ichael is well known to many people in the Bay, especially readers of Hawke’s Bay Today as his features on Historic Hawke’s Bay appear regularly. Michael is now a contract researcher, writer and speaker who devotes his time to recording Hawke’s Bay history.
What, if anything, do you most enjoy about Christmas? I most enjoy seeing all the family together. It has been interesting seeing the change of society’s attitudes towards it over 50 years to where it is now.
Who will you spend Christmas with and where? My wife’s three children will be all with us this year at our place, which is great. My mother and Raewyn’s parents, together with my brother and sister and their families will also join us.
I am mindful for some people it can be a time of stress both financially and relationship wise, and for many without families, loneliness, when normal routines are disrupted. However, there are many people who give their time and resourceswhich is to me is the essence of what Christmas is.
We have a Bichon Shih Tzu called Bella, and she likes to be close to any action – especially if there is food nearby.
Will the dog be getting a present? Bella always gets a present – a doggy food treat or a ball that she tries to destroy.
Are there any family traditions that you can’t live without? As a family growing up, we never really had any traditions around Christmas, so no, we don’t have any. Except, probably eating too much at midday!
Describe a typical Christmas Day. Preparing food, opening presents with family, eating food, regretting eating so much, and then about 8pm eating again.
I have no children of my own, but I have three young nephews, so I bought a Santa outfit and have started a tradition (until they realise he’s not real, or the older ones tell the young ones) just before lunch that I knock on the front door and say I have lost the reindeer. I then tell them I have these presents left over, and would they like them. The youngest nephew aged three had developed a fear of the jolly man in the red suit, so we had to negotiate that last year!
Favourite food? My problem is that everything is my favourite – but I have terrible sweet tooth so I don’t think you can beat a PAV with Scott’s Strawberries on top. Favourite drink? I like Indian Pale Ale, or a good chardonnay. Do you help with preparing food/ dressing tree? I help by getting the tree down from the loft, but normally leave the decorating etc to those in the family who enjoy it. I do help with the food, if barbequing counts!

very evening at 6.00 Jean Pentelow and her husband Jim settle down to watch the TV. Invariably Jim drops off to sleep but Jean knits to keep herself awake and generally doesn’t stop until 8.30pm.
She knits a wonderful selection of soft toys for youngsters and dresses dolls in beautifully knitted garments complete with hats, cardigans, dresses and bootees. Her repertoire also includes delightfully soft and colourful rugs for bassinets or to cover chilly knees. Jean will complete about 45-50 gifts this year and all of them are donated to the Hastings Christmas Cheer Appeal. She has been doing this for about fourteen years and that’s a lot of pleasure she has given local children throughout the years.
Jean and Jim reside at Gracelands Village in Hastings and both lead extremely hectic lives. Jim is a voluntary Meet & Greet person and a Friend of the Emergency Department, a St John service at the hospital. The couple spends about three times a week volunteering at Gracelands rest home helping out one on one, playing Bingo and escorting bus trips. Jean also attends Probus and is a member of the Gracelands Village knitting group. The group donates their knitting to the Red Cross and also to the Special Care Baby Unit (SCBU) at the hospital. Jean is extremely outgoing and has a very positive outlook on life which is well represented by a sign on her lounge wall, “It’s not the years in your life but the life in your years.”
Jean, who is in her 70s, learned to knit when young and knitted for her children but there’s not much demand for hand knitting given there’s such a good selection of synthetic materials, she says.
She’s also a realist who knows “you never really know what’s around the corner.” Why does she knit? “Partly to give people pleasure. There’s enough misery in the world,” she says.
Some of her knitting patterns date back to the 1990s and have been laminated to protect them. She buys the dolls at charity shops and buys the acrylic yarn locally.
Jean will soon deliver this year’s dolls and cute soft toys and then she’ll be back knitting for next Christmasshe doesn’t even take a break on Christmas day.

Cheesecake Ingredients
Ingredients
• 250g digestive biscuits • 100g melted butter
• 350g plain flour, plus extra for rolling out
• 1 vanilla pod
• 1 tsp bicarbonate of soda
• 600g cream cheese
• 2 tsp ground ginger
• 100g icing sugar
• 1 tsp ground cinnamon
• 284ml cream
• 125g butter
For the topping
• 175g light soft brown sugar • 1 egg
• 400g punnet of strawberries halved • 25g icing sugar
• 4 tbsp golden syrup
Butter and line a 23cm loose-bottomed tin with baking paper. Put the digestive biscuits in a plastic food bag and crush to crumbs. Place the crumbs to a bowl and pour over the melted butter. Mix thoroughly until the crumbs are completely coated. Tip them into the prepared tin and press firmly down into the base to create an even layer. Chill in the fridge for 1 hr to set firmly.

