Christmas in A & B is celebrated with cultural gifts from many different regions, but is rooted primarily in European and African origins. Check out O Come All Ye Foodies! A & B Christmas Food Traditions from Around the World. New Year's Eve and Christmas morning church services, feasting on Christmas Day, serenading, dances, gift giving Christmas cards and messages, and Christmas trees are just some of the traditions that have been handed down from European colonists.. When Africans were brought to the Caribbean, they added to Christianity their own customs and, right away, the festival began to evolve and take on a character of its own. It is said that many slaves went to the great plantation house on Christmas morning to serenade its occupants with songs. Rewarded with a two-or three-day holiday, they made the most of it in their own quarters, reaping provisions both for food and to sell among themselves at the Christmas market. This way they were able to earn "a little keep" for their families at Christmas. Scottish settlers are believed to have also influenced "Old time Christmas" customs in A & B with celebrations that include: Carol Trees, John Bull (Jam Bull), Highlanders, Long Ghosts and JumpaBen. Carol Trees were made from a stick with several cross-bars, like a telephone pole; with lanterns hung from the branches, they were carried from house to house by carol singers, accompanied by the music of an accordian (concertina). John Bull is also a cultural tradition that has been preserved through generations. It is still a feature on Boxing Day and A&B BUZZ: HOLIDAY iSSUE/2013

New Year's Day celebrations in many villages. This grotesque character based on an African witch doctor, is dressed in dry banana leaves and old clothes. He was probably created by African slaves to "satirise" their British masters: the costume closely resembles that of the Sensay dancers from Guinea who performed at the end of the first stage of work initiation. Many cultural elements associated with these customs still survive in 21st-century A & B and the locals have added modern elements such as nightlife, sailing and sports to Christmas celebrations. The history of pumpkin soup began in 1804 as Haitians worked together to create a unique soup to celebrate their independence from the French Colonists. Today, the traditional pumpkin soup known as "soup joumou," is served to friends and family in Haiti in remembrance of their fight for freedom. In Portugal the national food is bacalhau, salt cod, there are hundreds of recipes and the older generations would happily eat it once a week if not more. It's not a cheap food anymore, what was once a way of preserving fish through necessity it now commands a good price. Italy

Polenta is cornmeal boiled into a porridge and eaten directly or baked, fried or grilled. The term is of Italian origin, derived from the Latin for hulled and crushed grain (especially barley-meal). In the 1940s and 1950s, polenta was often eaten with salted anchovy or herring, sometimes topped with sauces. In A & B it is called fungee and is served with pepper pot, a "one pot" mix of vegetables, dumplings and corned meat - the destination's national dish.

Ireland

Black pudding, blood pudding or blood sausage is a type of sausage made by cooking with a filler until it is thick enough to congeal when cooled. The dish exists in various cultures from Asia to Europe and the Americas. Pig, cattle, sheep, duck, and goat blood can be used depending on different countries. In A & B rice is used as the filler. In Europe and the Americas, typical fillers include meat, fat, suet, bread, cornmeal, sweet potato, onion, chestnuts, barley, and oatmeal. USA

American macaroni and cheese has two main lines of ancestry claimed. In the first, it is thought that macaroni and cheese was a casserole that had its beginnings at a New England church supper. In the second, and more famous story, and more than likely the original story, it is said that the classic American macaroni and cheese returned with Thomas Jefferson to Virginia after his sojourn in Italy. Africa (Nigeria)

Jollof, also called "Benachin" meaning "one pot" in the Jollof language, is a popular dish all over West Africa.Its base consists of rice, tomatoes and tomato paste, onion, salt, and chili pepper, to which optional ingredients can be added such as vegetables, meats, and other spices. The cooking method is to use groundnut oil to fry the finely-chopped onion, tomatoes and ground pepper, add stock and cook the rice so it takes up all the liquid. Optional ingredients include garlic, peas, thyme, African nutmeg, tea-bush leaves, and curry powder. The Yorkshire pudding is known to include expensive and luxurious ingredients, notably the sweet spices, brandy, dark sugars, treacle and suet. Prior to the 19th century the English Christmas pudding was boiled in cheesecloth and shaped round. Scotland

For a whisky to be labelled Scotch it has to be produced in Scotland-- it cannot be produced in England, Wales, Ireland, America or anywhere else. Excellent whiskies are made by similar methods in other countries, notably Japan, but they cannot be called Scotches. They are most often referred to as "whiskey". While they might be splendid whiskies, they do not captivate the tastes of Scotland. Mexico

Rompope, is the Mexican version of the popular holiday egg nog. The word "rompope" is a derivation of the word "pope." This is a favorite holiday drink in Mexico and it is spiked with rum. This addition of whiskey to this customary rum drink marks the Angle influence in this version. Drinks = Sorrel Drink

Caribbean

"Agua de Flor de Jamaica" is usually prepared by steeping the sorrel leaves (calyces, hibiscus) along with ginger in boiling water, straining the mixture, pressing the sorrel leaves to squeeze out all of the juice adding sugar and in some instances a little rum and stirring. The beverage is served chilled. Sorrel as it is known in other parts of the world.

Eco/Nature Adventures TAKE THE TRAIL The Lookout Trail can either be approached from the top, there is a sign marking the top of the trail through Shirley Heights Lookout to the right, or from the bottom just up the road from Freeman's Bay, back up the road coming out of the Galleon Beach Resort. If hiking from the top, it's a nice easy trail, with at one point a few large rocks to climb over. Once you arrive down onto the road at the end of the trail, you can their either take the Jones Valley Trail or Carpenters Rock Trail. For those interested in the flora and historic sites of the area there is a great hike book with photographs identifying many of the flora you will see available from the Environmental Awareness Group. Have you or a client ever celebrated Christmas or rang in the New Year in the Caribbean? If so, what were some of the highlights or most compelling aspects of this experience?

Answer of the Month I spent the 4th of July, 2012 in Antigua and we were invited to dinner at The Mill Reef Club to celebrate with friends. It was a very upscale gathering that included the Governor of Antigua, officers from the local US Air Force Base and many expats who own homes in Antigua. This is a not to be missed event each year and while the food was mostly local cuisine, the decorations, music and the fireworks added a patriotic touch to this otherwise exciting Caribbean experience. - Dana Brodie, Bernardsville, NJ
