It’s going to be an exciting time in Mansfield in 2019. The momentum our city has seen over the last few years will continue. We can look forward to the completion of new infrastructure in Historic Downtown Mansfield that will transform Main Street into a pedestrian-friendly destination. The next phase of The Shops at Broad is expected to open in late 2019 bringing new retail and restaurants to our residents and to visitors. Just recently the developer announced that Belk, TJ Maxx, James Avery, 54th Street Bar & Grill, MOD Pizza, My Eye Lab and Starbucks will join the already-opened Academy Sports + Outdoors and At Home and already announced Flix Brewhouse. And there’s more to be announced. Stay tuned!

We continue to see people move into Mansfield as the southern portion of our city is transformed from open fields to neighborhoods with families making memories. Thousands of children received bikes this Christmas thanks to Mission Arlington “Bikes for Mission Arlington” program. Approximately 2,600 bikes were collected this year! The volunteers caravanned through town with a police escort, fire trucks, and sirens as they made their way to drop off bikes to Mission Arlington.

Dr. Sails shared with us an example of this approach in action. In her practice she had a patient who was neglecting her diabetes and hypertension medicine. Once she gained her trust, Dr. Sails discovered the patient feared for her life, at the hands of a drug-addicted daughter who—among other things—was selling her medicine, to fund her drug habit. Dr. Sails helped the patient get out of this dangerous situation, find a
place to stay, and obtain the social services she needed. Once the patient was in a place where she could manage her medicine and money, and feel safe, Dr. Sails and the patient could partner to address her diabetes and hypertension and her health improved tremendously. This is just one of many patients who has received another chance at a healthy life thanks to a doctor willing to meet them where they were and extend the grace of God. Dr. Sails is an active member of Arlington Seventh Day Adventist church where she’s involved in outreach, leads life groups, and is the former health ministry’s leader. She and her family also support Revive Community Service.

When I first met Judy Kennedy, I would have never guessed the confident, attractive, articulate woman was a true trophy of God’s grace. I had the privilege of hearing her testimony a few weeks later—from a traumatic childhood to tumultuous teen years, God rescued her and anointed her for full time ministry. As she often states, “What the enemy meant for my harm, God used for my good.” Now, Judy is releasing her life story in a book entitled, Holy Crap. Here’s a preview of her story: Having been raised in a home with six children and a severely alcoholic father, I experienced extreme dysfunction in a family. Many nights we feared his arrival, and often my mom would sneak my siblings and me out a back window and take us to a run-down motel for the night. That life experience has given me the ability to work with and minister to children of alcoholics and victims of domestic violence. At the age of 14 I was raped, abused, and tormented by a young man who was my “first date.” His abuse continued for more than six months. Shortly thereafter, I was connected with a “counselor” in a church who was supposed to help me through that traumatic experience. Instead he began to groom me to have a relationship with him. Though he was married, he controlled every aspect of my life—sexually, mentally, and physically and abused me both inside and outside of the church. This went on for over five years until in desperation, I went to the pastor [my pastor] for help. Rather than help, the pastor admitted that he knew all along what had been transpiring and offered no sympathy or reprimand to the offender. While these life experiences were devastating, God
has used them to open doors to help others. I speak at schools and conferences, teaching young women to respect themselves and to recognize abusive boys/men and avoid risky behavior. I speak into the lives of pastors and staff members regarding safe guarding their churches against child predators. A few years later I met and married the love of my life and we had our first child, Zac. He passed away at only 14 months with a heart condition. God walked me through that very challenging season of grief and inspired me to write a small book to help young mothers who experience the loss of a child. Now, Zac’s story is placed in “Angel Packets” to go home with mothers at Children’s Hospital when they have to deal with death. The enemy’s plan was to take me out. God’s plan is to use my life to minister to broken people. The pain I’ve experienced has awakened a determination to spend the rest of my life making my enemy regret he ever messed with me! Judy is the co-pastor of Mustang Creek Community Church in Forney, Texas. She and her husband, Robert, and their grown daughters, Stacy and Kaylee, minister full time in the church, in their community, and beyond. The sincere devotion they have to follow Christ and live Biblical values in not only inspiring, but it is making a difference. Judy is a trophy of God’s grace, and with her husband, has produced a righteous legacy. God’s redeeming love and restorative abilities never cease to amaze me. How ironic is it that I’ve been putting off writing this article on procrastination? Okay, not really (editor’s note: good) but I am writing it now to avoid writing something more pressing, making me the quintessential procrastinator. While many people associate procrastination with laziness, there’s a distinct difference. Procrastination is choosing to do something else instead of the task you know you should be doing. For instance, I wouldn’t dream of plowing through a season of TV on a work day, but I sure will clean my house, get caught up on laundry, and cook dinner at 10:00 AM to postpone doing the things I should be doing. And while those are all positive things, avoiding tasks we should prioritize can make us feel guilty, ashamed, demotivated, and disillusioned. Ultimately, it can make us less productive—jeopardizing our long-term goals.
PROCRASTINATION AND YOUR HEALTH
With that in mind, here are a few tactics that help me procrastinate less. •

