Squash, Zucchini, and Tomato tian A delicious reason to eat your vegetables, just assemble the day before for an easy and gorgeous side dish. Pick squash, zucchini, and tomatoes that are roughly the same size in diameter to create a stunning visual presentation serves: 4-6 cooking time: 1 hour 1 large onion, halved and sliced into ¼ inch slices 2 garlic cloves, minced 4 roma tomatoes, sliced into ¼ inch slices 2 squash, sliced into ¼ inch slices 2 zucchini, sliced into ¼ inch slices 2 tbsp fresh thyme, roughly chopped ¼ cup grated Parmesan salt / pepper / olive oil > Heat 1 tablespoon of olive oil in a sauté pan over medium heat. Add the onions, garlic, and half of the thyme, season with a large pinch of salt and pepper, sauté until softened, but not browned, about 13 minutes. Reserve until ready to use. > Preheat the oven to 400 degrees. Oil a shallow pie or tart pan and spread the onion mixture over evenly. Arrange alternating layers of squash, zucchini, and tomatoes, seasoning each layer with salt, pepper, and chopped thyme. Season the top with more thyme and pepper, drizzle with olive oil and bake for one hour in the top part of the oven. > Sprinkle with Parmesan cheese and bake for about 15 minutes more.
Notes: Can be assembled up to 1 day ahead of time and stored in the refrigerator. Bake for an additional 10-15 minutes.
