Asia’s appetite for
beef remains strong
A
fter a stellar 2014-15 season, beef producers can expect an easing in prices reflecting changes in the international market. Beef + Lamb New Zealand’s Economic Service estimates cattle will be worth an average 461c/kg at the farm-gate, back 2.0 per cent on last season’s average price of 470c/kg. The US remains NZ’s largest beef market followed by China and, more recently, Taiwan. US beef imports are expected to ease by 6 per cent this season as domestic supplies increase. This will put downward pressure on prices. In the first half of the 2015-16 season, NZ beef and veal exports to the US were down 19 per cent in volume and 9 per cent in average value per tonne compared with the same period in 2014-15. Despite this decrease, the average value was still about $1000 per tonne- or 15 per cent- above the five-year average for the October to March period. Demand for beef in North Asia remains strong, as these countries rely
on imported beef to meet shortfalls in domestic production. In the first six months of the 2015-16 season, NZ beef and veal exports to China were up 75 per cent and the average value per tonne increased by 4 per cent on the previous season. B+LNZ Economic Service chief economist Andrew Burtt says NZ beef producers will benefit from the Free Trade Agreement with South Korea this year. Ratified last December, this agreement lowers the tariff rate from 40 per cent to 34.7 per cent and reduces the tariff differential between NZ and its main competitors in this market, Australia and the US. In 2014-15, Taiwan became NZ’s third largest beef market with beef exports into this market increasing steadily over the past three years. As domestic production only accounts for 5 per cent of consumption, Taiwan is heavily reliant on imported beef. The top three suppliers into this market are US, Australia and NZ.
Beef + Lamb NZ Economic Service chief economist Andrew Burtt says NZ beef producers will start seeing the benefits of Free Trade Agreements.
Beef exports out of Australia are expected to decline by about 12 per cent this year. This is on the back of three years of drought- induced culling, lower calving percentages and fewer cull cows due to herd rebuilding. In NZ, the number of cattle processed for the season to September 2016 is expected to be 2.41 million head, back 10 per cent on the record high 2014-15 season. This is
when record high international beef prices and low dairy prices led farmers to reduce their herds. For the 2015-16 season, export beef production is estimated to total 605,000 tonnes carcase weight, a 7.3 per cent fall on the 2014-15 season. Despite this, export beef production is expected to be close to 3 per cent above the fiveyear average.

STUD BULL CATALOGUE 2016
Turiroa’s females key to
breeding top class offspring
F
or over 70 years the Turiroa Angus Stud has aimed to breed top class females to breed top class bulls. Females that not only breed, and rebreed, but produce progeny that go out into the industry are more efficient and make farmers more money through superior weight gain, growth and carcass merit. Weaning heavier weaners is a combination of better genetics and better feeding. They go hand in hand, just one of these components and it will not work, says third generation stud master at Turiroa, Andrew Powdrell who runs the stud in conjunction with his parents Rick and Olivia and wife Tracey. With weaners making near record prices at the moment, up to $4 a kilo live weight the difference between weaning at 210kg and 250 kg per head, could be as high as $150 per weaner. This is significant especially if you multiply that by say a mob of 50 weaners then you getting close to the price of a good bull. Using bulls with slightly more growth doesn’t necessarily mean more rangy cattle either as growth is measured in weight/age eg at 200, 400, and 600 days of age. So we want size and weight in volume, not so much in height - in other
words depth rather than too much height. We try to breed deep bodied cattle with good spring of rib and natural constitution as these cattle handle pressure better. The tall, high flanked, flat ribbed cattle don’t handle hill country as well plus they tend to be later maturing. So having cattle finished before that second winter at good weights is more efficient.
We are constantly evaluating our females through eye appraisal and make sure we keep to a type that suits our clients’ needs and also meets our expectations, Andrew says. Breeding has become very complicated and it’s easy to lose track of your goals so we try to keep a simple but effective system based around a strong maternal background.
So how do we know it’s working? Our clients tell us. Although we are always tweaking things we have always stuck to the tried and proven methods we know work. Cattle prices right now are great to see, especially for the guys who have hung onto their cows as they are being very well rewarded. Long may it last.

