Reginelli Recommends: Slingshot Cabernet Sauvignon
4
Lauren Loeb & Chera Batchelor ran in the Greater Memphis Chamber ‘Move It Memphis’ 4-miler at Loflin Yard in September.
Complex and approachable, Slingshot has classic ripe aromas of berries, currants, and hints of dried herbs, cedar, and oak—a consummate for your Thanksgiving feast. In the mouth the wine begins with a mediumbodied structure with ripe tannins, giving it a round, balanced feel that begs to ‘be drunk now’ with flavors of berries, dark cherries, currants, and herbs. Slingshot is on sale for $21.99. See Wine Enthusiast Mary Catherine Reginelli at Pyramid Wines & Spirits. For more information, call (901) 578-2773 or visit PyramidWines.com.

Same-Day Joint Replacement Helps Athletes Get Back in the Game Faster For runners, cyclists, tennis players, and golfers, severe osteoarthritis can make continuing the pursuit of sports and recreation difficult later in life. As athletes and weekend warriors age into their fifties, sixties, and even later, they often find that hip, knee, or shoulder pain limits their desire and ability to swing a club, hit the court, or pound the trails.
longevity means that more individuals than ever will need a hip or knee replacement (or both) at some point in the next decade. We’re even seeing a dramatic increase in the number of patients age 50 to 60 who seek joint replacement, as opposed to the traditional total joint candidate who was once typically older than 70. Dramatic improvements in the quality and durability of artificial joint components, along with advances in surgical approaches and techniques, have made this procedure much more viable for individuals in their fifties. They can now feel confident that their new joint will last as long as they do.
For patients find too little relief from conservative treatments such as physical therapy, antiinflammatory medication, or rest; the next consideration is often total joint replacement. During total joint replacement, an Orthopaedic surgeon removes and replaces damaged natural components with artificial ones to eliminate bone-on-bone friction and improve range of motion. Patients are commonly concerned with having to spend several days or weeks in the hospital, and that they’ll not be able to return to any level of physical activity after surgery. However, there’s good news:
The level of activity someone may return to after having a hip or knee replaced depends on several factors: the patient’s level of overall health, level of activity prior to surgery, approach to physical therapy, and the type of prosthesis implanted during surgery. Typically most patients may return to low-impact activities such as swimming, walking, golfing, or gardening within three to six months of surgery. Some may bounce back even sooner. In some instances, more moderate levels of activity like cycling or doubles tennis may even be possible for some patients.
Total joint replacement surgery can now be performed on an outpatient basis for some patients, and most athletes can return to low-impact, moderate fitness activities if they take the recommended precautions. As recently as a decade ago, patients undergoing joint replacement in the inpatient hospital setting would check in a day or two before surgery and spend nearly a week in the hospital after having their joint replaced. Advances in care have shortened that average length of stay to some degree, but patients typically still may spend a few nights in a hospital bed after these procedures before going home or being discharged to a rehab facility. Over the past two years, many of our total joint patients have come to enjoy a much more convenient experience through same-day outpatient surgery.

