Food for Thought Strathmore News Talks to Andrew Zimmern
“One of the most sorrowful human frailties is that we practice contempt prior to investigation.” ~ Andrew Zimmern
l
He’s a James Beard Award-winning TV personality, chef, food writer and teacher, probably best known as the creator, host, and co-executive producer of a trio of hits on the Travel Channel: Bizarre Foods with Andrew Zimmern, Andrew Zimmern’s Bizarre World, and Bizarre Foods America. This summer Andrew Zimmern takes a break from his globetrotting—and bizarre-food-sampling— to help host Strathmore’s Appetite festival, a celebration of all things food. Zimmern speaks a bit about the bites that mean the most to him. Strathmore News: In Maryland, Old Bay is king, in New Jersey it’s Taylor ham—what’s your take on regionalized food?
SN: Imagine your most outrageous, fulfilling gastronomic experience, anywhere on the planet? AZ: Lamumanu Beach, Samoa—my favorite beach in the world. I think it’s fun to forage my own food, so I have a knife and a net and a Hawaiian sling so I can grill reef fish and catch the wild lobster and shrimp that are there. Tropical fruit is hanging from the trees, it’s like a Robinson Crusoe meal. I’d have a 120-day, dry-aged sirloin from a friend’s farm in Kentucky…cherrystone clams on ice (the one thing they don’t have in the water in Samoa) and my grandmother would rise from the dead and make her roast chicken, the best roast chicken in the world.
Andrew Zimmern: One of the most sorrowful human frailties is that we practice contempt prior to investigation. We have shortened and minimized the number of items we eat to the point where we’ve damaged our food system almost irreparably... it’s awful. We like to pretend we’re more accepting and understanding of foods, but we don’t try them. Turtle soup and scrapple in Pennsylvania; liver mush in North Carolina, hot dish in Minnesota: to people who haven’t seen it, it remains strange, and we’re unwilling to give it a try. That’s why I do the shows I’m doing: to break down those walls.
SN: What is it about food that gets you excited?
SN: Speaking of the shows: what’s your favorite “bizarre” everyday snack?
AZ: I wish we’d start enjoying the people of other countries…we love the food of other countries and my big hope for people is that we use food as a bridge to get to know other cultures, and accept and love their people as readily as we accept and love their food. On the short term: Filipino food is exploding right now; Mexican regional has been hot for a long time and isn’t slowing down—the cuisines of Latin America, especially Peru…the foods that we love—Chinese food and Mexican— we’re going to start to get into the micro-regionalism of those tiered cuisines.
AZ: We’re constantly eating; constantly exposed to great stuff…it becomes overwhelming! But generally speaking? Tiny, fried little birds are among my top three… small birds: baby chicks and ducklings, sparrows—that’s as good as food gets, in my opinion.
(301) 581-5100
l
AZ: Everybody always says that math and music are the two great cultural constants. I think food is the third one—I think it’s even more important. I think that our attachment to food is deep and profound, and I think that it’s the perfect microscope through which to view the atomic particles of our culture and our existence. And I want to keep talking about those things for as long as I can. SN: Your food truck, AZ Canteen, debuted in ’12; the Appetite festival will feature food trucks. What’s the next big food trend on the horizon? What would you like America to embrace?

Sensuous. Cerebral. Evocative. Classic. Each year Strathmore’s Fine Artists in Residence (Fine AIR) program selects a class of emerging artists with talent, potential and originality, and partners them with mentors carefully chosen from the ranks of successful local art professionals.

This year’s Fine AIR class—chukwumaa, Ali Halperin, Ariel Klein, and Nguyen Khoi Nguyen—will be working with mentors John James Anderson, June Linowitz, Eileen Martin, and John Wang. See their work now…for you will certainly be seeing (and hearing about) them later!
Mixed Media Sculptor To place limits on art is not a phrase to be found in the vocabulary of chukwumaa, a visual artist who embellishes the fine arts with performance and sound as well as the new media sculpture for which he is increasingly admired. Determined to explore “individual-versus-group dissonances,” chukwumaa seeks to share his quest to understand and inhabit the concept of “belonging” as it pertains to art and to humanity. Mixing media, manipulating language, rigging reality: chukwumaa puts his own observations of life on display.

Mixed Media Artist Go through the looking glass with Ali Halperin, who reflects social, political, and material issues in the mirrors of art. The North Carolina native describes her artistic process as “making black mirrors” through which she can refract her vision and share it with the audience. Halperin offers a dynamic take on the “social compost” she finds in modern life and its trappings, rendered in graphic glass drawings and photographs that retain their beauty even as they step beyond thought-provoking to challenge and engage.

ALSO IN THE MANSION
Painter Ariel Klein captures the human elements of the figures he paints—the drinkers and dancers, the soldiers and clowns—but he also imbues them with deeper meaning and depth; building drama and history, he creates a visual experience that draws in the viewer with a provocative simplicity. With his keen use of line and color, Klein nods to the masters while making art that is uniquely his own, drawn from his extensive travels abroad, the world outside his studio window, and everywhere in between.
Nguyen Khoi Nguyen Ariel Klein
Multi-Disciplinary Artist Born in Ho Chi Minh City, Vietnam, Nguyen Khoi Nguyen is a filmmaker and a musician as well as a studio artist and author. His multi-disciplinary background inspires him to integrate elements of sound, movement, color, and line into every piece of work he creates. At Strathmore, his plan is to focus on a multimedia project that integrates the stories of his family’s experience as Vietnamese-Americans and the dichotomy of individuality and assimilation, using everything from two-dimensional drawings to video projections and original musical compositions.
