At this time of year, we like to highlight the various ways that people on Amelia Island celebrate the holidays. In previous years, we have featured sandcastle Santas and Christmas concerts, and the often unsung work that so many on Amelia Island do at Christmas to help the less fortunate share in the joy of the season. Christmas is a time for sharing, and when we give our time and treasure to those in need, we gratefully acknowledge the many blessings we ourselves have received. We feel fortunate to have highlighted the work of organizations such as Joy to the Children, an invaluable group dedicated to ensuring that every child knows the joy of a new toy meant just for them. They, and many others like them, remind us not to get preoccupied with shopping lists and blinking lights, but to keep our focus on the heart of the season. This year, we went in search of the smaller, personal ways some of our Amelia Island neighbors celebrate the holidays and discovered how little holiday customs that start small can often become meaningful traditions in our holiday celebrations. Some of these traditions involve religious services, where the true meaning of the holiday season is found, and include children’s Christmas pageants, choir concerts, and various other events. In this month’s cover story, Karen Miller writes about a couple of families that have sung in the choir, watched each other’s children in the Christmas play, and enjoyed Christmas Eve dinner together for many years. Karen also found families that enjoy the wonderful tradition of Advent calendars and use them to lead children into sharing with those in need, as well as a couple that mixes Hanukkah and Christmas traditions and a family that finds some treasured time together each year on beautiful Cumberland Island. Also in this issue, our Island Entertaining offers colonial and Native American dishes that will add great flavors to your holiday table this year, as well as a Fernandina Faces column on Dr. Neal Coleman, a retired cardiologist who is an accomplished artist and supporter of the arts; an article on Omni Amelia Island Plantation Resort’s outstanding tennis program; and much more. Also this month, we are so happy to include a special section on the 2014 Amelia Island Book Festival, scheduled for February, which we hope will serve as a guide to help you celebrate and explore the written word at the festival. t’s beginning to look a lot like Christmas on Amelia Island! The leftover Thanksgiving turkey has long been consumed, the tree-lighting ceremonies have been held, and the downtown merchants have kicked off the shopping season with their annual pajama party sale. The historic bed & breakfast inns are decorated with garlands and greenery, Salvation Army volunteers are ringing their bells, children are trying their best to be as good as possible, and local businesses are bustling with cheerful shoppers. Churches are preparing for their pageants and special services, and Amelia Islanders are doing what they do best—enjoying their beautiful island paradise.

FAMILY TRADITIONS

Burns, Roac h, & McCall Fa milies

The Burns, Roach, and McCall families met at St. Peter’s Episcopal Church many years ago. The three families found themselves involved in many of the same activities within the parish, and their children were close in age. The group began a tradition of getting together on the afternoon of Christmas Eve for a simple family dinner, before heading over to St. Peter’s for the Christmas Eve service. That was twenty-five years ago. Back in the early days, Pat Burns worked at St. Peter’s as the parish administrator. Liz and Early McCall sang in the choir with Joanne and Dan Roach. When their children were little, they all participated in the Christmas pageants. The families would sit together in the sanctuary during the pageant service, then the adults would sing in the choir at other services. Christmas Eve was a busy night for all three families. Their afternoon dinner would give the group a chance to slow down a little, enjoy each other’s warmth and friendship, and share gifts and fond memories. Many times the families would invite others to join the fun. Each year was a little different. “We always have a simple meal before the services,” said Liz. “We would have soup and salad. We would take a photo of all the kids, and some of all of us together.

Then we kept the photos in a special photo album.” The three families also exchanged gifts. Joanne Roach made a special pillow for each family each year they were together. During the holiday season, the families display their pillows, bringing back memories of that year’s Christmas celebration. But that’s not all the families did for Christmas. Joanne read an article in Guidepost Magazine about a group of women who would act as secret angels, giving small gifts anonymously to people in need. Wanting to share their Christmas joy with others, the three families decided to do a similar project. “We would chose someone we knew who was going through a bad time, somebody in need of some cheer,” said Liz. “The kids loved doing this. They would leave a gift at the person’s doorstep, ring the bell, and run away! Our gifting would begin with a card, explaining to the person what we were doing, then each day for twelve days we would give them a simple gift – a candle, some baked goods, a plant, or a cross for their pocket.” After the families’ children grew up, this tradition was passed on to others who continue the giving.