Slice the vanilla pod in half lengthways, leaving the tip intact, so that the two halves are still joined. Holding onto the tip of the pod, scrape out the seeds using the back of a kitchen knife. Add the cream and continue beating until the mixture is completely combined. Spoon the cream mixture onto the biscuit base and make sure here are no air bubbles. Smooth the
Bring the cheesecake to room temperature about 30 mins before serving. To remove it from the tin, place the base on top of a can, then gradually pull the sides of the tin down. Slip the cake onto a serving plate, removing the lining paper and base. Purée half the strawberries in a blender with the icing sugar and 1 tsp water, then sieve. Pile the remaining strawberries onto the cake, and pour the purée over the top.
Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar. Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in cling film and leave to chill in the fridge for 15 minutes. Preheat the oven to 180C/350F/Gas 4. Line two baking trays with greaseproof paper.
Roll the dough out to a 0.5cm thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them. For decorations, use a skewer to make a small hole in the top of each biscuit. Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations.

4 tablespoons olive oil 4 tablespoons lemon juice 3 tablespoons chopped fresh parsley 1 tablespoon minced garlic Freshly ground black pepper to taste Chilli flakes to taste (optional) 700g uncooked fresh king prawns, peeled and deveined
In a large, glass bowl, stir together the olive oil, lemon juice, parsley, garlic and black pepper. Season with chilli flakes, if desired. Add prawns and toss to coat. Marinate in the refrigerator for 30 minutes.
Directions
Preheat barbecue for high heat. Thread prawns onto skewers, piercing once near the tail and once near the head. Discard any remaining marinade.

Lightly oil cooking hotplate. Cook for 2 to 3 minutes per side, or until opaque.
Glazed Ham With spiced cranberry and orange sauce Serves: 4-6 Preparation Time: 10 minutes Cooking Time: 1 hour and 10 minutes
Ingredients • 1 whole NZ ham on the bone • 1 cup pomegranate juice • 4 tbsp cranberry jelly • 1 star anise • 1 cinnamon stick • 2 tbsp brown sugar • Peel and juice of 1 orange • 2 cloves
Method
Preheat the oven to 180°C. Carefully remove the skin from the ham, ensuring to leave all of the fat behind to maximise flavour. Using a sharp knife, score the fat in a criss-cross pattern. To make the sauce, place the remaining ingredients in a pot and bring to a simmer. Cook for further 10 minutes on low, stirring occasionally so it doesn’t burn. Using a pastry brush, paint a third of the sauce over the ham. Place the ham in a deep baking tray and cook in the oven for 1 hour.
While the ham is cooking, return the rest of the sauce to a simmer and cook for a further 10 minutes. Remove from the heat and using a fork, take out the star anise, cloves, orange peel and cinnamon stick. Allow the sauce to cool and thicken to a jam-like consistency. Once the ham is cooked, rest covered with foil for 10 minutes. To serve, slice thick pieces and drizzle over the cranberry sauce. Recipe and photo courtesy New Zealand Pork

His CV is impressive and includes work at several five star+ hotels in Europe and a private yacht in Monaco. His father ran a Michelin restaurant which is where Tom started to hone his skills and knowledge of the liquor trade.

awke’s Bay produces a large quantity of New Zealand’s apples so it’s no surprise that it is rapidly gaining a reputation as a centre of excellence for cider. Hot on cider’s heels are craft beers and ginger beers, with and without alcohol, that are being produced in ever increasing numbers.
Many businesses are of a boutique nature with products available at events such as the Farmers Market, the cellar door, selected watering holes and supermarkets. The distinction between craft beer and other beers basically is that they are manufactured by small scale or boutique breweries rather than multinational corporations. Local companies producing cider include Edgebrook Cider which makes a real English style cider. Paynters has been in the fruit business for generations and specialise in creating cider with real cider apples using cutting edge production techniques. Three Wise Birds, another local company, manufactures an exciting range of ciders using apples grown in Hawke’s Bay: products include Summer Fling and Bach Life and there’s a champagne style cider, Scenic Reserve, made in the Methode Traditionnelle way using Braeburn apples. There’s no shortage of locally made craft beers with a wide selection available from the Hawke’s Bay Brewing Company, Napier Brewing, Brave
at the cellar door and available at local wine merchants - white, red and rose.

Juice is another Bay speciality with several companies producing quality orange and apple juice. An excellent way to enjoy Christmas brunch is to celebrate with champagne and orange juice. A Buck’s Fizz is made of two parts champagne to one part orange juice.

hristmas is a time of giving and also of goodwill with plenty of opportunities for locals to give to the various Christmas appeals in Hawke’s Bay. Napier and Hastings will be running the annual Christmas Cheer appeals and Kmart will also be running their Wishing Tree Appeal which is Australia and New Zealand’s largest and longest running gift collection Appeal.
Kmart is a long-standing partner of The Salvation Army in New Zealand providing thousands of gifts to brighten the lives of vulnerable families each Christmas. For 23 years, Kmart stores have collected gift and cash donations from customers and the public which are donated to the Salvation Army to give to Kiwis in need. Since its launch more than 500,000 gifts have been collected, enabling parents and children to experience the special joy of Christmas. Another custom which involves buying a gift for someone less fortunate, generally in a developing and/or poor nation, is becoming popular. The World Vision charity has opportunities for people to give a selection of gifts such as a chicken, a goat, a vege garden or a beehive. This is a great way to buy a gift for a friend or relative (they receive a card with details of the gift) and help someone truly in need. Other similar charities such as Oxfam and UNICEF run comparable schemes.

