his issue of the magazine celebrates our Stars of the Industry. Alabama’s future depends on restaurants and hoteliers and those we are providing opportunities for. 2020 looks to be a year of outstanding growth for Alabama’s hospitality industry. The industry is an economic engine employing over 250,000 people in Alabama. They work part-time and full-time; they are students, mothers, fathers and MINDY HANAN first-generation Americans who are working while going to school President & CEO, ARHA or searching for their own personal dreams. More than ever as our economy grows, our industry leaves no citizen behind-creating valuable entry-level experience for our youth as well as an important career ladder for those who aspire toward management careers and entrepreneurial ownership! ARHA will be holding our Annual ProStart Invitational Competition at Perdido Beach Resort in March. I encourage you all to get involved in this wonderful program. ProStart is considered one of the most successful career and technical pathways in our public schools. Join us at the beach and see what you have been missing with the high quality of education and instruction Alabama students are receiving in this program. The month of February marks the beginning of the legislative session for the year. In 2020, we will continue to build upon our successes in recent years. We look forward to educating our elected officials about your concerns and encouraging them to support legislation that will benefit our industry. ARHA will also be prepared to fight against unfair taxes and other policies that could be detrimental to your business that seem to rear their ugly heads nearly every legislative session. INTERNATIONAL SOCIETY OF HOTEL ASSOCIATIONS ARHA’s Mindy Hanan was recently elected to serve as Chair of International Society of Hotel Associations (ISHA). ISHA serves as a centralized conduit of information that supports its members’ efforts, particularly where state and local advocacy is concerned. The group serves as a collective voice to talk to AHLA and AAHOA regarding national issues. The International Society of Hotel Associations’ industry partners include AH&LA, AAHOA, ARDA, AH&LEF, United Health Group, Best Western, IHG, Hilton, Marriott, Fisher Phillips, Heartland, ServSafe and STR.