Advent is observed in the Christian faith as expectant waiting for the celebration of the Nativity of Jesus. One of the many ways that Christians welcome the season is with an Advent calendar. Julie Simmons and her children celebrate Advent with a unique calendar filled with items that teach her young ones about the spirit of giving. “We came up with some cool things, like service days, where we might bake cookies for an elderly lady in the neighborhood. Another day, the kids sang carols to their great grandmother,” says Julie. “I just love bringing the spirit of Christmas into the Advent exercise, rather than simply filling it with candy and toys.” Julie’s daughter, Raleigh, does chores all year, saving part of the money, and at Christmas her godparents, Jay and Debbie Johnson, take her shopping for kids who don’t have as much. A few years ago, Raleigh, Jay, and Debbie donated to a children’s Christmas party in Jacksonville. Last year, they found a local family in need, shopped for the kids, and had the gifts anonymously delivered. Jodi Gibson came up with an interesting Advent calendar that she made using empty toilet tissue rolls wrapped to look like gifts, and in each gift her children would find their “fortune”. “I started last year with an Advent calendar for my three kids that had activities special to each one, instead of buying them candy or gifts,” says Jodi.

“Some of their fortunes included things like ‘Thirty Minutes of Mommy Time,’ ‘Pick Out Your Favorite Game for the Family to Play,’ ‘Stay Up Thirty Minutes Later Than Normal,’ or ‘You Don’t Have to Make Your Bed or Straighten Up Your Room for the Day.’ I wanted Advent to have a deeper meaning for them beyond just material things. ”

MIXING TRADITIONS Mark and Donna Paz Kaufman both grew up in families where religion was important. A married couple who never sought to notice the difference in the way people look or worship, the Kaufmans spend their holidays celebrating the things that we all have in common, as part of the human race. Mark was raised Jewish, by an adoptive family. His biological parents were Caucasian, though his mother had four more children with an African American man. He was born on the exact day that the State of Israel declared its independence, and celebrated his Bar Mitzvah in Jerusalem thirteen years later. “My Jewish faith was a very important part of my family,” says Mark. Today Mark publishes a monthly email newsletter for the Jewish community of Amelia Island and Nassau County. “We have 165 Jewish families in our group. But close to 50 percent of those are interfaith families.” The Jewish community gathers for monthly Sabbath services using an unofficial rabbi, a lay person, but observes more formal holidays with retired Rabbi Robert Goodman, who comes to Amelia Island from Jacksonville. Donna was raised Catholic and remembers her mother always encouraging her to learn about other faiths. “I went to a synagogue as a teenager,” says Donna. “And sometimes I went to Baptist Sunday school with my friends. And I attended summer camp one year at Church of the Nazarene. My mother

wanted to us to experience all that we could and learn to respect and better understand others.” Donna and Mark have been married for fourteen years, and have known each other for twenty years. One thing the couple has in common is their ties to Eastern Europe. Both have Polish grandparents, so they love to prepare the traditional foods they grew up with. “Each year, we make latkes (potato pancakes), kolachi (Polish pastries), and pierogis (Polish dumplings),” says Donna. “And we always have seafood for Christmas Eve, as my family did every year, but it’s fresh shrimp now that we’re in Fernandina.” For Mark, he finds it easy to blend Hanukkah and Christmas with Donna by celebrating each holiday the way it was meant to be celebrated. “What has made it work for us was respecting and enjoying each other’s traditions,” says Mark. During Hanukkah, the Kaufmans light candles on the menorah for the Festival of Lights, the eight-day Jewish tradition that honors the perseverance of Judaism in ancient times after the Temple in Jerusalem had been destroyed by the Syrian-Greek emperor, Antiochus. When the temple was rededicated, there was only enough lamp oil for a single day, but the oil miraculously lasted for eight days. Hanukkah, which means “dedication” in Hebrew, is celebrated by lighting one candle in a menorah for each day of the Festival. For Christmas, the Kaufmans have hosted a brunch for friends who are not spending the holidays with their own families. “We feel this is a time for peace and joy,” says Donna. “December is a magical season for us. We are so grateful for our friends, our families, our faith, and what brings us all together.”

