Lake County is home to a growing network of restaurateurs that participate annually in the “Taste of Golden Triangle and Business Expo.” The 2015 date has officially been set for October 20th! KAREN MARSHALL helps develop healthy lifestyles By Renee Garrison

Karen Marshall is a woman with a mission: To help people achieve good health through weight loss, and develop the healthy habits necessary for lifelong success. The C.O.P.E (Center for Obesity Prevention and Education at Villanova University) Certified Health & Weight Loss Coach works with clients throughout the United States to help them lose weight and live a healthier lifestyle. “This is a new approach to weight management that isn’t about dieting,” Karen says. “I help people create a lifestyle that results from reduced weight and good health habits. They feel great, lose weight rapidly - but safely - and are provided with many support tools along the way. No fads, gimmicks or hormone shots. The program is easy, goof-proof and involves a structured eating plan while working with a personal health coach - me.” Karen and her husband Gary, a retired clergyman, moved to Lake County from Orlando in 2010. Both are native Floridians: She was born in DeLand and Gary was born in Pine Castle. Soon after relocating here, Karen joined the Lake Eustis Area Chamber of Commerce. “It’s a wonderful way to meet people and share my story,” she explains. Her story began in 2009 when Karen worked long hours in corporate America. She was stressed out, suffering from daily headaches, eating unhealthy foods and gaining weight. Her doctor delivered the bad news that she was pre-diabetic and advised losing weight. After trying several diets where weight loss was slow and programs too difficult to follow, she spoke with a close friend who was a health and weight loss coach. “I thought ‘Ok, What have I got to lose?’” Karen says. “What I lost was 60 lbs., and I was amazed how easy the program was to follow and how much better I felt. The best news is that, due to my weight loss, my health has improved. I am no longer at risk for diabetes have maintained my goal weight for over five years.” She was so excited by her success that Karen became a coach, herself, in 2010. 6 [ TheConnection

“I didn’t need a big office, employees, or inventory - just a phone and a computer,” Karen explains. “I could work from the comfort of my home. That decision has made all the difference in my life.” She and Gary “absolutely love” living in Lake County. “And I love what I do to help people transform their lives,” Karen says. EUSTIS, Florida – 2016 marks the 114th consecutive annual celebration of GeorgeFest, the 2nd oldest festival celebrating George Washington’s Birthday in the nation and the longest running festival of any kind in Florida. Sponsored by the Lake Eustis Chamber of Commerce and our proud partner, the City of Eustis, the festival is an important piece of living, local history. The theme of this year’s festival is “Proud to be an American” and is scheduled for February 26th – 28th.

HISTORY OF GEORGEFEST EVENT

GeorgeFest is the longest running festival celebrating George Washington’s birthday in the state of Florida and the second longest running festival in the country second only to Laredo, TX. 2016 marks the 114th consecutive annual celebration in Eustis. No other city in Florida has as long-standing a tradition of a patriotic celebration in honor of America’s founding Father. It all began rather inconspicuously: It centered around the Ocklawaha House, the oldest hotel in the area, on which construction began in 1876. When the hotel built by A.S. Pendry, a major attraction to tourists, was enlarged between 1902 and 1907, something other than the additional east wing was added. Residents decided to show their appreciation for their visitors by hosting a holiday on Feb 22, 1902 (some dressed as early pioneers, while others as local native tribesman, to produce a pageant of the state’s early history). While the format for the annual celebration, held on the day of George Washington’s birthday in 1732, changed constantly, several things remained the same. First, the festival always attracted a crowd, and not just from those staying at the hotel. People from neighboring villages and towns would make the trip into town for the festivities. From a simple parade of bicycles and Model T’s, decorated with red, white and blue bunting, and a few other units on unpaved roads, the festival has grown in size and scope. Over the years, GeorgeFest has gone from a one-day event to one that has spanned several weeks, in the recent past. Attendance has grown from the original handful of locals to thousands of eager and patriotic fun seekers. The main theme has never changed over the 114 years since its inception- simply to have fun.

WHY GEORGEFEST?

