Christmas pudding simply bursting with Hawke’s Bay goodness was shortlisted as a finalist in the recent Cuisine Good Food Awards 2018. The pudding by Michelle Matthews, marketed under the Kitchen Six brand, has previously received good reviews and while she didn’t win the artisan category she says it was a privilege to be selected as a finalist and to attend the event which she described as “amazing”. Michelle’s love of good food and batch cooking led her to take over a friend’s cottage industry business producing exquisite puddings a little over four years ago. She tweaked the recipe a little and decided that consistency in selecting ingredients would be one of the keys to quality control. Oranges, lemons and Granny Smith apples, key ingredients in the puddings, are sourced from the same orchards in Bay View every year. Michelle, Pete, Kitty, 12, and Zoe, 6 live in a beachfront property in Bay View and the orange grove is next door. The vine rich puddings are steeped in brandy and stout and are made in Kitchen Six premises in Onekawa. Michelle has several retail outlets throughout NZ and also sells online. Locals are lucky enough to be able to buy them directly from Michelle at the Hastings and Napier Farmers Markets in December. Michelle really enjoys selling a product that she is super proud of and chatting to people about how they will be enjoying their puddings.
Michelle, a trained chef, met husband Pete about 20 years ago while working in Arbroath. She ran the kitchens of hunting lodges for many years before returning to New Zealand. Traditional pudding making is an intensive business that basically takes 12 months from planning, baking, ageing, to wrapping and delivering the puddings and Michelle couldn’t do it without the help of family and friends. starts. The large puddings take six hours to steam and the ovens are going 12 hours a day for five days a week. Due to rapid expansion Michelle is just having a new kitchen constructed: her kitchen is next door to her father’s engineering firm. Dad, Arthur Duncan, is always solving problems for her like making trays to hold the puddings while steaming, and designing vertical storage racks. Mum Kerry helps with the kids and friends help out selling the puddings at the Farmers
Markets in December. Last year her brother and partner flew over from Australia to help with the last minute rush. How does the family spend Christmas? The whole family gets together once every two or three years and each Christmas Eve they all sit down and enjoy a small pudding with blue cheese and a sticky wine, and then on Christmas Day they indulge in a large Christmas pudding with an assortment of accompaniments like custard, cream and ice-cream.

hroughout the Bay there are many community based organisations giving people a helping hand when they need it most.
Clients of 32 such organisations will receive some Christmas Cheer this year thanks to the community coming together to give generously to the annual Christmas Cheer Appeal, Napier City Coordinator Hellene Overend says. Each organisation selects clients using set criteria to receive Christmas parcels. This is more of a hand-up not a handout and recipients are all working hard to make a better life for themselves. “I think it sets a great example for families who are able to donate to give a hand-up to families less fortunate,” Hellene says. The Annual Christmas Cheer Appeal was started some 30 years ago by the Daily Telegraph newspaper. Today it provides cheer to thousands of residents in both Napier and Hastings. Jo Reyngoud coordinates the Hastings Christmas Cheer Appeal and Hastings District Council is one of the main supporters. Napier City Council has supported the appeal since its inception some 30 years ago. It also donates 550 grocery vouchers which gives recipients the choice to buy basics or treats. The community is asked to donate gifts which should be new, unwrapped and can
be for children, teenagers or the elderly. They needn’t be expensive. A water pistol, bubbles, a colouring book and crayons or a volleyball set would all be well received. Another idea is to fill a Christmas stocking with small items and the stockings can be kept for next year. Foods, including treats such as chocolates or nuts are also much appreciated. Last year Tamatea Intermediate students gifted hand-made soaps, chocolates and bags for the elderly, Hellene says. There are dozens of examples of schools, colleges, and workplaces rallying to support the cause either with gifts, vouchers, cash donations and so on. Instead of giving Secret Santa presents at work some staff donate a present to the Christmas Cheer Appeal. From the drop off centres the gifts are taken to a central point to be sorted. They are then collected by the community organizations who distribute the gifts to their clients. The whole process is extremely well organized and timed with precision. Approximately 1,200 people in Napier received gifts last year. Christmas Cheer runs from 19 November to 15 December. In Napier gifts can be dropped off at Alexander Construction, Toy World Napier, Paper Plus Taradale, Napier Library and Taradale Library, Alexander Construction and Mitre 10 Mega Napier.

Roast Beef
Serves 4 Ingredients • 4 eggs • 2 tbsp white wine vinegar • 2 English muffins, halved
Prep: 10 mins
3. Lightly toast and butter the muffins, then put a couple of slices of salmon on each half. Top each with an egg, spoon over some hollandaise and garnish with chopped chives.

