Each year in December, we love presenting to our readers all the different ways that Amelia Island celebrates the holidays. Christmas is a wonderful time here, and the joy of the season is everywhere apparent: if you’re walking on the beach, you might see a sandman Santa; if you’re downtown, you might see a parade of costumed pets or a fullblown Victorian Christmas; if you’re at The Ritz-Carlton, Amelia Island or the Omni Amelia Island Plantation Resort, you might encounter a pirate ship made entirely from gingerbread or a winter wonderland with thousands of twinkling lights. In December, Amelia Island is a little like Ebenezer Scrooge on Christmas morning, brimming with generosity and good cheer. Many selflessly donate their time to assist those less fortunate through Joy to the Children, Barnabas, and various church charitable programs. All of us can share that spirit by lending a helping hand and by gathering with our families to count our blessings. Behind the shopping lists, twinkling lights, and rich food is the “reason for the season,” as it is said, and we celebrate that with concerts, Christmas pageants, and time for reflection. Every season on Amelia Island has its special joys, but we think the Christmas season shows off our island paradise at its best. To that end, we have included all the holiday happenings we could find in our December cover story, including the Amelia Island Museum of History’s Holiday Home Tour; the return of “Dickens on Centre” to Centre Street in downtown Fernandina Beach; the new “Dickens After Dark” for adults 21 and older, which includes one complimentary drink, a ghost tour with the Amelia Island Museum of History, and access to three exclusive areas with entertainment and cash bars; “Breakfast with Santa” and the S.S. T

here’s nothing better at Christmastime on Amelia Island than spending a quiet morning walking the beach in a pair of flip flops! Island residents don’t miss the snow – we have our own version of the “white stuff” along the pristine coast of the Atlantic Ocean. Christmas on our island paradise is full of warm hospitality, friendly shopkeepers, gourmet restaurants, and historic charm. Most of the island is decorated in holiday finery, and all the amenities for joyful holiday celebrations are right here. December weather is perfect for any occasion, whether it’s a picnic on the beach, a fishing excursion with the kids, or Christmas shopping with friends. Amelia Islanders and our visitors celebrate the season in so many ways. Some spend Christmas volunteering for our local charities. Others spend the day on the water. Others sing in the church

choir. Many spend Christmas working at our fine resorts, our community hospital, and our local grocery stores. And no matter how busy our holidays are, we always find time for our families and friends. It is a joyous season, a time to reflect on everything that is good in the world! The Historic District’s holiday season is already in full swing, having kicked off last month with the annual Black Friday Pajama Party and Christmas Tree Lighting Ceremony. Again this year, make memories as you travel back in time with Dickens on Centre on December 7, 8, and 9, replete with costumed characters, themed entertainment and performances, visits from Saint Nick, and a variety of vendors selling seasonal gifts and wares. Inspired by Charles Dickens’ novella A Christmas Carol, Dickens on Centre transforms downtown Fernandina into

a classic English village, sure to enliven your Christmas spirit. Think chestnuts roasting, carolers strolling, and readings of ‘Twas the Night Before Christmas. Shop for the perfect Christmas gift in the vendor marketplace in Peddler’s Village on Centre Street, along Artist Alley on North 2nd Street, or with one of the wonderful local merchants in downtown Fernandina Beach. Don’t miss gift wrapping by Prince of Peace Lutheran Church to make your holiday shopping a breeze. If running is your thing, you’ll want to “Run Like the Dickens” in a 1-mile sprint on Main Beach. Held on December 8 at 8 a.m., the sprint is open to people of all ages, and it raises funds for Fernandina Beach Middle School’s AVID program. Cost is $15 per runner. Inspired by the ghosts of A Christmas Carol and the spirited veil of the Victorian era, this ticketed program includes one complimentary drink, a ghost tour with the Amelia Island Museum of History, and access to three exclusive areas: Gothic Alley, Ghost Club, and Mystic Library, with specialty entertainment and cash bars. Other “Dickens” events include a Kid Zone, an adult beverage station at Fezziwig’s Courtyard, street theatre, and much more. The Island Chamber Singers will be singing Christmas Songs and Carols of John Rutter and holiday arrangements from the Robert Shaw Chorale on November 30 at 7 p.m. and December 2 at 3 p.m. The program will contain other classical literature from Antonio Vivaldi and Johann Sebastian Bach. Orchestral accompaniment will include strings, timpani, and piano, and led

