I

spent Sunday afternoon bushwhacking through the woods along Bayou Meto looking for Miss Piggy, a fat, white sow who had disappeared into the green jungle to have her litter. The woods in our creek bottoms are close and dim, thick with briars, fallen timber and sweetgum. The bayou was invisible through the thicket but its nearness meant my chances of coming across a cottonmouth and Miss Piggy was about the same. In the past, both our sows have disappeared into the woods to have their piglets. When Abby disappeared, we found her and her family within a day and brought them to the safety of a tin shelter behind electric wire. Not so with Miss Piggy. It was a race to find the piglets before the coyotes did, and when she finally reappeared it was without her babies. When I came out of the woods, I felt like tick bait, in need of a bleach bath and a beer. I had lunch not long ago with Katie Short of Farm Girl Meats, a small but sophisticated Animal Welfare Approved hog, chicken and beef operation near Perryville. I remarked how much I preferred working with plants rather than livestock. It is amazing how fast a ewe with a broken leg can run when you are trying to catch her to splint the fracture. Katie couldn’t have disagreed more and it was clear that she, like my wife, Kaytee, had that gift with animals. When I walk into my field of vegetables and cut flowers, I can feel my blood pressure change. It is where I belong. We planted about 900 heirloom tomatoes a few weeks ago and they are almost tall enough to tuck into the first level of crossed orange baling twine that we use to support the plants. We use what is called a Florida Weave which uses fewer tomato sticks and is faster. Carbon, Ananis Noir and Goldie are my main crop heirlooms, but every year I will experiment with different varieties. I have planted 36 Cherokee Greens, a large bright green open pollinated tomato that has gotten rave taste reviews. In addition there is Cherokee Chocolate, an absolutely stunning reddish brown tomato, Oaxacan Jewel, a huge red and gold bicolor from southern Mexico, Nepal, an Asian variety that has won numerous blind taste tests and Indian Stripe, an Arkansas heirloom. Most heirlooms are scarce for good reason, usually because they are poor producers, crack when you so much as look at them or they die at the slightest opportunity. Of the 100 or so varieties I have grown over the last several years, Vorlon (similar to Carbon), Purple Bumblebee (red with green stripes) and Sungold, both hybrid cherry tomatoes are the only ones that I have replanted outside my main three. This is written in May, before the 100-degree days, 100-percent humidity, thorned pig weed and stink bugs of July. Talk is cheap in May. Yet there is something to be said in favor of July…ripe heirloom tomatoes, fresh basil, caprese salad every night, Kentucky Wonder pole beans in salt meat, fried red bell peppers with capers, blackberries, Nickel green beans barely blanched, Moon and Stars Watermelon, purple hull peas, Ambrosia cantaloupe and so, so many flowers.

T

he crops aren’t the only things growing this spring. I added it up the other day and realized that we added over 125 new farms to our Arkansas Food & Farm listings between our 2015 Fall Harvest issue and the issue you’re holding right now. Some of those farms are run by families who have tilled the Arkansas soil for generations, while some are brand new—and we couldn’t be more excited to meet every single one of them. It’s been a joy to see the growth experienced by the Arkansas Agriculture Department’s Arkansas Grown program, and a privilege to work with Agriculture Secretary Wes Ward, Deputy Secretary Cynthia Edwards and all the other great folks who have made Natural State agriculture their passion. The number of farms enrolled in Arkansas Grown has more than doubled in the past three years, and I know for a fact there are plenty more where those came from. One of those new farmers is Damon Helton, a former Army Ranger who now raises sustainable beef, pork and chicken outside Hot Springs Village, selling his wares at his own store, the Olde Crow General Store. Damon was the very first member of Arkansas’ Homegrown by Heroes program, and I had an utter blast hanging out at his farm and store for our cover story. And when you go pay Olde Crow a visit (not if—y’all have to go), be sure to get a slice of pie. This is also our restaurant issue, because we love the folks who cook up all this great Arkansas food as much as we do the people who grow it. Chef Peter Brave of Little Rock’s Brave New Restaurant let us into the kitchen to meet his long-time collaborators from Armstead Farms, and on page 16, you’ll find our ever-expanding farm to table restaurant guide for the state. Coursey’s Smoked Meats is an Arkansas tradition by Kat Robinson