Cook: 26 mins + resting time Serves: 12
Ingredients • 1.25kg-piece Quality Mark beef eye fillet, sirloin or rump • ½ small bunch fresh rosemary
• A little butter , for spreading
• 60ml (¼ cup) light olive oil
• Chopped chives, to serve
• 2 large garlic cloves, crushed
For the hollandaise sauce
• Salt & freshly ground black pepper
• 2 tsp lemon jui3ce
• 2 teaspoons light olive oil, extra
• 2 tsp white wine vinegar
Method
• 3 egg yolks
Preheat oven to 200°C. Tie the beef at regular intervals with unwaxed white kitchen string to secure. Reserve 3 whole sprigs of rosemary. Coarsely chop 1 tablespoon of the remaining rosemary. Combine the chopped rosemary, oil and garlic in a small bowl. Rub the rosemary mixture over the beef. Thread the reserved rosemary sprigs under the string on the beef. Season with salt and pepper.
• 125g unsalted butter, diced
Method 1. Make the hollandaise sauce first. Put the lemon juice and vinegar in a small bowl, add the egg yolks and whisk until light and frothy. Place the bowl over a pan of simmering water and whisk until mixture thickens. Gradually add the butter, whisking constantly until thick – if it looks like it might be splitting, then whisk off the heat for a few mins. Season and keep warm. 2. Bring a large pan of water to the boil and add the vinegar. Turn heat down to a simmer. Stir the water so you have a slight whirlpool, then slide in the eggs one by one. Cook each for about 4 mins then remove with a slotted spoon.
Heat the extra oil in a roasting pan over high heat. Add the beef and cook, turning occasionally, for 6 minutes or until brown all over. Roast in the oven, basting regularly with pan juices, for 15-20 minutes for medium-rare or until cooked to your liking. Remove beef from baking pan and transfer to a plate. Cover with foil and set
aside for 10-15 minutes to rest. Remove string and rosemary sprigs from the beef. Carve the beef across the grain into thick slices. Place on a serving platter and serve immediately with horseradish or your preferred gravy or sauce, and fresh seasonal vegetables.

Ingredients

• Serves 8
• 3 tbsp sugar
• Spray oil for greasing
• 2 cups milk
• 2 1/2 cups berries
Custard
• 300 ml thickened cream
To Decorate
• 200g Highlander Sweetened Condensed Milk
• 300 ml Cream whipped
• 180g Nestlé Milkybar, melted, plus 100g extra, peeled into curls or shavings
• 1 tbsp toasted slivered almonds
• 1 cup pistachios, coarsely chopped, plus 1/3 cup extra, chopped
Method
• Berries of choice
Cut the sponge in half and fill with jam, then cut it into large cubes and put into a glass bowl. Alternatively slice a Swiss roll and place around the inside of the bowl.
• 1 punnet fresh or frozen raspberries • 1 punnet fresh or frozen strawberries, sliced
Cook time 15 mins
Pour mixture into prepared pan. Smooth surface, cover with plastic wrap, freeze overnight.
Spoon sherry or liqueur over the sponge, then lay out the fruit on top. Fruit juce can be added as an alternative to alcohol.
Lightly grease a 14 x 21cm deep loaf pan. Beat cream and Highlander Sweetened Condensed Milk, until thick and creamy. Fold in melted Nestlé Milkybar and chopped pistachios.
Dip pan in hot water for 10 seconds. Turn out onto a serving platter. Serve topped with raspberries, strawberries, extra pistachios, and extra Nestlé Milkybar shavings.
Mix the custard powder, sugar and ¼ cup of the milk to a smooth paste. Add the remaining milk and cook over a low heat, stirring constantly until mixture boils and thickens.
Method Prep time 20 mins
Remove from the heat, cover and leave until cool, then pour the custard over the fruit. Chill for 1 hour then cover with whipped cream and toasted almonds, or other decorations of choice.

ost families own a cat or a dog or some other furry creature like a rabbit or guinea pig and it’s nice to be able to treat them at Christmasthey are part of the family after all!
Contemporary trends include giving your pet a Christmas stocking full of little treats from the pet store, dressing them in a bow tie, a colourful ribbon or a Christmas hat. For those who send cards or electronic greetings it’s a nice idea to include your pets in the family photo too. While humans tend to overindulge in food and beverages there are certain foods that are hazardous or toxic for pets. The best rule is not to feed them human food and avoid bones. Chocolate, raisins, grapes, currants and sultanas, along with Christmas cake, mince pies and chocolate raisins are a definite NO NO. Not all pets are sociable and it’s easy to be frightened by new people, crowds and noise so always make sure there is a quiet place for your animals to retreat to. Seeing kittens playing with Christmas trees is adorable to watch but kittens and puppies can wreak havoc if they decide to climb or play with a tree. So make sure your tree and its ornaments are secure and will not topple. If you are considering buying a new pet at Christmas make sure you think it through.