They don’t get to see each other often, so the family trip to Cumberland Island is a special celebration for the Le May family. “This trip is something I look forward to all year long!” exclaims Marilyn. “We take the boat over to Cumberland and head to the Greyfield Inn. When we get to the inn, we pick up our lunches,

complete with backpacks and drinks. Then we get on our bbicycles and head out to the beach for a picnic.” Along the way, the family may see wild horses, turkeys, and many varieties of birds. The family loves the outdoors, and the serenity and natural beauty of this barrier island is the perfect place for them to reconnect and share quality time during the holidays. After their picnic, the Le Mays ride their bikes to the ruins of Dungeness, the ruined mansion built by Thomas Carnegie and his wife, Lucy. They try to visit different parts of the island each year. “There are so many things to see and do on Cumberland. We can hike or bike, we can walk the beach, or take a tour with a naturalist. Sometimes we visit Plum Orchard, which is decorated for Christmas. Cumberland is a special place for us!” Amelia Island residents celebrate the season in many ways. Some spend Christmas volunteering for Joy to the Children. Others spend the day on the water. Others sing in the church choir. Many spend Christmas working at our fine resorts, our community hospital, and our local grocery stores. And, no matter how busy we are for the holidays, we always find time for our families and friends. As you walk through the front door of The Ritz-Carlton, Amelia Island during the holiday season, your senses will be overwhelmed with the sights, sounds, and smells of childhood as you stand before a 17-foot Gingerbread Pirate Ship, complete with pirate characters sculpted from chocolate. The S.S. Ginger Amelia is inspired by the Mexican Congress, the vessel of privateer Luis Aury, who ruled Amelia Island briefly in the nineteenth century. The gingerbread pirate ship features an edible gingerbread cannon armed with chocolate cannonballs and a chest filled with candied treasure. Festive garland hangs from the elegant ceiling, and the sounds of holiday songs play throughout the lobby. In the courtyard, thousands of gleaming lights twinkle on a 40 foot Christmas tree. It is a spellbinding scene that captures the heart of holiday tradition. “Holiday tradition,” says General Manager, James E. McManemon, “is what grandparents and parents want a child to experience, and every child remembers their first Ritz-Carlton Santa’s Storybook Tea, the desserts at Santa’s Holiday Dinner, and taking family pictures in front of the pirate

