Bring It Food Hub Launches 2015 Pay It Forward Program Farm-Fresh Produce Shares Will Fight Hunger, Support Mid-South Farmers Bring It Food Hub is initiating a major campaign to deliver local produce to families in need. Over 200,000 people in Memphis don’t know where their next meal is coming from. Bring It Food Hub’s Pay It Forward program tackles this food insecurity with bags of farm-fresh produce delivered to community organizations throughout the city every week. And the new non-profit has plans to double the reach of Pay It Forward this year.

“Some neighborhoods only have a convenience store full of chips and soda. We want to get the fresh food local farmers are growing out into these neighborhoods.” – Alex Greene, Bring It manager “2014 was a great first year for us, but we want this produce to be affordable for everyone in Memphis. “We want to get the fresh food local farmers are growing out into these neighborhoods.” Last year, Bring It piloted its Pay It Forward program and invited those who wanted to support small farms and fight hunger to donate produce bags to Memphis families in need. A network of community partners was mobilized to locate families experiencing food insecurity, but more was needed. Now, Bring It Food Hub is determined to scale up the program in a big way. Their website has been revamped, reminding customers who order their own weekly produce subscriptions to add a taxdeductible Pay It Forward share to their cart as well. And the number of churches and community organizations ready to distribute Pay It Forward bags has been doubled. Finally, Bring It is promoting bulk Pay It Forward subscriptions to area churches and businesses.

On March 11, 2015, a dozen community influencers joined Dr. Phillip Bowden, Memphis Mayor A C Wharton, and staff members of the Mid-South Gastroenterology Group to celebrate the announcement of Bowden’s 100% By 2020 Campaign.

During the media event, Bowden committed to raising money for the organizations that are already doing the work on the ground, as well as working with area gastroenterologists to share data and ensure all Memphians are served.

The new campaign is a collaboration between Bowden, the city of Memphis, local health organizations, and small businesses, with the goal to encourage 100% of qualifying Memphians to get a colonoscopy screening by 2020. According to the most recent health statistics, Memphis has one of the lowest rates of colon cancer screenings and one of the highest rates of colon cancer deaths in the nation. Considering that 90% of advanced-stage colon cancer diagnoses can be prevented with a simple colonoscopy, Bowden said that something must be done. “This campaign is about 100% inclusion. Regardless of if you’re in North Memphis, South Memphis, Hickory Hill, or Downtown, this message will reach you,” Bowden told a small gathering in his East Memphis office. “We’re going beyond the conversation. We need our Memphians to know the current screening guidelines and then act on that knowledge.”
Mayor A C Wharton, a patient at the Mid-South Gastroenterology Group, agreed with Bowden. “We don’t talk about colon cancer enough. People want to avoid the topic,” Wharton said. “Sometimes people even act embarrassed at the thought of getting a colonoscopy. Let me tell you something, I’d rather be embarrassed than dead.”

2015 Memphis in May Triathlon Returns to Millington The Memphis In May Triathlon Sports Festival returns to Edmund Orgill Park in Millington May 15-17 after five years in Tunica, Mississippi. This year’s event will include a $5,000 Amateur Challenge and a new division open exclusively for active military and reserves. “We are thrilled to return to Millington for this year’s event,” said Pam Routh, MIM Triathlon race director. “Orgill Park provides a beautiful setting for all the race events, and the City of Millington has extended a huge welcome mat for our return.” This is the 33rd year for the race, which is expected to draw nearly 1,500 local, regional, and national athletes and fitness enthusiasts to participate in both the MIM Olympic Triathlon and the MIM Sprint Triathlon. A $5,000 Amateur Challenge prize purse will be paid to the top 15 male and female athletes participating in both events, with winners selected on the lowest total combined time for both races. “The Sprint Triathlon is a shortdistance triathlon and is ideal for competitors who are new to the