here’s plenty of history behind the origin of the Christmas tree and it’s safe to assume that it’s one tradition that will continue for many generations to come.
Traditionally the evergreen fir, or spruce, were used and decorated with coloured paper, apples and candles. Now there are artificial trees in a wide range of colours and a host of ornaments and decorations available. The green Christmas tree has been replaced with white, black and pink to match interior décor. Then there are LED trees that change colour. But there are still some traditionalists who buy a living tree. In the US people can buy half a tree making it easier to display in tight spaces! It is becoming increasingly common to substitute a tree for objects that resemble the shape of a tree. A decorated ladder for example, driftwood placed in the shape of a tree or twigs decorated with LEDs. The sky is the limit for those with imagination. Ornaments could be hung on the wall in the shape of a tree, a carefully placed blackboard could have a tree chalked on with ornaments added for extra sparkle. There’s plenty of inspiration on the web and some wacky ideas like a tree made from garden tools or, slightly less wacky, a tree made with driftwood. Sea shells, succulents, garden twine, doilies, pine cones and balloons can all be used to create unique Christmas centerpieces. Suspending your tree from the ceiling is a way of keeping temptation away from cats and dogs and is sure to be the most innovative idea in your street this year!

1 litre chilled sparkling mineral water 1 litre chilled ginger ale 750ml chilled white grape juice Combine all ingredients in a large jug. Serve in champagne flutes.

1 cup ice 3/4 cup pineapple juice 1/4 cup coconut milk 1/4 cup coconut cream 1 tablespoon white sugar or honey Pineapple slices for garnish
Method Blend all ingredients in an electric blender until smooth. Garnish with fresh pineapple slices.
Place all of the ingredients except the sparkling mineral water and the mint in the blender and pulse a few times until combined. Transfer to a punch bowl. Chop the mint roughly and add to the mix. Chill in the fridge for at least a few hours to allow the flavours to infuse. Just before serving, add in the mineral water and give it a good stir. Serve over ice cubes and garnish with fresh mint leaves.

Q&A with Grace Burrell, Head Girl of Sacred Heart College 2018 Where do you live? I live in Onekawa Napier. What have been the highlights of your year? My highlights of this year include being a part of the College netball team and going to the Lower North Island Tournament as well as being a recipient of the Spirit of Napier Lions Club Young Achievers Award.
We continue our day having a games full afternoon with games such as cricket and ultimate Frisbee. Then we wind down later in the night with Scattergories and other less physically demanding games- all of which get highly competitive and never fail to put everyone in hysterical fits of laughter.
What are your favourite Christmas song, carol, movie and food? Favourite Christmas song: any from the Michael Buble Christmas album Carol: Jingle Bells Movie: Home Alone Favourite Christmas food: Glazed ham.
What do you plan to study in the future and where? I am going to be completing Junior Officer Training course for the Royal New Zealand Navy in Devonport next year. Where will you be spending Christmas? I will be spending Christmas at home – Napier with my extended family: grandparents, cousins, uncles and aunties. What do you enjoy most about Christmas? Definitely the copious amounts of food and being with my family. Do you have any special family traditions? We start off Christmas morning by waking up really, really early (6am) to the sound of excited young children. We all then head of to mass-eventually after half an hour of everyone ‘getting their shoes on.’

he National Aquarium of New Zealand is open every day of the year – except Christmas Day.
Even though the Aquarium is closed to the public, we ensure our animals still have some company. Christmas Day is a special day that we want our team to enjoy with their families too, so we do limit the time that they have to work on this day. Two to three people come down once or twice during the day to feed the penguins, sharks and our other animals. Our Kiwis also need checking and feeding. We also need to check all our systems, water temperatures and pumps are running smoothly. It is quite a different atmosphere on Christmas Day and a special time for the keepers, having one-on-one moments with our animals. We don’t really give any special treats out though, as we’ve got to be conscious of their dietary requirements. Leading up to Christmas the team are kept busy preparing for the peak season. Boxing Day is always busy, there are a lot of visitors to the region that have come to spend Christmas with their families so they often include a visit to us to make the most of their time here. This year, we’ll be taking part in the Napier Christmas Parade, on 2 December, so our team are pretty excited to be getting our float ready for this, as well as planning different activities for our Friends of Aquarium Members. So it’s a busy, busy time leading up to Christmas and we just love getting into the spirit of it and seeing so many visitors enjoying our aquarium.

Napier City Christmas Parade Sunday 2 December 2018 1pm-3.30pm The Napier City Christmas Parade will kick off at 1pm leaving from Clive Square, then travelling down Tennyson Street, turning right into Hastings Street and then heading down Emerson Street and finishing at Memorial Square.

Sunday 2 December, 8pm The weeks leading up to Christmas are the Advent season, a time of preparation before Christmas. At this service the Cathedral Choir sings by candlelight Advent (not Christmas!) carols and we hear readings from the bible.

Sunday 23 December, 7pm This service, ‘A festival of nine lessons and carols’, tells the Christmas story with word and song, and music from the Cathedral choir.

Monday 24 December, 6.30pm A popular service, especially for families with young children, which tells the story of Christmas with music and carols. Nativity costumes will be available for the children take their photos by the tree.
