University of Memphis Gets Tiger Fit Every semester, the Recreation Center at the University of Memphis offers a free eight-week fitness program to all students, Tiger Fit. They aim to help students learn about nutrition, establish an exercise routine, and improve their overall health and well-being. The program is led by the university’s wellness coordinator, Katie Gerstemeier, and two graduate assistants. They take the students through health assessments, weekly weigh-ins, group exercise sessions, and nutrition counseling. Participants are also led through goal-setting and wellness exercises.
Students at the University of Memphis can register for the program online at www.memphis.edu/tigerfit/registration.php. Tiger Fit classes meet on Wednesdays from 2:00-3:30p.m. and Thursdays from 11:30a.m. – 1:00p.m. The program runs Feb. 3 – March 31. Tiger Fit has helped hundreds of students make better decisions around their health. A certified personal trainer helps guide students on how to maintain an active lifestyle. He shares different types of exercise routines and how to maintain a fitness program. A nutrition graduate assistant discusses different food groups and teaches the importance of balance, variety, and moderation. She provides a safe space for them to discuss their struggles and successes when it comes to food. The students receive more than just guidance and support for improving their health and wellness, they also get free goodies to keep them motivated along their journey. Gerstemeier is proud to be able to make a difference in the lives of the students on campus. “I want all students to graduate knowing that they have the knowledge and ability to live out a healthy lifestyle when they get out into the workforce full-time.”

March is National Colorectal Cancer Awareness Month

WHY COLON HEALTH IS CRITICAL The digestive system is one of the your body’s most integral systems. Your colon is not only responsible for helping to digest food, but it is crucial for eliminating chemical and physical waste along with toxins and preservatives. Your kidneys and liver also help alongside your colon to eliminate these harmful toxins. Your colon can be affected all different conditions, including Ulcerative Colitis, Crohn’s disease, Irritable Bowel Syndrome, and Colorectal Cancer. Diet and lifestyle modifications can help in many conditions, but special medications and procedures are needed for others.
THE WEIGHT CONNECTION According to the National Cancer Institute and the American Cancer Society, the link between diet, weight, exercise, and colorectal cancer are some of the strongest for any type of cancer. Estimates are that 50-75% of colorectal cancer can be prevented through lifestyle and dietary changes, specifically healthy eating. Fewer than 10% of all colorectal cancers are hereditary, which is why good nutrition is a critical aspect of good colon health.
DIET DOS AND DON’TS 1. Limit red meat and steer clear of processed meats. 2. Stay away from simple sugars. Studies have found that people with Crohn’s and colitis do better on diets low in sugar. 3. Increase your fiber intake

4. Drink milk. Calcium and vitamin D may be associated with a decreased risk of

MAKE COLON SCREENING A PRIORITY The most important way to prevent colon cancer is with a screening colonoscopy. If detected early, up to 95% of colorectal cancers are curable.

Bobsledder Sable Otey Sets Sights on 2018 Olympics Every two years Olympic fever sweeps across the nation as the world’s eyes turn towards the top athletes from every country. Memphis’s very own Sable Otey is on her way to the 2018 winter games in PyeongChang, South Korea as a brakeman on the U.S. American Bobsled Team. This wife, mother, and full-time teacher has beat all the odds on her way to becoming a professional athlete. Sable, 28, was raised by a single mother in East Memphis and began running track and field at Memphis East High School, which earned her a partial-scholarship to George Mason University in Virginia. She became a Division I Conference Champion and like many young and successful athletes, it was her dream to go to the Olympics. She continued training for the 100-meter hurdle
while she attended graduate school in San Diego, where her husband was stationed in the Navy. Despite her efforts, Sable failed to make it to the Olympic trials that year as she became pregnant with her first child, but she says it was more than that. “None of the training mattered. I didn’t believe in myself as much as others did. I would mentally tear myself down and I took myself out of the competition before it even began.” She took a break from athletics and Amar’e, her son, was born in 2012. Her family moved back to Memphis and she began as a teacher at Lawrence Elementary School. Coming back to her roots and being closer to her family reinvigorated her. “Being surrounded with

positive, like-minded, and uplifting individuals made the difference,” she says. “They helped me find more faith in God and I eventually developed more conviction to verbalize my dreams and goals and to believe in myself. I wouldn’t let fear control my life anymore.” While building up her confidence over the next three years, she used her experience and training to help others in the community, work which she continues to this day. She hosts sports and nutrition clinics, track and field clinics, and an Olympic training program for kids during the summer. “It’s my goal to give back, help as many people as possible, and be a role model to the youth. You can do anything you set your mind to, no matter your current circumstances. Our current circumstances do not determine our future,” she says.

