I
ndustry trials and research over the years has informed farmers about the value of investing in good sire genetics and how this can translate to increased profits. Using sire selection tools such as estimated breed values (EBV’s) and breed specific selection indexes can increase a farmers ability to maximise on-farm returns, especially when used to find the best genetics available to the industry. The recent open day at Waikite Station proudly showcased their industry leading terminal genetics including FocusPrime™, Texel and Highlander® rams and its Simmental bulls. The focus of the day was allowing farmers and industry to view the breeding stock and hear first-hand from stud manager Peter Strawbridge what makes Waikite such a successful breeding ground for top terminal sires across multiple species and breeds.
Peter Strawbridge is passionate about the breeding programme which works in partnership with genetics company Focus Genetics, producing the best terminal sires for P āmu Farms of New Zealand and industry. Careful attention is given to using best practise on-farm performance recording of stud animals and scientific tools which measure what the human eye cannot see. The use of technologies
such as DNA sampling for genomics and ultrasound scanning as a means of ranking animals for heritable traits results in earlier, more informed breeding decisions, which ultimately increases the rate of genetic gain. While Waikite and Focus Genetics use objective measurement and scientific tools to support the breeding decisions, you cannot dispel that fact that well grown terminal rams and bulls also look impressive. Peter speaks passionately about the sires he breeds and finds the sharing of this passion with clients one of the most rewarding parts of the job. “Just look at the meat on that bull” is a quote Peter often uses when showing Simmental sires to visitors and while performance data forms a pivotable part of Waikites’ breeding decisions, a bull still needs to look the part in the paddock. “Docility, sound structure and well fleshed bulls are what industry seek” says Peter.

First Sale for
OKAKA ANGUS
O
kaka is a new Angus stud with their first sale this year. Sixteen bulls will be up for sale, grown on a steep hill country property in Taihape. Paul and Susannah Revell established Okaka Angus based on Paul’s over enthusiasm for their commercial breeding herd and the feeling they could add extra to the process. Their main goal is to produce Angus bulls that give a consistent line of moderate meaty progeny for steep hill country farmers and to produce cattle that can cope with any environment they are put in. The family is active in their local community with Paul leading the organization of the local horse sports and wife Susannah is teaching principal at Papanui Junction School where youngest daughter Sally, attends. Son William is in his final year at Huntley School and Thomas is in year 10 at Palmerston North Boys High.
Currently the herd is 80 registered cows, with half pure New Zealand genetics. The base of the Okaka Stud has been formed with the purchase of females from the Waitawheta Stud of Alistair and Pat Sharpe, the Meadowslea Stud of David Giddings and Red Oak Stud of Richard Orr. Stud bulls are primarily selected from
New Zealand studs that are farming in a similar way. Paul likes to see a group of bulls from a similar bloodline producing the desired type before he buys a bull.
The property, at Papanui Junction, Taihape is a total 565ha (540ha effective) and consists of 350ha steep hill country, 80ha easy hill and about 120ha cultivatable country - a nice breeding balance. Other stock on Okaka are a herd of commercial cows, and 2500 Romney ewes (including two-tooths). The farm has historically been summer safe with average rainfall of about 1100mm but Paul has noticed the weather patterns becoming more variable and dryer. The stock selection process is to use EBVs and DNA data in conjunction with eye appraisal and the Falkirk system targeting a well-balanced animal. The aim is to produce consistency through the mob, a uniform type of animal, which means less waste. Ian Walsh’s Falkirk Index System is a holistic method of stock selection that determines the genetic value and commercial worth of an animal. During winter the stud cows are put to work cleaning up the hill country pasture, following the ewes before coming down