StockX - the future of
livestock trading A
new nationally available livestock trading platform, Hawke’s Bay based, launched just six months ago, is providing farmers with a viable alternative to the traditional agency model ‘cutting out the middle men’ by providing the technology for farmers to trade livestock directly amongst themselves and only pay a 2.5% commission when a trade is completed. StockX Managing Director Jason Roebuck says the trading platform has gathered great support and already has over 1,000 registered users across all provinces in 6 months of operation. As a transactional service StockX has no comparative model in New Zealand. There are a number of online livestock sites but they are based on either of the agency based traditional auction model or those that keeps buyer and seller apart. StockX has specialist transactional tools and manages all payments and invoicing on behalf of the trading parties – all audited. This provides for a guarantee of payment and that the livestock delivered match the for sale listing. As livestock purchase decisions move away from subjective visual assessments to a more empirical process StockX will
be at the forefront providing an effective market to facilitate decision making and transactions at low cost for farmers. Livestock growth rates, genetic information, quality assurance programs and the like are all catered to. The team of five, all with strong farming backgrounds, are based in Havelock North in Hawke’s Bay. Currently additional Livestock Territory Managers are sought to join the team with three positions on offer – 2 in the South Island and one further role in the North to support Digby Philip. Recently a South Island Road show demonstrating the StockX system to farmers in Marlborough/Nelson, Canterbury, Otago and Southland enjoyed good turnout and registrations in support of the service. As farmers register and begin trading with StockX they are provided with as much personal support as necessary to have them become comfortable with using the system (although it’s not difficult). The system can be accessed from desktops, laptops and mobile phones. Therefore it’s possible to trade (buy or sell) while in the paddock or the yards. The system itself is designed by farmers for farmers with comprehensive listing criteria for all categories of livestock giving
farmers the correct information to make an informed purchase decisions. As a point of difference StockX is an open tender process and not an auction this provides the seller has the right to choose who buys and at what price. Sellers create listings of livestock for sale or wanted, build farm profiles relative to their farming operation and advertise to a national market all for free. The only fee is the 2.5% commission that represents a significant saving compared to stock agent fees that are generally broadly in the range
of 5% to 10%. If intending buyers want to inspect the stock in person they can do so although with a comprehensive listing specification bolstered with EID, Growth rate, EBV, heritability data, and so on, the figures tell a story in themselves enabling an insightful purchase choice to meet

STUD BULL CATALOGUE 2016 production outcomes. Being an effective exchange the livestock for sale section is complemented by a livestock wanted to buy section and a classified section. As feedback is received from a growing number of users the system is added to. Soon there will be a prime stock addition to the exchange where Farmers can trade direct with Meat Processors, Stud Bull search and comparison along with performance data is anticipated to be ready for the new selling season. StockX users recognise that access to empirical data allows them time to consider, compare and then choose. It’s a more considered approach than rushing off to buy stock at an auction. Through the use of video content a benefit is that buyers can take a step back, have a look at a range of stock on sale and compare rather than selecting from just one breeders stock. StockX is providing an open tender process that is completely transparent – that’s both new and exciting for farmers where high value transactions are catered to at low cost for the direct benefit of farmers. StockX represents an affordable alternative to the heavily entrenched stock agent/ auction model. Several notable local farmers can be seen on StockX’s Facebook page in video discussing the merits of their experience of using StockX. Jason and his colleagues will be at the Beef Expo to answer questions and to demonstrate the simplicity of the system.

108 years of

Looking along the property towards Cape Turnagain
Trait Leader’s Sons Sell
n a fine autumn day there can be few places more awe inspiring than the view from the summit of Moanaroa Station, a historic Angus stud located at Akitio. The narrow property offers views from Cape Turnagain in the north down to Castlepoint. The weather here, 75 kilometres from Dannevirke towards the east coast, can be extremely inclement, wet and windy. The property rises from sea level to 366 metres and while it offers magnificent views the prevailing wind that comes in straight from the sea is bitterly cold and powerful. Combined with an annual rainfall of 1016mm it’s a formidable landscape embracing just over 11 kilometres of coastline, on which to raise Angus cattle and Romney sheep. Moanaroa Farming Company has four shareholders comprising Dan Ramsden, his wife Barbara, and their two adult children Fiona and Hugh. As CEO Dan oversees the business, Fiona works at Ware Ware, home of the Romney stud and helps with marketing the Angus stud in addition to running an interior design and Coast Road backpackers business. Hugh the stock manager lives nearby with his wife Kate and their two children Annabel and Tom.
The long, thin coastal hill country (Moanaroa translates in Ma-ori as long sea) property comprises 1450 ha including 200 acres of meadow flats down by the Owahanga River mouth. Ware Ware Station (Forgotten), the additional family property nearby is 1250 ha, and there’s a 500 ha lamb and beef finishing block in Pongaroa. Moanaroa often experiences severe summer droughts so stock are moved to Pongaroa to be summer safe. Dan is keen on Angus as they have a quiet temperament, have fine marbling, a white rather than a yellow fat and they are perfectly suited to grazing the hills which makes them the ideal selection for Moanaroa. Moanaroa is a little off the beaten track and while it’s quiet in autumn and winter the summer months see the population swell as tourists come to enjoy the camping, the rugged coast and fishing. Sadly the 120-year-old local primary school, with its fabulous views of the driftwood strewn beach, sits empty having closed early in 2014 due to lack of pupils. The stud has a fascinating and long history. The station was originally part of a block of land bought by Sir Donald Maclean in 1870s from local Ma-ori. Scotsman James Armstrong