Experts agree that procrastination can negatively affect your health.
First, forgive yourself for past procrastination. Studies show that self-forgiveness helps you feel more positive about yourself, which reduces the likelihood of procrastinating in the future. Begin with the task you least want to do. Get it out of the way as early as possible. Then you can spend the rest of the day concentrating on work you find more enjoyable while feeling the satisfaction of having the bad one out of the way. If you work on deadline, like I do, let those assigning your work know that you are in fact a deadbeat who should ALWAYS be given a deadline (even if they just make one up). Begin with the end in mind. Few things make me feel better than getting to the end of the day knowing I’ve accomplished what I set out to do. Try to remember how that feels and work toward that feeling.

Ask someone to hold you accountable. When my workload is heavy, I tell my 16-year-old son how much I plan to write while he’s at school. The little taskmaster takes his responsibility seriously too, asking for proof of what I’ve written each evening. Online tools such as Procraster can also help.

Minimize distractions. Social media is a major productivity killer. So is television and even the radio. Make your work space a distraction-free zone.

Regardless of the content, you may have aimed too high, missed right away, and trashed your goals completely!

Alas, all is not lost. You are not alone in your desire for change, but most of us do not achieve the goals we set because we take the wrong approach. We’ve been taught to make resolutions and walk them out day by day for three weeks until they become a habitual part of our lives. Scientific research reveals, however, that the 21-day approach to forming a habit is a myth. It takes our brains much, much longer to create neural pathways that result in habitual behavior—that is, behavior that doesn’t require any forethought or effort, but is like second nature. Apparently, we do ourselves a disservice by setting lofty goals. Failure is inevitable because instead of triggering the “reward hormone” when we complete a task, we trigger feelings of guilt and self-loathing if we don’t execute accurately in the self-allotted time. So what’s the solution? Happy you asked! I stumbled upon a great book a few months that boasted
discover the joy of accomplishment! promising results. Mini Habits by Stephen Guise explains how our minds operate and why traditional goal setting techniques are flawed. He changed the entire course of his life by committing to just one push up per day. You see, life is busy. Daily demands often overshadow our desire to change for the better. Setting a goal to work out for 30 minutes a day and never actually doing it is detrimental to our self-esteem and actually hurts our will power. Setting the goal lower— like a few jumping jacks or running in place for five minutes—makes it doable, even on the most hectic of days. It sounds simple, but the effects can be profound. The changes that transpire in our brain can be highly beneficial and even life changing. Consider all the “bad habits” people have. Nobody woke up one day and said, “I think I’ll spend eight hours on my phone every day” or “I’ll become an alcoholic” or “I’ll collect things I don’t need.” No, every one of our addictions started with a single act. Likewise, good habits are developed slowly over time. They are best started by declaring small, achievable goals, those you can accomplish on even your craziest days. So, take a minute and rewind your resolutions. Shave them down a bit and discover the joy of accomplishment! Before you know it, the year will conclude and you’ll be so used to your habit you might just have forgotten it started in the smallest of ways.