to easier country for calving, and easier tagging and weighing. The cows are on the steep hills most of the time, no different to the commercial cows so calves spend their first part of life on steep hills. Bulls will be sold via the online Helmsmen Yourbid auction system created by the Giddings family. This is a very efficient system where stock agents can still be well rewarded. It will climax on 11 June from 12.30pm at Papanui Junction with bulls available to see like a normal sale. Buyers will be able to attend this and bid at the sale site. Mahuta Herefords focus on
HEIFER MATING
B
reeding bulls for heifer mating has long been a passion for John Allen of Mahuta Herefords. John with his wife Mary run a cow herd of around 200 at Glen Murray in the Northern Waikato. The farm area totals 400ha and consists of a mixture of contours and soil types. The hills get very wet in the winter and wintering big mobs of cows is a challenge. They also run a flock of breeding ewes breeding towards Wiltshires from a Romney base. All stock, except the sale bulls, are fed at commercial levels of feeding.
John was one of the first breeders to have yearling bull sale so breeding bulls for heifers was a logical step and a loyal clientele has rewarded him over the years. There are two sections of the herd: one breeds bulls for dairy heifers and the other for beef heifers and cows. “For the dairy heifers we aim for a calving ease EBV in the top 1% and for beef heifers the top 15%,” John says. Structure and conformation are very important too especially rein of neck and smooth shoulders. All heifers are mated as yearlings and have to rear a calf each year to stay in the herd. “We place great emphasis on ease of calving for the herd. Assisting heifers costs a lot in terms of labour time, lost
performance for the heifer, and less live calves on the ground. We concentrate on what we think are the most profitable traits and these are calving ease on fertility.” Comparison with breed averages show that we are way above average for calving ease EBV’s and days to calving (a measure of female fertility). The type of animal is also important. “We like animals which have natural thickness through the loin as we believe that this correlates with meatiness and also finishing ability.”

The couple believe that Herefords are a breed to boost profits. Good temperament saves money and time and the Hereford is a natural cross breeding animal increasing profitability through hybrid vigour. The Hereford cow has been shown to be a leader in feed efficiency and this can be inherited by her progeny. Over the years artificial breeding has been used to gain access to top bulls. More recently sires which have had an impact on the herd include Koanui Spy 8371, Limehills Starter 131078, and Limehills Gallant 160033. Starter is an outstanding bull combining calving ease with growth, meat, fertility, and IMF in addition to great temperament and mobility. This year they will have bulls for sale by Starter, Gallant and Yavenvale Knoockout

N312. He is an Australian bull who is very attractive visually and has a great balance of figures including being close to the top of the breed for IMF EBV. We are looking to boost IMF in our herd as it contributes

Kaharau invests in
NEW GENETICS
P
enny and Pete Hoogerbrug run the Kaharau Angus stud at Rimunui Station, just a ten-minute drive from Gisborne city.
At this year’s sale they are looking to sell up to 70 bulls. It’s a busy day with the bulls all washed and presented to an audience of up to 350 people. It’s a real country day out with a bar, music, braziers and Angus burgers on offer. Sale days are a trove of memories for Penny, who grew up in the cattle business at Ruatoria, where her parents Colin and Jackie founded the Kaharau Angus stud. Her father held his first on-farm auction at Ruatoria in 1973. Penny uses the original auction box from Ruatoria as the bar in their bull sale complex at Rimunui Station where the first sale was held in 2015. Kaharau and its clients continue to enjoy market place success with accolades and awards at carcass grading, taste and tenderness competitions. Penny and Pete achieved a silver medal in the Steak of Origin competition in 2018 with their Kaharau heifer. Topping cattle fairs, works grading and top dollars is common for Kaharau clients. There are few herds in New Zealand that Kaharau has not influenced over the years.
Kaharau clients are mainly commercial farmers who farm on steep hill country. Penny says they keep coming back to buy Kaharau cattle for their structure, type and performance. “Our clients sell their cattle at various age grades throughout the supply chain and their finished cattle grade well at the meat processing companies. The cattle we are breeding in this hill country environment must suit and reflect the needs of our clients, as well as the demands of the market and end consumers.” Penny is excited about the future, crossing their new Sires over the Kaharau cows, developing their donor programme and getting the new progeny on the ground whilst maintaining their ongoing breeding philosophy of strong, balanced, structurally sound hill country cattle for their clients. Penny is as passionate about breeding Angus cattle as Colin was and with the support of Pete and Nick and the Kaharau team, is continuing to build upon the Kaharau legacy into the future.

he Hains are going back to the future in 2021 after COVID-19 threw a spanner in the works for their bull sale in 2020.
2020 saw Hain Herefords sell their line-up of bulls privately last year with one buyer coming through the farm gate at a time. This year, after solid feedback from their customers, they will be bringing back the on-farm auction. On June 8 the Hains will welcome buyers on farm for the auction of 28 Hereford bulls. The line-up of hill country bulls will be fertility tested and backed by the Eastland Herefords three year structural guarantee. “We will be offering bulls with great temperament, solid constitution and robust EBV’s,” Sam says.