he Blue Door Artists are a unique collective of local contemporary artists located in downtown Fernandina Beach. Unlike in a traditional gallery, the members of the Blue Door are working studio artists who rent space and actively create at the Blue Door. They pride themselves on featuring some of the island’s finest selections of original art in a variety of media and genres to suit the tastes and budgets of all art collectors, some of whom come from around the globe to seek out their gallery. Each of the ten individuals who comprise the group has a personality and artistic style that is distinctive and noteworthy. The group, established in 2004, is now comprised of artists Sharon Badenoch, Suzanne Batchelor, Cori Beychok, Theresa Daily, Liz Dion, Sharon Haffey, Jane Hedgecock, Charli Leniston, and newest members Cindy Antczak and Katie Rewa, who is the owner of Eden’s Gardens, Gowns, and Gifts Boutique. Once a month, the Blue Door Artists are open until 7 p.m. for Amelia Island’s Second Saturday Artrageous Artwalk. Visitors can enjoy browsing,

socializing, snacking, and speaking with the members of the collective who create and sell their artwork “at the top of the colorful stairs.” Invite your artloving friends each month to view new work by a different featured artist, as well as the other artists in their personal working environment. It’s a great time to preview what your favorite artist has been up to. December especially is an excellent time to visit the gallery as you’ll find something very special for everyone on your list, including greeting cards, prints, smaller paintings, baskets, jewelry, and more, and all can be can be purchased for holiday giftgiving. hen Lezlie and Ben Rue remodeled their home in White Oak, Georgia, they decided to buy new furniture for their new space. “When Ben and I went furniture shopping, we couldn’t find anything we liked,” says Lezlie. “There were not many choices in Camden County, so Ben suggested we open our own furniture store!” The couple already owned an appliance business in St. Marys, Georgia, before opening Coastal Home Furnishings in Kingsland four years ago. ndrea Lennon, Esq. became hooked on transactional real estate law after working as a paralegal for several law firms prior to attending law school. She completed her B.S. degree in criminal justice at Troy State University, and then completed her J.D. degree at Florida Coastal School of Law in Jacksonville, Florida in 2003. Currently, Andrea is a top attorney title agent in the north Florida region for First American Title Insurance Company, one of the largest title insurance underwriters in the nation. Her practice is focused on residential and commercial real estate transactions. Andrea relocated to Amelia Island in 1992 following the military transfer of her husband, Steve Lennon, Jr., Command Master Chief, U.S. Navy, Ret., to Kings Bay Naval Submarine Base in Kingsland, Ga. Steve is retired from the U.S. Navy and oversees the daily operations and management of the law firm. During the busy holiday rush on Amelia Island, simple cherished Christmas traditions shared quietly with friends and families can be the best part of celebrating the season. BY JULIE SIMMONS

t’s the holidays, and lots of fun happenings are on everyone’s calendar, but sometimes it’s the little ways we celebrate Christmas each year, with small, treasured traditions that develop through the years, which are the most cherished. Come with me this year as we peek into the windows of some families around the island and discover what makes their holiday season special. For many of us, it starts with the decorating. Jennifer Bauer and her children have a marvelous kick-off to their Christmas season each year. “We decorate our tree in a favorite protocol: we watch the movie, Home Alone, order a large cheese pizza (see the movie), and eat cookies and hot chocolate.” Both Jenn and Stacy Krausnyder purchase ornaments for their children that represent something significant from that year. Stephanie and Andre Desilet have a fun tradition of using edible ornaments. “One year, we made a tree for animals by dehydrating apples, lemons, and oranges.” Topped with cranberry and popcorn garland, the outside tree was one they’ll never forget. For others, it’s all about admiring the decorations. “My obsession with the VW bus began as a child,” shares Katie Rewa. “Every Christmas since 2008, when we got our own VW bus, it’s a tradition that we decorate it, load it with good friends, fill thermoses of hot chocolate, and enjoy the beautiful lights in our community. We finish the night with a trip down Centre Street, where the white lights and cozy little decorated shops help us remember the reason for the season—Christ’s love, and His never-ending light in our lives!” At Christmas, many of us enjoy taking advantage of one of the best gifts Amelia Island has to offer—the beach. “Every year, we enjoy the beach—God’s masterpiece—which is deserted and peaceful leading up to Christmas Day,” shares Pam Bradley. Tara and Mark Ocepek and Natalie and Brett Loucks each make an annual visit with their families to Big Talbot Island, creating family memories as they hike and climb the driftwood on the beach. Other people, like Ivy Bradley, brave the Atlantic’s cold waters, as do Julie and David Jones’ kids, who continue to their tradition of a polar plunge—even as adults. And, of course, it wouldn’t be Christmas without Christmas pajamas. At Marissa and Steve Chenoweth’s house, the Elf on the Shelf arrives with a pair of pajamas for each of their three kids, and Pam and Steve Simmons always manage to convince their 90-year-old parents to wear some fun sleepwear along with them! Some parents are smart and leverage the PJ’s to calm kids who are pleading to open gifts. “When my mom, Liz McCall, had enough of us begging, she created the Chief Elf,” says Lindsey Gies. “He came every Christmas Eve while we were at church and left wrapped pajamas on our back-porch