sport,” said Routh. “Sprint triathlons require less training so they have become very popular with beginners. There’s still plenty of time to train for the sprint, or develop a three-person relay team, with a different member racing each leg of the race.” Triathlon events kick off on Friday from 3:00 to 7:00 p.m. with a Sports Expo held at the race site overlooking Casper Lake in Orgill Park located on Bethuel Road off Navy Road in Millington. Event participants can register and pick up their race packets while shopping and viewing the newest in sports gear, bikes, clothing, and footwear. Clinics will be presented on nutrition, running and swimming techniques, and avoiding injuries. The Sports Expo continues on Saturday from 9:30 a.m. until 6:00 p.m. The MIM Sprint Triathlon begins at 8:00 a.m. on Saturday. Triathletes will swim 1/3 mile, bike 13 miles, and run three miles. The MIM Olympic Triathlon Race at 7:00 a.m. on Sunday includes swimming .93 miles (1.5k) in Casper Lake, biking 24.8 miles (40k) in Edmund Orgill Park and the area surrounding the

park, then returning to the transition area and running 6.2 miles (10k) in and around the park. For the first time in the history of the MIM Triathlon there will be a new division open exclusively to active duty military and reserves. Members of any branch of military service are encouraged to participate in either race, which will present awards for male and female age groups, masters, relays, wheel chair, and para-athlete categories. “We are thrilled to recognize the men and women of our armed services with this special category,” Routh said. The Triathlon, originally part of the annual Memphis In May festival, is one of the longest continuing triathlons in the country. “Memphis In May stopped producing sporting events in 1990, and local athletes bought the rights to use the name and have continued the event ever since,” Routh said.

GrowMemphis has been granted $14,000 through the Tennessee Recreation and Parks Association to develop seven new community gardens in 2015, partnering with the City of Memphis Parks and Recreation Department to begin five of these community gardens at the City of Memphis Community Centers, with plans to start seven new community gardens in the next three months. Five are at City of Memphis Community Centers, one is at the Shelby County Health Department on Jefferson, and one is at the new Libertas School of Memphis, a new Montessori School in Frayser. The goal for these community gardens is improve access to fresh fruits and vegetables to low-income residents. The community garden will also become an engaged and active space for programs and activities for neighborhood residents with specific focus on seniors and youth at the community center, including community garden programs and activities for the summer youth camps and afterschool programs. Every year GrowMemphis provides start-up funding and training to neighborhood residents who wish to create and sustain gardens. These

gardens eliminate blighted property, produce fresh, healthy food, and provide opportunities for community building. Each garden is as unique as the neighborhood in which it is found. GrowMemphis’ goal is to help new gardeners identify their most important needs and to provide the training and resources to help gardeners realize their vision. Anthony Maranise is a cancer survivor. That’s where he likes to begin all of his introductions. As a patient at St. Jude from 1994-1997, he has now been in remission from acute lymphoblastic leukemia for 18 years. But his relationship with St. Jude didn’t end in 1997. Today he serves as a volunteer minister with the children as part of St. Jude Life. His journey with the hospital has come full circle, and he enjoys giving back to the hospital that saved his life. As a graduate student at Christian Brothers University preparing for ordination into the Catholic priesthood, Maranise has always been fascinated by the correlation between faith and sports. He authored a book, Sport & the Spiritual Life, and he has contributed numerous chapters to academic textbooks. However, it wasn’t until the fall of 2014 when Maranise’s weight was at its highest that he began to reincorporate fitness into his life.

Maranise decided to start training for the St. Jude 5K as part of the 2014 Memphis Marathon Weekend. He soon focused his running and fitness efforts on fundraising for St. Jude and its patients. “Running for a Reason” and the children of St. Jude gave him inner strength to push himself to achieve his running goals. Maranise completed the race in 38:18, which set the bar for future races, and he has already shaved off more than five minutes from his time at the 2015 Germantown Mayor’s Cup 5K. By working on his pace, he has improved his mile time from 15:30 to 9:15 in just a few short months.

In addition to running, Maranise transformed his diet in the fall of 2014. Now he only eats clean foods such as vegetables, nuts, fruits, and fish, and he has phased out everything processed from his diet. Before a run he usually eats pistachio nuts and a small cinnamon-oatmeal granola bar for a boost of energy. After a run he makes a proteinpacked spinach salad with tuna, egg whites, chickpeas, black olives, and artichoke hearts. His running regimen combined with the shift in the way he fuels his body has helped him shed a considerable amount of weight on his 5’8” frame. While he hasn’t stepped on a scale to see what the numbers say, Maranise measures his weight-loss success by how he feels and looks. Today Anthony is working toward completing a 10K as well as a half marathon relay with his best friend David in the fall. David, a marathoner himself, has played a crucial role in Maranise’s running journey, providing accountability, encouragement, and inspiration. As he continues to train and improve his running, Maranise hopes to inspire others and affect positive changes in their lives.

