As I write this, I’m enjoying the “cool” high nineties and low hundreds and thinking about how I can escape the summer heat. There are so many great casinos around the state, many in cooler locations, that it’s well worth calling the players clubs and asking for stay and play packages. Even if a cooler location is not for you, check out all of your options around the state. Most casino hotels have pools for the kids, or the grandkids, and there are plenty of casinos right on the Colorado river just for a change of scenery. Q: I see people looking at the side of a slot machine [as if] they see something that tells them [information] about the machine. Do you know what they are looking for? Marilyn Burns – Sun City, AZ A: Excellent question Marilyn! As our staff has built slots at the slot manufacturing companies, we know there are several pieces of information permanently attached to the side of any slot machine. The first piece of information is supplied by the manufacturer of the slot. This metal plate is riveted onto the side of the game and identifies who made it, when it was made, in addition to important serial numbers, model numbers, bar codes, and other manufacturing information. The second piece of information is supplied by the Arizona Department of Gaming (if you are looking at a slot in another gaming jurisdiction not in Arizona, like Nevada, then it will be supplied by the appropriate regulatory agency). This identifies the slot machine for their records but usually only contains a bar code and a serial number.

The final piece of information is applied by the local Tribal Gaming Agency. This also generally contains only a bar code and a serial number for their records. Casino patrons are most likely looking at the side of the machine in order to memorize their favorite slots’ serial number. In the event the device is moved by the casino the player can track down the game by the serial number and know they are still playing on the exact same unit. On some older slot machines, in order to comply with gaming regulations at the time, the sides of the units have physical meters attached to the inside of the device with small windows cut through the sheet metal in order for casino employees to look at the meters. Most of these meters, used for accounting purposes (such as credits wagered, credits cashed out, credits awarded as jackpots, credits paid as wins, etc.) are only available by accessing audit screens or is handled through software and is instantaneously sent via the casino's computer network to the accounting software used by the casino. The old physical meters are hard to see because the sides of slot machines are not well lit. When the meters were still in use, casino employees inserted a key into the slot machine and a light came on for accurate viewContinued on page 8

ing of the meters. The information was then copied down and transferred into an accounting system. We hope this answer helps you keep track of your favorite games! Q: Dear friends at the Arizona Gaming Guide, I have a question regarding the random number generator in slot machines because I had two similar incidents happen to me in Las Vegas and in Tucson. I hit two sizeable jackpots and in both cases the [slot] attendant said, “You should get such a jackpot about every 50,000 tries.” How do they figure that out? Will this average out over the life of the machine? Is this just a coincidence? I’m interested to know the answer! Thank you and you already know I enjoy your magazine!

The slot attendants are referring to the pulls-to-hit number provided by the manufacturer of the slot machine for gaming regulation purposes. This is not a coincidence! Plus, it makes sense that the casino would want to know how often, on average, over the life of the slot, they will have to pay out a particular jackpot on the slot. The calculation is performed by the slot machine’s game designer, who is a mathematician, as they are creating the game. Our staff has performed these calculations over and over again on the many games we designed working as game designers for several of the major slot machine manufacturers. Good luck! $

THE DREADED TAXABLE When A Table Game Win Matters To Uncle Sam

S

houldn’t we all be thrilled when we hit a jackpot, regardless of where in the casino Lady Luck shines upon us? Of course we should! But what usually happens is the devil on our shoulder starts yakking about taxes and W2-G’s and what to tell our significant other and that’s understandable because, oh my, taxables are confusing. For years, taxables were all about slots and keno. That’s why so many slots paid a top jackpot of $1,199, to stay under the radar! Keno was at $1,500 and nobody cared much about poker or table games, but then along came Caribbean Stud and regular poker tournaments and the slumbering giant Uncle Sam woke up. Taxables Today Not all games are taxed the same, because not all bets qualify to be taxed, or ignored by The Taxman. Fortunately, you won’t get whacked on regular wins at blackjack or Pai Gow, but if you hit Five Aces or a 7-card Straight Flush, lookout! You can expect any win that is both more than $600 and 300 times your wager (or more) to include a W2-G tax form. And, if your jackpot payout is more than $5,000 you can expect the casino to automatically withhold 25% of your payout. That’s right, you don’t get a choice, and neither will they. The good part is that you will have the ability to stop at the Player’s Club desk and ask for an annual win-loss statement, and if your other losses are greater than your jackpot win, you won’t owe any money – if you can itemize your taxes. Still, it’s always good to know what you will get taxed on. Some of the surprising things include any casino event drawings that add up to $600 over the year, and most poker tournament winnings. Many poker rooms simply give you a 1099 form with your winnings, after getting your Social Security number and checking your ID. As for table games, you have to remember the rule for taxables is a 300 to 1 payoff and $600 or more (yes, both must apply). So, when you make a straight flush on Let it Ride and get paid 200 to 1 on the regular bet, you are not taxed! If you have a $25 bet and win $5,000 it is all yours. The Uncle isn’t told about your win. But, if you have a buck on the bonus bet, you’ll win $2,000 and get taxed, because it pays 2000 to 1.

