here are few industries that have been hit harder by the coronavirus-

related shutdowns and quarantine orders than the restaurant industry. The

National Restaurant Industry has projected that the industry as a whole could

suffer a staggering $225 billion loss in 2020; pre-COVID projections painted a much rosier picture, with restaurants accounting for approximately $899

billion in sales, or roughly 4% of the country’s Gross Domestic Product.

There’s simply no way to put a positive spin on what amounts to a $1 trillion

swing in the wrong direction.

But, as the old saying tells us, the show must go on. And here on Nantucket, restaurateurs are looking for ways to do what they can to sustain their businesses and their employees during these trying times. I recently spoke with representatives from four on the Nantucket dining scene—Kari Harvey from The Seagrille, Matt Fee from Something Natural, Kim Puder from Faregrounds, and Rob Noll from Sophie T’s— to learn more about what actions they’re taking to keep the show going.

The SeaGrille has long been a Nantucket mainstay, serving hungry diners year-round for twenty-one years. Started by island culinary legend E. J. Harvey, the SeaGrille remains today a family business, with son Tucker—himself a graduate of the prestigious Culinary Institute of America—running things in the kitchen while other members of the extended Harvey family keep the front-of-the-house going smoothly. “The biggest problem is that we’re planning for the unknown,” said restaurant manager Kari Harvey. “We just don’t know what’s going to happen, and we don’t know when things are going to get back to something close to normal.” That unknown component makes it difficult for anyone to plan for the future, but that’s especially true for a restaurant. “We don’t know when we’ll be able to have full capacity inside, we just don’t know.” The SeaGrille is located at 45 Sparks Avenue. Over at Something Natural, owner Matt Fee echoes Kari’s fears about the unknown. “Uncertainty is the hardest thing for all of us, I think,” he said of the restaurant industry as a whole. “I have no way of making projections about what we’ll need in the next month or two right now. I just don’t know what I’m going to need.” Something Natural is at a little bit of an advantage in this era, if only because so much of their business revolves around people picking up orders at the counter and going elsewhere. The problem with that model, however, is that oftentimes the favorite “elsewhere” spots to enjoy one of those sandwiches is at a bench just outside. Matt also said, “We’re adding a hand sink outside so people can wash their hands.” Other changes to the Something Natural business model this year include fewer bread deliveries and reconfiguring the building to keep customers outside. And then there’s the quarantine apartment. “I can honestly say that I never thought I’d see the day I’d need to have a special apartment to quarantine people,” Matt said. In order to ensure their own and the larger Nantucket population’s safety, when new employees arrive on-island, they are isolated in a special apartment. They are not allowed to leave for two weeks, having their food delivered to them. Speaking of staff, the coronavirus scare has had a tremendous impact on potential employees of Something Natural this year.

This is because husband and wife owners Magee and Jay Detmer, who first got behind the counter over forty years ago, trained under Joe Tecot, owner of one of Nantucket’s first Portuguese bakeries. “You could say it’s as close as you can get from theoriginal,” Magee says. Like The Downyflake, this operation is a true labor of love, with Jay heading in to bake as early as midnight or one in the morning for a full night of baking to supply the crowds the following day. Having raised their own children in the bakery, and now grandparents, Magee says for her and Jay, their favorite part is seeing themultiple generations of families enjoying the same bread and cookies that their grandparents did years ago. “We’ve been around for three generations worth of people, and seeing their smiles and their love of Nantucket tradition makes us really happy.” As the maker of hundreds of sweets, Magee says she is more of a savory person, and it’s their famous Portuguese bread she craves, a favorite recipe being BLT toasts she makes for her faily on Sunday mornings. “That’s my go-to thing on a Sunday,” Magee says with a smile.

If you have ever driven past their mid-island location, you have no doubt seen the crowds that flock to this 85 year old establishment where freshly baked donuts in a variety of flavors abate the hungry crowds until they are all but gone. “We use a donut machine original to the Downyflake from the 1930s,” Ron Oldham says, who, along with wife Patricia Kennedy have been running this family-friendly restaurant for the last six years. Ron explains that this donut machine can make about a dozen donuts at a time, and during their busier summer months, it makes up to 1,000 donuts a day. Once just serving chocolate, vanilla, and plain varieties, Ron and his wife have added to the menu additional flavors like a glazed donut with toasted coconut, in the spring a lemon glaze, and both an apple cider and maple glaze in the fall. Ron believes the plain sugar flavor, however, is the most popular. In the months of July and August, Ron and Patricia begin baking the donuts for the day as early as midnight, baking all night long for the crowds that will no doubt arrive early that morning for a taste of Nantucket nostalgia. Not just serving donuts, The Downyflake offers hearty breakfasts, lunches, and dinners in affordable and hearty portions. As for what brings the people back year after year, Ron says, “people’s tastes and flavors have changed over the years, but here on Nantucket in the summertime, you bring the kids here for donuts and it keeps the whole family happy.” When asked if he ever still tastes the donuts himself, Ron says, “It’s a quality control thing.” He laughs. “I’ll have a bite with coffee and think ‘this is what the people are coming for.’”

Something Natural, another bakery with deep island roots located off Cliff Road on the edge of town is a delight to visit, not just for the sweets and breads, but for their glorious and unassuming location, a grassy yard dotted with picnic tables abutting nine acres of preservation land. Owner Matt Fee says of their location with a laugh, “Everyone always says we could sell our property for millions of dollars, but I laugh and say, “It’s really nice the way it is, and we all get to enjoy it.” The location aside, it’s the fresh breads, cookies, sandwiches, and more that keep the crowds coming back year after year. Headed into its 51st summer, Matt says they begin baking at two or 3 in the morning. Popular menu items are the Sprout Veggie sandwich or any type of turkey sandwich, whereas Matt’s personal favorite is anything on his wife Sheila’s sourdough. “If I said anything else, I would be in big trouble,” he laughs. Having met Sheila the first summer he took over the business from the original family that started Something Natural, he says, “I always joke she came with the business.” As for what Matt loves about what he does, he smiles and says, “Being able to do something everybody loves in a place everybody loves. I just feel very fortunate to be able to do this.” No matter where you go for your specialty baked goods, when you're on island, these Nantucket bakeries are not only steeped in tradition, but also served with generations of love.

I

remember the summer when I was finally old enough to go to town by myself for ice cream. I rode my bike to the Sweet Shop on Main Street, the money I’d managed to scrape together safely in my pocket. I confidently walked in the door and contemplated which flavor I would be enjoying that evening. I liked to think I was acting like an adult; all the while, all the actual adults in the place were acting like the little kid that I really was.

If there’s something more quintessentially summer than ice cream, I don’t know what it is. Long after the sticky fingers have been cleaned off, the memories linger and always bring us back to our favorite flavors. Ice cream is one of those things that puts parents on equal footing with their kids. While we’re eating ice cream, we’re all the same age. Of course, when it comes to ice cream, the actual eating of it is just the metaphorical cherry on top of the sundae. The whole process is part of the enjoyment. The anticipation that builds while you’re walking to the ice cream parlor and reaches its peak when you’re waiting for your order frames the all-important decision of which flavor is today’s big winner. Is it a chocolate day? Maybe you’re craving something fruity. Possibly, you’re leaning towards one the many specialty flavors offered by Nantucket creameries.