THE CHUBBY VEGETARIANS GET FIT by Christin Yates. Photos by Justin Fox Burks.

A lifelong vegetarian, Justin Fox Burks began cooking for his family at a young age. At the time vegetarians living in the South had to prepare their own food since there weren’t many vegetarian-friendly restaurant options in the area. What started as a diet of mainly salads and French fries evolved to more complex and elaborate vegetarian dishes. After meeting his wife Amy Lawrence in the late 1980s, the couple started cooking together. However, their mutual love of food was affecting their waistlines. In 2006 Justin and Amy decided to improve their health. Amy began walking and taking Zumba classes, and Justin started running marathons and doing Olympic-length triathlons. The pair worked hard and dropped the weight, eventually losing a combined 100 pounds. Wanting to have a project or hobby together, Justin and Amy started a food blog, The Chubby Vegetarian, in 2008. They began sharing recipes, which also opened their eyes to exactly what they were eating. Since they were documenting every ingredient and meal, it was hard to fool themselves about what was really going in their mouths. Justin and Amy began to realize that the food they prepared should not only taste good, but should be healthy as well. With small changes, they altered what they were eating and how it was prepared. They continued documenting their meals and sharing vegetarian cooking ideas on their blog, which quickly grew in popularity.

their cookbook was included on AL.com’s list of “16 Books Every Southerner Should Have,” alongside such greats as William Faulkner and Flannery O’Connor. Today, Justin and Amy teach cooking classes, write articles about home cooking, and are currently developing new recipes that will become a part of their second cookbook. They’re still active and continue taking fitness classes, running, walking their three crazy

dogs, and doing a variety of challenging home fitness classes via Daily Burn. Justin and Amy want people to know that vegetables don’t have to be unappealing. People should consider cooking them the same way they would prepare meat, such as using dry rub or grilling them. Their goal isn’t to turn everyone into vegetarians but to encourage people to eat more vegetables and think outside the box when preparing plants.

YOUNG COCONUT CEVICHE The rich coconut meat, crunchy veggies, and bright acidity from the lime juice makes for one tasty dish. When you’re shopping, look for a young coconut, but know that they’re not the classic-looking brown, hairy coconuts that monkeys carry around in cartoons. They’re white on the outside and usually shaped into a cone at the top. Young coconuts have more water in them, and the meat is softer, almost jelly-like, so it’s easy to scrape out with a spoon.

INGREDIENTS q q q q q q q q q q q q

1 fresh young coconut J uice of 2 medium limes 1 /2 cup diced roma tomato 1 /2 cup seeded and diced cucumber 1 /2 cup diced red onion 1 serrano pepper (seeded and finely diced) 1 /4 cup chopped cilantro D ash hot sauce (like Valentino) S ea salt and cracked black pepper (to taste) B aked tortilla chips (or 4 crispy tostadas) 2 % Greek yogurt (optional) S liced radish and sliced avocado to garnish

PREPARATION Using a sharp cleaver and an abundance of caution, crack into the top of the young coconut. Pour the coconut water off and reserve for another use (i.e., drink it!). Using a large spoon, gently scrape the coconut meat out of the coconut. Make sure to scrape off any bits of shell that may be attached to the coconut. Cut coconut meat into chunks and place in a container with the lime juice. Allow coconut to rest in the fridge for about 30 minutes in order for the coconut to marinate. In a medium bowl, toss together the coconut and lime juice mixture, tomato, cucumber, onion, serrano pepper, cilantro, hot sauce, and salt and pepper to taste. Serve like a dip with chips for an appetizer or on crispy tostadas slathered in yogurt, topped with ceviche, and garnished with radish and avocado for a great meal. (Serves 6 as a dip or 2 to 3 as a main dish.)

