Bright cherry color with a garnet edge. On the nose, initial ripe fruit mixes with spicy aromas and creamy, toasty notes from complex oak. Third Annual Arkansas Delta Flatlander on Saturday, Oct. 8 Third year’s a charm for West Memphis cycling event! Mid-South cyclists who are itching to ride the Arkansas side of the Mississippi River don’t have to wait for the Big River Crossing to open. Thanks to the Arkansas Delta Flatlander, riders of both road and fat tire bikes will get the chance two weeks before the grand opening of the Harahan Bridge boardwalk. The Third Annual Arkansas Delta Flatlander is set for the morning of Saturday, Oct. 8 in West Memphis. A second ride added in year two, the St. Francis Levee Gravel Grinder, takes place that afternoon. West Memphis tourism director, Jim Jackson, says the event has helped build anticipation of the outdoor recreation opportunities Mid-Southerners will have once the Big River Crossing is open. “It’s no secret we were trying to be ahead of the curve on this,” Jackson said “We started this event to help answer the question of what folks would do when they rolled off the Harahan and into West Memphis. The riders who participated in the first two know the potential over here. And we’re confident that they are spreading the word.” The Flatlander is a metric century ride (100 kilometers or 62 miles) that will start in the morning at the trailhead for the new Big River Trail, a 2.6-mile trail that leads to the Harahan approach. It will follow the path of the Mississippi River south, circling Horseshoe Lake before heading back north to the start.

Twenty and 40-mile routes will be available, as well. The Gravel Grinder is a 21-mile ride north on the St. Francis Levee through the proposed Delta Regional River Park. The rough terrain of the ride, which will take place in the afternoon, is meant for off-road bikes. Both rides start at the trailhead of the Big River Trail. Food, beverages, and music will be available across the street at Pancho’s, after both rides. At just over a mile in length, the Big River Crossing will be the longest public pedestrian bridge across the Mississippi River. It serves as the centerpiece of the multi-milliondollar Main to Main Intermodal Connector Project linking downtown Memphis with West Memphis. The Main to Main project also includes Big River Trail on the Arkansas side. A portion of the Flatlander route overlaps the Mississippi River Trail (MRT), 3,000 miles of on-road bikeways and pedestrian and bicycle pathways stretching from Minnesota to the Gulf of Mexico. Serious distance cyclists will have the option of crossing the bridge and continuing onto the MRT as soon as the Big River Crossing is fully open. Less ambitious riders, walkers, and runners will have to wait for the planned Delta Regional River Park, which will be established on what is now low-lying farm land between

the Harahan and Hernando DeSoto bridges. Plans include a 6.7-mile trail loop that will be built for bicycles and pedestrians. Construction on the trail is expected to begin in November of this year. This year Jackson’s office will work with P.R. Event Management, LLC to manage the ride. PREM was founded in 2015 by principal owners Wyndell Robertson and Pam Routh, a husband-wife team with 30 years experience in managing sports events. PREM produces fun and safe sporting experiences, including cycling and adventure racing, 5Ks, half marathons, triathlons and duathlons.

“With a successful and proven track record, PREM managed events bring high recognition results which draw awareness, exposure and support for all the community and non-profit organizations with whom they partner,” Jackson said. “We think their expertise is going to do nothing but enhance the Flatlander event. “West Memphis is going to be an outdoor recreation destination. The Flatlander is a preview of what’s coming,” he continued, “and we’re proud and grateful to be part of it.” Learn more and register at www.arkansasdeltaflatlander.com

Massage Therapy for Cancer Care and Lymphedema

By Kat Farber, LMT, BCMT

Massage can be a helpful tool in oncology care when appropriate modifications are made. Research shows that it can be useful for relieving some of the conditions associated with cancer, such as pain, fatigue, nausea, and lymphedema. Lymphedema is an abnormal accumulation of lymph fluid that causes an area of the body to swell. It occurs in people who have had lymph nodes damaged or removed, which is common in those who have lived with cancer. It can be a chronic condition that inhibits everyday living. Manual Lymph Drainage (MLD) is part of Complete Decongestive Therapy (CDT), which is used to treat lymphedema. It is a massage technique that may help ease lymphedema prior to its onset or after signs have begun. This gentle technique helps increase and redirect lymph flow from affected areas. By clearing inflammation and redirected congested fluid, it assists with relieving pain. MLD and oncology massage are safe treatments for people currently in chemotherapy and radiation therapy. MLD is also a useful technique for other injuries including whiplash, sprains, post-surgical edema, fibromyalgia, Chronic Fatigue Syndrome, and migraines. When seeking a therapist trained in oncology massage and MLD, it is important to seek someone who has received professional training. It is also important to understand that Manual Lymph Drainage and lymph massage are different techniques. For people affected by cancer, visit the Society for Oncology Massage website (s4om.org) to find a qualified massage therapist. They should have received some continuing education in oncology massage before taking clients who have lived