One prominent way dentists can indicate this training is through American Academy of Cosmetic Dentistry (AACD) accreditation. Verify that the practice has strong technologies to perform procedures, such as intraoral imaging, CAD/CAM restoration, caries detection devices, and lasers.

Once you’ve collected a few recommendations, take the time to interview potential orthodontists. Find out how many orthodontists work in the office. Would you see the same one each time? Undergo an initial exam and ask for their recommendations. Ask about the process. How long will the entire treatment take? How often will you need to visit the office and how long will each office visit last? Why are they recommending the treatment plan they’re recommending? Do they have 3D software to show you your end result before treatment is begun? Because you’ll be required to make multiple visits to the office, location is important, as are the traffic patterns and location of the office. You want an office that’s close to home or work, with easy access, so you can be in and out in a reasonable time. Find out how long an average wait time will be. Ask the orthodontist how long they’ve been practicing and how many other adults they’re treating. Now it’s time to talk money. Get a price on your treatment and be clear about what it covers. Will there be additional fees during the treatment? What follow-up care, such as retainers, will be required after the braces, and what are the expected cost of those? What insurance plans do they accept? You can even ask for referrals and call a few current patients. By properly vetting the orthodontist and paying close attention to the overall vibe of the office, friendliness and knowledge of the staff, and the doctor’s track record, you can find the right orthodontist and the right office to start you on your road to a beautiful and fully-functioning smile.

shop, just as you would for any other professional. Your state, country, and town should offer a wide range of lawyers to choose from. Selecting the right one can make the difference between a pleasant experience with a satisfying outcome and an exasperating experience you’ll be second-guessing for years to come. Vetting and locating an experienced and qualified lawyer who specializes in the type of law you need can be the beginning of a mutuallybeneficial professional relationship.
As with any other business, good wordof-mouth is the best advertising money CAN’T buy. Ask your family, friends, and anyone whose judgement you value for names of lawyer, who’ve done well—or poorly—for them. Because lawyers are often highly specialized, to try get recommendations from people who’ve hired an attorney for similar reasons. Peruse the internet. There are a variety of websites that offer listings of attorneys by state and/or specialty. Make sure lawyers you’re considering regularly practice the type of law you need. If you need a criminal defense lawyer, for instance, you don’t want someone who mainly has experience in something like estate law, even if they’re an old family friend. Once you have a short list of potential attorneys, meet with a few. Don’t be shy when it comes to asking about fees. There are generally two types of billing for legal services: hourly or percentage. If you’re hiring a lawyer to handle routine legal work (like completing a house sale or putting an estate through probate), expect to pay hourly. You should also expect to pay hourly for a criminal defense lawyer. If you’re suing someone, you can often arrange contingency legal fees, which means your lawyer will take some percentage of any settlement you receive. If you’re paying hourly, expect to pay some portion of your expected fee up front as a retainer. Ask for an itemized statement detailing the things you can expect a lawyer to do and negotiate an appropriate retainer accordingly. While you’re at the office, ask to meet any paralegals, legal assistants, or other non-lawyers who’ll be working on your case. These fine folks handle much of the grunt work and legwork involved in any case—and using them can save you money. When you’re setting up your schedule with a potential lawyer, ask what work the firm’s paralegals and legal assistants will be completing and how these savings will be passed along to you in your bill. Lastly, before hiring any lawyer, contact the law disciplinary agency in your state to confirm that the lawyer is in good standing as a member of the bar. If there is disciplinary action being taken against him or her, offer them a chance to explain. Take your time to select a lawyer with the experience, legal skills, and personal qualities that will best serve your needs, now and in the future.

Toys, video games, and movies can help ease their anxiety or at least provide a distraction to lessen the uncertainty. Some offices have animal or movie themed rooms, headsets and overhead movies, kid friendly music, and other ways to curb the nerves. Decide what your child will most enjoy and put that on your list of must haves when selecting your dentist. Of course, bedside manner is extremely important, especially to a child. While pediatric dentists are trained specifically to meet a child’s needs, personalities will differ, so make sure the one you choose will be one that connects with your child. Some practices have integrated procedures to assist children with disabilities and those with special needs. If your child needs additional care, make sure the dentist you are reviewing understands that and find out how he handles each patient. Read online reviews from several sources and take time with your decision. If insurance comes into play, find out who and what is covered. A trip to the dentist can be a pleasant experience, and one of the advantages of starting your child early is to get him or her accustomed to the office, the environment, the dentist, the equipment, and the procedures—many of which they’ll encounter later in life as well. The more exposure your child has in the beginning, the easier subsequent visits will be. Give your child a healthy start and schedule a visit before their first birthday.

