Dinner

Tagliata of Five Pepper Corn-Crusted Beef fillet

Ingredients (Serves 4) 800g beef fillet, trimmed of sinew (200g each ) 150g five peppercorns Sea salt Vegetable oil Method Preheat oven to 180C. Crush peppercorns in a grinder until coarse. Pour pepper evenly onto a tray, adding some sea salt. Roll fillet pieces over pepper and press into meat so it sticks and forms a crust. Heat oil in a fry pan or barbecue hotplate until very hot then brown the fillet, to seal it, on all sides. Place on a tray in the oven for approximately 10 minutes to cook the fillet rare, 15 minutes for medium and 25 minutes for well done. Remove from the oven and rest in a warm place for 10 minutes. Pepper tip: Before crushing the pepper to roll the beef, dry fry the whole peppercorns in a frying pan or roast them in the oven for five minutes. This brings out the essential oils and aroma.

Tropical Fruit Crepes

T: 2133 3434

Method Combine all ingredients into a blender and mix until well-blended. Important: Refrigerate the batter for at least 30 minutes. This gives the batter the opportunity to rest and fully come together. Place your preferred pan on a medium-hot burner. Once hot, brush with a little oil or butter. Pour 2-3 tablespoons of batter onto the pan. Remove pan from the heat. Swirl pan around until batter coats the bottom. Some batter will roll up to the sides; you will get a thin, crisp edge. Return pan to burner. When the edge turns light brown—the crepe itself will become golden brown—flip the crepe Cook the other side for about 15 seconds until done. Chop kiwi, pineapple, mango and strawberries into ¼-inch pieces. Combine with blueberries. Add lime juice, honey, zest and mint and coat fruit well. Put in refrigerator and let chill for 10 minutes. Remove fruit from refrigerator. Drain well. Assemble crepes: Lay each crepe on the final serving dish. Spoon ½ cup of fruit mixture into each crepe and roll up, garnish with 1 tablespoon each of toasted coconut and macadamia nuts. Repeat with remaining crepes. Serve immediately.

Ingredients For the crepes 210g all-purpose flour 4 tablespoons melted butter 430 ml milk 3 eggs 1 tablespoon granulated sugar pinch of salt For the filling 2 kiwi fruit, peeled 70g of diced pineapple 1 mango or 2 oranges, peeled 10 fresh strawberries, washed 70g cup of blueberries, washed 1 tablespoon of lime juice 1 tsp of lime zest 2 tsp of honey 50g of toasted coconut 50g of toasted macadamia nuts 1 tablespoon of fresh mint leaves, chopped