The Jacksonville Symphony Orchestra is taking its stars on tour. The first stop of this “Stars of the Symphony” showcase concert will take place at First Baptist Church of Fernandina Beach on Thursday, January 16, 2014 at 8 pm. Hosted by ARIAS (Amelia Residents In Action for the Symphony), the concert features the orchestra’s principal musicians as soloists. Resident Conductor Michael Butterman has selected a program offering variety and virtuosity, including a jazzy clarinet concerto by the famous bandleader Artie Shaw, performed by Fernandina’s own Peter Wright. Soloists also include Concertmaster Philip Pan in Sarasate’s “Gypsy Airs” showpiece, Principal Trombonist Jeffrey Peterson in a concerto inspired by the trombone section of Copenhagen’s Casino Theatre Orchestra, and Principal Flutist Les Roettges in a work by Jon Lord, the original keyboard player of legendary heavy metal band Deep Purple. Glinka’s spirited “Russlan and Ludmilla Overture” and Rimsky-Korsakov’s dynamic “Capriccio Espagnol” round out the program. A grant from the Jacksonville Jaguars Foundation is making it possible for teens to learn life skills in a new way. In Search of Me Café is an innovative program at the Elizabeth F. Correll Teen Center in Brunswick, Georgia, that helps teens address problems, communicate thoughts and ideas, and seek peer support for issues such as bullying, peer pressure, self esteem, substance abuse, and more. “Through our JAGS Teen Talk program, the Jaguars Foundation promotes venues such as In Search of Me Café that support teens in making positive choices that lead to success,” says Peter M. Racine, president of the Jacksonville Jaguars Foundation. “We feel the best way to help teens manage their problems and prepare for focused, productive, and fulfilling lives is to provide them with age-specific, peer-to-peer methods for helping themselves,” says Stan Cottle, founder and director of In Search of Me, Inc. Both Nassau Boys & Girls Clubs feature the In Search of Me Café program, as well as an international school in Hong Kong, with programs in more U.S. cities coming soon. he Blue Door Artists are a unique collective of local, contemporary artists located in historic downtown Fernandina Beach. Unlike a traditional gallery, the Blue Door Artists are working studio artists who rent work space and actively create art at the Blue Door. They pride themselves on featuring some of the island’s finest selection of original art in a variety of media and genres to suit the taste and budget of all art collectors, who come from around the world to seek out their gallery. The nine artists featured at the gallery include Sharon Haffey, Sharon Badenoch, Suzanne Batchelor, Theresa Daily, Liz Dion, Lynette Holmes, Casey Matthews, Georganna Mullis, and Carol Sprovtsoff. The group established themselves in 2005, and, in 2007, the artists opened their studios on a fulltime basis. They pool their resources to run the studios and gallery. The public is welcome to visit the gallery and watch the artists go through the creative process, and December is a wonderful time to visit, as most of the

artists have produced special items for holiday gift-giving. Some of these include holiday greeting cards, smaller paintings, bags, scarves, jewelry, and more. Visitors to the gallery get a preview of the artwork when walking up the stairs to the gallery, as each artist has painted a stair in their own particular style. Once a month, The Blue Door Artists are open until 8 p.m. for Amelia Island’s festive Second Saturday Artrageous Artwalk. In addition to enjoying wine and hors d’oeuvres, visitors can speak to the talented Blue Door artists, who work with various media, including oil, acrylics, and water colors, plus pottery, glass jewelry, and even textiles. The Blue Door Artists are a walkup gallery located on Centre Street between Amelia Island Coffee and Go Fish. Look for the crazy, colorful stairs. tacye Lusk and Tom Hughes met at a Cinco de Mayo party many years ago. She was an independent software writer, and he was a sales representative with Trane Air Conditioning. They fell in love, and soon realized they wanted to open a business together. One evening with friends and family, Stacye and Tom were discussing various business ideas over dinner and red wine. Toward the end of the evening, Tom stood up to brush his mother’s hair. “That’s it!” everyone exclaimed. “The island needs a luxury day spa!” Neither Stacye nor Tom knew anything about cosmetology or running a salon, but the two immediately set out to learn everything they could about the business. Tom audited cosmetology school, and he and Stacye toured the Southeast interviewing as many salon owners as they could. They called their salon “Magna’s” (Latin for “magnanimous”), which also happened to be the model name of Tom’s motorcycle. Magna’s just celebrated their thirteenth birthday, and Tom and Stacye love their work. “We do massages, facials, nails, and hair,” says Tom. “We are 90 percent local business, and 10 percent tourism. And 40 percent of our clientele are men.” Magna’s is an Aveda Concept salon with 19 employees. “We started our American dream over dinner, and probably too much red wine,” laughs Tom. But he attributes their success to hard work and consistency. A favorite saying of Tom’s is “under promise and over deliver,” and that’s what keeps customers coming back. Tennis Anyone? The Omni Amelia Island Plantation Resort is steadily making Amelia Island a celebrated tennis destination once again. BY DICKIE ANDERSON