The notion of “roots” to a Memphian will spark feelings of affection for the region, the beginnings of rock and roll, and a family tradition. Mary Phillips has her own roots in Memphis’ Midtown area near Evergreen. After a period in Seattle, Washington, she returned to Memphis, where she is now guiding others to establish roots of another kind with a homegrown program to feed a hungry city through Plate Project, while growing a population of responsible agriculturists through Roots Memphis Farm Academy. “I’ve always been interested in agriculture, as long as I can remember,” Phillips said. “I had an opportunity to live and work on a farm in Kansas, where I was bit by the agriculture bug. I worked on farms here and there, and when I decided to return to Memphis in 2008, I saw a real need for urban agriculture here and to turn my passion and experience into something that could provide Memphians with clean, healthy, ethically grown food.” In a 2010 Gallup poll, Memphis was ranked the hungriest city in the country, with a staggering 26% of families stating that they could not afford to buy food for their families over the past 12 months. Memphis also ranks in the top five of American “food desert” cities, where either income or unavailability makes it impossible to get fresh food and produce to 16% of our city’s population. This is where the urgent need comes into play for fresh-food programs such as Plate Project. “With Plate Project we provide CSAs (community-supported agriculture shares) for families in need. We work with churches, neighborhood institutions, and food pantries to identify families that would both want a CSA and could put it to good use. We have 50 families right now, so we are actively fundraising to provide these families with one of our food shares. All bags are at the same pickup point, just as our other CSA customers, so there is not the stigma of receiving charity.”

The program has grown steadily each year since its inception. “We now have 10 acres out here at Shelby Farms, and have applied for Certified Naturally Grown certification as we do not use any harmful chemicals at all,” Phillips said. “We believe we should be environmentally and socially responsible and economically advantageous for our farmers.” The Roots program goal is not only to teach a social conscience, but profitability.

“Most of our students are between 25 and 35 years old,” Phillips noted. “These are people who want a career change or who didn’t like the path they were on and found the Roots Memphis Farm Academy.” With an affordable $1,800 tuition and scholarships available, Farm Academy currently accepts no more than ten students per year. “We have already had several apply for our next session that starts in August,” Phillips added.

THE COURSE HAS THREE PHASES: BUSINESS. Each student receives a six-month business course to

learn to put a plan in writing and the ins and outs of the legal and financial side of the business. They also help teach creative marketing.

INCUBATION. Students receive a quarter-acre plot of land to put

their plan into action. Produce is sold into a CSA at Cooper-Young Farmers Market and a few local restaurants, with the largest portion being sold to St. Jude. Currently the school is producing leafy greens, beets, radishes, and spring herbs such as cilantro and parsley.

eliminate any barriers they might have to starting their own farm business. This may be assisting them with finding financing, land that they’d like to lease, or help from a tool-share program available through the school. Mary’s husband Wes Riddle is the executive director of the organization, teaching the business-planning portion of the process. His background in law and business development allows him to mentor with regard to the business and finance side. Phillips is the one getting her hands dirty. “I teach more of the agricultural theory side of things,” Phillips said. “I have my dream job right now. I’ve somehow lucked into the best of both worlds. 1. C ook wild rice according to package instructions. Set aside. 2. Snap off the tough ends of the asparagus and discard them. 3. Slice the asparagus into 2-3 inch pieces. Drop the pieces into boiling, salted water and cook them until they’re bright green and tender yet still a little firm. 4. When asparagus is done refresh them under cold water. Set aside. 5. To make the dressing, whisk together all the vinaigrette ingredients. 6. Add the cooked asparagus and prepared wild rice and toss with the dressing. 7. Cover a platter with Napa cabbage. Dig out the center of the cabbage and fill with the rice, asparagus, and dressing mixture. 8. Garnish with fresh orange slices.

PREPARATION . P 1 reheat oven to 350. 2. Heat olive oil in sauté pan over medium high heat. 3. Season drumsticks with salt/pepper/garlic powder. 4. Add drumsticks and brown on all sides. 5. Remove drumsticks from oil and put into baking dish (all drumsticks should fit snugly in one layer). 6. Pour apple cider over drumsticks (should come about 3/4 of the way up the sides of the drumsticks). 7. Cover with foil and place in preheated oven for 1 1/2 hours. 8. In the meantime combine butter, lemon juice, lemon zest, and honey in a medium sauce pan and warm over medium heat (whisking constantly) until butter is melted and all ingredients are well incorporated. 9. When drumsticks come out of oven toss them in a large bowl with honey/lemon sauce.

