Church Health 2018 Christmas Card Features Pam McDonnell Artwork “Sincerity” Christmas card sales support charitable health care and outreach for uninsured patients. Church Health’s Christmas Card program—its largest annual fundraiser—is underway, offering businesses, congregations, social groups, and individuals an opportunity to extend holiday greetings while advancing the care and services offered by Church Health. Featuring “Sincerity,” a work contributed by beloved local artist Pam McDonnell, Church Health Christmas cards may be sent in honor or memory of loved ones, friends, clients, or even coworkers. Those honored receive a hand-inscribed card acknowledging the gift. Cards recognizing a memorial gift will be sent to the person specified by the donor. Church Health volunteers handwrite and send the cards on behalf of card purchasers. “In my painting, ‘Sincerity,’ I consider how bare honesty brings about beauty if—and only if—each piece, however similar, celebrates its own unique nature,” explains McDonnell. “Each piece within the whole can be viewed as a prayer, symbolizing the ways people relate to themselves and others with gentle truth and honesty.” Proceeds from the Christmas card program bring a warm holiday greeting to recipients while providing much-needed care for those in need. Innovative Dentistry Thrives in Crosstown Crosstown Concourse has become a vibrant center for innovation in both health care and the arts. After Dr. Daniel Bird sold his traditional dental practice in West Memphis, Ark., he decided Crosstown Concourse was where he belonged. “I knew it would work for me because I wanted to build a new practice from scratch and do things differently,” he says. Crosstown Dental Group has been growing quickly since it opened in September 2017. One of the most distinctive facets of this practice is its use of state-ofthe-art imaging technology for restorative dentistry. Not only did Dr. Bird invest in a CEREC Machine, which eliminates the need for dental impressions and temporary crowns, but he also built an on-site manufacturing lab. “We’re able to get matches in shape and color that are amazing,” he says. “The computer is smart enough to scan the tooth beside the one we’re restoring.” While other dentists take images or impressions and then send the specs out for fulfillment, Crosstown’s in-house technicians are usually able to finish the job in about an hour. “Nobody else in Memphis does this,” he says. Once the techs have the specs, Dr. Baird gives his patient a special Crosstown gift card and sends them off to enjoy their choice of amenities “They don’t have to sit in a chair. They can have ice cream or coffee, get lunch, or treat themselves to a manicure, on me. I text them when their crown is ready.” He says, “A patient came in at 9 am, and all his upper teeth were bad. He either needed dentures or crowns. I prepared 14 teeth this morning and sent him to lunch. He came back from lunch and left with a new smile.”

This turnaround time has gotten rave reviews from patients, and Dr. Bird continues to raise the bar.

“Everyone knows they should floss and brush their teeth two to three times per day,” he says. “Most people do that, but they still don’t like going to the dentist.”

That negative perception inspired him to revolutionize his appointment experience.

The facility is set up on a cart system that allows patients to remain in one place during the entire appointment process. “We’re equipped to do anything, in any room, at any time,” Dr. Bird explains.

“We don’t have a waiting room. No magazines or paperwork,” he says. “Patients submit their forms on their smartphones, sign in with our coordinator at our kiosk, and then go directly to a treatment room.

Other revisions to the office atmosphere include upbeat music to cover the sound of equipment and a dash of aromatherapy to mask the medical smell. Crosstown Dental Group accepts most major

Winter is Flu Season, and It’s Coming What is The Flu? The flu virus is not a single entity, but a wide variety of different viruses all in the family called influenza. There are types A and B, and type A is divided into subtypes based on two surface proteins on the virus (labeled “H” and “N”). These subtypes are categorized from H1 N1 all the way to H18 N11, which, by the way, is found only in bats. Aside from the seasonal flu transmitted human-to-human, there are dog flu, cat flu, bird flu, bat flu, not to mention horse flu, whale flu, and swine flu. Because there are so many varieties of flu, we must get a flu shot every year. Influenza viruses are changing constantly and do this in two ways. They make small continuous changes over time that eventually lead to significant differences. The second type is an abrupt mutation leading to a dramatically new subtype of flu. The latter can produce a virus that is so different that we have no baseline immune protection, which can lead to a much wider and more severe outbreak.

