The Best of Memphis Burgers at Burger Fest

In 2011, Seth Agranov started BestMemphisBurger.com to highlight lesserknown local burger joints. It quickly gained momentum and had a significant following. At the time, Seth was on a number of cooking teams for local competitions such as Memphis in May’s World Championship Barbecue Cooking Contest and the Southern Hot Wing Festival. “I loved being a part of these competitions, but I always felt like there were ways to improve them,” he says. The burger lover decided to combine the two and put a callout online to be on the ground floor of a new festival—Best Memphis Burger Fest. Teddy Gorman jumped at the opportunity to be a part of the team. Seth and Teddy, along with several others, hosted the inaugural Best Memphis Burger Fest in 2012 to raise money for Memphis Paws, Inc., which supports local animal rescues and charities. They’ve raised more than $40,000 for the organization so far. “I never really ate burgers before joining the Burger Fest team, so I decided I needed to become a subject matter expert,” says Teddy. They attempted to try every burger in town, but that started catching up with them. “After seeing photos from the first Burger Fest, I knew I needed to get back in shape,” Seth says. To shed a few pounds, he completed in several sprint and Olympic triathlons and ran the St. Jude Half Marathon. Teddy, who was already into fitness, decided to come up with a plan to combat the extra calories. “When I knew I would be meeting Seth to eat burgers, I would increase my cardio the day before or the day after,” he says. An avid traveler, Teddy often plans trips around trying various burgers, but he finds ways to get in exercise, whether that’s working out at the hotel gym or paying for a day pass, complemented by walking around the city instead of taking cabs.

After a longer period of clean eating, reward yourself with a weekend or full week of cheats. By the end, you’ll be ready to go back to eating clean. • T ake a healthier approach to the cheat meal. Eat a burger with leaner meat, rather than eating empty calories, like sweets. “I think you can get a great burger with 96% lean ground beef,” says Teddy. One of his favorite local burgers is the stuffed turkey burger at Mot & Ed’s. • C ount your Macros. Document and track your food intake. If you know how much protein, carbs, and fat you’re taking in, it makes it easy to adjust the rest of your meals to fit burgers into the day’s totals.

Mama Gaia Brings Healthy, Delicious Fast Food to Memphis Originally from Germany, Philipp and Cru von Holtzendorff-Fehling decided to move to the states and make Memphis home because of its culture, history, and community. While they have always loved their adopted city in the heart of the Delta, they discovered it was hard to find healthy, organic food, especially when eating out.

“We saw the gap and the need for healthy, fast food,” said Philipp. “We all lead busy lives, and healthy food in restaurants is widely unavailable, especially if you don’t want to spend a fortune or need to get in and out quick.” Philipp’s wife Cru was diagnosed with Lyme disease several years ago. More than anything, she had to make changes to her diet, which kept them from eating out. Needing organic and vegetarian options, she found that places besides New York City and San Francisco were lacking in restaurants that catered to healthy eaters. So, the pair decided to develop a restaurant concept, and from there, Mama Gaia was born. The first step was to determine a location for Mama Gaia. Philipp and Cru were immediately drawn to Crosstown Concourse. “The philosophy of Crosstown development is so aligned with what we’re doing—it’s a natural fit,” said Philipp. Next they needed a menu. Cru, who was trained and mentored by Michelin-star chef Armin Karrer, developed the entire menu herself, which is made of all organic, vegetarian dishes that are prepared quickly for people on the go. The menu consists of pita, petizzas, salads, and more at affordable price points. “We wanted to create a restaurant and a menu that are good for the planet, the environment, and our health,” said Philipp. “Mama Gaia means ‘Mother Earth’ in ancient Greek, and we think that’s a perfect description of what we have built with our business. With Mama Gaia, we’re making the unavailable available.”

