Hired in 2005 as the first executive director of the Lake-Sumter Metropolitan Planning Organization (MPO), T.J. heads a federally-funded regional transportation planning agency covering all public modes of moving people and goods. An urban and regional planner certified by the American Institute of Certified Planners (AICP), his current duties include the coordination of regional transportation planning for the two counties and 19 municipalities in the Lake-Sumter region. Working for a regional board of elected officials, T.J. and his six-member staff coordinate with local governments and state and federal agencies in planning transportation projects. He sees his primary role as working with his board to build consensus on funding priorities. He has helped guide 10 years of transportation projects in the two-county region, leading him to see himself more as an implementer of projects than a planner of projects. He places a strong emphasis on the connection between economic development and the investment of transportation dollars. Prior to the MPO, he provided planning consulting services to the four Lake County municipalities of Lady Lake, Minneola, Monteverde and Astatula and he spent two years as the staff planner for Tavares. Born in Johnson City, TN, he completed undergraduate and graduate work at East Tennessee State University. RAZOR SHARP CUTZ BARBERSHOP By Renee Garrison

David Centeno enjoys his job. “I make people happy,” he says. “Even if someone walks in not looking their best, I can change their appearance in a couple of minutes.” David opened Razor Sharp Cutz Barbershop almost two years ago. Since then, his business has grown to include three more barbers who work with him. In addition to flat-tops and oldfashioned cuts, the Barbershop offers traditional hot-towel shaves. “The heat from the towel softens up the beard so the barber can give you a nice, close, comfortable shave,” he explains. David moved to Eustis three years ago to be closer to his fiancée, Ileana. That’s when he noticed there weren’t any modern-day barbershops in town. “We receive a lot of different hairstyle requests, including designs,” David says. “Other shops in the area refer customers to us because they know we can do it.” While still in high school, David worked at a barbershop in Puerto Rico for two years. The owner of the shop also taught at a local barber school, so David learned the curriculum of hair cutting and styling as well as safety and sanitation best practices. Razor Sharp Cutz Barbershop recently joined the Lake Eustis Area Chamber of Commerce. “I didn’t know too much about the Chamber until they bought the building next to my shop,” he admits. “I walked over to the office and inquired about it. That’s when I decided to join.” Since a barbershop is also a place of social interaction, David’s goal is to make everyone feel welcome in his. “I never want anyone to feel unwelcome,” he says. “And so far, we have done just that!” 6 [ TheConnection

THE BENEFITS OF CINNAMON By Kathy E. Thomas

Many people are interested in Chinese Herbs, but aren’t aware that they may already be using them. There’s often a misconception that Chinese Herbs are all strange things that you would find in a Harry Potter book, but this isn’t always the case. Sure some Chinese Herbs are more exotic and unfamiliar, but many can be found in your spice rack at home! When used properly, herbs like cinnamon can help heal what ails you in a gentle and side-effect free way. In classical Chinese Medical writings, most pain originates with cold. In fact, the Chinese character for pain literally means “not flowing syndrome”. The lack of flow (circulation) leads to stagnation. Imagine how cold slows water down to the point that it freezes. This is why cinnamon, which is considered both a warming and moving herb, is effective at relieving many types of pain. In Chinese Medicine, cinnamon is used in two forms. GUI ZHI is cinnamon twig and ROU GUI is the warmer cinnamon bark. Gui Zhi is often used to treat headaches, fevers, abnormal sweating, edema (swelling), pain that is worse in cold damp

weather, pain induced by trauma, and menstrual pain. Rou Gui is the Imperial Chinese Herb for restoring “fire”, making it a powerf,ul herb for conditions that feel better with heat and worse with cold. Western medical studies suggest that it may also lower blood sugar in both type 1 and type 2 diabetes, decrease inflammation, fight bacteria, yeast, and fungus, lower cholesterol, and have antioxidant effects. According to the U.S. National Library of Medicine, cinnamon is used to help treat muscle spasms, vomiting, diarrhea, infections, the common cold, loss of appetite, and ED. The journal also noted that cinnamon may help stop the destructive process of multiple sclerosis. Researchers at Tel Aviv University are studying the effects of cinnamon on Alzheimer’s Disease prevention, with promising results on the way. So if you are looking for something gentle and effective, without side effects, that could improve your health, reduce your pain, and even help fight off infection during cold and flu “season,” cinnamon may be a great addition to your current health care regimen. EUSTIS, Florida – 2016 marks the 114th consecutive annual celebration of GeorgeFest, the 2nd oldest festival celebrating George Washington’s Birthday in the nation and the longest running festival of any kind in Florida. Sponsored by the Lake Eustis Chamber of Commerce and our proud partner, the City of Eustis, the festival is an important piece of living, local history. The theme of this year’s festival is “Proud to be an American” and is scheduled for February 26th – 28th. HISTORY OF GEORGEFEST EVENT GeorgeFest is the longest running festival celebrating George Washington’s birthday in the state of Florida and the second longest running festival in the country second only to Laredo, TX. 2016 marks the 114th consecutive annual celebration in Eustis. No other city in Florida has as long-standing a tradition of a patriotic celebration in honor of America’s founding Father. It all began rather inconspicuously: It centered around the Ocklawaha House, the oldest hotel in the area, on which construction began in 1876. When the hotel built by A.S. Pendry, a major attraction to tourists, was enlarged between 1902 and 1907, something other than the additional east wing was added. Residents decided to show their appreciation for their visitors by hosting a holiday on Feb 22, 1902 (some dressed as early pioneers, while others as local native tribesman, to produce a pageant of the state’s early history). While the format for the annual celebration, held on the day of George Washington’s birthday in 1732, changed constantly, several things remained the same. First, the festival always attracted a crowd, and not just from those staying at the hotel. People from neighboring villages and towns would make the trip into town for the festivities. From a simple parade of bicycles and Model T’s, decorated with red, white and blue bunting, and a few other units on unpaved roads, the festival has grown in size and scope. Over the years, GeorgeFest has gone from a one-day event to one that has spanned several weeks, in the recent past. Attendance has grown from the original handful of locals to thousands of eager and patriotic fun seekers. The main theme has never changed over the 114 years since its inception- simply to have fun. WHAT IS GEORGEFEST? Sponsored by the Lake Eustis Chamber of Commerce and our proud partner, the City of Eustis, the festival is an important piece of living, local history. GeorgeFest 2016 promises to be full of fun and family entertainment, as it has been for the last 113 years! Come out and take part with pride in a triumphant celebration of our heroes, America’s founding Father, George Washington, and all that America stands for. WHY GEORGEFEST? In the late 1870s, Senator Steven Wallace Dorsey (R-Arkansas) 10 [ TheConnection