Melt ½ cup of dark chocolate chips and ½ cup milk chocolate chips in a pan or microwave. Add the melted chocolate chips to the mixing bowl. 6. In a separate bowl, mix salt, baking powder, oat flour, ½ cup milk chocolate chips, ½ cup dark chocolate chips, chocolate protein powder, unsweetened cocoa powder, and stevia; mix with a spoon until all dry ingredients are blended evenly. 7. Turn the mixer on medium speed and slowly add dry ingredients until mixture is smooth. 8. Spray 8x8 pan with non-stick cooking spray. 9. Pour brownie mix into pan and make sure the chocolate chips in batter are spread out evenly in pan. 10. Cook brownies for 18-25 minutes or until toothpick inserted is clean and let cool for 15-20 minutes.

Depressed? Fat? It’s Chemical. 4 Common Causes for Your Chronic Symptoms

Do you remember SnackWells? Nabisco created a low-fat, high-sugar cookie in a green box, aimed at making women feel comfortable eating mass quantities of cookies. The Devil’s food was my favorite — heavily processed and shame-free. It’s the same with diet soda. Since the 1980s millions of people claim to be addicted to its taste, but yet have not lost weight with the zerocalorie icon. Why, when we restrict our calories and lower the fat in our diets, can we still not lose weight?

The answer is a chemical called obesogen, which triggers our bodies to store fat even when our behavior says otherwise. The effects on fat cells vary from growing cell size to increasing cell numbers and more. These bad hormones, chemicals, and synthetic food ingredients have been proven to put even the healthiest eater on a diet plateau and leave us feeling depressed.

As an instructor for Weight Watchers, I saw it again and again (including with my own weight-loss journey), women exhausted, overspent, and disheartened by only a slight loss despite having nearly starved themselves week after week. A metabolism reset involves making a few simple life changes, and avoiding those depressing obesogen triggers.

Artificial Flavors/Colors/Sweeteners:

Artificial colors have been shown to cause hyperactivity, allergies, and cell mutation, and usually accompany a synthesized flavoring syrup or powder. It seems as though every few years we are told our sweetener is unhealthy for us, and then a new artificial sweetener is introduced. It appears that these chemical sweeteners disrupt the body’s ability to count calories. For example, eating a sugar-free cookie is not as satisfying to the brain as a regular cookie, so we will eat more of them to compensate. Sweeteners also tend to give us cravings for more sugary flavors, which gives them that addictive quality.

Pesticides:

rBGH, a development of Monsanto, is an artificial bovine hormone that stimulates milk production in cows by 10-15%. Think of it as crack cocaine for cows, as it revs them up and helps them to produce more milk, often at the cost of their health. While there have been no long-term studies on this hormone (it was approved by the FDA for use only in 1993), the congressional General Accounting Office warns not to drink milk from the “old” cows treated with the hormone. The Consumer’s Union has suggested that the FDA should never have approved it. Cows given the hormone experience infertility and antibiotic resistance. If you wish to avoid food without added hormones, choose the organic seal when shopping, or just avoid meat and dairy altogether.

Due to lack of labeling laws, we have unwittingly taken in pesticides via our conventional fresh produce. The “wash your produce” movement fizzled out, and the organic movement has erupted, but pesticide chemicals are not only causing problems for the consumer. Several studies indicate that the people who work as private pesticide applicators (the folks who spray the fields) very regularly suffer from depression related to several specific pesticides.

Plastics: BPA (bisphenol-a), a chemical found in many plastics, leaches out into our food and drink as we store in it, cook with it, or eat from it. BPA has been shown by Japanese scientists to both increase the number (hyperplasia) and size (hypertrophy) of human fat cells. Worse, BPA interrupts the pancreas’ ability to store and release insulin. Type 2 diabetes, anyone? BPA has estrogenic properties, and, long story short, screws up your hormones. Hypothyroidism has become more and more common since the age of plastics, and in one study caused mice to grow 15% larger than the control mice in a lifelong study on BPA exposure. Depression and anxiety (or a mix of both) are common symptoms of hypothyroidism. Do as I have done, and make small steps to have a home with 50% fewer plastics. Switch to glass jars. For the same cost as disposable plastic storage, a dozen or so Ball jars in various sizes will reduce BPA and other common chemical outsiders to zero.