Likewise, if you hit a Royal Flush at World Poker Tour with a $10 bet on the bonus, the $5000 payoff at 500 to 1 is taxable, but you’ll get the whole five grand. If you bet $15, you’ll win $7,500 but the casino will withhold $1,875 and you’ll get $5625 to take home. Yeah, it’s weird. I think that’s the point. So, don’t be afraid of taxable jackpots, just expect to be confused. And, be appreciative, because they don’t come around too often. Enjoy every one. drive out to BlueWater’s River Willow. I always enjoy heading West from Phoenix and experiencing the build up to the beautiful scenery and the Colorado river in Parker, Arizona. Many of you may know my tastes by now, so it may come as no surprise that for my appetizer I selected the Broiled Maryland Crab Cakes and my guest picked the Caprese Salad, mainly so that we could share both dishes! The crab cakes were made with roasted bell peppers and were served with a Lemon Dill Aioli. The Caprese Salad was a delicious combination of the classic Mediterranean blend of Mozzarella, tomatoes, basil, and balsamic vinegar, yum! While my guest had the Veal Oscar (two veal cuts with crabmeat, asparagus, rice, and Béarnaise sauce), my mouth was watering over the Bacon Wrapped Scallops. Simple, elegant, and tasty, the five scallops were pan seared and served over Risotto. And for dessert, my guest and I shared the Bourbon Pecan Pie and the Tiramisu. A SAGUARO CELEBRATION The Tohono O’odham People Harvest Fruit Of The Desert

T

rying to survive off what the Northern Sonoran desert provides in the way of edibles involves feast or famine, so you take advantage of the seasonal good times. Despite what forager Euell Gibbons noted in his Stalking the Wild Asparagus book, that “the outdoors is a restaurant,” Mother Nature can be a stingy seasonal grocer in providing meals that are ready-to-eat. “It’s possible to live off of nature’s bounty,” writes Carolyn Neithammer, author of American Indian Cooking, “but it’s not an easy way to make a living. While our landscape can be productive, there is a difference between eating for pleasure and eating to survive.” Native Americans in this part of the Southwest did both when it came time for a seasonal cactus harvest and it’s that time of year again to enjoy the fruits of the desert, the sweet and juicy ripeness of the saguaro cactus. Tohono O’odham (Desert People) tribal members have conducted such harvests for centuries of summers and you’re invited to join them before the monsoons ultimately arrive in full force. “The fruit is afraid of the storms and often spoils if it gets too wet,” says long-time picker Stella Tucker who has been harvesting the ruby red offerings since early childhood. “My grandmother would send me out in the morning with a picking pole and firm instructions not to come back to camp until my bucket was full.” The Tohono believe the saguaro was first created when an O’odham child sank into the ground and became the first of its species --- thus establishing a kinship between tribal members and the giant cactus. “There’s meaning and tradition in the saguaros --- they’ve been part of my people forever,” Tucker says. She counts many years of watching as the saguaros’ white blossoms appear in late spring, then shrivel into fruit buds in the heat of June, ready to offer their fruity nectar shortly thereafter. Fellow tribal gatherer, Lois Liston, celebrates the process as an annual connection between her people and their relationship to the earth: “You may slow down, but you never retire from the harvest because it’s always fun.” Tohono O’odham tribal elder Edward Encinas has also endured

the heat and humidity during the harvest. “The desert returns to life with the arrival of the rain,” he says. “We gather the fruit to make jams, jellies --- and process some of it into wine --- as part of our rain feast ceremony to give thanks to the Creator for nature’s bounty.” Timing is part of the process. Tucker notes: “The saguaro fruit is afraid of the storms. Once moisture comes, the fruit may become damaged,” ergo, beat the monsoon downpour and pick prior to the monsoon downpours when possible. For the modern day adventurer, a word of advice: each saguaro pod yields a mere tablespoon of fruit, so don’t plan on feeding the neighborhood after just one short outing.