proposed the unprecedented idea of adding “citizen” Washington’s birth date, February 22, to the four existing bank holidays previously approved in 1870. In 1879 the Forty-fifth Congress deemed George Washington’s birth date, February 22, a historic date worthy of holiday recognition. Washington was a man of his time: a farmer, and a soldier. Named commander-in-chief of the American Continental army, he led the colonies to victory over England, securing independence for an infant nation. His political leadership led to his election as president of the 1787 Constitutional Convention. Once the states ratified the Constitution, he was elected the first President of the United States, completing two terms. Everything about George Washington was entwined with the evolution of a young nation. His name was associated with virtue, honesty, strength, courage, and patriarchal leadership. Schools, bridges, towns, the national capital, and even a state were named in his honor. The federal holiday, Washington’s Birthday, honors the accomplishments of the man who has been referred to, for over two centuries, as “The Father of his Country”. Celebrated for his leadership in the founding of the nation, he was the Electoral College’s unanimous choice to become the first President; he was seen as a unifying force for the new republic and set an example for future holders of the office. The holiday also pays tribute to the general who created the first military badge of merit for the common soldier. Revived on Washington’s 200th birthday in 1932, the Purple Heart recognizes injuries received in battle. Like Memorial Day and Veterans Day, Washington’s Birthday weekend offers another opportunity to honor the country’s veterans. JOANNE KELLER, ARNP TEACHES PATIENTS SELF-CARE SKILLS By Renee Garrison

Joanne M. Keller, ARNP, a Family Nurse Practitioner, has been providing primary health care to residents of Lake County for 16 years. Tamara Reels, ARNP, joined the wellness team in 2013. As a result of nutritional counseling and self-care skills learned in the practice, many patients became so healthy that the practice transitioned from a sickness-based to a wellnessbased practice. “Often doctors prescribe medication to stop symptoms,” Joanne explains. “We want to find the root cause behind those symptoms. I was conventionally trained but also schooled in functional medicine.”

Joanne enrolled in a Fellowship program with the American Academy of Anti-Aging Medicine and is now a Board Certified Fellow in Anti-Aging and Regenerative medicine. Along with a staff of five, she treats both men and women, 18 years and older. “About 30 percent of our patients are men, so we added ‘Wellness’ to the name of the practice,” she says. “A big draw for many people is our thyroid management. We often identify conditions that are otherwise missed in blood work.” In addition, the practice offers Bio-Identical Hormone Pellet Therapy. Returning this year is the pirate stage and Pirate Cove, where fairgoers feel that they have come face to face with the salty swindlers from the sea. Buried treasure can be found for those who stumble across the secret map. New this year is the Faerie Fantasy Forest where patrons will be sprinkled with faerie dust. “Last year, the Faire raised more than $160,000 for Foundation programs,” says Doug Major, Events Coordinator. “The children have a ball and they learn so much.” Foundation programs benefiting students and teachers include: Grants for Great Ideas, Back to School Backpack Fairs, Take Stock In Children, Teacher of the Year, Rookie Teacher of the Year, Employee and Volunteer of the Year, New Beginnings, and the LCS Science Fair. The 14th annual Lady of the Lakes Renaissance Faire opens from 10 a.m. to 5 p.m. on Friday, November 6; Saturday, November, 7; Sunday, November 8; Saturday, November 14 and Sunday, November 15, 2015. Admission is $15 for adults, $10 for children ages 4-12 with children 3 and under free. Senior Afternoon is Friday November 6th from 12pm to 5pm. Tickets for seniors are $5 at the gate on Senior Day during those hours. Education Day is also Friday November 6th. Discounted tickets of $5 for students and $5 for chaperones will be available at the gate. EDUCATIONAL FOUNDATION OF LAKE COUNTY supports public schools with Renaissance Faire

The Educational Foundation is a not-for-profit organization that provides direct support for Lake County Public Schools, where 62 percent of students (more than 10,000 of these students are k-5th grade) require a free lunch. Their mission is to serve as the connection between the community and public education, evaluating needs and securing resources to enhance the quality of education. For two weekends in November the organization sponsors “Lady of the Lakes Renaissance Faire” in the new Enchanted Forest located at 12335 County Road 448, in Tavares. Visitors enter the ‘Village of Shrewsbury,’ where dozens of costumed re-enactors engage in a variety of occupations from 16th century England. This is a living history exhibit of life in a Renaissance Village. The re-enactors answer questions and engage children in fun hands-on activities including kid’s crafts, archery, sword challenges and more. Outside of the Village of Shrewsbury, more than 100 volunteer
