Create your own Winter Centrepiece Follow these simple steps to create a beautiful winter candle arrangement for the centre of your festive table, using seasonal flowers and foliage to make a stunning focal point. What you need: • 10 inch wreath oasis ring • Scissors or secateurs • Foliage & flowers including Pine, Spruce, Waxflower, Hellebores, Roses, Chocolate Cosmos and dried Hydrangea. Step-by-step:

1. Soak the oasis ring in a large container or sink until the air bubbles have stopped escaping. 2. Remove the lower leaves from the foliage and flowers. Lay the stems on a flat surface with the heads hanging over the edge of your work bench to prevent bruising. 3. Cut the stems at an angle and push them into the oasis (at an angle) making sure they don’t pop through the other side. Keep adding foliage until you have a good coverage and are happy with the overall shape.
Seasonal plants you can give as gifts include, Miniature Cyclamen, Hellebores, Hyancinths, Skimmia ‘Rubella’, winter flowering Pansies and Wintergreen. Seasonal flowers to enjoy include, Anemone, Thistle, Euphorbia, Hellebores, Firecracker and Steel Berry.
4. Next, add your main focal flowers, following the shape of the oasis ring. Continue until you’ve used as many stems as required to create a full design, making sure you keep the centre free for your candle. 5. Pop your candle into the centre of the wreath - if it sits quite low, lift it up on a little block of wood or small flower pot so that you can see it. 6. Make the most of these chilly nights and treat yourself to a luxury meal without having to leave the house. Our head chef, Geof Broomfield, has created this modern winter menu, inspired by good old-fashioned comfort food.
Plump, fresh mussels draped in a creamy wine sauce, with garlic and onions. Perfect to start, with a glass of wine.
Ingredients:
Method:
1 kilo fresh mussels, washed & bearded 1 shallot, finely diced ½ leek, finely chopped 1 garlic clove, crushed 150ml double cream Splash of white wine Splash of vegetable oil Salt & Pepper Chopped Parsley
1. Take a lidded frying pan and put on a high heat before adding a splash of oil. Fry the shallots, leeks and garlic quickly, but don’t colour. 2. Next add the mussels and put the lid on to steam - after 2-3 minutes, the shells will start to open. Once they do, add the wine and reduce quickly. Discard any shells that don't open. 3. Finally, add the cream and bring to the boil. Check the seasoning and serve with chopped parsley and crusty bread. For an added depth of flavour, squeeze half a lemon over the mussels when serving.

A deeply-flavoured venison dish with a rich sauce made from red wine, port, dark chocolate and blackberries, finished with a golden puff pastry lid.
Ingredients:
Method:
1 kilo venison, diced 1 carrot, 2 sticks of celery, ½ leek, 1 white onion, finely chopped 1 garlic clove, crushed 1 punnet chestnut mushrooms, quartered 150ml red wine 100ml port 200ml beef stock Splash of vegetable oil 50g butter/50g plain flour 1 punnet blackberries Half a bar of good dark chocolate (70% cocoa content) 200g puff pastry
1. Put a splash of vegetable oil in a pan on moderate heat - add diced vegetables and garlic and fry for a few minutes. Add venison and seasoning and fry until sealed. Add butter and flour and coat everything well. 3. Now add 100ml of red wine, 50ml of port and all the beef stock. Bring to the boil, then simmer for 1.5 hours or until the venison is soft. Keep stirring as the sauce will thicken. 4. Meanwhile, in a separate pan, add blackberries, a splash of oil and put on a moderate heat – once the blackberries start to soften, add the rest of the port and red wine and continue to heat until fruit starts to breakdown. Turn the heat down and then add chocolate. Stir until combined and the liquid is smooth. 5. Take the puff pastry out and roll to the size you need to cover your pie. Cook in a moderate oven at 185c for about 15 mins on a greaseproof covered baking tray. Check every 5 mins to make sure it doesn’t burn. 6. Check venison stew for seasoning and softness of meat, then add your blackberry and chocolate mix. Stir well and check for taste – add more chocolate if needed. Once cooked, spoon into a bowl and top with the puff pastry lid. Serve with your choice of vegetables and potatoes - my favourite would be skinny fries and buttered kale.

A sticky sweet crumble, packed with apples and cinnamon and served with your favourite topping. The perfect winter pudding.
Ingredients:
Method:
Filling: 3 good sized cooking apples, peeled, cored and cut into chunks. Demerara sugar, to taste Sprinkle of cinnamon Splash of lemon juice Knob of butter
1. Add apple, sugar, lemon juice and cinnamon to a pan and heat quickly until the apple starts to break down. Add butter and turn the heat down.
Topping: 400g plain flour 200g butter 80g Demerara sugar Sprinkle of cinnamon
3. Put apple mix into an oven proof dish, then cover evenly with the topping.
2. Meanwhile, mix butter, flour, sugar and cinnamon in a bowl (top tip – slightly soften the butter, making it easier to mix with the flour). Be prepared to get your hands messy! Mix, mix and mix again, until you achieve a breadcrumb consistency. Place to one side.
4. Place in a moderate oven at 180c for about 40 mins. It will be ready when the crumble top is lovely and golden and the apple is bubbling up the side. Serve with cream, custard or ice cream, the choice is yours!
