THE FLOWER HOUSE
There are lots of unusual flowers and plants around at the moment, perfect for creating a floral display. These include flowers like Hanging Amaranthus (or Love-Lies-Bleeding), Roses, Arabicum, Astilbe (or False Goat’s Beard), Limonium, Hydrangea, Calla Lilies, Waxflower, Hypericum and Eucalyptus. And plants like Japanese Anemone, Phlox and Oriental fountain grass.

When you walk through the doors of Arighi Bianchi the first thing that hits you is the scent of fresh flowers, courtesy of The Flower House Cheshire. Their beautiful blooms take pride of place as you enter the building. Inspired by Liberty in London, The Flower House at Arighi Bianchi is very much a part of the furniture now, as joint owner, Beverley Coghlan, explains “We started out as a bespoke flower studio in Macclesfield but we’d always loved Arighi Bianchi and thought it would be a wonderful collaboration, offering beautiful flowers alongside quality furniture, all under one roof. When we approached Nick Bianchi, one of the Directors, he was really supportive and we took our first pop-up space next to the Café Bar in September 2016.”

“We’re delighted to announce that this autumn we’ll be expanding our space once again.” Customer feedback was fantastic and the business blossomed, moving downstairs to become a more permanent Boutique Florist Shop the following year. “Things have gone from strength to strength,” says joint owner, Megan Palmer. “We’re delighted to announce that this autumn we’ll be expanding our space once again, so customers will have even more choice! It’s a really exciting time to be part of the The Flower House at Arighi Bianchi.” Megan and Bev took quite different ‘roots’ into the business - Megan went into floristry straight from school, whereas Bev worked with flowers early on, then in marketing, before returning to floristry in 2012 after the birth of her daughter, Isabella. Together, they’ve used their joint talents in creativity and customer service to create a unique business model which just keeps growing.

There are some stunning blooms available at this time of year, so we asked The Flower House Cheshire to help us create something really special as a centrepiece for a dinner party. Follow our step-by-step guide to create the perfect floral display. What you need: • A waterproof container (preferably low to the table) • Scissors or secateurs • Oasis • Flowers & foliage, which could include Amaranthus, Phlebodium, Pennisetum, Rubrum, Hydrangea, Spray roses, Garden roses, Rubus Chester (blackberries), Sanguisorba Arnhem, Eucalyptus, Populous, Soft Ruscus

Step-by-Step: 1. Soak your oasis in a sink or bucket of cold water until the air bubbles have stopped escaping. 2. Cut your oasis to fit your container so that ½ inch is visible at the top, making sure it fits snuggly and doesn’t move. You may need more than one block and you may need to cut some oasis ‘wedges’ to secure this in place. 3. Condition your foliage and flowers by removing any low leaves. Lay the flower stems on a flat surface with the heads over the edge of the table to prevent marks and bruises.

4. Take your first piece of foliage or filler flower and cut the stem at an angle, at the required length. Remember, this is for a centre piece so you want to make sure your dinner guests can see each other across the table! 5. Keep adding in your foliage or filler flowers until you have a good coverage and are happy with the overall shape. 6. Now add your main focal flowers: the current trend is vintage/whimsical but you can create any design you like. 7. Build on your arrangement, adding as many flowers as you like until you’ve achieved the look you want. 8. There is no right or wrong when it comes to floral design; the only rule is to create what you like using the textures and flowers you love. You can even use seasonal blooms and foliage straight from your garden to add a lovely homegrown touch!

Brass accessories, like this industrial-style lamp help to create a coherent design scheme and would look great on the shelves or mixed in with other industrial-style pieces. Be careful not to overdo it though, as you can have too much of a good thing, so I’d always say mix and match.

Q: There are so many types of flooring these days, how do I choose the right one for me? Firstly, which room is the floor going into? We have flooring for every conceivable space. Secondly, durability. How will the room be used? Thirdly, you can either make the floor the focal point with bold patterns, designs and colours, or use it as a neutral background to accentuate your furnishings, you decide. Q: What is your favourite floor of the moment? I’ve got two! Q: What type of floors will be trending next year? Nylon’s and polypropylene in plain carpets, bright colourful designs in patterned carpets, and clean, blonde Scandi-type finishes for luxury vinyl and wood flooring. Colour wise greys have been around for quite a while now, so I predict we’ll move to more taupe, earth tones and pastel colours.

CAFÉ BAR ARIGHI Whether you’re after a hearty breakfast, light lunch or a mouth-watering slice of homemade cake, you’ll love our award-winning Café Bar Arighi, celebrating its 30th birthday this year. Originally just a small café serving tea and sandwiches, Café Bar Arighi has grown into a fully licensed restaurant. Serving traditional Sunday lunches and afternoon teas, as well as hosting wine tasting evenings and courses in chocolate-making and flower arranging led by experts quite something considering it began life as a simple add-on to our furniture store!

