Eighth Annual Tour De Grizz Rides the Big River Crossings The Memphis Grizzlies and BlueCross BlueShield of Tennessee continue the annual tradition of encouraging Grizzlies fans to consider alternative and healthy choices by taking part in the Eighth Annual Tour de Grizz on Sunday, April 9 before the Grizzlies tip-off against the Detroit Pistons. Packages start at $25 and include a Terrace Level ticket to that night’s game, an MPD escorted bike ride to and from the game, and a Tour de Grizz dri-fit tee to commemorate the event. Participants in the Eighth Annual Tour de Grizz are encouraged to enjoy the new Big River Crossing, as well as music and entertainment from 1:30 p.m. to 3:30 p.m. at Martyrs Park before hopping on their bikes for a two-mile ride to FedExForum to see the Grizzlies take the court. Riders in the Tour de Grizz will depart from Martyrs Park at 3:30 p.m. and will be accompanied by Memphis Police escorts to ensure the safety of all participants as they make the trip to and from FedExForum. Once the riders have reached their basketball destination, they will have complimentary “Bike Valet Parking.” Following the game, fans will be invited to participate in a group ride back to the park. All participants must be at least 10 years of age to ride their own bike and are required to provide their own bike and safety equipment, including a helmet and lights. The Eighth Annual Tour de Grizz will take place rain or shine. Mama Gaia: Startup organic vegetarian restaurant opens in Crosstown Mama Gaia, from ancient Greek meaning “Mother Earth,” is a fast-casual dining experience offering organic vegetarian menu options. It opens its doors in the Crosstown Concourse. As the first restaurant in Crosstown Concourse, Mama Gaia offers a fresh, artisanal vegetarian menu for lunch and dinner, along with several vegan and gluten-free options. Skin Issues? Check for Allergens. The most highly touted skincare lines can make your skin break out or itch. The products formulated to clear up acne are the very products that can cause congestion in skin. Rashes may come often after a beach vacation because sunscreens just don’t seem to agree with you. If any of these situations sound familiar, keep reading for tips on allergens in skincare products. TIP #1 – FIND OUT WHAT ALLERGENS YOUR RELATIVES HAVE EXPERIENCED. An allergy is a reaction due to extreme sensitivity to certain chemicals that are generally harmless. The reaction may vary: itching, swelling, acne, or extreme redness. Your body chemistry is unique to you. That product your neighbor recommended may not give you the same results, or the same results in the same amount of time. If allergic to a certain product, chances are your family members are as well.

TIP #2 – USE PROFESSIONAL SKINCARE PRODUCTS SUITED FOR YOUR SKIN CONDITION. When compared to over-the-counter lines, pharmaceutical and cosmeceutical products use higher quality ingredients at a higher concentration. Higher quality means purer, more effective ingredients from reputable sources. Higher concentration means there is a larger percentage of the active ingredient that makes the product useful.

TIP #3 – CONSIDER HYPO-ALLERGENIC PRODUCTS WITH NO FRAGRANCE AND LITTLE PRESERVATIVE CONTENT. Pay attention to fragrances, essential oils, and certain types of preservatives. These are some of the most common allergens in skincare products, including makeup. Fragrance is in many products, but manufacturers are not required to list the chemicals of the fragrance. Essential oils are often included for soothing properties. Preservatives keep the mixture from spoiling. If you break out after using certain products, assume it could be one of these three allergens, even if the reactions occur several days later.

TIP #4 – SKIN REACTIONS MAY NOT BE FROM TOPICAL PRODUCTS. Reflect on how your diet influences your skin. A client had consistent and seemingly unexplained breakouts. It turned out that simple foods like cranberries, apples, and certain kinds of seafood caused those breakouts. She wasn’t allergic to skincare products, but her body had an inflammatory response to several common foods. After three weeks off these inflammatory foods, her skin was clear and glowing.