STUD BULL CATALOGUE 2016 bought it a few years later. By 1881 the property carried 64,000 sheep, 2365 cattle and 165 horses. By 1886 Mairainanga, as it was known, was under the care of Sir John Roberts and Jack Handyside and was one of a very small number of Angus studs in the country. The stud was founded on bloodlines imported by Sir John as the nucleus of the country’s first Angus stud, Gladbrook, and bolstered by additional imports of Aberdeen Angus stud stock. In 1908 Marainanga Station was auctioned into 22 lots and the stud dispersed which provided enough stock to establish and expand several North Island studs. Moanaroa based at the Mairainanga
homestead block was essentially a continuation of the old herd. The bloodlines derived from the original Marainanga Angus Stud are the first recorded landings of Angus cattle in the North Island. They were dropped off a boat in 1886 to swim through the surf at Akitio Beach. Up until 1945 wool was transported by boat and bullocks brought the bales and other goods ashore by wagon. P. V. Smith, Barbara’s grandfather, along with the Humphries family jointly purchased several blocks of land and 17 stud cows with which they founded the Moanaroa Angus Stud. When Dan and Barbara moved into the homestead at Moanaroa they unearthed an original, leather bound, stock book. Its first entry shows Miss Vivacious born in 1891 and
Dan, Barbara and Fiona Ramsden.

STUD BULL CATALOGUE 2016
The exterior of the homestead has changed little since it was built in 1936. Wool was transported by boat and bullocks until 1945
shipped to New Zealand from Scotland in 1892. Seven of this cow’s progeny formed part of the 17 strong herd and nucleus of the stud. Dan and Barbara purchased Ware Ware Station from Barbara’s family in 1971 originally run alongside Moanaroa, which was also owned by Barbara’s family. In 1980 Dan took over the running of Moanaroa from Barbara’s aunts Joan and Margaret Smith who devoted their lives to Moanaroa. Keen for Moanaroa to stay in the family they bought out the rest of the family in 1999 and moved into the homestead, built in 1936, in 2007. Both Dan and Barbara have farming backgrounds and the relative isolation is
not an issue with them or Fiona and Hugh. Dan was born in Dannevirke and raised at Kumeroa, the family hill country farm of 1500 acres. A sensible chap he studied for a diploma and took up a shepherding just in case he couldn’t get into farming. Wool is still his passion but with income from wool declining over the years he’s focused on the stud. Barbara too is from a farming family; she was raised at Maraetotara, and has a special fondness for horses, home and garden. The family is passionate about their home and the land. While Fiona was overseas she looked forward to returning home. The family all consider that they are just tenants, trustees of the land for future generations.
Angus are ideally suited to Moanaroa hill country.