The Overton location has a full coffee bar as well as signature cocktails made with organic liquors, wine, and beer. Early Detection of Breast Cancer The high incidence of breast cancer among woman has left us asking why there isn’t more focus on prevention and early detection. In America, more women are diagnosed with breast cancer than any other cancer. The American Cancer Society estimates that in 2017 there will be over a million and a half new cases of cancer in the United States—252,710 of them breast cancer. While we understand the value of yearly mammograms, annual doctor exams, and monthly self-breast exams, what many don’t realize is there is another type of screening that can detect physiological changes in the breast at its earliest stage. The American College of Clinical Thermology addresses the role of thermography in breast health by stating: “Thermography’s role in breast cancer and other breast disorders is to help in early detection and monitoring of abnormal physiology and the establishment of risk factors for the development or existence of cancer.
When used with other procedures the best possible evaluation of breast health is made.”
The thermal images are recorded as a color map and are sent to medical doctors specially trained in thermology for interpretation. Their findings are then sent to each client with specific recommendations.
Thermography (digital infrared thermal imaging), is a safe and simple screening that can provide early detection of breast conditions that are unable to be detected by mammography or self-breast examinations. Thermography is radiation-free, compression-free, and ideal for monitoring breast health in a normal breast as well as in dense breasts and those with implants.
Most women think that a family history of breast cancer is a definite risk factor for developing the disease. As of April 2017, according to Cancer. org, only about 5-10% of all cancers result directly from inherited gene mutations.
By using a digital infrared thermal camera to record the heat patterns emitted from the body’s surface, thermography looks at the body’s physiological process. Abnormal heat patterns reflect health issues. By evaluating the function of the organs, muscles, and cells, thermography detects temperature changes associated with inflammation. Physiological changes begin years before a lump can be detected on a mammogram and can identify new blood vessels (neo-angiogenesis) that grow to support a tumor.
We, as women, can change the future by educating ourselves and using a combination of available breast screenings. By being proactive in our own health decisions we can empower other women to take the journey along with us in reducing the incidence and mortality of breast cancer. “It is not unusual for a woman with an abnormal breast thermogram to be asymptomatic and have normal mammography and ultrasound results. So what does that abnormal thermogram mean? A study published in 1980 followed 1,527 such women for 12 years. Of this group, 44 percent developed malignancies within 5 years. The study concluded that “an abnormal thermogram is the single most important marker of high risk for the future development of breast cancer.” 10

Breast Reconstructive Surgery More choices and better technology Women who want to consider breast reconstruction surgery following a mastectomy or lumpectomy have more choices than ever with advances in technology that lead to better early detection as well as improved surgery options. These options depend on a number of factors, such as what stage the cancer is in when discovered, what treatments are chosen, and the patient’s overall condition and size of the breasts. How to approach reconstruction also depends on the type of surgery that was performed to remove the tumor. We sit down with each patient to discuss all the options and formulate a plan together. We take differing approaches to a lumpectomy—a breast-conserving surgery that removes only the tumor and some surrounding tissue —than to a mastectomy, which removes all tissue in the affected breast. In breast reconstruction, we create a breast shape using an artificial implant, a flap of tissue from another place on the patient’s body, or sometimes a combination of both. Implants are filled with saline, silicone gel, or a combination of the two. Flap, or autologous, reconstruction uses tissue transplanted from the stomach, leg, or back. Beyond reconstruction, some patients choose to also reconstruct the nipple if the original one isn’t preserved. We can tattoo match color to the opposite breast, or you can have a 3-D tattoo that looks like a nipple. There are several options. Reconstruction has progressed to the point of being more refined, and patient satisfaction is markedly better than in years past when patients had concerns about a possible defect in the implant. The silicone implants used decades ago no longer exist. Now it’s a cohesive gel that has a more natural feel and look. Some women know as soon as they have a mastectomy or lumpectomy that they want reconstructive surgery immediately. Others might decide to go down the surgery path years after breast removal. There is no right or wrong way, only the way that works best for you. All women considering breast reconstruction must remember tumor removal is first priority. Talk to your surgical oncologist as well as your plastic surgeon to come to an agreement on the best approach for both tumor removal and breast reconstruction.