We keep the tradition today, and I am going to continue with my baby, Charlee, too!” Some favorite traditions help us to slow down and take a deep breath during the holiday rush of activity. “For the last 20 years, we’ve put together a Christmas puzzle,” says Shannon Hogue. “In this hectic season, we gravitate to the puzzle. There we reminisce about times past.” In the Burningham household, it’s a blended Christmas. “Christmas traditions are always a mixture of the English and Southern backgrounds in our family,” shares Claudia, who grew up in the South, then married and lived in England for a season. “Our family expects the blend and would be disappointed without it. We always have the English Christmas Crackers at our dinner table. It’s great fun to cross arms and pull the cracker with the person sitting next to us. Gifts of toys, silly jokes, paper hats, and lots of giggles fill the day.” As everyone prepares to enjoy their own Christmas traditions, many stay close to the reason behind the season. “We focus on three gifts for our girls, like the three gifts the Wise Men brought to Jesus: something you need, something to help you grow, and something you want,” says Jenelle Garden, who welcomed twin girls a few days ago to join their older trio. “Our girls make their wish lists according to this theme, and we love that this tradition reminds us of the real reason for the season – the gift of Jesus to all mankind.”

Heroes

Started years ago to honor their godson TJ, a combat veteran, U.S. Air Force veterans Barby and John Ramsey decorate a Military Warrior Tree to remember those who serve. BY KAREN MILLER • PHOTOS BY SHERRY CARTER

T

o say that Barby and John Ramsey are patriots is putting it mildly. U.S. Air Force veterans who served their country for over 32 years collectively, the couple traveled around the world before settling on Amelia Island in 1997. They are the proud parents of one son, who works at the University of Alabama at Birmingham. John, who became a professional golfer after he retired from the military, and Barby both belong to the Air Force Sergeants Association. John and Barby’s efforts on behalf of America’s troops have made a big impact on the lives of service men and women and their families, including their godson, Thomas J. Britt. Thomas, or TJ, as he is called, was so influenced by the Ramseys that after graduating from the Air Force Academy he entered the military as well, serving in Iraq and Afghanistan, where he piloted a KC-135, rescuing wounded soldiers. He was eventually named “Military Warrior of the Year,” which inspired a new Christmas tradition in the Ramsey house: a Military Warrior Tree. 41 AMELIA ISLANDER MAGAZINE •

“I started the Military Warrior Tree in honor of TJ, with a few military patches, and somehow, the tradition just grew!” laughs Barby, whose special Christmas tree is the pride of their holiday celebrations. “People would see our tree and give us patches for it. Then the word spread about our tree, and now people we don’t even know will call us up, or mail patches to us. It’s been our Christmas tradition for 8 years.” Barby and John’s Air Force Sergeants Association meets in Jacksonville once per month, for a luncheon and speaker. At these monthly meetings, the group makes plans to raise money for programs that provide support our troops, like the Military Warriors programs, as well as programs that facilitate a smooth and successful transition home for combat-wounded heroes and their families. “In particular, we raise money to purchase service dogs for veterans,” says Barby. “These dogs are amazing in what