No rest for the
irrigation sector
I
t’s been a busy month for irrigators. While a few farmers are still irrigating, most are winding down irrigation systems as consented supply runs out and autumn rains kick in. There’ll be no rest for the sector however as end-ofseason maintenance and infrastructure planning gets underway. Improving your irrigation system starts now if you want to have a shot at becoming more efficient next summer. On the national front, irrigators from across the country have just gathered in Oamaru to celebrate success in our industry and come up with solutions to some of the challenges we face. OVERSEER, the new Financial Markets Conduct Act, hill country irrigation and measuring and monitoring data for improved performance were among workshop sessions on offer. Our keynote speakers covered what irrigation will look like in 2050, how to sell the dream of irrigation and how farmers are dealing with irrigation’s impact on nutrient use efficiency. Feedback from the morethan-400-strong crowd has been very positive and we’re grateful to the Waitaki Irrigators Collective for helping host such a tremendous event.
Several awards were presented during the conference to recognise industry achievement. Carrfields Irrigation was awarded IrrigationNZ’s Innovation Award in association with Aqualinc for the HydroFix Irrigator Stabiliser. This innovation consists of a series of inflatable water tanks connected to a pulley and counterweight systems along the length of an irrigator, which fill during a wind event securing the machine to the ground. Independent judging panel convenor Terry Heiler said HydroFix holds wide application for New Zealand’s irrigation market and was the result of solid research involving several parties. Two New Zealand irrigation champions were recognised with the awarding of the Ron Cocks Memorial Award to Robin Murphy and Tony Banks. Tony, the former chairman of the Earnscleugh Irrigation Company, was described as an outstanding leader in delivering the benefits of water to Central Otago. Tony has given 31 years of service to the scheme; more than half his working life and all in a voluntary capacity. For much of that period he has also been a member of the Otago Water Resource Users Group (OWRUG), a director of the Fraser Dam Company and director of the Clutha Pipeline Company which benefits
Tony Banks, left, and Robin Murphy received the Ron Cock’s memorial Award.
Earnscleugh Irrigation Company and Contact Energy. The joint recipient of the Ron Cocks Memorial Award is Robin Murphy. The Glenavy dairy farmer has been a driving force behind irrigation development, not only for his scheme, but for the benefit of wider South Canterbury. The long standing chairman since 1993 has championed and overseen several projects which have improved the viability and reach of the Morven Glenavy Ikawai Irrigation Scheme. He is particularly proud of the recent
commissioning of the $32 million Waihao Downs project which opened to much acclaim on the eve of the conference. Finally two new honorary members of IrrigationNZ were announced; former board members Dan Bloomer and Ian McIndoe. These two men each contributed more than 15 years’ service to our organisation. For an industry that often faces negative media coverage, it was a privilege and pleasure to oversee an event that recognised and celebrated success within our ranks.

Test and record to
reduce risk
By OSPRI Area Disease Manager Gillian Atkinson
F
armers buying, selling or leasing bulls this season need to manage their TB risk. New Zealand’s world-leading TBfree programme has made great progress towards its ultimate goal of TB eradication, and has this year been able to revoke some movement control areas. However, vigilance is still paramount. Dr Gillian Atkinson, Area Disease Manager with OSPRI which manages the TBfree programme, says that the movement of bulls to sales and between farms carries some disease risk. Farm businesses are dependent on minimising risk, and anyone involved in cattle farming over the past 20 years will know that the impact of TB in a cattle herd can be devastating for farming families and businesses. This makes it really important to check and maintain animal status declarations (ASD) that register an animal’s TB status and provides a traceable record for every individual animal recorded in the NAIT system. Bulls must be accompanied by an Animal Status Declaration (ASD) form. Make sure you send and receive yours and check that the TB section is complete. This records

the last TB test date and the TB status of the herd. All cattle moving from a Movement Control Area (MCA) are required to be TB tested within 60 days prior to movement. Bulls being sold or leased as service bulls may be tested as part of the TBfree scheme provided they are 12 months of age or older and have not been tested within the last six months. “Bull breeders should ideally organise a TB test for all service bulls before selling or leasing them to herd owners, testing as many animals as possible at the same time. There is no fee for the test and it gives the buyer or receiving herd owner some peace of mind.” Buyers and sellers must also ensure every movement is recorded in the National Animal Identification and Tracing (NAIT) scheme. Traceability helps contain the spread of disease and ensures quick and effective response to any outbreak. “Stock movements increase the opportunity for disease to spread. Don’t be complacent, do your checks and reduce risk,” Dr Atkinson says. For any advice or information on NAIT ahead of the bull sales, call OSPRI on 0800 482 463