I’ve been asked if we have a typical patient. In medicine generally, and plastic surgery specifically, there isn’t one general type of patient. If we start treating everyone the same, then we’ve missed the boat. Some people don’t want reconstruction, and that’s perfectly fine. Some people may want a size reduction, or one breast made smaller and the reconstructed side made to match. We want every woman to understand that we’re here to work with you. Now, sometimes there are limitations. Radiation therapy, for example, changes muscle and skin and affects how we approach our options. But don’t get discouraged if you’ve received radiation therapy. Many implant-based breast reconstructions after radiation therapy are successful, and in some situations, the patient’s own tissue is used. It’s an exciting time for what we can offer women. Coping with Cancer Chances are you know someone who’s had cancer, or you know someone who knows someone who’s had cancer. FIGHTING OSTEO TOGETHER When most people hear the word Osteoporosis, they think of someone old, small, hunched, and using a walker. That’s the image I had as well until I learned the hard way that illness has no age limit. At age 24 I was diagnosed with osteopenia, the precursor to osteoporosis. My bones were thin and getting fragile. Sections of my bone scan revealed scores that already indicated full osteoporosis in some areas. Injuries I sustained in a car wreck a few months prior were not healing at the rate they should have been. I would never have guess osteoporosis was the reason. Devastated, I worried about breaking something and how it would affect having children someday. I worried what other people would think, and in my future I saw a big hunchback.

My 58-year-old mother, Millie, was diagnosed with osteoporosis a couple of weeks later. Her bone test scores were higher than mine, meaning they were more brittle. At first she was upset but was soon back to normal. At the time, it was hard for me to understand why she could be so calm, but now, three years later, my mindset has changed. Being diagnosed was beneficial in more ways than one. It helped me realize that I needed help for an eating disorder. Every day in recovery from the eating disorder is a step toward making myself strong and a chance to reverse the osteopenia. My husband, Kyle Jackson, is a personal trainer at the Jewish Community Center and YMCA. He’s quick to tell clients, “Being diagnosed with osteopenia at a young age is not a death sentence. It a serious wake-up call to better your overall health and well-being before the condition worsens. It’s possible to drastically improve

the condition of bone and return it to a normal, healthy bone structure.” My mom and I share helpful articles and information and support each other. For the most part, though, it’s something we’ve learned to accept and not dwell on. “I don’t feel any different,” my mom says. “Since I know I have it, I’m cautious and avoid high impact exercises. I take extra calcium and vitamin D, but osteo never ruins my day because I don’t let it.” Two things play a large role in bone health: food and exercise. My biggest struggle has been learning to eat balanced meals and maintaining a normal weight. Eating disorder therapist Jill Hampton claims, “Addressing the potential root of early onset osteoporosis, an eating disorder, is crucial in limiting the long-term impacts of it. If bone loss is detected early, it has much better treatment outcomes.”
LIVING HEALTHY Kyle advises, “Calcium, vitamins D and K, and phosphorus are the primary micronutrients needed for healthy bones. Dairy products like milk, cheese, and yogurt are good for bone health, but there are many more sources available. Broccoli and various nuts are surprisingly good sources of calcium, while consuming dark, green leafy vegetables, such as spinach and kale, contain good amounts of vitamin K.” The body grows weaker with age, and we lose bone mass. For me, it’s crucial I rebuild my skeletal system as much as possible. For my mom, it’s imperative she prevents hers from worsening. She works out 3-4 times a week and has taught me to avoid exercises that are rough on the body. We both enjoy walking and using small hand weights. I love to exercise with a weighted hula hoop. Kyle emphasizes, “It’s important to understand what low-impact is. Generally, that means not placing too much stress on the joints. For example, placing a “swiss” ball between you and a wall and performing slow, controlled body squats would be preferable
over barbell back squats. It’s best to avoid fast-paced movements that involve jumping, hopping, leaping, etc. Safer and more appropriate activities are walking (especially on a slight incline/decline), carrying weights while walking, resistance training, compound exercises that target large muscle groups (body squats, lunges, dumbbell chest press), as well as using some common weight room machines like the leg press, “lat” pulldown, and seated row.” For clients with osteoporosis Kyle also recommends “walking in a swimming pool, treading water, and low-moderate intensity swimming and yoga workouts.” I’m thankful to have learned about my condition early, so I have a real chance at turning things around. The truth is that we all have this chance, whether we already have low bone mass or not. The key is starting as early as possible.