with cancer. Benefits of Oncology Massage include increased circulation, increased range of motion and relaxation, improved sleep, decreased fatigue and nausea, decreased anxiety and depression, and relief of muscle soreness.

Vaginal Relaxation syndrome occurs when the vaginal canal becomes overstretched, typically during childbirth, but the natural aging process due to loss of collagen and elastin are also factors. IntimaLase® is a unique laser therapy designed to stimulate collagen and elastin using thermal energy, which can help to tighten the vaginal canal and tissue. Another benefit of healthy vaginal tissue is improvement in lubrication where dryness can lead to pain during intimacy. The process is simple, non-invasive, comfortable and requires no incisions. The procedure is safe and usually takes only a few minutes.

Book your consult today with Valerie Monismith, RN. to learn more about IntimaLase®. This treatment is only available for mature women over 35 who are no longer planning on becoming pregnant. Safe for women who cannot take estrogen therapy.

Fifty Shades Of The Graying Vagina By Susan Murrmann, MD

Love it or hate it, the “Fifty Shades of Grey” trilogy got women to be more vocal about sex and sexuality. Come on—raise your hand if you own a vibrator! Ask any gynecologist and we’ll tell you that women are finally talking—really talking— about their sex lives. Vaginas and other parts “down there” may be out of sight, out of mind, but it’s important to start the conversation about how they mature and age. Don’t worry—your vagina won’t actually turn gray. Much like the face, the vagina and its external counterpart, the vulva, actually go through the same age-related changes—loss of fat, sagging, discoloration, and even some wrinkles. Until women started shaving, waxing, and stripping, they were largely oblivious to the changes taking place in that dense thicket of hair. Major changes begin to occur in the vaginal area at the start of menopause. Along with hot flashes and night sweats, women complain about dryness and painful intercourse that increases over time, which can lead to lack of sexual drive and pleasure. Even the size of the vagina decreases over time, contributing to painful intercourse. Discoloration may also occur, making the vulva darker and the vagina more smooth and pale. Decreasing hormone levels are the culprit. Decreasing hormone levels contribute to loss of muscle tone, blood flow, and collagen, as well as the thinning of the external skin and mucosa. It makes it difficult for the external skin and vaginal mucosa to retain water. The external labia, once revered as the “Lotus Flower,” now starts to whither. Overall lubrication decreases, especially during intercourse, and dryness and itching occur. Women typically feel uncomfortable during intercourse and sometimes in their clothing due to the skin laxity.

12

You must be thinking “please, stop! This is too much information!”

for hormone replacement therapy, so it’s best to consult your doctor.

There are ways to combat some of these aspects of aging. Pharmaceutical companies were the first responders to the maturing vagina and have created estrogen-based vagina creams to improve some of the symptoms mentioned. However, given the possible link between estrogen and breast cancer as well as a mass of cream inside your vagina, this option starts to seem less attractive. Oral forms of estrogen can be helpful, but do not likely reach the vaginal tissue as much. Not every woman is a candidate

There are several over-the-counter remedies such as pH balancing gels and probiotics that will help the vagina maintain an environment we consider “normal.” While these products may relieve symptoms, they will not stop age-related changes from progressing. Even the newest pharmaceutical, non-hormonal concoction has limited potential. To slow vaginal aging, we’ve learned to apply the same technology used on the face and body to

the intimate area. The sources used to tighten our face, improve tissue texture and lubrication, and increase collagen formation are now being used to aesthetically enhance the appearance of the vulva and improve the integrity of the mucosal lining of the vagina. This also enhances lubrication and sexual satisfaction—a breakthrough for the complicated puzzle of female sexuality. This is literally “bringing sex back” to women and their relationships, which is enhancing the second act of their lives and improving relationships! Special thanks to Cindy Wolf for contributing to this piece.