Sam and Gemma enjoy involving their children in farming and the stud aspect of the business. Both children are pleased that the auction is returning.
For Sam and Gemma selling the bulls privately last year enabled them to spend valuable time with each customer. “The interaction with our customers, one on one, being able to listen to what they wanted in a bull and then see the choices they made, was really positive. Our customers supported us during the turbulent COVID time with their custom, so it was nice to be able to sit down and chew the fat without the time pressure that the auction brings.” Sam is upbeat about the sheep and beef industry, both in the short and long term. There has been an increased demand for red meat as we move into the post-COVID world. Vaccination rates are ramping up and because of this large chunks of the service industry are re-opening, thus increasing the restaurant demand for red meat. Now, with the roll out of a number of vaccines throughout the world, and a general easing of restrictions, restaurants are seeing a huge drive in pent up demand for both prime beef and lamb. The farm gate prices are now starting to reflect this global situation and the schedule prices are climbing. “The lamb contracts in August are some of the highest we have ever seen.”
STUD BULL CATALOGUE 2021 Farmers on the East Coast are becoming more resilient through necessity. The average season seems to be an ideal in our minds and while farmers are well known for grumbling about the weather, presently we have pretty good cause. Throughout the whole of the East Coast, total rainfalls have been down year on year to the point where we are going to have to start asking if this is the new normal or if long term rainfalls will return to what they were. The Hains say that one of their biggest focuses on their farm is water quality and reliability. “We have realised that flowing water from creeks is becoming less dependable and regulations are strengthening. Therefore, investment in water storage is a key to our farming future”. Government regulations restricting stock access to waterways has initiated the Hains to invest in a water storage facility high up on their station, giving them the ability to reticulate water to areas of
the farm that have never had trough water before. They do, however, acknowledge that dams will continue to be the backbone of their farm water system due to their reliability but the troughs provide high quality water, more effective grazing and protect our precious waterways.

When it comes to their beef operation, Sam says the biggest driver of profit in a cow calf herd is kilograms of beef weaned per cow wintered. Put simply, live calves on the ground and fast growth rates drive profit and everything else is a bonus. A focus on fertility equates to sound functional cattle, cows and heifers getting in calf and problem free calving. Each of these aspects are connected - functional cattle calve more easily and cattle that have no trouble calving get back in calf more readily. Two year old heifer calving has been a major focus at Waikura Station and while there is no magic bullet incremental gains in this area are made every year

The McFadzean MEAT MAKER DIFFERENCE
T
he Wairarapa based McFadzean family name is well recognised as a leading producer of weaner cattle. In recent years, the family has broadened its focus and has started selling their own line of yearling bulls - The McFadzean Meat makers. We sat down with Johnie McFadzean to find out how it is all going.

The two top performing breeds were Simmental and Angus, particularly in relation to New Zealand’s grass fed conditions. Armed with that information John purchased three Simmental bulls and started a long journey of cross breeding.
“We have been selling bulls to a few people directly for about a decade. Over time customers returned and more people started approaching us. It was clear that there was a gap in a market for a moderately priced hybrid bull to satisfy both the store and prime market whilst producing maternally strong and efficient cows. Three years ago we had our first official public sale,” says Johnie McFadzean.
At times John trialled other breeds in his herd but nothing compared with AngusSimmental cross and their offspring. Johnie McFadzean remarked that “Angus cattle are generally more medium-framed and hardy. Simmentals give a stronger volume and muscle definition, both are strong maternally thus making the combination extremely hard to beat.”
Investing in top genetics and the right breeds has always been a priority for the McFadzean’s. Over 40 years ago Johnie’s father John looked at cattle performance

has been on having a sustainable and high performing cow herd. We expect our cows to wean a calf that is in excess of 50% of her body weight for heifers calf and in excess of 58% for a bull calf year on year regardless of the season. Replacements heifer are selected under a strict criteria considering type,
constitution, temperament and durability not colour or pedigree.” This commercially focused selection criteria is mirrored in their stud bull operation. “Our focus is on performance, not pedigree. We have a very harsh selection criteria for bulls. Only circa 5% of our bull

improvement and performance. In their bull sale catalogue they not only detail key data on the bulls but they showcase the mother. “We felt it was imperative that clients get to view the cow as well as the bulls. The mother’s ability to withstand varied seasonal and pastoral conditions whilst raring a top calf is a key ingredient to strengthen a herds performance.”