– Atrophic vaginitis, also known as vaginal atrophy, is an inflammation of the vagina and the outer urinary tract due to the thinning and shrinking of the tissues, as well as decreased lubrication. Research over the last 20 years has shown that in most cases massage therapy is both safe and beneficial to cancer care. The concept of cancer has developed beyond a single disease into a complex system of diseases and symptoms. Cancer care has shifted over the decades from simply searching for a cure to also improving the quality of life for those living with cancer. Massage is often used as a complement to cancer treatments to assist with symptoms and side effects. One of the most important impacts massage therapy can have on a cancer patient and others with chronic illness is a sense of control that many lose after numerous doctor visits and treatments. Living with disease requires a great exertion of emotional and mental strength to cope with the physical, mental, and social effects. Massage can allow patients with cancer and other serious illnesses to determine their own control and comfort. Many people who have lived with cancer can later suffer from lymphedema after lymph nodes are removed during surgery or if there is damage to lymph vessels. Lymphedema is an abnormal accumulation of lymph fluid, usually restricted to
areas near the removed or damaged lymph nodes and vessels. It is a chronic condition that is uncomfortable and difficult to adjust to. Simple things such as finding clothes can be complicated, for instance by one arm being larger than the other. Manual Lymph Drainage (MLD) is a gentle technique (different from lymph massage) designed to help redirect lymph flow from affected areas. Manual Lymph Drainage can increase the amount of lymph fluid moved through an area to soothe and relieve pain, which helps manage lymphedema. Choosing massage therapy as part of multidisciplinary care is a personal decision. Always discuss these treatment options with your doctor. Make sure the massage therapist has some training in cancer care because there are adjustments and modifications that need to be made in the massage. TAKE ON THE TRAILS By Feb Boswell
“Wilderness is not a luxury but a necessity of the human spirit, and as vital to our lives as water and good bread.” – Ed Abbey “Cactus Ed” Abbey certainly had deeper implications when he coined this phrase, namely the encroachment of civilization on our wilderness and natural resources. As urban dwellers with several inches of asphalt separating our daily lives from the natural world, the human spirit cries out in agreement of our need for wilderness on a very personal level. We, especially as runners and walkers, want to get outside and enjoy nature! How can we do this? Hit the trails! Memphians are privileged to have access to miles of wooded trails in which to get out and fulfill, on some level, that necessity of being out in the wilderness. There are several systems of trails in the city and in surrounding areas, giving plenty of options for getting away from the concrete jungle and into the trees. There are few better ways to spend a day than on a trail run followed by drinks with friends! Not only does trail running fulfill a need and longing in your spirit, it can give our body a break from the constant pounding of pavement, and encourage us to use muscles we don’t use on a daily basis. After a day on the trails, the usual joints may not ache, and some muscles that we didn’t even know we had are sore. Following are a few tips to help you become comfortable with the idea of moving some of your runs away from the pavement, or the treadmill, and to the dirt. Be careful out there. You may find that your spirit soars to heights that will challenge you physically and mentally in ways you never imagined. At that point you’ll begin to understand just how good for you hitting the trails can be!
BE SAFE – Run with friends or a canine
companion. If running alone is the only option, let someone know where you are going. Always be mindful of your surroundings.
YOU’RE IN NO HURRY – Allow more
time for trail runs as the terrain will slow your pace. Do not let ego take over and allow for a frustrating run because of the slowed pace. Enjoy the time. Take in your surroundings. It’s not always about pace and distance.
KNOW AND UNDERSTAND TRAIL RUNNING ETIQUETTE – Yield to other trail users. Say hello or good morning. Stay on the designated trails and do not create new trails. That means run straight through mud puddles. Not around them. And… DO NOT LITTER!
TRAIL RUNNING TECHNIQUE –
Run with a shorter stride in an effort to keep your feet beneath you and maintain balance. Always look 10 to 15 feet down trail in order to see any obstacles in your path and to pick the best line.

HAVE FUN! – That one should go unsaid,
but we all need reminding. Get outside, take some deep breaths, and simply enjoy the natural world around you. Be curious. Check out local foliage and wildlife. Stop and soak it all in every now and again.

