CONDIMENTS TO SPICE UP YOUR HEALTH
More and more hotels in A & B are developing herb gardens on property to ensure ready access to a variety of herbs, spices and natural seasonings that are a staple in almost every dish on the menu and even in some cocktails. Green seasoning is a blend of fresh herbs, onions, garlic and hot peppers that is indigenous to the local cuisine. Chefs and bartenders combine a variety of ground spices such as cloves, allspice and cinnamon to the natural herbal seasoning that imparts a unique exotic flavor. This herb mixture is used in cocktails or to season seafood, poultry and meat for frying, stewing, baking or roasting. It is also used as a base, sautaed in hot oil to cook a variety of vegetables. The news is, that in addition to the distinctive flavors, many of these spices and herbs contain special nutraceuticals and immunity boosting antioxidants that make you happier and healthier.

INTERVIEW | INDIES GREENS
HOMEGROWN
HOLISTIC HEALING INDIES GREENS
The Future of Organic Farming Nature lovers are excited about Indies Greens Tilapia and Organic Farm. The project utilizes sustainable agricultural methods and practices thereby protecting local waterways, while encouraging biological diversity and healthy ecosystems This locally incorporated family business is operated by Larry Francis, his wife Marjorie and brother Damon. The facility utilizes new age Aquaponics technology and is located alongside the family residence in Upper Renfrew, St. Johns. Aquaponics is the cultivation of fish and plants in a constructed, re-circulating ecosystem utilizing natural bacterial cycles to convert fish wastes to nutrients for plants. This type of agriculture produces very high produce yields while using minimal land space, water and fertilizers. The whole system is based on the premise of reusing resources. The A & B BUZZ visited Indies Greens and caught up with Larry Francis and his visionary team. The facility constructed in 2010, comprises a farm office building and temporary fish nursery, 6 tilapia grow out ponds, 4000 gallons each, 13 vegetable aqua beds and 2 tilapia fingerling tanks.
A&B BUZZ: HEALTH & WELLNESS iSSUE/2013
A & B BUZZ: Tell us about the design of Indies Greens? LF: IG Indies Greens' model is based on environmental sustainability, where the concept of reuse, reduce and recycle is woven into the fabric of the business. AB: Please describe the farming techniques that are used and the advantages of using them? LF: Aquaponic farming incorporates the rearing of fish and the growing of vegetables without soil in a re-circulating environment. Since Antigua tends to be dry, water conservation is a high priority when farming. This technology allows us to raise both fish and vegetables by recycling water while maximizing the production of healthy food. AB: How did the whole concept of this venture come about? LF: While on a visit to Epcot Center at Disney World in 2009, one of the exhibits demonstrating an aquaponic system caught my eye. From there, the concept we brainstormed the idea and decided it was worth pursuing. AB: What types of produce are harvested and what quantities are produced weekly?
AB: What distinguishes your operations and what can visitors to your farm expect to see? LF: Our operations greatly differ from the traditional methods plants are grown on top of water. It is the only commercial fish farm on the Island and visitors can expect get a first hand experience of an ecosystem which is environmentally friendly in a relaxing, clean and tranquil setting. We also have a fish fry party on the premises allowing visitors to enjoy fresh catch. The cost of the tour is $7USD. AB: Where would you like to take this venture in the next 5 years? LF: The long-term plan includes achieving a 10-fold increase in the production capabilities of vegetables and fish, developing a tilapia hatchery to serve the Eastern Caribbean and to begin exporting to the neighboring islands. AB: If you could raise your "green thumb" and magically transform your business, what are some of the eco practices that you would implement?

LF: Primarily, we would transition to utilizing renewable energy sources for most of our energy and water needs. I would also eliminate the use of any biological pesticides and herbicides.
LF: Currently, lettuce, basil and chives are produced in the hydroponic subsystem and tilapia fish are reared. We produce approximately 2000 lbs of whole fish monthly and 400 heads of lettuce weekly.