In 2015 Sable got another chance to go after her dream when her God brother, another athlete, suggested she try out for the Olympic Bobsled team in South Carolina—the caveat being it was two weeks away. “I’m afraid of heights, I never liked the cold, and I’m afraid of roller coasters, but I wanted this more than anything.” The brakeman position in bobsledding requires an explosive push for 30 to 40 meters before jumping in the sled and pulling the brake about a minute later. Because Sable had almost no time to train or even acclimate to the new sport, the tryouts were a struggle. The nuances of working with a heavy sled on new terrain was a real challenge, despite her speed and power. She suffered a hamstring injury early in the competition. “Instead of beating myself up about it and letting it ruin my chances, I kept
my positive outlook and pushed myself harder by getting up two hours before everyone else so I could rehabilitate my leg.” Three months later when the trials were over, she received the second highest score of both men and women, earning herself a spot on the U.S. American Bobsled Team. Sable now faces the toughest part of her journey—balancing a rigorous training and competition schedule with being a wife, mother, and full-time teacher. Her family, her biggest supporters, and her school accommodate her absence when she’s at the Olympic training center, but achieving her dream comes at a huge cost. Athletes must pay for all their training and travel costs, which are usually well over $10,000 each season. Not only does Sable lose income for the time she misses work, she spends
thousands of dollars on airfare, lodging, sports gear, meals, supplements, and massage and chiropractic services that keep her in top form. She’s picked up a few sponsors, but she still covers the majority of expenses herself. “One of my greatest challenges is competing against athletes who are fully sponsored and can dedicate their life to training.” Instead, Sable arranges tiny slots in her schedule to train, which means getting to the gym by 5 a.m. before going to her day job. “My family and my students are my motivation. Pain, Pain Go Away Raising three children is already a challenge, even when you’re at your best. Add a ruptured disc in your back and life becomes unbearable. Christie Perkins, 32, unknowingly suffered from this medical condition for over a year and a half before Semmes Murphey Clinic helped her get rid of the pain. “It began with a constant ache, but eventually grew unbearable with my daily activities,” says Perkins. She had quit running and all other forms of exercise to mitigate the pain in order to make her children and work schedule a priority. She went to her local doctor several times before being able to have an MRI a year and a half later. They referred her to a neurologist, who gave her a nerve block. However, that didn’t last and after a few weeks she could barely walk. She had no idea what was going on with her body.

“My left leg was completely numb,” she says. “I called my doctor again, he was out of town and referred me to the Semmes Murphey Clinic.” They were able to see her the same day and the MRI showed her a ruptured disc.

Perkins was scheduled for surgery two days later at an outpatient facility. “The recovery process was fabulous. I was back at work within four weeks,” Perkins says. Her long record of chronic pain ceased and she slowly eased back into exercise. She went from walking to running in six months after the operation. “I haven’t had any problems with my back; I sometimes forget that I even had the surgery,” she says. “I’m currently training for a half marathon in Oxford and Nashville.” Looking back on her long journey of pain, she admits that it didn’t have to go on for so long. “I highly recommend a visit to Dr. Cardenas at the Semmes Murphey Clinic for your back issues. I wish that I didn’t wait so long. No one should suffer with back pain the way I did. Dr. Cardenas is my hero.”

As a team, we rode 528 miles around a 2.9 mile closed course throughout the 24 hours. Our women’s team placed 3rd overall. MOST MEMORABLE WW EVENT: Finishing Ironman Louisville in 2014 has to be my most memorable event. Swimming in the Ohio River, cycling past beautiful scenery and running in downtown Louisville past Churchill Downs and the University of Louisville was pretty cool. I jumped into the river at 7:22am and finished on 4th Street at 10:30pm. What an amazing experience!