R

Drysdale sits comfortably on the terrace outside the Omni Amelia Island Plantation Tennis Center’s pro shop on a sunny afternoon. As some of the participants in a scheduled clinic came off the court, he greets them with his characteristic wide smile. His casual style belies his amazing career. Drysdale appreciates the history of the picturesque, oak-canopied courts. Legends of tennis have played on the courts, including Martina Navratilova, the Williams sisters, Andre Agassi, Chris Evert, and Maria Sharapova. “Amelia Island offers one of the best places to come and play tennis, with its beautiful clay courts, amazing beaches, and interesting historic district. It is one of my favorite places to come and teach,” he shares.

ecognizing the island’s rich history and its dedication to tennis, the Omni Amelia Island Plantation Resort has once again made Amelia Island a sought-after tennis destination. The resort’s tennis program has been rated the No. 1 adult tennis camp in the country by the website Tennis Resorts Online, the No. 2 tennis resort on Florida’s East Coast, and a Top 50 Tennis Resort by Tennis Magazine. Who better to coordinate this celebrated program than Cliff Drysdale, one of the game’s greatest players? The gracious Drysdale is a frequent visitor to the tennis center, where he coordinates successful programs for individuals, couples, families, and team groups. Programs include adult camps, ladies retreats, junior camps, private lessons and clinics, local, junior, and USTA professional tournaments.

Drysdale was a member of the esteemed “Handsome Eight” signed by Lamar Hunt of the WCT in 1967 at its inception. He was a popular choice to be the first president of the Association of Tennis Professionals in 1972. In 1998, Drysdale won the USTA’s William M. Johnston Award for contributions to men’s tennis. Drysdale was elected to the International Tennis Hall of Fame in 2013. Perhaps, most impressively, Drysdale has been one of the game’s foremost television commentators since the late seventies, and has been “the voice” of tennis on ESPN since 1979. For three decades, people flocked to the WTA’s Bausch & Lomb Championship on Amelia Island. Changes in the WTA’s schedule in 2011 did not allow an Amelia Island stop on the scheduled circuit, and the popular tournament became history. It is doubtful a tournament of that caliber will return to the island, but the Omni courts are hosting plenty of highly competitive events again, including USTA Women’s Tennis Championship, Amelia Island Men’s Futures, Racquet Wars (adult recreation tournament), Junior Team Tennis Challenge, USTA League Regionals, and USTA Husband-Wife Clay Court Nationals. Drysdale is proud of the team that has been established at the Omni Amelia Island Plantation Cliff Drysdale Tennis Center. Scott Colebourne, Director of Tennis, came from Stratton Mountain Resort in Vermont, where he coordinated a Drysdale program. A talented player and teacher, he was ranked in the collegiate top five in his native New Zealand and was an All-American at Vincennes University in Indiana. E

mbracing his love of life and enthusiasm for the arts, Dr H. Neal Coleman shares his talents generously. His love and commitment to the Amelia Island Chamber Music Festival is clear to all who know him. After attending one of the festival’s first exploratory concerts more than ten years ago, he and his wife, Imogene, were quick to step up and volunteer. For the festival’s first two years, the music-loving couple coordinated the green room for each performance, ensuring that the performers received the best in Amelia Island hospitality. In addition, they have sponsored some of the magical candlelight concerts at Ft. Clinch State Park. Active in the Amelia Plantation Chapel, Coleman and his wife were instrumental in coordinating performances there in one of the island's most beautiful sanctuaries. (He even shares his own talents as a faithful singer in the chapel's church choir.) In addition to being AICMF chairman of the board, he has served as festival coordinator, working closely with Christopher Rex, the festival's general and artistic director, as well as the board, in securing pianos, artist contracts, publicity and marketing, housing, fundraising, and anything else the festival needed. Born in Fort Deposit, Alabama he was delivered by his grandfather, for whom he is named. He met his wife, Imogene, while both were attending the University of Alabama. After receiving his medical degree at Alabama, he completed an internship and medical residency at Yale. He served at the National Heart Institute in Bethesda, Maryland as a Senior Investigator and next as a staff cardiologist at the Mayo Clinic in Rochester, Minnesota. The couple settled in Hinsdale, Illinois, where Coleman enjoyed a successful cardiology practice for 30 years before retirement on Amelia Island.