By Patrick C. Toy, M.D
Most patients who take advantage of this outpatient option arrive during the morning and are home in time for dinner. In this surgery center setting, our physicians have complete control over all aspects of patient care, overseeing everything from anesthesia to the nursing staff to on-site physical therapy. This
comprehensive approach enhances patient outcomes and makes for a more efficient and cost-effective process for the patient and their physician. On average, patients are living longer than they once did, while staying active later in life. This combination of exercise and
Regardless of what activities you resume post-surgery, a return to an active, healthy schedule is incredibly valuable. When patients experience debilitating pain from arthritis, they often feel they must give up physical fitness forever. This can lead to a sedentary lifestyle, weight gain, and even depression. Total joint replacement gives many patients a new lease on life while helping them stay in great shape for many years. Dr. Patrick Toy is a total joint replacement specialist at Campbell Clinic. Vaginal Relaxation syndrome occurs when the vaginal canal becomes overstretched, typically during childbirth, but the natural aging process due to loss of collagen and elastin are also factors. Running for a Reason By Christin Yates. Photo by Philip Murphy. In 2006 when Anna Langston ran her first half marathon, the race became more than a personal challenge. On that December morning at mile 10 she exited Overton Park and ran past the Target House. “Seeing the families and supporters of St. Jude cheering with signs was eye-opening for me,” she says. “I realized I was running for a cause.” Every year since, Anna has participated in the St. Jude fundraiser, except the two she was pregnant with her children. The year following her first race, Anna completed the St. Jude Marathon, the longest distance she had yet to run. She fell in love with the exhilaration of the race, which motivated her to pursue a career in health and wellness. Anna got her personal trainer certification and went back to school at the University of Memphis, earning a master’s degree in Health and Sport Science. Anna started her career in corporate wellness by getting a job at Smith & Nephew and is now their Fitness Center’s Program Manager. She works with over 200 members by coaching them, creating training plans, and mentoring them to reach their fitness goals. Smith & Nephew fundraises for St. Jude with a Corporate Challenge Team. Their team averages about 50 participants every year and in 2015 they raised more than $20,000 for the children’s hospital. “The work that St. Jude does is so important, and I love being a part of a team that supports such a worthy cause,” Anna says. Having just completed the Chicago marathon last month, the 34-yearold will be tackling in the half marathon this December.

MEMPHIS RESTAURATEUR GOES VEGAN By Christin Yates. Photos by Philip Murphy. For South of Beale owner, Edward Cabigao, February 1st isn’t just a reminder to begin planning for Valentine’s Day; It marks his “Vegan Anniversary.” Two-and-a-half years ago, the 33-year-old restaurateur committed to changing his diet and bettering his health. When starting this lifestyle change, Ed weighed in at 225 pounds and often felt sluggish and low on energy. “The first week was rough since my body was adjusting, but from there things improved.” Over the next eight months, he whittled himself down to 180 pounds, with minimal physical activity. One year into eating vegan, Ed took up running. After his first five miles, he was hooked on the
sport. Since then he’s completed several half marathons, including the recent Greenline Half Marathon. He’s lost an additional 20 pounds after upping his fitness. Ed runs five times a week—a mix of short, long, and intervals. He also cross trains twice per week. “This really has been a lifestyle change and not a diet,” he says. “I’m healthier and more active than I have ever been in my life.”
Inspired by his commitment to a healthier lifestyle, Ed and his wife, Brittany, have opened Zaka Bowl at 575 Erin Drive in East Memphis. It’s a fast casual restaurant where patrons can put together their own veggie bowls. “I wanted to open a restaurant that would be healthy, but not intimidating,” he says. People can choose from different grains, vegetables, hot garnishes, cold garnishes, and house made sauces.
On a typical day, Ed eats oats with bananas and blueberries for breakfast. Snacks consists of nuts and smoothies throughout the day. He lunches on a big bowl of grains, vegetables, and sometimes tofu. Dinner is usually a large salad with raw vegetables.
Ed has also made small changes to the menu at South of Beale, a gastropub serving new American cuisine. It now features seasonal vegetarian options and almost all of their sides can be made vegan.
“I believe that compassionate choices lead to a cleaner, happier, healthier you— and planet.”