Your doctor should be board-certified and have received specialized training in pain management. Check if the clinic’s doctors are members of organizations such as the Texas Pain Society, American Academy of Pain Medicine, or Society for Pain Practice Management.
If a clinic runs a pain support group, that is a good sign. These groups can be helpful for referrals, but also for emotional support, since that part of pain is so significant. In fact, pain experts believe so strongly about the emotional aspect that the definition of pain from the International Association for the Study of Pain calls it “an unpleasant sensory and emotional experience.” Find out about the therapies that are offered through the clinic, which may be diverse, given that today’s standard approach to pain management is multidisciplinary—combining various medical, conventional, and alternative specialties into the approach. Clinics that are primarily focused on narcotic pain relief should receive extra attention, since these medications have many side-effects and can lead to addiction. Pharmaceutical drugs can also have negative interactions with other medications you may already be taking. If your doctor does prescribe medication, it should be in combination with physical therapy, rehabilitation, massage therapy, chiropractic, mental healthcare, and/or other modalities.
Another straightforward way to find a high-quality clinic is by getting a referral from your general physician or specialist. You may also be able to get a strong recommendation from a hospital or general health clinic in your area. A pain support group could provide a referral as well, as could friends or family.
The selection of a chronic pain clinic continues through the initial appointment. You should feel comfortable with the doctor. They should not be focused on the pain but on you. Understand the treatment plan. The doctors should be able to customize a plan that is directed toward meeting your objectives. They should communicate with you throughout the process and track your recovery closely.
Check online reviews. Ask the clinic if you can speak with current or past patients about the care they received at the clinic. Some clinics are niche-focused on specific types of pain. Be sure your doctor has expertise with your specific condition.

Finding the right one might take a little bit of research, but it will serve as the most important step in a process that ideally leaves you feeling more comfortable and confident in your own skin.
Make sure the plastic surgeon you choose is board certified by the American Board of Plastic Surgery. This is truly a “must do” item on your to-do list for your safety. To become board certified, a doctor must complete three to five years of training in general surgery and a minimum of two to three years of training in plastic surgery and take written and oral tests. Check the American Board of Medical Specialties’ website or the ABPS’s website to see if a plastic surgeon is board certified. Also, ask if the plastic surgeon has hospital privileges. It should at least be in their “top three.” Basically, the plastic surgeon should have performed this type of procedure once or more per week, preferably for five years or more. That way, you can know you’re in qualified hands. Treat the first consultation with a plastic surgeon like a job interview. Come prepared with questions about the procedure, recovery time, costs and fees, and the plastic surgeon’s specialties. During the consultation, pay attention to important details, such as the cleanliness of the office, and the plastic surgeon’s bedside manner and attentiveness to your questions and concerns. Perhaps most important, pay attention to your gut feelings. Ask to review before and after photos, and make sure the after photos are several months post-procedure. Don’t rush into a decision. Take your time to talk to multiple plastic surgeons to ensure you’re choosing the right one for you and the procedure you want. There are multiple options available, ranging from your local veterinary hospital, where you take your pet when they are sick, to boutique-style facilities such as very expensive pet resorts that can cost upwards of $50 to $100 per night. Other choices might be the neighborhood kid or the in-home sitter. Both of these have many inherent problems, some obvious and some not so obvious. However, the choice that the majority of pet owners make is a proper well established boarding kennel that has been around for a while. A real kennel is located on acreage, has plenty of green grass for dogs to run and play and has multiple different types of accommodations, both indoor and outdoor. These kennels have millions of dollars invested in facilities and staff and can be depended on to be there. As with any important service, a good place to start is with personal recommendations from friends and family.
Once you compare your options and decide on a handful of potential caretakers, formulate your list of questions. Do they offer services to both cats and dogs, and are they housed separately? Do they board sick and contagious pets that could make your pet sick? Are additional services or amenities available such as grooming, bathing, and behavioral training? Is medical documentation required, including vaccinations? Is the provider or facility up to date on any necessary kennel licenses or certifications? Is there any way to check in on your pet while you are away, through a smartphone app for example? Or better, can you have a friend or relative visit? Remember to consider the characteristics of your individual pet. Is your pet energetic? If yes, then ensuring they will have plenty of opportunities to interact with other animals as well as get adequate exercise will be important for you to consider. Do you have an older pet? If so, then boarding at a veterinary facility with access to medical care might be an important factor. If bringing your pet with you is an option, you can also research service providers in the area where you will be traveling so you can visit them. These options may help to reduce the risk for stress-related complications such as food protest among others. Finally, remember to allocate some time to visit the facility in person. You should look for any boarding facility to maintain a clean, temperate, and spacious business with plenty of space for dogs to run and play. A friendly and engaged staff who cares about animals should be evident. No matter what you choose, remember that no amount of research will take the place of your gut instinct, so if you see red flags, heed them. Beyond insurance, another vital consideration is the type of surgery that the surgeon performs. Two of the more common types are the sleeve gastrectomy and gastric bypass surgery. The surgeon can perform each of these operations using either the traditional open-incision laparotomy technique

