creativity, for what I consider to be true continental cuisine. Recently, my friend Bruce and I dined at Horizons, and, as usual, our meal was perfect. We were greeted by Mel, one of my preferred island servers, a knowledgeable and expedient woman who has been with Horizons since day one. She recommended we try a Mediterranean white wine called Rene Barbier, which was light and crisp with a flowery aroma. Mel brought out a basket of Asiago Rosemary Bread with homemade herb butter to nibble on while we checked out the menu and specials. I was eager to try some of Chef Courtney’s new menu items, beginning with Grilled Asparagus and Shrimp with Bleu Cheese Risotto. An appetizer, this dish is practically main-dish delicious. The shrimp were lightly seasoned with a citrus blackening rub, so it was flavorful, as well as rich and creamy. We also ordered Horizon’s newest salad: mixed greens with dried cherries, bacon, pear tomatoes, and crumbled goat cheese. Everything about this salad is wonderful and fresh, but the smoky bacon
added some real depth. The homemade sherry vinaigrette was crisp and acidic and quite nice. We tried another wine to pair with our entrees: Fess Parker Cellar Reserve, a red blend that was full-bodied and paired wonderfully with my dish, Horizon’s Roast Rack of Lamb. Bruce ordered the special that night: a Hawaiian Sunfish fillet, which was served with rustic mashed potatoes, ratatouille vegetable medley, avocado salsa, and chardonnay beurre blanc. The special was fabulous, with the fish mild and moist, and almost buttery in taste. And the beurre blanc brought the dish to a new level of richness. But, for me, the lamb was out of this world. Pink and juicy, it was also served with rustic mashed potatoes. It was tender and juicy, and I especially loved the Dijon crust and rosemary au jus. With the rustic mashed potatoes and mint jelly, it was reminiscent of a very special holiday meal. Horizons’ portions are very bountiful as well, and I was happy to take home the leftovers for the next day. Here’s a vital tip when dining at Horizons: be sure to order your dessert ahead of time, especially if you want their soufflé. It takes a while to prepare, so if you order it when you order your meal, it will be ready at just the right time. That evening the special was Raspberry White Chocolate Souffle, which Mel brought out for us to share. To serve, she poked a hole in the top and showed us how to pour some crème anglais into the soufflé before eating. Oh my goodness, what a treat! And I do believe that Horizons is the only restaurant on the island that not only makes dessert soufflés, but also excels at them. Horizons offers a lot of extra dining amenities, like custom menus for parties and full-service catering. They have a lovely room upstairs for private events and they also do off-site events for any amount of people. The restaurant is charming, quaint, and what I consider one of the best on Amelia Island.

Homemade Soft Goat Cheese This is even easier than baking brownies. You’ll need a candy thermometer, though, as well as some cheesecloth and small ramekins. Be sure to include a package of gourmet crackers to go along with the goat cheese. Ingredients 2 quarts goat’s milk 2/3 cup freshly squeezed lemon juice Sea salt Preparation Heat the goat’s milk gently in a non-reactive pot, stirring constantly until it reaches 185 degrees. This step is essential. Remove from heat, add lemon juice, and let sit for 10 minutes or until the milk curdles. Pour into a colander that has been lined with 2 layers of cheesecloth. Gather the cheesecloth around the mixture and secure it with an elastic band. Hang the bundle over another large bowl or over the sink for about 2 hours until no more liquid comes out. Place the soft cheese in a bowl, add salt to taste, then pack it into four small ramekins and cover with plastic wrap. Refrigerate until gifting time.

his is the first year I have decided not to do any entertaining for the holidays. After 12 years of being in the food and catering business, I am more than happy to spend the holiday season attending other people’s parties! That does not mean I’m off the hook for cooking, however, because there is another important component of holiday party-going that must be addressed: the hostess gift. If you think a suitable hostess gift is a bottle of cheap grocery store wine or a candle, then all you need to do is peek into your friend’s wine rack and see your bottle from last year, or the hundreds of votive candles that fill her (or his) side cupboard. This year, how about bringing a creative, homemade gift from your very own kitchen? The following recipes are items you can make in advance and use for several parties. Another suggestion on hostess gift etiquette is to be sure that the gift is saved for the hostess herself, and not put out on the appetizer table. Every great hostess needs kudos and treats. After all, you want to ensure that she holds another one of her glorious parties next year! Happy Holidays, and happy giving!

The Aztecs were the first to add spices to their chocolate. The heat from the red pepper adds a new dimension to this favorite cold weather beverage. The key to this recipe is using Nido brand powdered milk, available in the Latino section of any grocery store. Ingredients 4 cups Nido powdered milk 1 ½ cups sugar 1 cup good cocoa 1 cup semi-sweet mini chocolate chips 1 cup non-dairy powdered coffee creamer ¾ tsp. cinnamon ¾ tsp. cayenne pepper (more or less to taste) Preparation Mix all ingredients in a bowl with whisk until thoroughly blended. Pack into pintsized canning jars. To make hot cocoa, use 3 to 4 tablespoons for each mug of boiling water.