COACH’S CORNER
LAST MINUTE MARATHON TIPS There comes a time as your marathon nears that there is seemingly nothing else you can do. You’ve put in countless miles. Your friends are tired of hearing that you can’t go out for drinks because you’re training. You’ve started checking the weather forecast 10 days out. Before you hand your big day over to fate, there are some things to keep in mind to make sure the race lives up to your expectations..
REMEMBER THE GOLDEN RULE OF MARATHONING: NOTHING NEW ON RACE DAY.
> Everything you wear on race day should have been worn before on a long run. Save that cute shirt you bought at the expo for after the marathon. New clothes and shoes can leave you with blisters or chafing. Stick with what you know so there are no surprises during the race.
> The golden rule also applies to your hydration and nutrition. Do not experiment with something new because you think it will improve your race. Stick to the same breakfast that you’ve been typically eating before long runs. During the race, use the same gels and drinks that you used during training. Mile 20 is not the time to find out that your stomach won’t tolerate something new.
TRUST YOUR TRAINING. REALLY, REALLY TRUST IT.
> T hose long Saturday morning runs, the mid-week speed work, the easy runs with friends—they all had a point: to get you to the start line on race day ready to run. You cannot cram for a marathon. Know that all the miles you ran over the past months prepared you for this day.
> The taper is part of your training and you have to trust it. Squeezing in “just one more long run” a week before your race will only make you tired. Your taper should be a time to recover from the months of training so you are able to arrive at the race rested. Respect the taper.
PREPARE MENTALLY.
> There will be rough spots, but how you deal with them will make the difference in your race. Envision the possible scenarios and how you will cope. Repeating a mantra can get you through them. Don’t think of the miles ahead; try to pass the next person or run to the next aid station. Marathons are as challenging mentally as they are physically.
> Set a goal for the perfectly executed race, but also have a B goal in mind if things don’t go as planned. Temperature, wind, and hills will make things harder and slower, so adjust your expectations accordingly. Visualize reaching your goal and crossing the finish line in celebration.
HAVE A PLAN.
16

COVER PROFILE
The Elegant Athlete By Laurenne Hom. Photo by Darius Williams.
Kimberley Ho-Tsaï In a 2013 interview, a 320-pound player from the Pittsburgh Steelers finally admitted, “Ballet is harder than anything else I do.” Memphis may be lacking in NFL, NHL, and MLB players, but it’s home to professional athletes who work just as long and hard—in point shoes no less. Ballet Memphis and Collage Dance Collective are two professional dance companies, showing us that sports can be more than just helmets and cleats; it can be art. For one ballerina in Memphis, the road to becoming a professional dancer led her far and wide to pursue her dreams. Kimberley Ho-Tsai, 26, learned her first pirouettes in her home country, French Guiana. She had fallen in love with the beauty and the elegance of the art form at a young age when her parents took her to a performance. Kim put on her first pair of ballet slippers by age seven. Kim had her first break at 18 when she won a scholarship to The Ailey School in New York City. “I couldn’t have done this without my family. Moving to a new place, especially New York City, was overwhelming. They were always there for me— financially and emotionally,” says Kim. She continued dancing there for two years before joining the Dance Theatre of Harlem School.
While in school, she didn’t just take classes during the day. From January through April, during audition season, Kim spent her nights and weekends auditioning against hundreds of other dancers for a few coveted spots. “My biggest accomplishment as a dancer,” she says, “is finding my way back up no matter how many failures. I faced so many rejections, but I kept going and I never gave up.” At 24, Kim was hired by Complexion Contemporary Ballet in the middle of a season after another dancer dropped out. She immediately began rehearsing, performing, and touring with them. They completed a US tour and traveled throughout Eastern Europe.
A year ago, Kim relocated to Memphis to be a part of Collage Dance Collective, a professional ballet company located in the Broad Avenue Arts District. They bring in world class choreographers and present contemporary and neoclassical ballet performances three seasons out of the year. As one of the eight professional dancers, Kim works from 9 to 5, like any other job. They begin with classes to warm up, then practice or rehearse with a choreographer for the rest of the day. Depending on their performance schedule, they rehearse multiple shows at any given time. Outside of dancing 40 hours a week, Kim also goes to the gym. “It’s essential for a dancer to cross-train. On light weeks, I go to the gym three times a week, but if I have a heavier schedule, then a little less. I’ll start some type of cardio and switch to the machines to strengthen
my muscles.” Kim is also versed in other types of dance such as salsa, samba, hip hop, jazz, and modern. “I’m extremely lucky that I haven’t suffered an injury in my career so far and I put a lot of effort on taking care of my body,” she says. Her health is founded in a diet of whole grains, vegetables, fruit, and a little bit of meat. Dietary supplements and vitamins help her muscles retain nutrients. Although, she’ll splurge once a week on something like pizza from Aldo’s or tacos at Babalu. “I have to be disciplined in taking care of myself or my performance could suffer,” she says. Kim makes sure to spend time stretching, warming up certain muscles before class, taking epsom salt baths, and massaging herself. As a professional dancer, Kim faces hours of physical exertion and the pressure of delivering a flawless and effortless performance. “When I’m tired and can’t to go on, I remind myself that I have the privilege of making a living from my passion. Hundreds of other dancers would love to have my position. I remember what it’s like to not have a job and that I fought so hard to get here.” Kim is a young and talented dancer in the dawn of her career. Kim says, “Dance is a journey of growth and success happens because we keep going.” She plans to continue dancing professionally for as long as she can and would one day like to return to her home country to expose more young people to the arts. For a list of their upcoming performances visit collagedance.org