rom what we have seen, bull weights and condition may be back on usual because of the season. This is NOT a reflection of inferior genetics or poor breeding and may not be an accurate example of how your bull will perform for you going forward. Store weights have been about bang on for where bulls should be which will help them stay sound and mobile for longer. Bull 12-month insurance policies will expire soon so it’s time to give your bulls a check-up. We need to make sure they didn’t give each other any permanent injuries from when you boxed them up after mating. You may want to also consider vaccination boosters for ‘lepto’ and clostridial protection now with BVD boosters given 4-weeks before mating. Unfortunately, our region is looking green but is still very dry and many farmer comments are that the water table is lower than last autumn in many parts of the Bay. This could be affecting stock conditions and pregnancies.
Foetal aging to identify “late” calving cows has many benefits 1. The “late” cows are the least profitable. Calves are lighter at weaning and the cow needs to be in good order to get back in calf and not be a “late” again. 2. “Late” cows are the first candidates that can be sold if need be. This mob can also be shut down for longer over winter than the early calving cows, if cow conditions are satisfactory. Although heifers look to be in quite good conditions at the moment, heifer pregnancy test results have been back 5-10% in our area with more ‘lates’ recorded than in a normal year. Our prediction is that the 2020 Autumn drought meant heifers were lighter on weaning and this resulted in them playing catch up to reach target mating weights in the spring. Cow pregnancy test results were pretty disappointing in early season jobs, but we are now starting to see results more on par with a normal season.

TIPS FOR SETTLING NEW BULLS ON FARM
S
ettling new bulls on farm isn’t always easy. Our experience shows that, among other things, bulls can often injure themselves while they get used to their new w s surroundings.
To T give you the best advice on getting the m most out of your new purchase, we’ve a asked Tararua Breeding Centre to share s some tips on settling new bulls on farm: • It’s a good idea to allow plenty of time for your bull to get used to his new home, especially when unloading and shifting paddocks. • A bull mound in the paddock will give your bull somewhere he can safely release some of his testosterone fuelled aggression—in fact there’s some evidence to suggest that this increases breeding capability. A bull mound also lessens the chances of him digging holes. • If your bull is in a paddock with no solid trees or structures, installing a fence strainer with a tyre on a chain could become a good interactive toy for him. This can also reduce the likelihood of electric fences becoming a plaything. • If you’re keeping several bulls together, then a donkey, goat, or an assertive horse is a good paddock companion as they will often break up fights between bulls.
Protecting your investment
We understand that buying a bull is a significant investment. We also know that sometimes things don’t quite go to plan. Tararua Breeding Centre recommends using bulls of a similar size or larger than the heifer to help reduce the potential for pelvis and/or pizzle injuries. For FMG, around 40% of bull claims are related to injuries in the paddock and commonly relate to the bull’s back, hip, pelvis or hock. These injuries often lead to euthanasia, so it’s important to regularly check for lameness or injuries during mating, in addition to your usual pre-sale checks. 1 in 20 claims are due to bulls fighting. Keeping mating groups at least a paddock apart and/or separated by electrified fencing can also reduce the chance of fence to fence liaisons. The rule of thumb is usually 20-25 heifers per yearling bull; 30-40 cows/heifers per 2 year old bull; and 50-60 cows for a mature sire. Around 30% of bull claims involved injury to the bull’s pizzle. This leads to disruption due to vet appointments or getting a replacement bull. Even if he
worked well last year, always retest and check at the beginning of each season*.