TIP #5 – CHOOSE SUNSCREEN WITH ZINC OXIDE OR TITANIUM OXIDE ONLY. If sunscreens tend to clog your pores, consider finding a sunscreen with only physical ingredients. While chemical ingredients absorb sun rays, they can also be comedogenic (pore-clogging) or cause adverse reactions. Carefully choose products containing only physical ingredients. Other common allergens include silicones, sulfur, seaweed, and specific numbing agents. Also, be aware that sensitivities to certain chemicals may come and go. Take an inventory of your skincare products, and check if they contain ingredients that are allergens for you. Monitor your diet to see if it causes an inflammatory response. Environmental allergies may be seasonal, but learning what helps or hurts your skin is a year-round endeavor. Carla Morgan is a chemist turned licensed medical aesthetician. Over being tired and sick? Try Swedish Massage Stress and the Immune System Always on the run from appointments to work to kids’ activities, even the most health conscious can fall into an endless cycle of colds, infections, and chronic allergy issues. Sometimes even more serious health concerns like heart disease, diabetes, high blood pressure, or gastrointestinal disorders may occur. Stress plays a major role in how we feel. In a 2012 study by the American Psychological Association, 88 percent of women and 78 percent of men surveyed said stress levels had a strong impact on their physical health. Further research shows stress and immune system function are connected. A 2004 review of nearly 300 studies on stress and health found1 “for stress of any significant duration…all aspects of immunity went downhill.” Ultimately, researchers found, “chronic stress can ravage the immune system.” The immune system is the body’s defense against infections, diseases, and viruses. Immunity can be affected by diet, mental health, environment, and metabolism. Lowered immune function leads to increased susceptibility to disease and slows healing time. Chronic stress can also lead to increased inflammation in the body. “Stress and inflammation are the primary building blocks of cancer, diabetes, arthritis, and heart disease.” When under threat or stressed, the body produces hormones that activate fight or flight response, including cortisol. When stressors are gone, cortisol levels should return to normal. However, if an individual is chronically stressed, cortisol levels remain high, resulting in lower overall immune function. Numerous studies on Swedish massage over the last 30 years have shown it has a host of benefits for the body. Most people think of Swedish massage, characterized by long, flowing strokes, as a great stress-reliever, but it may also assist immune function.

4 Benefits of Swedish Massage: 1. Increases white blood cells: Your body’s disease and infection fighters. 2. D ecreases AVP: A hormone believed to cause aggressive behavior and increased cortisol. 3. D ecreases cortisol levels: The “stress hormone” that destroys natural killer cells, which fight tumors and viral infections. 4. Causes a sharp drop in cytokines: Pro-inflammatory proteins in the blood. Participants who received just one 60-minute massage experienced a boost in immune function. For those with chronic stress and more serious health concerns, regular weekly or bi-weekly sessions may offer the most benefit. As healthcare becomes more expensive, regular Swedish massage can be a good investment. Consider scheduling a series of massages and step off the merry-go-round of stress and illness. THIS GIRL PACKS A PUNCH By Christin Yates. Photo by Sarah McAlexander. At first glance, 13-year-old KAYLA WIENBECK is a typical eighth grade student at Bon Lin Middle. Involved in several organizations, Kayla is an honor student, student ambassador, and member of Beta Club, among others. However, the exceptional pupil not only devotes time to her studies, she is also a locally and nationally ranked jujitsu competitor. In 2009, Kayla’s parents wanted to help her older brother Tyler find a sport to keep him active in the football offseason. The family stopped in a gym one day to check out classes, and they came across jujitsu. Kayla, then just six-years-old, decided she wanted to give it a shot. Over the past eight years, she has trained hard to become a nationally ranked jujitsu fighter, and she just recently won the Gold Medal at the Kids Pan Am in Long Beach, Calif. on February 19, 2017. She competes against other teens (ages 13-15) and even goes head-to-head against boys her age as well. Having competed in more than 40 tournaments over the past eight years, Kayla has made a name for herself in the sport and considers it a part of her life and an extension of who she is. Despite being a studious eighth-grader, Kayla manages to fit in many hours of training every week. After school, she heads home to do homework and study for tests, and then it’s time for the gym. The teen trains around two hours per day, 4-6 days a week, depending on her tournament schedule. After her gym session, she returns home to finish any other schoolwork and head to bed before repeating it the next day. Kayla trains at Memphis Judo and Jiu-Jitsu on Stage Road, and she also works out and runs at the Bartlett Recreational Center. She initially began training with Nathan Pang, Alex Meadows, and Blake Smythe but now works with Joel Gingery and Kayla Patterson. The teen says, “Both Joel and Kayla have taught me how to grow in the sport and keep my head held high both on and off the mat.” While many of her peers spend their free time doing fun activities, Kayla says she would rather be at the gym training. “It’s the one place I can go and always leave in a positive, good mood. It pushes me to work harder and achieve bigger and better goals.”