If you do give it a try, make sure the still-flowering cacti aren’t on private property before heading out with some simple tools. You’ll need something to knock the crimson quarry into your bucket. Native authenticity calls for use of a kuibit, a pole fashioned from two saguaro ribs joined together with bailing wire and a creosote branch attached to the tip. Truthfully, any lightweight “T-” or “L-“ shaped tool that can be held upright and reaches the tall fruit will do the job. “You can make pickers as tall as you want,” Tucker says, “but the longer the poles are, the harder they are to handle, especially when the wind blows.” Instead of taller poles, look for shorter cacti. Ideally, one harvester knocks the fruit free while the other tries to position a catch bucket underneath so the fast-falling redness drops into the bucket. It doesn’t always happen that way and the fruits that don’t fall into the container generally splatter beyond recognition on impact --- much to the benefit of the birds, javelina, coyotes, rodents, and other desert critters who also seek a bit of sweetness in their own diets. For the one-time adventurer, retrieving handfuls of fruit to be eaten immediately will probably complete the experience. Use the hard stems of the pod to slice open the skin of the bloody red fruit if you insist on adhering to the authentic process, but a sharp Swiss Army knife provides a good alternative. (Note to denture wearers: the sugary pulp of each fruit contains as many as 2,000 seeds. You’ve been forewarned!). If you’re interested in going a step further and spending a day in the outdoors gathering, make sure your picking pole is comfortable in your hand and bring a bucket, wide-brimmed hat, long-sleeved shirt, sunscreen, and plenty of water. And while you’re getting excited about all the discoveries above you, be sure to also keep an eye on the ground around you. This is the desert and we’re not the only ones who make our homes here.

Skim off the seeds, grass, stones, and other unwanted items with a strainer and separate liquid and fiber with a close-meshed screen. Pectin-packed fiber can be dried into a tasty fig-like byproduct. The syrup is boiled a second time and strained through cheesecloth into a very pure, thick, and very

ast week I was waiting my turn in line at the Player’s Club at a casino in Arizona when I overheard a very interesting conversation between a patron and a representative of the casino. Essentially, the patron was attempting to make the point to the employee that her offers were consistently bad. The employee, to their credit, remained composed and friendly as I’m quite sure they deal with this situation all the time. What struck me was the clear and succinct manner in which the explanation was made to the patron. Allow me to summarize what is conclusively affecting your offers: 1. Every time you show up and present your player’s club card to be swiped in any way at the casino you are presenting the casino with a record of your value to them. 2. Think about how many times you actually earned a lot of points on your card as opposed to the times when you earned

just a few (or perhaps none because you just got a comped meal or a free gift). What, exactly, is your average number of points earned per trip to the casino over the past 12 months? 3. Look at it from the casino’s perspective. What does it take to get you through their doors? Is it $10 in free slot play, a free $15 buffet, or a free $20 gift? (retail price—not the casino’s cost!) 4. Finally, examine exactly what the casino is getting from you. Are you a consistent player, or are you a fly by night player? $

FUN FACTS ABOUT ROULETTE This Popular Gambling Game Has Roots To 1796 In Paris, France

oulette is French for “Little Wheel” and as many of you know players place wagers on one or more numbers, the color of the number (red or black) or whether the outcome is odd or even.

made gambling illegal in the 1860s, Roulette moved to Monte Carlo, the last country in Europe to allow legalized gambling. Since the 1860s, the game has continued to flourish across the globe in countries allowing legalized gambling.

A croupier determines the winning number by spinning a wheel in one direction and then spins the ball (used to determine the outcome) in the opposite direction! Eventually the ball falls into one of 37 (for French or European Roulette including the outcomes 0-36) or 38 (for American Roulette including the outcomes 00 and 0-37) colored and numbered pockets of the “Little Wheel.”

Interestingly enough, the casino employee who directs the game is referred to as a “croupier” which originally meant “one who stood behind a gambler” in order to provide access to additional funds during a gambling session. The word was derived from “croup” which means the rump of a horse. But not in the sense of the rear end and all of those negative connotations, but in the sense of riding behind on horseback in support of someone else.

The current game of Roulette was played in Paris in 1796. In the 19th century, Roulette became popular and spread across Europe and the United States. When the German government