I
t’s that time of year again where the registered Angus cattle studs of the Hawke’s Bay region, and indeed all around the country, become single-mindedly focused on marketing their efforts for the previous three years. That is, the calves born in 2019, as a result of mating decisions made in 2018, having being nurtured and grown out into the attractive rising two year old breeding bulls that will be for sale in the region from the 14 of June onwards.
The last three years have not been without their challenges but in particular the last 18 months have been very difficult for the entire country. While farming was deemed to be an essential industry, disruptions to the supply chain and a severe drought made life as difficult, if not more, for the average Hawke’s Bay farmer, as for all New Zealanders. Getting hungry mouths off drought stricken pastures became very necessary, but also very difficult. The fact that so many bulls are being presented in such good condition is a testament to the skills and knowledge of the stud farmers involved as most of these bulls were weaned as calves onto bare pastures as the dry continued well into winter 2020.
The Hawke’s Bay Angus breeders will have their bulls available for viewing on the annual bull walk – this year to be held on the 27 and 28 of May – the studs from Hastings North will be open on the 27 and those, further south will be open on the Friday the 28. The third week in June will see a number of registered studs selling their bulls via auction or private treaty. Most holding auctions will also be utilizing online selling options in conjunction with the auctioneer controlling the bidding. Online platforms which were in their infancy up until Covid 19 are now fully established and a very good addition to the traditional gala like atmosphere of a robust on farm auction. While the challenges facing farming are ongoing, the Angus breed appears to be in a prominent position in the minds of cattlemen and consumers alike. The sale yards can often be a sea of black whether these be weaners, yearlings or cows. As a breed going forward the emphasis must be not only the quality of Angus beef but the historic integrity, structure, longevity, fertility and do-ability of the good old Angus cow. These are the qualities that make cattlemen money.

ith the landscape of farming constantly evolving, farmers are often faced with the question; “how can we make operations more productive and profitable on the farm?” This question inspired designers and owners, Wayne and Lynley Coffey, to develop not only the Combi Clamp Sheep Handler, but also a line of heavy-duty Cattle Crushes, for the purpose of making on farm practices more friendly and efficient for themselves and their stock.
Combi Clamp Cattle Crushes are extremely user friendly and durable to suit New Zealand Beef Cattle, and even our most basic crush comes loaded with features that enhance both safety and access to the animal. All Cattle Crushes come standard with split and top access gates on both sides so that the operator has full access to the animal as well as drafting options, anti-backing ratchets to stop the animal from backing up and a heavy-duty sliding gate that is self-locking behind each animal. We have both vet and vetless models, also with a parallel squeeze option to stop smaller animals from turning around. A significant amount of effort has also been put into reducing rattling noises
made by these crushes making for more pleasant work that decreases stress levels in the yards and increases stock flow through the crush. Our customers often attest to this, saying that this product is clearly made by a farmer who understands stock. As a result, you have a product that is easy and safe for operator and stock alike. While all of these features create a great crush, you only use them if you have faith in the head bail, and this head bail is just magic. Especially when working by yourself, you can’t beat the automatic catch of this bail. The animal locks itself in place by putting their head through the gap with the thick of their neck picking up the doors and locking them in place. They are now caught, no stress on the operator. The second piece of magic happens when the animal exits the crush. Once the animal is clear of the doors, they automatically come back through to their set position ready for the next animal to be caught. This means that the operator can be right back at the sliding gate ready to let the next animal in who is keen to follow their mate. A near indestructible

rustration with existing ballcocks led Geoff Furborough to a whole new design concept.
Geoff, a Hawera-based armature winder, works with electric motors but his interests in “engineering, knives and guns” drove his development of a simple stainless steel ballcock. He started work on it about eight years ago after a farming friend with an engineering workshop said he needed a better ballcock than the existing designs which leaked and wasted water.
“I asked him to make me one. It was rubbish but we were able to refine his design but the concept remained the same.” And so SIS Ballcocks was born. They’re made by Specialist Stainless Steel Products Ltd in Hawera from 316 marinegrade stainless steel. SIS stands for Simple, Indestructible and Stainless steel. “We made five, then we made 10, then we made 50 and now we do runs of thousands, buying the 35mm stainless steel a tonne at a time.”
Geoff says he chose stainless steel because “all the other materials are a failure.” “Those materials are chosen on the basis of cost and as a result the relationship between the critical components is never stable and they leak.” The SIS ballcock has no internal parts, making them both leakproof and near indestructible. “Our choice of stainless steel is not based on price but on the best material to do the job.” The ballcock comes in three models, a standard arm, short-arm and no-arm models to fit any kind of trough. Their no-leak secret is a small steel shaft with a silicon wrap which covers the aperture and can withstand high water pressure. Other types of ballcocks have a sliding plunger or stopper that can be jammed by foreign objects such as grass through the water supply or blown into the trough, algal growth, or mineral deposits. These ballcocks could then be jammed open or closed, resulting in a water

supply being pumped out or no water for stock. The SIS Ballcock has the water running over the sealing face -the silicon seal, so it is being cleaned by the water flowing over it. It won’t jam open or closed. “They are so simple anyone can understand them. “We have never had one returned or thrown out,” he says. Hawera is in the heart of Taranaki dairy country and the ballcocks easily withstand the attentions of curious cattle. Last year’s Covid-19 lockdown made life difficult for the business but the staff were able to form a work bubble and keep producing. Along with their essential work on electric motors

