Around the world there are many variations on the Christmas theme and traditions vary from country to country. Here in New Zealand, where the festive season is celebrated in summer, it’s usually about enjoying time together with family and friends barbeques, the beach, pavlova with kiwifruit and keeping cool!

Is it the gift under the tree, the fairy lights in the windows, the cards in the mail, roast turkey dinners with family and friends or shouts of “Merry ry Christmas” to all those we meet? Is this really Christmas? Christmas should be a season of great joy. It is a time of special religious significance for those who wish to observe it as such and if you include some aspect of this to your festive approach, a nativity display for example, it can add to everyone’s understanding of what the celebration is for. And the same could be said for including the singing of Christmas Carols as a way of remembering the real meaning of Christmas. More importantly, it should be a time to share with others. Extend hospitality, renew friendships, strengthen the bonds that bring you together and make the focus on spending time with your loved ones. If you have the opportunity to extend that to those who are less able than yourself then that is possibly the true spirit of the festive season – the giving and sharing of oneself.

3 Secondly, in order to give the thousands of people who flock to watch the parade a better view, we have extended the route this year. This time around the parade will start in Clive Square, head up Tennyson Street, turn in front of the Masonic Hotel and then head down Emerson to finish once again at Clive Square – so take your pick of vantage points along Emerson St OR Tennyson St. Come in to town before the event and soak up the atmosphere, there will be plenty of music and entertainment along Emerson St and your pick of café’s for coffee or lunch. The parade will celebrate our diverse community with many of our community groups on show. You will have the opportunity to vote for your favourite float and win a $100 voucher to your choice of store in Napier CBD to help
tick off some of your Christmas wish list – more information on this opportunity can be found on the @napiercity Facebook page. Father Christmas himself will of course close the parade and will be available at the Clive Square East and Emerson Street intersection following the parade to receive wish lists, determine and naughty or nice list and of course, have a photo or two. Simply follow his sleigh after the parade to catch him before he jets off on his very busy month of business! As the only Christmas Parade in Napier/Hastings this is always a well-attended event, so make sure you come in to town early to get a park and maybe do a bit of Christmas shopping. E
very year we seem to push the boundary just that little further away from a traditional Christmas but then the climate here doesn’t lend itself very well to snow, robins, roaring log fires and mulled wine. Jandals, BBQs, beaches and long, cool drinks are more fitting to Christmas in the southern hemisphere. The religious significance, while crucial to many, is becoming more irrelevant and now Christmas represents long summer holidays and presents. There’s a wonderful choice of decorations, trees, baubles and novelties with both traditional and more contemporary themes. Christmas goodies seem to appear earlier and earlier in the shops which is great for extended shopping times but also a bit intimidating for those who prefer leave shopping until closer to December 25. Choosing a colour theme for your decorations is the first step in planning your decorations. Classic colours are green, red and gold while contemporary and trending colours this season are green, rose gold and perhaps paired with teal, old rose and cranberry.
Options for trees range from mini table top trees in all sorts of materials including feathers, glass and metal up to eight foot pine artificial trees. Then there are minimalist trees shapes consisting of LED lights, fibre optic trees and black Christmas trees! The Bay has a number of live tree outlets for those who prefer the real thing- you can’t beat the smell of a fresh tree. Lights are increasing in popularity with huge choices, especially in the LED ranges. Power options include mains, batteries and for outdoors solar power. eople will tell you there’s a bit of an art to cooking the perfect steak. But we think it’s pretty simple - just follow these important steps below, for the perfect steak no matter the occasion or the dish.
Cook each side 2 minutes, turn once only. Description: Internal very red colour, very moist, red juices. Touch Test: Very soft to touch.
1. Take the meat out of the fridge 20-30 minutes before cooking. This allows it to come to room temperature and ensures even cooking. 2. Dry the steaks and leave the fat on. Pat the steaks dry with paper towels for that perfect outer crust. If you want to cut the fat off the steak, do it once it’s cooked as fat adds flavour and moisture to the meat while it’s cooking. 3. Don’t add oil to the pan. Instead, brush the steaks with oil and season all over with a little salt and pepper. 4. It’s all about the sizzle. Preheat a large frying pan (or BBQ) to a high heat. If using a frying pan, the heavier the base, the better – heavy-based pans hold heat longer and cook the meat evenly. It’s important not to overcrowd the pan or BBQ, or the meat will stew rather than sear. Cook the steak in batches or use