Sugar Ridge Gains Green Globe Certification In May 2011, Sugar Ridge Resort embarked on the path to achieve Green Globe Certification. The Green Team initiated a rigorous training and sensitization program to obtain buy-in from the staff and other stakeholders. Focus was not just in the environmental arena, but also covering social and financial sustainability. The Resort received Green Globe Certification in October 2012 and joins more than a dozen other local hotels properties that are also Green Globe Certified. Initiatives already introduced include the installation of more than forty (40) electrical and water sub meters. The hotel has also been quick to recognize the need to recycle as much as possible and have already collected approximately 150lbs of plastic bottles over a four-week period. For the year of 2012, the Resort documented and collected a total of 325 lbs of aluminum cans, 1572 lbs of steel cans, 1390 lbs of mixed plastics and 152 lbs of PET plastics. One of the items on the Green Globe Certification Action Plan at Sugar Ridge is to start a Hotel Garden to include vegetables, herbs and fruits. It was decided to plant the items in stages, with herbs being the easiest thing to grow. As part of the hotels "Social and Environmental Sustainability Policy" and as a corporate leader in the community, Sugar Ridge pledges to do its part in fostering social and environmental initiatives towards the community and by extension, national development.

Environmental Awareness Group Floating Classrooms A & B's more than 20 offshore islands and the North Sound area are home to many of the endemic and endangered species and habitats found in the twin island destination. These islands and the surrounding waters are now critical habitats to a number of threatened species, including the Antiguan racer snake, West Indian whistling duck, brown pelican, queen conch, hawksbill turtle, and spiny lobster. Promoting awareness about the values of these threatened species and habitats will be critical to preventing any further loss. The EAG is leading efforts to incorporate the ecological lessons that the offshore islands have to teach us into the formal schools curricula through the Floating Classroom program, which is an educational component to the Offshore Island Conservation Project. The field trip lasts from 9am to 12pm and takes students and teachers on a boat tour through the critical mangrove and coral reef areas, pausing for closer examinations and all go ashore at Great Bird Island. On the island, the classroom walks through the dry scrubland and along the ridge where they can spot many seabirds nesting. Following the walk, there are a number of activities that the children complete. The Floating Classrooms Initiative is a great way to get the students out to places they may never have been before, or go again, and it lets them appreciate time away from the everyday classroom setting and provides a stimulating learning environment. To sponsor a Floating Classroom or contribute to Environmental Education for Youth in A & B visit www.eagantigua.org.

Sandals Foundation Partners With PA Girls Soccer Team On the heels of their impressive performance in the Divisional Soccer Championship Finals in PA, members of the Whitehall High School Girls Soccer Team visited A & B to celebrate their victory as first runner ups. The team, comprising 14 girls ages 14 - 17, two coaches and 3 chaperons stayed at the Grand Pineapple Resort for a 3-night getaway. The team of young goodwill ambassadors engaged in a number of "voluntourism" and sports tourism initiatives throughout the twin island destination. Following a series of fundraisers within their local community, the team arrived laden with school supplies which will be donated to the Wilkies School and sporting equipment, uniforms, pop up goal stations and other sporting gear which will be presented to local soccer teams. Under the leadership of Trinidadian born Coach George Romano, and Technical Director Robert Hartman, the Whitehall Female Soccer team defeated the National Female under 17 and under 20 female soccer teams. Travel agent, Jennifer Doncsez of VIP Travel in Whitehall PA, helped to coordinate this visit with the Sandals Foundation. As a top producer for the Sandals, Jennifer's daughter is also a member of the Whitehall Zephyrs. She hopes that this will become an annual initiative and sees the opportunity to develop a strong partnership between the Whitehall High School and the destination. Doncsez worked with the Grand Pineapple Resort, Sandals Foundation, The Ministry of Sports, The Ministry of Tourism, and the US Tourism Office to coordinate the trip and organize the community outreach efforts. The Whitehall Soccer Team will make a presentation of school and sporting supplies to the Wilkies Primary School before their departure on Monday. Minister of Sports, Senator Winston Williams welcomed and thanked the team for their support of the destination.

Question of Last Month
Question of the Month
Have you or your clients discovered any hidden gems "off the beaten track" during a vacation in A & B?
Please describe any aspects of Caribbean life or culture that may have influenced your health habits, or inspired you to live a healthier lifestyle?
Answer of the Month Two years ago, I took a circumnavigation tour around Antigua. I expected to see beautiful beaches, some of the tiny islands off the mainland like Jumby Bay, and an abundance of sea life like whales and dolphins. What I was not prepared for was "The Pillars of Hercules." This natural rock formation on the southeastern coast of Antigua is in my mind, one of the wonders of the Caribbean. The architectural appeal is stunning and it is unfathomable how this "freak of nature" came into being. I highly recommend it as one of the true gems of Antigua and one of the landmarks that visitors must see. - Carlos Cortina, Brooklyn, NY A&B BUZZ: HEALTH & WELLNESS iSSUE/2013
