Around the world there are many variations on the Christmas theme and traditions vary from country to country. Here in New Zealand, where the festive season is celebrated in summer, it’s usually about enjoying time together with family and friends barbeques, the beach, pavlova with kiwifruit and keeping cool! But what is the real meaning of Christmas? Is it the gift fts t under the tree, the fairy lights in the windows, the cards in the mail, roast turkey dinners with family and friends or shouts of “Merry ry Christmas” to all those we meet? Is this really Christmas? Christmas should be a season of great joy. It is a time of special religious significance for those who wish to observe it as such and if you include some aspect of this to your festive approach, a nativity display for example, it can add to everyone’s understanding of what the celebration is for. And the same could be said for including the singing of Christmas Carols as a way of remembering the real meaning of Christmas. More importantly, it should be a time to share with others. Extend hospitality, renew friendships, strengthen the bonds that bring you together and make the focus on spending time with your loved ones. If you have the opportunity to extend that to those who are less able than yourself then that is possibly the true spirit of the festive season – the giving and sharing of oneself. Whatever Christmas has in store for you enjoy the simple pleasures in life, fill it with fun and lots of helpings of laughter and may life’s blessings reward you.

Orange & Cranberry Stuffing
his delicious rolled lamb leg roast is so easy to prepare. Follow the simple instructions to create a special occasion meal to delight your family and friends. Serve hot with your favourite roast vegetables, or warm with a selection of salads.
Prep: 25 mins Cook: 1 hour 15 mins Serves: 8-10
Ingredients • 1 x 2.5 kg Quality Mark boneless lamb leg
For the stuffing • 1 cup white breadcrumbs (approx. 3 slices bread made into crumbs) • 2 Tbsp chopped rosemary • Zest and juice of an orange • ¼ cup dried cranberries • 1 Tbsp cranberry sauce • 1 Tbsp parsley, chopped • 1 Tbsp each oil and butter • Bunch of rosemary sprigs • 10 pieces of jute twine or kitchen string
Method
Remove the meat from the fridge an hour or more before cooking so it comes up to room temperature. Prepare the lamb to step 2 (pictured above): Place the lamb skin-side down. Look for the plumpest parts, and partially slice horizontally into them to create a flap. Lift the flap and flip it towards a gap you wish to fill, to create a more even rectangular shape. Cover the meat with plastic wrap and pound it with a rolling pin to flatten and firm into place. Trim off any hard or fat grisly bits. Or, if using a carvery or full leg, ask your butcher to remove the bone for you. Combine the stuffing ingredients. Place the stuffing in a strip down the middle of one side of the meat then lift the edge and roll the meat tightly as though rolling a Swiss roll, tucking in any stray pieces. Tie as shown in steps 3 and 4 pictured above. Preheat the oven to 200°C or 180°C fan bake. Heat the oil and butter in a roasting pan and brown the lamb well on all sides. Remove from the heat, place remaining rosemary sprigs into the pan and place the roast on top. Roast for 45 minutes.
Poke a metal skewer or thin knife into the centre, count to three and then test it on the inside of your wrist. It should feel warm - if it doesn’t, cook for another 15 minutes and try again.
Place the lamb on a warm plate and cover with foil to rest for 15 minutes before removing the string and carving. Serve warm in thick slices with gravy, or cold in thin slices with cranberry jelly.

Ingredients • 3 cups Arborio rice • 6 cups chicken or vegetable stock, heated • 100g pecorino cheese, grated • 1 cup white wine • Small bunch chives, chopped • Small bunch parsley, chopped • 1 onion, diced • 1 leek, diced • 4 garlic cloves, diced • 1 cup peas • 400g NZ ham off the bone, diced • Juice and zest of 1 lemon • Salt pepper • 3 tbsp olive oil
Method
Heat some olive oil in a pan and fry the onion, leek and garlic for 5 minutes, or until soft.
Add the rice and fry for 2 minutes. Pour in the red wine and cook until evaporated. Add the heated stock one cup at a time, always stirring until it’s
all absorbed and the rice has softened. This will take about 20 minutes. Add the peas, ham and lemon zest and juice. Cook for a further 2 minutes.

he signs from a number of large retail outlets, both here and overseas, indicate that this Christmas children will be hoping that Santa brings them ‘tech’ toys and perhaps a few traditional gifts.
As technology advances exponentially so too do the options for toy manufacturers to incorporate advanced features, often along with associated apps to both entertain and educate children. Robots have come of age and a reallife robot with a personality of its own looks set to be in great demand. The Cozmo robot by Anki is available in New Zealand and although expensive is sure to sell well. The more a child hangs out with Cosmo the more the robot interacts with the child. It incorporates facial recognition and is very clever in many ways. All you’ll need is a compatible iOS or Android device. Lego continues to be a firm favourite with children of all ages and their Creative Boost toolbox offers fun, science and options to build several objects such as Frankie the Cat and Vernie the robot. Vernie is also interactive and its behavior can be coded and controlled via an app. Meccano also has a robot puppy to build and teach it tricks.
Fluffy interactive toys, such as the Roarin’ Tyler, a tiger that roars, responds to noises and reacts when patted or his tummy is tickled, are very popular this year. There are several other similar soft toys that interact with the user like My Dream Puppy, who comes with his own adoption certificate, and Charlie the Barking Beagle. Last year Hatchimals were all the rage and this year looks likely to be the same

This recipe requires 3 blocks of Whittaker’s Apple and Vanilla Artisan block
Makes 14 Cupcakes Apple and Vanilla Cupcakes • 145g Whittaker’s Apple and Vanilla Artisan block • 1 ½ cups (210g) all-purpose flour • 1 tsp baking powder
2. Break 230g of chocolate into pieces and place in a heatproof bowl. Fill a smaller bowl with boiling water, and place the bowl of chocolate on top. This will ensure no water makes contact with the chocolate. Stir until a smooth consistency is achieved, then set aside to cool until the chocolate reaches room temperature. 3. Mix together the flour, baking powder and salt into a small bowl and set aside.

4. Using an electric beater, cream the butter and sugar together in a large bowl until light and fluffy.