In the late 1870s, Senator Steven Wallace Dorsey (R-Arkansas) proposed the unprecedented idea of adding “citizen” Washington’s birth date, February 22, to the four existing bank holidays previously approved in 1870. In 1879 the Forty-fifth Congress deemed George Washington’s birth date, February 22, a historic date worthy of holiday recognition. Washington was a man of his time: a farmer, and a soldier. Named commander-in-chief of the American Continental army, he led the colonies to victory over England, securing independence for an infant nation. His political leadership led to his election as president of the 1787 Constitutional Convention. Once the states ratified the Constitution, he was elected the first President of the United States, completing two terms. Everything about George Washington was entwined with the evolution of a young nation. His name was associated with virtue, honesty, strength, courage, and patriarchal leadership. Schools, bridges, towns, the national capital, and even a state were named in his honor. The federal holiday, Washington’s Birthday, honors the accomplishments of the man who has been referred to, for over two centuries, as “The Father of his Country”. Celebrated for his leadership in the founding of the nation, he was the Electoral College’s unanimous choice to become the first President; he was seen as a unifying force for the new republic and set an example for future holders of the office. The holiday also pays tribute to the general who created the first military badge of merit for the common soldier. Revived on Washington’s 200th birthday in 1932, the Purple Heart recognizes injuries received in battle. Like Memorial Day and Veterans Day, Washington’s Birthday weekend offers another opportunity to honor the country’s veterans.

Accounting has been called “the language of business,” and measures the results of a company’s economic activities. It’s a language that Ricardo Barrantes has become fluent in. After moving to the United States in 1999 from Panama, Ricardo attended college in Augusta, Georgia. Following graduation in 2005, Ricardo joined his parents in Eustis and eventually opened Maranatha Tax & Insurance Agency in 2008. “I have always enjoyed math, so I wanted to help people manage their financial needs and plan better for the future,” says Ricardo, who handles the accounting portion of the business. His wife, Maria, who is originally from Honduras,

handles the insurance side of the company. “The majority of our clients - about 60 percent - are Spanish-speaking,” Ricardo says. “I saw a need for our services.” Prior to opening his own company, Ricardo was an assistant manager at Labor Ready. His boss, John Carlucci, is a former president of the Lake Eustis Area Chamber of Commerce. “John was very active in the community and he gave me a lot of advice,” Ricardo recalls. “He introduced me to the Chamber and showed me that being a member increases your visibility in our community. SKINCARE TRUTHS AND MYTHS: INFORMATION FROM DOCTORS WHO KNOW, RODAN AND FIELDS By Betty Ainslie, Skin Care Consultant

Remember back in the 1970’s when people were telling everyone, to get a clean face was to steam your face with very hot water to open the pores? Immediately after washing you dipped your face in ice cold water. This was to open and close the pores. One small problem: Your pores don’t have any mini mouth or muscle to be manipulated by heat or cold. The confusion about skin care is huge, and the clutter in stores does not help. So stay tuned for some straight talk from the Doctors Book, “Write your Skin a Prescription for Change”. While aging is constant, how we care for our skin, and our behavioral choices will make a difference in how we look each birthday. Read on for “Top 10 Tips:”

1. Protect Your Skin from the Sun: Use sun screen (UVA

&UVB) lots and often. Wear hats, clothes, and stay in the shade.

2. Don’t or Quit Smoking: This increases lines, wrinkles and

affects the skin structure; Smokers look 10 years older than they are.

3. Learn to sleep on your back: Sleeping on your side or face causes face crush.

4. Stress can move blood from our skin. 5. Eat A Good Diet: Fresh fruits, vegetables, meats, and fish slow aging.

6. Exercise Regularly: This increases circulation. 7. Moderation of Alcohol: Have you ever noticed your face gets red when drinking? That is your capillaries dilating.

8. Select the correct skin care routine and stick with it. 9. No Picking: Do not pick, pop or squeeze a big juicy

pimple, since these actions force bacteria deeper into the skin, leading to staph infections, discoloration, and scars.

10. Adapt your skin care to your climate: Skin is primarily hydrated from the outside, so moisturize in dry air, humid conditions make skin oily, cold weather creates chapping, hot creates a microclimate that’s perfect for acne, and high altitude has less UVA UVB filtering.