they’re trained to do. They can sense if their owner is about to have a seizure, and their presence provides a sense of security and calmness for veterans suffering from PTSD.” Military Warriors programs include Homes4WoundedHeroes, a home donation program in which the group provides 100% mortgage-free homes to combat-wounded veterans and Gold Star spouses of heroes who have fallen in combat. In addition to the home, each family receives three years of family and financial mentoring so that they can learn the skills necessary to become happy and successful homeowners. Another project the Ramseys are involved with is the “Wreaths Across America” program, which coordinates wreath-laying ceremonies at more than 1,400 locations across the United States, at sea, and abroad. “On December 9, which is National Wreaths Across America Day, our mission to remember, honor, and teach is carried out by coordinating a wreath-laying ceremony at the National Cemetery in Jacksonville,” says John. “The ROTC kids bring the wreaths and lay them at each grave, with help from volunteers. The families of the fallen soldiers are encouraged to come and take the wreaths home with them if they want, or leave them at the graves.” The program honors soldiers from the Revolutionary War to veterans of present-day conflicts. In March, the Ramseys help coordinate the Air Force Sergeants Golf Tournament at Bent Creek Golf Course in Jacksonville, raising funds for Canine Warriors. “AFSA’s mission is to advocate improved quality of life and economic fairness that will support the well-being of the Air Force enlisted personnel and their families,” says Barby. “And our Warrior Tree at Christmas time is a personal way John and I honor those who serve, and who have served.” For more information or to donate to Military Warriors programs, visit the Military Warriors Support Foundation at www.militarywarriors.org.

he mission of the Boys & Girls Clubs of Nassau County Foundation is to fund and operate Nassau County’s afterschool and summer programs. Their annual Benefit Gala, now in its twelfth year, benefits the youth of our community by providing them with a safe place to work on their academics, be engaged with positive role models, and develop into confident leaders. The upcoming Gala, held this year on February 2, is certain to be one of their best, featuring a cocktail hour, gourmet dinner, auction, and entertainment by comedy magician, illusionist, and mind-reader Gary Goodman. Goodman began his career at age 12 performing illusions he learned from library books. But it was the famous escape artist, Harry Houdini, who set him on the road to magic. Barely a teenager, he had the good fortune of meeting one of Houdini’s illusion builders, who taught him how to perform some of the same illusions. Goodman has performed to rave reviews from numerous celebrities, in Las Vegas, on cruise ships, and on television, with his incredible mix of magic, illusion and mind-reading. beautiful buddleia If you are hoping to attract butterflies to your garden next season, try including Buddleia Butterfly Bushes like Funky Fuchsia, Groovy Grape, and Psychedelic Sky. BY BETTY MORRELL

C

hristmas and the holidays are upon us, so your thoughts are probably not on gardening, but here are some great ideas for the gardeners on your list: Amaryllis Bulb in a pot ready to bloom, Christmas Cactus already blooming, and, of course, the beautiful Poinsettia. How about a dish garden, a hanging plant, or just about any plant that would be appreciated by the gardener, or a gift certificate to a garden center? As I continue to review the plants I saw at the Florida Growers trade show in the fall, I want to share a few plants I found for butterfly lovers, including some new Buddleia Butterfly Bushes. Funky Fuchsia boasts a rounded upright habit with dark green foliage, with gray beneath. Rich reddish-pink inflorescences are quite fragrant. These showy flowers average 6 to 8 inches long, and sometimes up to10 inches on vigorous shoots. They are drought-tolerant, and flower continuously into fall. Two more of these beautiful Buddleia Bushes on display were also outstanding: Groovy Grape and Psychedelic Sky. Groovy Grape also

has a rounded-to-upright habit, with arching 8 to 10 inch long inflorescences. The flowers are a rich violet/purple, and have an amazing fragrance. Psychedelic Sky is well matched with the Funky Fuchsia in habit and flower display. This plant has clear blue flowers on upright stems, averaging 6 to 8 inches long and up to 10 inches on vigorous shoots. It’s a tidy bush, like Funky Fuchsia, and they all attract beautiful butterflies. A collection of plants that really intrigues me is Distylium, a tough evergreen plant that’s taking the place of plants that are plagued with problems, like boxwood, cherry laurel, hollies, and Indian hawthorn, in foundation plantings and landscape beds. They are evergreen members of the Witch Hazel