Dr. Susan G. Murrmann is a co-founder of the McDonald Murrmann Women’s Clinic, celebrating its 20th anniversary this month, and co-founder and medical director of the McDonald Murrmann Center for Skin, Laser and Healthy Aging. She lectures locally and internationally on a variety of women’s health topics, and she is considered an expert on bio-identical hormone replacement, menopause management, female “rejuvenation”, and healthy lifestyle choices. Dr. Murrmann focuses on educating her patients about healthy aging by stressing that it is multifaceted and encompasses all areas of a women’s lives….even those parts that her patients don’t want to discuss! Melt Away Trouble Spots with SculpSure This FDA approved fat elimination treatment is a new alternative to liposuction with no down time. It uses noninvasive lasers to break down fat cells, making them gone for good. By Robin Beaudoin. Photo by Tindall Farmer.

Tracy Douglas, a St. Jude Nurse Practitioner, has been a runner for over 25 years. This 51-year-old has plenty of 50K races under her belt and even ran the Boston Marathon in 2014. Even though she considered herself a healthy eater, she always struggled with a few trouble areas. “After having kids, the tummy area was one of those places where I stored excess fat. I worked with an online trainer, but no matter how much weight I lost, that area never seemed to improve.” She decided to give SculpSure a try after hearing about it from friend and physician, Dr. Leah Tonkin at Adams Patterson Gynecology & Obstetrics. She went in with no expectations and ended up surprised at the difference it made. Tracy says, “I took pictures of my progress throughout the treatment and saw a difference. It really worked!” SculpSure utilizes a 1060mm diode laser body-contouring technology to reach the fat under the skin’s surface, where the fat eventually breaks down and is naturally absorbed and removed from the body (via the urine, as with natural fat loss). Areas such as love handles and stubborn belly fat are popular targets for reduction. SculpSure patients have experienced 24 percent fat reduction of these areas. Laser heat damages the fat cell integrity, and over 6 to 12 weeks, those cells disappear and those areas physically decrease in size. During the procedure, a belt and pads attached to wires and hoses are strapped to the patient for a 25 minute session. Alternating waves of hot and cold are felt, which protects the surface of the skin. Douglas felt no pain during her treatment. “It was kind of a stingy hot, but it really never got uncomfortable. The sensation was weird, but never unbearable,” says Tracy. One to four sessions may be required, depending on the desired results. SculpSure is not a replacement for diet and exercise, but is designed for the small trouble spots that do not respond to a reasonable diet and exercise regimen. This may be an option to consider if: • You do not want incisions or have concerns about scarring. • You prefer not to undergo anesthesia. • Surgery conflicts with your schedule. SculpSure takes only 25 minutes and requires no recovery or down time. • You want to avoid like pain. SculpSure is so well tolerated that over 90% of patients would recommend it. Patients interviewed after using SculpSure were asked to rate their discomfort on a scale of 1 to 10, and an average of 3.7 was reported. Results are not instantaneous. Results may be visible 12 weeks after treatment, according to SculpSure’s website. Tracy says, “It was a good three months before I could really see significant results because it was so gradual. But in the end I definitely saw a difference.” For a free consultation about SculpSure contact Adams Patterson Gynecology & Obstetrics at (901) 767-3810 or visit adamspatterson.com

COACH’S CORNER

RUNNING IN THE WILD Cactus Ed certainly had deeper implications when he coined this phrase, namely the encroachment of civilization on our wilderness and our natural resources; but as urban dwellers with several inches of asphalt separating our daily lives from the natural world, our human spirit cries out in agreement of our need for wilderness on a very personal, visceral level. We, especially as runners and walkers, want to get outside and enjoy nature! Memphians are privileged to have access to miles of wooded trails in which to get out and fulfill, on some level, that necessity of wilderness. There are several systems of trails in the city proper and in surrounding areas that make for plenty of options for getting away from the concrete jungle and into the trees. There are few better ways to spend a day than with a trail run followed by drinks with friends! Following are a few tips to help you become comfortable with the idea of moving some of your runs away from the pavement, or the treadmill, and to the dirt. Be careful out there, you may find that your spirit soars to heights that will challenge you physically and mentally in ways you never imagined. At that point you’ll begin to understand just how necessary wilderness is.

BE SAFE – Run with friends or a canine companion. If running alone is the

only option, let someone know where you are running. Always be mindful of your surroundings.