F

or many Arkansas travelers, a trip to the Buffalo National River or a journey along U.S. Highway 65 in northern Arkansas is simply not complete without a visit to Coursey’s Smoked Meats. The small collection of buildings on the west side of the highway may not look like much from the road, but the heavenly scent that emanates from the cured hams and turkey breasts is enough to make even drivers who aren’t hungry hit the brakes. Coursey’s was opened in 1945 by Lynn Coursey, a gourmet chef who moved back to St. Joe around the end of World War II. The classically trained culinarian could have made his mark in fancy restaurants, but instead set up shop on an unpaved road in the heart of Searcy County. As his grandchildren tell it today, Coursey wanted to spend his life engaged in something that would allow him to talk with folks—and to him, a good way to do that was to bring in customers traveling through the Ozarks. 12

When he first started curing his famous hams, Lynn hung them in an old log smokehouse with a dirt floor that still stands today. He would tie each ham to a nail in the wall, then place an old dry-goods box around it, smoking the meat with hickory for hours. Once the ham was cured, he’d pull it down, take off the box and hang the meat by the string inside his little shop—cutting each down as it was either sold or appropriated for slicing a pound or two at a time. Today, the smoking is done in a concrete block building, but that wafting essense of salt brine and wood remains. Some days, you can even catch a whiff all the way down on the Buffalo River at Grinder’s Ferry. These days, there is more than just ham on offer at Coursey’s. Turkey breasts also appear hanging, as do big ropes of summer sausage. There are also big hunks of smoked bacon redolent with the lush, salty flavor imparted by the smoke. Coursey’s gets its meat from

Petit Jean Meats, so there’s already a significant level of excellence involved even before the meats are hung for the smoking. Coursey’s Smoked Meats is managed today by John and Mary Lu Coursey Neal, Lynn Coursey’s grandsonin-law and granddaughter. The great-grandkids and great-great-grandkids are also involved in the business— smoking hams and bacon, turkey and summer sausage, Swiss and cheddar cheeses. The store also sells jams and jellies, honey and jerky, and you can pick up a beverage out of the cooler if you like. You can order a whole ham or a half, a turkey or just some sliced meats, wrapped in white wax paper taped on the open end. Occasionally shrinkwrapped bags of ham and bacon ends are available, and 14

they are perfect for making ham salad or throwing in a pot with beans. For travelers, sandwiches are always an option, and you can have any of the meats and cheeses in combinations lovingly sliced, slapped onto bread and wrapped in white paper to take with you. Here’s a hint for you—if there are ziptop bags full of bits of turkey or ham or cheese, get this for your travels home. These little $2 snack bags are a bargain and they’ll keep you from breaking into your paper-wrapped package before you get home. Because when it comes to Coursey’s, it’s hard to resist that old-time artisan taste. Coursey’s has no website, but if you want a ham, bacon, turkey or cheese shipped to you, call 870-438-2503.

estaurant kitchens are almost always exciting and electric, with a bustle of chopping, cleaning and sautéing punctuated by the good-natured ribbing for which cooks are known. A well-run kitchen is like a purring hot rod, everything well-oiled and moving in rhythm as the crew gets ready for another lunch service. Chef Peter Brave and his team have been at this for over 25 years, and the ease with which everyone moves in the kitchen and prep area of his namesake Brave New Restaurant in Little Rock is a testament to that longevity. Peter has consistently been ranked as one of Arkansas’ top chefs, a reputation he credits to the quality of his ingredients. “If you have an awesome product, our job is easy: don’t overdo it,” he says, gesturing to a basket of produce from USDA-organic certified Armstead Farms in Jerusalem filled with fresh potatoes, bright Shunkyo radishes, crisp red and green romaine, heirloom baby beets and purple chive blossoms so light and airy it looks as though they could float away.

