candy@northsidewoman.com For nearly a decade, the Williams family has been a part of thousands of celebrations and joyous occasions for families across the metro area. While the quartet of three sisters and their mother may not have attended each event in person, the wedding gowns and formal dresses they sell through their business, Treasures Formals and Bridal in Roswell, have often stolen the show. Daughters Lauren, Bonnie and Hayley, and their mother, Vickie, have fused their love of their business with their strong faith that guides them in everything they do. “Opening any business is intimidating and difficult, but our store is really a miracle that God has allowed us to participate in,” said Lauren Williams. “We’re conscious every day of the fact that we wouldn’t be doing what

Scots-Irish Oaten Raspberry Cranachan Scottish Cranachan is also known as “Cream Crowdie” and is traditionally made with wild heather honey and whiskey folded into the fresh cream and oats. To liven it up, McLoughlin adds Irish whiskey to the raspberries and white chocolate to the cream for a Scots-Irish taste of indulgence. Ingredients: • 3 oz. Irish steel cut oats • 2 tablespoons light brown sugar • 1 tablespoon butter • 1.5 cup heavy whipping cream • 6 large squares (5 oz.) quality white

chocolate • 3 tablespoons Scotch or Irish whiskey • 10 oz. (just under 2 cups) raspberries • 2 tablespoons local honey Directions: In a large skillet, toast the oats with the brown sugar and butter, stirring constantly to avoid burning. Set aside to cool. In a blender, puree half of the raspberries and strain to remove seeds. Fold the remaining raspberries into the puree (reserving a few to garnish) and stir in the whiskey and honey. In a small saucepan over low heat, bring ½ cup of heavy whipping cream to simmering point (do not boil) and slowly incorporate the white chocolate into the cream, stopping to beat with each addition until smooth. Cool to room temperature. Beat the remaining 1 cup of cream until soft peaks appear, then fold in the white chocolate cream and toasted oats. In a tall glass, layer the raspberry puree with white chocolate cream mixture. Top with raspberry puree and end with cream. Garnish with a single raspberry, shavings of white chocolate, toasted oats and a sprig of mint. Serve immediately as the oats can become soft and lose their crunch. —From The Shamrock and Peach, www.shamrockandpeach.com

goodeats Celebrate St. Patty's with authentic Irish flavors They came in the 1840s to escape the devastating potato famine. And they stayed to become part of the fabric of America. Today, 36.9 million U.S. residents claim Irish ancestry, second only to those who claim German heritage, and more than eight times the population in Ireland, according to the U.S. Census Bureau’s 2009 statistics. Enduring hardships and privations, the foods these Irish immigrants cooked in the new land would have replicated foods that reminded them of home — dishes such as cottage pie and Irish apple cake. Below are recipes from the cookbook, “Forgotten Skills of Cooking,” by Darina Allen, considered the Julia Child of Ireland. For more Irish recipes, visit www.kerrygoldusa.com. —Family Features

garlic and onion and fry until soft and slightly brown. Increase heat, add ground beef and thyme and fry until beef changes color. Add wine, half the stock, Worcestershire sauce and tomato paste. Simmer for 10 minutes. Meanwhile, boil the unpeeled potatoes, then peel them. Add boiling milk and mash potatoes while they are still hot. Season with salt and freshly ground pepper, and add butter and chives, if using. Preheat the oven to 350°F. Bring the rest of the stock to a boil and thicken it well with roux*. Stir it into beef — it should be thick but still juicy. Taste and correct seasoning. Put meat mixture into one large or six individual pie dishes. Pipe or spread mashed potato mixture over

Directions: Melt butter in a pan and cook flour in it for 2 minutes on low heat, stirring occasionally. It will keep for two weeks in the refrigerator. Garlic Butter: • 8 tablespoons Kerrygold Irish butter • 2 tablespoons finely chopped parsley • 3-5 cloves crushed garlic • A few drops of freshly squeezed lemon juice Directions: Whip butter, then add in parsley, garlic and a few drops of lemon juice at a time. Roll into butter pats or form into a roll and wrap in parchment paper or foil, twisting each end. Refrigerate to harden.

Irish Apple Cake

“Irish Apple Cake varies from house to house, and the technique has been passed from mother to daughter in farmhouses all over the country for generations.” Serves: about 6 Ingredients: • 2 cups all-purpose flour • 1/2 teaspoon baking powder • 8 tablespoons Kerrygold Irish butter • 1/2 cup superfine sugar, divided • 1 egg • About 1/4 to 1/2 cup whole milk • 1-2cooking apples • 2-3 cloves, optional • Egg wash • 10-inch ovenproof plate

Peel, core and chop up apples. Place them on the dough and tuck in cloves, if using. Sprinkle over some or all remaining sugar, depending on the sweetness of the apples. Roll out the second half of the pastry and fit it on top — easier said than done as this “pastry” is more like scone dough and as a result is very soft. Press the sides together, cut a slit through the lid, egg wash and bake for about 40 minutes or until cooked through and nicely browned on top. Dredge with superfine sugar and serve warm with raw sugar and softly whipped cream.

Directions: Preheat the oven to 350°F. Sift flour and baking powder into bowl. Rub in butter with your fingertips until it resembles the texture of bread crumbs, then add 1/3 cup superfine sugar. Make a well in the center and mix to a soft dough with beaten egg and enough milk to form a soft dough. Turn out onto a board, divide in two. Put one half onto an ovenproof plate and press it out with floured fingers to cover the base.

northsideman JOHN LIPSCOMB daffodil enthusiast

STORY & PHOTOS By KATIE VANBRACKLE

katie@northsidewoman.com Retired Naval officer John Lipscomb and his wife Claire moved to north Fulton County in 1971, settling on a pretty little farm with a small stream running alongside a green pasture. Claire asked John to plant a few daffodils along the stream bank. She loved daffodils because they were the first flower of spring. Along with those first few daffodil bulbs, John planted the seeds of a new hobby. Over the

blooms certainly continues to give pleasure to all who are lucky enough to discover it. Each year, garden club ladies and daffodil devotees arrive by the carload to walk through John’s pasture, bending down to read the handwritten labels of each variety: Gin and Lime, Firestreak, February Gold, Peeping Tom. John enjoys sharing the fruits of his labor with friends and neighbors as spring arrives in glorious fashion on his farm. Though his beloved wife Claire is no longer with him, John’s love for her still glows brightly through each yellow bloom dancing in the breeze.