YOU’RE IN NO HURRY – Allow more time for trail runs, as the terrain

will slow your pace. Avoid letting frustration take over because of the slowed pace. Enjoy the time. Take in your surroundings. It’s not always about pace and distance.

KNOW AND UNDERSTAND TRAIL RUNNING ETIQUETTE – Yield to other trail users. Say hello or good morning. Stay on the designated trails and do not create new trails. That means run straight through mud puddles. Not around them. And… DO NOT LITTER!

TRAIL RUNNING TECHNIQUE – Run with a shorter stride in an

effort to keep your feet beneath you and maintain balance. Always look 10 to 15 feet down trail in order to see any obstacles in your path and to pick the best line.

WHO DOESN’T LOVE GEAR? – The trail running world is home to

some of the coolest gear imaginable. And most of it superfluous. Of course that doesn’t stop us from wanting it! Your regular running shoes will suffice on our local trails. Be sure to carry some fluids with you. Sunglasses can protect your eyes from trees and shrubs.

HAVE FUN! – That one should go unsaid but we all need reminding. Get

outside, take some deep breaths, and simply enjoy the natural world around you. Be curious. Check out local foliage and wildlife. Stop and soak it all in every now and again.

LOCAL TRAIL SYSTEMS: Shelby Farms Park, Wolf River Bottom Trails, Overton Park, Stanky Creek, Herb Parsons Lake, Harvester Park, Collierville Greenway Trails.

Sister Pact Provides Breast Health for ALL Women By Robin Beaudoin. Photo by Tindall Farmer.

“No one ever expects to get the news that they have breast cancer,” says Debra Stansberry. In 2008, Debra noticed an irregularity during a breast self-exam, which led to a mammogram. She was in her mid-thirties and was diagnosed with early stage breast cancer. Women typically start receiving mammograms at age 40, when they’re at higher risk for the disease. Debra underwent a lumpectomy and rounds of chemotherapy, which successfully eradicated the tumor. Throughout her treatment, she only missed one day of work—the day of her surgery. “I didn’t want people to feel like I was sick. I was not willing to let cancer break any of my plans,” she says.

“We’re mothers, sisters, daughters, wives, we’re the boss at work. We wear so many hats and it’s so important for us to take care of ourselves.” Debra’s experience with breast cancer led her to become the spokeswoman of Sister Pact, an organization that helps connect women of all backgrounds and financial ability with resources to support breast health. “We’re mothers, sisters, daughters, wives, we’re the boss at work. We wear so many hats and it’s so important for us to take care of ourselves.” Sister Pact was founded by the Memphis Breast Cancer Consortium, which aims to lower the mortality rate of black women in Memphis by raising awareness of breast health issues and connecting them with more resources.

18

Veronyca Washington, the project director of the Memphis Breast Cancer Consortium says, “While high quality screening programs can identify breast cancer in its earliest, most treatable stages, most of that equipment is located in the more affluent areas, and the obstacles women face when trying to receive a mammogram include transportation, child care, and lack of finances or insurance. This positive correlation with the breast cancer mortality rate is just what inspired Sister Pact, a valuable resource for women in Memphis to learn more about breast health, where to get a mammogram, low-cost and no cost options, financial assistance, and local support groups.”

Veronyca continues, “Because of the success and how well received the Sister Pact campaign has been in the Memphis market, Genentech plans to expand to other cities plagued with breast cancer mortality disparities like Memphis. I want Memphis to be known as the city that turned things around.” Debra says, “I’ve been blessed with the opportunity to be vocal for Sister Pact. We must stress accountability for ourselves and remind our friends and family to get mammograms. I was

35 when they found the stage one cancer. Had I waited to get a mammogram until after 40, I wouldn’t have had a chance and I would have left my two kids without a mother. Most people don’t think about the importance of a mammogram or think that because cancer doesn’t run in their family that one isn’t necessary. Check with your doctor and see if it’s the right time for you. Keep it on your radar, and let’s hold each other accountable.” Learn more about breast health at www.sisterpact.com.

Bouncing Back From Breast Cancer By Jennifer Brezina. Photo by Philip Murphy.

Cancer is never an easy journey, but one that some of us will inevitably face. However, regaining your health can be a whole lot easier if you go into diagnosis, treatment, and recovery already at a certain level of health. Christine Patterson, 48, received her positive diagnosis for late stage 2 HER2 breast cancer in the midst of moving to a new house and taking care of three children. Christine administered a self breast examination and noticed something was wrong. “I immediately felt something in my left breast,” she said. “It felt like a dense, thickened area, maybe one inch in size. I figured it must be a benign cyst, but I definitely wanted to check it out.” A mammogram revealed that she was already dealing with a more aggressive form of breast cancer, but thankfully it hadn’t yet spread.