While that initially motivated me to lose weight, I find the positive energy and mutual encouragement in the running and triathlon community to be my strongest motivation to stick with it.

MARCH INTO NUTRITION: WHOLE GRAINS AS PART OF A HEALTHY LIFESTYLE In March we celebrate National Nutrition Month and so we turn the spotlight to one of the least celebrated foods of the 21st century: the grain. It began its recent downfall in the early 2000’s with the Atkins Diet and to this day, continues to be the nemesis of The Paleo Movement. In truth, refined grains have a long list of negative effects on the body including blood-sugar imbalance and inflammation. However, we can’t blame the grain, we can only blame ourselves. In their unrefined state, grains—such as wheat, rice, and corn—are full of vitamins, minerals, antioxidants, and fiber that offer a mouthful of nutrition.

When we refine grains, we remove the germ and the bran from the endosperm, discarding the majority of the fiber and nutrients. Whole grains, which retain all of the germ, bran, and endosperm, are often mistaken for being unhealthy, despite being full of all the good stuff. To truly embrace good grain, we have to move past typical pastas, pizzas, and pastries. There are many types of whole grains bursting with nutrition and distinct flavors. If you’re intimidated by these unfamiliar ingredients, try incorporating them into something you know well.
AMARANTH
MILLET
This tiny seed, which has a slight peppery bite, originates in South America. You can still find it there at street food stalls, popped like popcorn. Here in the States, amaranth is showing up in cereals and breads, as well as baking flour.
High in protein, millet is a tiny grain widely used in India and Africa. When prepared, the texture can range from fluffy cooked rice to mashed potatoes. Since it is cooked in the same way as quinoa, the two blend well together as a whole grain side dish.

OATS
Because the hull and bran of barley must be stripped to make it edible, it’s not technically a whole grain, but the nutrients and fiber are still present. Barley has a chewy texture and slightly sweet taste. It makes a hearty addition to soups or stews in place of pasta or potatoes.
Some varieties of oats are glutenfree, making them a great option for gluten-intolerant eaters. Expectant mothers frequently turn to steel-cut oats to provide nutrition. Oats are delicious ground up into bread or toasted into a homemade granola with coconut and dried berries.

QUINOA
This is a popular gluten-free flour made from nutrient rich seeds. It’s commonly found in Asian soba noodles, but can be used to replace conventional refined flour. Buckwheat groats can also substitute for rice.
Pronounced “keen-wah”, quinoa is a fast-cooking round seed with a small sprouted “tail” that opens when it is tender. It’s perfect as a substitute for rice in a side dish or in soups and stews. Quinoa plays well with other grains, especially brown rice and millet.

BULGUR
This sweet American favorite doesn’t have to be served canned or frozen. Try dry popping ¼ cup in a plain paper bag in the microwave—no oil required. It makes a delicious snack, full of fiber that will keep you full for hours.
Used as a rice alternative, bulgur is made from boiled and cracked wheat kernels. Add to pilafs, stir-fry, or your morning oatmeal to add a nutty sweet flavor.
SPELT An ancient grain, also called farro, this sweet one is a favorite with those who have a hard time digesting gluten. Spelt flour is now a popular ingredient featured in waffles and organic breads. Spelt can also be cooked over the stove.
TEFF Used in Ethiopia to make injera, this gluten-free relative of millet is one of the smallest grains in the world. Where crop availability is limited, the iron and calcium in teff are easy to swallow with a sweet taste. It can be cooked simply as porridge or added to baked goods.