Cattle scanning
reveals much
By Harry Whiteside MRCVS, BVSc, MA
W
e’ve just about come to the end of another cattle scanning season here at Vet Services HB Ltd. and once again there has been a real mixed bag of results, some of which have prompted further revealing investigations. Increasingly we are asked to age pregnancies with a view to taking the guesswork out of key management decisions. Dry cows are invariably culled as soon after weaning as is practical to improve the general feed situation for those being carried through the winter with an ever growing calf on-board. However, in a season such as this in which feed levels have fallen sharply from the boon seen earlier in the summer, scanning data becomes all the more relevant. Cows identified as taking the bull “late” in the mating season will of course become late calvers. Such animals can create problems the following year if they haven’t had sufficient time to recover from calving and begin cycling once more. If feed levels become really tight it is possible to sell/cull these individuals before the pressure really comes on the herd. “Late” calving cows are often at the vanguard of those destined for
the works on farms planning to cut down on cow numbers. Another alternative option in tight seasons is to graze off-farm those animals identified as “late” with a view to bringing them back home before calving gets underway. Another benefit of scanning is the ability to identify twin bearing cows. Whilst these individuals do not account for many in the herd (approximately 2-3%) we have received plenty of positive feedback from farmers that are given a “heads up” on these animals. Undoubtedly one of the most useful aspects of aging pregnancies is the information it can provide around individual bull performances. This season we have had a number of situations where close inspection of scanning results has allowed us to make informed decisions without recourse to spending money on expensive laboratory investigations. Every year we see cases of single sired mobs that were mated without a bull rotation and in which 100% of animals were found to be “empty”. Subsequent examination of the bull has revealed the cause of reproductive failure to be a problem with the penis (more

often a “broken penis” or “corkscrewing” of the penis). Lameness and back problems are also often found to be the cause of the problem. Sometimes it is as simple as a new bull not having been mature enough at turn-out. In all instances, further investigations can be carried out to check problems of semen viability although sometimes these may be transient and not picked up at the time of testing; for example, any infection that elevates the temperature at or around the time of mating will kill sperm and leave the bull temporarily infertile for up to 6 weeks thereafter...a whole 2 cycles missed! Identifying cycles is particularly useful where bulls have been rotated and we see pregnancies falling into one 21 day band only. This year we have seen a couple of cases with optimal first cycle conception rates of 65% followed by zero/very low second/third cycle results (and vice versa). The bulls put out for the “missing” cycles can then be investigated. Similarly we often see clusters of aged pregnancies that have an abrupt cut-off point after which no pregnancies are identified. This pattern would strongly indicate that a bull has got into his work with a hiss and roar but then something has suddenly put a halt to his endeavours; again for example, a broken penis, an infection, a leg/back injury that warrants further investigation. With bull sales looming there is no more pertinent a time to review those scanning results and evaluate the successes/failures of the 2015/2016 mating season.
Make sure your bulls are in the best possible condition this year. Get them tested, and ensure they are in optimal health come mating time!!

The renaissance of
Brookwood
P
aulsen Road, Takapau, in Central Hawke’s Bay is the setting for an historic Station, now an Angus Stud, known as Brookwood, which is home to Justin and Meg King and their two young children Theo and Molly. Established in 1895 by Mathias Paulsen, who acquired the land from William Nelson, the station remained in the Paulsen family until 1998. During the 40s and 50s boundaries were adjusted and land was sold to the crown for settlement of returned servicemen. In 1998 Awassi NZ bought the property and reared Awassi sheep for live export to the Middle East. Then in 2004 the King family purchased Brookwood and set about redeveloping the farm and later incorporating an Angus stud. Brookwood comprises 1125ha of flat to steep hill country at the southern end of Takapau township and heading south towards Ormondville. The property is divided by Paulsen Road. Since 2004 Justin and Meg have, with staff members, substantially developed the land and assets. For example, in 2004 were 46 paddocks and no troughs. Now there are over 200 paddocks and 200 troughs. They have erected over 100km of new fencing,
laid 100km of water pipes, built 2 new sheep yards, new cattle yards and a hay barn. They’ve also added substantial tracking, new culverts and metaling to improve access, and applied substantial capital fertiliser. Three quarters of the farm has been cropped and re-sewn with new grass species and the couple has set about planting trees but dry weather recently resulted in substantial losses. However, undeterred the couple are exploring alternative methods to ensure fewer losses in the future. All of this work has been undertaken without the use of any outside contractors. Both Meg and Justin come from farming families so it would be fair to say farming is in their blood. They have two children Theo, 8, and Molly, 7, who both attend Takapau Primary School. They are a well-travelled couple and both have tertiary qualifications. Meg studied Occupational Therapy at Otago then went to work in the USA and England. Justin gained a Bachelor of Agriculture from Massey University and for several years’ travelled the UK, Europe, Africa, and the Middle East. They met when both back in New Zealand and settled in Hamilton. Meg continued her career as an Occupational Therapist and Justin was a Rural Banker. Eight or so years