This is certainly one of the most important factors to consider when choosing your bariatric surgeon. You also need to ask about the support services available following surgery. Follow-up care is extremely important, and the center should support such things as psychological counseling, physical therapy, and nutrition guidance to help manage your new dietary regiment and eating habits. Finally, while there are many things to consider in choosing your bariatric surgeon, there is also one important question to ask yourself: Do you like him or her? You should be able to build a relaxed rapport with the surgeon, and if you don’t feel comfortable asking questions, they’re probably not the surgeon for you, whatever their qualifications. Keep your eyes open for newly installed landscaping as you drive around town. Often, the landscape company will post a sign in the yard they have just completed advertising their phone number and website. Local nurseries may also recommend reputable contractors.
Contractors generally will meet with you at least once free of charge to discuss your project and many give free estimates. Try to find three or four contractors to come for an initial consultation to discuss your needs and explain their services. Ask them to bring a portfolio of photos of past landscape projects and prepare a list of questions in advance to ask each potential firm. Remember, contractors who’ve been in business for decades have experience and reputation behind them, while new contractors may have fresh ideas and may charge less. Find out the contractor’s experience level with the type of project you have in mind. The more specialized your project, the more important it will be. Ask for a final budget and timeline in writing (at least a good ballpark). Ask about permits for decks and fences, sheds, gazebos, and pools. Their familiarity with these details is a good sign of how experienced they are. Ask about warranties for defects in craftsmanship and improper installation of decks, patios, and irrigation systems. Ask whether they offer continuing maintenance of your landscaping (although this isn’t a deal breaker). And call a few former clients. If you’re shopping for a wedding photographer, who do you know who has just gotten married? If you’re looking for someone to photograph your high school senior, who are their friends’ parents hiring? With photography, like many other professions, positive word of mouth is a great advertisement. Begin your photographer search by asking others whose opinion you respect who they used, whether they liked the results, and why. THE BEST TIME TO CHOOSE A PLUMBER IS WHEN YOU DON’T NEED ONE. Rather than waiting until you’re knee-deep in water or
have no water at all, take the time now to vet local plumbers and find the one you’ll call when your time of need arrives. Though the decision may seem common, it’s best not to take it lightly. There’s little that can destroy your house more quickly than uncontrolled water, whether it comes from a faucet, water heater, dishwasher, sink, or washing machine. Find the wrong one, and you’re putting yourself at needless risk of destructive damage to your home or even more costly repairs in the future.
When it comes to deciding who you’re going to ring up in your time of need, you can definitely start off by asking around at your church, business, or around the neighborhood. Check local newspapers, magazines, and business listings, too. Once you have a list of recommended plumbers, contact them or visit their websites to find out about their licensure. The state of Texas requires working plumbers to hold a license. Any plumber you consider should also be insured and bonded, to protect both you and the plumber, in case of an injury or accident. Ask each plumber how long they’ve been in business. A larger company will likely have plumbers with years of experience, but you should still ask. It’s a good sign if the company has been in business for several years, because it often indicates a proven track record of quality work.