When is it The Flu? Flu symptoms can be similar to a cold: fever, chills, cough, sore throat, headache, body/muscle aches, nasal congestion and drainage, fatigue, etc. However, the onset of the flu happens more abruptly, and symptoms are much more severe. The influenza virus is always around but starts to pick up in November and decreases by the end of March. The usual time from exposure to illness is two days but may range from 1–4. A person is most contagious in the first 3–4 days, but it can span from one day before up to one week after symptoms start. Aerosolized droplets that get coughed or sneezed into the air spread flu. During flu season, avoid people with flu-likeillness, and if you have flu-like-illness, avoid others. Good hygiene includes covering your cough and sneeze and washing your hands frequently. (Wearing a surgical mask with the words “harbinger of disease” written across the front in Sharpie is ideal.)

What do we do for The Flu? Like the common cold, we don’t have a cure for the flu. Antiviral medicines only shorten flu symptoms by a day or so, and only if started within 48 hours of illness. Their main benefit is

helping people at high risk of developing severe complications from the flu. This would include those under age two or older than 65 and people with chronic comorbid conditions: lung, heart, kidney, liver, blood, or brain disease; diabetes; HIV; pregnant; morbidly obese; nursing home residents; etc. Last year’s 2017-18 flu season was classified as a high severity across all age groups. It had the highest peak, child mortality, and hospitalization rates for all ages since the 2009 pandemic. Flu season is coming, but we have a wall of protection with the flu shot. Studies have proven

that the flu shot does not cause the flu. It takes approximately two weeks after the shot for your body to generate its immune response and it lasts about six months. This is why the month of October is the perfect time to get your annual immunization. Even if in some cases it doesn’t prevent the flu, it has been shown to lessen the effects and decrease serious consequences. Get on the CDC website, become a flu expert, and spread the most important information known regarding the influenza virus: everybody over six months old needs a flu shot.

Be Seen, Be Safe With the relief of cooler weather, we also bid farewell to precious hours of daylight. When you’re awake before the sun or out after it says goodnight, being visible could save your life. According to the National Traffic Highway Safety Administration, 75% of pedestrian fatalities in traffic crashes occur in the dark. You must be proactive to stay safe while running in the dark. Drivers’ eyes never become completely used to driving in the dark because of constantly changing lights. With low beams on, eyes can only see about 250 feet at best, which leaves only a few seconds to notice a runner in the darkness. Couple this with slow reaction times from fatigue, being distracted by phones, or just being in a hurry, and it becomes even more dangerous. If you want to run safely in the dark, you need to take your safety into your own hands. Never rely on a driver to see you.

Tips to run safely at night

• Be visible from all directions, and use a combination of reflective elements and lights. You want to see and be seen, so a simple headlamp isn’t enough. Blinking LED lights and a visibility vest are safe choices.

• Vehicle headlights are focused low, so take advantage by lighting up your ankles and legs. Put reflective details on your extremities, such as reflective shoelaces or clips on your shoes, carry a handheld water bottle with reflective strips, or use a reflective tape like Safety Skin that goes directly on your skin.

• Stick to a running path or sidewalk to avoid drivers altogether. If running on roads is your only option, run facing traffic. If you can see a car coming, it’s easier to get out of the way.

• Leave the headphones at home. If you can’t hear a car, you put yourself at a much greater risk of being hit. Plus, headphones block out surrounding noise so you may not notice another pedestrian or cyclist approaching.

• A ssume you are invisible. Take added precaution to warn drivers of your presence, and when in doubt, cross behind drivers waiting to turn. Pedestrians may have the right of way, but that does not guarantee a driver will see you.

As we move into the dark days of fall and winter, put safety first. Light yourself up like a Christmas tree, bring along other nighttime running gear, and think from a driver’s perspective about visibility.