In order to stay on track with her training, Kayla watches what she eats, especially during tournament preparation. However, she admits to loving pizza, especially from Milano’s. While it can be difficult to balance training, school, and academics, her advice to other people her age is to, “keep at it.” “It’s always going to be hard at first, but if it’s something important to you, you will find ways to work hard to make yourself a better person and athlete.”

MEMPHIS YOUTH ATHLETICS By Samantha Fong. Photo by Philip Murphy. Over the past three years, the nonprofit Memphis Youth Athletics (MYA) has worked with nearly 2,000 kids to bring track and field athletics to students in the community. The model is based on Knoxville Youth Athletics, founded by Marty Sonnenfeldt. Nick Dwyer, the president of MYA, saw a need in Memphis and founded it with Sonnenfeldt’s help. MYA’s mission is simple: “We’re here to fund underprivileged inner city programs. We find coaches and train them to create a positive outlet for students.” Since starting in 2014, they cover schools as far as Fayette County, Tipton County, Arkansas, and Mississippi. The organization primarily focuses on track and field and cross country. Each program has about 5-6 different events. They work with track and field in the spring and cross country in the fall. “Running teaches many life skills like discipline. The kids’ grades are better and they make better choices,” Dwyer says. He and his team have made an impact on the children of Memphis. Madison, a girl at St. Patrick’s Catholic School, was struggling athletically, but with the help of MYA she crossed the finish line. “You can identify Madison as an urban kid. She couldn’t finish a mile at first, but we took notice. No matter how long it took, we wanted her to try. The other kids too. They all went to Madison’s side and finished the mile with her.”

Although Dwyer, board member Cameron Thomas, and vice president John Payne all work 9-5 jobs, it hasn’t stopped their momentum to grow MYA. So far, they’ve expanded just from word of mouth alone, and Dwyer even goes into schools to explain the impact they can have on the students. MYA provides everything from funding to the coaches. Almost always, the schools are open to the program.

MYA is looking forward to expanding by adding more locations and creating an education outlet where students can peer tutor one another. Dwyer says, “This organization is so much more than running—it’s diversifying kids. Something like this can change lives. It’s a family.”

AMANDA KIRKMAN, 32, spent most of her life as a ballerina, from age six to 21. But for the next nine years, she was not very active. During that time the Colorado native moved to Memphis and fell in love the city and, in time, a new sport. Once settled, Amanda, a real estate agent for Keller Williams, joined Memphis Fitness Kickboxing. The studio also offers jujitsu classes, and Amanda took a chance on it. From that first class, Amanda was hooked. After taking it seriously for two years, she earned her blue belt in August 2016. With a hierarchy of five belts, Amanda is working towards her third, a purple belt. Jujitsu is a Japanese system of unarmed combat and physical training. Athletes do a series of six-minute rolls on the floor, wrestling one another into various submissions. While offering an incredible cardio workout, jujitsu can be compared to weightlifting where the resistance comes from other people instead of weights. “Think of it as trendy wrestling,” Amanda says. “It’s wrestling, but it incorporates some MMA and Ronda Rousey-type elements.” In March 2016, several people from the studio branched out and started Midtown Grappling Academy. Although jujitsu is a male-dominated sport, Midtown Grappling Academy proudly has about 50 percent female students. Having been a ballerina most of her life, Amanda had to retrain her mind on the ideal body type. Amanda was accustomed to the long, thin, lean shape of a dancer. Since beginning jujitsu, she gained about 30 pounds, mostly in her quads and glutes. “I’ve gained a lot of muscle mass by doing jujitsu, and I’ve had to adjust my mindset on what my physique should look like.” In addition to working out, Amanda eats a strict paleo diet. Since jujitsu is a sport known for injuries, she believes her diet helps combat inflammation and reduces the risk of injury. She usually begins the day with a half-cup of oats with powdered peanut butter and cashew milk. After her midday jujitsu class, she typically eats a whole cantaloupe followed by a lunch of brussel sprouts and salmon. Dinner “gets a little fancy,” Amanda says. The self-proclaimed chef often makes shrimp pad thai with noodles made of yams, lettuce wraps, or curry soup made with cauliflower. She tries to avoid all processed foods and sugar. While Amanda is working toward an eventual black belt, she says, “I remind myself not to focus so much on the end goal but to truly enjoy the journey. As long as I’m learning each day, how the journey ends does not define the experiences I’ve had throughout it.”