NEW EXECUTIVE CHEF VICTOR BOCK
Takes Reins of Wind Creek Hospitality’s Award-winning Dining Venues
M
usic playing, lights flashing, people buzzing – there is plenty of excitement to be found at a Wind Creek Hospitality (WCH) property. Culinary venues, in particular, are worth a visit of their own and have collected recognition throughout the state and Gulf Coast. Now these award-winning restaurants are under leadership of WCH’s new corporate executive chef, Victor Bock. The announcement comes four months after WCH purchased Sands Casino Resort Bethlehem and rebranded it to Wind Creek Bethlehem (WCB). Chef Bock has served as Executive Chef and Food and Beverage Director for the Bethlehem casino resort since 2009; he will now oversee all WCH food and beverage operations around the world. No stranger to the South, Bock says his visits to Alabama have already won him over to the region and to his new employer. “The hospitality here is great Wind Creek Hospitality – it takes me back to my roots in Pennsylvania where everyone is welcoming. Southern Hospitality is definitely what I’ve experienced so far.”
CHEF VICTOR BOCK
Chef Bock is a native of York County, Pa. and brings nearly 35 years of experience and excellence to his new post. He graduated from the prestigious Culinary Institute of America in 1987. Shortly after, he launched his career as Restaurant and Catering Sous Chef for the Accomac Inn. During his tenure, the Inn was praised by industry publications including Bon Appetit and Gourmet. In 1991, Chef Bock became the Executive Chef at Window’s on Steinman Park, a four-star French restaurant in Lancaster, Pa. While there, Chef Bock was nominated by the Chaine Des Rotisseur as one of the top 50 chefs in the Philadelphia area. Chef Bock went on to become the Executive Chef at the four-star, Four Diamond Hotel Hershey. Bock was even featured on two PBS series: “Historic Hotels of America” and “Historic Chefs of America”. In the years since, Chef Bock honed his passion as Executive Chef at North Carolina’s historic Greensboro Country Club, Bent Creek Country Club, and Woodstock Inn and Resort in Vermont. He joined the WCB team ten years ago and quickly became one of the region’s most respected chefs. He oversaw over 400 employees and six restaurants including three of Emeril Lagasse’s famed restaurants: Emeril’s Chop House, Emeril’s Fish House and Burgers and More by Emeril. Chef Bock will lend his extensive culinary knowledge to WCH’s dining venues, including Four Diamond, awardwinning FIRE Steakhouse at Wind Creek Atmore and Wind Creek Wetumpka. ARHA held the 2019 Stars of the Industry Awards Dinner on Monday, November 11 at the Renaissance Birmingham Ross Bridge Golf Resort & Spa. Stars of the Industry is our annual awards program which honors the restaurant, lodging, and tourism industry. The awards are peer-nominated and winners are selected by ARHA’s board of directors. There were over 80 nominations submitted statewide and the winners in each of the categories were presented with trophies by the ARHA Board Chairman Toby Wilson. The event began with an elegant reception while the regional bartender finalists competed in the state Bartender of the Year competition. Guests enjoyed a fabulous dinner prepared by Executive Chef Robert Kamm and Executive Sous Chef Crystal Rogers. Matthew Devine provided live musical entertainment. Eunice Elliot, news reporter for NBC 13 Birmingham and stand-up comedian, served as the emcee for the evening. “The Stars awards dinner is our chance to recognize those who have demonstrated excellence and serve as an inspiration to others in the restaurant and hotel industry and our community. On behalf of ARHA, I am proud of the members we have and the outstanding accomplishments they make day in and day out,” says Mindy B. Hanan, President and CEO of ARHA. Additionally, a portion of the proceeds from this event goes to the ARHA Foundation whose mission is to promote education in the restaurant and lodging industry. Excellence in Government - Federal CONGRESSMAN BRADLEY BYRNE
ALABAMA’S 1ST CONGRESSIONAL DISTRICT Congressman Bradley Byrne is a pro-business, conservative fighter with a focus on less government restriction and increased freedom. He believes that the government must take a more hands-off approach to the economy by providing regulatory relief to businesses and improving access to capital. Byrne specifically led the charge against the flawed joint employer standard, which would have destroyed the franchise business model. He voted against Democrat fifteen dollar minimum wage proposal, which a Congressional Budget Office study revealed would destroy 44,000 jobs in Alabama by as soon as 2020. Senator Greg Reed is a Republican member of the Alabama Senate, representing District 5 (Walker, Winston, Fayette, Tuscaloosa, & Jefferson counties) since being elected in 2010. In 2015, he was elected by his peers to serve as Senate Majority Leader after his re-election in 2014. Senator Reed serves on the following committees: Banking and Insurance, Fiscal Responsibility and Economic Development, Health and Human Services, Judiciary, Local Legislation Jefferson County, Rules, Transportation & Energy, and Confirmations. He is a graduate of the University of Alabama and resides in Cordova.
Lifetime Achievement Award LINDA BELL
RENAISSANCE MOBILE RIVERVIEW PLAZA HOTEL Ms. Linda Bell was the Director of Services at the Renaissance Mobile Riverview Plaza Hotel. Since coming to work in 2011, she had been an integral part of the hotel’s success. She was a key contributor to the Riverview Plaza Hotel receiving the Marriott Hotel of the Year award in 2018 for the Distinctive Premium division. Linda was a lifetime housekeeper. She began her career in hourly housekeeping positions at the Marriott Grand Hotel in Point Clear, Alabama in 1980. She worked through college and by 1998 was ready for her first supervisor position. She quickly became the Housekeeping Manager at The Grand Hotel from 1990-1999. Linda left Alabama to pursue her career with Marriott International. Linda spent the next decade at hotels throughout the country and where she went the awards followed. You could call Linda “old school” and it might be an understatement. She was super tough, but fair, and had a soft side that was only seen by her direct associates. She held her associates to very high standards, but truly cared for them personally. They were her work family and she treated them with the same tough love as her own. She developed and mentored many of her associates and shared her passion for providing the best in guest services. Sadly, Linda unexpectedly passed away in August 2019 leaving a big deficit in the hotel operations and in the hearts of the housekeeping employees.

Restaurateur of the Year Award LISA VAN DER REIJDEN
LUCY’S - AUBURN
Lisa van der Reijden grew up in a big, Greek family surrounded by outstanding cooks and the belief that the best memories are made around the table. Since then, Lisa has become known as one of the most creative forces in the Southeast whose style sensibilities reflect the art of living well. An Auburn resident since 2006, Lisa reconceptualized an empty restaurant space seeking to create a fresh, new neighborhood concept into what is now known as Lucy’s. Lucy’s is an energetic, neighborhood eatery serving modern American cuisine along with healthy dose of warm, caring and personalized service on The Plains. Lisa is a true crusader for the developing restaurant scene in Auburn and throughout Alabama, and hopes to continue to expand similar concepts across the state and the southeast. In addition to her local interior design firm, VDR Designs, and her time spent at Lucy’s, Lisa splits the rest of her time between her family and work with various charities including Auburn’s Storybook Farm and also serves on the Board of Directors for the Jule Collins Smith Art Museum.

