Ingredients:

1 lb ground turkey

1 cup chopped spinach

3 green onions, diced

2 Tbsp fresh dill, finely chopped

1/3 cup feta cheese

3 tsp rolfe rub seasoning (Rolferub.com)

1 egg

Optional toppings:

Tzatziki sauce

Avocado

Roma tomato

Bibb lettuce

Lemon juice

In a large bowl or plastic bag, combine the ground turkey. spinach, feta cheese, dill, egg, rolfe rub, and green onion. Then, form into burger patties.

Prepare the patties on a grill or in a castiron skillet. If using a cast-iron skillet, first get it hot and add about 1 Tbsp of olive or avocado oil and sear the meat on each side for 3–4 minutes. Cook until charred and no longer pink.

Serve with tzatziki sauce on a bun or in a lettuce wrap. Add your favorite toppings and give it a squeeze of fresh lemon juice.