DYNAMIC OR STATIC WARMUPS? By David Queck Tell me if this sounds familiar: You wake up really early, find a granola bar. and demolish it. You step outside, twist your torso back and forth a few times, push against a wall to stretch the calves, kick your legs a few times, and off you go for your run. Sadly, this is how most people start their workout, and even that may be a stretch. A proper and thorough warm up can be one of the most beneficial parts to your workout, whether it’s for a run, a weight session, Pilates, or a pick-up game of basketball. It’s important to understand why you warm up and what it will do for your body. A good warm up is dynamic in nature, meaning you move around while actively stretching, as opposed to a static warm up where you are stationary. Think of stationary as sitting on the ground and grabbing your toes to stretch your hamstrings. Never static stretch a cold muscle. Instead use a dynamic warm up to bring blood to the tissue, so it is more pliable. Your warm up should be around 5–10 minutes and include large muscle groups, rather than isolating a small group. A dynamic warm up delivers oxygen and nutrients to your muscles and prepares your heart for an increase in activity. It also wakes up your nervous system, making your nerve-to-muscle pathways ready to roll!

WARM UP DRILLS:

Without going too in-depth with certain drills, here are some basic movements to get your body and your brain ready to go to get the most out of your workout.

1. BODY WEIGHT SQUATS (X10)

Hinge back at the hip and sit down to parallel. Make sure your back is flat and keep your feet firmly planted in the ground.

2. LEG SWINGS (X10 EACH WAY)

Keep one foot on the ground while holding on to a fence or wall. Swing your leg side to side (think 3 o’clock to 9 o’clock). Then swing your leg front to back in the same fashion.

3. PUSH UPS (X5–10)

Get those arms pumping! Go from your knees if you have to. Just make sure your chest touches whatever surface your hands are touching. You can even go against a railing if regular and knee push-ups are too hard.

5. JUMPING JACKS (X20)

Start with your hands by your sides as you stand. Jump up and simultaneously bring your arms over your head and spread your feet apart.

6. ARM CIRCLES (X10 EACH WAY)

While standing tall, extend your arms straight out like the letter “T.” In small circles, move them clockwise, then counter clockwise. Then move on to big circles in the same fashion.

7. WALKING KNEE HUGS (X10 EACH)

Each step you take, grab one of your shins and hug it to your chest as you stay nice and tall. This will also challenge your balance!

4. WALKING LUNGES + TORSO TWIST (X10 EACH LEG)

Keep a slight forward lean as your ankle steps over opposite knee as you lunge forward. In the bottom position, twist your torso back and reach over the knee that’s out in front of you. Do this with each step.

It’s been going on for almost as long as I can remember. As a kid, I was a picky eater. Sometimes I hid food in my napkins because I just didn’t want it. In 11th grade, I quit eating meat—and it wasn’t the only thing I cut out. I avoided bread, limited dairy, shunned salad dressing, and said I was full when it came to dessert. I was always anxious, and the more anxious I felt, the less I ate. Not eating enough numbed me to what was going on in my environment, things I couldn’t change. I could control how many crackers I allowed myself or how much fluid I consumed. Each day I knew exactly how many calories I ate. After hardly eating, I would workout for several hours, often late at night to hide how long I spent on the treadmill or elliptical. I felt strong when seeing the distances I walked or ran. After adding up all the calories I burned, it felt like a huge accomplishment. People praised me for being “tiny,” and joked I didn’t “need” exercise because I was already so small. To the outside, I was a petite, healthconscious girl with perfect grades. On the inside, I struggled with the disorder with the highest mortality rate of any mental illness: anorexia. As a senior at The University of Memphis, my BMI (body mass index) plummeted dangerously low to a 12. I experienced amenorrhea, lanugo hairs, and constant fatigue and coldness. Despite the physical effects of my disorder, I continued pursuing my degree in creative writing. I was finishing college a year early with a 4.00 GPA, but I was still hard on myself and didn’t recognize my own accomplishments. Perfectionism held me back. Getting acceptance to graduate school in Boston helped eased my disorder some. My weight wasn’t as noticeably low, but my relationship with food and exercise continued to be a problem. Purging, diet pills, and laxative abuse are all things that tormented me at one point. At 24, a bone density test revealed I had osteopenia and some full osteoporosis. During the next year, I faced 15 double ear infections, had chronic respiratory infections, and my stomach lining thinned so much that merely coughing led to an incarcerated hernia. I usually had to sit in my car a few minutes before driving because I would black out simply by walking through the parking lot. I worried about dying in my sleep. My life changed when my now-fiancé became concerned about my health and went with me to a treatment center for eating disorders. I was relieved because I knew I had a problem, though I was somewhat still in denial. I thought I wasn’t skinny enough to need treatment. I justified it because I wasn’t as thin as I had been during that final year of college, so it couldn’t be that bad. However, I’ve learned a person doesn’t need to feel “sick enough” or be underweight to need and deserve help. Being under or overweight is only one of the many effects of eating disorders. Size isn’t the main criteria in diagnosis, and a person can have a normal BMI and look fine on the outside while having an unhealthy relationship with food and body image. I was immediately admitted into the treatment and spent most of last summer in a partial hospitalization program. Recovery is a daily battle—physically and mentally. From my body rejecting food to learning how to handle comments about my weight gain, it’s been difficult. However, my immune system is stronger. My hair and nails are long, not brittle. I have more energy to get through the day.