Although pricing shouldn’t be your first concern, you want a plumber who’s able to offer an accurate estimate, barring unforeseen problems, on any job you may need done. It’s a good practice, when the time comes to hire someone, to obtain at least three estimates. Remember that several variables go into the price, including the time that it takes to complete the installation or repair, the difficulty of the repairs, the quality or number of the fixtures, or any unique specialization required, including camera work or other removal of fixtures. Be wary of any estimate that’s considerably lower than the others. It could mean the plumber is cutting corners or plans to use inferior parts. Ask potential plumbers how they guarantee their work. Do they guarantee workmanship as well as the parts they use, and for how long? Many warranties cover the plumber’s work for up to one year. If the plumber refuses to guarantee his or her work, move on. Ask any plumber you’re considering for references. If they’ve been in business for any length of time, this shouldn’t be a problem. Talking with past customers is one of the best ways to accurately gauge the quality of the plumber’s work and how well they back up the work they do. If they can’t or won’t provide references, consider looking elsewhere. And of course, you can investigate their ratings and reviews online. Plumbing is an old craft, but an important one. There’s nothing more annoying than low water pressure, contaminated water, leaky fixtures, or slow-draining tubs. Finding the right plumber can be the key to keeping you happy and keeping your home safe.

He also suggests a temporary liquid silicone application to keep the skin taut for a few hours. Beyond skin-tightening, collagen-boosting topicals, you can opt for wrinkle-relaxing injectables such as Botox, Dysport, and Xeomin. In-office procedures that smooth and tighten the skin around the eyes include Pelleve Skin Tightening and Ultherapy, said Schlessinger. For deeper lines, fillers such as Restylane Silk and Restalyne Lyft provide good results, though Schlessinger notes you should take care in choosing the injector, as skill is what counts. focus on: DARK CIRCLES Common causes of dark circles under your eyes include thinning of the skin that allows blood vessels to show through, genetics (thanks), or hyper-pigmentation. what to do: Try using a concealer with a yellowish hue that is a couple shades lighter than your skin, mix it with a touch of loose powder, and gently tap it in under your eye using your ring finger. If it’s hyper-pigmentation, lasers such as IPL or topicals with bleaching agents can work to lighten the darker-colored pigment. If it’s genetic and you’re dealing with thin, sagging skin, injectables such as Restylane, Juvederm, and Voluma XC can help. Again, practice caution when choosing an injector for super-sensitive areas around the eyes.

thought a one night stay added to a Santa Fe vacation would be fine, but it wasn’t nearly enough. The Taos community has a one-of-a-kind laid back vibe along with a storied, proud history, multiple cultures living side by side, and a heritage of colorful people. The area also offers a rich array of activities for outdoor enthusiasts—and you’ll find some of the best skiing and snowboarding around in nearby Taos Ski Valley. Nestled among pristine peaks, the resort is nirvana for skiers who love their powder light and dry, and those who adore steep white-knuckle terrain.

Getting there from Santa Fe via the High Road to the Taos Scenic Byway is part of the adventure. Although the drive time is about two and a half hours, you’ll want to give yourself a little extra time to stop and absorb the interesting scenery, take pictures, and check out tiny villages with inventive restaurants sprinkled along the way. Once in town, you’ll be drawn to Taos Plaza. Serving as the heartbeat of the community, the plaza is a gathering place where people enjoy the culture and meet with friends. Traditional celebrations and live performances are plentiful in the square, and you’ll find art galleries, museums, specialty shops, and restaurants all located within a five-block walking area. We discovered—practically by accident after strolling around town and checking out the shops—that Taos has a lively music scene despite its small size (population around 5,000). In fact, it draws top notch artists from around the region. We were there during one of the town’s live music events. The atmosphere was casual and convivial. People brought chairs, blankets, and picnic baskets to enjoy while relaxing and listening to the music. We skipped a picnic lunch, still full after a hearty breakfast at La Cueva Café, a cozy, unassuming spot that is popular with the locals. Huevos rancheros smothered in