The Unstoppable
Leslie Daniel
Breasts are as individual as fingerprints, and after years of mammograms Leslie Daniel knew hers were dense and fibrocystic. Though she had felt a lump on her chest in the summer of 2016, she didn’t think much of it until her annual physical that fall. Her OB-GYN, Dr. Paul Neblett, ordered an ultrasound, which resulted in a biopsy just a week later. Leslie says, “It was November 17 around noon I got a call saying I had cancer. It was IDC (Invasive Ductal Carcinoma).” She already dealt with a lot that year—bronchitis and the passing of her mother—so this diagnosis was not the first test of her faith or her strength. At 46 years old, Leslie is fitter than many. Before her diagnosis, she consistently worked out five days a week and ate healthfully, which hasn’t changed since her surgery or recovery.
“I really believe my diet and working out so consistently helped me heal faster.” “I was so fortunate we caught my cancer early because I didn’t have to have radiation or chemo. My faith was strong and my workouts helped me keep a positive mindset,” she says. Dr. Alyssa Throckmorton, her surgical oncologist, recommended a mastectomy and reconstruction. Three days a week at Orange Theory and twice a week a French Riviera kept Leslie busy but also strong for her recovery. Her gym friends became her support system. “The Orange Theory team surprised me and wore pink one day. I worked out until the day of my surgery, and it helped me heal so much more quickly.” For six weeks after her mastectomy, she couldn’t do her normal exercise, so she took long walks along the river near her home in Harbor Town on Mud Island. “I really believe my diet and working out so consistently helped me heal faster.” When she had her reconstructive surgery the following spring, she returned to walking while she healed. Leslie knew well the impact exercise had on surgical recovery from her husband’s experience. The year prior to her diagnosis, in 2015, her husband had a heart transplant. “Walking every day helped him heal. That motivated me to walk as well,” she says. She and her husband support each other in maintaining their healthy lifestyle. They’re committed to eating organic, and Leslie removed beef and pork from her diet to eat clean. Just three weeks after her reconstructive surgery, they rode together in the Mid-South Transplant Foundation Ride for Life, a 25-mile course. Leslie says, “His new 21-year-old heart keeps me young. I’m just trying to keep up with him.”

George Woodbury Jr. M.D. Rheumatology and Dermatology Associates PC celebrated its 24th birthday June 13th 2017 at our office at 8143 Walnut Grove Road, in Cordova TN. I’d like to comment upon who we are, and what we’re about. We are a two-physician practice dedicated to helping people to feel better about themselves and to function better at home and at work. The dermatology end of the company is chaired by yours truly – George Woodbury Jr. M.D. I decided to enter dermatology when in my third year of medical school at the University of Chicago Pritzker School of Medicine, in 1986. I liked the fact that the specialty involved people of all ages, and that is used a combination of medical approaches and surgical approaches. Many of the therapies used by the specialty were also pretty effective in helping people to get better. I also had some perspective on the specialty, having grown up in a dermatology and ophthalmology household, my mother Linda Woodbury MD having been a dermatologist since 1965 – and my dad George Woodbury Sr. – having enjoyed the practice of ophthalmology – medical and surgical treatment of the eye just about a long. My family gave me an idea what life in the world of medicine was all about. My life changed pretty dramatically after I met my wife Cathy Chapman MD at the University of Chicago Medical School. We fast became friends, then fell in love and married the day after she graduated medical school in 1988. We came to Memphis after Dr. Chapman completed her specialty training in rheumatology – which is the study of arthritis and connective tissue diseases like lupus and scleroderma – at Strong Memorial Hospital, in Rochester New York – in 1993. We’ve been practicing together in Cordova TN since 1993.
MedComplete. It handles all the usual medical office functions from medical records to prescriptions to billing. MedComplete requires constant upgrades. Staying up-to-date allows us to deliver better care. On July 10th of 2017, we shall have reached 19 years of being entirely paper-free at our office! We are also both dedicated to staying up to date in our respective fields. We participate in a spectrum of medical organizations, Dr. Chapman being a member of the American College of Rheumatology and myself a member of the American Academy of Dermatology, as well as the Tennessee Medical Association and the Memphis Medical Society. My dermatology practice includes both medical and surgical treatments for common skin conditions – acne, seborrheic dermatitis, rosacea, psoriasis, and both precancerous and cancerous skin lesions, including melanoma, basal cell skin cancer, and squamous cell skin cancer. I perform Mohs surgery – Mohs Micrographic Surgery – for skin cancer – to allow me to check the margins while the patient is having the surgery. I also offer both sterile and clean surgeries in the office. And I offer allergy patch testing to try to identify what chemicals a person may be allergic to. I use systemic therapies for severe skin conditions – including Accutane (isotretinoin) for severe or resistant acne, and biological injections for psoriasis. These therapies help to improve patient’s self-image, a key factor in their success in life. So it’s all about helping people to heal both medically and emotionally. Rheumatology is the study of conditions of the connective tissues of the body – focusing particularly upon the joints – but also covering the tendons and ligaments. And Rheumatologists – like Dr. Cathy Chapman in our practice here in Cordova – are all about keeping people able to function in their lives to the fullest of their capacity.
Dr. Chapman and I practice different medical specialties, but our practice philosophy is similar: strong patient engagement. We believe that a patient who has a deeper understanding of the disease is better able improve quicker. Better patient understanding supports a solid treatment plan.
Dr. Chapman uses systemic therapies to help her patients with rheumatoid arthritis and connective tissue diseases like lupus and psoriatic arthritis. She offers joint ultrasound, as well as in-office X-rays and labwork. Since there are over 300 separate diseases in rheumatology, these tests greatly help Dr. Chapman to diagnose joint conditions and disorders and also to measure a patient’s progress.