My fiancé, a personal trainer, helps me perform light exercise. I don’t think about burning off all my calories, instead focusing on how much better I feel. I especially enjoy yoga. It helps reduce the anxiety that triggers the

disorder, and it makes me more mindful of how wonderful exercise can be when not abusing it. The word “healthy” means something different to everyone, and we each have our own journey to get there. For those struggling with food or exercise, my hope is that you, too, will seek a better life. Not everyone will be supportive or understanding if you’re struggling with an eating disorder, but it’s crucial to spend time with those who do not reinforce the negative behaviors and thoughts. I’m thankful for those who have helped me heal to arrive where I am today. Compared to a year ago, I’m new person. By letting go of this disorder and not allowing it to control me, my life has become better than I ever envisioned. I still have hard days with food and body image, but they’re becoming fewer. The hope of being able to have children is a huge motivation for my full recovery. This struggle is just one chapter of my life’s story, and I’m excited and hopeful about the life there is to gain after an eating disorder. PRERACE RITUAL: Everything has to be set up the night before (clothes, shoes, bib, gels, hat), and I have to be up at least an hour and a half before I leave for a race. I cannot just roll out of bed on race day. That ensures that I have everything I need right in front of me, so I am not stressed. WW MUST-HAVE’S: I am in love with my Garmin 235! I even wear it to bed, so it can monitor my heart rate when I sleep. OBSTACLE COURSE: In 2012, I ran the Boston Marathon with stress fractures in both tibias. BEST EATS: Another Broken Egg on Park. I always have an omelet and coffee. WHAT IS SOMETHING NOT MANY PEOPLE KNOW ABOUT YOU? I didn’t run my first half marathon until I was 42 years old. I ran my first full marathon at 43. I had no idea I could be a runner. If I can do it, anyone can. BINGEWATCH: I don’t miss an episode of Scandal. PET PEEVE: Walkers in the front of the corrals and walkers that don’t get to the far right if they are walking through the water stops. From a safety standpoint, it is better for the runners to be in the front of the corrals and the walkers in the back. This is also important at the water stops to avoid the “three stooges” effect. VICE: All things sweet—and pizza!

10 FIT TIPS for Guilt-Free Dining By Lisa Mullin

It’s easier to stick to a healthy eating plan when in our own kitchen, while dining out can be culinary conundrum. That’s when we tend to make poor food choices and overeat. Healthy meals at restaurants can also be deceptive. Many “healthy” meals are packed with processed ingredients and unnecessary calories that will send the scale in the wrong direction. Follow these fit tips to make dining out guilt-free.

1

Choose Healthier Restaurants

Farm to table, chef-driven restaurants are becoming more common, as are fresh, organic veggies and grass-fed meats. Restaurants like these may be more willing to accommodate special nutrition requests.

Plant Food 2 Choose Fruits, vegetables, and whole grains are full of fiber that keeps us full. A meal doesn’t need meat to be indulgent. Replacing meat with fruits and vegetables allows for larger portions. Be wary of sauces that add calories.

Before a Meal 3 Snack Arriving hungry can lead to overeating. A low calorie, high protein snack will help to prevent that.

Food Preparation 4 Look for meals that are baked, braised, broiled, grilled, roasted, or steamed. Skip crispy, deep-fried, battered, breaded, or coated foods. If unsure, just ask the staff how the food is prepared.

As Entrees 5 Appetizers Portion sizes have gotten out of control. An appetizer is enough to make a filling meal. Consider supplementing with a side salad if needed.