Richmond on the Run

This fitness instructor and blogger is making Memphis her home. When CaCera Richmond, 31, made the move to Memphis from Los Angeles, her home of six years, some friends thought she was crazy to leave California’s fitness market for the South. “I think fitness is more ingrained in the culture of L.A,” CaCera says. “But fitness is just as important here as it is in there. In L.A., it’s about hiking and boutique studios. In Memphis, it’s about cycling, yoga, running, and taking advantage of Shelby Farms. There’s a really special kind of buzz around the fitness community here.” CaCera grew up in Madison, Miss., but her Masters in Communication and Public Relations has taken her everywhere from Jackson to Atlanta. In 2011, she moved to L.A., where she got hooked on ClassPass, a monthly subscription for fitness classes. She credits it with reinvigorating her workout regimen as a busy young professional. A position opened up at FedEx late last year, and CaCera jumped at the chance to move closer to home. Outside of her role as a Senior Communications Specialist, she has let her passion for fitness blossom in her work as a volunteer for Girls on the Run, teaching classes at ZenSudio, and starting FitWithFinesse.com. “I love the balance between my job and what I do after work,” she says. “I’ve been a lot more open than I probably have ever been in the past since this move. I want to continue that spirit of openness when I think about making goals for the quarter, the year, for the next 20 years.” In March, CaCera launched the blog Fit With Finesse alongside friend and accountability partner Shawnie Dockery. The pair met in California and wanted to create a health and wellness resource for women of color. The pair use Fit With Finesse to maintain their friendship and encourage a community of like-minded women to pursue their own fitness goals. Twice a week, Shawnie and CaCera post recipes, fitness studio reviews, workout playlists, and more. “Since we launched, we’ve already had a lot of messages from people who love what we’re doing and who tell us, ‘I never see Black women doing this,’” CaCera says. Her passion for fitness is grounded in her desire to empower women. CaCera volunteers for the Memphis chapter of Girls on the Run, a national non-profit that encourages and trains young girls to complete a 5K at the end of their school semester. This month, they will see the inaugural group of elementary and middle school girls run their first race at Shelby Farms. “Being a part of the group that built it up and got it going in Memphis, that’s a huge moment of pride for me,” CaCera says. “Seeing the girls’ faces at the end of the run, knowing they’ve worked together and put their minds to something and done it, is awesome. I hope they will continue to take the importance of a healthy lifestyle and lessons of confidence and empowerment with them.” In addition to Girls on the Run, CaCera teaches studioBOUNCE, a cardio trampoline class, at ZenStudio on Wednesday mornings and Friday evenings. As part of her personal practice, she sees a trainer at HardQore Fitness in Cordova twice a week and always makes it to boot camp on Saturday mornings. CaCera believes that making challenging quarterly goals is essential to maintaining a healthy lifestyle. This fall, she completed her first Spartan Race: a high-intensity event that combines a five mile run with twenty obstacles, varying from rope climbing to monkey bars.

“The biggest thing I learned from the Spartan Race is to trust yourself,” she says. “I really doubted myself going into it. I’m a girly girl, so the idea of going through a mud pit and traipsing through water was not appealing. But I surprised myself. When I actually got out there and did it, I was more ready than I thought I was. Your body can surprise you. It’s a tool and an instrument; if you take care of it, it will take care of you.” Up next, CaCera is training for another Spartan Race and completing a group training certification program. She plans to continue documenting her fitness journey and promoting the Memphis fitness community on her website. Readers can also follow her experience participating in the St. Jude Marathon Weekend in December when she runs her first 10K.

Allies for a Cause

A news anchor and a leading endocrinologist lock arms in the fight against Type 1 Diabetes