LIVING THE GUILT-FREE LIFESTYLE In one sweltering Memphis summer, Brandon Thomas reversed the entire trajectory of his life. At age 16 he was following his father’s footsteps, weighing 300 pounds and pre-diabetic. He also suffered from severe asthma and was taking five different types of steroids just to keep breathing. Brandon says, “I looked at myself in the mirror and wanted to be the most positive version of myself. I knew I had to make changes.” The teenager started to research the types of medications he was being given. “I was full of toxins and full of drugs, so I stopped all of it. My doctor said I would probably die. I just said ‘we’ll see.’” He spent the rest of the summer outside riding his bike 10 miles a day and setting up basketball tournaments in his driveway with the other kids in the neighborhood. “I was wheezing the whole time, since I was trying to beat asthma, but my parents kept an eye on me.” The weight started melting off and he was losing 10 to 15 pounds a week. Although he ate the same foods as before, he was serious about portion control. “My parents were supportive enough, but they couldn’t understand why I was pushing myself so hard,” he says. Brandon’s parents took him back to the doctor at the end of the summer, worried that he had a serious illness. “The doctor walked in the room and she didn’t know who I was,” he says, “I had lost 125 pounds.” Brandon completely turned his health around that summer. “Since the weight came off, I’ve never had another breathing problem to this day,” he says. Brandon continued to work on his health through the rest of high school and while he attended the University of Memphis. While there, he learned he was lactose intolerant. He cut out all fried foods, dairy, and was eating mostly organic by the time he left for graduate school in Georgia.

“I tried all different types of exercise from aerobics to Zumba to weight lifting in college. I still do Zumba to this day!” Despite his lifestyle changes, Brandon knew something was still wrong with his body. “For the longest time, I was having large amounts of pain. Most days I would wake up feeling like I was being stabbed with a hot poker. I didn’t know what was going on with my body.”

Brandon moved back to Memphis after graduate school in 2012 to take care of his parents who are both disabled. He joined a CrossFit gym in Cordova and they immediately challenged him to cut bread out of his diet; the very next day he woke up without pain. Brandon eventually realized he was allergic to gluten and as he removed it, the intense pain disappeared from his life for good.

“It was such a relief, but I had to start over.” Brandon had been baking since he was a kid—everything from fudge brownies to Oreos wrapped in chocolate chip cookie dough. With gluten no longer an option, he had to make new recipes from scratch. “I didn’t want to just take out the wheat; I also didn’t want to use sugar anymore.” He started working on a simple recipe for a brownie. After many trips to Whole Foods and a few months of experimenting, he came up with the Avocado Brownie™. Chef Thomas quickly grew from a hobbyist to a professional baker and created Guilt Free Pastries. Matcha Truffles Make every calorie count with this decadent blend of dates, nuts, and flavor that are packed full of nutritious fiber and antioxidants. They only take 30 minutes to prepare and are so easy, even the kids can join in. Enjoy as a Guilt Free snack or dessert!
Ingredients:

q 1 -1.5 cups pitted dates
1. Soak pitted dates in water for 10-15 minutes. Avoid over-soaking or they will become soggy. Drain and place dates into food processor or blender. Pulse until they are lumpy like a thick soup or guacamole. Place in a lightly greased bowl and set aside.
q 1 .5-2 cups assorted unsalted nuts (Recommended: almonds, pistachios, cashews, & pecans) q 1 -1.5 Tbsp organic matcha green tea powder q P inch of cinnamon q * Optional: 8 ounces melted chocolate for dipping (Recommended: vegan dark chocolate)
2. Put nut mixture in food processor or blender and pulse until they become small pieces (not a powder, which loses the crunchiness). Add to bowl with dates. 3. Add matcha green tea powder to the bowl and a pinch or two of cinnamon to taste.

BLUE-BERRY CHAI SPICED ENERGY BITES

Ingredients: q 1 0 dates + 1 cup warm water to soak q 1 /3 cup almond butter (can substitute peanut butter) q 1 /4 cup hazelnuts q 1 Tbsp flax seeds q 1 /2 tsp pure vanilla extract q 1 /2 Tbsp ground cinnamon q 1 /8 tsp ground ginger q 1 /8 tsp nutmeg q 1 /8 tsp ground cloves q 1 /2 cup + 1 Tbsp dried blueberries q 1 Tbsp coconut sugar (optional)
Instructions: 1. R emove pits from the dates and soak them in warm water for 3 minutes.

2. I n a food processor, grind hazelnuts and flaxseed into a powder.
5. Place mixture in a medium mixing bowl.
3. R emove dates from the water (reserve water for later) and add to the food processor with the hazelnut/flaxseed powder. Add in almond butter and 1/2 c dried blueberries.
6. R oughly chop remaining 1 tbsp blueberries and then fold them into the paste.
4. P rocess for about 30 seconds until a well-blended paste forms. Add 1 tbsp of the left over date water and the vanilla,