Beware of Beverages 6 Drinks can add another meal’s worth of calories. Sweet tea, soda, and that cocktail are full of empty sugars with few nutrients. Drinking water before and during the meal will help to reduce calories.

Up on Salad 8 Fill Starting the meal with a salad is an easy way to add nutrients. Opt for greens, raw veggies, nuts, and seeds. Vinegar-based dressing is a better option than the creamy kind, and always order it on the side.

Make Healthy Swaps 9 Substitute vegetables for french fries. Choose white rice over brown, or an alternate healthy grain.

Eat Mindfully

This means giving our full attention to the eating process. Take time to savor the flavors and aromas. Chew food thoroughly and eat slowly. Pay attention to thoughts and feelings while eating. This helps improve self control and mitigates overeating.

Drink Water before every meal and throughout the day. Thirst often disguises itself as hunger. Drink a minimum of 64oz daily to quench your thirst and your appetite! 34

Garlic-Kale-Cashew Fried Rice

INGREDIENTS: q 1 cup brown jasmine rice q 1 .5 cups low-sodium vegetable stock q 5 Tbsp olive oil (divided) q 1 red bell pepper (thinly sliced) q 0 .5 sweet onion (thinly sliced) q 1 small head of kale (leaves removed and sliced) q 4 garlic cloves (minced) q 0 .5 tsp fresh grated ginger q 2 large eggs q 1 -2 Tbsp low-sodium soy sauce q 2 /3 cup cashews q 0 .5 Tbsp toasted sesame oil DIRECTIONS: 1. C ombine the rice, stock, and 1 Tbsp olive oil in a saucepan. Bring to a boil and reduce to a simmer. Cover and cook for 40 minutes, or until the liquid is absorbed. 2. H eat a large skillet or wok over medium-low heat and add 1 tablespoon of olive oil. Add the sliced pepper and onions with a sprinkle of salt and pepper. Cook until soft, about 6–8 minutes. Stir in another Tbsp of olive oil with the kale, garlic, and ginger. Cook, stirring every minute or so, until the kale wilts. Scoop all of the veggies out of the skillet and into a bowl. 3. A dd 0.5 Tbsp of olive oil to the same skillet and increase the heat to medium. Scramble the eggs and cook them for about a minute, until firm. Set them aside in a bowl. 4. T urn the heat up to high and add the remaining 2.5 Tbsp of olive oil. Add in the cooked jasmine rice, tossing to coat, then let it sit for 1–2 minutes to crisp up and get golden. Stir and break apart any pieces. Repeat this several times until desired consistency. 5. Reduce the heat to low and stir in soy sauce. Add the veggies and eggs back in, then stir in the cashews. Drizzle with toasted sesame oil. Season to taste and serve. Serves 4-6.

With farmer’s market season upon us, now more than ever is the perfect time to create clean, healthy dishes. The abundance of fresh produce makes it easy to eat better. This farmer’s market-inspired quinoa bowl packs in several servings of veggies with a southwestern kick. INGREDIENTS: (serves 4)

q 1 medium sweet potato (peeled and cut into 0.5 inch cubes)

q 2 Tbsp olive oil q 1 .5 Tbsp kosher salt

q 1 green bell pepper (cored and chopped into 0.5 inch pieces)

q 1 Tbsp agave nectar

q 1 yellow or orange bell pepper (cored and chopped into 0.5 inch pieces)

q 0 .5 Tbsp oregano

q 1 zucchini squash (cut into 0.5 inch cubes) q 1 red onion (peeled and chopped into 0.5 inch pieces) q 1 can black beans (rinsed and drained)

q 1 Tbsp ground cumin q 1 tsp ground coriander q 1 cup Greek yogurt q 1 –2 Tbsp chipotle peppers in Adobo sauce (minced) q 1 small lime (zested and juiced) q 1 cup cooked quinoa

DIRECTIONS: 1. H eat oven to 400F. Spread the sweet potato, bell pepper, zucchini, onion, and black beans evenly on one large or two small baking sheets. Sprinkle the olive oil, salt, agave nectar, cumin, oregano, and coriander over the top and toss together, coating all the veggies in the oil and spices. Roast for 20–25 minutes, or until veggies are soft and golden.

2. I n a small bowl, mix together the Greek yogurt, chipotle peppers, lime zest, and juice with a dash of salt. 3. T o plate, spoon about 0.25 cup of cooked quinoa in 4 shallow bowls, top with the roasted veggies, and finish with a large dollop of the Greek yogurt sauce.