WITH AGE COMES STRENGTH By Christin Yates. Photo by Tindall Stephens. Just two days after his 60th birthday, Ronald Nurse, Sr. earned the second place spot in the Masters Lightweight division of the 2016 IFBB North American Bodybuilding Championships. This husband, father, and grandfather shows us that we can be a competitive athlete at any age. Ronald was always active since his days of playing football and running track through middle school and high school. From there he moved on to collegiate wrestling at Mississippi State. By this point, Ronald had already earned a black belt. In his mid-twenties, he discovered weightlifting to complement his studies in taekwondo. In his earliest days of bodybuilding, Ronald worked out with radio personality, Mike Evans of K97-FM, who encouraged him to start competing. At age 36 he entered his first competition, followed by many others. He won first place in all of the local bodybuilding shows, which motivated him to compete in the Tennessee State Bodybuilding Show, where he came in second place. Ronald’s success was fuel for him to work harder and challenge himself even more. Several years later, he placed fifth in his first national competition. Since age 40, he’s competed in more than 30 shows, taking home first and second place titles in many of those competitions. After his big win at the IFBB North American Bodybuilding Championships this year, he hopes to be inducted into the International Federation of Bodybuilder’s Professional League. During his bodybuilding career, Ronald has raised two children and two grandkids. Balancing his family life, work, and fitness goals have been a challenge. “Anything that’s important to you or that you’re passionate about, you’ll make time for it. Whether that’s your kids, your family, sports, working out—you’ll find a way to fit in what you truly care about,” he says. Training became a mental escape from the stresses of everyday life. “I always look forward to working out because it’s the part of my day that makes everything else bearable.” Ronald trains between 60 and 90 minutes six evenings a week at LA Fitness, with additional cardio in the morning three times per week. Through his training, he strives to better his body structure and density. He must continue to develop and condition his muscles as well as develop symmetry and separation. Ronald also focuses on other aspects such as cardio, nutrition, and supplements. In the beginning, his nutrition was lacking. “We had small kids at home, so if there was a cupcake in the cupboard, I was going to eat it.” Over the years, he’s learned to eat more protein and complex carbohydrates. “As a competitor, I know I will never reach perfect, but I strive to do better every single day.”

Staying Fit and Healthy With Pilates By Christin Yates. Photo by Philip Murphy.
Teresa Brooks, M.D. AGE: 61 OCCUPATION: Radiologist at Memphis Radiological PC WHAT MADE YOU INTERESTED IN PILATES? I initially read about pilates in the late 1990s as it was becoming popular on both coasts as a way to improve core strength and improve flexibility. I was looking for something to add to my regular strength training and walking routine, but at that time there were no classes in Memphis. An article
came out about Tamara Hoffman who was coming to become the ballet mistress at Ballet Memphis. She was trained in the Stott Pilates method and would offer classes at the Ballet Memphis studio. I was in her first class in 1999 and I’ve been going ever since. HOW FREQUENTLY DO YOU ATTEND CLASSES? I attend three classes per week: one mat, one equipment, and one combination Pilates/body conditioning class. FAVORITE MOVES: The teaser on the wall unit and the short spine on the reformer machine.
ADVICE FOR PEOPLE INTERESTED IN PILATES? The Pilates Center of Ballet Memphis offers an intro to Pilates class once a month—try it out! WHAT IS YOUR APPROACH TO NUTRITION? Everything in moderation! I concentrate on healthy meats, fish, fruits, and vegetables. However, my guilty pleasure is cookies. WHEN I’M NOT WORKING OUT, I LOVE TO… I enjoy walking on the trails at Shelby Farms Park, the Wolf River Greenway, the Greenline, and Cameron Brown Park. I also like to travel and garden. I often spend my free time with my husband, Thane, and our cat, General Sterling Price.
“My goal is to be a fit, flexible and a healthy person throughout the rest of my days.”
Pilates is a total body workout, done on a mat or with the aid of equipment, that is intended to strengthen and sculpt the body while doing simple moves that require precision and control. At Ballet Memphis, there are beginner, intermediate, and advanced classes available. Ballet Memphis offers an introduction to Pilates class once per month. 22