Cook 4-6 minutes each side. Turn once only. Description: Internal pink red colour, moist, clear to pink juices. Touch Test: Firm and springy.
MEDIUM RARE two pans if need be. You should hear a big sizzle when the steak hits the pan – no sizzle means the pan isn’t hot enough. 5. The timing. As a rule of thumb (for a steak 22mm thick) – cook 2 minutes each side for rare, 3-4 mins each side for medium-rare and 4-6 mins each side for medium. For well done, cook for 2-4 minutes each side, then turn the heat down and cook for another 4-6 minutes. 6. To test for doneness, use the tip of your clean index finger (or tongs) to gently prod the steak. If the steak is
soft and squishy, it’s rare. If it’s soft but a bit springy, that’s medium-rare. If it’s springy, that’s medium. Any firmer than that and it’s on its way to well done. 7. Allow the steaks to rest. Place the steaks onto a wooden board or plate, cover loosely with foil and rest for about 6-7 minutes before slicing across the grain or serving. Resting will allow the meat to relax, and the juices will return to the meat fibres. This means the juices won’t run out on to the plate when you cut the steak – and results in more tender steak.
Cook each side approx. 3-4 minutes. Turn once only before pink beads of moisture appear on top surface of each side. Description: Internal lighter red colour, moist, pink juices. Touch Test: soft and springy.
WELL DONE
Cook 2-4 minutes each side, then reduce heat and cook a further 4-6 minutes. Description: Internal stone grey colour, dry, clear or no sign of pink juices. Touch Test: Very firm to touch.

he Christmas table is a place of celebration where family and friends come together to share a meal and enjoy good company. Whether it’s a relaxed family barbecue or a formal lunch for a large group, a few finishing touches will make all the difference. Choose a colour theme for your table that matches the theme you have chosen throughout the rest of the house- traditional red and green, white, silver or something more contemporary to match your artificial Christmas tree. Brighten the table with candles, napkins, small presents, Christmas platters or a centre piece. Make your own by adding ornaments, pine cones, flowers, seasonal fruit, ribbons or garlands. Christmas baubles’ in the centre of a wreath will add a special bit of bling to your table. Living in the Bay is an opportunity to create decorations more suited to Christmas in the summer time. Why not try a natural look such as driftwood, seashells, fresh flowers or pohutukawa? Another idea is to use strands of fairy lights, a row of glass vases filled with candles on the table and glitter or stars sprinkled on the table to create a magical atmosphere.
Keep the tablecloth or table runner bright and simple to match your theme without detracting from the display you have created. Simple is often the most elegant, especially when you have large platters of food and drinks to place on the table. Napkins can be jazzed up by using clips or pins or turn rings into name cards for your table settings if you have a large group.
You can make pretty napkin rings from ribbon very easily or wrap each plate with a gold bow to add a touch of class. Kiwi Christmas wouldn’t be complete without a meal outdoors – move the table outside for an alfresco meal and dress up the table to look summery and warm. Stemless wine glasses are a good idea, or plastic, as they’re more
solid and less liable to break. If you don’t want to use plastic cutlery why not head to the local op shop and buy charmingly mismatched pieces for a rustic look? Light some citronella candles to keep the insects away and pop a pot plant or fresh flowers on the table as a centre piece. Drinks can be kept chilled in a bucket full of ice.

INGREDIENTS Cake • 170g self-raising flour • 1/4 tsp baking soda
Mix together in a big bowl the selfraising flour, baking soda, brown sugar, castor sugar and cocoa powder. Mix to separate any lumps.
• 180g castor sugar
In a separate bowl, beat the eggs and yoghurt together.
• 25g cocoa powder (use good-quality Dutch cocoa powder for the best results)
Melt the chocolate and the butter in a bowl over hot water or, alternatively, in the microwave.
• 3 medium eggs
Mix the instant coffee with the hot water and add to the melted chocolate and butter.
• 200g brown sugar
• 75ml (5 tbsp) plain unsweetened yoghurt • 200g Whittaker’s 72% Dark Ghana chocolate • 200g butter, cut into pieces • 1 tbsp instant coffee granules • 125ml hot water icing sugar, to dust
Ganache • 100g Whittaker’s 50% Dark chocolate, broken up • 110ml thickened cream • 1 tbsp castor sugar
METHOD Preheat the oven to 160°C (140°C fan bake). Grease a 22cm round cake tin (7.5cm deep) and line the base and sides with baking paper.
Pour both the melted chocolate and the egg mixtures into the flour mixture. Stir until you have a smooth, quite runny consistency. Do not over-mix. Pour the cake batter into the tin and bake for 40 minutes or until a skewer pushed into the centre of the cake comes out clean. Leave to cool in the tin for 10 minutes then turn out onto a wire rack to cool completely. When the cake is cold, either dust with icing sugar and serve with a dollop of whipped cream or yoghurt or, for special occasions, top with ganache.