green or red chili (or Christmas style) don’t get more authentic—or more delicious—than this. And the omelet Mexicano made with homemade chorizo was to die for. The total bill, including a couple of cups of coffee, was only around $20. Later that evening we mapped out our activities for the next three days while lounging by the wood-burning kiva fireplace in our adobe-style hotel room. Although the weather in June was in the low 80s during the day, it dropped down to the 40s at night, ideal for a cozy, crackling fire. Bright and early the next morning we set out to explore the great outdoors. Geographically, Taos, which is surrounded by the Carson National Forest, combines the high desert southwest with the resplendent Sangre de Cristo Mountains. The area boasts two wild and scenic rivers, the Rio Grande and the Rio Chama, and three developed recreation areas. We decided to hike along the moderate 4.9 mile Devisadero Peak Trail and were wowed by sweeping views of the valley below. After an active day we cleaned up and dined at family-owned Antonio’s The Taste of Mexico. The restaurant was tiny, but the menu and portions were not, and its five-star reviews are well-deserved. We especially enjoyed the steak street tacos and the guacamole prepared tableside. We spent much of our third day at Taos Pueblo, the only living Native American community designated both a World Heritage Site by UNESCO and a National Historic Landmark. The multi-storied adobe buildings have been continuously inhabited for over 1,000 years. Not only is the Pueblo fascinating from a historical perspective, there’s a beauty and serenity that sets the place aside as something special. Our guided tour was interesting and informative, and left us in awe of the lifestyle and history of the Pueblo.
On our final full day in Taos we decided to try llama trekking with Wild Earth Llama Adventures. A family with three kids we met at our hotel highly recommended the “Take a Llama to Lunch” wilderness day hike, which accommodates people of all ages and fitness levels. It was as much fun as they described, and one of the highlights of our vacation. After an inspiring hike at a reasonable pace, our guides prepared a gourmet lunch. The ingredients were packed in by the llamas which are all rescues, and we learned their stories, their personalities, and how to interact with these fun, gentle animals. After the trek I relaxed with a deeply soothing therapeutic massage at Taos Sage Waters Spa. Llama trekking followed by a massage with some foot reflexology thrown in made for a perfect last day in Taos. So, with four days set aside to explore and experience Taos, was it enough this time? Surprisingly, it wasn’t. We didn’t get a chance to go horseback riding, to fly fish, to soar above the valley in a hot air balloon, or to take a hands-on cooking class at Cooking Studio Taos. And it wasn’t even ski season. Next time, Taos, next time.

Preheat oven to 375˚F and spray a 9”x13” baking pan with cooking spray. Heat oil in a large skillet over medium heat, then add onion, season with salt and pepper, and cook until the onion is softened, about 4 minutes. Stir in sausage and cook until the meat is no longer pink, breaking up the sausage into small pieces as it cooks. Once the sausage is cooked, stir in spinach and tomatoes, cooking until the liquid has

evaporated, about 4 minutes. Remove sausage mixture from heat and spread in an even layer on the bottom of the greased pan. In a large mixing bowl, whisk together eggs, milk, garlic powder, and salt. Once combined, pour the eggs over the sausage mixture in the pan, then bake until the eggs are puffed and edges are golden brown, about 25 to 30 minutes. Cool completely in the pan. While the eggs are cooling, toast the English muffins. Once the frittata mixture is cool, gently lift the sheet out of the pan onto a cutting board. Using a biscuit cutter, cut 6 rounds of eggs that are about the size of the English muffins. Layer the bottom halves of the English muffins with one round of frittata each. Top each with a slice of cheese and finish by adding the muffin tops. Wrap each sandwich in aluminum foil. Add sandwiches to a freezer bag or airtight container. Freeze for up to 1 month. To reheat, unwrap the sandwich and microwave on a microwavable plate. Microwave for 1 to 1½ minutes until the frittata is warmed through and cheese is melted.
