If the power of suggestion is truly powerful, try dropping a hint for tickets to the Ludwig Symphony Orchestra’s “Romantic Gala Concert for Valentine’s Day.” The show, on Feb. 12 at 8 p.m. at the Roswell Arts Center, features maestro Thomas Ludwig and Lazlo Mezo, a Hungarian cellist. Mezo, who was born in Budapest, Hungary, has been studying cello since the age of six and has performed all over Europe and Asia. In addition to hearing the sounds of Mezo’s cello, patrons will enjoy the beautiful voice of the Polish mezzosoprano Magdalena Wor. Wor has won international competitions in opera and has sung with the Atlanta Symphony Orchestra, the National Philharmonic and the Washington Concert Opera. From her storefront off Crossville Road in Roswell, Darcy and her staff have been baking and decorating between 100 to 125 cakes each week since 2004, from colorful birthday cakes for kids to elaborate, multi-tiered wedding cakes. Mixed in among the more standard orders are the “very special requests,” such as the exact image of an album cover for recording artist T Pain. “A lot of people come into the shop and know exactly what they want,” said Darcy, a Roswell resident since 1997. “But many come in with no

idea, or with a swatch of color and a theme, and we take it from there. We love the opportunity to be creative.” Darcy’s career in cake decorating had humble beginnings. As a student at the University of Iowa in the mid-‘80s, she took a job at a local grocery store to earn extra money, and found herself in the store’s bakery department. “I was an art major,” she explains. “They needed someone ‘artsy’ in the bakery and thought I would be a good fit.” Within the back rooms of the bakery, she learned the art of decorating cakes; soon realizing the store’s management program, working at

A subsequent move to Chicago with her husband further honed her skills, when she began working at a family-owned bakery on the city’s Northside. I just had to do the ballerina thing first. NSW: What will you miss the most? KNL: I will miss so many things about this career. I can narrow it down to three things I will especially miss. 1.
I will miss being on stage. I will hopefully
never forget those rare moments on stage when nothing else matters. Those moments where I forget who I am on stage, and I am just listening to the music and doing what I love to do. Those moments are rare, but they cannot be recreated and cannot be replaced. 2.

Most recently, I have been enjoying it with shrimp in a meal that can be prepared quickly and easily. Prep and Cook Time: 20 minutes Ingredient list: Frozen, cooked, deveined shrimp (1 pound is enough for two) 2-3 big handfuls of bok choy 1 sweet yellow onion 1 big handful of dried cranberries Coconut Aminos soy-free seasoning sauce Low sodium chicken broth (Imagine Organic includes no sugar or soy) Coconut oil Jamaican curry powder Garlic powder Salt Directions: Place frozen shrimp in a bowl in the sink. Fill bowl with cold water and leave the tap running at a slow rate, allowing the excess to overflow. Shrimp should be adequately thawed in about 10 minutes. Place shrimp in a sauce pan over medium heat and add enough broth to cover. Add a tablespoon of hot Jamaican curry powder (or any curry you like) and bring to a boil. Reduce heat, cover and allow mix to simmer 5 minutes. Chop onion into bite-sized pieces. Trim off the thick stem of the bok choy. Rinse well, and chop into

I eat real food – meat, fish, chicken, eggs, vegetables, fruit, nuts, and seeds – but no processed foods, no dairy, no grains, no beans, and no sweeteners. The results have been amazing. I sleep better. My athletic bite-sized pieces. Add two tablespoons of coconut oil over medium heat to a wok. Add one tablespoon of curry powder and stir-fry for one minute. Add onion and stir-fry until it begins to soften. Add bok choy and a big handful of dried cranberries. Stir ingredients well. The curry should supply most of the taste you need, but add salt and garlic powder to taste. Cover and let cook for 10 minutes or so, stirring occasionally. Transfer bok choy to plates and splash generously with Coconut Aminos (optional). Lay shrimp over bok choy and you’re ready to eat. Note: Coconut Aminos look and taste like soy sauce. I like the flavor Coconut Aminos add, but the meal works without it too.