Menu favourites include fish and chips, chicken risotto and a special salad named after Nick Bianchi! With plans to refurbish the venue and expand an already impressive menu, the future looks bright for Café Bar Arighi.
This year we are celebrating 30 years of great food and drink at Café Bar Arighi.
Q: How did you get into cooking? I worked in a lot of kitchens when I was young and although I did other things, I never stopped cooking. I moved north in 2002 and worked as a chef in Adlington, then at the Plough & Flail in Mobberley. Since then, I’ve never looked back. Q: When did you join Café Bar Arighi? I’ve been here 3 years and I absolutely love it. All I want to do is cook, create and wow people – my main motivation is compliments! I love bringing out the best in my team, creating a menu that looks great and tastes even better! Q: Any tips on cooking? My motto is ‘Fresh is Best’ – using seasonal, local produce is the key. On our menu at the moment we’ve got watercress from the Wirral, asparagus from Northwich and cos lettuce from Knutsford you can’t get more local than that! Q: Favourite thing on the menu? I’m really proud of our handmade burger which took about a year to perfect, trialling different recipes and seasonings. It includes a toasted brioche bun, unsmoked bacon and, of course, our very own burger sauce. Heaven!

Q: What are the challenges for the future? Food is like fashion, constantly changing. Customers are much more knowledgeable these days, so you need to be on your toes, developing new dishes and thinking about presentation. But the beauty of Café Bar Arighi is that it’s part of a prestigious family furniture store with a unique venue, free parking and a reputation for fantastic customer service, so I’m feeling pretty positive about the future.

With an ever-changing menu specially created by head chef, Geof Broomfield, Café Bar Arighi has a reputation for quality and superb customer service. Dishes are prepared by hand, using locally sourced ingredients, including our delicious homemade cakes which are baked on site. All food allergies, intolerances and special options are catered for to keep our customers happy.
Following a successful career in newspaper advertising, our resident head chef, Geof Broomfield, returned to cooking after a stint at Restaurant Magazine rekindled his early love of food.

Mushrooms
in a port & stilton sauce A dreamy, creamy combination of rich port and tangy stilton, draped over pan-fried button mushrooms on a toasted ciabatta that soaks up the sauce. It’s not often that mushrooms take centre stage, but this dish sees them hog the limelight! The perfect comfort food for a chilly, autumnal evening, enjoy as a starter or simple supper.
Ingredients

200g baby button mushrooms 2 ciabatta (toasted) 200ml port 400ml white wine 200g stilton 100ml vegetable stock 400ml double cream 200ml milk 2 sprigs of thyme 1 tsp garlic puree 1 bay leaf 1 tbsp cornflour 1 tbsp water Salt & pepper
1 Starting with the sauce add your white wine, port, garlic & thyme together into a pan and set to boil.
Sauce will keep in the fridge for up to a week.

Serves 4 as a starter Prep time: 10 mins Cooking time: 1 hour
2 Reduce by at least half and then add in the vegetable stock, double cream and milk. Mix together the cornflour and water to make a paste, and then add this to the sauce – stir together and allow to simmer gently for about 45 minutes. 47 3 Next add in the stilton (add more for a stronger flavour). Continue to simmer gently and stir the sauce to ensure the stilton melts through whilst keeping a consistent texture - you’re looking for a smooth creamy sauce. Add in some seasoning to taste. 4 Whilst your sauce is gently simmering away, sweat off the baby button mushrooms in a little bit of butter. Once ready, add them into the sauce and serve over a piece of toasted ciabatta for the perfect starter.
This sauce is very versatile and ingredients such as pancetta or even wild mushrooms can be used to create other dishes. A favourite of mine is pan fried chicken breast wrapped in pancetta with wilted spinach, creamy mashed potato and the port & stilton sauce. Enjoy!
Sesame Crusted Salmon with stir fried greens & teriyaki sauce
Serves 2 Prep time: 10 mins Marinate: Overnight Cooking time: 15-20 mins
Ingredients Café Bar
2 x 200g salmon steaks (skinned) 1 good handful of sesame seeds (toasted) 1 head of pak choi 1 handful of mange tout 48 (sliced length ways) 1 banana shallot (finely sliced) ½ julienne leek 4 tenderstem broccoli stalks 100ml teriyaki sauce ½ tsp grated ginger ½ tsp garlic puree ½ chopped red chilli (deseeded) Splash of fish sauce Splash of soy sauce Splash of sweet chilli sauce
A sweet piece of salmon steak marinated in teriyaki sauce for those subtle oriental flavours, coated in a crisp layer of sesame seeds and served on a bed of fresh wilted greens. Fish doesn’t need to be complicated, just well seasoned and lightly cooked so the flavours come through. An ideal dish for a simple lunch or supper with friends.
Method 1 Starting with the marinade, finely chop the chilli and add into a bowl with ginger, garlic puree, fish sauce, sweet chilli sauce and a little teriyaki. Once mixed, spoon over the salmon and put in the fridge to marinate overnight. 2 When you’re ready, coat the salmon in the toasted sesame seeds and place on a baking tray in the oven at 180°c for 12 minutes. 3 Whilst your salmon is in the oven, heat a good drizzle of vegetable oil in a wok and add in all of the vegetables. Keep the veg moving in the pan and cook to taste. 4 Once your vegetables are done (I like mine crisp and al dente) add in the remaining teriyaki sauce and season to taste. 5
When your salmon is cooked, place on a bed of veg and serve.
This is quite a light dish, if you want something more substantial you can add noodles or fragrant rice.