“We sold plenty during lockdown.” Geoff found lockdown difficult for another reason. It stopped him getting out and hunting or making his twoyearly trip to the UK for target shooting and hunting. He and his Labrador are looking forward to this year’s duck shooting since last year’s was cancelled. W
hat’s the Beef? Roadshow, a collaboration between PGG Wrightson and AngusPure, was designed to demonstrate to commercial beef farmers how they can produce quality beef that meets the demand of contemporary consumers. The team of expert speakers included Dr Amy Hoogenboom, Genetics Area Manager of Zoetis, Jamie Gordon Director, Macfarlane Rural Business, formerly of ANZCO and Five Star Beef, and Murray Behrent General Manager Livestock for the Alliance Group based in Christchurch. Several pit masters, or chefs, also presented their views on what they and consumers are demanding. The Roadshow toured the South Island in mid-March and Whangerei, Te Kuiti, Taupo, Feilding, Pahiatua and Wairoa in Mid-April. The events focused on the importance of Angus beef’s eating qualities, what processors look for in a carcass, how nutrition management can benefit programmes, and the important role that high performance genetics play in the equation.

Tim Brittain, Chairman of AngusPure Ltd, a past president and Life member of Angus NZ and owner of Storth Oaks Angus in Otorohanga attended a number of North Island presentations and says feedback from the participants has been very positive. There could be further roadshows in the future. Participants heard from Dr Hoogenboom how to use genetics and the genetic tools available including genomics to breed profitable and efficient animals. Jamie Gordon - Director, Macfarlane Rural Business, talked about what top quality beef is and how a farmer can influence it, especially genetics. Secondly he addressed feed and nutrition to grow the animal right through its lifetime, and thirdly cattle handling to ensure they’re docile and go to the plant unstressed and not have the meat pH affected.

STUD BULL CATALOGUE 2021 “The first thing farmers can do is control and minimise high pH once the animal is killed, and the second thing was to improve marbling. Marbling (IMF) is the most trait for a succulent, juicy, tender, tasty experience for the consumer,” Tim says. Research worldwide confirms that people want marbling and it’s a “game changer.” “Marbling has the good omega fats. When you cook it you need that fat: it melts away when you cook it and it gives it that taste, flavour and succulence.” “In the past New Zealand farmers have only been rewarded by the weight of the animal without any quality attributed to it. What we are starting to see which is really exciting is that some of the programmes like Silver Fern Farms, Alliance and AngusPure are paying more for quality meat and marbling. Tim gives an example of a client delivering a unit load (40) of steers into the Alliance Handpicked programme that returned the farmer an extra $10,000. They’re offering 1$ a kilo more for animals that score 4+ or 80c a kilo if they meet marble score 2 or over on the AusMeat scale. “So there’s a real incentive for farmers to put marbling, or IMF, into their bull selection criteria,” he says. There’s an EBV called IMF which is the indicator for marbling so farmers can use that IMF EBV with confidence knowing that they’re going to lift the end result with their steer and heifers they process in terms of marbling.

IMF at Storth Oaks is detected by ultrasound scanning and the results are fed into BreedPlan for the EBVs. “Now we have genomics so the animals DNA is also analysed for that trait, along with some others and that’s incorporated in single analysis to provide the EBV. It’s very accurate.” “Marbling is a very heritable trait so a commercial farmer can make good progress if they add it to their selection criteria. Storth Oaks are offering 96 bulls this year and our average marble score is a full one score above breed average. We have one of the highest marbling herds in the country and the bulls on offer are +2.9 for IMF. (Average of the 96 bulls). The Angus breed average is 1.8. Rewarding for quality isn’t new and has been used for at least a decade in Australia and the US. So why has New Zealand been so slow? “Well for a long time meat plants were more focussed probably more on lamb, a lot were geared up to manufacturing beef through hot boning…. but now they’ve seen what B+L have done through their Taste Pure Nature promotions in North America and China. Consumers are moving to eating less meat but when they do they want to eat meat they want best quality meat.” “Also internationally there’s a renewed, keen interest in grass fed production of beef. There’s a strong market internationally for high quality beef, that has the criteria the consumer wants-marbling, reared and finished on grass and that’s where Taste Pure Nature campaign has focused.