family, producing petite red flowers all along the stems in winter. They are easy to prune for shape or size control. Five of these new shrubs are available. I will share with you a few, then continue with more next month. The first, Cinnamon Girl, has smaller foliage and a more refined look than other Distylium, so it is an excellent alternative to boxwood. Plum/purple new growth turns to blue/ green as the leaves mature. It grows 2 to 3 feet tall and 3 to 4 feet in width. Swing Low is the newest addition to this collection. Its growth habit is low, growing 2 to 3 feet tall with a 4 to 6 foot spread, making this a perfect ground cover. Blue/green leaves are densely arranged on horizontal branches. An adaptable plant, it can be used in multiple landscape applications. It adapts well to pruning and is disease- and insectresistant. Like the others, it is evergreen, drought- and high-moisture tolerant, and grows in full sun to part-shade. I wish you all a Merry Christmas, Happy Holidays, and a very Happy New Year! rt Adams and Melony Austin love getting ready for the holidays in their renovated historic home on Cedar Street. They have generously opened their home for the Amelia Island Museum of History’s Holiday Home Tour not once but twice, first in 2012 and then again last year. The popular annual tour opens up Amelia Island homes that have 55 AMELIA ISLANDER MAGAZINE •

been decorated by local florists and decorators for the holidays, and it is the primary fundraiser for the museum. Close to two thousand people tour the homes each year. Melony grew up in Jacksonville and remembers visits to Amelia Island through the years. Art grew up in Jessup, Georgia and also remembers wonderful

visits to the beach as he was growing up. Both have big jobs. Melony is Director of Retail at the Omni Amelia Island Plantation Resort and Art is Vice President of Caribbean Breeze Sun Care Products, a company selling products around the world. As busy as the two are, they found time to completely renovate their beautiful Cedar Street home, which was in desperate need of almost everything. Records show that Edward F. Langley, a carpenter by trade, first purchased the lot for $250. Although not in the town’s “Silk Stocking District,” the home has had a fascinating history, with at least 56 AMELIA ISLANDER MAGAZINE •

11 owners. Art had a background in construction and was ready take on the many challenges. The ceiling in the parlor/living room was eight feet high and covered in styrofoam ceiling tiles. What a great surprise to find a beadboard ceiling underneath! The house now boasts a 10foot wooden ceiling with crown molding. Another pleasant surprise occurred when the orange shag carpet was pulled up to reveal hardwood floors. Throughout the house, a nautical theme reflects Fernandina’s long history as a seaport. One of the former owners of the house was actually a

shipsmith on Front Street. Mixed with the nautical artifacts are Japanese collectibles brought back from Japan by Art’s grandfather. His grandfather served in WWII in both the Pacific and European theaters. His service included Guadalcanal in the Pacific and the Battle of the Bulge in Europe. In the early 1950s, Art’s grandparents were stationed in Tokyo, Japan, where his grandfather was inspector general. They loved Japan and brought many pieces of furniture and collectibles back that are now in the Cedar Street house. A treasured holiday tradition is the decorating of their 10-foot tree. They always buy it from the Boy Scout stand, since Art has fond memories of his Boy Scout years. The couple describes their collection of ornaments as eclectic. They collect ornaments in their travels, and both have inherited ornaments from their parents and grandparents. Art’s grandmother made ornaments by hand for years as a hobby. She would make them out of styrofoam balls, sequins, beads, and ribbons. These are Art’s favorites. Island Flower and Garden did the holiday decorating throughout the house. breathtaking wreath on the front door, which incorporated garnet red roses with other traditional wreath elements. When asked about opening her house up for the museum tour, Art and Melony shared, “Having 1,800 people going through your home can be rather intimidating, but we actually rather enjoyed it. The museum docents did an incredible job of directing people through. As we had beautiful weather, we were able to just hang out in the back yard and speak with everyone as they exited, which was very enjoyable” The couple do not limit their decorating to the inside. Melony loves decorating the backyard, too. During the home tour, the tiered water fountain in the backyard contained a brightly colored Christmas selection of apples, oranges, and greens. Art and Melony will continue a tradition started by her father. Known as “Mr. Pete,” her father was a volunteer at The Arc Nassau. The family has continued the relationship. They will deliver Christmas dinner and gifts to the Yulee facility. Something special is always planned afterwards, like a carriage ride with Santa. Pogo’s Kitchen With a warm ambience, full bar, and imaginative, perfectly executed cuisine from Chef Alan Heckman, Pogo’s Kitchen is a great addition to Amelia Island’s culinary scene. BY MICHAEL GASS • PHOTO BY SHERRY CARTER

P

ogo’s Kitchen is one of the Amelia Island’s newest restaurants, located on the south end near American Beach. The restaurant takes its name from Pogo, a cartoon created by Walt Kelly. In the cartoon, Pogo’s friends regularly stop by his kitchen for a special meal. The restaurant is located is in a newly renovated space that is warm and inviting, with a full bar and a private dining room available for large groups. On a recent evening, I took my wife, Allie, out for a taste of something new and exciting.