Kent Blackinton is the General Manager of the Renaissance Mobile Riverview Plaza Hotel. Kent exemplifies the core values of PCH Hotels & Resorts. He recognizes the value of relationships and people - he is a humble and caring individual. In March 2019, Marriott International recognized the Renaissance Riverview Plaza as the Marriott Franchise Hotel of the Year for the Distinctive Premium Hotels in North America for 2018. This award reflects results under Kent’s leadership in all areas – revenue and profits were both up last year and guest satisfaction ranked in the top five percent of Renaissance flagged properties. Kent also dedicates himself to supporting both the hospitality and education through service on the boards of ARHA, AHLA, the University of South Alabama, and as past president for MALA.

Chef of the Year MIGUEL FIGUEROA
THE HOTEL AT AUBURN UNIVERSITY & DIXON CONFERENCE CENTER
Originally from Puerto Rico, Chef Miguel was raised in a world of hospitality and cooking. Miguel attended the Le Cordon Blue Culinary Academy and his distinguished 25-year cooking career has taken him to restaurants across the country. In 2018, he returned to The Hotel at Auburn University where he has been instrumental in the rebranding of the hotel’s signature restaurant Ariccia Cucina ltaliana. This summer, Miguel traveled to Italy to further our relationship with the Auburn University program in Ariccia, Italy and his culinary expertise on Italian cuisine has not gone unnoticed. His Signature Porchetta dish was selected to Alabama Tourism’s 2019 “100 Best Dishes To Eat in Alabama Before You Die” list. In 2017, Miguel traveled to Puerto Rico to help victims of Hurricane Maria and raised $25,000 to further help his home country when he returned. He then went back with supplies and partnered with “World Central Kitchen” to help feed 1,000 homeless hurricane victims three time a day per week. Leading a successful kitchen of 50 team members, Chef Michael Figueroa exemplifies culinary excellence, community involvement and genuine hospitality.
Spirit Award DAN YANCEY
GRAND BOHEMIAN HOTEL MOUNTAIN BROOK
Mahatma Gandhi wrote “The best place to find yourself is to lose yourself in the service of others”. This quote adequately describes the life of Dan Yancey. Every day, he begins by thanking God for life, health, a second chance and for his job at the hotel where he graciously serves others. Dan was once an addict and he found himself amongst the homeless population in the city of Auburn and at his lowest point, Dan began stealing. One day, he pushed the limits, committed robbery and was ultimately sentenced to 11 years in prison. This action may have actually saved Dan’s life. Once he was released from prison, he was connected with the Brother Bryan Mission in Birmingham. Through this program, Dan learned basic skills, the value of true friendship and God’s redeeming love. Eventually, he was tasked with finding employment. Dan applied at the Grand Bohemian but was denied because of his background. He put faith into action and applied a second time, told his story and was actually given an opportunity. That was 3 years ago. Since then, Dan has been recognized as Grand Performer of the Quarter twice and has continued to prove himself. He always has a smile, positive attitude and works hard. Dan now sponsors other people in similar situations, not only helping them but also helping himself to stay on track.