According to the American Diabetes Association, about 1.25 million Americans have Type 1 diabetes, and an estimated 40,000 people will be diagnosed each year. Though statistics vary by source, it is undisputed that the Mid-South has a higher incidence of the disease than most other regions. Type 1 diabetes is a chronic autoimmune condition that makes the body unable to produce insulin, the hormone that enables the body to convert blood glucose to energy. Without insulin, the body has to resort to breaking down its own tissue. Another, potentially fatal, consequence for people with Type 1 diabetes is Diabetic ketoacidosis, or DKA, which is an overload of glucose in the bloodstream. The cause of Type 1 diabetes is not yet known, and there is not yet a cure. Thanks to dedicated researchers, healthcare professionals, activists, and educators, however, the disease can be managed. Two local champions for that cause are Dr. Kashif Latif at AM Diabetes & Endocrinology Center in Bartlett and Fox News Anchor Darrell Greene. For both men, it is an intensely personal cause. Dr. Latif’s son, Ahmed, was diagnosed with Type 1 diabetes before his first birthday. The rigor of managing his son’s disease led Dr. Latif to return to school for a specialty in endocrinology. He opened AM Diabetes and Endocrinology Center in 2002. Darrell Greene was diagnosed in 1993 when he was 23 and just starting his career on air. He arrived in Memphis in 2010 and was referred to Dr. Latif. “I get along with Dr. Latif so well because he’s a man with a mission,” Darrell says. “We share the same mission.” Both men are deeply devoted to fundraising and diabetes awareness. Darrell is a chapter board member and congressional advocate for the Junior Diabetes Research Foundation and has done dozens of news stories about the disease. Meanwhile, Dr. Latif is working to break new ground in patient care. In addition to setting up the world’s first insulin pump center, he is currently developing Type 1 diabetes registry for Shelby County and building a gym designed for the unique needs of his patients.

“The gym will have a controlled environment,” Dr. Latif explains. “Not only will it allow patients to monitor their blood sugar before and after exercise, but our exercise prescriptions will be tailored to diabetes-related complications such as eye disease, nerve damage, and heart disease.” He has designed this facility as a prototype for other healthcare providers to follow.

In August 2018, Dr. Latif adopted a cutting edge technology: a capsule-sized implant called EversenseCGM that sends real-time blood sugar readings directly to an iPhone. Darrell was the first patient in the region to have this procedure. “He asked me if I wanted the implant, and I had no hesitation.” Darrell says it required a fivemillimeter incision and took about five minutes. “You either have to own Type 1 diabetes, or it will own you,” Darrell explains. “Once the disease owns you, you’re in trouble. This device removes one layer of hassle and gives me a lot more control.” The only present drawback to the implant is that it isn’t yet covered by most health insurance plans. The current cost for the implant is about $1,700, and the device must be replaced four times per year. The hope is that the cost will come down, and insurance companies will begin to see the long-term benefit. Darrell continues to lobby for affordable healthcare. “The skyrocketing cost of fast-acting insulin has created life-or-death dilemmas for too many people,” he says. “Some lawmakers are fired up, but not enough. I don’t have the answer, but I’m a consumer and I have a voice. I’m telling them what I need.”

Both Darrell and Dr. Latif agree that living with Type 1 diabetes means recalibrating your approach to diet and exercise. “I eat very few carbohydrates unless my blood sugar is low,” Darrell says. “Being from the South, that’s hard. Nobody makes better biscuits than me.” Even though managing the disease can be challenging, Darrell continues to take care of himself and support others. “I always think of kids who are diagnosed at age 10, 12, or 14. They’re under peer pressure and haven’t found themselves yet. I want to tell them, ‘You’re not different. As a matter of fact, you’re a little stronger than the kid next to you because you have to think like a doctor, nutritionist, and mathematician.’” While researchers continue to strive to understand Type 1 diabetes and find for a cure. Darrell Green and Dr. Latif are devoted to helping people with the disease take control and improve their quality of life. For more information go to amdiabetes.net.

By far my favorite cycling event is the Big Dam Bridge in Little Rock. I have participated two years in a row. It’s well supported with thousands of riders, and it’s a whole lot of fun.

I have been in the MRTC Road Race Series for 28 consecutive years. I’ve never been in the top 3 in any male age category, but I would come in first every year in Women’s 70+.

As the primary caregiver for my wife, I have to be able to transport and lift her, so I have to be fit. Fitness has been part of my life since I was a very young boy, and I tried to pass that love for fitness and sports to my children. I think I was successful.

