Corfu Recipes -Recipe of Pastitsada
Description It is a traditional corfiot dish, mainly made with rooster meat or beef. You can find it in all restaurants of Corfu or just prepare it yourself.
Ingredients - 1 kilo of beef cut in portions - 100 gr of olive oil - 1 spoonful of butter - 3 onions julienne - 2 cloves of garlic - ½ spoonful of cinnamon and clove in powder
- spicery in powder - nutmeg - some parsley - 100gr of dry white wine - 300 gr of chopped tomatoes - 1/2 spagetti No4 or No5 - parmesan minced – some sugar
Preparation Boil the olive oil and butter into a casserole and saute the onions for 3-4 minutes. Add the garlic and the meat. Brown the meat in both sides. Add the wine and then the chopped tomatoes, the spicery, the sugar, salt and pepper. Cover the casserole and leave it to boil for about an hour. In the meanwhile, boil the spaghetti in salty water, strain them and sprinkle them with the parmesan cheese. Then pour the meat over the spaghetti and powder some parsley above.

Description This is one of the many traditional dishes of Corfu. As most corfiot local dishes, it dates back from the Venetian times.
Ingredients - 1 ½ kg boneless beef fillets (leg part preferred) - 1 onion, finely cut - 2 garlic cloves, mashed - 1 tea cup of white wine - 2 bunches of parsley, finely cut - 1 piece of meat brewis - salt - pepper - olive oil for frying
- some flour - 1 tea cup of vinegar
Preparation Put the meat in a pot and saute it in middle temperature with the olive oil. Dredge the pot with the flour and stir the meat with a wooden tablespoon, so as not to stick. Add the garlic and when it turns yellow, add the vinegar and wine. After that, add also the meat brewis, the parsley and 1 ½ cup of water. Boil the food about an hour and a quarter.