Chocolate SunButter Cups
By Margaret Molteni
November is conveniently sandwiched between two notoriously sweet months. You can’t possibly enjoy the pleasures of candy on Halloween and skip right to the desserts at Christmas without treating yourself a little during the Thanksgiving month. Instead of unwrapping those mediocre peanut butter cups that your kids got while trick-or-treating, try your hand at these incredibly easy and surprisingly healthy four-ingredient SunButter Cups.
INGREDIENTS:
DIRECTIONS:
q 1 package (9oz) dark chocolate chips (preferably dairy-free with no refined sugars)
1. L ine a 24 cup muffin pan with mini cupcake liners.
q 1 /2 c unsweetened sunflower seed butter q 1 .5 Tbsp coconut Sugar q 1 Tbsp coconut Oil
2. I n a small sauce pan over the lowest heat setting, melt chocolate chips and coconut oil together. Stir constantly to keep it from burning. 3. I n a small mixing bowl, combine sunflower seed butter with coconut sugar.
5. I n the same liner, dollop about a tsp of the sunflower butter mixture. Then cover the sunflower butter mixture with another tsp of chocolate, or until the liner is almost full and there is no visible sunflower butter. Repeat until all 24 cupcake liners are filled, or until the ingredients run out. 6. Refrigerate at least 2 hours before serving.
4. O nce the chocolate has melted, take your first cupcake liner and add about 1 Tbsp of the melted chocolate.

Prosciutto Wrapped Stuffed Pork Tenderloin By Andrea LeTard
The temperature has dropped, Thanksgiving is right around the corner, and it's time to start thinking about the comfort food we crave this time of year. This pork tenderloin is stuffed full of fall flavors such as apples, dates, and cinnamon. Wrapped in prosciutto, the meat gets extra crispy in the oven and tender in the middle. It’s so good, you may want to forgo the turkey and have this as the centerpiece of your Thanksgiving dinner.
INGREDIENTS: q 4 Tbsp butter (softened) q 1 shallot (thinly sliced) q K osher salt q P epper q 1 large apple (thinly sliced) q 6 dates (seeded and chopped) q 1 Tbsp brown sugar q 1 tsp cinnamon q 1 /2 tsp cardamom q 1 pork tenderloin (3 to 4 lbs) q 2 Tbsp minced herbs (sage, rosemary, thyme) q 2 Tbsp whole grain mustard q 1 Tbsp Dijion mustard q 4 oz prosciutto DIRECTIONS: 1. H eat oven to 425F. In a medium saucepan, melt 2 Tbsp of the butter and saute the shallots with a dash of salt and pepper until soft. Add the apples and dates with another dash of salt and pepper. Continue to cook until caramelized. Sprinkle in the brown sugar, cinnamon, and cardamom and cook one more minute.
30
2. B utterfly the pork tenderloin by cutting down the middle on one side of the meat until it opens like a book. Be careful to not cut all the way through. Evenly distribute the apple mixture inside the pork and close tightly. Liberally salt and pepper the meat on all sides.
3. I n a bowl, mix together the remaining 2 Tbsp of butter, minced herbs, and both types of mustard. Spread evenly on all sides of the tenderloin, being careful not to let the apple mixture spill out. Place the tenderloin on a baking sheet lined with parchment paper. Take each slice of prosciutto and wrap the tenderloin, letting the prosciutto act as a "tie" to secure the apple stuffing. Roast in the oven for 15 to 20 minutes or until pork is cooked through. Cover in foil and let rest for at least 10 minutes. Slice and serve.