“I’ve been buying from Sue and Rusty at Armstead for over a decade,” Peter says. “I started buying wonderful potatoes from them at the Little Rock Farmers Market, but they’ve expanded into some of the most wonderful produce around. When heirloom tomato season kicks in, they really knock it out of the park. There’s just an unparalleled attention to detail.” It’s clear the chef is excited about local produce, because using local allows Brave New Restaurant to offer flavors available nowhere else in the world. Gesturing to a pint of fresh-picked strawberries from Faulkner Lake Orchard in North Little Rock, Peter beams. “I met Karen Martin [of Faulkner Lake] out biking, and now I get some of the best strawberries, peaches and other things from her,” Peter says. “That’s how local relationships work.” With a quick flourish of his knife, the chef turns raw produce into plate-ready ingredients. Those Arkansas strawberries become the basis of a decadent strawberry shortcake garnished with mint grown out on the restaurant’s legendary riverfront patio. Bright radishes and beets join crisp, colorful lettuce for a spring salad that doesn’t require much of a dressing to become divine. And those potatoes? The chef lets them speak for themselves, boiling them until soft, then finishing them in butter with just a touch of salt and pepper. It’s all part of why the simple, yet luxurious, dishes at Brave New have remained so popular over the years. Armstead and Faulkner Lake Orchards are just two of the local farms from which Peter sources ingredients. Growers from Grass Roots Co-op (Ariel Farm, Arroyo Family Farm, The Farm at Barefoot Bend, Cedar Creek Farm, 26

Dettelbach Farms, Falling Sky Farm, Freckle Face Farm, Fresh Food Farm, Fruit of the Vine Farm, Restoration Farm, Shumate Farm, The Wright Place, Onyekwelu Farm and The Other Side Farm) have a year-round place on Brave New’s menu, while farmers from India Blue Farm in Cabot, and Arkansas Natural Produce in Malvern add their own heirloom tomatoes, fresh greens and spring mixes to the repertoire. While it’s always nice for a farmer to drop the goods off right at the restaurant door, Peter doesn’t mind getting his hands dirty, often waking up before the sun to go pick fruit himself. “Not many restaurants can say the chef picked the fruit you’re about to order,” he says with a laugh. “I go up to Peach Pickin’ Paradise in Clarksville for some of the best peaches I’ve ever had, and I get blueberries from Ples Spradley, a guy I’ve known since we were kids.” The reason behind picking the fruit himself is two-fold: First, it allows him to choose fruit he knows will meet his exacting standards. Second, it gives him another way to promote local farms. “You can eat peaches on our menu and we’ll tell you where to go pick them yourselves. Same with all the produce we use—we want everyone to support farmers like we do.” The recent rise in “farm to table” as a foodie buzzword is a source of both pride and amusement for Peter Brave. He’s thrilled that more people are interested in where their food comes from, but for him, using local ingredients as much as possible is just what cooking is all about. “The South has one of the richest food cultures in the world,” he says. “We act sometimes like we’re reinventing the wheel, but these simple flavors using local ingredients have been around forever.”

BRAVE NEW RESTAURANT SHORTCAKE INGREDIENTS: ½ cup sugar 2 ¾ cups flour 4 teaspoons baking powder ¼ cup butter 2 eggs 8 ounces sour cream 1 teaspoon vanilla DIRECTIONS: 1. Preheat oven to 425°. 2. Combine dry ingredients in a bowl, and cut in butter with a fork. In a separate bowl, combine eggs, sour cream and vanilla. 3. Mix the dry ingredients with the egg mixture until blended. 4. Measure out an ice cream scoop portion of the dough onto a baking pan lined with parchment paper. 5. Bake for 20 minutes until golden brown.

FRESH STRAWBERRIES INGREDIENTS: 4 cups Arkansas strawberries, sliced and cored 1 cup sugar 2 tablespoons Grand Marnier Fresh mint sprigs (optional) Whipped cream (optional) DIRECTIONS: Mix the berries, sugar and Grand Marnier in a large bowl. Allow to chill for at least 2 hours. Use berries to top shortcakes. Garnish with mint and whipped cream if desired.

