I almost never order this famous, gloriously simple salad— named for the island of Capri, where it may or may not have been invented—in America, and I’m careful even in Italy. If it’s made, as it all too often is, with cottony, flavorless tomatoes and rubbery, not-quite-fresh mozzarella, it is downright unpleasant. Made in prime tomato season, on the other hand, with tomatoes that are still firm (a little green doesn’t hurt) but ripening and with fresh mozzarella— bufala if possible—that is no more than a day or so old (domestic or imported), it is one of the most delicious salads in the world. 4 firm, ripening tomatoes, sliced about £ inch / 6 millimeters thick £ pound /125 grams fresh mozzarella, preferably bufala, sliced about £ inch / 6 millimeters thick 8 to 10 basil leaves, torn into large pieces £ cup / 60 milliliters extra-virgin olive oil salt
Arrange the tomato slices on a platter, and arrange the mozzarella slices over them. Scatter the basil leaves over the top of the salad. Drizzle with the oil and season generously with salt before serving.

Twiggy—still in her tween body and just seventeen years when she broke onto the scene—seemed an unlikely successor to Marilyn Monroe, who had been the essence of style and beauty just a few years before. It goes without saying that the Twigg y dress is a mini. Both dress options have a baby doll silhouette with oversized button plackets (pretty adorable, in our opinion). Seam lines at the bust and racer back armholes give the dress a more form fitting shape through the chest. The icon dress has the mini hemline that Twigg y herself may have worn. Play up the geometry with large mod contrasting buttons and the fun circle pockets. For a more “Swinging London” look, sew the color block variation with the slightly longer hem length. Each dress option can be sewn with either hemline and with or without pockets. They both look great over stockings, leggings, and— don’t let Twigg y know we said so—skinny jeans.

You won’t find Echo Beach on any map. But for a band of surfers from Newport Beach the stretch between 52nd and 56th street was an entire universe of ‘80s cool. These DayGlo surfers singlehandedly demolished the laid-back ‘70s style with a loud blast of Devo and attitude. Out of the water, they wore Aquanet pompadours, Wayfarers, and neon boardshorts. In the water, they ripped up the wave two feet from local photographer Mike Moir’s Canon fish eye. The photos he published in the surf magazines ignited a counter culture that grew into the ‘80s as we know and love them. Echo Beach captures the marriage of surf and fashion that was ground zero of the ‘80s, when a zebra-striped twin fin surfboard and a hot yellow wet suit was the ticket to happiness. Canadian-born photojournalist Mike Moir has resided in Southern California since the 1940s. He works in the Newport-Huntington area. This how-to is recycling at its most fun—stenciling a modern image or pattern over a vintage porcelain plate is a clever juxtaposition. Used plates are in abundance at thrift stores and are usually very inexpensive. So take those mismatched, floral granny plates and give them a whole new look. MATERIALS

1. Prep the plate Clean the plate of all grease. First scrub with soap and water; then give it a rubdown with rubbing alcohol. Let it dry.

1. Cut it short The hair must be cut short: ¼ to ½ in / 6 to 12 mm long. The length of hair left on the head is your base layer.
2. Choose the design Choose a stencil without too much detail. Hold the stencil to the head in the area you want the design to appear. Make sure it wraps snugly to the head.
3. Spray to play Carefully spray the color spray into the stencil design area. Lift the stencil and the design should be “painted” on the hair. This painted design is the template you will be using.
4. Decisions, decisions You have the choice to remove the hair that is colored in or shave away the hair that is around the colored hair, so the design is either made of skin or made of hair. We are leaving the colored-in area and removing the rest, for what Eliath calls the “tattooed look.”
5. Buzz . . . Using the clippers, carefully remove the natural-colored hair in and around your design. You can shave away about a ½-in/12-mm border to outline the design. You can then use a straight razor to fine-tune the design and remove more hair.
6. Take it to a pro If you don’t have these skills, I suggest just bringing the stencil to your barber. If you are in NYC, bring it to Eliath at Astor and tell him Ed sent ya.