2 I have ridden the MS 150 bike ride for 25 years and have been a VIBE for 23 straight years. A VIBE receives $1,000 or more in contributions from supporters. I have ridden 5 JDRF rides of 100 miles each. I just completed my 3rd Big Dam Bridge Ride of 100 miles and trained through Victory Bicycle Studio’s program. I have run 35 full marathons.

6 I am riding 100 miles for the Juvenile Diabetes Research Foundation in Santa Fe this month. My son, Clark, will join me and should finish a few hours ahead. I have not ridden at this altitude or with mountain climbs, so I am looking forward to it.

The Athens Greece Marathon was my favorite. My wife and I went there to celebrate our 25th anniversary, and we were with a tour group of runners led by Jeff Galloway. That was the first time I tried the 4:1 run/walk method, and it worked for me.

On my bucket list is to finish running marathons in all 50 states, as well as all the continents.

Important Facts about Protein WHY IT’S IMPORTANT

WHERE TO FIND IT

Every food is made up of a combination of three essential macronutrients: protein, carbohydrates, and fat. While all three have their own unique roles, protein is often considered the most important because it is a major building block in the body. It’s easy to think that eating protein is only important for bodybuilders and elite athletes, but it plays a crucial for everyone regardless of age or athletic ability.

Because protein is so important, the phrase “high protein” has become a buzzword in the food industry. Many products boast their protein content so that it seems healthier. It is best to get your daily protein through minimally processed, whole foods rather than products like protein ice creams or protein chips.

Protein is essential to building, maintaining, and repairing tissues. It also helps perform vital functions that aid in immune processes. If all that wasn’t enough, protein plays a big role in changing body composition. Eating adequate protein helps ensure any weight you lose is due to losing body fat, not losing muscle mass!

Good sources of protein: • L ean meats such as chicken breast, turkey, or 97% lean ground beef

• Milk

• Fish (tuna, salmon, cod)

• Cottage cheese

• Seafood (shrimp, crab, scallops)

• Quinoa, lentils, edamame, chickpeas

• Eggs and egg whites

• Greek yogurt

HOW TO EAT IT There is a lot of controversy over how much protein people should eat. A good rule of thumb is to eat 0.7–1 gram per pound of lean body mass (your total body weight minus your body fat). Start on the lower end of that range and working towards a higher target if you have more muscle mass or strength train frequently. Figuring out an exact protein target can seem overwhelming. If that is the case, just making sure you have a good source of protein at each meal will help you get enough protein throughout the day. It will also help you stay full between meals because protein is the most satiating macronutrient. It keeps you full longer than carbohydrates or fats!

Ideas for easy high-protein meals: Breakfast: Eggs and egg whites with veggies; greek yogurt with berries and granola; smoothie with milk, fruit, and protein powder Lunch: Grilled chicken salad; turkey sandwich; veggie wrap with and fruit and cottage cheese Dinner: Stir fried veggies with beef; pasta with lean ground turkey and marinara sauce; taco salad with beans and corn

WATCH OUT! There can be a lot of confusion over which foods are actually high in protein. Some whole foods you may consider good sources of protein actually get very few of their total calories from protein. Peanut butter is commonly marketed as high in protein, but it takes three servings (6 Tbsps) to consume the same amount of protein as a palm-sized piece of chicken breast. True or False? q Diabetes is caused by eating too much sugar. q People with diabetes should avoid carbohydrates. q People with diabetes cannot eat sugar.

The statements above are the most common MYTHS we hear about diabetes in our office. Misconceptions like these often get perpetuated at the time of diagnosis through umbrella statements made by well-meaning, yet busy health professionals. Still surprised to learn that each statement is false? Let’s set the record straight…

What causes diabetes? Although eating sugar causes a rise in blood sugar levels, it doesn’t mean it’s the culprit for diabetes. The body is much more complex, and the cause of diabetes is multifactorial. Type 1 diabetes occurs when the immune system attacks and destroys insulin-producing beta cells of the pancreas. People with Type 1 diabetes must take insulin to regulate glucose levels. Type 2 diabetes is more common and can be caused by genetics, medications, insulin resistance (which can allow sugar to accumulate in the blood), lifestyle factors (ex. physical inactivity), certain hormonal diseases, or damage to the pancreas.