“When you hear cancer, you immediately panic and think you’re going to die,” Christine says. “You don’t want to believe it at first.” Christine was able to work with Dr. Carlos Arteaga, head of HER2-positive breast cancer research and treatment for the Susan G. Komen Foundation at Vanderbilt University Medical Center. She underwent a whirlwind of exams, biopsies, consults —even genetic testing, which found she did not carry an identifiable inherited gene mutation that would increase her breast cancer risk. Before her diagnosis, Christine had a rigorous exercise schedule wither her fitness trainer Cheri Ganong-Robinson at Orangetheory. She made it a point to exercise, eat right, and make her health a priority. Christine’s surgeon, Dr. Alyssa Throckmorton of Baptist Medical Group says, ”While some of the factors associated with breast cancer can’t be changed, such as being a

woman, age, and genetics, there are things you can do to reduce your risk, such as exercising regularly, watching your weight, and limiting your alcohol use. We know about some breast cancer risk factors, but why some women develop breast cancer and others do not is sometimes unexplained.” Christine began chemotherapy treatment two weeks after her diagnosis in March 2015 and received six rounds of two chemotherapies and two monoclonal antibodies. A few months later, she underwent a double mastectomy followed by reconstructive surgery. During this time, Patterson says her oncologist Dr. Reed Baskin told her to put any intense workouts on hold. He recommended one complete year of rest after beginning chemotherapy, with the exception of walking and light yoga.

“I believe the better you can treat your body, the better you’re going to respond and get well.”

20

SURVIVOR “Each person’s cancer treatment is going to be different, so you really have to listen to your oncologist. Going through the heavy doses of chemo really affects your energy level, plus the surgeries take a toll on your body, too. After each treatment you feel bad for about eight to 10 days, and as soon as you start to feel back to normal it’s time for another round. It truly takes a while to get your full stamina back.” This March, one year after her diagnosis, Christine finished her final round of chemotherapy, and has gradually started working out again. She meets with her physical therapist and fitness trainer, Lynn Apple, several times each week. “Lynn has helped me regain the range of motion back in my arms, since the mastectomy took such a toll,” she says. “And then because she’s a physical therapist and trainer, she knows from the medical side what your body should be doing. I lost a lot of core strength over the past year, and I’m just now getting my motion and strength back.” Christine is convinced that she bounced back relatively fast due to her healthy eating habits and being physically fit from the start. After her diagnosis, she cut all sugar from her diet and focused on eating fresh vegetables, grilled chicken, and fish. Even when chemotherapy threw her taste buds off, she says she would liven up her meals with spices and experiment with pureeing broccoli, asparagus, and cauliflower into soups. “I believe the better you can treat your body, the better you’re going to respond and get well,” she says. “What you put into your body can make all of the difference in the world. I thank God every day that I caught my cancer early enough. I feel like a new person, and I’m so appreciative of my health, my life, my family, and friends.”

Breast Cancer

MYTH vs FACT MYTH: There is only one type of breast cancer. FACT: There are many types of breast cancer. These various cancers behave uniquely and are treated in different ways. MYTH: You can only get breast cancer if someone in your family had it. FACT: The majority of people who get breast cancer have no family history. According to the American Cancer Society, only about 5% to 10% of breast cancer cases are thought to be hereditary, meaning that they result directly from gene defects passed on from a parent. MYTH: Everyone should get mammogram screening beginning at age 40 or 45. FACT: While many organizations publish guidelines, there is no one-size-fits-all approach to mammogram screening. In fact, most screening guidelines are based on women of average risk and are not designed for women who have other factors that may put them at risk. Breast surgeon Dr. Alyssa Throckmorton of Baptist Medical Group says that each woman should have a conversation with her primary care physician about possible risk factors and when to begin screening.

QUICK START GUIDE TO CARB CYCLING FOR WEIGHT LOSS By Laurenne Hom

Low carb diets area great in theory, but often not sustainable in the long term and can do metabolic damage. The reason low carb diets work in the short term is because by removing carbs, we avoid insulin spikes, the hormone that stores fat. Instead, low carb diets promote leptin, the hormone that simulates fat loss. This works for a while until the body adapts, causing us to “plateau.”