Raising Up Herself and Those Around Her By Robin Beaudoin. Photo by Tindall Stephens. DR. YOLANDA DRAINE has a way with bringing people together. When working for an insurance company, she won the Biggest Loser Contest at work, leading her to found the Fit & Fine 40s Club amongst her coworkers. They took a pledge to lead healthier lifestyles, encourage others, and have fun. Besides doing all kinds of fitness challenges, they exercised at least three times a week, monitored portion control, stayed hydrated, and kept an accountability partner. The camaraderie and support of her fitness group was instrumental in her recovery after she was diagnosed with breast cancer. In February 2013, Yolanda felt a lump on her chest during a bout of heartburn. The following month her doctor informed her that preliminary reports from her biopsy detected cancer. With an appointment scheduled for surgery, Yolanda felt
positive and proactive. “I felt a sense of calm. I told my husband that I would be fine. He was surprised that I didn’t get emotional.” Yolanda considered herself lucky that the cancer hadn’t spread. She says, “I tried to keep a positive mindset. We prayed and went through the journey.” After a successful surgery and preventative chemotherapy, she came back with triple-negative results detecting no more cancer. Her experience motivated her to get involved in the cancer community. Now at 46 years old, Yolanda is the Benefits & Wellness Manager for the Shelby County Mayor’s Administration and an adjunct professor at two universities. She is also actively involved in the American Cancer society. For the past several years, she’s participated in its Making Strides
Against Breast Cancer walk and also supports the Relay for Life event near her home in Arlington. “The American Cancer Society does so much for the community, and the money it raises really helps people with cancer.” Memphis’s Making Strides For Breast Cancer walk is on October 22 at the Liberty Bowl. Yolanda will be participating with her team under the name “Team Strong Brave Beautiful.” In just five months, Yolanda will be a 5-year cancer survivor. Even though her fitness club has died down, she’s still active on her own and finds support through her annual “Girlfriends Getaway Cruise.” This past August, she and 32 women traveled to Belize, Cozumel, and Mahogany Bay encouraging each other and celebrating life.