Which foods contain carbohydrates? • S tarch/Grains: Cereals, flour, pasta, crackers, popcorn, cookies, cakes, bread, corn, rice, oats, quinoa, etc. • F ruits: All fruits like apples, oranges, bananas, grapes, berries, dried fruits, and fruit juices

Are carbohydrates OK for people with diabetes? Carbohydrates have the greatest effect on blood sugar levels. The metabolism of carbohydrates in people with diabetes differs from the metabolism of people without it due to the amount of insulin available in the body. Insulin is a hormone that allows the body to use sugar from carbohydrates for energy or to store it for future use.

It takes trial and error to determine how various desserts will impact blood sugar. General strategies for enjoying dessert with diabetes include: • F actoring dessert into the amount of carbohydrates allotted at a meal or snack • D oing a “starch swap” at meals by switching out a starchy side like rice or potatoes for something sweet

People with diabetes need varying amounts of carbohydrates, so portion awareness matters. Experimentation is essential for determining the optimal dose of carbohydrates at meals and snacks that maintains stable blood sugar levels.

Are diabetes and dessert a recipe for disaster?

Developing a balanced, consistent eating pattern conducive to blood sugar management can feel frustrating, unfair, confusing, challenging, and different for individuals with diabetes. No one-size-fits-all plan can tell a person how to best manage blood sugar. Registered Dietitians are equipped to go beyond general recommendations to customize plans and strategies to help individuals reach health-related goals while still enjoying their favorite foods.

Desserts tend to be densely full of simple carbohydrates. As a result, they can have a greater impact on blood sugar levels than complex carbohydrates, which are digested more slowly. Whether a person has been diagnosed with diabetes or not, dichotomous (all or none) thinking is dangerous because it often leads to this cycle:

Thanksgiving Pumpkin Cheese Board

Pumpkin season isn’t over yet! Thanksgiving is the original holiday to celebrate that delicious fall flavor, and this pumpkin cheese board is the perfect starter to the biggest meal of the year. The cheeses chosen for the board are on the lighter side, so you don’t spoil dinner before it even begins. The board itself is fun to decorate and acts as a beautiful centerpiece. PUMPKIN BAKED BRIE: q B rie cheese wheel q P umpkin butter q G round cinnamon NUTTY PUMPKIN GOAT CHEESE: q G oat cheese log q C andied or praline walnuts or pecans q P umpkin pie spice PUMPKIN SEED SMOKED GOUDA: q S moked Gouda chunk or wheel q T oasted pepitas q P ure maple syrup PUMPKIN MASCARPONE: q 4 ounces mascarpone cheese q 2 heaping Tbsps pumpkin puree q 2 Tbsps (or to taste) maple syrup q 1 tsp pumpkin pie spice OTHER ACCOMPANIES: q P umpkin trail mix q P umpkin butter or jelly q C andied ginger slices q P itted dates q E xtra pepitas q E xtra candied/praline nuts q W hole grain or flax seed crackers q C innamon crackers q R osemary sprigs q M ini pumpkins or gourds

DIRECTIONS Bake Brie for 5–10 minutes at 350F until soft but not oozing. Top with a heavy dollop of pumpkin butter and sprinkle with cinnamon. Set aside. Place Goat cheese on a plate. In a food processor, combine about 1/4 cup of the candied nuts with about 1/2 tsp of pumpkin pie spice until it turns to a dusty crumble. Pour over the goat cheese and roll cheese in the nuts until completely covered. Set aside.

Place Smoked Gouda on a plate, top with pumpkin seeds, and drizzle with maple syrup. Set aside. In a bowl, stir together the mascarpone, pumpkin purée, maple syrup, and pumpkin pie spice. Spoon into a small bowl and sprinkle with pumpkin pie spice. Put ingredients such as nuts, pepitas, and pumpkin butter in small bowls. Arrange cheeses and accompaniments on a marble, white, or copper platter. Or mix them up! It’s fun to stack and get creative. Add cheese knives and serve.