Humanitarian of the Year HANS VAN DER REIJDEN
ITHAKA HOSPITALITY PARTNERS
In 2019, Hans and Ithaka Hospitality Partners provided humanitarian relief in the form of meals and cleaning supplies to the survivors of the tragic Beauregard tornado that killed 23 men, women and children. Ithaka also created a program called Five Loaves Two Fish, which utilizes unused banquet food items to create amazing soup stock that is given to the AMC food pantry each week. Under his direction, the IHP team provides significant support to Storybook Farm in manpower for serve days and their annual Derby Day event to provide funding for therapeutic horseback riding. In addition, Hans authorized lowering the hotel room rates for Hurricane Dorian evacuees and The Hotel at Auburn University also provides Thanksgiving meals to first responders and complimentary breakfast on 9/11. Industry Advocacy Champion CHRIS TOWNSLEY Chris Townsley was the General Manager of the Birmingham Marriott hotel. In 2019, Birmingham became the city with the third highest lodging tax in the country, but it was not without a fight. ARHA staff and members researched tirelessly, attended a lot of meetings at all times of the day, and briefed a lot of press members regarding the issue. ARHA thought an agreement was in place and the city council was set to vote in a few days. Unexpectedly, ARHA’s CEO had a serious family emergency that prevented her from attending the vote. Chris offered his help in full force. He organized the local hotels and went toe-to-toe with the council members when it was clear that the vote was not going to go our way. Chris is currently the General Manager at the Elyton Hotel and remains a great advocate for the industry.
Supplier of the Year AUTO-CHLOR SERVICES LLC Auto-Chlor provides cleaning products and services for commercial kitchens, laundry and housekeeping operations, in a manner that is safe to the environment. Many years, patents and satisfied customers later, Auto-Chlor System has become a national leader in the production, installation and service of energy saving dishwashers. Research and development along with dishwasher manufacturing continues for Auto-Chlor System in Memphis, TN. The company’s service network has grown to 120 branches serving more than 75,000 customers. Auto-Chlor is an allied member of ARHA and is extremely supportive of Association events such as ProStart, Taste of Mobile, Stars of the Industry and the Grand Pineapple Golf Challenge. Gabrielle Barnett has worked for LuLu’s and in the tourism industry for over 14 years. She was born and raised in Gulf Shores and has always had a passion for promoting the area and state. In her tenure at LuLu’s, she has worked with Alabama Tourism, and the local Gulf Shores Orange Beach Tourism, promoting everything from Year of Alabama Food, Brand USA’s push to promote Music in Alabama, promotions after the Deep Oil Horizon Oil Spill, helped promote Coastal Cleanup and numerous fundraisers. She was on the Governor’s Conference on Tourism welcoming board, and is a constant in Marketing for a thriving destination restaurant. She has been integral in hosting travel writers, bloggers and influencers to help spread the word about the area, destination, and location. Gabby was recently selected by the Alabama Tourism Department to represent the State at the Travel South International Showcase and has served as Social Media Chair for three years for the Annual National Shrimp Festival. She spends her life promoting her restaurant, the area and State.
Tourism Promoter of the Year HERB MALONE
GULF SHORES & ORANGE BEACH TOURISM
For more than two decades, Herb Malone has been a guiding force in the tourism industry along the Alabama Gulf Coast. He served as president/CEO of the Alabama Gulf Coast Area Chamber of Commerce from 1988 to 1993. As the need for a destination marketing organization developed, Herb played a key role in the establishment of the Alabama Gulf Coast Convention and Visitors Bureau (CVB), which is now known as Gulf Shores & Orange Beach Tourism. He has led this organization as president/CEO since 1993. The tourism and hospitality industry honored his work in 2000 by inducting him into the Alabama Hospitality Hall of Fame. Then in 2001, he was named the Alabama’s Tourism Promoter of the Year and four years later in 2005, Herb was honored as the Alabama’s Tourism Executive of the Year. Herb is currently a member of the board of directors of the Alabama Gulf Coast Area Chamber of Commerce, the South Baldwin Chamber of Commerce, and the Battleship USS Alabama Commission. Herb graduated from Livingston University, where he was a member of the 1971 NAIA National Champion football team. He also holds an Institute of Organizational Management Certificate from Southern Methodist University. A native of South Alabama, Herb and his family have lived in the Gulf Shores area since 1978.

Small Hotelier of the Year Award MICHAEL JEFFREYS
LAKE GUNTERSVILLE STATE PARK LODGE
Michael Jeffreys has provided consistent leadership and vision for the Lodge at Lake Guntersville State Park for several years, through good and bad times. While this is a small lodging operation from the standpoint of hotel rooms, this is a large responsibility to the state and local community. The lodge facility offers five separate conference and meeting spaces, as well as a restaurant and lounge. Michael has led the lodge team in a manner that was instrumental in supporting the park’s recovery from the 2011 tornado, which devastated the park’s campground but only grazed the lodge. During that period of recovery, it was the Lodge’s consistent service to the public that financially carried the park to its current level of success. Perhaps the best indicator of Michael’s success and consideration of this award is the fact that customers have consistently commented on the positive attributes of the hotel complex. The Lodge received Trip Advisor’s Certificate of Excellence four out of the last five years.

As a part of the opening team at Lucy’s, Paolina played an instrumental role in building the concept from the ground up all while cultivating a qualified team and building longstanding relationships with some of the region’s best farmers and vendors. Complementing his knack for recreating classic dishes, Paolina is always tapping into his Southern Californian roots to bring a refreshed version of the south straight to Lucy’s menus - a trait truly unique to his approach in the kitchen that allows Lucy’s to shine throughout such a budding restaurant scene. Aside from his innovative twists and talents in the kitchen, Brian has also worked to build a positive and educational environment for his staff and has been so instrumental to the environment that guests enjoy at Lucy’s.

Amy has been the heartbeat of The Hound for a little over six years. As Front of House Manager, she has tenacious spirit and passion for excellence. On her own accord, Amy created a comprehensive training program for servers and support staff which can take a new employee with no restaurant experience, to an expert level server over the course of a few weeks. She continues to develop and change the program to fit the evolving needs of the growing restaurant. Amy goes above and beyond for her employees, coworkers, and guests. She frequently plans frequently plans company parties, family game nights, and community service outings for our staff. Amy is constantly exceeding expectations and is a shining example of excellence in our industry.