We were greeted warmly at the door and escorted to our seats, where we met our server, Sarah, whom it turns out, I had met twice before. Two of her children have come through my Culinary Arts class, one of whom has gone on to be a wellregarded chef in the Nashville area. In the kitchen at Pogo’s, Chef Alan Heckman leads the charge. He comes to Amelia Island from Pennsylvania and has been featured at the James Beard House and reviewed in the New York Times. His devotion to quality shows in his homemade breads, pastries, and ice creams. For our first course, we had Pan-Seared Scallops, which came served over a bed of luscious risotto with a soy-and-brown 62 AMELIA ISLANDER MAGAZINE •

butter emulsion that came to the table as a foam. We also tried Pogo’s take on She-Crab Soup. This version of the Low Country staple was assembled table-side. A petit crab cake topped with smoked trout roe came in a warmed bowl, into which a velvety cream overflowing with flavor was poured. As we enjoyed the soup, each bite had a delicate hint of wonderful smoky seafood. Next Chef Alan surprised us with an order of the beetcured Arctic Char Crudo. In Italian, crudo means “raw,” but the char, a salmon-like fish native to alpine lakes and arctic coastal waters, is actually cured with red beets, making the fish resemble diced tuna. It was served with raw slices of beets for a crunchy texture, a disc of creamy ricotta with horseradish, and pieces of charred onion. Combining these elements in one bite made for a divine flavor experience. For our entrees, Allie ordered the Roasted Mushroom Stroganoff from the Share Plates menu and I the Pan-Seared Duck. My entrée was delicious, the duck perfectly seared and served over a risotto style-farro with a breaded and deep-fried duck confit accompaniment. What really blew us away, however, was the Stroganoff. The earthy flavor of the roasted mushrooms and the perfectly cooked homemade pasta provided an incredible surprise. At this point, we knew everything was going to be exceptional, but the rustic simplicity and perfect delivery of this old-school classic caught us completely off guard. I would go back again for the Stroganoff alone. We ended our meal with a Pecan Tart topped with a bruleed meringue and served with a scoop of homemade ice cream and peanut brittle. Allie enjoyed a simple cup of coffee, but we noted the delightful assortment of coffee-inspired cocktails available. At this point, we could take no more and bid our hosts farewell, vowing to return again. he holiday season is here, and with it comes a big responsibility: hosting a party. Whether you’re having two or twenty people for drinks or dinner, you’ll want to stock your bar well in advance of your party. My husband, Troy, and I turn to Mitchell Wickless at Five Points Package Store for advice on the latest trends in holiday spirits. In addition to the regular players like vodka, gin, rum, and whiskey, he suggests offering a selection of specialty

HOLIDAY GLÖGG Ingredients 10 cardamom zests 5 whole cloves peel of ½ an orange 1 or 2” stick cinnamon 2 cups sugar 1 fifth (or quart) port wine 1 fifth (or quart) light wine (Rhine or French white) 1 fifth (or quart) brandy, bourbon, or vodka 1 cup raisins ½ cup peeled, blanched almonds Preparation Combine first 4 ingredients in a cheesecloth bag. Boil the spices in 1-cup water, very slowly, for 15 minutes. Squeeze bag to release the flavors and remove. Add sugar until dissolved. In a large saucepan combine wines and liquor and heat until very warm, but do not boil. Add sugar and spice mixture, then raisins and almonds, and continue to heat slowly until raisins are plump. Serve in a crockpot. NEW ORLEANS SAZERAC COCKTAIL Ingredients 1 cube sugar 1 ½ ounces Sazerac Rye Whiskey ¼ ounce Herbsaint 3 dashes Peychaud’s Bitters Lemon peel Preparation Pack an Old-Fashioned glass with ice. In a second glass place the sugar cube and add the Peychaud’s Bitters to it, then crush the sugar cube. Add the Sazerac Rye Whiskey to the second glass containing the Peychaud’s Bitters and sugar. Empty the ice from the first glass and coat the glass with the Herbsaint, then discard the remaining Herbsaint. Empty the whiskey/bitters/sugar mixture from the second glass into the first glass and garnish with lemon peel.