Like many in their retirement years, the Colemans have explored their creative side and are active in the Plantation Artists’ Guild and Gallery. Since 2008, the Plantation Artists' Guild and Gallery has been supporting and encouraging its artist members to sell their art and interact with fellow artists and the public. Coleman started painting in 2000. “I always wanted to try it and never had time. I saw a notice in the paper that the Amelia Arts Academy was offering classes.” He credits Bill Maurer, talented watercolorist and popular teacher, for encouraging him. It must have been contagious, because Imogene Coleman joined her husband, developing her own passion for painting. Imogene has served as president and treasurer of the gallery. Coleman and festival volunteers are working hard on the Amelia Chamber Music Festival schedule for the coming year. The festival's Winterfest is scheduled for February 27-March 2, which will include five concerts. As is traditional, the intimate concerts will be offered at a variety of venues, including many of island's churches, as well as Sliders Seaside Grill. The festival continues in the spring with its usual stellar line-up of concerts, which always offers something to tempt every music lover. For those involved in the very early days of the festival, it is hard to believe that the years have flown by in a flurry of beautiful music from some of the world's most talented musicians, creating a truly world-class event. e have had some terrific fall weather, and now it is time to get ready for the Christmas holidays. Gift giving can be a challenge when finding the right gift for the gardener in your life. Gift certificates to a nursery, book store, or garden center are perfect fo that hard to buy for gardening friend. One of the new plants in the Southern Living collection is the “Chef’s Choice” Rosemary (Rosemary officinalis – Roman Beauty). This new rosemary was specially selected because of its higher oil content and spicy flavor. It has a compact mounding habit, making it ideal for container, herb, and kitchen gardens. In the spring, violet-blue flowers emerge on the evergreen plant, which is hardy to 10 degrees F. You can use this plant as a border, mass planting, groundcover, or container planting. Water this plant well before planting in well-drained garden soil. You do not need to prune this plant unless you want to shape it. The newest addition to the Southern Living collection is the “Puckered Up” Colocasia (Colocasis “Puckered Up”). This unusual plant attracts attention because it has deeply puckered, dark

Inventor Buddy Lee continues to breed new “Encore” Azaleas with improved characteristics, such as increased cold-hardiness. The following four new varieties should be available now in your local nursery or garden center. Autumn Ivory is a compact grower, over 2 feet high and 3 feet wide, which bursts with huge quantities of bright white flowers in spring, summer, and fall. Its dwarf size makes Autumn

Ivory one of the best Encore Azaleas for containers and foundation plantings. Another dwarf is Autumn Sunburst, one of the newest Encore Azaleas. Autumn sunburst blooms profusely in spring, summer, and fall. Its unique blooms are coral pink with white ruffled edges that stand out against the dark green foliage. Autumn Jewel grows to 4 feet in height and 4 feet in width, with blooms 2 inches wide. This Azalea provides landscape color year-round with its pink blooms in spring, summer and fall, and attractive purple winter foliage It is very cold hardy. The Autumn Lily is robust and upright with deep green foliage. It is another cold hardy Encore, and it produces white bloom 3 inches across with an occasional single purple stripe. E

very year, Amelia Island eagerly awaits the Amelia Island Museum of History’s Holiday Home Tour, which features five beautifully restored homes in the Historic District. The home tour annually draws over 1,000 visitors, who enjoy peeking into some of the island’s most beautiful and interesting houses, which are stylishly decorated for the holidays by local professionals. This year’s tour, held on December 6 & 7, offers a variety of houses to explore, all with wonderful stories. One of the houses showcased on last year’s Home Tour was the home of Cheryl and Mark

