the foodie May - June 2013 what to expect in our latest issue Claire Borg prepares a new set of receipes for all our readers to enjoy. With summer on the horizon and everybody preferring a light meal, Claire suggests some tasty snacks and salads with grilled vegetables. Add in some delicious burrata from our delicatessen and you are all set. Also enjoy our ice-tea feature. Perfect for a group party or to keep something ice cold in the fridge, we are sure many of our customers will experiment on their own ice-tea recipe this Summer. We would like to know more and therefore any suggestions of your own would be greatly appreciated by dropping in a simple e-mail at info@thefoodie.com.mt. We promise to share all entries! We also take on crostini which can be a quick and easy snack or a prelude to a tasty summer meal. Don’t forget the wide range of freshly baked breads available at Arkadia Foodstore which are delivered on a daily basis from Monday to Sunday. We also put in a small note to highlight our gluten free range available for our celiac intolerant customers.

The Thrill of Grilled Vegetables With Summer around the corner, most of the local vegetables that are available are wonderful served grilled. Aubergines, peppers, zucchini (marrows) are the three stars of this set of recipes. You can prepare them ahead and use when and as needed. Served as a simple antipasto, as a side dish or an ingredient in one or more dishes, these grilled veggies, shall bring taste and colour to your table. Simply slice, brush in oil and grill on a hot grill or over a BBQ. Recipes & Photography by Claire Borg

Ingredients To fill a loaf (serving 6) you shall need 2 Grilled & Peeled Peppers – sliced 4 Sliced & Grilled Zucchini 1 Sliced & Grilled Aubergine Basil Leaves Sliced Mozzarella – about 200 grams Sliced Emmenthal Cheese – about 200 grams Crusty Loaf Olive Oil Salt

Ingredients Yield: Serves 4 500 Grams Pasta of Your Choice 200 Grams Local Sausage 1 Tbsp Chopped Garlic Some Olive Oil Handful Basil Leaves – finely chopped Grilled Augergines – a small one Grilled Zucchini – 4 small ones Grilled Mushrooms – about 100 grams Grilled Red Pepper - 1 Chilli Flakes or Black Pepper to Taste

Method Cut open the top of the bread and remove as much of the white part as possible. You will need hollow bread with the crust intact. Fill the bread with alternating layers of vegetables, cheese and basil leaves until you reach the top. Close the bread and rub the outside crust with a little olive oil and a sprinkle of salt. Wrap in baking paper and foil and bake in a hot oven set on 180 degrees for about 25 minutes. Then open the foil and paper and bake for another 10 minutes. Rest a bit before slicing.

Method Remove the skin from the sausage, crumble and together with the garlic cook gently in some olive oil for a few minutes. Turn off the heat and add chopped grilled vegetables and basil leaves. Mix well. Cook the pasta according to the pack instructions. Drain and toss with the vegetables. Add some olive oil and season to taste. Serve warm or cold.

warm grilled apple, brazil nut & chicken salad Ingredients Yield: Serves 2 1 Green Apple Baby Spinach Leaves Radicchio Olive Oil Salt &Pepper Chicken Breast (marinated with curry & lemon) 2 Sliced Grilled Zucchini 8 Brazil Nuts Olive Oil

Method In a non-stick pan, cook the marinated chicken, adding a little white wine whilst cooking to keep in moist. Meanwhile, wash, core and thickly slice the apple. Brush with a little oil and grill. Mix the spinach leaves and thorn radicchio leaves and place on two plates. Drizzle with a little olive oil. Shop some brazil nuts and sprinkle on salad. Add the grilled zucchini. When the chicken is ready, cool slightly and slice. Place the chicken and grilled apple on the salad bed and serve.


Indulge in some delicious burrata Burrata is a fresh Italian cheese which is made from mozzarella and cream. The origin of burrata is the south Italian region of Puglia. Many people mistaken think that burrata is Mozzarella di Bufola. Actually burrata is creamier as it name means “buttered” in Italian. Burrata has an solid outer shell similar to Mozzarella di Bufola and once broken oozes with a cream inside. Burrata is a perfect summer treat to compliment with a nice antipasto of cured Italian hams, some fresh rucola, and beefsteak tomato. You can purchase burrata from the delicatessen at Arkadia Foodstore in both Portomaso and Gozo.

More soft cheeses to consider with your salads this summer: Ricotta - don’t underestimate the creaminess and lightness of some fresh ricotta. You can purchase fresh local ricotta by the gram from our delicatessen. You can also find baked ricotta with lemon – which is delicious! Soft Goat Cheese -

our delicatessens offer a wide variety of soft cheeses made from goat milk. There are quite a few options to choose from which mainly originate from France.

Taleggio -

this is a strong Italian soft cheese made from cow milk. Taleggio has a thin crust and mild flavour.

Feta - the popular Greek cheese is another popular option to consider. You can purchase by the gram from our delicatessen in a plain or marinated format.

cranberry, ginger & apple ice tea Ingredients per glass 1 Cranberry Tea Bag 70ml Boiling Water 6-10 Ice Cubes Sliced Green Apple & Ginger 1 Tbsp Honey A Squeeze of Lemon

Method Boil water and infuse tea bag to make a very very strong tea. Stir in the sugar or honey until it all melts. Remove tea bag, add lemon juice, stir and add the fruit and ice cubes. Do not add water, the cubes will start to melt quite quickly! Chill in the fridge if you need to cool down further. cranberry, ginger & apple ice tea

Crostini

In Italian meaning little toasties. More commonly we know it as a bruschetta. Crostini are another term for grilled or toasted sliced baguette style bread. Served at parties, as a starter or with drinks‌. perfect topped with anything you like. We have come up with three of our favourite toppings, ideal for the hot months to come.

You will need A Grilled sliced crusty baguette (or any bread of your choice)

Toppings soft goat cheese – walnut - honey caramelized onion – marinated white anchovies – black olives Cook finely sliced onions in a little butter until soft. Add 1 tbsp balsamic vinegar and 1 tbsp sugar and cook until golden.

fresh mussels – basil – cherry tomato In a little olive oil, cook some sliced garlic, a few cherry tomatoes and some basil. Add a dash of white wine, the cleaned mussels and toss together for 2 minutes. Add more fresh basil leaves and black pepper. Serve immediately.