Eric is the event operations manager at Ross Bridge. He began his career at the hotel in 2013 as a bartender at JT’s Lounge. Eric initially took a pay cut to advance to Assistant Event Operations Manager and was awarded Manager of the Year in 2015. In 2017, Eric took on the role of Event Operations Manager and under his careful guidance, his department went from 40th to 5th in event satisfaction for all Renaissance hotels and resorts in North and South America and South Africa. Eric is the story we all want to tell, he was willing to take a step back in order to move his career forward. He is the example of what is possible when you show up and work hard each and every day.

She came to Dauphin’s earlier this year and ensures guests enjoy their visit paying attention to every minor detail. Alex is a reliable, team player who enjoys working in the fast-paced and sometimes challenging environment.

COMPETITION Steven Bradford of Abhi located in Birmingham at The Summit was once again named Alabama’s 2019 Bartender of the Year. Alabama Restaurant & Hospitality Assocaition held the state bartender competition on November 11 at Renaissance Birmingham Ross Bridge Golf Resort & Spa. In October, regional competitions were held in Birmingham, Huntsville, Mobile, and Montgomery with the top finalists advancing to compete at the state level at the Stars of the Industry annual awards dinner. Each contestant had six minutes to prepare two drinks - a classic cocktail (Boulevardier, Manhattan, OldFashioned, or Whiskey Sour) with a unique “twist” and a speciality drink. The competitors were judged on taste, accuracy, showmanship, and crowd interaction. Bradford is a two-time winner as he was also Alabama’s Bartender of the Year in 2017. ARHA extends many thanks to the competition sponsors and event hosts.

In Memory Of BILL “JIMMY” KOIKOS - BRIGHT STAR, BESSEMER An iconic Birmingham-area restaurateur lost his battle with cancer on November 16, 2019. Bill “Jimmy” Koikos, co-founder of the Bright Star was 81 years old. Since 1907, The Bright Star restaurant has been serving generations of customers its specialty Greek- style snapper and steak, signature seafood gumbo, luncheon specials, and famous pies. Located in Bessemer, Alabama, the restaurant has a regional following and draws patrons from throughout the Southeast as well as nearby Birmingham. The Bright Star’s 104 year old existence results from one family’s continued commitment to excellent food and service. Family patriarchs Bill and Pete Koikos immigrated from Greece in 1923 and two years later purchased an ownership interest in the restaurant from founder Tom Bonduris. Since 1966, Bill’s two sons, Jim and Nick Koikos have owned and operated the business. The Bright Star has experienced remarkable growth, expanding from a 25 seat cafe to a 330 seat restaurant, all without sacrificing quality. In addition the Restaurant was recognized in the United States Congressional Record in 1996 by Senator Howell Heflin for its status as an Alabama landmark and its service to the community. ARHA Happenings ARHA was honored to have Congressman Gary Palmer speak to our members in Birmingham at a board meeting. Congressman Palmer spoke about restaurant depreciation, immigration and workforce issues.
ARHA’s Gadsden Chapter held its inaugural meeting in November. The meeting was held at Back Forty Brewery and Alabama Representative Craig Lipscomb and Representative Gil Isbel both were in attendance.
In November, ARHA worked to pass a brunch bill in Dothan. Dothan was Alabama’s largest city without a brunch bill and being a conservative area it was met with great opposition. This will have a tremendous impact not only on the restaurants in Dothan, but the downtown area as a whole. Previously, Dothan’s Sunday sales hours began at 1 p.m., so there were no privately owned restaurants that were open. ARHA members organized and called their city council members. Dothan restaurant owners including Kelsey Clark - KBC (2019 winner of America’s Top Chef television show), Mike Bryan - Southern Social & Tap, and Robin Thagard - Bella’s Fine Dining testified at the city council meeting and met with city officials to ultimately pass the measure! This will mean over $100,000 in additional sales to many restaurants as they were previously closed on Sunday.

ARHA hosted a legislative panel in Huntsville including Alabama Speaker of the House Mac McCutcheon, Senator Sam Givhan, Senator Clay Scofield, Representative Howard Sanderford, Representative Mike Ball and Representative Rex Reynolds. ARHA members were briefed on the outlook for the 2020 legislative session and had a reception for the members following the meeting.
ARHA recently partnered with AHERO, an organization that puts on sporting events for wounded veterans and looks forward to working together in the future.