CARB CYCLING RULES:

TO GET STARTED, CALCULATE:

Carb cycling works by cycling through low (or no) carb days, moderate carb days, and high carb days. By giving your body a different ratio of fat, protein, and carbs everyday, it doesn’t have a chance to adapt, helping the body balance its hormones and avoid the plateau. And let’s be honest, adding in some carbs makes eating a lot more fun!

Everyone approaches carb carb cycling differently, depending on your level of physical activity and how your body responds to carbs. It’s all about finding the right ratio for your body. The simplest way to approach it is to keep your protein intake the same each day. Fat intake should also be about the same, increasing some on low carb days. Your high carb days may be only 50% more carbs than moderate carb days or it could be double or triple a moderate carb day. Maybe you prefer more low carb days to moderate carb days during a week. There isn’t one “right” way to carb cycling, so experiment and find out what works best for you!

• P air your high carb days with your most active days of the week.

• T otal weekly calories = target daily calorie intake x 7

• Do not plan two high carb days in a row. • C arbs preferably come from healthier sources such as vegetables, fruit, and whole grains.

• Daily protein intake (in grams)

Slow Cooker Pumpkin + Short Rib Chili by Andrea LeTard

Summer heat may be known to last through October here in Memphis, but it’s time to start thinking about cozy sweaters, pumpkin lattes, and brisk fall air. The end of another sweltering summer usually feels like a cause for celebration, and fall is perfect season to bring your family and friends together over a hearty, comforting bowl of chili. Even better, it’s the perfect time of year to break out your slow cooker, which is the perfect kitchen tool for autumn meals and makes life easier for those busy back-to-school days. Slow Cooker Pumpkin + Short Rib Chili, also known as “the best chili on earth,” is full of hearty meat and savory spices in every bite. To help save time, steps 1-4 can be prepared the night before, so the next morning all you have to do is plug in the slow cooker. You’ll come home to the smell of a new season and be more ready than ever for that crisp, cool air.

INGREDIENTS: q 2 -3 lbs short ribs q 2 bottles pumpkin beer (optional) q K osher salt q P epper

DIRECTIONS:

1. B ring pumpkin beer and 2 cups water to a boil in a large pot (if not using beer, add 3 more cups of water). Add the short ribs to the water allow to boil for about 2 minutes. Lower heat and let them simmer for 10 minutes. Afterward, drain and pat dry to remove some of the fat from the ribs.

q 1 large onion (chopped) q 2 garlic cloves (minced) q 1 orange bell pepper (chopped) q 3 chipotle peppers in adobo sauce (chopped with some of the sauce) Found in the international section of most grocery stores

q 2 Tbsp chili powder q 1 Tbsp cumin q 1 tsp oregano q 2 Tbsp brown sugar q 1 /4 cup maple syrup q 2 (14.5 oz) cans diced tomatoes with green chilies q 3 cups beef broth q 1 can pumpkin purée q 1 can black beans (drained and rinsed) q 4 whole cloves q 1 .25 tsp ground cinnamon Optional Toppings: Chopped green onions, Sour cream

30

2. H eat a pot or Dutch oven on high heat, adding a drop of olive oil. Add salt and pepper to both sides of the meat and sear them until they are nice and brown. Then set them aside 3. I n the same pot, add olive oil, onions, garlic, bell pepper, and a heavy pinch of salt. Cook veggies until soft. Then add chipotle peppers with some of the adobo sauce, chili powder, cumin, oregano, and brown sugar. Stir together and let cook for about 2 minutes. 4. D ump cooked veggies into the slow-cooker. Add maple syrup, tomatoes, beef broth, pumpkin purée, and black beans. Stir to combine and nestle the short ribs in the liquid. Sprinkle cloves near the top, so they are easy to find and discard later. Cover and refrigerate if prepping in advance. 5. W hen ready to cook, set the slow-cooker on low heat. Allow it to cook for 6 to 8 hours. Uncover the cooked chili and discard cloves. Transfer tender short ribs onto a plate or cutting board to remove the bones and fat. Shred the short rib meat into small pieces with two forks or your hands. Skim the surface of the chili to remove any extra fat floating on the top. Add the shredded meat back into the slow cooker and stir to combine. Stir in the cinnamon. Taste the chili and add 1/4-1/2 tsp of salt if needed. Serve in bowls and top with green onions and sour cream, if desired.