Quinlivan, who graciously offered their house when one of the scheduled houses had to drop out. The gray-blue house, located at 123 South 6th Street, was built in 1903 and features unique doublegalleried wrap-around porches. Like similar porches in Charleston, South Carolina, the wrap-around porches guarantee a breeze. Like many older homes in the historic district at one time, it operated as a boarding house with separate stairs climbing to the second floor. The Quinlivens spend six months a year on Amelia Island in their charming cottage on South 6th Street. The other six

months are spent in their condo in Portsmouth, New Hampshire. Their property in New Hampshire dates back to 1848, so it is clear the couple appreciates historic properties. They first found Amelia Island in 2002. Cheryl was attending a meeting at The Ritz-Carlton, Amelia Island, and the couple decided to take a long walk down the beach, ending up at Main Beach. They then walked across the island and into downtown Fernandina Beach. Like many first-timers to the island, they fell in love with the charm of the island’s Historic District. Their home was built by George A. Latham. The lot was purchased from the city for $6.47. The house had several different owners until George Washington Boring purchased it in 1921.

It would stay in that family for 46 years. The Quinlivans purchased the home in 2002 and began their renovations. They added a metal roof, totally renovated the bathrooms and kitchen, and repaired windows and wood supports. The result is a cozy, welcoming home conveniently located in the lovely Historic District. Like many houses of its period, it has a series of small rooms, each with its own purpose. Of special interest is the home’s kitchen. Like works of art, the white enamel stove and refrigerator are reproductions made by Heartland and, although state-of-theart and fully functional, have a charming, antique look. The Amelia Island Museum Holiday Home Tour Committee matches an island decorator or florist to each of the homes featured on the tour.

The Quinlivans were pleased to work with Virginia Powell of The Plantation Shop, which has participated in the annual home tour since its inception. Powell added very traditional touches to each of the rooms. Angels took center stage in the dining room, which complemented its inviting holiday décor. During last year’s tour, the Quinlivans received a surprise call from one of the tour’s volunteers to report that the granddaughter and great-granddaughter of George Washington Boring had toured the house and were eager to meet them. Once they got together, other local family members were identified, which helped the Quinlivans learn more about the house they treasure so much. Like voices from Christmases gone by, the Boring family brought the past to life with stories from the house’s early years, providing the Quinlivans some extra special holiday magic.

Le Clos

I

always get a bit giddy when I know I’m going to have dinner at Le Clos. The only French restaurant on Amelia Island, Le Clos serves delicious Provençal dishes by candlelight in a charming, intimate 1906 cottage. Their front porch and courtyard offer dining outside, as well, but I have a favorite table by the window that I prefer, so when I took my friend Bruce to Le Clos recently, that’s exactly where we sat. Chef/Owner Katherine Ewing received full degrees in both cuisine and pastry from Le Cordon Bleu and L’Ecole de Gastronomie Francaise Ritz-Escoffier, Paris, and trained at The Ritz Hotel in Paris. Restaurant manager Julie Bundy is a skilled sommelier, and along with the impeccable staff at Le Clos, dining at the restaurant is always a wonderful experience. I love to let Julie choose the wine for my menu choices because she’s the expert. For our first course, Bruce and I had Escargot, and Julie brought us each a glass of La Fleur dAmelie, a white Bordeaux from France. The half-dozen snails are baked in garlic butter with parsley, and served with a crusty baguette. They are presented in individual tiny pots—quite a nice appearance, and I love to use the bread to soak up all those wonderful juices. For our entrees, I wanted to try the Pan Seared Diver Scallops. For Bruce, Julie highly recommended Bistro Steak Au Poivre. For our wines, I had a glass of Waiaru River Sauvignon Blanc from New Zealand, and Bruce, Au Bon Climat Pinot Noir, a California wine. Here is where Le Clos really shines. The scallops were perfectly cooked, with a nice sear on the outside.

