from the kitchen… What a fantastic list to gorge on this month! Squash still get the limelight at this time of year, but my personal favourites are celeriac (makes a fab soup infused with lemon). Cauliflower are amazing roasted in hay. Our Girolles or European Pied Mouton can transform a simple autumnal salad into a superb vegetarian dish, with the addition of pearl barley, chicken fillets and garlic. Swilled down with our Little Eden Pinot Noir. Crikey, I’m hungry already! Aubergines are another October favourite, roasted, or grilled. Goes smashing with a splash of Zinfandel like our Bulletin offering. As always there are some very interesting new products from the world of Sosa, adding to their amazing range of flavours, stabilisers, powders, gels & concentrates. Egg based products to keep your local FSO happy. The range is immense & constantly evolving with trends & techniques. With so much to think about at this time of year, here are some essential tips to get the most out of the festive season.

CHAMPAGNE NEEDS PRIDE OF PLACE Champagne should be impossible to ignore as there’s no better way to celebrate! The first page of the menu or top of the list is ideal. Display an attractive tray with an ice bucket, bottle, glasses & festive decoration.

Poached Pears with Panna Cotta and Granita

There’s no such thing as a quick Christmas dinner! Boozy desserts such as affagatos (good quality vanilla ice cream, hot espresso and amaretto or other liqueur), are a great way to tempt customers. Add a shot of rum to Christmas pudding, calvados to apple strudel, brandy to black forest gateaux.

VISIBILITY IS KEY Don’t hide your range of wines. Keep the tinsel to a minimum!

Method:

STAFF KNOWLEDGE & CONFIDENCE

1 Take 4 pears, firm or almost ripe, not overripe. Peel & put in pan fairly snugly. Pour in enough Chardonnay to ¾ cover them. Add the juice of ½ a lemon & 1 orange. Top up with water to cover completely. Add to the pan a cinnamon stick, a few peppercorns, 3-4 cloves, a few strips of lemon zest and 50g sugar. Bring to the boil, stirring occasionally to dissolve the sugar. Simmer until tender but not soft. Remove from heat & leave to cool.

MATCH THE WINES TO DISHES ON THE MENU

2 Place the pears in a polythene bag with a tablespoon of the cooking liquor. Refrigerate. 3 Strain the rest of the liquor, discarding the peels & spices. It should be tart, but sweet. Adjust the lemon & sugar only if you think it needs it. Place in the freezer. That’s going to be your granita.

4 For the panna cotta, split the vanilla pod & place in a pan with 750ml double cream. Bring to the boil then remove from the heat. Soak 2 leaves of gelatine in cold water for 5 mins, drain, squeeze & stir in to the warm cream along with 25g caster sugar. Scrape vanilla seeds into cream, discarding pod. Divide mixture between 4 small moulds and set in fridge. 5 To serve, remove the granita from the freezer. Slice the pears & unmould the panna cotta. Scratch the granita with a fork & add to the plated dessert. Serve immediately.

Sea salt & freshly ground black pepper

Seared Scallops & Parsnip Cream Appetisers

Method: 1

Put scallops in a bowl with 1 teaspoon of olive oil, salt & pepper. Mix gently & refrigerate.

Peel the parsnip & cut into pieces. Steam for approximately 15 minutes until tender.

Blend the cooked parsnip with the cream, truffle oil until silky smooth & season to taste. Set aside, keeping warm.

Superb as a starter

Heat a dry pan. Brown the scallops quickly for no more than a minute. Place a scallop on each spoon & season with pepper.

6 Add just one drop of truffle oil onto each scallop before serving.

Pancetta adds a delicous, crispy saltiness

What better way to keep out the Autumn chill, than with a spicy curry? As one of the nation’s favourite cuisines when eating out, curry is hot news in all sectors of the foodservice industry. The British have long enjoyed a love affair with curry. The first dedicated Add variety with a Indian restaurant opened it’s doors grazing platter in London in 1809. There are now over 10,000 throughout the UK. You don’t have to be a dedicated Indian eatery to serve up the nations’s favourite dish - pubs, hospitals, care homes and schools are all spicing up their menus! Daal - Spiced Lentils

Method: 1 Finely chop one onion and thinly slice the other. Sift the flour and baking powder into a bowl. Add the curry paste or powder, chopped chilli and a good sprinkling of salt. Add about 150ml of cold water to make a thick batter. Stir in the chopped and sliced onions until they are well coated.

Aloo Paratha - Potato Stuffed Flat Bread

Aloo Gobi - Potato & Cauliflower Curry

2 Mix together the raita ingredients with a little salt & pepper, then spoon into a small bowl. Heat about 5cm of oil in a wok or deep pan. Add a tiny speck of batter. If it rises to the surface surrounded by bubbles and starts to brown, then the oil is hot enough. 3 Add heaped tablespoons of onion mix to the pan, a few at a time, and cook for a few minutes, turning once, until they are evenly browned and crisp about 3 to 4 minutes. Drain on kitchen paper, sprinkle with a little salt and keep warm while you cook the remaining bhajis. Serve with the raita.