Rub generously with a simple blend of coarse black pepper and kosher salt. I use 2 parts pepper to 1 part salt. Place the well-seasoned AngusPure cheeks in a smoker at 275F / 135C, and cook for approximately 5 hours until you reach an internal temperature of 210F / 99C. At this temperature, they can be either pulled or sliced. And that, my friends, is all there is to it! How to cook a
STEAK WITH REVERSE SEAR METHOD
H
ailed as the ultimate way to cook a perfect medium-rare steak every time, it’s easy to learn how to cook the Reverse Sear method, and rock steakhouse quality cooking at home. Traditionally, the restaurant method of cooking steak involved searing over incredibly high heat, then transferring to an oven to finish on a more gentle heat until done. The reverse sear method pretty much just flips the order, and involves first cooking the meat on a very low heat before searing the outside on a superhot surface. The basic idea is that with reverse sear, you have greater control over the Maillard Reaction (that magical process that turns the cooked edges of meats yummy and brown), because you’re making sure the high heat only comes into play right at the end and that the steak inside will be perfect. So, instead of an internal ring of different ‘doneness’ your steak will be perfectly medium all the way through, save for the very outside.
The Reverse Sear Method Ingredients
• One behemothly thick AngusPure steak. • The steak is going to need to be at least 1 inch thick, if not more. The thicker, the better. • Salt & pepper to taste

Instructions • Preheat oven to 135C/275F • Place well-seasoned steaks on a rack over a baking tray (cover the tray with foil to save yourself a clean up) • Put in oven and cook till an internal temp of 51-57C / 125-135F depending on your preference of ‘doneness’. Usually takes around 45-60 minutes. • Remove when at desired temperature and rest for 10-15 minutes under foil. • Preheat a skillet or heavy based pan to a screaming hot temperature. • Sear steaks for one minute each side. • Serve immediately. Internal Temperature Guide: You will definitely need a meat thermometer to do this correctly. Rare: 125F/51C - Medium Rare: 130F/54C - Medium: 140F/60C - Well done: 160F/71C

STUD BULL CATALOGUE 2021 Glanworth Angus was established by Pat Fouhy in 1952 and now is owned by his grandson Shaun and wife Fiona. Glanworth Farm has been owned by the Fouhy’s since 1892, when Thomas Fouhy bought two ballots and began clearing the standing bush. Pinebank Angus was founded in 1919 by the late Henry Falloon and Willie is the third generation of the Falloon family to administer it. Taumaru was originally bought by Willie’s parents who farmed there for 32 years. Together, Waigroup has always had a strong focus on cow performance. They aim to breed a moderate-framed, fertile cow with soundness and constitution that will calve unassisted and wean an above average calf every year under commercial conditions. In other words, a cow that will make farmers more money. Waigroup Angus has 500 registered cows and has positioned itself at the forefront of Angus breeding in New Zealand. Waigroup pride themselves on producing bulls through a very commercial system.
“We strongly believe the animals that are purchased on sale day, should represent what farmers see once the animal gets to their property and starts work.” Waigroup bulls must increase growth on the original amount of grass. No concentrates are fed. Cows are expected to work hard, grooming pasture to optimise sheep production. Our successful commercial approach is highlighted by Waigroup winning the Tararua Farm Business of the Year in 1994 by Joe and Lea, and again this year by Shaun and Fiona. Willie and Angela won Wairarapa Farm Business of the Year in 2017. Judges highlighted above average sheep performance in both businesses, driven by cattle “doing their job”.
Going forward, they are taking a very measured and practical approach to breeding - trying to blend old fashioned stockmanship with performance data. This is to ensure the product they sell to commercial farmers lasts and performs as expected. Waigroup clients throughout New Zealand are achieving very good performance with varying scale cow herds. This is through increased calving ease and fertility with early finishing of progeny and longevity in the bulls.