A Never-ending Battle with Breast Cancer By Christin Yates. Photo by Tindall Stephens. In 2015, 44-year-old HEATHER DONOHUE was diagnosed with Stage IV breast cancer, which had spread to her lymph nodes and bones from the beginning of treatment. Doctors told her that she could live for a number of years, but at some point it would be fatal. “While I continue to take treatments to fight for my life, it is not something I have ever beaten. This is my new daily reality, as well as the reality for the thousands of other people who have metastatic breast cancer,” says Heather. After five months of chemotherapy, Heather went into borderline remission for eight months until August 2016 when doctors discovered two masses on her ovaries. Cancer had also reappeared in her bones. Following a hysterectomy, the subsequent biopsy of those masses showed they were a result of the breast cancer cells metastasizing to her ovaries. “That was actually a relief, since a number of people who have breast cancer also develop ovarian cancer. In my case, with the cancer cells all being from the same origin of breast cancer, it made the treatment easier to plan,” Heather says. In the summer of 2017, Heather’s cancer became unstable again, and the metastatic areas began spreading through her bones and moved into her liver. While many would fold under the devastating circumstances, Heather continues to fight. This mother and grandmother hasn’t skipped a beat. If she wasn’t taking chemotherapy every few weeks, it would be hard to tell she was sick at all. Except for surgery and a bout of bronchitis, Heather hasn’t missed a day of work as a nurse paramedic for emergency helicopter flights. She continues her normal twice-weekly 24-hour shifts, saying, “I love what I do, and I love staying strong in order to continue my career.” She also maintains a rigorous workout routine. “Some days I feel exhausted and want to lie down, but exercise has always given me more energy and helps me stay physically strong,” she says. Heather has been active since she was young, playing sports like soccer, softball, and basketball. She later got into weightlifting and running in high school before joining the United States Marines. After finishing nursing school in 2009, Heather’s daughter asked her mother to join her in running the Nashville Half Marathon to raise money for St. Jude. Heather continued that for several years and ran other half marathons and 10K races, but that came to a halt with her diagnosis in 2015. “My doctor told me I could continue running, but there was a chance of getting compression

fractures, so I decided not to risk it and took up biking,” Heather says. Today, she does a combination of yoga, hiking, walking, and cycling. She loves any outdoor activity and says the fresh air and sunshine helps with any kind of disease, giving her much-needed endorphins. While she admits to having a strong sweet tooth, Heather also sticks to a diet provided by a nutritionist at her cancer clinic. About two thirds of it is plant-based, and she stays away from red meat and pork. She eats a lot of vegetables, nuts, fruit, fish, and poultry. By eating better, she feels better—although there’s an occasional cheat meal or treat.
“Eating well and exercise won’t make my cancer go away, but it will make me stronger to fight against it.” Heather is a volunteer for Living Beyond Breast Cancer, an organization that encourages those fighting breast cancer to stay strong and active and to remind them their lives are much more than their diagnoses. She is attending the Living Beyond Breast Cancer Conference: Sharing Wisdom, Sharing Strength on October 6-8 at the Peabody Memphis. For more information, visit lbbc.org.

WW BRAGGING RIGHTS: I’ve raced tons of road races from 5Ks to marathons, several triathlons from sprint distance to 70.3, and trail runs from marathons to a hundred miles. FAVORITE FITNESS ACCOMPLISHMENT: I ran my first marathon with my dad in 2010. My first 5K was with him was in the 3rd grade, so it was pretty special to share 26.2 miles together. MOST MEMORABLE EVENT: Not finishing my first 100-miler attempt in 2014 and having to give up my bib at mile 78 when I missed the cutoff

time. Over the next year, as I prepared my second attempt, I worked harder than ever and found a level of toughness I didn’t know I had. It got me across the finish line for two 100-milers in the last two years (Thunder Rock 100 and Run Rabbit Run 100). CROSS-TRAIN: The Church Health YMCA is literally underneath my office so I take classes there. I also have been known to show up on some of the East Memphis Hightailer bike rides.

