MOLCAJETE RED SAUCE
IngredientS FOR 4 PEOPLE
• 4 tomatoes (grill whole)
• 1/2 onion (charred whole on the grill)
• 2 cloves of garlic (roasted)
METHOD
MOLCAJETE RED SAUCE
• 2 to 3 habanero peppers
• Salt and pepper to taste
1. Grill the whole tomatoes, onion, garlic, and habaneros until the skin of each ingredient is charred.
2. In the molcajete, place a pinch of salt. This will help crush the ingredients more easily.
3. Crush the roasted garlic cloves and habaneros in the molcajete until they form a paste.
4. Add the tomatoes one by one to the molcajete, crushing them well until a homogeneous texture is obtained.
5. Finely chop the charred onion and add it to the sauce in the molcajete. Mix well.
6. Season with salt and pepper to taste.

HANDMADE TORTILLA MAKING

• 2 cups of nixtamalized dough
METHOD
• Water (if necessary)
• Salt to taste (optional)
1. Prepare the dough: Place the nixtamalized dough in a large bowl. If the dough is too dry, add a bit of water, one tablespoon at a time, until the dough is soft and manageable. If desired, add salt to taste and mix well.
2. Form the dough balls: Divide the dough into equal portions, about the size of a golf ball. Form smooth and even balls.
3. Prepare the press: Place a piece of plastic or wax paper in the manual tortilla press. This will prevent the dough from sticking to the press.
4. Press the tortilla: Place a dough ball in the center of the press, cover with another piece of plastic or wax paper, and press firmly to achieve a thin and even tortilla.
5. Cook the tortilla: Heat a griddle or large skillet over medium-high heat. Once hot, place the tortilla on the griddle. Cook for about 30-45 seconds, or until the edges start to peel up and the bottom is lightly golden.
6. Flip the tortilla: Flip the tortilla and cook for another 30-45 seconds. Flip once more and cook for an additional 15-30 seconds to ensure it is fully cooked.
7. Keep the tortillas warm: Remove the tortilla from the griddle and place it in a container covered with a clean cloth to keep them warm and soft. Repeat the process with the remaining dough balls.

IngredientS FOR 4 PEOPLE
• 8 tomatillos (grill whole)
• 2 serrano peppers (grill whole)
• 1/4 onion (grill whole)
METHOD
• 2 cloves of garlic (roasted)
• 1/4 cup of fresh cilantro (finely chopped)
• 1/2 avocado, diced
• Juice of 1 lime
• Salt to taste
1. Grill the whole tomatillos, serrano peppers, garlic, and onion until they are soft and slightly charred on the outside.
2. In the molcajete, place a pinch of salt. This will help crush the ingredients more easily.
3. Mash the roasted garlic cloves in the molcajete until they form a paste.
4. Add the roasted serrano peppers to the molcajete and crush until you have a homogeneous mixture.
5. Add the roasted tomatillos, one by one, and grind until you reach the desired consistency.
6. Finely chop the roasted onion and add it to the sauce in the molcajete, along with the diced avocado. Mix well.
7. Add the chopped cilantro and mix again.
8. Squeeze the lime juice over the sauce and mix well.
9. Season with salt to taste.

• 1 red onion, finely chopped
• Juice of 2 limes
• 1 habanero pepper, chopped
XNIPEC SAUCE
• 2 tablespoons of olive oil
• Salt to taste
• Pepper to taste
METHOD
1. In a bowl, place the finely chopped red onion.
2. Add the lime juice and mix well.
3. Incorporate the chopped habanero pepper.
4. Add the olive oil and mix until everything is well combined.
5. Season with salt and pepper to taste.
6. Mix all the ingredients again and let it sit for 10 minutes to allow the flavors to meld.