STUD BULL CATALOGUE 2016 in the rural banking industry in Taranaki and Waikato was a great learning experience for Justin as he was able to see first-hand all the farming financial do’s and dont’s and to learn about what really matters. He left banking to be involved in the family farming business. When the chance to purchase Brookwood came up a few months later it was an opportunity too good to be missed. Today it’s an extremely busy life for the couple, particularly as Meg runs “At Work Solutions,” her own company specialising in workplace rehabilitation programmes for all workplaces. Meg is based at home and she and her team of staff work remotely. Between them they cover Gisborne, Hawke’s Bay, Manawatu, Wanganui and Horowhenua. In 2012 they bought the Lynmar Angus Stud females from Kerry Nankervis. It was a great start to the Angus stud as there were a number of very high quality females in the herd. Since then they bought mixed age females from the dispersal of Goldwyn Angus of Timaru. They are medium framed, very correct and have a great temperament. All the females purchased have never missed a calving. They also bought a number of females from Peter Matthew’s Otoka heifer dispersal and they have proved very suitable for today’s requirements. Justin and Meg are very excited about how similar the cows are and feel they are typical of the type of animal they would have liked to be breeding had they bred them themselves. Last year the couple were thrilled to have their bull “Brookwood J32” be judged at the Beef Expo as 1st place in the 2 year old Bulls (used section). He sold for $12,000 to Waiterenui Stud (Viv and

Will McFarlane). They are excited that he went to a well renowned stud and looking forward to seeing his progeny in the future. As for the future they aim to keep doing the basics, such as improving fertility, extremely well. They also plan to look at increasing meat cut quality and the amount of the animal in valuable cuts. Thanks to Zoetis they’re using i50K, which is DNA based analysis, in an attempt to predict the animals future breeding potential.

Beef Expo 2016
B
eef Expo the only national beef show and sale in New Zealand, now in its 27th year runs, from 13-17 May at the Manfeild Stadium, Feilding. The show and sale is an opportunity for cattle breeders to come together to share their profession and showcase their top genetics. With a strong line up of cattle across the breeds and top quality judges selected, the judging brings excitement for all competitors and spectators. All entries have closed and the final entrant tally is 107 bulls and 18 heifers. On Tuesday, Manfeild Stadium is once again full of atmosphere for the genetic sale, when these top animals are sold for impressive amounts. It is said to be ‘the highlight of the year on the New Zealand Beef calendar.’ The Expo kicks off on Friday 13 May with the B+L Future Beef Hoof and Hook competition which is now in its tenth year and has been a growing success story. There is no expected level of experience and anyone that may be interested is welcome to enter. It is a great way to make new friends, and learn about the New Zealand beef industry through interactive modules.
Live streaming
Now in its second year the Farmside Bull Walk live streaming service, which attracted 1600 viewers last year, is available bringing the action into people’s homes and their hand held devices. Last year the most popular viewings were the Angus genetic sales, followed by the Champion of Champions.
Allflex New Zealand Champion Heifer
This year for the first time Beef Expo hosts a NZ Heifer Champion show on Monday and sale on Tuesday 17th May, at 2.00pm. The Allflexvisual class followed by the performance class will take place in the Show Ring at Manfeild Stadium. All breeds are getting behind this event by entering their “very best of the best” heifers to take this prestigious award. Heifers will be judged on both phenotype and genotype, to find the complete heifer, to bolster genetic merit to their respective breed. The championship follows and is being judged by Sam Hain of Hain Herefords, Angus and Romneys. There’s $2,000 prize money for the champion heifer with $1,000 for the reserve.

The Steak of Origin grand final
Sunday 15 May, Awapuni Racecourse, Palmerston North The Steak of Origin challenge aims to find the most tender and tasty sirloin steak in New Zealand. It is open to beef farmers, retailers, wholesalers and foodservice. The Steak of Origin challenge originated from a national carcass competition and since Beef + Lamb New Zealand Inc has run the competition on behalf of Beef + Lamb New Zealand Ltd, a taste element has been introduced. The competition process involves an initial assessment of the sirloin steak at Carne Technologies in Cambridge. Each steak is aged for three weeks before being tested for tenderness, pH, marbling and % cooking loss. The most tender steaks make the semi-final and are cooked and tasted by a panel of judges in Auckland. The finalists (the top four from each of the five classes) are tasted at the Ag Innovation in Feilding by top chefs and celebrities to find the tastiest and most tender steak in the country.