ith 160 acres of timber and pasture, there’s always somewhere Arkansas’ first certified Homegrown by Heroes member, Damon Helton, needs to be. Right now, it’s chasing off a couple of farm dogs who have decided there’s nothing more delicious in the world than a bowl of feed laid out for the small flock of ducks he’s recently added to his Farm at Barefoot Bend in the small central Arkansas community of Crows. Damon, along with his wife and four children, have been farming this plot of land outside Hot Springs Village for two years now—which is also the sum total of years the former Army Ranger has been a farmer. “Farming is harder than being a Ranger,” Damon says, a bold statement from a man whose service took him to both Iraq and Afghanistan. “You have to do it all on your own. You can’t tell a chicken to ‘suck it up.’ But I really enjoy all of it.” He feels that agriculture is a natural fit for veterans. “We’re used to getting up early, used to discipline. And we’re used to getting dirty.” Damon and his wife, Jana, decided to get into farming once Damon’s time in the service was up. Neither of them grew up in farming families, so the choice meant learning an entirely new way of life literally from the ground up. “Having children, I worry about what they’re eating,” Damon says of his dedication to using certified naturally grown farming methods. “And there’s just something about raising kids in the country that I find appealing.” The Heltons’ first step in learning to farm came when they discovered the Southern Sustainable Agriculture Work Group, commonly known as Southern SAWG. The group’s focus on providing education and outreach to farmers was instrumental in developing their farming philosophy, from learning sustainable agricultural practices to developing plans for the business side of farming. The lessons learned from Southern SAWG inspired the Heltons to move beyond just farming their piece of land into creating relationships across their community. To this end, the Heltons purchased an old store known as Crow Station just a mile from their farm, rebranding it in 2015 to the Olde Crow General Store. The initial concept for the store was to operate an old-style mercantile full of farm supplies and convenience items, a plan that has evolved greatly over the store’s short existence. “We discovered that people could get a lot of the things we sold anywhere,” Damon says of the sundries the store originally carried. “What they were hungry for was delicious, local food. And so we transitioned into making Olde Crow into a place where people could get farm-fresh meat, eggs and produce.” Step into Olde Crow today, and one thing immediately draws the eye: a series of shiny, stainless steel freezers advertising grass-fed beef, pastured pork and free range chicken from both the Heltons’ farm and the Grass Roots Farmers Co-op, an organization of Arkansas farmers to which the Heltons belong. Branding from the co-op and from Arkansas’ Homegrown by Heroes program lines the walls, and when Helton mentions also being part of the Foodshed Farms initiative from Heifer USA, it’s clear how serious he is about fostering a sense of connection between his fellow farmers. 30

Balancing the store and the farm is a never-ending job, but it’s one that Damon takes to with relish. “We get people from Hot Springs Village who come in and ask where the meat is from. When I tell them it’s from a farm a mile away— and that they’re welcome to come visit—people are amazed. And they come back,” he says. On any given day, the store is full of those newly minted regulars and first-time visitors perusing the store’s products, then settling in with a piece of homemade pie or cobbler. It’s clear that Olde Crow is more than a place to shop; it’s a destination and food hub all in one. And Damon Helton is right in the middle of everything, talking to customers he’s met for the first time like they were family. “I love what I do,” says Damon. “At 2 a.m. out in the rain, I still love it. Feeding your family feels so good. Feeding my community feels good. So I feel good at the end of the day.” And for everyone who knows the value and joy of eating local, lovingly raised meat and produce, getting a part of that good feeling is as simple as a visit to Olde Crow. Agriculture has been an important foundation to Arkansas’ economy since statehood, and some of the state’s farm families have been working the same land for much of that time. To honor the longevity of these farms, the Arkansas Agriculture Department founded the Arkansas Century Farm program in 2012, and to date there are 297 farms that have been certified as continuously operating for over 100 years. The 2016 application process is now open, and will be through May 31. The criteria is as follows: • The same family must have owned the farm for 100 years by Dec. 31, 2016. The line of ownership from the original settler or buyer may be through children, grandchildren, siblings, and nephews or nieces, including through marriage and adoption. • The farm must be at least 10 acres of the original land acquisition and make a financial contribution to the overall farm income.

The taproom is usually full, but the bar maintains a steady pace that doesn’t keep anyone waiting very long for drinks. Damgoode Brews 500 President Clinton Ave., Little Rock 501-664-2239 damgoodepies.com Damgoode Pies has been a name in Little Rock dining for some time, but it was when the pizza chain took over the former Boscos Brewing space in Little Rock’s River Market that it became a name in craft brewing, too. Frequent collaborations with master brewer Josiah Moody have elevated Damgoode into the top tier of Arkansas breweries right from the start. Diamond Bear Brewing 600 N. The rise of competition didn’t catch Russ Melton’s company flatfooted, though—the brewery expanded its production facilities with a move to North Little Rock and added a tasty pub grub menu with its Arkansas Ale House taproom. The group’s foray into brewing has been a popular one, with an always-packed taproom and a lineup of cans hitting store shelves all over.