Buffalo Chicken Dip Sticky Sweet Cauliflower Wings By Andrea LeTard
Add a little kick to your tailgating treats with some Buffalo sauce to spice up your snacks. Buffalo Chicken Dip Endive Cups
q 1 lb boneless, skinless chicken breasts q 1 Tbsp olive oil q K osher salt and freshly ground black pepper q 1 cup Buffalo wing sauce q 8 oz fat-free cream cheese at room temperature q ½ cup fat-free ranch dressing q 2 bunches endives – leaves removed and rinsed q L ow-fat shredded cheddar cheese q P arsley
q 1 /3 cup Buffalo wing sauce q 1 ½ Tbsp pepper jelly q 1 Tbsp butter q 1 Tbsp honey q ½ cup flour q ½ cup buttermilk q 1 tsp garlic powder q 1 tsp paprika q 1 tsp salt q ½ tsp pepper q 1 medium cauliflower head – cut into florets q O ptional ranch or blue cheese dressing q O ptional celery
1. H eat oven to 450F. Whisk the Buffalo wing sauce, pepper jelly, butter, and honey together in a small saucepan over high heat. Bring to a boil then remove from heat.
1. Heat oven to 425F. Place the chicken on a baking sheet. Drizzle it with olive oil and sprinkle with about 1 tsp of salt and ½ tsp pepper and toss together. Roast chicken for 15-20 minutes, or until cooked through. Let cool, then shred into a bowl. 2. Add the Buffalo wing sauce, cream cheese, and ranch dressing to the shredded chicken and combine. Taste for seasoning, adding salt and pepper if needed. Fill each endive leaf with some of the mixture. Sprinkle with cheddar cheese and parsley.
Sticky Sweet Cauliflower “Hot Wings”
2. I n a medium bowl whisk the flour, buttermilk, garlic powder, paprika, salt, and pepper together. Add cauliflower florets and toss, completely coating each piece. Place on a baking sheet lined with parchment paper and bake for about 12 minutes. 3. R emove it from oven and change oven setting to broil. Pour ¾ of the sauce over the cauliflower and toss with two spoons, so each piece is coated. Place back into the oven and broil for 5-6 minutes, or until crispy. 4. P late and pour the remaining sauce over the top. Serve with ranch or blue cheese and celery, if desired.

ANTIOXIDANTS EXPLAINED By Blair Mize, MS, RDN, CSSD, LDN
You’ve probably heard antioxidants and know they’re good for you, but do you know how antioxidants work, where to find them, why they matter, how much you should be getting and from which sources? Here’s a “Cliffs Notes” explanation of a very complex, continually evolving topic. In order to appreciate antioxidants, it’s important to first understand the free radical. Though not all free radicals are harmful, they are often created as by-products of metabolism and through exposure to tobacco smoke, pollution, UV radiation, and other environmental factors. Free radicals are unstable molecules, meaning they need one more electron in order to be stable. In order to gain stability, free radicals barge in on other molecules, change their chemical structure, and may damage healthy cells in the process. This is where the antioxidant steps in. Antioxidants are substances that prevent oxidation and donate electrons to free radicals in order to neutralize (stabilize) them. Think about how a sliced apple begins to brown over time; however, if lemon or orange juice is poured over the fruit soon after slicing, the apple continues looking fresh and white significantly longer. This change in color is due to a process called oxidation, but adding citrus, a source of the antioxidant vitamin C, protects the fruit from this reaction. Antioxidants play a similar role in protecting the body’s cells from oxidative damage and free radicals as described above. Scientists have only begun researching the “tip of the iceberg” of antioxidants. Thousands are currently being studied, and still more are discovered each year. So far, research suggests antioxidants may be instrumental in the prevention of various medical conditions including some cancers, stroke, heart disease, macular degeneration, Alzheimer’s disease, and arthritis-related conditions. They may also improve the effectiveness of some cancer treatments while lessening some of the negative side effects. It’s easy to get bogged down in all of the confusing research and scientific names of antioxidants like carotenoids, anthocyanins, and betalains—to name a few—but here’s a simple checklist to ensure you’re on the right track with incorporating them into your lifestyle:

You eat a variety of mostly whole, minimally processed foods including fruits, vegetables, nuts, grains, fish, beef, and poultry. If you like coffee, red wine, and dark
chocolate, you’ll be excited to know they include antioxidants, too. With so many food sources of antioxidants, don’t worry about adding in one specific food to meet your needs. Variety is key.
If you took a weekly snapshot of all your meals and snacks, you would notice a rainbow of colors. Brightly colored fruits and vegetables contain lots of antioxidants, so make your plates colorful!
You’re not relying on antioxidant supplements.
More is not always better, specifically when it comes to supplementing with antioxidants. With more research to be done, not all of the benefits of antioxidants have been “proven,” but they’re more likely to be safe in the amounts you’ll find in foods versus supplements. Furthermore, research has not yet shown antioxidant supplements to be beneficial in preventing disease.