Trade Aid is a social enterprise helping talented people around the world improve their lives through fair trade. Beautiful artisan handcrafts and delicious food products such as coffee and chocolate are available, perfect for a unique Christmas gift. The World Wildlife Fund has a website with opportunities make a difference by symbolically adopting a polar bear, kiwi, dolphin or panda. Proceeds help support WWF’s conservation efforts to save endangered wildlife and their habitats. There’s also a good range of gifts available. There are plenty of ways to help wildlife and nature including sponsoring animals at various zoos around the country. Then the SPCA is always grateful for gifts of food for animals throughout the year. Why not add them to your Christmas shopping list? There are several unusual things you can do for your family such as giving the gift of time and attention! T
here’s always plenty of activity at the Mary Doyle Lifecare Complex in Havelock North and Christmas is certainly no exception.
The festive spirit starts on 1 December with activities and entertainment on offer for all 450 residents. In fact there’s quite a competitive element amongst many residents as they vie to grow the best potatoes in fancy buckets and compete to win the prize for the best decorated Christmas cake. The Men’s Club, under the direction of a carpenter, is already hard at it designing and constructing Christmas trees that will be wall mounted in the care units. When they are completed they will be decorated by the residents.
Closer to Christmas there are parties with entertainment for each of the care centres with families joining in the fun. Then on Christmas Day the staff and residents all dine together and Santa brings everyone a personally selected present. Riverstones licensed café and restaurant is offering a Christmas luncheon for village residents and their guests this year.
Then there are trips to see the Tremains Christmas Lights extravaganza and rides on the new trishaw for those who wish to enjoy the Havelock North decorations. Meanwhile all the care centres are decorated with staff, family and friends invited to help while singing along to Christmas carols. The Salvation Army Brass Band will visit the five care centres and there’s supper afterwards. Residents are also entertained by several school choirs. Then there’s a Teddy Bears Picnic for a group of pre-schoolers the “No Cotton Wool Kids” and their elderly friends.
The feasting and merriment continues with a Christmas party for the villa and apartment residents which is always very popular with their favourite DJ and delicious food.

ia ora, my name is Adam Ioane and I am the Head Boy of Flaxmere College. I currently live in Flaxmere but will be moving to Christchurch next year to study at the University of Canterbury. I will study a bachelor’s in engineering with honors majoring in mechatronics. What is mechatronics? It is a mix between four engineering disciplines: mechanical, electronic, electrical and control engineering.
My greatest highlight this year was attending the Young Achiever’s ceremony hosted by the Hastings Lions Club. During the evening I was awarded and acknowledged for being a young achiever myself. A few other highlights this year include becoming Head Boy, being showcased on Maori Television (Te Kaea), winning the overall top student award for my level 3 computers course at EIT, winning two scholarships from the University of Canterbury; the UC emerging leaders’ scholarship, valued at $6000, and the UC bright start scholarship, which gives me free tuition and compulsory fees for one year. This year, I will be spending Christmas in Flaxmere with friends and family. I enjoy Christmas because my whole family is reunited for one day and we have loads of fun together – don’t forget the yummy food too. My family’s Christmas is unique because we all gather at one place and stay awake
on Christmas Eve, so we can celebrate Christmas at 12am in the morning. When 12 hits, everyone say’s ‘Merry Christmas’ to one another and then we celebrate with a ‘straight from the ground’ hangi, all sorts of other delicious food and drinks, and lastly, desserts. My favorite food to eat on Christmas is banoffee pie and a song I love to listen and sing along to with everyone on Christmas day is ‘Feliz Navidad’. My favorite Christmas carol is ‘All I Want for Christmas is You’ by Mariah Carey. When everyone has had enough to eat, we all regather inside and start giving out the presents. The distribution of the presents is done one family at a time. One person from a family comes forth (usually one of the parents) and starts calling everyone one by one to come and collect their present. When everyone has got one they hand the turn over to another family. I reckon it’s great how we do our presents, because everyone usually gets six each – and my family isn’t little either. After the present’s are finished, a movie is put on for the kids while the older one’s help to clean up the mess from the food and the torn Christmas wrappings. My favorite Christmas movie is ‘The Polar Express’ directed by Robert Zemeckis. So yeah, I’ve told you a bit about myself and how I will be spending Christmas this year, but I sure hope you have as good a Christmas as I will – see you later.