They are served with pasta, fresh herbs, and baby leaf spinach, and finished with a citrus buerre blanc and tomato concasse. My favorite part of French dining is the focus on sauces and the way they are prepared. This dish is one of my favorites. The steak was thinly sliced and served with an amazing mushroom sauce with roasted shallots, pomme frites, and delicately steamed julienned vegetables, zucchini and carrots. He and I sampled each other’s dishes and wines, but Bruce was eager to return to his steak dish and eat every bite. For our dessert, Bruce and I decided to share a slice of Gateau Au Chocolat, a dense and delicious chocolate cake served with Crème Anglais, a rich and smooth custard sauce. Julie suggested we try a glass of red wine with our chocolate dish, and it was just right. Although I am often drawn to a sweeter dessert wine at the end of a meal, this lovely Cheval Noir from St. Emilion really brought out the flavor of the chocolate with every sip. Remarkable! The menu items at Le Clos are prepared carefully and presented beautifully, with an emphasis on local seafood and the freshest ingredients they can offer. An eclectic wine list offers the perfect accompaniment for every menu selection. Le Clos’ cozy cottage with cheery flowering baskets make it hard to pass by the restaurant without stopping to check the menu and make a reservation. Le Clos hosts many private affairs, like rehearsal dinners and birthday parties, and it is suggested that diners make their holiday reservations early. For more information, call (904) 261-8100.

O

ver the past year, I have developed an interest in Native American and early colonial cookery. Interestingly, the two cultures go hand-in-hand in the kitchen, as European colonists learned much about food preparation from their Native allies. This fusion of flavors and cooking techniques have brought forth numerous innovative Native American restaurants, and, having eaten at several, I’ve decided to create a Christmas dinner with some of these wonderful ingredients. For my entrée this year, I’ve decided to make plank salmon, using wild Alaskan salmon, still a sustainable fish. Wild salmon is more expensive, but well worth it for the flavor and color. Plank salmon is prepared by grilling your salmon on a cedar plank. (Be sure to purchase an untreated piece of cedar.) You can get one at your local grocery store in the seafood department. I like to grill the salmon over indirect heat. Be sure to soak your cedar plank for at least two hours before grilling. This entrée makes a beautiful presentation. You can serve the salmon directly on the plank, using either a side of salmon or individual salmon steaks. For a side dish, I have decided on wild rice, which is really not rice at all, but the seed of a marsh grass, known for its rich, nutty flavor and texture. Wild rice is native to the Great Lakes region of North America. Be sure to purchase “true” wild rice because cultivated wild rice is not as flavorful. I plan to serve the rice in a baked winter squash. You can use any squash you like, but make sure they are small so that when you cut them in half and fill them, you will have a perfect serving for one. A favorite Native recipe is Indian Fry Bread, which is easier to make than it sounds. The recipe I use is made with baking powder, not yeast, and there’s no need for kneading and rising. The bread rounds can be fried in advance and kept warm in the oven for up to one hour before serving. With this rich and savory meal, a green salad is the perfect accompaniment and, if I can find wild greens and mushrooms, even better.

PLANK SALMON Ingredients 2 lbs. wild Alaskan salmon Extra virgin olive oil 6 cloves garlic, minced

Two bunches of rosemary 1 lemon, sliced 1 untreated cedar plank

Preparation Soak the cedar plank in water for 2 hours. Place the salmon on the plank. Rub it all over with olive oil and garlic. Top with lemon slices and some of the rosemary. To cook, heat your charcoal grill until charcoal turns white. Move the charcoal to one side of the grill. Place the plank on the other side of the grill, not directly over the coals. Cover the grill and cook until the salmon reaches 135 degrees. Serve with additional rosemary and lemons. Serves four.

And for dessert—Indian Pudding, of course! A favorite of mine as a young girl, Indian Pudding is made with cornmeal and molasses, and served warm with a scoop of ice cream. You can make it in a casserole dish ahead of time and heat it up right before serving. Native Americans always give thanks to the Earth and all that we are given of it, our riches and our blessings. That’s a wonderful way to spend Christmas with those who mean the most to me.
