Ingredients 16 chicken wings, seasoned with salt & pepper 250 ml Peri- Peri basting sauce 2 litres water 8 ml salt 5 ml Tumeric 375 ml Rice

Method •

Place the chicken wings in a lightly oiled oven roasting dish. Brush with peri peri basting sauce and roast for about 40 minutes or until cooked. Baste about every 5-10 minutes throughout the roasting proses. In the meantime cook the yellow rice. Bring water to the boil and stir in the salt and turmeric. Add the rice. Boil the rice for 25 minutes or until cooked and liquid is absorbed. Serve with hot chicken wings

Hint: How to get crispy chicken skin:

Infusing the flavour:

Season the chicken skin with salt and grill skin-side up over moderately-low heat in the oven until the fat has rendered and the skin is nice and crisp. Keep the heat low—if it gets too high, the fat will sear and not cook slowly and melt away.

When basting the chicken before cooking lift the skin and get as much of the basting under the skin as possible as well as on top of the skin so that the flavour gets absorbed into the chicken meat while it cooks.

1kg beef chuck, pieces 50ml oil 2 each large onions and celery sticks, chopped 2 garlic cloves, crushed 1 red pepper, cut into julienne strips 1 x 410g can chopped tomatoes 50ml Royco beef stew mix, dissolved in 600 ml water 10ml chilli flakes 4 medium potatoes, cubed 300g baby carrots, halved lengthways 1 x400g can mixed beans

800g Samp and sugar bean dry mix soaked overnight in water, drained 2 Chicken stock cubes, dissolved in 500 ml hot water 4 garlic cloves 80g raw peanuts (optional)

Method • Brown the meat pieces in 25 ml heated oil, remove from the pot and keep aside. • Sauté the onion, celery, garlic and red pepper in the same pot, in the remaining oil for 8 minutes. Add the tomatoes, beef stew mix with water, chilli flakes and the meat pieces to the pot. Cook for 60 minutes, adding water if the stew becomes to dry. • Add the potatoes and carrots, cook for 40 minutes more or until vegetables are cooked. • Add the beans and warm through, adjust seasoning to taste if needed. • Serve with Umqusho See www.igroza.co.za for more.

Ingredients 20 ml sunflower oil and 50 ml butter 2 large onions, chopped 4 garlic cloves, crushed Spice mix: 30ml Masala, 10ml each ground cumin, coriander, turmeric, ginger & mixed herbs 1,5 kg beef mince 3 thick slices stale white bread soaked in 300ml water 70 ml chutney 150ml sultanas Salt and pepper to taste 3 large eggs, beaten 350ml milk Bay or lemon leaves and thin lemon slices for garnish (optional)

Heat the oil and butter together, add the onions and garlic, sauté for 5 minutes. Add the spice mix and sauté for 3 more minutes. Add the beef mince and fry for 5-10 minutes while loosening it with a fork. Squeeze the water from the bread and add the bread to the meat mixture. Also, add the chutney and sultanas. Mix well and season to taste. Spoon the meat mixture into a greased ovenproof dish. Insert bay leaves into the mixture and place lemons slices randomly on top. Mix the egg and milk together and pour over the meat. Bake in a pre-heated oven at 1800C for about 30 minutes or until set.