Don’t work on an empty tank.
“Sometimes when we are busy on the farm and pressed for time, it is easy to sacrifice regular meals. But running on an empty tank is counter- productive. For a physically demanding job like farming, try and eat three meals and two lots of snacks a day. For early morning milkers, great pre-breakfast snack options include smoothies, eggs, fruit, cereal, porridge, grainy toast with peanut butter. If you’re really busy, prepare snacks the night before.”

Stay hydrated during the day
“Hot weather, physical exercise and not drinking enough can all lead to dehydration. Being dehydrated affects physical performance, makes it harder to make decisions and concentrate and can lead to constipation. Prioritise drinking water by keeping water bottles handy in the dairy shed, the Ute or on the quad. Take a drink bottle out with you on the farm and take regular slurps. Just like you stop for your dogs to drink on big jobs, remember to provide plenty of fresh water for you and your staff.”
Snack between meals to maintain energy levels
“When you are doing physical work throughout the day regular snacks are important to top up the fuel in your body and maintain your energy levels. Keep snacks in the glovebox of your ute, take a backpack if you are heading out on the farm or leave food at strategic places on the farm, so you don’t get caught short!”
Keep it social
“Food not only provides fuel for the body, it also gives us an opportunity to connect, share and relax with other people. If you’re ‘under the pump’, a quick snack or water break can also provide much-needed recovery time. And if you work/live alone for long periods having a regular meal catch-up with family or friends will help you avoid feeling isolated.”
Kane Brisco, a sharemilker at Ohangai near Hawera, recently shared what he does to fuel up: “I eat nutrient-dense food. I eat a lot of vegies and I’m working hard all day so I get plenty of carbohydrates and protein into me as well, so my muscles have the energy to keep going and my mind’s clear. I also drink plenty of water. It’s simple stuff. You’ve always got to remember that farming’s a marathon not a sprint.”
Champion shearer Rowland Smith also caught up with Farmstrong recently at the NZ Shears in Te Kuiti. “Fuelling the body properly is one of the most important things you can do to look after yourself as a shearer. You need good nutrition to be able to get up and do it again every day. We can all grab a pie and a Coke and do it for one day, but we want to back up every day, so your nutrition and wellbeing really has to become number one.”

I
t was 1974 when Tim and Jenny Foss started using South Devon sires in a crossbreeding programme over Angus cows. It worked so well it was decided to move into breeding pedigree South Devons.

The Ipurua South Devon Stud was established in the late 70’s with the purchase of a number of grade cows. It was developed into a predominantly English purebred herd through the addition of 12 cows in 1983 and 10 in 1994 from Woodah (J Holt) Blenheim. The original commercial component of the herd comprised of cows involved in a grade up programme originating from an Angus base in the mid 70’s.
The 200 cow herd continues to be developed on our hill country property under strictly commercial conditions, they are part of a 5 300 su (10 su/ha) breeding operation (55% cattle, 45% sheep). The heifer component of the herd are calved as 2yr olds to South Devon sires. The herd calves October/ early November to fit in with the overall commercial management of our operation. Whilst this decision to calve late obviously impacts on the animals age, and hence size at bull sale time, it has absolutely no bearing on the individuals genetic make up.

Our commercial herd was inspected in 2012 with the greater majority being accepted to the South Devon Register. Performance data is now being added for the previously unregistered animals. This includes both weights for growth rate analysis and body scan data for carcass trait analysis. This carcass data is crucial if we wish to balance the growth rate
Strong selection emphasis has been given to soundness, longevity, quality fleshing and temperament. We recently had to farewell a R14yr old sire, he is a trait leader in B.W. and Milk and also has very good EMA and RBY figures. Polling is also playing an increasingly significant role in our breeding programme and although originally a horned breed, we are now
seeing a significant number of high quality polled animals within the South Devon breed. 60% of our 2020 born animals were polled. Unacceptable frustration levels brought on by the continuing incompetence across the marketing sector of the crossbred wool industry, has initiated a huge shift in the sheep sector of our business.
Five years ago we purchased 100 purebred Wiltshire ewes, which has grown to 400 ewes. Whilst wool was the early focus and driver of the change, I believe the greatest benefits will arise from the substantial decrease in workload and resulting increase in management flexibility. We welcome on farm inspection of all stock.
