1 oz Cointreau 1 oz egg white ½ oz fresh lime juice 1½ oz blanco tequila ¼ oz green chartreuse 1" square cube of pineapple 2 cucumber slices Muddle together pineapple and cucumber, add rest of ingredients and dry shake. Add ice and cold shake, double-strain into rocks or margarita glass.

1 ½ oz Cointreau ¾ oz elderflower liqueur Juice ½ Meyer lemon Juice 1 kumquat ¾ oz simple syrup 15 mint leaves Combine all ingredients, shake and strain into a long glass over ice. Fill with soda.

Rangoon Gin Fizz Created by Eric Simpkins of Door 44 in Atlanta, GA
1½ oz. Old Raj Gin Blue Label ¾ oz. lime juice 1 oz. simple syrup 1 oz. heavy cream 7 drops absinthe 5 drops simple cardamom tincture 3 dashes Fee Brothers Jasmine Water 1 egg white 1 oz. Fever-Tree Bitter Lemon Tonic
METHOD

2 oz. blood orange juice ¾ oz. The Liquid Muse Thyme Syrup* 3 oz. Fre® Alcohol Removed Brut Sparkling Wine THE LIQUID MUSE THYME SYRUP
2 cups sugar 1 cup water 25 organic thyme leaves METHOD
Ice a tall Collins glass. Combine ingredients excepting tonic and absinthe in small cocktail tin. Remove ice from Collins glass, swirl with absinthe and discard excess; add tonic to glass. Ice the shaker and shake vigorously to chill. Strain into Collins glass (no ice) through fine strainer. Slide tall thin straw through center of foam and serve.
Bring the above to a boil, stirring occasionally. Reduce heat to low and simmer 3-5 minutes. Remove from heat and let cool. Double-strain into a glass bottle. Refrigerate up to two weeks. Combine blood orange juice and syrup in a champagne glass, top with sparkling wine and serve.
ERIC’S INSPIRATION
Natalie was inspired to create the Fre® Thyme by her latest cocktail book, which focuses on balancing a healthier lifestyle with festive entertaining by using homegrown cocktail ingredients. This will be the fourth consecutive year that The Liquid Muse has created a signature alcohol-removed cocktail for Tales of the Cocktail®.
Two years ago, the Ramos Showdown at Cure in New Orleans got me thinking about variations and different techniques for Ramos building. Jasmine has always been a favorite aromatic for me; I have found that it plays very well with a touch of anise flavor, so the absinthe swirl gives a little nod to the Sazerac, NOLA, and the Ramos Gin Fizz. A touch of cardamom seems to brighten the aromatics and further refine the anise flavor into something unique and evocative. The whole drink is further powered by the extra proof and the bit of saffron found in the Old Raj.
